COME WINE WITH ME From brews to booze...

FISH
Being in such a rich and vibrant fishing region with some very famous dishes heralding from Garrucha, It should be no surprise to know that white wine and seafood belong together - whether you are sipping Riesling with oysters or watching the tide roll away with a glass of Sauvignon Blanc and roasted sea bass (Lubina here in Spain). However, softer reds like Pinot Noir or Syrah also pair wonderfully with fish. Plenty of red, rosé and sparkling wines also complement a variety of seafood, from salmon fillets to tuna but lets stick with these 4 stalwarts.
Pinot Gris A combination of bright citrus and sweet fruit flavours like peach, lemon, and pink grapefruit gives Pinot Gris a tasty affinity to fish and shellfish, which are often briny and sweet at the same time. That crisp citrus cuts through fat and stands up to tangy relish, making Gris the tartar sauce queen. Great matches: Oysters - however you like them - and whatever you can slather tartar sauce on: grilled halibut or seabass (Lubina); deep-fried prawns, calamari, clams and your fish and chips again.
BRUT Typically made from a blend of Chardonnay and Pinot Noir, a flute of brut offers up apple, pear, and melon from the former and subtler berry and cherry from the latter. The red fruit plays up the sweet side of fish, but it’s joined by enough citrus to work like a spritz of lemon. Bonus: Those bubbles cut through the fat of fried goodies, while the wine’s yeastiness (from time on the lees) loops right into crispy batter. Great matches: Oysters, steamed mussels, grilled halibut, crabcakes and deep-fried everything: calamari, clams and even fish and chips.
Riesling Once shunned, Riesling is getting drier and better now. It’s a rich mouthful of a white with a bracingly high level of acidity for balance. Expect sweet, fruity flavours along with green apple and a note of minerality hinting at diesel fuel (a good thing) that echoes the brininess of the sea. Great matches: Spicy Asian scallops, prawns, mussels, and crab (think ginger and Thai chillis in mussels, for instance, or lemongrass and cracked crab); great with sushi.
Brut Rosé Many are great fans of bubbly with seafood so here is another sparkler. Rosé brings all the strengths that brut does to the table. But it has a little more body and vibrant red fruit flavour from being heavy on the Pinot Noir and spending a smidgen of time on the skins. The bigger fruit, with the same great acidity, works well with tomato-based sauces, spices and garlic. Great matches: Oysters, prawns and shrimps, maybe with a tomato rich cocktail sauce or horseradish. Garlic steamed mussels benefit too. 6

AT THE MOVIES Films to look out for in the coming months.
Little Women. In theatres September 28th, 2018. SUMMARY Sisters - and dreams - are unique in their ability to inspire, encourage and change the world. For 150 years, Louisa May Alcott's Little Women has motivated women of all ages to dream together and celebrate family. Coming to theatres for the first time, a modern retelling of LITTLE WOMEN brings a new generation together with their mothers, sisters and friends. SYNOPSIS From girls playing in the attic to women living with purpose, the March sisters - Meg, Jo, Beth and Amy - are committed to always supporting each other. Yet, growing up sometimes means growing apart. An aspiring writer, Jo leaves for New York determined to publish a novel. In the wake of rejected draft upon draft, her editor challenges Jo to write about something more interesting - her family. When tragedy brings the sisters back home, sticking together takes on new meaning. As Jo comforts her sick sister, Beth asks for one thing: a story. Jo knows the perfect one... by heart.

REMAKE If you're still not over the 1994 movie version of Little Women, starring Winona Ryder, Christian Bale, Susan Sarandon, and Kirsten Dunst, then you're most certainly not alone. But the newly announced update has all the makings of an instant classic. Not only will the next film version of Little Women be directed by Lady Bird's writer and director, Greta Gerwig, but it'll also feature Lady Bird herself, Saoirse Ronan. And, as if that wasn't exciting enough, the movie is also set to star Meryl Streep, Emma Stone, and TimothĂŠe Chalamet. While it's not been specified which actor is playing which role, it seems likely that Streep will portray the family's matriarch, Marmee March, while Chalamet will probably take on the part of love interest, Laurie.

N332 Driving in Spain
the best place to find easily digestible information regarding road and traffic laws in Spain.
know when to STOP! On their official YouTube channel, the Guardia Civil have published a video explaining the actions that patrols will take in order to stop a vehicle on the roadside. N332 has translated that video into English for you. This is vital information that everybody should know so please share this amongst your friends. Following is a transcript of the video to help you... Amongst their duties, the Guardia Civil is tasked with controlling road traffic to ensure road safety and to prevent the commission of offenses which endanger road users, and provide assistance if necessary.
When stopping a vehicle main factor is safety. Remember: • Flashing red lights indicate that you must stop. • You must stop the vehicle in a safe area. • When stopping, no one should leave the vehicle. • When finished, wait for the officers to assist you in joining the flow of traffic.
When an official vehicle wants you to stop, it will display a flashing red light in addition to the blue lights. This red light means you must stop your vehicle by manoeuvring to the right hand side of the road. You must stop your vehicle in a place where it does not cause an increased risk to other road users, it this is not possible, you must continue until you can stop in a safe place. The patrol will stop their vehicle behind yours. All the occupants of your vehicle must remain inside the vehicle. The officer will approach you on the right side of your vehicle to notify the reason for stopping you. Once the officers have finished dealing with you, they will assist you in joining the main flow of traffic.
You can find more info and additional stories by visiting their website www.n332.es or liking their page on Facebook/N332. They also have a new magazine “N332 Road watch” available for download as PDF for just 2 euros. 10

