Far and above, one of the most exciting moments thus far in my 33-year career at Southwest Airlines® was our service launch to Hawaii earlier this year. We kicked off service to the Hawaiian Islands on March 17 with Flight 6808, which departed Oakland, California, and landed in Honolulu. This inaugural flight was the culmination of several years of hard work and a lot of excitement.

On April 7, we began service from Oakland to Kahului Airport on Maui.

A few weeks later, Southwest® began operating interisland service between Daniel K. Inouye International Airport in

Honolulu and Kahului, four times daily in each direction. Service also commenced between Honolulu and Ellison Onizuka Kona International Airport at Keāhole on the Island of Hawaii, four times daily in each direction. This additional interisland service allows for connecting flights between Kona and both Oakland and San Jose, California.

Hawaii has long been on our wish list and, admittedly, at times it felt more like a fantasy. So many things had to happen in the last decade not only to make this possible, but also to ensure that adding service to Hawaii was the right move

for our Company. We have transformed our business model by revamping our Rapid Rewards® program, introducing larger aircraft in our fleet, and launching international service. Once we decided to serve Hawaii, we had to become certified for ETOPS, or Extended Operations, by the Federal Aviation Administration.

We began the ETOPS authorization process in January 2018 and received our certification in February 2019, which gave us the official clearance we needed to begin serving Hawaii.

When we first made the decision to serve Hawaii, interisland service was not high on our list. But after we made the initial announcement, we heard our Customers loud and clear—you wanted our low fares and legendary Customer Service to operate within the islands.

Because Southwest is no stranger to short-haul travel, interisland service was a natural extension of our new offering.

Whether you’re flying to Hawaii from the U.S. mainland or island-hopping, you can now enjoy our famous Hospitality and friendly policies in one of the most beautiful places on Earth.

When I arrived at the Denver airport, my connecting flight to Minneapolis–St. Paul was canceled due to mechanical issues. I booked another flight to MSP on my phone but mistakenly paid full price because I forgot to exit the existing itinerary. I approached Customer Service Agent Glenn T. at the gate to see if he could help me get a refund for the additional charge. He understood my mistake, called Customer Service, and stayed on hold for 10 minutes in order to get me a refund. During those 10 minutes, Glenn continued assisting other Customers at the gate by processing boarding passes and gatechecking strollers. He even took additional calls while on hold—yes, one phone on each ear. He resolved my problem and maintained an upbeat attitude in his approach to everything. While I ended up facing more travel-related challenges that day, I remained grateful for Glenn’s help. Southwest is lucky to have such a fine representative serving their Company.

I first met Customer Service Agent Karen E. in the baggage claim area last November. She noticed I was still there after most of the luggage had been claimed, so she approached me and offered to help. Karen called to make sure all the luggage on my plane had been sent to baggage claim, and when she learned it had, she asked me for a description of my bags and what was inside. I suddenly remembered my beach bag was full of wet clothes. I expressed my concern that my clothes would be mildewed by the time I got my bag back, but she told me not to worry. I woke up the next morning to a message from Karen letting me know she had found my luggage and had placed my wet clothes in front of fans to dry. When I received my bags, my clothes were completely dry, fresh-smelling, and folded neatly with my other items. I so appreciate Karen and the extra care she gave!

My daughter, Becky, is 15 years old and wants to become a commercial airline Pilot. She’s learning how to fly and has logged more than 16 hours in the left seat. While Becky and I were waiting to board a flight home to Raleigh–Durham, Captain Rob T. approached us in the terminal. He had heard that Becky wanted to be a Pilot and invited her to help with the preflight check. We followed him onto the plane before general boarding, and he reviewed the flight check with her, explaining all the cockpit functions as he flipped switches and pressed buttons. I also want to recognize Captain Martin H., who spread the word about Becky’s dreams of being in that left seat one day. Becky could not have been happier, and we both want to thank Rob and Martin for making the trip home a memorable one. It’s the wonderful People at Southwest who make it such a great airline.

