MOJITO MOJO in full swing

RECIPE The standard Mojito (1) is a traditional Cuban highball cocktail that consists of five ingredients: white rum (Bacardi is ideal), sugar (traditionally sugar cane juice), lime juice, soda water, and mint. The original Cuban recipe uses spearmint or yerba buena, a mint variety very popular on the island. Its combination of sweetness, citrus, and mint flavors is intended to complement the rum, and has made the mojito a popular summer drink the world over. It does has a relatively low alcohol content though (about 10% alcohol by volume) but more than a few will definitely make you feel squiffy! HISTORY One story traces the Mojito to a similar 16th century drink known as “El Draque”, after Sir Francis Drake. In 1586, after his successful raid at Cartagena de Indias Drake’s ships sailed towards Havana but there was an epidemic of dysentery and scurvy on board. It was known that the local South American Indians had remedies for various tropical illnesses, so a small boarding party went ashore on Cuba and came back with ingredients for an effective medicine. The ingredients were aguardiente de caña (translated as burning water, a crude form of rum made from sugar cane) mixed with local tropical ingredients: lime, sugarcane juice, and mint. Lime juice on its own would have significantly prevented scurvy and dysentery!

briefly stirred to dissolve the sugar and to lift the mint leaves up from the bottom for better presentation. Finally, the drink is topped with crushed ice and sparkling soda water. Mint leaves and lime wedges are used to garnish the glass. VARIATIONS 2) Dirty Mojito: Dirty up your mojito by using a gold rum instead of a white and changing the simple syrup or white sugar to raw sugar or demerara sugar 3) Dark Mojito: Simply use a dark rum for this one for a full and rummier tasting mojito. 4) Mango Mojito: Can be made with white rum or Cruzan Mango Rum but get yourself a mango and blend it with the rum ready to mix! 5) Strawberry Mojito: A berry tasty (see what we did there?) and refreshing twist on the regular mojito, only this time “muddle” in some strawberries with the mint, sugar and juice! 6) Frozen Mojito: As an original recipe but once muddled together, strain out the mint leaves to leave a nice, clean mixture and blend in a processor with ice to make a slushy. You can then continue with the rum and soda and garnish with lime and mint. 1

Later, Tafia/rum was soon added as it became widely available to the British (ca. 1650). Mint, lime and sugar were also helpful in hiding the harsh taste of this spirit. While this drink was not called a Mojito at this time, it was the original combination of these ingredients. Preparation When preparing a mojito, lime juice is added to the sugar and mint leaves. The mixture is then gently mashed with a muddler. The mint leaves should only be bruised to release the essential oils and should not be shredded. Then the rum is added and the mixture is

Jurassic World. Fallen Kingdom. In theatres June 22nd 2018. SUMMARY It’s been four years since theme park and luxury resort “Jurassic World” was destroyed by dinosaurs out of containment. Isla Nublar now sits abandoned by humans while the surviving dinosaurs fend for themselves in the jungles. When the island’s dormant volcano begins roaring to life, Owen (Chris Pratt) and Claire (Bryce Dallas Howard) mount a campaign to rescue the remaining dinosaurs from this extinction-level event. Owen is driven to find Blue, his lead raptor who’s still missing in the wild, and Claire has grown a respect for these creatures she now makes her mission. Arriving on the unstable island as lava begins raining down, their expedition uncovers a conspiracy that could return our entire planet to a perilous order not seen since prehistoric times. With all of the wonder, adventure and thrills synonymous with one of the most popular and successful series in cinema history, this all-new motion-picture event sees the return of

N332 Driving in Spain

the best place to find easily digestible information regarding road and traffic laws in Spain.

Give way in EMERGENCIES As in the UK (and other countries) Emergency vehicles, which are responding to an incident, have priority over other vehicles. During any journey on the road we must be forever conscious of our surroundings, allowing all of our senses to combine to provide special and location awareness, so that we can constantly react to changes as they happen, or, ideally, prompting situations and pro-actively preparing for these changes. The security services, such as the police and Guardia Civil, and the rescue services, such as the fire service or ambulances, are to be given a clear run when they have their lights flashing or sirens sounding, so long as this can be done safely. If we hear sirens or see emergency vehicles with flashing lights, our first reaction should be to make way for them in as safe a way as possible. On a clear and open road, if you are aware that a priority vehicle is approaching from behind, move over to a position which will allow the emergency vehicle to pass. It may be useful to indicate so that the driver of the emergency vehicle is aware of your intention. Carry out the manoeuvre without rushing, panicking or with any sudden movements. Once the emergency vehicle has passed, you may continue on your way.

At junctions or intersections, vehicles should pull over to the side to allow the emergency vehicles to pass. Do not attempt to cross the path of an oncoming priority vehicle. If you are on a roundabout when an emergency vehicle approaches, give way to the priority vehicle from either direction where possible and safe, allowing it to pass freely. Never attempt to follow an emergency vehicle and never pull out in front of them, always stay well clear and well back, without carrying out any sudden movements, remembering to move over where safe and possible. In the event of approaching an emergency scene, pay close attention to those who are directing traffic, acting on their instructions and directions. Always pass the scene giving as much space as possible and always pay close attention to the traffic and the situation, never letting curiosity get the better of you and distract you when you pass. The DGT has created a series of short videos which show the correct procedure for each of the circumstances listed, they can be viewed on the DGT website, www.dgt.es

In the event of a queue of traffic of two lanes, the emergency vehicle will attempt to cut a path through the middle, so that vehicles on both sides are able to move to the side and allow for a safe passage. You can find more info and additional stories by visiting their website www.n332.es or liking their page on Facebook/N332. They also have a new magazine “N332 Road watch available for download as PDF for just 2 euros.

THINGS TO DO & places to see...

Macael In the Sierra of the Filabres, next to the River Almanzora, is an area formed by the towns of Macael, Líjar, Chercos, Cóbdar, Lubrín, Purchena, Olula del Río and Cantoria. This area is called the ‘comarca of marble’ because it produces 80% of marble extracted in Spain, the second largest producer of marble in the world.