THINGS TO DO & places to see...
Nerja At about 250 kms from the Mojácar area, just under 3 hours in the car down the E15, Nerja is a small fishing and agricultural village in Málaga. It is the last town East of Málaga, bordering with Granada and its subtropical climate translates to 320 days of sun, making Nerja an ideal tourist resort.
BACKGROUND
Nerja is a resort town along southern Spain's Costa del Sol. Its seafront promenade, Balcón de Europa, tops a promontory with views of the Mediterranean and surrounding mountains. Below it lie sandy beaches and cliff-side coves. Cueva de Nerja, a nearby cavern with unusual stalactites and stalagmites, hosts popular summertime concerts. It's also known for its palaeolithic paintings, viewable by guided tour. There are plenty of nature spots, like Maro, Cerro Gordo or the Tejeda and Almijara mountain ranges. This unique mix of sea and mountain makes Nerja a very special and unique place.
OUT & ABOUT
Nerja has a great variety of interesting spots for tourists. Found on the skirt of the Sierra Almijara mountain range, Nerja today has a 14km coast that mostly consists of cliffs, but there are very beautiful beaches too. In Nerja there are also 3 rivers: Rio Seco, Rio de la Miel and Rio Chillar, this last one is very famous with tourists because you can walk up it reaching the mountains, passing by waterfalls and beautiful landscapes. In the center of town, you will find one of the most emblematic structures in Nerja, the Balcón de Europa, a balcony above a cliff that looks over the sea, the views here are truly mesmerizing. The old town is very Andalucian, it’s full of white-washed houses, and pebble streets. Some houses still have their Andalucian terraces, they are truly beautiful. In these pebble streets you can shop for typical products: sweet wine, sugar cane honey (delicious!) and plenty of freshly harvested fruit and vegetables. 12
There are also a good amount of squares in Nerja: Plaza España is the main square but Plaza Cantarero, Plaza de los Cangrejos, Plaza de la Ermita the Plaza Andalucía are all full of charm. Nerja also has some very nice churches, in Plaza Andalucía you can find the San Miguel church, and in La Ermita you can find another church where the patroness of Nerja is found, Virgen de las Angustias. The Plaza Tutti Frutti is full of late night bars and clubs for those who want to experience the local nightlife scene.
Cahorros in Río Chillar (the river walk)
Another thing to do while you are in Nerja is walk up the Chillar river, it’s a great outdoor family oriented activity. It’s a 16km (there and back) walk, but you don’t have to go all the way.
Balcón de Europa
Hotels in Nerja
Hotel Perla Marina 4* This four-star hotel looks over the Playazo Beach and offers fantastic views, with a beautiful promenade just outside.
Balcón de Europa The walk is full of plants, flowers, and maybe even some animals. If you do go all the way, you will be rewarded with a crystal clear waterfall which is great for a quick dip in the heat. It’s well worth the walk, you won’t regret it.
Hotel Marinas del Nerja 4* Located just a few meters from the beach, this four-star hotel is beautiful. It’s only 2km away from the historic town center. Hotel Villa Flamenca 3* This three-star hotel was completely renovated in 2017 and is located in a quiet part of town about 300m away from the popular Burriana Beach. The historic town center is only a 15 minute walk away
We recommend going between spring and autumn, it will be very cold in the winter. That said, the heat in the summer may be a bit too much for some, so cream up and stay hydrated.
Nerja Caves
While you are in Nerja, you must visit the Nerja caves. These amazing caves were discovered in 1959 and you will find the oldest works of art known to man, a rock painting which is roughly forty-two thousand years old. You can also find the largest stalactite in the world!

QUITE INTERESTING fun facts and figures...
the arrival of
AUTUMN The time of year that Keats called the 'Season of mists and mellow fruitfulness', autumn is a season famous for its harvest time, turning leaves, cooling temperatures and darkening nights. Hades abducting Persephone
Autumn begins There are two different dates when autumn could be said to begin. Autumn as defined by the Earth's orbit around the sun, begins on the equinox which falls on 22nd or 23rd September. However, for the purposes of recording climate data, it is important to have set dates that can be compared, so the meteorological Autumn always begins on 1st September.
The days get shorter The word equinox comes from the Latin equi (meaning equal) and nox (meaning night) accounting for the equinox marking the time when day and night are of equal length. We often notice the nights begin to draw in from this point as after the Autumn equinox, the night longer than the day, until this is reversed at the Spring equinox.
Trees prepare for winter One of the most stunning signs of Autumn is the turning of the leaves. The shorter days are a sign to trees to begin to prepare for winter. During winter there is not enough light for photosynthesis to occur, so as the days shorten throughout autumn, the trees begin to close down their food production systems and reduce the amount of chlorophyll in their leaves.
A date for your diary - 24 September 2303 Generally speaking the autumn equinox always falls on either 22nd or 23rd September, but not quite always. Because the Gregorian calendar is not quite in perfect symmetry with the Earth's orbit, the autumn equinox will very occasionally fall on September 24th. This last happened in 1931 and will next happen in 2303.
The chemistry of colour Chlorophyll is the chemical which makes tree leaves green and as it declines other chemicals become more prominent in the leaves. These are responsible for the vibrant ambers, reds and yellows of autumn. The chemicals responsible are types of Flavonoids, Carotenoids and Anthocyanins. Did you know some of these chemicals are the same ones that give carrots (beta-carotenes) and egg yolks (luteins) their colours.
Persephone's return In Greek mythology, autumn began when Persephone was abducted by Hades to be the Queen of the Underworld. In distress Persephone's mother, Demeter (the goddess of the harvest), caused all the crops on Earth to die until her daughter was allowed to return, marking spring.
People born in Autumn live longer A study in the Journal of Aging Research found that babies born during the autumn months are more likely to live to 100 than those born during the rest of the year. Their study found that 30% of US centenarians born during 1880-1895 were born in the autumn months. 16
Autumn and Fall We typically think of 'Fall' as the North American version of the word 'Autumn', but it was in fact in widespread usage in England until relatively recently. Originally a shortening of the phrase fall of the leaf, the phrase was common in England in the 17th century. The word autumn entered English from the French automne and didn't become common usage until the 18th century.

