Ten kilometers from Amsterdam’s bustling city center, next to the North Sea Canal in Zaandam, lies Het HEM – a new building, home to contemporary culture. Het HEM is situated in a former bullet factory. It’s a colossal building comprising exhibition rooms, a living room with a library, a café-restaurant with a terrace on the water, plus a hi-fi club. It also houses the fabulous Restaurant Europa. In addition to hosting permanent exhibitions (by studio Raaaf), Het HEM gives specially selected curators – creative makers and thinkers of today – the opportunity to design temporary exhibitions. The result is a unique program full of diverse disciplines, such as the visual arts, dance, music, video art, theater and film. There is also space for science, politics and the philosophy of life. From noon to midnight, Thursday to Sunday, visitors head to Het HEM to enjoy exhibitions, multidisciplinary art programs and workshops, or just for coffee, lunch or dinner in one of the two on-site restaurants. Felt with feeling Claudy Jongstra leads a double life. In the first, she designs exclusive felt creations for top couturiers including Donna Karan, Viktor & Rolf and for Hollywood films like Star Wars. But it’s in the second – as an artist – where her real success lies.

felt: an unadulterated material that Jongstra uses to make stunning spatial installations, which can resemble abstract paintings comprising thick ‘blobs’ of felt, or look like glossy photo prints on delicate silk. ‘I want to paint with fiber, in a total explosion of material and colour.’ These rugs, which can stretch longer than five meters, have been purchased by prominent museums, such as Amsterdam’s Stedelijk Museum, the Victoria & Albert Museum in London and the San Francisco Museum of Modern Art. Architects like Rem Koolhaas make room for Jongstra’s touchable felt art in their creations, and many celebrities, including Brad Pitt and singer Adele, have a ‘Jongstra’ at home. Despite being elected 2019 Artist of the Year, Jongstra prefers to work away from the spotlight, on her Frisian farm, where she has transformed the traditional practice of felting into an art. The wool comes from her own herd of Drenthe heath sheep. She makes the dyes she uses from plants such as calendula and madder, which she grows in her home garden where they are pollinated by her own colony of bees. Yet having the smallest possible ecological footprint isn’t enough. On her farm, Jonstra also works with young people who don’t have access

to the labor market. ‘We want to contribute to a better future for people and nature within everything we do.’

Claudy Jongstra (1963) Jongstra completed the art academy in 1989. Since 1994, she has been making creations out of wool felt. As an artist, she creates large-scale pieces and architectural installations. Her work has been included in the permanent collections of Cooper Hewitt – Smithsonian Design Museum in New York. / Rondde in 1989 de kunstacademie af. Sinds 1994 vervaardigt ze creaties van wolvilt. Als kunstenaar maakt ze grootschalige kunstwerken en architecturale installaties. Haar werk werd o.a. opgenomen in de permanente collecties van o.a Cooper Hewitt - Smithsonian Design Museum in New York, Los Angeles County Museum of Art, het Victoria & Albert Museum in Londen en het Stedelijk Museum in Amsterdam.

Vilt tot kunst verheven Claudy Jongstra heeft eigenlijk twee loopbanen. De eerste is ontwerper van exclusieve viltcreaties voor topcouturiers als Donna Karan, Viktor & Rolf en Hollywoodfilms als Star Wars. Maar nóg meer succes heeft ze als kunstenares. Ze werd in 2019 verkozen tot Kunstenaar van het Jaar.

Onveranderd is het materiaal: vilt. Daarmee maakt Jongstra wonderschone ruimtelijke

installaties, die soms lijken op abstracte schilderijen met dikke ‘klodders’ vilt en dan weer ogen als glanzende fotoprints op ragfijn zijde. ‘Ik wil schilderen met vezels, in een totale explosie van materiaal en kleur.’ Deze kleden, die langer kunnen zijn dan vijf meter, zijn aangekocht door vooraanstaande musea als het Stedelijk Museum, het Victoria & Albert Museum London en het San Francisco Museum of Modern Art. Architecten als Rem Koolhaas maken in hun gebouwen ruimte voor haar aaibare viltkunst en onder meer Brad Pitt en zangeres Adele hebben een ‘Jongstra’ thuis. Maar werken doet Jongstra het liefst in de luwte, op haar Friese boerderij waar ze het ambachtelijk vilten heeft verheven tot kunst. De wol komt van haar eigen kudde Drentse heideschapen. De kleurstoffen voor haar vilt maakt ze van planten als calendula en meekrap die ze verbouwt in haar heemtuin. Deze planten worden weer bevrucht door een eigen bijenkolonie. Een zo klein mogelijke ecologische voetafdruk is niet genoeg – op haar boerderij werkt ze ook met jongeren met een afstand tot de arbeidsmarkt. ‘Met alles wat we doen, willen we bijdragen aan een betere toekomst voor mens en natuur.’ CLAUDYJONGSTRA.COM

A new hotel in town slapen in een voormalig museum

The latest Pillows hotel is due to open in 2021 at a very special location: the former anatomical laboratory and scientific museum Vrolik, in the middle of Amsterdamâ&#x20AC;&#x2122;s Oosterpark. The architect behind this beautiful building is Uri Gilad from Office Winhov. Here he talks about the historic premises. T E X T

What makes this hotel so unique? ‘This monumental building with its strong presence will be one of the few hotels in Amsterdam that’s actually located in a big city park and using it to strengthen the relation between the two. And it will have two entrances: the main entrance located on the street side along the water and a back entrance, situated in the park, where B rasserie Spring’s terrace will flow seamlessly into the greenery. A terrace on the roof will have panoramic views of the Oosterpark and the city. It will be a beautiful mix of tranquility and liveliness.’ The former museum and anatomical laboratory, which will house the hotel, dates back to 1908. How can you preserve the original architecture while adding something? ‘It is a U-shaped building that embraces the park, and we want to reinforce that open character. The garden that once belonged to the museum is now part of the park, so the greenery reaches the hotel façade. At the back, we are building a new wing with large windows and French balconies. For this we are using a robust brick with more relief than the old bricks, to further expression. The bricks are laid in such a way that they slightly stick out, creating an exciting shadow effect. The staircases in the new wing will connect to the existing building. You can really feel how the old and new amalgamate, as if the two buildings are talking to each other.’ What was the first thing you noticed about the interior of the old premises? ‘The wealth of materials. The interior walls are finished with bricks coated in deep yellow and blue enamel. Of course, over the last century a few things have been demolished. The starting point for our design

Het nieuwste Pillows Hotel opent in 2021 op een wel heel bijzondere plek: in een voormalig anatomisch laboratorium annex wetenschappelijk museum Vrolik, middenin het Amsterdamse Oosterpark. De architect van het Pillows Grand Hotel aan de Mauritskade is Uri Gilad van Office Winhov. Een gesprek over dit historische pand, en zijn aanpak om aanstaande gasten zich er thuis te laten voelen.

Wat maakt dit hotel zo uniek? ‘Dit monumentale, aanwezige gebouw wordt een van de weinige hotels in Amsterdam dat in een park is gesitueerd. Het zal de wisselwerking tussen bebouwing en groen versterken. Het krijgt dan ook twee ingangen: een hoofdingang in de klassieke voorgevel aan de kade, plus een achteringang, gesitueerd in het park. Daar loopt het terras van Brasserie Spring straks naadloos over in het groen. Een tweede terras zal te vinden zijn op het dak, met meesterlijk uitzicht over het Oosterpark en de stad. Een mooie mix van rust en levendigheid.’