I simply wanted to share how much I enjoyed Flinder Boyd’s article [“A Comeback to Remember,” May 2019] about Curtis Breitweiser and the South Ogden A’s. It was exceptionally well-written and truly touching. I coach a youth baseball team in Chandler, Arizona, and understand how the game and the kids are so much bigger than what we experience on the diamond. Thankfully, my children are still with me, so I have no way of knowing the pain that Curtis felt [after losing his son], but reading about how the team helped him and he helped the team really touched me. Thank you to Flinder for using his talent to help others better understand the power of the human spirit. He has a gift that I hope he continues to give.

I was flying from Nashville, Tennessee, to Baltimore when I read Flinder Boyd’s healing story. Coach Curtis Breitweiser lost his son to suicide in April 2017, and we lost ours to chronic illness and suicide on March 3, 2017. We all know life has its ups and downs, but dealing with the loss of a child—at any age—is a rough road. Flinder’s story warmed my heart as I read and reread it. I found the ending meaningful, when Curtis notes that it’s OK to smile and to be happy. Yes, it is; we just have to find our way back to that point through the many layers of grief, with the support of family and friends. Thank you to Flinder for helping me through his story.

Cocktail history has long been made in St. Louis. The city is reputedly the site of the first cocktail party, and over the years, it’s been a proving ground for some of the most legendary names in bartending. None other than “Professor” Jerry Thomas, the itinerant father of American mixology, once presided at the famed Planter’s House Hotel. The landmark hotel closed in 1922, but its spirit lives on at Planter’s House in Lafayette Square. There, beverage director Ted Kilgore honors tradition without getting stuck in the past. “We’re old school, but we’re celebrating a modern take on cocktails and hospitality,” he says. One highlight: In a Pickle, a dill-infused gin drink whose crisp, refreshing taste has earned it a citywide cult following. No brining or jar-opening required.

hat do refried lentils, grilled sweet potatoes with almond salsa, and chorizo made entirely from mushrooms have in common? They all taste great on a corn tortilla. And they’re proof that when it comes to tacos, the rules are changing.

Mexican food in America is born from the sons and daughters of immigrants, steeped in recipes passed down for generations. Today, in Los Angeles, a new wave of Mexican American chefs is pushing the boundaries of tradition to create dishes that resist easy categorization. The food is not conventionally Mexican and not New American, but defined by the mosaic of cuisines and cultures unique to the region. It’s the braised, charred, and chopped version of a saying that has been adopted by some Mexican Americans to proudly identify their dual roots: Ni de aquí, ni de allá. “Neither from here, or from there.”

On menus, this translates into an anything-goes attitude. The techniques of California’s finest kitchens go hand in hand with the bold flavors of L.A. street food. Mexican traditions are at the forefront, but these classically trained chefs are taking influences from all over the world as they obliterate the line between upscale and casual. This kind of cuisine has been called “Alta California,” a nod to Mexico’s own booming “Baja California” scene and a fitting name for a food

and drink renaissance with such a strong sense of place. It could only come from this tortilla-fueled urban landscape whose identity has been shaped by its diversity.

The taqueros, or taco vendors, of Southern California have helped define the history of Mexican food in this country. Now new-school taqueros are defining its future.

These chefs—including Carlos Salgado of Costa Mesa’s Taco María, Wesley Avila of Los Angeles’ Guerrilla Tacos, and Ray Garcia of Broken Spanish, in downtown L.A.—are blending the seasonal ingredients of California with the flavors and memories of their respective upbringings. In their food, the approachability of the taco truck meets the sophistication of the white tablecloth restaurant. Outside of the L.A. area, chefs like Claudette Zepeda-Wilkins of San Diego’s El Jardín are making names for themselves with similarly inventive recipes. It’s Alta California. It’s Chicano cuisine. It’s the flavor of New California. Whatever you want to call it, distilled to its essence, it’s Mexican food. And it’s more vibrant than ever.

wesley avila isn’t too concerned with tradition. “My approach to food is like the traffic in L.A.,” he says. “Sometimes I go this direction, and sometimes I go that direction.” Avila has a mantra, which he deploys after a hashtag when sharing photos of his tacos on social media.