Unbeaten is the story of this remarkable champion who overcame injury, doubt, and the schemes of corrupt promoters to win the title in a bloody and epic battle with Jersey Joe Walcott in 1952. Rocky packed a devastating punch with an innocent nickname, “Suzie Q,” against which there was no defense. As the champ, he came to know presidents and movie stars – and the organized crime figures who dominated the sport, much to his growing disgust. He may have “stood out in boxing like a rose in a garbage dump,” as one sportswriter said, but he also fought his own private demons. In the hands of the award-winning journalist and biographer Mike Stanton, Unbeaten is more than just a boxing story. It’s a classic American tale of immigrant dreams, exceptional talent wedded to exceptional ambitions, compromises in the service of a greater good, astounding success, disillusionment, and a quest to discover what it all meant. Like Suzie Q, it will knock you off your feet.
You can almost inhale the smelling salts in these short stories. FX Toole, a former corner man, serves as a perfect reminder to any writer to follow the write-what-youknow rule; you read one page and you know he's been there. Standout pieces here are "The Monkey Look", "Black Jew" and, of course, the devastatingly beautiful "Million Dollar Baby".
Lost in the annals of boxing is the sport's true Cinderella story. James J. Braddock, dubbed "Cinderella Man" by Damon Runyon, was a once promising light heavyweight for whom a string of losses in the ring and a broken right hand happened to coincide with the Great Crash of 1929. With one good hand, Braddock was forced to labour on the docks of Hoboken.
The story of the 69-year-old author of this astonishing first fiction collection is a salutary one; he wrote between gigs tending boxers in their corners as a ""cut man"" (who stanches the blood flow and allows fights to continue), finally got a story published by a small literary magazine, was spotted by a keen-eyed agent and achieved book publication. It's amazing it took so long, because Irish-born Toole, now living and working in Los Angeles, is a natural.
Against the gritty backdrop of the Depression, Cinderella Man brings this dramatic all-American story to life, evoking a time when the sport of boxing resonated with a country trying desperately to get back on its feet. Schaap paints a vivid picture of the fight world in its golden age, populated by men of every class and ethnic background and covered voluminously by writers who elevated sports writing to art. Rich in anecdote and colour, steeped in history, and full of human interest, Cinderella Man is a classic David and Goliath tale that transcends the sport.

LIFESTYLE Health & Well-being
Fitness for
an older generation Participating in a balanced fitness program contributes to your well-being at every age — and regular exercise is vital for older adults. Regular exercise can help control your blood pressure, body weight, and cholesterol levels. It reduces your risk of hardened arteries, heart attack, and stroke. It also strengthens your muscles, tendons, ligaments, and bones to help fight osteoporosis and lower your risk of falling or other injury. Keeping your body strong and limber can help you maintain your independence as you age. It allows you to continue the kinds of activities you’ve enjoyed your entire life. If you haven’t been physically active for a while, start slowly. Gradually build your endurance, strength, balance, and flexibility. Walking for just five or 10 minutes at a time on several days each week, is a great way to begin. Once you can walk for 30 minutes at a time, you’ve built a solid foundation and are ready to add more challenging activities to your routine. Starting a basic strength routine while you begin your aerobic routine will help you build the strength you need to support your aerobic workouts. Always talk to your doctor before beginning a new exercise regimen. They can help you create a workout plan that suits your specific needs and goals.
What are the benefits of exercise for older adults? Physical health benefits
As metabolism naturally slows with age, maintaining a healthy weight is a challenge. Exercise helps increase metabolism and builds muscle mass, helping to burn more calories, it also reduces the impact of illness and chronic disease. People who exercise tend to have improved immune and digestive functioning, better blood pressure and bone density, and a lower risk of Alzheimer's disease, diabetes, obesity, heart disease, osteoporosis, and certain cancers. Mobility, flexibility, and balance will improve. Exercise improves your strength, flexibility and posture, which in turn will help with balance, coordination, and reducing the risk of falls. Strength training also helps alleviate the symptoms of chronic conditions such as arthritis.
Mental health benefits
It Improves sleep patterns. Quality sleep is vital for your overall health. Regular activity can help you fall asleep more quickly, sleep more deeply, and wake feeling more energetic and refreshed. Boosts mood and self-confidence. Exercise is a huge stress reliever and the endorphins produced can actually help reduce feelings of sadness, depression, or anxiety. Being active and feeling strong naturally helps you feel more self-confident. Does amazing things for the brain. Activities like Sudoku or crossword puzzles can help keep your brain active, but little comes close to the beneficial effects of exercise on the brain. It can help brain functions as diverse as multitasking and creativity and can help prevent memory loss, cognitive decline, and dementia. Getting active may even help slow the progression of brain disorders such as Alzheimer's disease.