Het voormalig museum en anatomisch laboratorium waarin het hotel gevestigd is, stamt uit 1908. Hoe kun je de oorspronkelijke architectuur behouden en er toch iets aan toevoegen? ‘Het is een U-vormig gebouw dat als het ware het park omarmt, dat open karakter willen we versterken. De tuin die ooit bij het museum hoorde, hoort inmiddels bij het park, waardoor het groen nu tot de hotelgevel doorloopt. Aan de achterkant van het pand bouwen we een nieuwe vleugel, met grote ramen en Franse balkons. Voor die nieuwbouw gebruiken we een robuuste baksteen met meer reliëf dan de oude stenen. Dat geeft meer expressie. Bovendien worden de stenen iets uit de gevel gemetseld, wat zorgt voor een spannend schaduweffect. De trappen in de nieuwe vleugel worden verbonden met het bestaande gebouw. Je vóelt hoe de oude en de nieuwe architectuur samenkomen, alsof beide panden met elkaar in gesprek gaan.’ Wat viel als eerste op aan het interieur van het oude pand? ‘De rijkdom aan materialen. De binnenmuren zijn afgewerkt met bakstenen met glazuur in diep geel en blauw. Verder is er in een eeuw tijd natuurlijk ook het een en ander gesloopt. Het uitgangspunt voor ons ontwerp was helder: alle originele elementen zijn de moeite waard om te behouden. Ook de ruimtelijkheid van het gebouw

Uri Gilad (1977) Is a co-founder and partner of the Amsterdam architectural firm Office Winhov. Gilad focuses on the redevelopment and expansion of listed buildings, sustainable housing developments and programs at the intersection of hospitality, culture and commerce. His work brings together the sustainable, social and cultural aspects of architecture and urban design. Uri graduated cum laude from the Academy of Architecture in Amsterdam in 2007. In 2016, he was nominated for the Abe Bonnema Architecture Prize, and that same year won the ARC16 Oeuvre Award with Office Winhov. ‘In our approach towards monumental buildings we always respect the existing architecture but we make sure that the layer we add into the building is visible. We are not restoration architects. If one looks carefully he or she would be able to see that added layer and it’s contextual addition to the historical building.’ / Is medeoprichter en partner van het Amsterdamse architectenbureau Office Winhov. Gilad richt zich in zijn werk op de herbestemming en uitbreiding van monumentale gebouwen, duurzame woningbouwontwikkelingen en programma’s op het snijvlak van hospitality, cultuur en commercie. In zijn werk brengt hij de duurzame, sociale en culturele aspecten van architectuur en stedenbouw samen. Uri studeerde in 2007 cum laude af aan de Academie van Bouwkunst in Amsterdam. In 2016 werd hij genomineerd voor de Abe Bonnema Prijs voor Jonge Architecten, in datzelfde jaar ontving hij met Office Winhov de ARC16 Oeuvre Award. ‘We zijn nadrukkelijk geen restauratie-architecten. Er zitten altijd eigentijdse elementen in onze ontwerpen. Maar altijd met respect voor de bestaande architectuur, die uiteindelijk sfeerbepalend is.’

was clear: all original elements are worth preserving. The building also has a unique sense of space. Some hallways are five meters high with arched ceilings and finished in glazed brick. The windows are exceptionally lofty, making it very light inside. The former museum hall has beautiful wooden rafters that are visible all the way to the ridge.’

▹ is uniek. Sommige gangen zijn wel vijf meter hoog en hebben gewelfde plafonds, soms zelfs gemaakt van die geglazuurde baksteen. De ramen zijn uitzonderlijk hoog, waardoor het binnen heel licht is. De voormalige museumzaal heeft bovendien fraaie houten dakspanten die zichtbaar zijn tot in de nok.’

What qualities must a hotel have today? ‘A hotel must be hospitable to guests, but also to the city’s residents. There will be a living room where hotel guests can read or socialize. Plus the doors at the bar and Brasserie Spring are always open to those just visiting the park looking for a drink and a snack, inside or on the terrace. The other restaurant, which has the working title Vrolik – a nod to the former museum – is more grandiose and accessible via the main entrance; it’s actually a destination in itself. That freedom of choice is typical of hospitality today. The transformation from a museum to a hotel is characteristic of the city’s contemporary development, and the preservation and re-use of old buildings shows how we respect that city.’

Aan welke kwaliteiten moet een hotel in deze tijd voldoen? ‘Een hotel moet gastvrij zijn voor gasten, maar ook voor stadsbewoners. Zo is er een living waar hotelgasten kunnen lezen of socializen. De bar die we realiseren en Brasserie Spring nodigen nadrukkelijk ook de parkbezoeker uit voor een hapje en drankje, binnen of op het terras. What is your most important source of inspiration as an architect? I really love traveling, I like to discover how other cultures live. I am also fascinated by the dynamics of a city, especially the European cities, where you can see the connection between different periods in history.’

When the hotel and restaurants open their doors in 2021, which historical figures would you like to have an evening with? ‘Gertrude Stein would have to be there. As a writer, she stood at the center of life in Paris in the 1930s, yet she was timeless. She reportedly had something to say about everything: art, literature, politics, love. I would invite psychologist and philosopher Erich Fromm, because of his sharp observations about the human mind. Yukio Futagawa from Japan would be there too; for half a century, he has been photographing cities and architecture around the world. And above all, I would invite an architect: the Italian-Brazilian Lina Bo Bardi. Because in her time (1914-1992) she was a woman of the world. She built a bridge between architecture as a culture and as a social discipline.’

Nog even en ze verdwijnen in de kussens van Serta, het luxemerk dat de kussens levert aan Pillows Hotels. Met alleen maar het beste dons en de beste veren, want voor een goede nachtrust is de selectie streng.

a warm stream of air blows the dancing feathers upwards. It looks enchanting, but in fact, a simple physical process is taking place: the separation of feathers and down. Down grows directly on the duck’s skin, under its feathers, and is lighter, so the feathers are first to fall to the ground. The fewer the feathers that remain, the longer the down floats in the air. And the higher they float, the better their quality – making airier pillows for the hotel guests at Pillows. Before a pillow is fully ready, the feathers go through an intensive treatment at a down company in Ermelo. Here the down is processed into an insulating and resilient filling. Three times a day, a truck visits this shed between the meadows, with at least eight hundred kilos of down and duck feathers. More than half a century ago down and feathers were nothing more than a byproduct of slaughter, and there was little demand for them. But now the down industry is regulated, thanks to stringent checks on animal welfare and sustainability. For every batch of feathers, all information is available - from the farm of origin to the duck that carried the down and feathers. All the down in the Serta pillows meet the Responsible Down Standard (RDS). The standard guaranteeing the animals are treated humanely.

Voordat zo’n kussen slaapklaar is, krijgen de veertjes een intensieve behandeling bij een donsbedrijf in Ermelo waar het dons wordt verwerkt tot een isolerend en veerkrachtig vulmateriaal. Hier, in een loods midden tussen de weilanden, komt drie keer per dag een vrachtwagen langs met maar liefst achthonderd kilo dons en eendenveren. Meer dan een halve eeuw geleden waren dons en veren niet meer dan een bijproduct van de slacht waar niet te veel vragen over werden gesteld. Maar inmiddels is ook de donsindustrie gereguleerd, dankzij een scherpe controle op het dierenwelzijn en duurzaamheid. Van elke partij veren is alles terug te vinden; van welke boerderij het afkomstig is tot het soort eenden die het dons en de veren hebben gedragen. Al het dons in de kussens van Serta, voldoet aan de Responsible Down Standard (RDS). Die standaard garandeert dat de eenden geen dwangvoeding hebben gekregen, niet levend zijn geplukt en tijdens hun leven voldoende bewegingsruimte hadden.

First class feathers

With a large shovel in his hand, an Ermelose down company employee scoops the wet feathers and down out of the truck. It’s important to submerge them in water as quickly as possible so they can be thoroughly cleaned, before being tipped into one of the large washing machines and cleaned for another hour and a half. Once refreshed, the down and feathers go into dryers that almost reach the ceiling, where they are sterilized at one hundred and twenty degrees for half an hour. This processing earns them the European Class 1 Certificate, showing that they meet European hygiene requirements. The down then waits for one last cleaning round to remove any dust.