It’s a rebellious sentiment honoring the city that continues to inspire him: “L.A. don’t play.”

Avila grew up in Pico Rivera, east of L.A., where home cooking meant tacos and other Mexican dishes, and he drove a forklift before going to culinary schools in California and France. He worked for years in fine dining, but Avila’s irreverent style was better suited for his next venture: a bona fide street taquero hauling around a graffiti-tagged grill.

After debuting his concept in a streetside food cart, Avila upgraded to Guerrilla Tacos, a truck that served what he calls “Angeleno” cuisine. His sweet potato taco was adored far and wide, and Avila built a loyal following by delivering upscale ingredients in street food fashion, at street food prices. He sold fresh sushi, thick slices of hamachi sashimi and uni, the kind and quality you might see on a $100-plus omakase dinner menu—at one-eighth the price, and served on top of a tostada.

Last year, Avila opened his brickand-mortar in L.A.’s Arts District, the same neighborhood where he began plying his trade from a cart seven years ago. It’s the kind of place where you can chill with your favorite tío over a fish taco and a Tecate, or impress a hot date by pairing a cocktail with shared bites of tender, sauteéd calamari steak. On either occasion, you’re likely to hear hip-hop music playing from the speakers. Four walls and a roof can’t dull Avila’s edge.

DOWN THE COAST Growing up, Claudette Zepeda-Wilkins split her time between San Diego and Tijuana, and she continues to cross the border for ingredients and inspiration. She describes her San Diego restaurant, El Jardín, as “matriarchal,” honoring the women responsible for safeguarding so many cooking traditions. “My food is the warmth and flavors of Grandma’s house meets 2019,” she says. ray garcia refers to his food as “authentically inauthentic.” Whatever his food is, it’s genuinely his own. “In L.A., there is no shortage of places that serve Mexican food, so I wanted to serve it through my lens,” he says. Garcia showed an early aptitude for creative meals. For example, bologna tacos were one of the first snacks he learned to make. “We didn’t have much money growing up, so I just charred stuff on the burner and made it into a taco,” he says.

Years later, when Garcia opened his first Mexican restaurant, he featured a refined version of that bologna taco, with house-made mortadella and pickles.

After graduating from UCLA with degrees in political science and business economics and attending culinary school, Garcia went on to work at acclaimed restaurants in Beverly Hills and Santa Monica. But Garcia knew he wanted to dedicate his life to preparing Mexican food—his way. He got a high-profile chance in 2013, when he made a number of head-turning pork dishes for a cooking competition. The most memorable may have been the “Pelon Pelo Puerco,” an inspired riff on a popular Mexican push-up candy that kept the treat’s squeezable bott le but replaced tamarind-flavored goo with a sort of pork pâté. Garcia, with his background in innovative fine cuisine and improvisational Mexican home cooking, was on to something.

In 2015, he opened Broken Spanish in downtown L.A., where he continues to shake up Mexican mainstays.

“there’s nothing at the farmers market that can’t be prepared as mexican food,” says Carlos Salgado. “It’s just a matter of fitting it into a memory about maize, chile, and citrus.”

If Salgado’s Taco María had a mission statement, that would be it. But he knows well that it’s difficult to apply tidy definitions to anything as complex as food or identity. “To the Mexicans back in Mexico, I’m not Mexican, and to the Americans here in America, I’m not American,” he says.