GET STARTED: try these...
Aerobic endurance
Any activity that increases your heart rate helps build aerobic endurance. It doesn’t take long to see significant changes. After just six weeks of consistent exercise, you should feel noticeably more comfortable while working out and going about your day-to-day activities. The best aerobic activities for older adults to begin with are low-impact exercises, such as walking, cycling, swimming, and water aerobics. Other options include: • tai chi • line dancing • square dancing • ballroom dancing If you’re aged 65 or older, the US 'Centres for Disease Control and Prevention' (CDC) recommend getting at least 150 minutes of moderate-intensity aerobic activity per week — or 75 minutes of vigorous-intensity aerobic activity.
Strength
Even small changes to your overall muscle strength can have a huge impact on your life. Carrying groceries, climbing stairs, and getting up out of a chair all require muscle strength. If you’re 65 or older, the CDC recommends participating in strength-training workouts at least twice a week. Start by using small weights, such as 1- and 2-pound dumbbells. Try to complete 10 to 15 repetitions of a variety of weightlifting exercises, such as bicep curls, triceps extensions, and chest presses. You can also use your own body weight to provide resistance, while completing activities such as lunges, squats, and modified push-ups. Complete a variety of activities to strengthen all of your major muscle groups, including your legs, hips, back, abdomen, chest, shoulders, and arms. For example, try this modified push-up to strengthen your chest, upper back, and shoulders: • Stand facing a wall, with your toes 12 to 18 inches away from it. • Lean forward slightly and place your palms flat on the wall at shoulder height. • Slowly bend your elbows to lower your body toward the wall until your nose nearly touches it, or get as close as you can without straining. • Then slowly straighten your elbows and push back to your starting position. Repeat this exercise 10 times.
Balance
The CDC reports that every year, 2.5 million older Americans are treated in emergency departments for injuries caused by falls. For older adults, even minor injuries can have serious consequences. Yoga and similar exercises help improve balance as well as flexibility. Also, doing a few basic exercises to improve your balance may come in handy the next time you step off a curb awkwardly or try to sit down on a moving train or bus. Try this simple exercise to help improve your balance: • Stand directly behind a sturdy chair, such as a dining room chair that won’t tip easily. • Rest one hand on the back of the chair and the other hand on your hip. • Lift your right leg, bending the knee slightly. • Hold your leg up for a count of 10. Relax for a moment. Then do nine more repetitions on that side, before switching legs and repeating on the other side. As your balance improves, you can do the same move without resting your hand on the back of a chair.
Flexibility
Have you noticed that reaching for objects on high kitchen shelves or doing basic activities, such as getting dressed, aren’t as easy as they used to be? Do your muscles often feel tight? You may need to add some stretches to your daily routine. Stretching is something you should do every day to help you maintain your range of motion as you age. It’s best to warm up for three to five minutes before stretching by walking or simply marching in place. Then slowly move your body into each stretch, holding the pose for at least 10 seconds. Continue breathing throughout the entire stretch. You can also do your stretches after you finish exercising. Remember that stretching should never be painful. If you feel sharp pain while stretching, or soreness the next day, you’re pushing too far. Try this simple neck stretch while standing or sitting down: • Slowly turn your head toward the right until you feel a slight stretch. • Don’t tilt your head backward or forward. • Hold this pose for 10 to 30 seconds. • Then slowly turn your head to the left. Hold for another 10 to 30 seconds. Repeat three times in each direction.
Many community centers have strength classes geared at meeting the needs of older adults.
What you should take away from this
Good general fitness can be achieved in as little as 30 minutes each day. Exercising daily can help prolong your life and improve the quality of it. It’s important to include aerobic activity, strength training, balance exercises, and stretching in your routine. Start slowly and build your endurance, strength, balance, and flexibility gradually. “Photography is just light remembering itself" Jerry Uelsmann.
PHOTOGRAPHERSOFINFLUENCE Jerry Uelsmann
by Dean Baker
“Photography is just light remembering itself.”– Jerry Uelsmann Uelsmann is a photographer who was born in Detroit, Michigan on June 11, 1934. His work was ahead of its time. He led the way with photomontage in the American 20th century.
Out of Uelsmann’s darkroom come exquisitely crafted gelatin silver prints featuring, for example, a thick mass of roots sprouting a house or, in a nod to Marcel Duchamp and the Surrealists, an eye embedded in a urinal (below).
He was notably talented in the darkroom. He put that talent to good use when he introduced the world to unique images of composite photographs. To date, he has never used a digital camera because he personally feels that his strengths and creative talents are actually more suited to his darkroom.
His works demonstrate a unique talent and something I was encouraged to learn when working in the darkroom at my school studying photography. I would lose hours attempting this technique, with some notable successes, obviously nothing as noteworthy than those created by Uelsmann himself. They did however, show that I could indeed blend images, dodge and burn areas of my prints and create a montage, albeit without to much artistic merit. All of which have helped me further understand the photographic processes involved and without doubt, have contributed to my knowledge, understanding and ability when utilising digital techniques.
“I’ve spent so much time in the darkroom that it’s a part of me,” says Jerry Uelsmann, a pioneer in darkroom techniques who discovered a way to calibrate negatives on enlargers to blend various photographic images into a single surrealistic photomontage, something that we would do now in Photoshop. Over the course of a career that began more than 50 years ago, his manipulated photographs have grown more beguiling and complex, but his methods and materials have remained the same. “The darkroom to this day—even though the computer world has emerged—has an alchemy aspect for me. It’s magical watching an image come up in the developer,” he says.

Experiment with this yourself too, if you have a computer and access to editing software, as it will help you understand composition, scale, exposure and lighting when trying to line up images and have them look as if they are a single photo. Have fun too, the first image below, of the tree and house, is a fairly straight forward blend of two shots so why not try something like this for yourself?

Wine Not Mojácar
Wine Not Mojácar is a winery and delicatessen shop and bar which offers a cured selection of wines and gourmet products from Spain in a unique environment in Mojácar. We want our customers to have an unforgettable experience, that is why you can have most of our wines by the glass, we want you to enjoy the best one for you! This month we are introducing a selection of Pago wines from Zaragoza, Spain. Vino de Pago is a classification for Spanish wine applied to individual vineyards or wine estates, unlike the Denominación de Origen (DO) or Denominación de Origen Calificada(DOCa) which is applied to an entire wine region. The quality requirements for a Vino de Pago correspond to those for a DOCa wine, and wine estates that are classified as Vino de Pago are subject to separate requirements rather than those of the wine region where they are located. One of the requirements is that the estate may only use their own grapes for their wines. The Spanish word pago comes from the Latin word pagus, meaning a country district. In the Spanish wine quality pyramid, Pago wines rank at the highest level. Pago Aylés Origin: Finca Aylés is located in the northeast of Spain, near the city of Zaragoza, halfway between Madrid and Barcelona. The wine project of the Ramón Reula family began its journey in the 1980s and ended with the reunification of various properties that had belonged to the so-called Finca Aylés since the Middle Ages. Today, Aylés is one of the largest private historical farms in Aragón, with more than 3,200 hectares of valuable ecological and landscape conditions. Aylés’ historical roots are long and deep, the earliest existing documentation dates back to the XII century, time of the Christian Reconquest led by Alfonso I in 1120. In 1165, king Alfonso II granted this land to Cistercian monks who harvested the very first unique Aylés grapes. Wine production flourished here for over five centuries, overseen by members of the nobility beginning with the Justice of Aragón, Blasco Fernández de Heredia, the first owner of this finca not belonging to the clergy.