Why duck down? Ducks have small, soft, curly feathers, which provide beautiful volume. Soft down grows on their chests. Of the eight hundred kilos that arrives, only about half remains after washing and spinning. Drying also ensures that half of the remaining four hundred kilos ‘disappears’, leaving about two hundred kilos of usable filling material. An extra round of dust removal results in three percent weight loss. Down of exceptional quality goes through this VIP treatment again before finally being labeled ‘special quality’. Incidentally, that dust comes in handy: it contains so many proteins that it is processed into animal feed.

Down everywhere

Even after intensive cleaning, the down is still not ready to leave the factory. First, in a separate room, an employee tests whether the quality is satisfactory. He does this by taking a sample of about three grams, in which the smallest feathers and down are only just visible to the naked eye. Then, using tweezers he pulls the ball apart to determine exactly how many feathers and down the sample contains. Another sample then undergoes the filling force test: the more air it can hold, the better it insulates. The Serta pillows on the Pillows beds are filled with fifteen percent of the highest quality down, supplemented with soft but strong feathers that provide the volume. Eight people work per shift; together, they keep the factory running twenty hours a day. The processing isn’t noisy – employees can talk to each other and you can clearly hear the Dutch songs being played on the radio. What is striking is that every employee – whether he works on the factory floor, behind the sewing machine or in the office – is covered in down after a day’s work. It’s in their hair, on their shoulders and trouser legs. Fortunately, they’ve come up with a solution: before they go home, most employees step under the blower for a quick clean. A little further on, in the middle of the large factory, a man is kneeling. Whistling, he builds a wall from a pile of white bricks and mortar, creating a space that will become a separate recycling area. At the moment, there are a few boxes full of old pillows and duvets in a corner of the large room. The plan is to expand this initiative. Most worn-out pillows and comforters are incinerated with the other household waste – they are not welcome in textile bins. Here, this is considered a terrible waste, because down and feathers barely wear, and 97 percent can be reused after thorough cleaning, with the rest ground down for animal feed.

five hours later and it’s time: the morning’s fresh supply has been washed, dried, sorted by quality and is now in mint green bags against the wall, ready to be collected. The bags are huge, but relatively light: they contain eighteen kilos of feathers and down. Ten women sit behind sewing machines in the next room. They each take a white cushion cover, which has previously been stitched together by colleagues, and put it in the filling machine. They are filled with a mixture of fifteen percent high-quality down and duck feathers, then a hundred quick fingers close the pillowcases in an instant and pop them straight in a box, ready to help Pillows guests get a good night’s sleep.

Dons van uitzonderlijke kwaliteit kan daarna rekenen op nóg zo’n vipbehandeling, voor het tenslotte het predicaat ‘bijzondere kwaliteit’ krijgt. Dat stof komt overigens goed van pas: het bevat zoveel eiwitten dat het verwerkt wordt tot diervoeding.

Na de intensieve reiniging mag het dons de fabriek nog steeds niet uit. Eerst test een medewerker in een aparte ruimte of de kwaliteit inderdaad voldoet. Dat doet hij door een monster van zo’n drie gram te nemen, waarin de kleinste veertjes en donsjes nog net met het blote oog te zien zijn. Daarna trekt hij het bolletje met een pincet zorgvuldig uit elkaar om te bepalen hoeveel veren en hoeveel dons er nu precies in zitten. Vervolgens ondergaat een ander monster de vulkrachttest: hoe meer lucht het dons kan vasthouden, des te beter het isoleert. De Serta-kussens op de Pillowsbedden bestaan voor vijftien procent uit dons van de hoogste kwaliteit, aangevuld met zachte maar stevige veren die zorgen voor het volume. Per shift zijn hier acht mensen aan het werk, samen houden ze de fabriek twintig uur per dag draaiende. Lawaaiig is het niet, medewerkers kunnen gewoon met elkaar praten en de Nederlandstalige liedjes uit de radio zijn overal duidelijk te horen. Wat wel opvalt: iedere medewerker – of -ie nou werkzaam is op de fabrieksvloer, achter de naaimachine of op kantoor – zit na een dag werken onder het dons. In het haar, op de schouders en de broekspijpen. Gelukkig is daar iets op bedacht: voor ze naar huis gaan, stappen de meeste werknemers even onder de blower bij de uitgang om zichzelf schoon te laten blazen. Even verderop, middenin de grote fabriekshal, zit een man op zijn knieën. Van een stapel witte stenen en wat mortel metselt hij fluitend een muurtje van wat een aparte recycleruimte moet worden. Nu nog staan in een hoek van de grote ruimte een paar bakken vol oude kussens en dekbedden; maar het is de bedoeling dat er in de toekomst veel meer zal worden hergebruikt. De meeste sleetse kussens en dekbedden worden met de rest van het huisvuil verbrand – in textielbakken zijn ze niet welkom. Eeuwig zonde, zo vinden ze hier, omdat dons en veren nauwelijks slijten en na grondig reinigen voor 97 procent opnieuw gebruikt kunnen worden. En de rest kan in vermalen vorm dienstdoen als veevoer. vijf uur later is het eindelijk zover: de verse aanvoer van vanmorgen is gewassen, gedroogd, op kwaliteit gesorteerd en staat nu in mintgroene zakken tegen de muur. Klaar om te worden opgehaald. Hoewel de zakken gigantisch zijn, wegen ze naar verhouding maar weinig: achttien kilo zit erin. In een volgende ruimte zitten tien vrouwen achter naaimachines. Ze nemen een witte kussenhoes, die door collega’s al eerder met de hand in elkaar werd g estikt, en leggen hem in de vulmachine. Als die het mengsel van vijftien procent hoogwaardige dons en eendenveren in de hoes heeft gestopt, stikken honderd vlugge vingers de slopen in een oogwenk dicht. Hop, in een doos ermee. An ode to grandmother French-born chef Julien Royer’s Odette - in Singapore – has been a huge success. It was named Asia’s best restaurant in 2019 and boasts two Michelin stars. He recently opened Louise in Hong Kong, where he pays tribute to his grandmother of the same name. Spanish architect Ricardo Bofill is now 80 years old. His p ostmodern buildings are still as popular as ever, as illustrated in Visions of Architecture. Muralla Roja is a pink apartment block overlooking the Mediterranean Sea that was inspired by African kashbas. His renovation of an old cement factory, that housed his own office and home, received the city of Barcelona’s Prize of Architecture in 1980. / De Spaanse architect Ricardo Bofill is inmiddels tachtig jaar oud en zijn postmodernistische gebouwen zijn nog immer populair, zo valt te zien in Visions of Architecture. There’s a huge worldwide celebration in honour of Bauhaus, the design school founded by Walter Gropius in Weimar, and it’s 100 year anniversary. The Berlinische Galerie plays host to the ‘Original Bauhaus, the centenary exhibition’. Here they focus on 1000 unique Bauhaus objects, such as Marianne Brandt’s tea infuser. You can also discover the stories behind the objects, including why this woman became Bauhaus’s famous anonymous figurehead. / Het honderjarige bestaan van Bauhaus, de designschool die in 1919 door Walter Gropius in Weimar werd opgericht, wordt wereldwijd groots gevierd. The exhibition ‘Lina Bo Bardi Giancarlo Palanti Studio d’Arte Palma 1948 – 1951’ in the Design Museum of Ghent is an absolute must for fans of architecture, design and Brazilian modernism. Lina Bo Bardi was born in Italy but moved to Brazil, where she designed buildings including the Sao Paulo Museum of Art. eonardo L at the Louvre This year it’s five hundred years since Leonardo da Vinci died and, for the Louvre, that’s a good reason to exhibit some of the Italian master’s unique works. The collection includes Saint Jerome (from Vatican Pinacoteca), the cartoon of Saint Anne from London’s National Portrait Gallery and 23 drawings from the Royal Collection in Windsor. You can also see some of his most famous works, such as the Virgin on the Rocks and the Virgin and Child with Saint Anne. Hutspot in renewed hotspot Amsterdam’s Magna Plaza has reopened its doors. The shopping center is undergoing a transformation. A place that locals have avoided in recent years, it’s regaining popularity thanks to the arrival of The Food Department. A wonderful food hall featuring local entrepreneurs such as Van ’t Spit and The Entourage Group. Hutspot has also opened a new store there, selling brands such as Monokel, Filippa K and Misc Store. The hat is back! Sure, it’s always had a presence on the catwalk and Prinsjesdag, but now it’s making an appearance in the Haarlemmerbuurt – at haute couture hat store Demure. Hat designer Yuki Isshiki creates hats from special, high-quality fabrics, such as vintage felt and hand-woven denim. The name Demure – meaning reserved or modest – goes back to when Isshiki’s grandmother had a kimono business. Grandma’s taste was distinctive: luxurious, but wearable and reasonably affordable – ‘something I like to implement in my designs,’ says Isshiki. / De hoed is terug! Nou ja, vooral op de catwalk en tijdens Prinsjesdag natuurlijk. Maar ook in de Haarlemmerbuurt waar haute couture hoedenwinkel Demure huist. When on a city break, who better ask for tips than the locals? Marjolein Vilé lives and works in Brussels and shares her favorite hangouts.