Before opening Taco María in an unassuming storefront in a Costa Mesa shopping center, he worked for a decade in Michelin-rated restaurants around the Bay Area. While Salgado may have extensive experience in fine dining, his roots are in Mexican food. His family owned a combo-plate restaurant in Orange County, and Salgado says he still needs his pot of beans once a week.

Salgado’s thoughtful approach is evident in every item on Taco María’s menu, in dishes that filter eclectic ingredients through Mexican traditions. The mushroom-chorizo tacos come in tortillas made from dark blue heirloom corn from Atlacomulco, a couple hours outside Mexico City. His emerald green aguachile is electrically spicy and tart with serrano chile and lime. Instead of Pacific shrimp, there are scallops shipped from Hokkaido, Japan. But make no mistake about what you’re eating.

“I’m Mexican. I love Mexican food.

So my food is Mexican,” Salgado says, using the same tone you would adopt in an effort to describe the meaning of life. He’s talking about great food, so, in a way, he is trying to describe the meaning of life.

Sarah Pratt is here for the first time since last summer, walking along a wall lined by large display cases. She stops to peer through the glass at a familiar sight: the armature that she will soon transform into the world’s most famous butter sculpture.

This summer, at state fairs around the country, crowds will line up to see Pratt’s creation and others like it. More than 100 years since food art became a staple of American fairs and expositions, butter sculptures remain objects of curiosity, an offbeat mix of art and Americana. After all, who wouldn’t want to gaze upon something beautiful molded out of something you slather on toast? These sculptures also continue as icons of a changing but deeply cherished way of life, and as a potent source of civic pride.

That’s especially true in Iowa, where few things are as iconic or beloved as the butter cow.

Right now, it’s wood and wire and steel, its shape only appearing somewhat bovine. Maybe. If you squint. But have faith. This will soon become the pride and joy of the

Iowa State Fair—an enduring symbol of American bounty, a tribute to dairy farmers and to old-school rustic values of cando-it-ness. Pratt, 42, a special education teacher who lives in West Des Moines, knows the butter cow better than anyone.

For decades, first as an apprentice and then as the fifth sculptor in the cow’s more than century-long history at the fair, she has spent part of every summer covering this bare frame with gobs and gobs of Midwestern gold.

In August, by the time the fair begins, the butter cow will be finished, looking back at you with its surprisingly pretty eyes. And inside the display case, which is kept at 42 degrees Fahrenheit, cold enough to cause unacclimated hands to swell up like balloons after a few minutes, Pratt will continue working on a second sculpture, which she’ll create after consulting with officials from the fair and the Midwest Dairy Association. She’s done characters from Star Trek and Harry Potter. Last year it was a tractor, for John Deere’s 100th anniversary. She’d like to eventually do Albert Einstein, who she admires for his contributions to science as well as his “crazy hair.”

Pratt’s 15-year-old twin daughters will be beside her, helping. Her husband and her 7-year-old son, assistants if not outright apprentices, may be there too.

On the other side of the glass, the building will bustle with fairgoers. They’ll check out the exhibitors and get ice cream from the Dairy Barn. And they’ll jump in the long line of people waiting to see Pratt’s workspace. Many of the fair’s 1 million visitors will join this procession. Just like their parents did, and just like their children will. Beyond the novelty of the butter, this is what the sculpture represents.

But to really understand the butter cow, you’ll have to first go back to when a girl from a small town in Iowa was invited to spend the night at the fair.

arming is in the family DNA. Pratt’s grandfather was a hog farmer in Tama, Iowa. Her mother and father were raised there. Her early years were also spent in Tama, but Pratt grew up mostly in nearby Toledo, in an apartment above the pharmacy her parents ran. She remembers the baby pigs on her grandfather’s farm and regular visits to see cousins. The legendary Norma “Duffy” Lyon, who had been sculpting the cow at the Iowa State Fair since 1960, was a family friend.