The Vineyards Aylés´s sustainable viticulture practices (minimal intervention winemaking processes and the utmost respect for the natural cycle of the vine), are the foundations for their upcoming ecological winemaker’s certification. The Pago vineyard has an extension of 47 hectares divided into Garnacha, Tempranillo, Cabernet Sauvignon and Merlot. The wines A de aylés - “A” as in “Aldeya” (Spanish for village). The primitive aldeya of Aylés dates back to the twelfth century. Blend: Merlot, Tempranillo, Garnacha , Cabernet Sauvignon Aged during 4 months in French oak barrels. Y de aylés - “Y” as in Yegua (Spanish for mare). In Aylés, rugged terrain conditions forced inhabitants to use noble, strong draft animals like the mare, to cultivate the vineyards. Blend: Garnacha, Tempranillo, Merlot, Cabernet Sauvignon. Aged during 6 months in French oak barrels. L de aylés - “L” as in “labriego” (Spanish for peasant). For centuries, peasants have farmed Aylés’ lands to ensure the best harvests possible. Variety: Garnacha & Cabernet-Sauvignon E de aylés - “E” as in “ermita” (Spanish for hermitage). The modest hermitage to which the Sunday faithful parishioners from nearby towns attended, under the patronage of St. Peter Apostle. Variety: Tempranillo Aged during 10 months in French oak barrels. S de aylés - “S” as in “Señorío” (Spanish for lordship). During the twelfth century, King Alfonso II granted Aylés to the Cistercian monks and then to the nobility, for them to carry out plowing and cultivation activities that lasted over five centuries. Variety: Garnacha Aged during 12 months in French and American oak barrels. 3 de TresMil - Out of the 3.000 hectares comprising this centennial lordship, we have chosen the best 3 Ha. of our vineyards to produce the best Aylés wine thus; “3 out of three thousand”. Blend: Garnacha, Merlot & Cabernet-Sauvignon Aged during 12 months in French & American oak
The Pago Quality Territory: Aylés’ extreme weather conditions – with dry and cold winters, unstable springs and very hot summers -; influence the wine’s characteristics. During summer, there is a fluctuation of over 20ºC between day and night temperatures. This conditions make the soils exceptional for the vines as they are mainly made up of Glacis; meaning deep, stony but also clayey, cold and above all, very old ground (Tertiary, 25 million years).

The Mediterranean...a brief Diet history The history and tradition of the Mediterranean diet come from the historic eating and social patterns of the regions around southern Italy, Greece, Turkey and Spain. Not only is the Mediterranean diet a tasty way to eat, drink and live, but it’s also a realistic and sustainable way to reduce disease-causing inflammation and lose weight, too (or maintain a healthy weight). The Mediterranean diet has long been one of the healthiest diets known to man. But it’s not just a diet or even a way of eating … it’s really a way of life. Because for thousands of years people living along the Mediterranean coast have indulged in a high-fiber diet of fruits and vegetables, also including quality fats and proteins and sometimes a glass of locally made wine to complete a meal, too. Meanwhile, this diet has gotten a reputation for disease prevention and even “enjoyable” weight manageable. Starting in Italy thousands of years ago and spreading to Greece, Spain and other areas around the Mediterranean, this diet is now successful all over the world for promoting health and longevity. While it’s always existed, even before books and studies were dedicated to it, the diet really began
to take hold around the world in the 1990s, when a Harvard University doctor showcased it as a diet useful for improving heart health, losing weight fast and easily and clearing up other health issues. In 2013, a landmark study of more than 7,000 people in Spain was published. The study’s subjects were split into three groups: those receiving advice about following a Mediterranean diet and getting extra-virgin olive oil delivered to their home; receiving advice about following the Mediterranean diet and getting nuts delivered to their home; and, in the control group, receiving advice about following a low-fat diet. The study found that those people eating a Mediterranean diet that was supplemented with the olive oil deliveries were 30 percent less likely to die of heart attack, disease, stroke or death from cardiovascular causes than those eating a low-fat diet. In fact, the study finished earlier than planned, because the results were drastic enough that it was considered unethical to continue conducting it. For those of us who advocate eating a Mediterranean diet, this study was a welcome validation. 45

Most of the work for preparing this place is in cleaning and preparing the fresh octopus. Frozen octopus is available in many food stores and eliminates the need for the preparation described below. The frozen octopus comes cleaned and chopped, so the only requirement is to defrost and cook. This recipe describes the process for preparing with fresh octopus.
Ingredients • 4 potatoes • 1 large octopus (more than 1kg or 2lb) • 1 bay leaf • Rock salt • 1 tablespoon of olive oil • Spanish smoked paprika (can be hot, sweet, or both) • Olive oil, extra virgin • 2 cups water
method • Thoroughly clean the fresh octopus. • Open head and remove the entrails. • Add water to boil with some salt and the bay leaf. You can use a large casserole pot. • Plunge the whole octopus into the boiling water and remove immediately. This action makes it shrink and helps to make it soft. Repeat this action twice more and leave in the water. • Boil for 30 mins. Depends on the size of the octopus. • Turn off the heat and leave everything in the pot for 5 to 10 minutes. This prevents the meat from peeling. • Peel 4 potatoes and boil them. The potatoes can be boiled in the water with the octopus but this will turn them an unusual colour. • After the potatoes are boiled cut them into thick slices. Lay them by covering the surface of a plate. The tradition in Spain is to use a wooden dish. • Chop the octopus into 10mm thick slices. Use scissors and arrange on top of the layer of potatoes by displaying the best cuts at the top. • Generously add rock salt, olive oil & paprika to taste. Serve hot.

DISCOVERING CADIZ ...Continued from last edition.
by Hispavan Now you can explore this ancient city in more detail... A must visit, to top your list is the Cathedral, dating from the 1700´s and finished in 1838, it combines Baroque, Rococo and NeoClassical style. Opening times are Tuesday to Friday 10am to 1pm and 4:30pm to 7pm, Saturday 10am to 1pm with an entrance fee of 4Euros. For a superb panoramic view over the port climb to the top of the Poniente Tower ( open 16th September to 14th June from 10am to 6pm and 15th June to 15 September from 10am to 8pm) with a cost of 3.50€.
There are many other trips you can take from the camp site. Make sure you spend a day in Jerez de la Frontera, a small city situated 21km (13 miles) from the camping. Jerez is rich in culture and famous for its sherry, horses and flamenco. If you visit during the first week of May make sure you go to the Feria de Caballo (horse fair) who´s history goes back 500 years. Watch the informal horse and carriage procession from 1pm to 7:30pm daily and enjoy the exciting atmosphere in one of the many bars.
Then you can visit the 18th century fortress, the Castle of San Sebastian which was used as a prison and for quarantine purposes because of its detachment from the mainland. Nowadays various exhibitions and concerts are held there. You may recognize areas where scenes from the James Bond film Die Another Day were shot at the castle. For a different view of Cadiz visit the Camera Oscura situated in the Torre Tavira in calle Marques del Real Tesoro numero 10. When it gets too, hot retreat into the narrow shaded streets of the old town or beneath the swaying palms of the many city parks. In the permanent central market some of Spain's freshest fish and seafood can be found. Get there early to see tantalising piles of crabs, oysters, lobsters, langoustines, tuna, eels and much more. After which you will want to visit some of the marvellous fish and seafood restaurants in the city. Try the ones around the Plaza de Juan de Dios only a short distance from the port. You could also spend time on one of the wonderful beaches found in Cadiz and when you have had enough head back to the port and hop on the ferry back to Puerto de Santa Maria and the camp site.
The rest of the year you can watch the spirited performance of the `dancing horses´ at the Royal School of Equestrian Art on Thursdays (other day are available depending in the time of year) starting at 12noon and costing between 21 and 27€. There is also a tour of the stables including the harnesses etc (some dating from the 18th century) worn by the performing stallions. 50km drive from the camping will take you to the beautiful fishing village of Sanlucar de Barrameda with its golden beaches and excellent seafood restaurants. Sanlucar´s Calzada beach is the home of the August horse racing starting at dusk (approximately 18:30). A short drive to the north will take you to the Doñana National Park, an area of marshes, shallow streams and sand dunes, where the Guadalquivir river flows into the Atlantic Ocean. The wildlife found here includes thousands of European and African migratory birds, deer, wild boar, badgers and endangered species such as the Spanish Imperial Eagle and the Iberian Lynx. Much time can be spent discovering the beauty of Cadiz and its surrounding area, so you can return time and again always seeing something different.