The Lion Fountain

If this Almerian town is known for one thing, then it´s for the marble quarries that surround it, from which nowadays, 80% of all Spanish marble is extracted. Substantial monuments such as the Escorial Monastery, the Mosque of Cordoba and the Alhambra in Granada have been constructed with marble from here. It is very common to see marble statues on the pavements, as they also decorated all the streets and squares of Macael with it. Although its marble has been used for centuries, some say for over 5000 years, there is no information about the origin of the village until the 10th and 11th centuries, during the Al-Andalus period. The original centre of that village is located two and a half kilometres away from the current village, in the so-called “Macael Viejo” (old Macael). Unfortunately, this area has been heavily used as a quarry and the remains of the settlement have not been preserved. HISTORIC MARBLE In the 10th and 11th centuries, marble was extracted for use in the Almeria Castle (Alcazaba), during the reign of Almotacin. In the 13th and 14th centuries, the marble was used in the Alhambra in Granada. If you’ve visited the Alhambra, you would have seen the Lion Fountain in the Courtyard of the Lions, well those 12 lions that surround the fountain were carved from the white marble that was excavated from the hills around Macael back in the 14th Century. In the 16th century, marble was extracted for the “Royal Chapel of the Catholic Monarchs” in Granada and marble was commissioned for the Monastery of the Escorial. Its quarries continued to be exploited and in the mid 17th century, many pieces were commissioned, including those to pave Jaen Cathedral and in the 18th century, for the Royal Palace.

The exploitation of its quarries was even more important in the 19th century due to the industrialization and mechanization of the whole process of extraction, cutting, sawing and polishing which would give it a strong boost. The extension of the market came about thanks to the railway and it meant that the use of marble was extended not only for noble historic works but for private houses, furniture and other diverse uses. THE TOWN If you’re going to Macael, in addition to the quarries, the Church of our Lady of Rosario is well worth a visit. Here stands the tower, the antique sculptures of Cristo Yacente, especially of the child with the Virgin of Rosario, as well as a valuable oil painting of the ´Purísima Concepción´. The temple, originally of a mudejar style, dates back to the 17th Century.

El Mirador de la Virgen del Rosario

Marble information centre

Centro de Interpretacion del Marmol (Marble information centre) Well worth a visit is the information centre for the local marble quarries. Here you can learn about the history and process involved in the production of the world famous product of the town. You could even be lucky and book yourselves a tour of the quarry itself. Walking around the streets of Macael, you will notice the Cantero Monument, Constitution Square, the neuralgic centre, where you will find stately homes such as the old Town Hall, la Calle Porche, with its slate cover supported by pieces of pine, the porch of Picasso street covered with a canopy, Ejido street porch, the stately home of Don Juan Rubio Ortiz, in Huertos Street, and the two marbles crosses that stand in memory of the craftsmen of the town in the 17th Century: The Cruz de los Mozos, which is in Jarrie street, and the Cross of May (Cruz de Mayo), at the entrance to the town. Another stand-out feature of the town is the viewpoint of Rosario the Virgin, located at the top of a small hill and which is accessible via a walk splattered with benches, water springs and sculptures.

Calle Garcia Lorca 50. Tel: 950 12 89 16 Open Tuesday - Saturday from 10am-2pm & 6-8pm Sundays 10am-2pm

Mortero mas grande del mundo (World’s largest pestle & mortar) No trip to the town is complete without a photo of the worlds biggest mortar (with pestle) is it? The mortar measures 3.29m tall and 3m in diameter and the giant pestle 4.73m long. Crafted from the local marble it really is... big! Just be careful getting those selfies as it stands on a roundabout in the centre of town.

MOORS The Spanish occupation by the Moors began in 711 AD when an African army, under their leader Tariq ibn-Ziyad, crossed the Strait of Gibraltar from northern Africa and invaded the Iberian peninsula ‘Andalus’ (Spain under the Visigoths). The Moors, who ruled Spain for 800 years, introduced new scientific techniques to Europe, such as an astrolabe, a device for measuring the position of the stars and planets. Scientific progress in Astronomy, Chemistry, Physics, Mathematics, Geography and Philosophy flourished in Moorish Spain Basil Davidson, one of the most noted historians recognized and declared that there were no lands at that time (the eighth century) “more admired by its neighbours, or more comfortable to live in, than a rich African civilization which took shape in Spain”

At its height, Córdoba, the heart of Moorish territory in Spain, was the most modern city in Europe. The streets were well-paved, with raised sidewalks for pedestrians. During the night, ten miles of streets were well illuminated by lamps. (This was hundreds of years before there was a paved street in Paris or a street lamp in London.) Cordova had 900 public baths - we are told that a poor Moor would go without bread rather than soap! The Great Mosque of Córdoba (La Mezquita) is still one of the architectural wonders of the world in spite of later Spanish disfigurements. Its low scarlet and gold roof, supported by 1,000 columns of marble, jasper and and porphyry, was lit by thousands of brass and silver lamps which burned perfumed oil. Education was universal in Moorish Spain, available to all, while in Christian Europe ninety-nine percent of the population were illiterate, and even kings could neither read nor write. At that time, Europe had only two universities, the Moors had seventeen great universities! These were located in Almeria, Córdoba, Granada, Juen, Malaga, Seville, and Toledo. In the tenth and eleventh centuries, public libraries in Europe were non-existent, while Moorish Spain could boast of more than seventy, of which the one in Córdoba housed six hundred thousand manuscripts.

