When economics professor Paul Niehaus saw how overwhelming poverty and red tape in many African nations denied people access to a better life, he developed a no-strings method to deliver funds directly to a recipient’s cell phone, reshaping international giving.

DATE SMARTER Dating can be fun and invigorating – from that instant attraction you feel the first time you meet to jumping in the car for an impromptu weekend getaway. Unfortunately, it can take a lot of work to get to that stage of dating.

F

rom spending hours sorting through online profiles looking for a good match to trying to connect via pokes, winks and email, dating can suddenly feel like a full-time job.

Wouldn’t it be nice if you could just fast forward to the fun part of dating? That’s exactly what newlyweds Desireé and Michael Schlitt say It’s Just Lunch, a dating service for

With so many dating options out there, why did you choose It's Just Lunch?

D: I travel a lot for work, so I’d read about It’s Just Lunch in airline magazines, and then I ran into a friend who was attending the wedding of an attorney in town who’d met her husband through IJL – the fact that those two events happened so close together, I thought I should call them. At the end of my work day I didn’t want to come home and go look at profiles online. I felt like it was a waste of my time. M: I had gotten a divorce and then did online dating for a while before joining IJL. I joined mainly because it’s a lot of work to do the online thing. You have to keep up on it. You never really know who you’re going to meet. IJL was just a lot easier. They found people for me based on what I was looking for and I just had to show up. You don’t have to do much work. What would you tell a friend who was apprehensive about investing the money on IJL?

M: I’d ask, “Are you looking for a relationship or not?” With online dating you never know who’s on the other side of the line. IJL had better quality people who were interesting to me. It truly was an experience that was tailored for me. Describe your first meeting with an IJL matchmaker?

D: She asked me questions about

myself, what I like to do, what I want in a relationship, whether I’d marry someone who already had kids, how important religion is, that kind of thing. It

would take much longer to find out someone else’s answers to those questions through online dating. This was black and white.

Tell us about your first date with one another.

D: I never went on lunch dates because I was always busy at work so I met Michael after work at a downtown restaurant. The conversation just flowed. I was attracted to him from the start. I remember it turned into dinner.

D: I met my husband, so I guess I would say that! It’s Just Lunch – it’s just a lot of fun. I remember I’d get off a plane and have a voicemail from the matchmaker saying she had a potential date for me. She would tell me about the person and was flexible with scheduling.

Gary’s Greeting

Embracing Civility and The Golden Rule applied in any Culture, and especially in a large Company like Southwest. The beauty of it lies in the diversity of our People. We celebrate our differences in a way that brings us closer together, much like a Family. Of course, People are complex, and you must work at it. But the rewards are incredibly fulfilling and yield amazing results. Southwest is world famous and often admired for our People-centric Culture, and it all starts with how we treat each other. I have a growing concern that, as a larger society, we are becoming more divisive and less civil toward each other.

I see it in politics and the media, and I especially see it online in social forums. I’m sure smart people could debate why this has become so prevalent—and I certainly don’t propose to have all the answers. What I do know is that a little civility goes a long way. And an abundance of civility could bring us all closer together, help us understand each other, make us stronger, and enable us to fulfill the dream of “Life, Liberty, and the pursuit of Happiness” that our Founding Fathers imagined. In my experience, I have found that interpersonal conflict often results from a lack of understanding. The more we listen to each other, the more likely we are to engage in civil discourse and achieve an understanding. In those meaningful interactions, we find the good in one another. It’s not always easy—or even pleasant—to try to understand another perspective. It challenges us and, perhaps, makes us question our own strongly held beliefs. But it also serves to open our minds and our hearts to our fellow neighbor. It has to start with a desire to listen, to understand, and to be tolerant of different points of view, and a desire to be reasonable, patient, and respectful. I would argue the exercise is worth it, and I’m confident the result would be a better life for us all. And that is a dream worth pursuing!

Gary Kelly Chairman and CEO Southwest Airlines

PHOTOGRAPHY BY STEPHEN KELLER

So many unique aspects attracted me to Southwest Airlines more than three decades ago, and even more have compelled me to stay these many years. Chief among them are the People and the Culture. One aspect in particular made an immediate and lasting impression on me—a rule that has served as a guiding principle above all others, championed by our beloved President Emeritus Colleen Barrett—the Golden Rule. It’s so simple, and yet so profound: “Treat others the way you wish to be treated.” It’s remarkable what happens when that mindset is emphasized and

ISLAND ESCAPE

101 Destinations and Climbing

Travel beyond the U.S. this spring break. Costa Rica, Aruba, Mexico, and Cuba— these are just a few of the international destinations where you can get away with us this spring break. Since 2014, Southwest has expanded beyond our domestic-only service and now offers flights to 15 Latin American and Caribbean destinations. You could say we’ve been busy, but we like to say it’s been a true labor of love. Connecting our Customers to the moments that matter most in their lives is our Company’s Purpose. To achieve this, we’ve continued to provide the best service, with low fares and great Hospitality, to the destinations that are important to our Customers. At Southwest, we often refer to “One Team. All Heart.” It’s the collective work across Employee groups and teams that

makes it possible for our Company to successfully plan, sell, and operate new international markets for our Customers. Back in December, Southwest reached a Company milestone with our inaugural service to three cities in Cuba: Varadero, Havana, and Santa Clara. Havana marked our 100th destination, and the hard work of our Employees allowed us to execute our operation in record time. Soon thereafter, we announced our intention of serving our 16th destination in Latin America and the Caribbean: Grand Cayman. We still continue to grow our domestic route map. We offer Customers more options to connect to international destinations through 14 gateway cities in the U.S., including Los Angeles, Oakland, and, beginning April 25, San Diego. If you’re still thinking about where you Wanna Get Away this spring break, visit Southwest.com/international for a full list of destinations. You bring the sunscreen and beach towel—we’ll bring the low fares and tropical flights. —Julian Gelvez Hinestroza, International Planning & Business Development