before marjolein left for Brussels fourteen years ago, she lived in Amsterdam, London, Venezuela, Argentina and Italy. It was love that eventually brought her to the Belgian capital. Vilé adores the unpolished, international and relaxed vibe that permeates the city. ‘There is a live and let live mentality here.’ Despite living abroad, she hasn’t lost her roots, preferring to bike around Brussels. Marjolein is one of the founders of the digital platform De Wereldwijven, an all female, Dutch-speaking network who live across the world, sharing inspirational stories showcasing entrepreneurial, adventurous and strong women.

You can look over the heart of Brussels from the high staircases, where you have a fantastic panoramic view! Bright green, purple and red lights flash through the pitch-black sky. The northern lights? Actually, the southern lights – lesser known, but just as stunning. Aside from the location, there is no difference between the northern lights (aurora borealis) and the southern lights (aurora australis). In both cases, the luminescence is caused by a solar wind combining electrons and protons – particles from the sun that become entangled in the earth’s magnetic field, causing the atmosphere to ‘glow’. Want to catch a glimpse? Between March and September, you’re most likely to witness the southern lights in Antarctica (the best spot due to the low light pollution), New Zealand, Patagonia and Tasmania. You will need a bit of luck, as there is no guarantee of clear air every day. If you can’t wait that long, then journey to Norway, Sweden, Finland, Iceland, Scotland or Northern Canada – where you will be treated to the magical northern lights anytime between September and April. / Felgroene, paarse en rode lichten flitsen door de pikzwarte hemel. Spotting halos

Above the snowy peaks of Bulgaria’s Pirin National Park, a ‘halo’ appears around the sun. Halo being the collective name for a family of optical phenomena in the atmosphere: colored or white circles, lines or spots of light. They usually appear around the sun or moon and are caused when sun or moonlight shines through a thin mist of ice crystals. You don’t have to wait long to see one around the sun; on average, there is a halo every two or three days. There’s a simple trick for spotting a halo. Extend your arm and cover the sun with your fist. Your thumb should touch the edge of the halo. It’s been reported that halos also have a predictive power. A circle around the sun or moon is often considered a harbinger of weather deterioration. As the old saying goes, ‘a ring around the sun or moon means rain or snow is coming soon.’ / Boven de besneeuwde toppen in het Bulgaarse Pirin national park verschijnt een halo om de zon. Dan zou je met je duim de rand van de halo moeten kunnen raken. Halo’s hebben een voorspellende betekenis: een kring om zon of maan is vaak een voorbode van een weersverslechtering. Zoals de oude weerspreuk luidt: “Kring om de zon, brengt regen in de ton”.

A thousand nightlights It’s a balmy night on Vaadhoo Island, the Maldives. The foamy crests of the waves light up magically. In the soft sand, a spooky trail of footsteps appears; under the water shines a universe full of stars. The luminous waves get their magic from a tiny alga called Noctiluca scintillans, or ‘sea sparkle’. Sea sparkle is neither a plant nor an animal – scientists classify it as a single-celled organism. In the spring and early summer, sea sparkle can light up with movement. This process, called bioluminescence, creates beautiful optical effects in the waves. The good news is you don’t have to travel to the Maldives for the light show, in warm weather the seawater can also illuminate in our own North Sea. / Een zwoele nacht op Vaadhoo Island, de Malediven. A thrilling tale set during the Cold War of secretaries turned spies, love, duty and sacrifice...

e typed a hundred words per minute and never missed a syllable. Our identical desks were each equipped with a mintshelled Royal Quiet Deluxe typewriter, a black Western Electric rotary phone, and a stack of yellow steno pads. Our fingers flew across the keys. Our clacking was constant. We’d pause only to answer the phone or to take a drag of a cigarette; some of us managed to master both without missing a beat. The men would arrive around ten. One by one, they’d pull us into their offices. We’d sit in small chairs pushed into the corners while they’d sit behind their large mahogany desks or pace the carpet while speaking to the ceiling. We’d listen. We’d record. We were their audience of one for their memos, reports, write-ups, lunch orders. Sometimes they’d forget we were there and we’d learn much more: who was trying to box out whom, who was making a power play, who was having an affair, who was in and who was out. Sometimes they’d refer to us not by name but by hair color or body type: Blondie, Red, Tits. We had our secret names for them, too: Grabber, Coffee Breath, Teeth. They would call us girls, but we were not. we came to the agency by way of Radcliffe, Vassar, Smith. We were the first daughters of our families to earn degrees. Some of us spoke Mandarin. Some could fly planes. Some of us could handle a Colt 1873 better than John Wayne. But all we were asked when interviewed was “Can you type?” It’s been said that the typewriter was built for women — that to truly make the keys sing requires the feminine touch, that our narrow fingers are suited for the device, that while men lay claim to cars and bombs and rockets, the typewriter is a machine of our P I L LOW S

own. Well, we don’t know about all that. But what we will say is that as we typed, our fingers became extensions of our brains, with no delay between the words coming out of their mouths — words they told us not to remember — and our keys slapping ink onto paper. And when you think about it like that, about the mechanics of it all, it’s almost poetic. Almost. But did we aspire to tension headaches and sore wrists and bad posture? Is it what we dreamed of in high school, when studying twice as hard as the boys? Was clerical work what we had in mind when opening the fat manila envelopes containing our college acceptance letters? Or where we thought we’d be headed as we sat in those white wooden chairs on the fifty-yard line, capped and gowned, receiving the rolled parchments that promised we were qualified to do so much more? Most of us viewed the job in the typing pool as temporary. We wouldn’t admit it aloud — not even to each other — but many of us believed it would be a first rung toward achieving what the men got right out of college: positions as officers; our own offices with lamps that gave off a flattering light, plush rugs, wooden desks; our own typists taking down our dictation. We thought of it as a beginning, not an end, despite what we’d been told all our lives. Other women came to the Agency not to start their careers but to round them out. Leftovers from the OSS, where they’d been legends during the war, they’d become relics relegated to the typing pool or the records department or some desk in some corner with nothing to do. there was betty. During the war, she ran black ops, striking blows at opposition morale by planting newspaper articles and dropping propaganda flyers from airplanes. We’d heard she once provided dynamite to a man who blew up a resource train as it passed over a bridge somewhere in Burma. We could never be sure what was true and what wasn’t; those old OSS records had a way of disappearing. But what we did know was that at the Agency, Betty sat at a desk along with the rest of us, the Ivy League men who were her peers during the war having become her bosses. We think of Virginia, sitting at a similar desk—her thick yellow cardigan wrapped around her shoulders no matter the season, a pencil stuck in the bun atop her head. We think of her one fuzzy blue slipper underneath her desk— no need for the other, her left leg amputated after a childhood hunting accident. She’d named her prosthetic leg Cuthbert, and if she had too many drinks, she’d take it off and hand it to you. Virginia rarely spoke of her time in the OSS, and if you hadn’t heard the secondhand stories about her spy days you’d think she was just another aging government gal. But we’d heard the stories. Like the time she disguised herself as a milkmaid and led a herd of cows and two French Resistance fighters to the border. How the Gestapo had called her one of the most dangerous of the allied spies— Cuthbert and all. Sometimes Virginia would pass us in the hall, or we’d share an elevator with her, or we’d see her waiting for the number sixteen bus at the corner of E and Twenty-First. We’d want to stop and ask her about her days fighting the Nazis — about whether she still thought of those days while sitting at that desk waiting B Y