Over 4,000 Arabic words and Arabic-derived phrases have been absorbed into the Spanish language. Words beginning with “al,” for example, are derived from Arabic. Arabic words such as algebra, alcohol, chemistry, nadir, alkaline, and cipher entered the language. Even words such as checkmate, influenza, typhoon, orange, and cable can be traced back to Arabic origins. The most significant Moorish musician was known as Ziryab (the Blackbird) who arrived in Spain in 822. The Moors introduced earliest versions of several instruments, including the Lute or el oud, the guitar or kithara and the Lyre. Ziryab changed the style of eating by breaking meals into separate courses beginning with soup and ending with desserts. The Moors introduced paper to Europe and Arabic numerals, which replaced the clumsy Roman system. The Moors introduced many new crops including the orange, lemon, peach, apricot, fig, sugar cane, dates, ginger and pomegranate as well as saffron, sugar cane, cotton, silk and rice which remain some of Spain’s main products today. The Moorish rulers lived in sumptuous palaces, while the monarchs of Germany, France, and England dwelt in big barns, with no windows and no chimneys, and with only a hole in the roof for the exit of smoke. One such Moorish palace ‘Alhambra’ (literally “the red one”) in Granada is one of Spain’s architectural masterpieces. Alhambra was the seat of Muslim rulers from the 13th century to the end of the 15th century. The Alhambra is a UNESCO World Heritage Site It was through Africa that the new knowledge of China, India, and Arabia reached Europe. The Moors brought the Compass from China into Europe. The Moors ruled and occupied Lisbon (named “Lashbuna” by the Moors) and the rest of the country until well into the twelfth century. They were finally defeated and driven out by the forces of King Alfonso Henriques. The scene of this battle was the Castelo de Sao Jorge or the ‘Castle of St. George.’

What Next: How to get the best from Brexit by Daniel Hannan. Drawing on his experiences at the heart of the campaign, Daniel Hannan dissects the result and our reaction. He outlines why Vote Leave won, exploring what people were voting for and what they weren’t. He looks at the immediate aftermath – how it differs from what people expected and what it says about where to go next. Brexit, Hannan points out, is a process – not an event – with three key areas of consideration: our relationship with the remaining 27 EU states; our relationship with the rest of the world; and, crucially, our consequent domestic reforms – there is no point to Brexit if we don’t now tackle the threats to democracy of corporatism and lobbying. What Next is Hannan’s blueprint for a successful Brexit. A Brexit that addresses the concerns of the 48% who voted Remain as well as of the 52% who voted Leave, a Brexit that revitalises British democracy, and a Brexit that will be mutually beneficial for both Britain and Europe.

Brexit: Why Britain Voted to Leave the European Union By Harold D. Clarke, , Matthew Goodwin & Paul Whiteley As this book reveals, the historic vote for Brexit marked the culmination of trends in domestic politics and in the UK’s relationship with the EU that have been building over many years. Drawing on a wealth of survey evidence collected over more than ten years, this book explains why most people decided to ignore much of the national and international community and vote for Brexit. Drawing on past research on voting in major referendums in Europe and elsewhere, a team of leading academic experts analyse changes in the UK’s party system that were catalysts for the referendum vote, including the rise of the UK Independence Party (UKIP), the dynamics of public opinion during an unforgettable and divisive referendum campaign, the factors that influenced how people voted and the likely economic and political impact of this historic decision.

Brexit: What the Hell Happens Now? 2018 Edition By Ian Dunt The only book you need on Britain’s biggest political issue. Find out how Brexit will affect Britain - and what will happen if the UK crashes out of the EU without a deal. Based on interviews with experts in the law, trade and politics. “Admirably brief & necessarily brutal... Whatever your position during the referendum, you ought to read Dunt because he is willing to face uncomfortable facts. Highly recommended” Nick Cohen, The Spectator “Compact & easily digestible. I’d encourage anyone who is confused, fascinated or frustrated by Brexit to read this book - you’ll be far wiser by the end of it.” Caroline Lucas, Co-Leader, Green Party “I would strongly recommend Ian Dunt’s excellent guide. Dunt has taken the extraordinary step of asking a set of experts what they think. I learnt a lot.” Philip Collins, Prospect

first time SNORKELLING What is your first time snorkelling experience going to be like? A once in a lifetime experience that you can’t wait to repeat? Or a miserable, boring or even dangerous experience? Unfortunately, poor first time experiences are pretty common. Many think that snorkelling is so easy you can just throw on some gear, jump in, and it is all fun from there on.

But the truth is that while snorkelling is a very enjoyable and easy sport, without some basic skills, good equipment, and knowledge about the dangers and conditions of the ocean, a first time snorkelling experience can be a bit miserable, scary and potentially dangerous. Once proficient, snorkelling is a great way to exercise if you find swimming too strenuous.

MASK, SNORKEL & FINS: The basics... Learn How To Fit A Mask & choose a snorkel: Masks come in different sizes and shapes, and can be adjusted to your face. Look for a good fit, so it does not leak. A fogging mask is a real pain, because you can’t see very well through it. Choosing the correct mask: Its not about what looks nice or cool, it’s more important to choose one that fits your face shape best so try several. Without strapping it to your head, hold the mask to your face and check important areas like to the sides of your eyes, under your nose and on the bridge of the nose that the fit is not too narrow or too wide. It shouldn’t squeeze your nose underneath or rest on your nose. Try pushing against your face a little to double check because under water, the pressure will do this too. Fitting Hint For Men - Don’t forget to shave before you go to do your snorkel mask fitting. It is hard to test a seal with a lot of stubble. The next step is to put the mask to your face, press slightly, inhale a small amount through your nose to suction it to your face, and

release your hands. The mask should stay on your face without continuing to inhale, now you have a mask that fits! Notice that a good fitting mask will stay on with just a little suction. Now try it with the mask strap on your head. You should get an airtight fit with very light strap pressure. The strap should sit high on the back of your head, not resting on your ears. If it rests on your ears it will get painful. Be careful not to over tighten. Red marks on your face from the mask mean you need to loosen that strap a little. Finally, with your mask on with the straps, see what happens to the seal when you put a snorkel in your mouth. Most folks don’t do this, but it can really change the shape of your face and break the seal of some masks. If it does, try another mask. What type of snorkel should you choose?: There are actually a number of things to consider. Your mouth comfort is very important. So make sure and get one that is a good fit for your mouth size and the right tube size if it is for kids as too small or narrow and you’ll work harder to breathe, too long and wide and you’ll be breathing your old air!