Southwest Airlines connects people to the medical care they need. At Southwest Airlines, we pride ourselves in connecting our Customers to what’s important in their lives. This often means getting people to an important business meeting or a family vacation, but air travel can also open the door to Customers who need important medical treatment that may not be provided where they live. Through the Southwest Airlines Medical Transportation Grant Program, we’re able to give patients and their families peace of mind about how they will get to the care they need. This year marks the 10th anniversary of the Medical Transportation Grant Program through which participating nonprofit hospitals and medical programs provide travel on Southwest to patients

(and their families) in need of specialized life-saving or life-changing medical care. Miracle Flights, one of the participating programs, provided its 100,000th flight last summer to 10-year-old Levi Krystosek. Since the Medical Transportation Grant Program’s inception in 2007, we have provided more than $23.6 million in transportation for more than 59,000 patients and their caregivers. We are honored to work with a network of hospitals and organizations that support this mission. In 2017, we entered our 46th year of treating our Employees and Customers like family. Families support each other during both good and challenging times, and through our Medical Transportation Grant Program, we’re able to serve the people in our communities during times of great need. We ran through security and made it to the gate as the C group was boarding, but we still thought our gear wouldn’t make it. To our surprise, when we landed in Denver, we saw our paddle bag coming out of the plane. Sure enough, all of our gear made it! We ended up having a great three-day weekend, which was thanks to your staff’s effort. Thank you so much! —Daniel Brasuell

Dear Southwest,

A few weeks ago, a few friends and I were traveling to Colorado for a weekend of whitewater kayaking in one of the most spectacular canyons in North America—the Black Canyon of the Gunnison National Park. One friend was late coming from Asheville and we soon hit traffic when we left Knoxville for the airport. We thought there was no way we would make our flight out of Nashville. We hit the curb 25 minutes before departure time, and I parked while my friends checked our bags.

PILOT PRESCRIBED

I would like to extend my thanks and give a shout-out to captain Cameron Shelley and the crew on our recent flight. My husband and I had just settled in our seats when I recalled that I had left my refrigerated prescription medication at my son’s home, about 10 minutes from the Raleigh airport. We were discussing how we could ship it properly when a flight attendant announced a 30- to 40-minute delay. We immediately asked if my husband could de-plane to meet our son at the curb. They agreed but were concerned that my husband could be held up at security. At that point, the captain, who was just waiting for the approval to depart, volunteered to meet our son at the curb. Though the Raleigh airport is small (which made the whole idea possible), it was still an exceptional act and an example of

wonderful customer service. Many thanks again! —Elise Schultz WAITING WARMTH

My husband, who has had nine heart attacks and experiences very poor vascular circulation, and I recently had a 3-plus hour layover at Baltimore/ Washington International Airport. I approached customer service agent Winston Stewart to inquire about the availability of a blanket for my husband to use on his legs until we boarded. Winston advised us that there were no blankets stored at the desk, but he then walked over to my husband and covered my husband’s legs with his own jacket. The relief he gave my husband was immeasurable. Thank you, from a very happy and grateful passenger. —Betty McGannon Starr COMFORT AND CARE

Recently, my son and I were making our annual trip to Pittsburgh. He is currently listed for a transplant at Children’s Hospital of Pittsburgh of

F1_ymod_kt.indd 28

UPMC, and we fly there once a year for a doctor’s appointment. When we landed, as we were exiting the plane, my son had a medical emergency. In the jetway we were met by customer service supervisor Kevin Withers. He called the ambulance, stayed with us until we were put in the ambulance, and made sure we were as comfortable as possible. He then took down my number and made sure our bags made it to the hospital. He even went out of his way later that night to check on us. Kevin made us a priority, and I appreciate that so much. When we flew out the next day, Kevin noticed us at the gate and made sure we had everything we needed. On that same flight home, flight attendant Laurie Liss noticed my son had a central line (a long-term IV). She gave us one of her handmade “port pillows,” which make people with medical ports implanted where the seat belt sits more comfortable. I knew Southwest had superb customer service, but to experience it firsthand was amazing. Thank you, Kevin and Laurie, for making our

flying experience so much better than the rest. I’ll see you guys next year when we fly to Pittsburgh again! —Katie Dahl R ACE TO THE ALTAR

I left my ID at the Spokane airport when I was going to San Diego for a wedding I was in. I was so upset because I needed to rent a car to drive to Palm Springs for the wedding. I told flight attendant Ann Murphy about my dilemma and she helped me get ahold of the airport during my layover. They told me they couldn’t send my ID on a flight—long story short, I was in a lot of trouble. Ann overheard the conversation and spoke with the employee to see if they could hand my ID to her partner so he could fly it to her in Las Vegas. After Ann received the ID, she said she would then be willing to fly it to me in San Diego. I have never in my life seen someone go this out of their way to help a customer! I don’t know what I would have done without her amazing customer service. —Brandon Allen

from the editor

Dear Reader,

I don’t recall dessert being included among the Seven Deadly Sins. Gluttony is a sin. But that just means eating too much chocolate—or, worse, not sharing it with me. Chocolate further teaches that the bitterness in life is not all bad. As the years go by, I find myself eating darker and darker bars. The bitterness enhances the richness. Therein lies a lesson. In other words, Mexico is not only an amazing place to visit. The region’s invention of chocolate alone qualifies it as a true font of wisdom. Though admittedly I don’t seem that wise, it’s probably owing to a need for chocolate ice cream. And a flight heading south.

Jay Heinrichs EDITORIAL DIRECTOR @JAYHEINRICHS

CHOC FULL

The Aztecs and Olmecs knew a few things about chocolate.

PHOTOGRAPHY BY 4KODIAK/ISTOCK

Of all the contributions Mexico has made to civilization, I would rank chocolate right up there. I raise my cocoa cup to the Aztecs and Olmecs who thought of making a drink from the bitter cacao seed. To this day, Mexico does more with chocolate than anyone else; for instance, not even the French can make a better sauce than chocolaty mole. (See page 56.) Experts used to tell us to avoid chocolate. Now they say it can contribute to our health, a fact I have known instinctively since my second birthday. But the miracle of cacao is more than just that it’s good for us. It can actually make us wiser. Chocolate teaches that there is such a thing as the perfect dessert, and that it is chocolate ice cream. Every other dessert is just kidding. (Okay, this is actually my opinion and not wisdom per se, but I feel very strongly about it.) Chocolate teaches that some of our notions of sin are pretty weird. Why do we call chocolate cake “devil’s food”? And why do restaurants insist on declaring their gooey chocolate desserts “sinful”?