One year, when Pratt was about 14, Lyon’s great-niece invited her to the fair. The Lyons would be exhibiting some of their dairy cows, and the girls could stay at the fairgrounds, sleeping on bales of hay and

getting the cows ready for prime time. For a girl with farm dreams and a membership in 4-H, it sounded like a lot of fun. It was. The trouble was that she had never before worked with cows on a dairy farm.

“When they said, ‘Head down to the washing station and get them washed up for show,’ I thought, OK, I can do that. And I made a huge mess,” Pratt says. “I just squirted soap all over the cow, and it took an extra hour to wash it all out. So I got a little bit fired from that job.”

She was reassigned to help Lyon, also known widely as the “butter cow lady.” Pratt couldn’t have asked for a better teacher than Lyon, who sculpted for the fair for 46 years and died in 2011 at the age of 81. Lyon was synonymous with butter sculpting, undertaking ambitious projects that expanded the purview of the art, making everything from a life-size Elvis Presley to a diorama of Leonardo da Vinci’s “Last Supper.” And she was perfectly july 2019 southwest 55

suited to the role of spokeswoman for Iowa dairy: Lyon had married a dairy farmer and studied animal science at Iowa State University.

Lyon’s self-assuredness was on full display in 1959, when she came across a photo of the previous year’s butter cow, then sculpted by an artist whose background was in political cartoons. Lyon, who had shown a knack for sculpture while she was in college, didn’t care for his caricature style and preferred a more realist approach that honored both the cow and the history of butter sculpting. She told officials she could do better—and did just that when she was invited to help out. The next year, she was named the official sculptor, a role she held for nearly half a century. “She was very bold and never backed down from a challenge. I admired that about her.

She was always pushing the edge of what was expected of women,” Pratt says. “She was ahead of her time.”

Lyon was also warm and encouraging, and happy to share her art with the world—she never said no to a commission or a media interview request, traveling to do sculptures for other state fairs and often appearing on national television—and with her best student. In Pratt’s first year as an assistant, she cleaned buckets, mostly. Lyon invited Pratt to come back the next year, and the year after that. Each time, Pratt learned a little more and took on more responsibilities. One of her earliest duties was smoothing out the bumps and imperfections in the sculpture.

Lyon eventually started telling anyone who asked that Pratt would eventually take over. Pratt had other plans. She went to college at the University of Northern Iowa. She dreamed of becoming a teacher and traveling Europe. But after Lyon suffered a stroke in 1997, Pratt got even more involved, helping her mentor with the work while ensuring that Lyon stuck to her schedule and took her medication.

Outside of her summers as the sculptor’s apprentice, Pratt’s life continued. She got her degree and went to work as a teacher.

She fell in love with a jazz musician, Andy, and got married. After she had her twin daughters, Hannah and Grace, she temporarily quit teaching full time. This was around 2005, when Lyon retired and called to say that now, Pratt really was taking over.

“I tried to tell her, ‘No, I can’t do it,’” Pratt says. “And she said, ‘Oh, I already told them you are. And this is the day you’re starting, and this is the day the butter’s coming.’” It was hard to argue with that.

ratt works under a heavy burden of expectations. Her challenge is to honor the legacy of her predecessor as well as her own voice. And like many artists before her, she also has to please her patrons: the Midwest Dairy Association and the Iowa State Fair, not counting the other fairs, including ones in Illinois and Oklahoma, that she has done work for. Then there are the fairgoers. The butter sculptures belong to the people, and Iowans rightly take a sense of ownership of their state’s biggest event, says Iowa State Fair marketing director Mindy Williamson. Some change is inevitable, but fairgoers are protective of their traditions, including butter sculpting.