LEARN THE BASICS: and enjoy your snorkelling experience Practice In A Pool Or Calm Shallow Beach: So you’ve got your new mask, snorkel and fins. Next, pick a spot like a swimming pool or calm shallow sandy beach to get a feel for breathing through your snorkel. It takes a while to train your body into becoming comfortable breathing through a snorkel with your face in the water. The main trick is relaxing. Kick around a little, learning how to use your big leg muscles slowly to propel you easily around with your fins. If you are not a strong swimmer, use a flotation device. Either an inflatable snorkeller’s vest, or a water noodle. Don’t worry about what you look like. Being comfortable and safe is most important. Stay Relaxed & Reduce Effort: Swim Slowly! Exhaustion is a common problem for first time snorkellers. Swimming takes a good bit of energy. The trick with snorkelling is to stay relaxed and calm. You can wipe yourself out quickly if you are not careful. Only swim at a speed that allows you to breathe slowly and easily through your snorkel. Your snorkel does limit your breath, so keep your activity level at a pace that does not demand heavy breathing. Your fins will make it much easier. Learn to just float without effort. Only swim rapidly if necessary for safety.

Choose A Calm Spot: as just mentioned, only go out if it is calm. This often means going in the mornings. Nothing will ruin your first time experience like going out into the ocean when there are waves. It makes entering, exiting and swimming in the water dangerous. It makes using your equipment more difficult. It greatly increases how much effort swimming requires. It may make you seasick. Waves almost always reduce underwater visibility, so you won’t be able to see what you are there to see. So only get in the water if it is calm your first time (less than six inch waves). Choose An Interesting Spot: Choose a beach spot that is alive, meaning it has lots of fish and corals or rocks to see. If you pick a dead or boring spot for your first time, you likely will not understand why people like doing this. Don’t go out alone: Always have a partner or a friend with you, no matter what. Even if they are not snorkelling and just swimming, you must have someone with you or at the very least, can see where you are either from the water of the beach. It is comforting to see other snorkellers on the water before you get in too, so you can get a sense of what the conditions might be like by observing them.

Read Ocean Conditions: Understand ocean currents, waves and surge. The ocean is alive, and the water flows, often taking you with it. Understanding the basics of how the ocean moves and your place in the movement is essential for safety.

Come At It With Appreciation: Having a good snorkelling experience is partly about expectation. Why are you going snorkelling? Why do we snorkel? We do it for many reasons, but the primary reason is joy. Snorkelling is about the joy of watching and appreciating the beauty of the underwater world. If you have no interest in the natural world, snorkelling is probably not for you.

Read up on wave sets, tides and most importantly, currents. Any other relevant info to your location is highly recommended and be sensible. If it looks to rough, don’t go in. Don’t snorkel for the first time somewhere remote, stay near popular beaches or a beach that has a lifeguard, and stay in the shallows until your are confident, then you can explore a bit more!

Snorkelling is less a physical sport, and more a meditation. Learning how to relax, allowing yourself to be completely supported and held by the salt water, being in the moment, experiencing all the movement and life around you, that is what snorkelling is about so come to snorkelling with a joyful attitude of appreciation for what you get to experience, and you will have a better time.

Always consult your doctor or a health official for your own personal requirements or with any queries relating to any of our featured articles.

First let’s just look at the basics. There are 4 main types of snorkel, each with their own benefits and downfalls so try a few until you’re completely happy as this will make your snorkelling experience so much more enjoyable. Classic: A classic is just that, a solid tube with a mouthpiece. Sometimes these can be bent to a specific shape, but they are generally not as comfortable to use as one with a flexible tube section. They have no splash prevention, and no purge valves, and if you dive underwater or have a wave fill the tube, you will need to clear it by exhaling forcefully. Flexible with Purge: The next level up of has a partial flexible silicone tube and will most often have a purge valve. Flexible will always allow more movement and feel more comfortable and the purge valve is basically a sump area where any water that has come down the tube will collect (it is lower than your mouth and keeps small amounts of water from entering your mouth). There is a little valve in this area, so that when you blow out it will clear water from the tube, instead of having to blow it all out the top. Semi Dry With Splash Guard: A semi-dry snorkel has a splash

guard on the top to stop spray and splashes entering the tube, and will most often have a flexible tube and a purge valve too. Dry Snorkel: A dry snorkel has a special valve on top of the tube that completely seals out all water (and air) when a wave comes over, or when you dive underwater. Finding your Fins (Not flippers!): You can swim without fins, but you gain so much efficiency and speed with them. If you are in a strong current, you will bless those fins. They also protect your feet from accidental contact with rocks and coral, it can really tear up unprotected feet. You can also tread water more easily, saving lots of energy, which could be a life saver. There are 2 main types, closed foot (like a fitted shoe) or open foot (backless with strap). The latter being used more for scuba diving so stick with the closed foot type for snorkelling in our opinion. When making your choice, comfort should be one of your top priorities. You should not have any hard spots rubbing on you. You should be able to snorkel for an hour or two without any major discomfort (blisters, etc).

“One doesn’t stop seeing. One doesn’t stop framing. It doesn’t turn off and turn on. It’s on all the time.” – Annie Leibovitz

PHOTOGRAPHERSOFINFLUENCE Annie Leibovitz

Annie Leibovitz was born on October 2, 1949, in Waterbury, Connecticut. In 1970 she landed a job at Rolling Stone and went on to create a distinctive look for the publication as chief photographer. In 1983 she began working for the entertainment magazine Vanity Fair, continuing to produce images that would be deemed iconic and provocative. Having also worked on high-profile advertising campaigns, Leibovitz’s images have been showcased in several books and major exhibitions around the world. While with Rolling Stone, Leibovitz developed her trademark technique, which involved the use of bold primary colors and surprising poses. She is alos credited with making many Rolling Stone covers collector’s items, including an issue that featured a nude John Lennon curled around his fully clothed wife, Yoko Ono, taken on December 8th, 1980, that Polaroid of the former Beatle was shot just hours before his death. In 1983, Leibovitz left Rolling Stone and began working for Vanity Fair. With a wider array of subjects, Leibovitz’s

by Dean Baker

photographs for the magazine ranged from presidents to literary icons to teen heartthrobs. As I rarely involve myself with fashion or portrait photography, it’s hard to explain or exhibit how Leibovitz’s work reflects in my own but as with all the artists I’m featuring in these pages, their styles are etched into my mind. From her earlier work at with those iconic publications to her more recent books and personal projects, for me, I feel that her style has shifted from spontaneous and playful to contrived, darker and much more atmospheric feel. This is not a negative commentary on my part but an appreciation of how a persons work can evolve. The perceived relationship, understanding and connection with her subjects is abundantly apparent and truly inspiring. I recommend taking a look at her works and maybe buying a book or two (“Annie Leibovitz At Work - 2008” or “American Music - 2003” are good places to start) and hopefully you will also be inspired.