Dear Editor,

On my way to Houston, flipping through the magazine, I found myself drawn to “The Letter” [December 2016] and Michael Graff’s conversational style of writing. It would have brought me to tears on any given day. Today, however, I was in a very different place than most days. I am a 39-year-old mother of three flying to MD Anderson Cancer Center to find out if this cancer in my head is just one tumor, or if it has spread, or if, by a miracle of God, it has dissolved and will soon be a memory. Life has been so normal the last few days. I’ve worked. I’ve made lunches. I’ve cleaned my house. I’ve appreciated the normalness of life like never before. But today, I have to pull out the “cancer box,” and I’ve been dreading it. It was no accident that I found Michael’s story about saying thanks to his mentor, who has cancer. His words were exactly what I needed. Thank you for the encouragement and the camaraderie he provided. / We hope you got the best of all possible news, Kate, and that your heartfelt letter inspires others. WORDS OF GRATITUDE

I was on a flight from San Diego when I read “The Letter.” I was so touched by the beautiful words that it inspired me to write a letter to my mentor, a family friend. My dad passed away about 5 years ago and, without missing a beat, Greg

FULL HEART

I had a chance to read half of Michael Graff ’s “The Letter” while on a Southwest flight. I was so tempted to devour the whole article but had to stop myself when he began to write the letter to Kendra’s son, Colin. I knew I was in for something profound and decided not to finish it until I was alone. I am glad I waited, as it would have been hard to explain to my seatmate why I was bawling. The beauty, the profoundness, the spirituality of the article touched me so deeply. Thank you for sharing this soul-stirring, beautifully written love letter.

of Best American Sports Writing. I have been reading BASW since 1999, and this is the first article to ever move me enough to reach out to the author. The memories of my grandfather teaching me how to fish and of our days spent on the choppy waters of the Gulf and Port St. Joe were crystal clear with each turn of the page. It was the best part of my summers. I lost my grandfather a few years ago. He lived a full life, but I still miss him every day. I don’t pretend to know what it’s like to lose a family member to the dreaded disease that took Kim’s father, but know that the memories they shared— and that she shared with us—have brought at least one other person (and I suspect many others) a joy that will last a lifetime.

That’s more than three times the previous year, when the frequent fliers occupied just 2.8 acres. Some migrate as far as 2,800 miles from the U.S. and Canada to take up residence in pines and firs along the border of Mexico state and Michoacán. And although the butterflies’ population has declined due to illegal logging and habitat degradation, government officials hope that, with help from the World Wildlife Fund and other conservation efforts, the monarchs’ reign will stretch to 14.8 acres by 2020. That’s a royal treatment we can get behind.

Red Hot Chili Peppers A few years back, tired of her life in New York City, Francie Nguyen packed up everything and moved to Puerto Vallarta. Soon after, she teamed up with an innovative bartender from the Four Seasons Mexico City and opened the steps-from-the-beach Bar La Playa. Herbs and fruit from Francie’s garden color the bar top before eventually making their way into cocktails like the Red Hot Chili Peppers. Classic Mexican ingredients like smoky mezcal, spicy jalapenos, and agave syrup are balanced with squeezes of fresh oranges and limes. It’s the perfect drink for a quick break, or, maybe, a more extended one.

Bridge the Cultural Divide

Less face-to-face time can mean messages get lost in translation, says international business guru Erin Meyer. Has technology improved cross-cultural communication? “Not necessarily,” says Erin Meyer, author of The Culture Map: Breaking Through the Invisible Boundaries of Global Business. “Fifteen years ago, people traveled to do business internationally. Now, we work all over the world without ever looking people in the eye. Our communication style may offend, but if we lose business, we just think, ‘Our price was too high.’ In fact, we may not be recognizing our cultural blunders.”

42 southwest february 2017

F1_solution_KT.indd 42

What kinds of “cultural blunders” do you see most often? “Americans speak more in meetings than any other culture. It’s partly due to the participation grade we have in our schooling system. We need to recognize that silence, in many cultures, isn’t negative.” What do cultural blunders look like via email? “How much social content we put in emails differs. In a more task-oriented place like the U.S., it’s common to jump right to business, but in, say, Latin America, that comes off as being disrespectful or aggressive.”

What about differences in providing feedback? “In the Netherlands, it's common to give blunt feedback. In Mexico, it’s done in a more diplomatic way. In the U.S., we give three positives for every negative, so people in other countries may think their performance is acceptable, when we were really saying the opposite.”

How can we better understand our differing communication styles? “We’re often uncomfortable talking about cultural differences because we think the other person will feel judged or stereotyped, but every person likes to talk about their culture in positive ways. The most effective international businesspeople laugh at their own culture and ask a lot of genuinely curious questions.”

This nonprofit connects high-impact entrepreneurs with resources they need. Here’s how content creation manager Daniela Dib Arguelles describes the organization: Endeavor supports more than 100 entrepreneurs from Mexico by connecting them with mentors and helping with industry-specific problems. We have a global concept of what it is to be a high-impact entrepreneur, someone who creates and grows a company while also giving back to the entrepreneur ecosystem. Since launching in 2002, we’ve seen a lot of change, and investments in

the creative, health, and financial tech fields have increased. In Mexico, we have strong ties to the U.S. and Canada and a lot of bilingual talent, but one obstacle is that we have trouble accepting failure. In Mexican culture, once you fail, no one trusts you again; that’s something we have to change. By 2020, Endeavor wants to find the Google of Mexico, the Facebook of Mexico. We have everything set up in our ecosystem, so we’re eager to find a company that can reach those heights.