The process starts with, well, butter, about 600 pounds of it. Salted. It holds better that way. Low-moisture butter is best. Pratt, who makes an effort not to waste anything, emphasizes that in Iowa she’s been reusing the same butter, give or take a couple hundred pounds, since 2006. (That explains the blue cheese smell. The newer butter, which has a richer yellow color but is more difficult to shape, has a mozzarella odor, she says.)

decades, but the frames for the secondary sculptures can require extensive tinkering. The wood and wire infrastructure of last year’s John Deere tractor, leaned against a wall in the hallway leading to the back of the glass display booth, looks like an elaborate medieval weapon the size of a horse—or a cow. There’s a welder Pratt likes for the difficult jobs, but Andy got her some welding equipment as a birthday gift a few years back, and she’s taken a few classes.

Before any butter touches the armature, however, there’s the study and the sketching. Pratt’s first year as the lead butter sculptor, Lyon took her out to the farm, and the women drove around on a golf cart. Lyon pointed at each cow they passed: “This cow has very nice front legs. And this cow has the best udder. Notice how straight this one’s back is.” And then they would sketch. These days Pratt will watch videos of dairy shows online, to observe cows in motion.

The goal is to create the platonic ideal of a dairy cow. The perfect cow. For that reason, she uses different photos of various cows for reference. Every summer, the cow is familiar, but one of a kind. She prefers Jersey cows for their “big, dark, beautiful eyes” and long eyelashes, but has also sculpted Ayrshires and Holsteins.

Over the years, Pratt’s confidence has grown, as have her abilities. With her eye for detail, she may spend hours perfecting the veins on an udder. Most of her tools would be known to any clay sculptor. Others, like some items used to spread fondant on cakes, would be more familiar to a baker.

A few are custom-made. The material, too, is similar to clay, only smellier. Pratt relies a lot on her hands. Fingernails and the warmth of the human body are both invaluable. So is time.

The actual sculpting of the butter cow usually takes about a week to complete. The secondary piece can take longer, and there are often a lot of late nights in the Agriculture Building as her deadline approaches. Like most sculpture, working with butter requires a keen sense of proportions. When Pratt teaches the art, as she has begun doing in recent years, her class will begin by discussing the importance of scale. Her students build an armature with a foam board and a metal bolt, then apply papiermache that Pratt has dyed yellow.

When they’re ready, they’ll use a stick of butter and the frame to sculpt a famous work of architecture, from two-story buildings to soaring skyscrapers. How closely the butter building resembles its real-world inspiration, like how closely a butter cow resembles its model, depends on how its various parts relate to each other.

Working with butter also poses some particular challenges. Temperature, for one thing. Pratt has about 40 pounds of old butter in her freezer at home, which she and her daughters will occasionally use

for smaller pieces. In the winter, her garage is cold enough to preserve the butter’s form. The rest of the year, the art needs to go in the freezer. Accidents have to be fixed.

Butter melts and cracks. An udder has to be reattached. A kneeling figure topples over and needs to become a sitting figure.

Pratt’s family members have been her most accomplished students and her most valuable assistants. Her parents have suggested ideas for the secondary sculpture.

She’ll consult with her brother, an engineer, and her sister when she gets stuck. Andy helps with everything from butter prep to armature transportation (getting a Tilt-A-Whirl frame from Iowa to the Tulsa State Fair in Oklahoma was a recent task) to watching the kids. One year, when the twins were younger, Pratt sat them on a piece of butcher paper and gave each a piece of wire and some butter. Grace made a butter crown and waved regally at fairgoers

through the glass. In the last couple years, the girls have taken a more hands-on role. Even Dean, at 7 years old, is a fount of good ideas, suggesting the possibility of a sculpture made from nacho cheese.

Hannah eventually wants to be an art teacher. Grace isn’t sure yet. They’ll always have a summer job, at least. The twins have known they’re next in line to sculpt butter for the Iowa State Fair for as long as people have been asking.

When Pratt was her daughters’ age, she wanted to be Indiana Jones, an archaeologist who would teach during the school year and then set off on epic adventures.