FOOD GLORIOUS

FOOD PORK CHOPS WITH CUMIN AND ORANGE A Chinese inspired, Mediterranean style dish, perfect for warmer summer evenings and with the abundance of oranges around here, easy to prepare. Works really well with thinly sliced cucumbers dressed with seasoned rice vinegar and chopped fresh mint. Enjoy.

Ingredients • 4 center-cut loin pork chops (about 3/4 inch thick and 170g each.) • 3/4 teaspoon cumin seed • 3/4 teaspoon coarse-ground pepper • Salt • 500ml chicken broth (fat-skimmed) • 350g couscous • 1 orange (1/2 lb.)

method • Trim and discard fat from chops; wipe chops with a damp towel. Press cumin seed and pepper equally onto both sides of chops. Sprinkle lightly with salt. Place each chop between sheets of plastic wrap; with a flat mallet or rolling pin, gently pound meat to 1/4 inch thick, pounding as close to the bone as possible. • In a medium pan over high heat, bring the broth to a boil (leave a small amount aside for the chops). Stir in couscous, cover tightly and remove from heat; let stand until broth is absorbed and couscous is tender to bite, about 5 minutes. • Meanwhile, set a non-stick frying pan over high heat. When pan is hot, add chops, without crowding, in a single layer, and turn as needed to brown on both sides, 3 to 4 minutes total. • Cut orange in half lengthwise, then cut 1 half crosswise into thin slices, discarding seeds. Cut remaining orange half into 4 wedges. • Return all chops and any accumulated juices to pan. Add sliced orange and the last of the broth; cover and simmer over low heat until meat is no longer pink in the centre (cut to test), about 4 minutes. • Spoon couscous equally onto plates. Arrange chops and orange slices alongside; drizzle pan juices evenly over meat. Accompany with orange wedges to squeeze over pork. Add salt to taste.

Special Ingredients some of the best, and worst, flavour providers

Vegetarians and Vegans need to be extra cautious more and more these days as so many store bought or menu items contain extracts, ingredients or enzymes derived from animals. Although they will be labelled, they may sometimes only be in small print!

Beer and Wine

Here are just a few, possibly surprising, food items that you may have thought “safe” for your particular your diet.

Crisps

Parmigiano-Reggiano Cheese

Cheese makers use an enzyme called either “rennet” or “chymosin”, which is derived from the stomachs of young animals like lambs and calves, to coagulate liquid milk into curds and whey.

Red Sweets

Many red candies—and anything else that’s colored with natural red dye #4, like some ice cream, yogurt and fruit punch—contains carmine. Carmine is the PC term for crushed up beetles (yes, beetles) that are boiled in ammonia or sodium carbonate to extract a red dye.

Yogurt

Not all yoghurts are created equal, and certain brands use gelatin to get that silky-smooth texture. Gelatin is an additive made from the skin, bones, and connective tissues of animals, and is the main reason jelly is so darn jiggly.

Processed Sugar

It isn’t a bleach bath that takes sugar from coarse and brown to fine and white. Most raw sugar is actually refined with a bone char. To make bone char, imported cow bones are incinerated and reduced to activated carbon.

Certain dark stouts, many beer brands, and some wine manufacturers use “isinglass” (aka ground up fish bladders) to filter out leftover yeast particles that make beer and wine look cloudy.

Even if you’re not buying the “Chicken” variety, some brands and flavours of crisps contain chicken fat and pork enzymes. “Most crisps are fried in vegetable oil, but there are some fried in beef or chicken fat. Brands may also use animal fat or flavourings to add a smoky, meaty flavour to the chips.

Vitamins and medications

“Gel caps” doesn’t just mean “squishy.” Many gel capped vitamins and medicines are made with animal gelatin, though they can also be made from carrageenan or agar, which are both plant-based. Some multivitamins also contain fish oils.

Heart-Healthy Orange Juice

Orange juice touted as “heart-healthy” often contains added omega-3s, which are sometimes derived from fish like anchovies, tilapia, and sardines.

Pre-Made Pie Crusts

The flaky, buttery crust promised on most store-bought pies and pie crusts aren’t actually made with butter. Most are made with animal lard, which is less expensive and lasts longer on the shelf.

Around Madrid.

The lure of the city is great but these nearby places are worth a visit. by Hispavan Everyone travels to Madrid to take in the sights but there are several other cities well worth a visit in this area. Cuenca is situated slightly south east of Madrid in the mountains of Castilla-la mancha. It is a well-preserved medieval fortified city built by the moors back in the 8th century. The city is perched between the rivers Jucar and Huecar, offering magnificent views of the surrounding area. The most famous of the sights here are the hanging houses, which appear to cling to the overhanging rocks. Once the whole gorge was lined with such houses but today there are only a couple left. One of which has been transformed into a gallery displaying some of central Spains finest abstract art. Cuenca