Eggs and Limes

How a trip devoted to reading and beaches and seeing a man turned into a culinary epiphany. / BY MARIAN BULL

I

didn’t bring home any trinkets from Mexico, but I have been toying with the idea of making a Sharpied T-shirt that reads, “I went all the way to Mexico and all I got was this broken laptop and the habit of putting lime juice on my hard-boiled eggs!” Maybe it would have some hot sauce stains on it, for a little added personality. I went to Mexico to see a man, I guess, and to sit on a beach and read, and also to try to write. That last bit didn’t happen because of the broken computer thing—it just stopped working once I got there. I had also been looking forward to rewatching Drive, a movie saved on my computer that stars my boyfriend Ryan Gosling. But it was fine: I have AppleCare and a smartphone and I’m good at pep-talking myself out of anxiety spirals.

Instead, I learned how to slackline and finished all of Elena Ferrante’s My Brilliant Friend (which is truly excellent beach reading), and I finally watched The Perks of Being a Wallflower ower, albeit a dubbed version. And then there’s the lime and egg thing, which is what we’re here to talk about today. Even the most freshly hatched, locally snatched, orange-yolked egg can feel a bit dour at times, particularly if you’re medium- or hard-boiling it. (A plea: Can we stop calling them “farm eggs”? All eggs come from a farm, even those hatched by mutant hens.) Back at home, I had been lifting weights and trying to eat more protein—I decided my summer look was “protein powder goth”—and I was getting a little bored of boiled eggs. little snack that you can store in your fridge. And yes, they are easy to prepare and eat—and boy, are they cute—but sometimes they feel like an obligation. Like a tastier vitamin, or a husky shrub of cauliflower. (A friend of mine once called raw cauliflower a “satisfyingly punishing snack.”) Boiled eggs taste better than that, but the effect can be the same. Fine if you disagree, but regardless, a squeeze of lime makes them pluckier and

sweeter and more exciting. The acid rounds them out somehow. How did nobody tell me about this earlier? SO HERE WE WERE in a kitchen in Mexico, this man and I, pulling out boiled eggs from his refrigerator to snack on before dinner, and I got myself all the way through a competent Spanish translation of “Actually, it’s easier to peel an egg if you do it underwater!” just to be

laughed at, ja ja. “What’s the point?” he said. “I’m in no rush.” By which he meant: Why should you care so much about pockmarks on your boiled eggs? Why should you worry so much about quickness? I assumed there was no accurate way to translate the phrase “life hack.” And why would you, other than to explain that, where I came from, people bragged about using a straw to poke the stem out of a strawberry? We sat and peeled our eggs onto torn bits of paper towels, wonky piles of scraps accumulating in front of us, gnarled eggs halved and spritzed with lime and sprinkled with salt, popped into mouths in singular, swift motions. Him explaining that this was his preferred childhood snack, that, Here in Mexico, we put lime and salt on everything. Why would eggs be any different? The yolks had those dark rings around them, sulfuric and bad; somehow this warmed my heart, the same way I’d giggle any time he ate a hot dog plain and cold and vertical, like when people eat string cheese incorrectly. Sometimes it’s nice when people care about something far less than you do, like putting food in their mouth, or peeling an egg.

this ashtray. We’d met months before on my first trip to this island, sitting at the bar of the restaurant where he worked, which turned into a fishing trip the next day, which turned into an extended stay and shuttling my bags from an Airbnb to his apartment, where a hammock hung over the bed and the frogs kept me up at night. I came back because he asked me to, and I have a certain thing for reckless decisions and the ocean. When I told him that my computer wasn’t turning on, he’d said something about how women never take good care of their cars, but I tend to gloss over that part of the story, because it’s more fun to focus on the dumb satisfaction of sliding a cheese quesadilla from a frying pan onto the plate of a shirtless hunk while frogs loudly chirp outside the window than it is to discuss the banal specifics of sitting alone on a foreign island wondering what you’re doing with your life. The first time I left this island, I was sobbing and forlorn—the second time I was just eager to do work and do laundry and be alone and see my friends.

for soft but not totally molten yolks, and whites that are cooked through but aren’t rubbery. I pour out the water and run cold water over the pot until the eggs are cool enough to peel. Sometimes, instead of peeling them, I’ll put them in a bowl in the fridge for later. I used to just plop my eggs into salted boiling water and cook them for seven minutes, which made for almost-runny yolks that were good for, say, a bowl of rice. But then a

chef was like, “When you do that, the heat is not reaching the inside of the egg, and that’s why your egg is not cooking evenly.” So now one of the most grown-up things I do is actually watch my pot boil, and then set a timer once it does. (It’s my two cents!) Don’t forget to salt your water and wear sunscreen. Marian Bull is a writer living in Los Angeles. Read her irregular cooking thoughts at tinyletter.com/messhall.

MY NORMAL GROCERY STORE habit is to pick up an armful of lemons every time I buy food. But since I’ve gotten back, I’ve been trying to swap them out for limes, mostly just to be less boring (I can be so boring), and because of the eggs, which I’m eating with far less resentment now. I’ll boil a whole mess of them and use them however I can, maybe as a garnish for a salad or a grain bowl or whatever the kids are eating these days. I’ll dress the whole thing with a big squeeze of lime, and I recommend all of it, even the questionable life decisions and the quesadillas for dinner. For the record, here is how I have come to boil my eggs: I put them in cold, salted water, bring them to a boil, and then boil them for four or so minutes. This makes

The History of Mexico as Told Through Mole Sauce

Contained in the beloved stew is a nuanced portrait of the country’s past. The story goes that a gust of wind tossed a slew of spices into a bowl. Or maybe someone spilled chocolate in a pot, or a nun prepared a last-second dinner for a special guest by combining every ingredient at her disposal. So complex are the recipes for moles—these icons of Mexican gastronomy contain more than 30 ingredients and can take three days to make— they’ve acquired their own folklore. Though its exact origins are shrouded, mole’s evolution speaks to Mexico’s dynamic history: It is truly mestizo, a blend of Spanish and indigenous influences.