Her life had gone in a different direction. But, Hannah pointed out, it hadn’t. Not really. Pratt became a teacher. And when fair season comes along, she gets to become something else. “It’s not the adventure I had thought about when I was younger, but it is true,” Pratt says. “I get to have this adventure every summer.”

s the Tibetan monks who have long carved sacred figures from butter will tell you, nothing in life is permanent. But all traditions come from somewhere. In the Western world, the use of food art as table settings for elaborate banquets and uppercrust parties dates back hundreds of years. However, it was in the U.S. that butter sculptures became more egalitarian symbols. In Corn Palaces and Butter Queens, her book on America’s love affair with butter sculptures and their ilk, art historian Pamela H. Simpson writes that food art “may have begun on the tables of the wealthy and powerful, but its audiences democratically expanded at local festivals, state fairs, and international expositions.”

Caroline Shawk Brooks, an Arkansan who began dabbling in food art to drum up some extra cash after her farm’s cotton crop went wrong, was the first American butter sculptor. Her “Dreaming

Iolanthe,” exhibited at the 1876 Centennial Exposition in Philadelphia, was a sensation. Brooks’ tender portrayal of the blind princess, which, pre-refrigeration, was carefully packaged and transported in ice, was described by a reporter at the time as having “a richness beyond alabaster and a softness and smoothness that are very striking.”

Others followed, especially as Midwestern farmers saw the opportunity to advertise and romanticize their business at a time when industrialization and new technology were changing the face of farming. Professional sculptor John K. Daniels began doing butter work by commission in 1900.

He sculpted a replica of the Minnesota State Capitol for the 1901 Pan-American Exposition, and in 1911, he sculpted the Iowa State Fair’s first butter cow.

As butter sculptures spread to American fairs and expositions in the late 1800s and early 1900s, they were seen as “icons of abundance,”

“Even though butter sculpting has been around for centuries, it has this mystique.”

Simpson writes. “They evoked an image of the nation as a New Eden and a land of plenty. They affirmed national policies of expansion and contemporary beliefs in the blessings of divine providence.”

That’s no longer the case, although the sculptures remain a celebration of dairy farmers, a tribute to the hard work and the beauty of a rural way of life far removed from many fairgoers’ daily experience. “Sometimes people see a product in a store and they forget the face behind it,” Pratt says. But the mentality of abundance has

shifted, she says, to one of conservation. What’s important now is the continuity.

“It’s something that people can remember from their childhood and revisit and pass on to their kids,” Pratt says. “And it’s quirky and unique and interesting and different. Even though [butter sculpting] has been around for centuries, it still has this mystique.”

Different customs exist at different fairs. In 2013, for the size-obsessed State Fair of Texas, artist Sharon BuMann used 4,000 pounds of butter for a rendition of

For 47 years and counting, Linda Christensen has been the butter sculptor at the Minnesota State Fair, where every summer she creates 90-pound busts of each of the 12 dairy princesses who qualify as finalists in the Princess Kay of the Milky Way pageant. Christensen works with live models in front of an audience. She carves each “butter head” from a block, one per day throughout the fair’s run.

These traditions will continue, even as the world celebrated by butter sculptures undergoes upheaval. Battered by low milk prices and a consolidating industry, dairy farms have disappeared at a stunning rate—there are now about 40,000 dairy farms in the U.S., compared to nearly 650,000 in 1970.

(This even as butter consumption in the U.S. neared a 50-year record high in 2017.) But the butter cow never goes anywhere, even if it spends most of the year as a skeleton in an empty cooler.

“We talk about ephemeral art as part of the class I teach,” Pratt says. “I think it’s essential. We talk about resiliency and the act of being able to let something go. It’s not going to be permanent. That’s the nature of our butter sculptures. We build them, and then the next day we tear them down, and we build something else.”

Pratt, still a farm girl at heart, has talked to her family about how, in the future, they could move from their two-story home in West Des Moines to somewhere more rural. “We would live out in the country, taking care of animals and just being outside,” she says. It’s not a sure thing. Not much is. Count on this, though.