En wanneer je er zo over denkt, over het mechanisme van dit alles, is het bijna poëtisch. Bijna. Maar hadden we gestreefd naar spanningshoofdpijn, pijnlijke polsen en een slechte houding? Droomden we daarvan op de middelbare school, waar we twee keer zo hard werkten als de jongens? Was administratief werk wat we voor ogen hadden toen we de dikke enveloppe openden waarin de toelatingsbrief van de universiteit zat? Of zagen we het als ons toekomstbeeld terwijl we in toga en academische baret op weg waren om het opgerolde perkament in ontvangst te nemen dat bewees dat we tot zoveel meer in staat waren? De meesten van ons dachten dat het typistenwerk tijdelijk was. Dat zouden we nooit hardop toegeven – ook niet aan elkaar – maar we geloofden dat het de onderste sport was om te bereiken wat mannen meteen na hun afstuderen kregen: een leidinggevende positie, een eigen kantoor met lampen die flatterend licht gaven, hoogpolig tapijt en een houten bureau, een eigen secretaresse die ónze woorden noteerde. We zagen het als een begin, niet als einde, ondanks alles wat we ons hele leven te horen hadden gekregen. Andere vrouwen kwamen niet naar de cia om aan hun carrière te beginnen, maar om die juist af te ronden. De afdankertjes van het Office of Strategic Services, ware legendes tijdens de oorlog, waren relieken geworden die werden overgedragen aan de typekamer, het archief of een weggestopt bureau in een hoekje met niets te doen.

for the next war, or for someone to tell her to go home. They’d tried to push the OSS gals out for years — they had no use for them in their new cold war. Those same fingers that once pulled triggers had become better suited for the typewriter, it seemed. But who were we to complain? It was a good job, and we were lucky to have it. And it was certainly more exciting than most government gigs. Department of Agriculture? Interior? Could you imagine? The Soviet Russia Division, or SR, became our home away from home. And just as the Agency was known as a boys’ club, we formed our own group. We began thinking of ourselves as the Pool, and we were stronger for it. Plus, the commute wasn’t bad. We’d take buses or streetcars in bad weather and walk on nice days. Most of us lived in the neighborhoods bordering downtown: Georgetown, Dupont, Cleveland Park, Cathedral Heights. We lived alone in walk- up studios so small one could practically lie down and touch one wall with her head and the other with her toes. We lived in the last remaining boarding houses on Mass. Avenue, with lines of bunk beds and ten-thirty curfews. We often had roommates – other government gals with names like Agnes or Peg. They were always leaving their pink foam curlers in the sink or peanut butter stuck to the back of the butter knife or used sanitary napkins improperly wrapped in the small wastebasket next to the sink. Only Linda Murphy was married back then, and only just married. The marrieds never stayed long. Some stuck it out until they got pregnant, but usually as soon as an engagement ring was slipped on, they’d plan their departure. We’d eat Safeway sheet cake in the break room to see them off. The men would come in for a slice and say they were awfully sad to see them go; but we’d catch that glimmer in their eye as they thought about whichever newer, younger girl might take their place. We’d promise to keep in touch, but after the wedding and the baby, they’d settle down in the farthest corners of the District — places one would have to take a taxi or two buses to reach, like Bethesda or Fairfax or Alexandria. Maybe we’d make the journey out there for the baby’s first birthday, but anything after that was unlikely. Most of us were single, putting our career first, a choice we’d repeatedly have to tell our parents was not a political statement. Sure, they were proud when we graduated from college, but with each passing year spent making careers instead of babies, they grew increasingly confused about our state of husbandlessness and our rather odd decision to live in a city built on a swamp. and sure, in summer, Washington’s humidity was thick as a wet blanket, the mosquitoes tiger-striped and fierce. In the morning, our curls, done up the night before, would deflate as soon as we’d step outside. And the streetcars and buses felt like saunas but smelled like rotten sponges. Apart from a cold shower, there was never a moment when one felt less than sweaty and disheveled. Winter didn’t offer much reprieve. We’d bundle up and rush from our bus stop with our head down to avoid the winds that blew off the icy Potomac. But in the fall, the city came alive. The trees along ConP I L LOW S

Maar wij wisten van haar verleden af. Zoals die keer dat ze vermomd als herderin een kudde koeien en twee Franse verzetsstrijders naar de grens had gebracht. En dat de Gestapo haar een van de gevaarlijkste spionnen van de geallieerden had genoemd – ondanks Cuthbert. Soms kwamen we Virginia tegen in de gang of stonden we naast haar in de lift, of we zagen haar op de hoek van E en Twenty-first Street staan wachten op bus 16. we hadden haar graag gevraagd naar de tijd dat ze tegen de nazi’s vocht, of ze terugdacht aan die dagen terwijl ze aan haar bureau zat te wachten op de volgende oorlog of op iemand die tegen haar zei dat ze naar huis kon gaan. Ze probeerden de meisjes van het oss al jaren weg te krijgen; in hun nieuwe koude oorlog konden ze hen niet gebruiken. De vingers die eerst de trekker overhaalden, leken ineens beter geschikt voor de typemachine. Maar wie waren wij om te klagen? Het was een goede baan, we mochten er blij mee zijn. En het was absoluut spannender dan werken voor een ander onderdeel van de regering. Ministerie van Landbouw? Binnenlandse Zaken? Kun je je dat voorstellen? De afdeling Sovjet-Rusland, de sr, werd ons tweede thuis. En zoals de cia bekendstond als een typische jongensclub, zo vormden wij ons eigen groepje. We begonnen onszelf te zien als de typegroep en daar voelden we ons sterker door. Bovendien was het kantoor goed bereikbaar. Als het slecht weer was, namen we de bus en bij mooi weer liepen we. De meesten van ons woonden in een van de buurten die rondom het centrum lagen: Georgetown, Dupont, Cleveland Park, Cathedral Heights. We woonden op kamers zo klein dat als je erin ging liggen, je met je hoofd de ene muur kon aanraken en met je tenen de andere. We woonden in de laatste huurpensions aan Massa chusetts Avenue, met rijen stapelbedden en een strikte avondklok van halfelf. Vaak deelden we een appartementje met andere overheidsmeiden die Agnes of Peg heetten en die altijd hun roze krulspelden in de wasbak lieten slingeren, of pindakaas aan het botermesje smeerden, of hun maandverband niet goed ingepakt weggooiden in het afvalemmertje naast de wasbak. Linda Murphy was de enige die getrouwd was, en ook pas net. De gehuwden bleven nooit lang. Een paar hielden het vol totdat ze zwanger werden, maar meestal maakten ze al plannen om te vertrekken zodra de verlovingsring om hun vinger werd geschoven. Om hen uit te zwaaien aten we in de kantine een stuk goedkope taart. De mannen kwamen ook een stuk halen en zeiden dat het jammer was dat ze vertrokken; maar wij zagen iets fonkelen in hun ogen wanneer ze dachten aan het nieuwe, jongere