56 southwest february 2017

P5_MEXICO_DE.indd 56

The word mole comes from mulli in the Aztec language Nahuatl. Indigenous groups had long used the mano y metate (below right) to grind sauces, but the Columbian Exchange—which brought Spanish explorers and a host of new ingredients to Mexico’s shores in the 15th century—marked a major juncture for the dish.

The Spaniards carried onion and garlic along with Moorish spices like cinnamon, cumin, and cloves. These imports were mixed with native chilies and combined with proteins such as turkey and iguana. The spices and herbs were toasted separately, ground and cooked together in a broth, and then thickened with bread or tortillas. Eventually, the entire world’s cuisine was influenced by this exchange. Dishes like Thai curry and Italian marinara were only

possible after Spanish ships sailed Mexican produce back across the Atlantic. Dozens of mole varieties developed over the centuries, reflecting Mexico’s diverse microclimates. Almost every pueblo in Central and Southern Mexico has its own version of the dish that utilizes local produce. (The yellow

The famed mole poblano de guajolote features chocolate, but that recipe didn’t appear in a Mexican cookbook until around the early 19th century. Today, plenty of restaurants offer excellent mole. Don’t Sleep on Tijuana’s Reawakening This West Coast border hub is on the move. Thanks to the freshly unveiled Bus Rapid Transit system and the ongoing $740 million update of the San Ysidro border crossing—which includes a just-opened pedestrian bridge—a quick southward jaunt from San Diego is easier than ever. That’s great news for foodies, since Tijuana is undergoing an epicurean makeover fueled by the abundant Baja California produce, Valle de Guadalupe vino, and fresh-off-the-line seafood from both the Pacific and the Sea of Cortez. “Tijuana has always been a droolinducing buffet of regional Mexican cuisines,” says Derrik Chinn, a Tijuanabased American journalist who launched a tour company called Turista

Libre in 2009. His themed day trips (from $30 per person) begin and end in San Diego and take visitors off the beaten path to an eclectic mix of destinations, ranging from historic cantinas to flea markets, wineries, and luchador wrestling matches. “Now with some 90 independent brewers, half of which are in Tijuana, Baja California has become the craft beer mecca of Mexico,” Derrik says. The Maestro of Mezcal

Asis Cortez, a 30-year-old, sixth-generation mezcal maker—or mezcalero—has played a major role in the resurgent popularity of the spirit, an earthier, smokier ancestor of tequila. A decade ago, Asis and his family joined with neighboring mezcaleros throughout Oaxaca to form Casa Cortés, a burgeoning collective that now produces some of Mexico’s finest mezcal brands.

Traditional methods of mezcal production are mostly unchanged. El Jolgorio’s Cuixe mezcal (at right) comes from a rare wild agave species.

60 southwest february 2017

P5_MEXICO_DE.indd 60

How has the collective helped the families involved? “Take Ignacio Parada. When we approached him, no one was selling mezcal in his village. It was either really cheap or neighbors expected it for free. To him, it was an impossible dream to make it a business. Then, he was scared when we first started bringing people to his distillery. He’d say, ‘My distillery isn’t beautiful. It’s old. No one wants to see this.’ Now he’s proud to show it off to visitors and knows the value of his product. His son, who had left for the States for a better life, has come back to work in the family business.”

The way you make El Jolgorio, one of your mezcal brands, is pretty unique. Can you explain? “Most mezcal is not aged, but we age El Jolgorio in glass jars, which gives it a smooth, mellow taste. This tradition started a long time ago, out of necessity. In the 50s, the government started taxing mezcal. The mezcaleros didn’t have a culture of paying taxes and didn’t understand it, so they started hiding some of their jars underground.” What’s Mezcalogia, your bar in Oaxaca City, like? “You can taste over 80 kinds of mezcal, many of which aren’t sold to the public because they’re so small. And you never know, there might be a 70-something distiller from one of the villages sitting next to you.” —Lanee Lee

PHOTOGRAPHY COURTESY OF CASA CORTÉS (MEZCAL)

Why did you start the collective? “We were losing the tradition, and we wanted to keep this beautiful part of Oaxaca’s soul and history alive. In my village, Santiago Matalan, there were 450 distilleries 35 years ago. Ten years ago, there were only 25 left. When I was 15, my own family closed their distillery. But since we’ve started educating locals and helping them appreciate the culture, there are now more than 100.”

Behold, pulque: the frothy, sticky drink that’s worthy of a pilgrimage. But first, a word of warning. Pulque has a wacky texture, and there’s no denying PHOTOGRAPH BY KELSEY WILSON

P5_MEXICO_DE.indd 61

that its tang can hit the tongue with the same sharp blitz as curdled milk. (If you’re squeamish, get a curado, the version flavored with the likes of tamarind or hibiscus.) But pulque is a beverage for which one quickly acquires a taste and, in many cases, a thirst mighty enough to inspire a trip to its motherland in the dusty reaches of rural Hidalgo. Due to its live cultures—pulque is fermented rather than distilled—it must be consumed fairly quickly, so it’s literally incapable of export. Try to take it too far from its natural habitat and it will spoil before arrival. Pulque has been an integral part of Mexican culture since the Aztecs used it in ritual practice and believed it to be the favorite libation of the god Ometochtli. Long known as a drink of the working class, pulque was scorned by the government in the early 20th century in favor of a probeer agenda. Today, though, pulque—and its designated bars, pulquerías—have seen a populist resurgence, driven in part by a punk scene in Mexico City eager to reclaim its heritage and, well, stick it to the man. If you want to get in on the new-wave scene, head to Pulquería Los Insurgentes in the Roma neighborhood and sample unique flavors like pistachio and celery. But if you’re seeking a taste of the low-key pulque life, an afternoon spent sidled up to the bar at the 100-plus-year-old Las Duelistas will surely quench your thirst. february 2017 southwest 61

Isla Mujeres is a short ferry ride from Cancun.