Segovia, north of Madrid is situated at the join of the rivers Eresma and Clamores, at the foot of the Guadarrama mountain in Castilla y Leon. The city is best known for it´s 1st century Roman aqueduct that runs through the city centre. The walled city features many impressive historical structures and monuments including a 16th century Gothic cathedral. Narrow cobblestone streets lead down to a main plaza and outside of the walls lie scenic gardens and open green spaces, Salamanca, nicknamed la Dorada, (the golden one) for its sandstone buildings that appear to glow, lies north west of Madrid towards the Portuguese border. The first university in Spain was founded here and the city still remains today a prestigious educational centre attracting both Spanish and international students alike. Around the city many trendy cafés and lively bars are to be found, where you can enjoy the friendly atmosphere whether you are a student or not. Take

a short walk through the historic centre of Salamanca to see Romanesque, Gothic, Moorish and baroque architecture, all mingling effortlessly together. Visit the main plaza throughout the day to eat, drink, shop and socialize but do not miss a visit in the evening as the light fades when the square is at its most radiant. Travelling back towards Madrid you find avail know for its surrounding medieval wall with a perimeter of 2516 metres, 87 towers and 9 gates. You can walk along 1700 meters of the wall accessible through 4 entrances, one of which caters for the disabled. Enjoy views of the city and surrounding areas from here. Also the wall is illuminated at night. Toledo situated around 70km south of Madrid and surrounded on three sides by the river Tago, is another of Spain´s world heritage cities and the walled old city is packed with history. The city has been inhabited by Jewish people, Christians and Arabs and is named the city of three cultures where churches, mosques and synagogues can be seen side by side. All these cultures can be enjoyed in the local cuisine. The speciality of the area is the succulent suckling pig. The medieval bridge of San Martin is one of Toledo´s symbols and an excellent place for an evening stroll with a panoramic view of the old town. Or you can head to the Mirador del Valle, a fantastic viewpoint from which the entire city of Toledo can be observed. There are several guided tours available after dark showing a whole different side to the city. All of the above places have much to offer in sights, history and good food. Visit them one at a time or enjoy a round tour. Toledo

THE GOLF PAGES Tournament news, tips & course guides... May 10th-13th, 2018

The

PLAYERS PGA TOURNAMENT May 10th-13th, 2018 Since its start in 1974, with Jack Nicklaus’ historic victory over J.C. Snead at Atlanta Country Club, The Players Championship has been one of the PGA tour’s most coveted titles. Held annually in May, The Players is one of the most anticipated tournaments on the PGA tour calendar, boasting not only the strongest field but also the biggest purse on the PGA tour. The Players Stadium Course at TPC Sawgrass is a golf course built with both the pros and the fans in mind. The course, owned by the PGA Tour, first hosted The Players in 1982 and is now the permanent home of the annual event. A true “Stadium Course,” the championship-caliber golf course was designed to improve the overall on-site fan experience at The Players, while also making it accessible to and playable by golf fans of all abilities. TPC’s stadium concept was the idea of then-PGA Tour commissioner Deane Beman. The 1980 design was pure Pete Dye, who set out to test the world’s best golfers by mixing demands of precision with target golf. Most greens are ringed by random lumps, bumps and hollows, what Dye calls his “grenade attack architecture.” His ultimate target hole is the heart-pounding sink-or-swim island green 17th, which offers no bailout, perhaps unfairly in windy Atlantic coast conditions. The 17th has spawned over a hundred imitation island greens in the past 30 years. To make the layout even more exciting during tournament play, Steve Wenzloff of PGA Tour Design Services recently remodeled several holes, most significantly the 12th, which will now be a drivable par 4. The changes were revealed too late to be considered by panelists for this survey.

17th hole facts and figures The 17th hole at TPC Sawgrass is one of the most famous in golf, and each year the hole plays a pivotal role in The Players Championship. What are the records for the hole - the best and worst and most - during The Players Championship week? Records are listed below. Balls in THE drink! How many balls are hit into the water each year on the 17th hole during The Players Championship? The PGA Tour has kept records on this only since the 2003 tournament. Here are the numbers: • • • • • • • • • • • • • • •

2017 - 69 balls 2016 - 36 balls 2015 - 45 balls 2014 - 28 balls 2013 - 44 balls 2012 - 39 balls 2011 - 40 balls 2010 - 29 balls 2009 - 32 balls 2008 - 64 balls 2007 - 93 balls 2006 - 67 balls 2005 - 68 balls 2004 - 30 balls 2003 - 29 balls

We would imagine that this water hazard is regularly cleared of these balls because over the last 15 years from this tournament alone, over 700 balls made a splash!

By Tony Myles

The 17th Hole. Inset: Kim Si-woo, current champion Defending champions The Players has yet to produce a successful title defense; victories in consecutive years. Jack Nicklaus won three of the first five events, but in alternating years on different courses. Since moving to TPC Sawgrass in 1982, five players have won twice, but the shortest span between victories is six years (Steve Elkington: 1991, 1997). The best finish by a defending champion is a tie for fifth place (1977, 1990, 2001) and the closest margin is four strokes behind (1977, 1981, 1989, 2005). The defending champion has missed the cut nine times, most recently in 2016, and has not participated (for health reasons) on three occasions (1983, 1998, 2014).

What is the highest score on HOLE 17 during the Players? Bob Tway holds the record for worst score on the 17th hole during The Players Championship with a 12 in the third round of the 2005 tourney. Tway put four balls in the water, reached the green on his fifth attempt, then 3-putted. How many holes-in-one at HOLE 17? RACES... Sanlúcar de Barrameda, or simply Sanlúcar, is a city in the northwest of Cádiz province, part of the autonomous community of Andalucía. It is located on the left bank at the mouth of the Guadalquivir River opposite the Doñana National Park, 52km from the provincial capital Cádiz and 119 km from Sevilla. It is a summer tourist destination famous for its cuisine, especially manzanilla (a variety of fino sherry) and prawns. It is internationally renowned for flamenco music and beach horse racing. This exciting, beautiful sporting spectacle is one of Europe’s oldest equestrian contests. Since 1845, during the evening’s low tide in the month of August, the beaches of Sanlúcar de Barrameda have been used for horse races. Popular tradition has it that the origins of these celebrations go back to the informal competitions that took place between fishmongers, to see who could get to market first. The event comprises two 3-day cycles. On each day, beneath a spectacular sunset, riders compete for various prizes in a lively atmosphere.