We zetten onze carrière op de eerste plaats en we moesten onze ouders vaak vertellen dat deze keus geen politiek standpunt was. Natuurlijk waren ze trots toen we afstudeerden, maar met elk jaar dat we met onze carrière bezig waren in plaats van met baby’s raakten ze meer in de war door onze manloosheid en de nogal vreemde beslissing om in een stad te gaan wonen die was gebouwd op een moeras. en ja, in de zomer was het in Washington zo vochtig dat het leek of er een natte deken over de stad hing en de muggen waren bloeddorstig als tijgers. Zodra we in de ochtend een voet buiten de deur zetten, gingen onze in de nacht ingezette krullen al hangen. De bus voelde aan als een sauna, maar rook naar rottende spons. Behalve vlak na een koude douche was er geen moment dat je je niet zweterig en groezelig voelde. Ook de winter was niet veel aangenamer. We pakten ons goed in en renden van de bushalte met ons gezicht naar beneden vanwege de ijskoude wind die van de Potomac onze kant op kwam. Maar in het najaar kwam de stad tot leven. De bomen aan Connecticut Avenue deden denken aan vallend oranje en rood vuurwerk. De temperatuur was aangenaam, dus hadden we geen zorgen over blouses met grote natte plekken onder de oksels. De hotdogverkopers boden geroosterde kastanjes in papieren zakjes aan – precies de juiste hoeveelheid voor een avondwandeling naar huis. en in het voorjaar waren er de kersenbloesems en de busladingen toeristen die langs de monumenten drentelden en, de talloze verbodsbordjes negerend, toch de lichtroze bloesem plukten en die achter een oor of in een borstzakje staken. In de herfst en de lente was het goed toeven in Washington en we gingen dan ook vaak op een bankje zitten, of we namen een omweggetje langs de Reflecting Pool. Goed, in het complex van de cia aan E Street werd alles door de tl-buizen in een keihard licht gehuld, waardoor glimmende voorhoofden en poriën overduidelijk zichtbaar waren. Maar wanneer we aan het eind van de werkdag vertrokken en de koele lucht op onze blote armen voelden, kozen we ervoor om via de lange weg over de Mall naar huis te wandelen, en op die momenten werd de stad in het moeras een ansichtkaart. Maar we herinneren ons ook de pijnlijke vingers en polsen, de eindeloze memo’s, verslagen en dictaten. We typten zoveel dat sommigen zelfs droomden over typen. Jaren later zouden de mannen met wie we het bed deelden opmerken dat onze vingers in onze slaap onwillekeurige typebewegingen maakten. We herinneren ons de vrijdagmiddagen, waarop we elke vijf minuten op de klok keken. We herinneren ons het papier dat in onze vinger sneed, het harde toiletpapier, de houten vloer in de lobby die elke maandagochtend naar Murphy Oil Soap rook en onze schoenzolen

necticut Avenue looked like falling orange and red fireworks. And the temperature was lovely, no need to worry about our blouses being soaked through at the armpits. The hot dog vendors would serve fire- roasted chestnuts in small paper bags — the perfect amount for an evening walk home. And each spring brought cherry blossoms and busloads of tourists who would walk the monuments and, not heeding the many signs, pluck the pink-and-white flowers and tuck them behind an ear or into a suit pocket. Fall and spring in the District were times to linger, and in those moments we’d stop and sit on a bench or take a detour around the Reflecting Pool. Sure, inside the Agency’s E Street complex the fluorescent lights cast everything in a harsh glow, exaggerating the shine on our forehead and the pores on our nose. But when we’d leave for the day and the cool air would hit our bare arms, when we’d choose to take the long walk home through the Mall, it was in those moments that the city on a swamp became a postcard. but we also remember the sore fingers and the aching wrists and the endless memos and reports and dictations. We typed so much, some of us even dreamed of typing. Even years later, men we shared our beds with would remark that our fingers would sometimes twitch in our sleep. We remember looking at the clock every five minutes on Friday afternoons. We remember the paper cuts, the scratchy toilet paper, the way the lobby’s hardwood floors smelled of Murphy Oil Soap on Monday mornings, and how our heels would skid across them for days after they were waxed. We remember the one strip of windows lining the far end of SR— how they were too high to see out of, how all we could see anyway was the gray State Department building across the street, which looked exactly like our gray building. We’d speculate about their typing pool. What did they look like? What were their lives like? Did they ever look out their windows at our gray building and wonder about us? At the time, those days felt so long and specific; but thinking back, they all blended into one. We can’t tell you whether the Christmas party, when Walter Anderson spilled red wine all over the front of his shirt and passed out at reception with a note pinned to his lapel that read do not resuscitate, happened in ’51 or ’55. Nor do we remember if Holly Falcon was fired because she let a visiting officer take nude photos of her in the secondfloor conference room, or if she was promoted because of those very photos and fired shortly after for some other reason. But there are other things we do remember. If you were to come to Headquarters and see a woman in a smart green tweed suit following a man into his office or a woman wearing red heels and a matching angora sweater at reception, you might’ve assumed these women were typists or secretaries; and you would’ve been right. But you would have also been wrong. Secretary: a person entrusted with a secret. From the Latin secretus, secretum. We all typed, but some of us did more. We spoke no word of the work we did after we covered our typewriters each day. Unlike some of the men, we could keep our secrets. P I L LOW S

Zouden ze ooit uit hun ramen naar ons grauwe gebouw kijken en zich afvragen hoe het bij ons ging? De dagen waren toen lang en verschillend, maar erop terugkijkend vloeien ze in elkaar over. We zouden je niet meer kunnen vertellen of de kerstborrel waarop Walter Anderson rode wijn op zijn overhemd morste en zijn bewustzijn verloor met een briefje op zijn revers met niet reanimeren had plaatsgevonden in ’51 of in ’55. We weten ook niet meer precies of Holly Falcon werd ontslagen omdat ze een agent naaktfoto’s van zich had laten maken in de vergaderzaal op de tweede verdieping, of dat ze juist vanwege die foto’s promotie had gekregen en niet lang daarna om een andere reden was ontslagen. Maar er zijn andere dingen die we nog wel weten. Als je naar het toenmalige hoofdbureau zou zijn gekomen en een vrouw in een chic groen mantelpakje had gezien die een man naar zijn kantoor volgde, of een vrouw met rode schoenen met hoge hakken en een bijpassende trui van angorawol bij de receptie had zien staan, dan zou je misschien hebben gedacht dat deze vrouwen ook typistes of secretaresses waren, en dan had je gelijk en ongelijk gehad. Secretaris: een persoon die een geheim is toevertrouwd. Van het Latijnse secretus, secretum. We typten allemaal, maar sommigen deden meer. jaap van zweden is on a fleeting visit to the Netherlands. Before this, he was touring five Chinese cities with the New York Philharmonic – where he has been chief conductor since September 2018. Shanghai, Beijing, Guangzhou, Shenzhen and another city… which one was it again? He can’t recall. Which brings him to the here and now - where he’s in the Netherlands for six days. A time to see his children (Anna Sophia, Daniël, Benjamin and Alexander), two grandchildren and for some business meetings. Next stop is Colorado for the Aspen Music Festival. ‘And then,’ he says, as we sit in a stately building near A msterdam’s Vondelpark, ‘I’ll take a holiday!’

What do you do when you’re on vacation? ‘I learn new pieces,’ he says with conviction.