Finding Home on Isla Mujeres

As my aunt revamped a ramshackle island hotel, she also began repairing family bonds. BY BRIN-JONATHAN BUTLER

The falling out with my aunt happened the summer I became a teenager. Up until then, there was hardly a Thanksgiving, Easter, summer, or Christmas vacation that didn’t include my family schlepping 250 miles from Vancouver to join my grandparents, aunts and uncles, and brood of cousins in a small, dusty orchard town. In the summer, we would inner tube down a frothy river and then steal ripe cherries and apricots from the side of the highway walking home. All through childhood I begged my parents to go until, at some point, they had to plead and beg with me. It was hard to pinpoint why, though all of us were pulling on a knot of family discord that was getting tighter by the year. My grandmother had died when I was 5. She was a balm to all who knew her, and fresh wounds in my family remained open after that, so there was tension between my father and all three of his siblings. My aunt had always been a warm, generous presence during my childhood, but everything that used to charm her suddenly seemed to annoy her. My hopelessness with her ever-increasing catalogue of chores was when I first began to feel the strain, a friction that had less to do with my futility than a symptom of something deeper I didn’t understand and she refused to acknowledge. If you don’t want to do the chores right, then you have no business staying in my home, she finally told me. The break was definitive after that. In 2008, I heard through the pipeline of family gossip that my aunt had retired from her job as an elementary school teacher and bought a fixer-upper hotel in Isla Mujeres. Various members of my family had been descending on this sleepy former fishing village just off the coast

of Cancun since the early ’80s. The island is a little over 4 miles long and a couple avenues wide, with turquoise water and white-sand beaches. They all spoke about Isla the way Andy Dufresne in The Shawshank Redemption spoke about breaking out of jail and shipwrecking into Zihuatanejo. But my aunt was the one with the gumption to really go for it. Before long, her daughter started a family in Isla Mujeres, and my aunt had a granddaughter to chase after at their hotel. A few years later, I got a surprise letter from my aunt inviting me to visit. My father told me she’d graciously invited everyone in the family to stay with her. Everyone but me took her up on the offer. I hadn’t nursed a grudge during our estrangement, but when death has stained a family—both she and I had lost a brother before we were born— there’s a queer kind of shame that comes with the acceptance of losing many years with a loved one by choice rather than fate. About the Author Brin is the author On the morning of March 1, 2013, 20 of The Domino years since my aunt and I last spoke, my Diaries, which was a finalist for the cousin knocked on the door of our uncle PEN/ESPN Award for Kenn’s hotel room, fearing he had slept Literary Sports through his alarm. My uncle had to catch a Writing. flight home from Cancun, a ferry ride away from Isla Mujeres that lasted three hurried songs from a four-piece Mexican band before they passed around the sombrero. She knocked again. The previous night, my uncle had enjoyed some wine and complained about a migraine. He was known to be a little reckless, yet he always ended up just fine. This

mischievous power was a calling card of his. Maybe there wasn’t anything to worry about, my cousin thought. After a third series of knocks, she gently entered the room whispering my uncle’s name. He was facing away from her, positioned in the bed like a swimmer in midstroke, a pillow against his cheek. She approached him, softly put her hand on his bare shoulder, and, after feeling the chill, raced out of the room. I received a phone call from my father after my other uncle, Val— suddenly my last living uncle—had confirmed that their youngest sibling had died in his sleep. My dad told me that Kenn’s first words upon seeing him in Isla were, “You have no idea how long I’ve been waiting for a time like we have now.” My aunt called in a favor, and they transported Kenn’s body to Cancun on a catamaran. A week or so later, I received a letter from Val describing how he held his brother’s hand as they crossed over. While I wish this weren’t the case, I guess you’re ready when you’re ready and not any sooner. So, I sheepishly wrote to my aunt asking if I could visit and stay with her the following spring. By then my dad had retired, and she’d offered him a small, private room next to the entrance. My father, the uncrowned worst traveler ever born—a man who navigated the gauntlet of airport security with less tact and aplomb than Godzilla on a bender—now spent nearly half of each year with his sister and niece in the hotel. When my mom visited the island—which she’d done since the mid-80s, mostly independent of any other family members—she’d share the same room as my dad even though they’d been separated since 1986. Somehow, this hotel brought all of my family back into circulation again. Despite old grievances and mountains of legitimate complaints, everyone seemed to put all CONTINUED ON PAGE 65

that aside and cherish their time together. I don’t know if any of us were any wiser for having grown older, but there was an ominous recognition after my uncle’s death that time would sort out our differences if we failed to. I bought my ticket to see some members of my family for the first time in far too long. I rode the tourist ferry from Cancun, and most of the three songs played by the terrible yet endearing band were drowned out by the boat cutting through the waves at speed. Even 20 years back, my father told me, this ferry crossing was undertaken on a wooden boat with two benches along the sides, loaded mostly with people who lived on Isla and commuted to Cancun. Chickens were frequently fellow travelers. This new high-powered vessel shuttled 200 passengers with ease and had a concession stand on the main deck. During my aunt’s first visit in

1984, the island’s streets were sand, and there were only three people she met who weren’t locals. There were just four phones on the entire island, and it could take hours waiting in line to have a chance at even making a call. Isla Mujeres is now home to 12,000 people, and the majority of visitors are day-trippers from Cancun. When my aunt and her daughter happened on the desolate, abandoned hotel they later bought, it was occupied only by a squatter. After

My aunt has never advertised, yet I’ve been told the place is nearly always full. When she wants to be, I’ve never met a person more hospitable, or just plain fun. My ferry finally docked at the Isla terminal, and my father and Val were waiting for me. It had been several years since I’d seen

them, and it took me a good while to establish eye contact without feeling overwhelmed. But they were overwhelmed for a different reason. “I just can’t believe how much he looks like Kenn,” my uncle said to my father. It had been a long-standing joke in my family that Kenn had fathered me, but the punchline took on a different resonance now. My dad removed his Tilley hat and scratched his head before nodding with a sigh. A sunset had smeared the sky, and we walked together back to my aunt’s hotel under rusty electric streetlights that hummed and stained the narrow streets the color of old pennies. As we neared the hotel, all the welcoming coordinates of friendly bars and quaint restaurants along Avenida Guerrero suggested that, while my aunt was born thousands of miles away, I’d arrived in her hometown. Down the last street, music was playing from the roof of a yellow hotel, and people were leaning over a railing sharing drinks. We passed the room where my father stayed in the winters, and after taking a deep breath and pushing open the front door, three generations of family turned from where they were sitting in the courtyard to smile. My aunt gasped before getting up, her granddaughter cradled against her shoulder. “I did a double take when you walked in,” she cried. “I feel like I just saw a ghost. I can’t believe how much you look like Kenn.” “Who’s this guy?” my cousin asked her small daughter, taking her into her arms. My cousin, the co-manager of the hotel, was 6 the last time I’d seen her. Now she had a daughter nearly that age whom I’d never met. “Should we go see who it is? I don’t know if we should. What do you think?” I stood nervously while being inspected by a relative I’d never met. Finally, she nodded yes.. Shoot Brin a note at brinjonathan butler@gmail.com.