Anyone can attend free of charge and at the finish line there are official betting stands to make the races even more exciting. Extra fun is provided by the children, who organise their own bets from original, colourful stands they set up all along the beach. The fiesta in Sanlúcar in honour of the local patron saint is held during the same period, and features parades of carts and carpet of flowers in the streets in the centre of town.

DANCE the night away

Dance plays a huge role in the Spanish culture and has become more and more popular over the years, becoming one of the most social activities in Spain. The lifestyle in the sun allows an all year round climate to visit many dance festivals, congresses, shows and general social dancing. SALSA is now one of the most popular forms of dance in Spain, especially Andalucía. It is known for its quick spins, amazing costumes and energetic music. As much as it is related to the Spanish culture, Salsa actually originates from the Caribbean and has been adapted to different genres worldwide and can be seen danced in many different styles including Afro-Latino, Cuban, Colombian, acrobatic, Miami Casino and Rueda etc. Salsa is constructed on a total of 8 steps which consist of 1,2,3 forward, 5 ,6,7 backwards and 2 pauses and can be fairly easy to pick up depending on the speed. The dance is all about shifting your weight whilst the upper body remains level and almost unaffected. In couples the ´Lead´ communicates and signals the routines via arm movements whilst the ´follower´ is in an open or closed position. There are many different styles but the dancers mostly move in front of each other switching side and positions during the routines. People have fallen in love with Salsa and the freedom of style, even down to small hand movements, facial expressions and who you are dancing with can make this dance a passion and not just a hobby!

Another dance that is increasingly becoming popular is BACHATA. Originating from the Dominican Republic, bachata is known as a more sensual dance but has also been adopted by many different styles. It is said that this style of dance is based off the Bolero and originally is dances in a small square whilst being closely held by the ´lead´. In the early 1990´s the dance was adapted to a more modern style, which is the more common Bachata seen danced today and is side to side. There are also 8 steps in Bachata, however the 4 & 8 are ´taps´ which can be exaggerated with a pop of the hips. The dance variety strongly depends on the music style, setting, mood and interpretation. Unlike Salsa, bachata does not depend on spin routines and it does depend heavily on upper body movements as well as legs. There are many local events that showcase Salsa & Bachata as well as other dance styles. Almost every day of the week there are places you can visit to watch people dance and even join in yourself such as social dance nights along the coast and in many different bars and restaurants. There are beginners classes taught in English every Wednesday at Miraflores at Camping Los Gallardos from 18:30 – 20:30. Shaun Garner 0034 664 615 082 theshaunzone@gmail.com

TRAVEL REPORT

A little bit of Spain in Africa

MELILLA Mojácar Malaga Motril

sharing a border with Morocco, Melilla is one of two permanently inhabited Spanish cities in mainland Africa. Who would expect to find hundreds of modernist buildings, the second-largest such collection outside Barcelona, in North Africa? Yet here they are, along with one perfectly preserved medieval fortress, several fascinating museums and a wealth of tapas bars. The result is Melilla, a great place to spend the weekend. Along with Ceuta, Melilla is one of two autonomous Spanish cities on the Moroccan coast. Its economy is rooted in cross-border commerce, and its population nearly equally divided between Spanish Christian and Berber Muslim, giving a strongly multicultural atmosphere. The enclave is tightly fenced and at the forefront of Spain’s efforts to prevent sub-Saharan African migrants and refugees from the Syrian and Libyan conflicts entering the European Union. Melilla is very easy on the traveller, and tourist infrastructure is excellent. While ferry-loads of visitors pour in during summer, in the low season you’ll have plenty of breathing room.

History

Melilla oozes with history, but it is neither as broad nor as deep as you might expect. While the area has been inhabited for more than 2000 years, the old city wasn’t begun until after Spanish conquest in 1496, then built up in four stages. Up until the end of the 19th century, virtually all of Melilla was contained within a single impregnable fortress. Current borders were fixed by several treaties with Morocco between 1859 and 1894, the last following an unsuccessful siege by rebellious Rif Berbers. The method involved shooting a cannonball and seeing how far it went. More fighting with rebel Berbers broke out several times in the ensuing years, until the Spanish protectorate consolidated its grip in 1927. In 1936 Franco flew here from the Canary Islands to launch the Spanish Civil War. Local politics still tip to the right. Construction of the new part of town, west of the fortress, began at the end of the 19th century. Laid out by Gaudí-disciple Don Enrique

Almería

Melilla

Nieto, Melilla is considered by some to be Spain’s ‘second modernist city’, after Barcelona. The highlight is Plaza de España, with the lovely facade of the Palacio de la Asamblea facing Parque Hernández. At the turn of the 20th century, Melilla was the only centre of trade between Tetouan and the Algerian border. As the city grew, it expressed itself in the architectural style of Modernisme (not to be confused with the cultural movement of modernism), which was then in vogue. This trend continued locally even after it went out of fashion elsewhere. The result is a living museum of hundreds of modernist and art-deco buildings. Unlike Ceuta, many of these treasures have yet to be dusted off, but the overall architectural wealth is greater. The best way to appreciate this heritage is to stroll through the area to the north of Parque Hernández; it’s known as ‘the golden triangle’.

Etiquette

Melilla, although Spanish soil, lies within Morocco and because of its mix of cultures, following a few rules of etiquette will make your travels smoother and avoid embarrassment. Greetings are formal. Handshakes are followed by lightly touching your heart with your right hand. Men should wait for Moroccan women to offer handshakes. Both sexes should dress to cover their shoulders. Outside the cities, where people are more conservative, above-the-knees shorts may be seen as inappropriate. The left hand is considered unclean as it’s used for toilet duties. Don’t handle food with your left hand, particularly if eating from a communal dish such as a tajine.