The
RYDER CUP Sept. 25th - 30th 2018 Le Golf National, Paris, France.
The Ryder Cup has become one of the world’s greatest sporting events. Every two years, 24 of the best players from Europe and the United States go head-to-head in match play competition. Drama, tension, incredible golf, camaraderie and sportsmanship are served in equal measure, captivating an audience of millions around the world. It’s an event that transcends sport, yet remains true to the spirit of its founder, Samuel Ryder.
STATISTICS There have been 41 Events to date, with a total of 956 matches played by 347 players. The USA have won 26 times with the Europeans behind on only half of that with 13 wins (10 as Europe & 3 as GB & I). Just 2 times has the event been tied. Europe hold the record for most consecutive wins with 3 in a row. (2002-'04-'06 & 2010-'12-'14)
HOW IT WORKS - FORMAT
HOW IT WORKS - SCORING
Four-ball In four-ball, each member of a two-man team plays his own ball, so four balls are in play on every hole. Each team counts the lowest of its two scores on each hole, and the team whose player has the lowest score wins the hole. If the low scores are tied, the hole is halved.
Points The three days of the matches consist of 28 total matches, each of which is worth one point. There are no extra holes in Ryder Cup matches. Should the two sides be tied after 18 holes, each side earns a halve (½ point).
Each of the first two days includes one four-match session of fourball and one four-match session of foursomes. The final day is reserved for 12 singles matches.
Foursomes In foursomes, each two-man team plays one ball per hole with the players taking turns until each hole is complete. Players alternate hitting tee shots, with one leading off on odd-numbered holes, and the other hitting first on even-numbered holes. The team with the low score on each hole wins that hole. If their scores are tied, the hole is halved. Singles In singles, each matches features one player from each team. The player with the lower score on each hole wins that hole. If their scores are tied, the hole is halved. 50
Each match is worth one point, with matches ending in a draw worth ½ point to each side. The first team to reach 14 ½ points wins the Ryder Cup. If the matches end in a 14-14 draw, the team holding the Ryder Cup retains it.
Claiming the Cup To win the Ryder Cup outright, a team must collect 14 ½ of the 28 points available. In the case of a 14-14 draw, the winning team from the previous Ryder Cup retains the trophy. Concession Unlike stroke play, players don't have to complete each hole in match play. If a player concedes a stroke, almost always a putt , to his opponent, the opponent picks up his ball, takes the score he would have made on the next stroke and moves on to the next hole.

HOW IT WORKS - TEAM SELECTION
The European Tour Tournament Committee have announced three important changes to the qualification process for Europe’s 2018 Ryder Cup team. Firstly, there will be a greater weighting for points earned in tournaments in the latter stages of the process to help ensure the European Team reflects those players in form nearer the time of The Ryder Cup itself.
qualification lists with the first counting event to benefit from this increased weighting in the 2018 season being the BMW PGA Championship at Wentworth. The last counting event in the quest to make Thomas Bjørn’s team bound for Le Golf National in Paris in September 2018 is the Made in Denmark tournament, which takes place from August 30 - September 2. The points race began at the D+D Real Czech Masters at the Albatross Golf Resort in Prague in August 2017.

SPORTING EVENTS One for the diary... Britain's Anthony Joshua will defend his world heavyweight titles against Russian Alexander Povetkin at Wembley Stadium on 22nd September.
The 28-year-old boxer unified the WBA, IBF and WBO world heavyweight titles with a unanimous points win over New Zealander Joseph Parker in Cardiff earlier in March. Unbeaten in 21 professional bouts, Joshua now faces 38-year-old Povetkin, the WBA champion from 2011-2013. Povetkin recently knocked out David Price on the Joshua-Parker undercard in Cardiff. The experienced Russian has suffered only one defeat since his professional debut in 2005, losing by unanimous decision to Wladimir Klitschko in Moscow in 2013. It will also be a meeting of two former Olympic champions, Povetkin taking super-heavyweight gold at the 2004 Athens Games and Joshua the same title at London 2012.
CURRENT CHAMPIONS The current champions in each weight division are listed below. Each champion's professional boxing record is shown in the following format: wins–losses–draws–no contests.
In professional boxing, the undisputed champion of a weight class is usually one who is recognized as the world champion at that class by each boxing organization. However, there are no officially declared necessary conditions needed to become this, as the major boxing organizations refer to all boxers with at least 2 world titles in their respective division as unified champions. 52