Clark County School District serves 320,000 students.

Beginning in elementary school, a quality education can make a lifelong difference. Clark County School District is the fift h-largest school district in the United States and serves more than 320,000 students across southern Nevada. The school district believes the biggest difference is made with quality educators. “Studies show that the most im-

portant factor in measuring student successes is the classroom teacher,” says Tya Mathis-Coleman, the district’s human resources director. “Our vision is for all students to graduate from high school having the knowledge, skills, attitudes, and values necessary to achieve academically, prosper economically, and contribute to a global society.” To that end, the school district

PRIORITIZING INNOVATION

At the university level, the University of California San Diego is focused on preparing students for some of the economy’s fastestgrowing fields. Qualified, diverse candidates who have a bachelor’s degree and are passionate about helping students meet their potential are in high demand, says Mathis-Coleman. The biggest needs are in special education (grades K–12), elementary education (grades K–5), and secondary math and science (grades 6–12). Clark County prides itself on the exceptional benefits it provides, including no-cost health insurance and retirement contributions of up to 28 percent of employees’ salaries. “I am a proud product of the Clark County School District and the Nevada System of Higher Education,” Mathis-Coleman says. “I have seen firsthand the incredible impact that great teachers can have in the lives of their students, and it is my goal to fi ll every vacancy, every year, with highly effective classroom teachers.”

The Innovative Cultural and Education Hub will open in 2021.

Aztec alum try to hire new SDSU grads.

AN AZTEC ASSIST Across town, San Diego State University is developing partnerships to strengthen career success for students. SDSU launched Aztecs Hiring Aztecs (AHA!) to raise awareness amongst alumni who are in positions to hire recent graduates. “Upon graduation, SDSU students leave the university qualified and motivated to make a difference in the workforce through internships, part-time jobs, and full-time jobs,” says vice president for student affairs Eric Rivera. “Our goal with AHA! is to increase opportunities for students and to show what many employers already know: SDSU is an institution that produces hardworking graduates

with real-world experiences.” There are plenty of Aztecs to work with too. More than 33,000 students—including undergraduate and graduate students—are currently pursuing degrees in fields such as engineering, education, science, and business administration. Moreover, the SDSU alumni network has national and international reach.

“The term ‘Aztecs’ is very broad. Not only does it include alumni, but also members of our parents association, community supporters, sports season ticket holders, and community partners,” Rivera says. “We know they are in the market for employment talent, and AHA! is our reminder to them to say, ‘Hire the best. Hire from SDSU!’”

My San Diego State “ education has been

invaluable to my career, so I view the hiring and mentoring of SDSU students and graduates as a responsibility I willingly accept to help guide the next generation of Aztecs in becoming successful professionals and leaders in business and in our community.

Auburn’s Executive MBA Program is both innovative and flexible.

Auburn University’s AACSB-accredited Executive MBA Program is perfect for professionals who already have a degree and a full-time job, but are looking to build on their existing success. The innovative and flexible 21-month curriculum gives executives the tools necessary to succeed in 21st century business, including technical, analytical, and creativethinking skills. “As a technology executive with extensive international travel requirements, attending a traditional MBA program would never have been possible,” says EMBA graduate Mike Flannagan, a senior vice president at the soft ware company SAP. For Flannagan, it was important that he find a distinguished program without compromising his career ambitions. “Auburn’s program is well-ranked and well-regarded, but also extremely flexible in terms of when I

BLUE SKY

could study. That meant that I could fit pursuing my MBA into my work and family life, instead of having to fit my life into the requirements of a traditional MBA program,” he says. The EMBA combines a robust online learning platform with five week-long, on-campus residencies and international study. Students dedicate 15 to 20 hours a week to watching online lectures, reading case studies, completing assignments, and collaborating with classmates. Concentrations in leadership, operations, and healthcare are available, as are a range of electives. This variety gives students the ability to tailor the program to best suit their needs. At the end of the 21 months, EMBA graduates are equipped with the essential MBA core disciplines and a global perspective on business to help further their career paths as executives.

Engineer Co-Founder & CEO I knew I could make a difference through my work, but didn’t know where to begin. It didn’t take long for the Rady School to inspire me to start our company, Aira, an operating system that enables blind individuals to connect with a network of certified agents. The Rady School and StartR Accelerator gave me the tools and confidence I needed to make Aira happen, and positively impact the lives of others. Suman Kanuganti, MBA ‘14 Co-Founder & CEO, Aira

REAL-WORLD EXPERIENCE

At the University of California, San Diego’s Rady School of Management, learning to think entrepreneurially is the focus of its core curriculum. Lab to Market moves MBA students from the classroom into real-world, team-based project environments while also developing their skills and knowledge to become innovative leaders. Additionally, interested students can apply to the StartR Accelerator program, which offers workshops, mentorship, and advice for students and alumni working with early-stage companies. A six-month program that was created by Rady students in 2013, StartR culminates with pitches at Demo Day, which is attended by investors and industry experts. Graduate Suman Kanuganti knows the value of these two

programs firsthand. He defined his business plan for Aira, a visual interpretation service for the blind, in Lab to Market, and then took the company to the next level in the Rady School’s StartR Accelerator program. “Aira transformed from a simple idea into a great business because of the opportunities I had at the Rady School,” Kanuganti says. “Lab to Market taught me to think like an entrepreneur and forced me to learn the entrepreneurial way of doing things. [StartR] taught me discipline and showed me that I wasn’t alone. My team met six nights a week to build Aira, and during these meetings, we planned everything we needed to achieve in order to make it a reality.” StartR also helps create valuable

networks. “StartR gave us an environment where we were surrounded by other startups and could connect with each other,” Kanuganti says.