Places to see

Melilla la Vieja (the old Melilla fortress) Perched over the Mediterranean, Melilla la Vieja is a prime example of the fortress strongholds that the Spaniards built along the Moroccan

littoral during the 16th and 17th centuries. Much of it has been painstakingly restored in recent years. The main entrance is Puerta de la Marina, from where you ascend to the summit, passing several small museums.

Melilla la Vieja Fortress

Palacio de Asamblea The Art-deco Palacio de Asamblea, whose floor plan depicts a ducal crown, is an operating Town Hall, although the staff at the entrance are willing to show tourists around upon request. Worth seeing are two rooms on the upper floor: Salon Dorado, which contains a large painting of the arrival of Spaniards in Melilla in 1497, and the Sala de Plenos, where the local congress meets. Las Cuevas del Conventico These extensive and well-restored caves were used as a refuge during sieges, and pop out at a small beach below the cliffs. The Calle de la Concepción continues up to the baroque Iglesia de la Purísima Concepción and, just below it, the entrance to Las Cuevas del Conventico. The Phoenicians first excavated the tunnels; later occupiers took turns enlarging them and they now extend over three levels. They are meticulously maintained and well lit, which sadly eliminates much of their mystery. A short film and guided tour (both in Spanish) detail the history of the caves and tunnels that lead to the cliff face. Plaza de España Several fine examples of the city’s heritage are on the Plaza de España, including Nieto’s Casino Militar, and the Banco de España. With its central fountain, the Plaza is a pleasant place to sit. At the centre is an art-deco military monument to campaigns in Morocco. Museo Militar Near the Iglesia de la Concepción, the Museo Militar is perched high over the Mediterranean. Its two small rooms are stuffed full of exhibits from the Spanish military in Melilla: regimental flags, medals, some great old photos and a motley collection of weapons and the obligatory bust of Franco. Playa de la Ensanada de los Galápagos The secluded beach of Playa de la Ensanada de los Galápagos is reached by taking a tunnel under Melilla’s fortress. The beach is in a cove surrounded by cliffs and the fort walls, and is open May to September (with lifeguards on duty). Other notable places worthy of visiting would be the Museo Etnográfico de la Culturas Amazigh & Sefardí, which shows the history of the Amazigh (Berber) and Sephardic (Jewish) cultures in Melilla, which have contributed to the enclave’s rich multicultural mix. Also the Puerta de la Marina. At the main entrance to the Melilla la Vieja fortress is Puerta de la Marina, fronted by a statue of Franco – one of the few remaining on public display in Spain. Or to satisfy your quirky side, why not visit the Gaselec Musuem Just off Parque Hernandez. This intriguing oddity, the passion of the former president of the local gas and electric company, houses The Art Deco Town Hall

a museum of Ancient Egypt composed entirely of reproductions, including King Tut’s mask and sarcophagus.

Getting There

Geographically only 230km, as the crow flies, from Mojácar (about the same distance as Mojácar to Benidorm), getting there is fairly simple. Not only do you have the option of flying direct into Melilla, you can also take a ferry into the city too. The best way to fly there is through Malaga Airport as those flights are direct. Flights can be booked through Iberia.com who run the service via Airnostrum and Danish Air. With return flights for as little as 80€ and flight times a mere 50 minutes, its is well within reach. If you want to fly from Almeria, expect a connecting flight through Madrid and total flight times of 5hrs! For the more adventurous of you, why not take the ferry? There are several options but we’re going to give you the nearest ones as in sailing from Almeria or Motril. Almeria: Prices start around 70€ each, return as a foot passenger or 240€ return with car based on 2 people. Almeria is easily accessible by public transport if you want leave the car behind. You can also get there via Motril. Prices start around 60€ each, return as a foot passenger or 225€ return with car based on 2 people but you have the added commute to Motril so it’s swings and roundabouts. Either way you choose, you can get quotes and tickets by booking the ferries at www.directferries.com

Where To Stay

There are various options for staying in Melilla and we recommend you give them all some thought as they suit all budgets but here are a few choices to give you an idea. For a four star experience, the TRYP Melilla Puerto hotel offers beautiful modern rooms and some fine dining from as little as 75€ a night for a double room. Leaning more toward a lower budget there’s the Hotel Nacional Melilla which has double rooms from as little as 45€ for a night. Both are slap bang in the city centre and close to the Port and Airport too. Contact Zafiro Tours, on Mojácar Playa and let them organise your trip to Melilla.

Bora Milutinovic coached in every tournament between 1986 and 2002 - but for different teams: Mexico, Costa Rica, USA, Nigeria and China. Six teams have been unbeaten but not the champions in the same finals. Those unbeaten teams are: Scotland in 1974 (1 win, 2 draws), Brazil in 1978 (4 wins, 3 draws), England in 1982 (3 wins, 2 draws), Cameroon in 1982 (3 draws), Belgium in 1998 (3 draws) and New and New Zealand 2010 (3 draws). The only person to have played both the men’s World Cup Football and World Cup Cricket is Viv Richards - playing for Antigua in football and West Indies in cricket. Australian Ellyse Perry has appeared in both the women’s cricket (2009) and football World Cups (2011). Cameroon’s Roger Milla is the oldest player to have played at the World Cup - he was 42 years and 39 days old when he played his last match against Russia in 1994. Northern Ireland’s Norman Whiteside is the youngest ever finals player, being just 17 years and 41 days when he took the field against Yugoslavia in 1982. Shirt swapping was once officially prohibited in 1986 because FIFA did not want players to ‘bare their chests’ on the field. The highest attendance at a World Cup match was 199,854 at the Maracana Stadium in Rio de Janerio for the 1950 decider between Uraguay and Brazil. In the 1950 finals, there was only a final pool to determine the winner, without a knock-out Final as has been held in other Finals series.

Brazil are the only country to have appeared in every finals, 19 finals tournaments from 1930 to 2010. And they have automatically qualified for the 2014 tournament as hosts. The 2010 World Cup is the first with no debutant associations, although two of the qualifiers (Slovakia and Serbia) have previously appeared only as parts of former competing nations. No host country had ever been eliminated in the first round - until South Africa in 2010.