Soon, Sarah Pratt and her family will create the butter cow at the Iowa State Fair. Later, they’ll bring it down. Next summer, they’ll do it all again.

REIMAGINED 3D PRINTING CHILDREN’S HOSPITAL &

Medical Center in Omaha, Nebraska, is seeing the patient care benefits of innovation— in 3D. “3D printing translates what I see as 2D images on a computer screen into something physical, something that people can better relate to,” says Lincoln M. Wong, M.D., a pediatric radiologist at Children’s.

An early adopter with an eye on improved safety and patient outcomes, Children’s began using 3D modeling in 2016. Its cardiologists saw a need in the treatment and preoperative planning of congenital heart defects. Since then, the radiology department at Children’s has created more than 100 3D models, collaborating with many surgical subspecialties. “After we printed a few hearts, we quickly realized the potential it could have to help patients in other specialties, so we started branching out into general surgery, orthopedics, craniofacial surgery, urology, and ENT,” Wong says.

Children’s four 3D printers work with specialized software to convert CT or MRI scans— two-dimensional images—into 3D models. A printed model of a child’s heart, for example, can be used to determine the best course of treatment, anticipate the correct size of

a patch or device, or discover other abnormalities in the child’s anatomy.

“It’s a very advanced visualization technique,” says Gabe Linke, Children’s 3D printing coordinator. “I’ve seen our division chief of cardiothoracic surgery cut the model open in the same way that he will operate on the patient.”

Right now, Children’s is the only hospital in the region using 3D models for clinical practice. The potential upsides include increased surgical precision and patient comfort,

and decreased surgical times.

Printed models have also proven effective educational tools for medical students, residents, and fellows—as well as for patients and their families, who can use them to see exactly what will happen in the operating room.

“It’s very fulfilling to try to optimize care for kids,” Linke says. “We’re excited to be on the forefront, and I think we’re going to continue to push those boundaries to advance this technology into even more areas.”

PRECISE RADIATION THERAPY NOT LONG AGO, there was little hope for cancer patients whose primary tumor had spread to one or two other parts of their body (an occurrence known as oligometastasis). However, in the first randomized clinical trial of its kind, researchers concluded that stereotactic body radiation therapy, which uses a high-dose form of uberprecise radiation, can increase survival odds for those with oligometastatic tumors. Franchisors can even jump-start your business. One client recently signed with Express Employment Professionals. Small portable electronic devices (PEDs) such as tablets, e-readers, and smartphones weighing less than 2 pounds may be used in AIRPLANE mode at all times on domestic flights, unless a Crew Member indicates otherwise. A small PED may be held in hand, attached to a person, or placed in clothing or a seatback pocket. Devices and accessories may not block access to the aisle. Large PEDs such as laptops weighing 2 pounds or more must be stowed under the seat or in an overhead bin for taxi, takeoff, and landing. It is recommended that laptops be placed in a case when stowed under the seat. On international flights, all PEDs must be turned off during taxi, takeoff, and landing at airports outside the U.S. and its territories. Please use headphones for all audio and video. Zachary Levi originally sent in a video audition for the role of Super Hero Freddy.

It went over so well that the filmmakers asked him to audition for the lead.

The cell phone charging scene was such a hit in the trailer that David F. Sandberg decided to keep it in the film. There are jump cuts in the scene because it was only filmed once, as one long take.

All three of the crocodile men are played

by Shazam! director David F. Sandberg.

The VFX team had to create a CG version of Philadelphia in its entirety.

I’ve always had a pretty wide array of interests, but lately I’ve been really into baking bread and learning about the science behind it, specifically with sourdough culture. I don’t have a [sourdough] starter, but I have a friend in New York who has a little starter that he has promised me. I’ve just got to go and fetch it. In the meantime, I’ve made basic, bad-tasting bread.

I’ve still got to get my skill level up.