Dat klinkt niet als vakantie. Hij denkt na. ‘Hoe zal ik het zeggen? Kijk, het is werk, maar ik zit niet de hele vakantie in de partituren hoor. Als mijn vrouw, kinderen en kleinkinderen zijn opgestaan – we brengen de vakantie met het hele gezin door – heb ik er al zo’n twee, drie uur op zitten. En na de lunch, als zij naar het strand gaan, trek ik me nog even terug om te studeren.’

That doesn’t sound like a holiday! He thinks about it. ‘How best to explain this? It’s work, but I won’t be engrossed in scores the whole time. When my wife, children and grandchildren get up, we spend time with the whole family. I will have already been working for two or three hours already. And after lunch, when they go to the beach, I retreat to my study.’ Are you an avid reader? ‘No not at all. Well, I read literature related to the pieces I compose. For example, last year I read the biography of Alma Mahler, Gustav Mahler’s wife; that was epic.’

and that’s how conversations with a world-famous maestro move quickly to the music. He springs up from his chair. ‘The New York Philharmonic has a huge library. Most of the collection consists of scores left by my predecessors, from Mahler to Bernstein. All that content written by them – it’s a kind of treasure trove for me.’ New York is like an old acquaintance to Jaap van Zweden. He was only sixteen – we’re talking about the mid-seventies here – when a young boy from Amsterdam, went to study violin at the prestigious Juilliard School of Music. A glorious career ensued: first as a violinist, then as a conductor. via dallas and hong kong, to name just two stops on his career map, he now helms one of the most renowned orchestras in the world. He has long since traded in his room in Spanish Harlem, where he lived at the age of sixteen, for a spacious apartment in Manhattan. His position with the New York Philharmonic sets him on the same path as the greats - Leonard Bernstein, Gustav Mahler, Willem Mengelberg, Arturo Toscanini and Bruno Walter. Hiervoor, vertelt hij, was hij met het New York Philharmonic, waarvan hij sinds september 2018 de chef-dirigent is, aan het toeren langs vijf Chinese steden. Hij was pas zestien, we schrijven midden jaren zeventig, toen hij als Amsterdamse jongen met een beurs viool ging studeren aan de prestigieuze Juilliard School of Music. Een glansrijke carrière volgde: eerst als violist, daarna als dirigent. via onder andere Dallas en Hong Kong staat hij nu aan het roer van een van de meest gerenommeerde orkesten ter wereld. Het kamertje in Spanish Harlem waar hij als zestienjarige woonde, is omgeruild voor een ruim appartement in Manhattan. Met zijn benoeming bij het New York Philharmonic treedt hij niet alleen in de voetsporen van Leonard Bernstein en Gustav Mahler, maar ook van Willem Mengelberg, Arturo Toscanini en Bruno Walter. Wat een big deal dat is, laten de billboards zien die nog altijd door heel de stad hangen, met zijn foto erop. In koeienletters: New York, meet Jaap. Wat doet dat met u, die billboards door de hele stad? Hij haalt zijn schouders op. ‘De druk is natuurlijk enorm. Maar toen ik als zevenjarige het podium opliep met een viool onder mijn kin voelde ik die druk ook. De pressure is niet wezenlijk

He shrugs his shoulders. ‘The pressure is enormous, of course. But I felt that pressure when I when I went on stage at seven years old with a violin under my chin. I guess, in essence, that the pressure remains the same along with my motivation. I want to do what I do as well as possible.’ You have a reputation for demanding the most not only from yourself, but also from your orchestra members. ‘Look, in the end it’s about one thing: perfection. I’m fanatic about that. You have to give 110 percent if you want to reach 90 percent. But I have become milder over the years. I always say as a conductor you are a detective who’s looking for perfection, but I do see myself as a happy detective. It’s never personal, it’s about the ideal that we want to achieve together.’ Then, laughing, B Y

U heeft de reputatie niet alleen het uiterste van uzelf te vragen, maar ook van uw orkestleden. ‘Kijk, het gaat uiteindelijk maar om één ding: perfectie. Daarin ben ik heel fanatiek ja. Je moet honderdtien procent geven om negentig procent te bereiken. Maar ik ben met de jaren wel milder geworden. Ik zeg altijd: als dirigent ben je een detective, op zoek naar perfectie, maar ik zie mezelf wel als een happy detective. Het is nooit persoonlijk, het gaat om het ideaal dat we samen willen bereiken.’ Lachend: ‘Maar ik zeg ook altijd tegen mijn orkest: ik hoef niet met jullie op vakantie.’ Is deze positie het hoogst haalbare in uw carrière? Hij schudt zijn hoofd. ‘Ik denk niet in dat soort termen. Ik heb mijn pad nooit uitgestippeld. Zo zit ik helemaal niet in elkaar. Als ik mijn vrouw een zoen geef, kijk ik niet over haar schouder of er ergens anders nog een knappere vrouw rondloopt.’ Hij geeft het advies ook aan zijn kinderen, vertelt H OT E L S

Jaap van Zweden (1960) Was born in Amsterdam. Aged three he began playing the violin. At the age of 16, he won the Dutch Oskar Back V iolin Competition, and left soon after for New York, where he studied at the prestigious Julliard School of Music. Two years later, he was appointed the youngest ever concertmaster of the Royal Concertgebouw Orchestra. When he became a conductor in 1995 he stopped performing as a violinist. From 1996 onwards, he conducted famous national and international orchestras including the Hong Kong Philharmonic, which was recently named best in the world, by leading British music magazine Gramophone. ‘ I don’t think it matters what you have received, but rather what you have given’ he adds: ‘But I always say to my orchestra: I don’t feel the need to go on holiday with you.’ Is this the highest attainable position in your career? He shakes his head. ‘I don’t think in these sorts of terms. I have never mapped out my path, that’s not me at all. When I kiss my wife, I don’t look over her shoulder to see if there’s some other attractive woman walking around.’ He gives his children the same advice. ‘Don’t keep moving your horizon, don’t keep thinking: I want to go there. No. Focus on the quality of your work and nothing else. Believe me, that’s how you reach perfection.’ He knows them well, he says – the colleagues who conduct the world’s top orchestras but still focus on that P I L LOW S

characteristically, Jaap van Zweden doesn’t appear wowed with his fame. Recently, in China, one hundred and fifty people were standing outside, waiting for his signature. ‘It’s fun, but fame doesn’t change my work; it doesn’t make me a better conductor, you know?’

Het zou u wel af kunnen leiden. ‘Elke avond als ik op de bok stap, vertelt het podium mij: dít is waar het om gaat. De muziek. Al die randzaken; de televisieprogramma’s, de interviews, de roem, het doet er niet toe. Mijn werk en mijn gezin, die zijn het belangrijkste. En dat is al heel veel.’

It could distract you. ‘Every evening when I walk up to the rostrum, the stage tells me: this is what it’s all about. The music. All those peripheral issues – the television programs, the interviews, the fame – they don’t matter. My job and my family are the most important things – and that’s already a lot.’ How have you managed to combine the two? ‘It’s a matter of constantly rebalancing; sometimes one side becomes too much, the other too little. But there’s no point in feeling guilty: life corrects itself. Take Benjamin, our autistic son, for example – if he needs attention, he lets us know.’

benjamin – who is now 28 – couldn’t speak until the age of seven. On the radio, Van Zweden spoke about the American music therapist who got him talking. ‘We received so many letters after that. We thought we’d hire a room and let this man talk about his methodology.’ They expected about fifty attendees; there were five hundred waiting on the sidewalk. ‘That’s when we knew there was a need for his line of thinking.’ in 1997, Van Zweden and his wife Aaltje founded the Papageno Foundation, supporting families with autism. The foundation has since become a household name. In 2015, they opened the first Papageno House in Laren – assisted living and working for young adults with autism. ‘We have sports facilities, a restaurant and theatre. We plan to expand and set up a house like this in every Dutch province.’ Is it important for you to give something back? ‘Maybe I’m getting a bit philosophical, but if you take stock at the end of your life, what’s important is what you have received, rather than what you have given. So yes, I think it’s important.’

in the early days, it was paramount for Van Zweden that the New York Philharmonic became a real part of its home city again. ‘The leaflets that were circulating showed the orchestra on New York’s rooftops. Spectacular, but that wasn’t the message I wanted to convey.’ he devised Phil The Hall: a series of concerts where New Yorkers could see an orchestra for five dollars. ‘It was fabulous to see the eclectic mix of people who came: police officers, firefighters, the homeless. Music is not just for the happy few who can afford it.’ There’s a knock at the door – his next appointment is waiting.