Wells Fargo Hall is home to the Rady School of Management.

CHANGING DIRECTION Many franchisees come from another field and decide they need a change. After spending six years in investment banking in New York and Hong Kong, Alex Ho returned to his native Michigan to run a tutoring company. Soon after, in an effort to diversify, he purchased a Midas auto repair franchise. Why Midas? “It’s an amazing brand,” Ho says. Ho likes the franchising model because it allows owners to choose what they prioritize. “There are so many aspects to running a business, and Midas helps me in areas I may not have time for, like digital and TV advertising,” Ho says. Jimmy Herlong’s story is similar: He enjoyed a decades-long IT management career before joining the Midas team. The South Carolina native describes his new profession as challenging and satisfying.

I was looking for a financial investment that could provide ongoing income to sustain our family for the long haul.

Franchisees David and Shannon Willis

“The IT business was changing dramatically, so I decided I would go into business on my own,” says Herlong, who started out with five Midas locations. He now owns 14 Midas stores, and has brought his daughter, son, and a family friend on board to help with the growing business. Will Reid was nearing retirement when he decided to leave the printing business after 24 years to start fresh with Home Care Assistance. Reid and his business partner, Steve Sudberry, settled on HCA because they appreciated its mission to provide home health care for seniors. “I love the impact we have on our clients’ lives every day,” Reid says. He also appreciates how franchises streamline management decisions. “I can make a decision and implement it the same day, without all

the red tape,” Reid says. “I wanted a change—something that would represent good growth, autonomy, and a chance to do something meaningful with my business efforts.”

Looking for a career change? Try a Midas franchise.

Investing in the future While working in corporate America, David Willis witnessed the uncertainty that comes with being an employee instead of an owner, particularly in the banking segment. He says “I was looking for a financial investment that could provide ongoing income to sustain our family for the long haul.” As a result, David chose to purchase real estate and build an all-new location with support from Kiddie Academy’s Real Estate and Construction teams. With prior business experience working for brands such as GE and Bank of America, David did a great deal of research before deciding to open his Kiddie Academy of Charlotte – Blakeney in August, 2011. He knew the market, believed in the Kiddie Academy concept, and most importantly, understood what children and parents need from a childcare center. His customer-centric approach has distinguished his Kiddie Academy in the market.

For David Willis, building a new Kiddie Academy location helped him to reach both a personal and professional goal. “Finding childcare for my two children certainly spurred me to consider opening my own business. My wife and I couldn’t find the educational experience we wanted for our own children, so we saw opening our Kiddie Academy as an investment in our children’s future as well as a business venture.” Over the last several years David and his academy have won several awards, including Community Leadership, Sales and Customer Service, Best Practices: Character Education, Developmentally Appropriate Curriculum, Health and Fitness and Technology Education.

ALL IN THE FAMILY

Brad and Stephanie Simon led separate professional lives before opening an Arkansas-based franchise of Mosquito Joe, a mosquito control treatment company. Brad worked as a data analyst, while Stephanie was in the medical field. They were drawn to Mosquito Joe because the company’s robust training and support meant they didn’t need prior experience, and they saw the potential to help their community. “We’ve received numerous cards and calls from customers thanking us for allowing them to enjoy their backyard for the first time,” Stephanie says. "That's the greatest reward." They also love building the business as a couple. “Every day we talk about how to improve,” she says.

Brad agrees. “The best part about owning our own business is that we are building something together. We have the same goals personally and professionally with Mosquito Joe.” In 2006, Jerid Thomas had an opportunity to go into business with his father-in-law Gary Goyer, and they jumped at the chance to work together. Veterans of both party rental and moving companies, the duo decided to work in a different realm as owners of a Kansas-based Kolache Factory franchise. Beginning a new venture became a thrilling experience, rather than a scary one, Thomas says. “We

MILITARY VETERANS SERVING IN A DIFFERENT WAY It comes as no surprise that many of the same values honed by military service—honor, respect, organization—translate well into business ownership. Cory Bullock, a former U.S. Navy rescue swimmer, is proof. He served for eight years before he and his wife, Summer, became owners of Kiddie Academy of League City West, in Texas. The tried-andtrue methods developed by Kiddie Academy allowed the Bullocks to get up to speed quickly so they could start providing much-needed educational childcare to their community. For the couple, relying on the franchise corporation’s knowledgeable staff has been instrumental. “Proven franchises have a model

they’ve spent time and money to develop,” Cory says. “The franchisee just needs to implement according to the franchisor’s guidance to achieve success.”

Kiddie Academy provides an educational childcare option.

Although it’s more common in older women, ovarian cancer affects women of all ages, even in their 20s. There is no early detection test, and symptoms can be subtle. But while you can’t see it, you can take steps to get ahead of it by knowing your risk factors. Family history of cancer and presence of gene mutations like BRCA are risk factors, so talk to your family and your doctor. This information makes you less likely to ignore vague signs that could indicate disease. Meanwhile, promising collaborative research will continue to shed light on new advances in diagnosis and treatment of ovarian cancer. To learn more about symptoms, risk factors and research go to

Jaime Camil,

what’s been a highlight of your career?

Catch Jaime as Rogelio de la Vega on The CW’s Jane the Virgin, airing now.

PHOTOGRAPHY BY WILLIAM CALLAN

Last summer, I had the privilege of joining the cast of Chicago on Broadway. In Mexico City, where I grew up, I did West Side Story, Hook, and Aladdin; I come from the theater. Chicago was rewarding, not just because it was theater, but because it’s one of the longest-running musicals on Broadway. To portray the iconic Billy Flynn was just a dream come true.