The Beautiful
NICE The 5th most populated city in France and nicknamed 'Nice la Belle' (Nice the Beautiful). Nice, capital of the Alpes-Maritimes department on the French Riviera, sits on the pebbly shores of the Baie des Anges. Founded by the Greeks and later a retreat for 19th-century European elite, the city has also long attracted artists. Former resident Henri Matisse is honored with a career-spanning collection of paintings at Musée Matisse. Musée Marc Chagall features some of its namesake's major religious works. The deep blue waters of the Cote d’Azur are the dramatic backdrop for elegant Nice. Bre-athe in the fresh Mediterranean air as you stroll the waterfront promenade, or get an eagle eye of the whole city from atop Castle Hill. The pedestrians-only Place Rossetti is the heart of the city, with a grand fountain, vibrant buildings, and the beautiful Sainte-Réparate cathedral giving it a provincial French feel. With its mix of real-city grit, old-world opulence, year-round sunshine, vibrant street life and stunning seaside location, no place in France compares with Nice.
Mediterranean Magnetism
Before everything else, there was the sea, and the Mediterranean climate – the twin factors that made Nice a tourist magnet as early as the 1700s. Look around and you’ll find the same elemental attractions that drew Europe's belleépoque aristocrats to promenade along the waterfront in horse-drawn carriages. Even now, nothing compares to the simple joy of a balmy beach day interspersed with a spot of people-watching astride the Promenade des Anglais' famous blue chairs. Whether you're skating, kayaking, swimming, sprawled on a beach lounger or transfixed by sunset over the ever-present Med, it's all still happening by the water. 54

The Italian Influence
For any lover of French and Italian culture, Nice is the perfect hybrid. Long affiliated with Piedmont and Liguria to the east, Savoy to the north and Sardinia to the south, this city only joined France in 1860 and has always kept one foot in Italy. The Italian influence remains palpable everywhere, in Vieux Nice's tall-shuttered, ochre-hued buildings that look airlifted straight in from Portofino, in the fresh pasta shops on every corner and even in the football cheer Issa Nissa! (Go Nice!), shouted in the local Nissart dialect that’s been coloured by Ligurian Italian as much as Occitan French.
City of Artists
The Côte d'Azur has ensnared many a visitor with the beauty of its light. Not least Henri Matisse, who came here to convalesce from bronchitis. When the sun finally emerged after a month of wintry drizzle, Matisse was so smitten that he made Nice his home for the next 37 years. Chagall, Picasso and Renoir also fell in love with this place, and Nice was later home to the influential avant-garde École de Nice. Art museums abound throughout the region, but Nice's three superstars – the Musées Matisse, Chagall and d’Art Moderne – are reason enough to justify an aesthetic pilgrimage here.
Eating Niçois-Style
Bring your appetite when you come to Nice. This city is meant for epicures. It all starts at Vieux Nice’s Saleya market, where small producers from the Alpine foothills bring in a bounty of fresh produce, and top chefs from surrounding restaurants shop right beside tourists. The city celebrates its uniqueness with street snacks like socca (chickpea pancakes), pissaladière (caramelised onion tart) or tourte de blettes (chard, raisin and pine nut pie), while its countless cosy bistros serve everything from hearty Provençal beef stew to true salade niçoise to pasta with pistou, and from fresh lemon tart to vegan cheesecake.
GETTING THERE
Flights are available direct from Alicante into Nice through Vueling, Air Nostrum & Iberia airlines (booking is easy through Zafiro Tours) and can be as little as 90€ each way. Alternatively, if you fancy the drive and maybe want to make more of a trip out of it, stopping along the way, you can get by road with around 14hrs of driving (approx 1350kms)

Flora & Fauna the local, regional & international living world
Bees & Wasps Many find that Wasps and Bees can be a nuisance and here in this region of Spain, with the climate, myriad swimming pools on private properties and an avid honey producing culture, it is a perfect environment for them to thrive. Whilst they are generally not considered dangerous, unless you
are susceptible with increased reactions to insect stings, it is worth understanding each variety and how best to avoid contact. Remember though, Bees are protected worldwide so don't go swatting them away, instead seek professional help with relocating them if they are nesting close to your home.
Honey Bee
Mud Dauber Wasp
Found predominantly in hives in the campo where they are widely used for honey production, the Honey Bee is not an aggressive species and will not try and sting you unless you attack or invade its colony (protecting the queen) so if you come across Hives whilst on a walk, do not disturb them and keep your distance.
These are a solitary species, living on their own in special small mud tubes built around 1 inch long and found in sheltered areas under eaves etc. The larvae is sealed into the nest with other dead insects (normally spiders) for the young to eat. Not aggressive but can be very pesky and have a generally off-putting image with dangling legs and abdomen. You can remove the nest easily if they are a nuisance but generally, they are considered great and keeping spiders at bay from your surroundings, great if you're really not keen on them.
Carpenter Bee About 2 inches long & black (with a hint of blue/purple) Carpenter Bees nest in wood, preferring untreated softwood and will bore into wooden structure around the home so they become a nuisance structurally if left for long periods of time. They are non-aggressive and it's usually only the small you will see out flying around. The males don't sting, only the females do but again, unless badgered, provoked or prodded by inquisitive children, you shouldn’t worry too much about them. Large and formidable but gentle giants. Paper Wasp Paper wasps tend to build nests on sheltered and little-used parts of buildings, placing humans in inadvertent danger of stings. Paper wasps can also be scavengers – often congregating around food factories and food shops - and this also brings them into human contact. They are, however, less aggressive than other specias. But it should be kept in mind that, whereas Bees lose their barbed stingers in a single attack and die, all Wasps, Hornets, and Yellow jackets can sting many times.
Mammoth Wasp This is a wasp, but not an ordinary wasp. It is not the least bit interested in humans, a gentle giant and solitary by nature. Females can about 4.5cm long with a yellow head. The male is slightly smaller with a black head. It actually looks like a larger, longer bumble bee. It is fluffy, and glossy black with two yellow bands across its back. It is the Mammoth Wasp, Scolia Flavifrons. It feeds on flower nectar and the larvae of Rhinoceros Beetles, which is good with me. Owing to its latter chosen food stuff, it is most often found around rotten tree stumps. Remember, if you are stung by anything that you are not sure about, seek medical advice immediately. Contact professional pest control services or your holiday agent if you have problematic nests or colonies near to your home or holiday rental. Should you come across Bee Hives, you're probably on someone elses land and shouldnt be. 59

Shellfish Galicia—a green, rainy region in Spain’s Northwest corner— is famous for serving arguably the best food in the country. Because Galicia enjoys almost 1,500 kilometres of coastline, seafood makes up a large part of the local diet; everything from fish to crabs to mussels are fair game in kitchens and restaurants up north. In the capital, Santiago de Compostela, the variety of shellfish is astonishing. In Santiago, for example, you´ll come to appreciate all varieties of fish and shellfish that call the beach and the sea their home. Learning about the variety of mariscos (shellfish) that Galicia has to offer can sometimes be confusing, as chalkboard menus advertised bizarre, foreign names that there is no English equivalent for. Octopus (pulpo / polbo) No, this isn’t like those little fried calamari you get as an appetizer sometimes; pulpo á feira is adult octopus, tentacles and all, slow-boiled under tender. After the octopus is done cooking, Galicians snip the purple tentacles into little medallions with scissors, discarding the mantle or “head.” Garnished with extra-virgin olive oil, salt, and pimentón (smoked paprika), the white tentacle cross-sections are often served with boiled potatoes. The best place to try octopus is actually inland Lugo during its San Froilán town fair when half a dozen casetas or temporary tent-restaurants set up shop. Bodegón Os Concheiros, by the bus station, is a local favourite pulpería (octopus restaurant) in Santiago. 62
Goose-neck barnacles (percebes) Percebes win the award for Weirdest Seafood in Spain: yes, they are indeed barnacles. But these barnacles attach themselves to dangerous, rocky cliffs that are battered by incoming tidal waves. Because of this, they’re extremely expensive, fetching prices between fifty and a hundred Euros a kilo! They are, however, a beloved delicacy. To eat them, you cut off the leathery tube (the “goose neck”) with your front teeth just below the base of the beaky head. Discarding the tube, you chow down on the juicy insides that sometimes can taste like a blast of the tides. I don’t know if their addictive flavor justifies their outrageous price, but they’re worth trying at least once. Velvet crab (nécora) The velvet crab is a real joy to eat because almost the entire crab is edible—the legs, pincers, and body are filled with flaky, savoury meat. These nécoras are called “velvet” crabs in English because their carapaces are covered in tiny little hairs that feel remarkably like velvet. Upon being cooked, these blueish-gray crabs turn bright red and orange, making their striped triangular swimming legs really stand out. If you try any crustacean on this list, try nécoras! Spider crab (centollo / centolo) Of all the seafood on this list, the spider crab is the only one I have yet to try, mainly because it’s so gargantuan in both size and price! The centollo’s central carapace resembles a rugged, ugly rock with thick, bony legs branching out of it that I’m sure house hefty flakes of delicious crab meat.
Shrimp (camarón / gamba) Not much to explain here, these tiny, striped shrimp are caught in the local rías or inlets of the Atlantic Ocean. They taste really great but because they’re so small it takes a lot of work to de-shell them. Norway lobster (cigala) Although the English name for cigalas includes the word “lobster,” these little orange guys really look more like jumbo shrimp with garden shears for fingers. Edward Scissor-hands, anyone? Anyway, the edible tail meat and claw meat in Norway lobsters has a similar texture to shrimp but the flavour is really more like lobster meat. Editor’s note: These delicious critters are also called Dublin Bay Prawns, Scampi, and Langoustines in English! Clams (almejas / ameixas) Although (as in English) the Spanish word almeja can refer to the broad category of bivalved molluscs known as clams, when you seen them on menus and in markets it’s usually the grooved carpet shell species, a small clam with a sometimes spotted or speckled shell. Their bodies are wide and pale and are great with added flavours like butter, garlic, and herbs. Whenever the tide is low in the mornings on the way to my school, you often see workers collecting clams on the shores of the ría; they fill long mesh tubes full of clams and related species, like cockles below. Cockles (berberechos) Berberechos are very similar to standard clams but you can distinguish them by radial ridges on their shells (almejas have concentric circles) and their heart-shaped silhouettes when viewed sideways. I personally can’t taste the difference between cockles and the clams above; cockles, however, do have smaller, rounder bodies with brighter orange “tongues.” Razor clams (navajas / navallas) From the look of these navajas you’d never believe they belonged to the same grouping as the clams and cockles above; razor clams seem like scary Creatures of the Deep with their oozing, oblong bodies. However, pry them open and you’ll realize they’re just skinny, stretched-out bivalves like any other clam (but watch out; the shells are razor-sharp!). And when steamed or grilled, the razor clam meat will remind you a lot of other mollusc meat on this list. Mussels (mejillones / mexillóns) One of the most affordable options on this list, your basic mussels are a mainstay of the local economy along the Rías Baixas or western coast of the region. Served fresh with lemon wedges as mejillones al vapor (steamed mussels) or canned in a paprika-spiced marinade called escabeche, these orangebodied molluscs can sometimes be rubbery and definitely taste like “ocean” but their salty addictiveness means you’ll have no problem eating an entire platter on your own. Scallops (vieiras) With their distinctive, fan-shaped shell, scallops are a symbol of the Camino de Santiago pilgrimage route that ends in the Galician capital of Santiago de Compostela. You’ll see yellow scallop shells directing your path all the way from the French border across northern Spain. People steam these bivalves in one half of their shell, either plain or with a mixture of onions, peppers, and breadcrumbs called vieiras gratinadas. 63

Almeria In the South East corner of Andalucia, Spain. Costa Almeria, a huge expanse of unspoilt coastline between Murcia and Granada. Perhaps not as well known as some of the Costas, yet its inhabitants like the fact its villages retain much of their Spanish identity making it the “real Spain” still. It is known for having the hottest, cleanest and driest climate also of any other Spanish location.
town’s dual identity: part pretty traditional, quiet, hillside village (Pueblo) and part lively beach (Playa) resort affords overseas property buyers the ‘best of both worlds’. Mojácar Pueblo is a picture book village of little whitewashed houses and is nestled in the olive and almond grove dotted foothills of the Sierra Cabrera mountain range.
Beautiful Mojácar remains a hot spot, only 40 minutes drive from the airport of Almeria, it is a favourite for all nationalities as a traditional holiday destination - ideal for families and couples. The
Vera is another hotspot – also divided into Pueblo and Playa areas with direct access to Garrucha – a working port with a new harbour, and the scubadiving centre of Villaricos.