Hoe heeft u die twee kunnen combineren? ‘Dat is voortdurend balanceren. Het ene moment krijgt het een te veel, het andere te weinig. Maar aan schuldgevoel heb je niks: het leven corrigeert zichzelf. Neem Benjamin (28), onze autistische zoon. Als hij aandacht nodig heeft, dan laat hij dat weten ook.’ Tot zijn zevende sprak Benjamin geen woord. Op de radio vertelde Van Zweden over een Amerikaanse muziektherapeut die hem aan het praten kreeg. ‘We kregen zoveel reacties. We dachten: we huren een zaaltje en laten deze man over zijn methodiek vertellen.’ Ze rekenden op vijftig aanwezigen. Er stonden er vijfhonderd. ‘Toen wisten we: hier ligt een behoefte.’ Met zijn vrouw Aaltje richtte hij in 1997 de Stichting Papageno op, voor gezinnen met kinderen met autisme. In 2015 werd in Laren het eerste Papageno Huis geopend, een huis voor begeleid wonen en werken voor jongvolwassenen met autisme. ‘We hebben daar sportfaciliteiten, een restaurant, een theaterzaal, noem maar op. En we gaan uitbreiden. Het plan is om in elke provincie in Nederland zo’n huis te realiseren.’ Is het belangrijk voor u, om iets terug te doen? ‘Als je aan het einde van je leven de balans opmaakt, denk ik niet dat het uitmaakt wat je hebt gekregen, maar wat je hebt gegeven. Dus ja, ik vind het belangrijk om mijn steentje bij te dragen aan een betere maatschappij.’

als pas aangestelde chef-dirigent bij het New York Philharmonic vond Van Zweden het belangrijk dat het orkest weer van de hele stad werd. ‘Op de folders die toen in omloop waren stond een foto van het orkest bovenop de daken van de stad. Spectaculair, maar dat is niet de boodschap die ik wil uitstralen.’ hij kwam met Phil The Hall: een serie orkesten waar alle New Yorkers voor vijf dollar een orkest kunnen bijwonen. ‘Geweldig wat daar allemaal op afkomt: politiemensen, brandweerlieden, daklozen. Muziek is niet alleen maar voor de happy few die het kunnen betalen.’ Er wordt geklopt. De volgende afspraak wacht.

He laughs: ‘Of course – I love Bruno Mars, Earth Wind and Fire, Sinatra, and Lady Gaga, I think she’s fantastic.’

Nog één vraag. Luistert u ook wel eens naar niet-klassieke muziek? Lachend: ‘Natuurlijk. Ik luister naar Bruno Mars, Earth Wind and Fire, Sinatra. En naar Lady Gaga, die vind ik geweldig.’

‘I visit Moscow with a friend – we’re in search of palaces with colorful towers and the Red October Chocolate Factory, which has been converted into a creative hub. Along the way, we familiarize ourselves with the city’s rawness: dancing bears at the markets and alcoholics who are (still?) drunk at seven in the morning. In the supermarket, surly cashiers throw us our change. This city is immersed in sadness, and that evokes a feeling of nostalgia and melancholy I like to wallow in; it’s a feeling I recognize from my work.’ / ‘Met een vriendin bezoek ik Moskou. Op zoek naar paleizen met gekleurde torentjes en de Red October Chocolate Factory, dat werd omgebouwd tot creatieve hub. Onderweg maken we kennis met de rauwheid van de stad: dansende beren op markten en alcoholisten die om zeven uur ’s ochtends al – of nog? – dronken zijn. In de supermarkt gooien norse kassières ons wisselgeld terug. Deze stad is gedompeld in triestheid en dat roept een gevoel van nostalgie en melancholie in mij op waar ik mij graag in wentel. ‘As a window display designer, I love windowshopping. I like nothing more than pressing my nose against the glass and peering in, especially when Christmas is coming up. In my mind, I often window shop in New York, one of my favorite cities. Tucked up in my warm winter coat, I would roam around Fifth Avenue, breathlessly enjoying the artwork and lavish decorations in the windows. After that, a skate around Central Park and stay at the super stylish Hudson Hotel with its endlessly long lobby and beautiful indoor gardens.’ / ‘Als etalagemaker, ben ik een enorme window shopper. Zeker als het tegen kerst loopt, doe ik niets liever dan met m’n neus tegen winkelruiten staan. In gedachten deed ik dat al vaak in New York, een van mijn lievelingssteden. Diep verscholen in mijn warme winterjas struin ik Fifth Avenue af en geniet ademloos van de kunstwerkjes en uitbundige decoraties achter de ramen. Daarna schaats ik een baantje in Central Park en ’s avonds logeer ik superstylish in het Hudsonhotel met zijn oneindig lange lobby en prachtige binnen tuinen.’

My favorite aunt, Rieks, invites me on an active holiday in Lapland. She has enormous energy, so I’m off on a week-long trip full of excursions and adventures. I’m looking forward to sleeping in an igloo made of glass in Kakslauttanen, where I’ll be able to see the stars and (hopefully!) the Northern Lights. During the day we’ll go on safari on a sleigh pulled by huskies – it’s the traditional way to travel, and environmentally friendly too. We’ll switch the sound of roaring engines for the ghost like gliding of the sleigh, plus the soft footsteps of the huskies in the snow. The ultimate nature experience. / Mijn lievelingstante Rieks nodigt mij uit voor een vakantie in Lapland. Ze is enorm actief en dus ga ik een week vol tochten en avonturen tegemoet. Ik verheug me op slapen in een iglo van glas in Kakslauttanen waardoor ik de sterren en hopelijk het noorderlicht kan zien. Overdag gaan we op safari met een huskyslee. Noa Verhofstad (1982) Is a set designer, who occasionally acts as an art director. In 2011, she founded her own studio: Studio Noa Verhofstad. She designs window displays, takes photos and creates TV commercials for De Bijenkorf, LINDA. magazine and various theater companies. For the last five years, she has been creating shop window displays around the world for French fashion house Hermès. Her images are poetic, nostalgic and often hand-made. / Is set designer, maar treedt zo nu en dan ook op als art director. In 2011 richt ze haar eigen studio op: Studio Noa Verhofstad. gonia. This time, he’s traveling with me, showing me the most beautiful spots. It never gets warmer than fifteen degrees, which explains why the nature is so different to ours. Our path takes us across slowly disappearing glaciers. We marvel at three-thousand-year-old trees and the alternating plains and mountains. Over a homemade beer at the Calafate Hostel, we talk about our lives, now filled with children and busy jobs.’ / ‘Mijn broer woont in Ecuador. Hij begeleidt er mensen tijdens hun reizen door Patagonië. Dit keer laat hij mij de mooiste plekken zien. Het is hier nooit warmer dan vijftien graden, daardoor is de natuur zo anders dan bij ons. ‘An Eastern European city is at its most beautiful in the winter, when people in thick coats walk hunched along snow-covered streets. It has a romantic nostalgia that I adore. Budapest is one of those cities where poetry seems to seep from the sidewalk. I visit the Ecseri-Piac flea market with a friend. We arrive in a freezing cold, worn-out bus. In order to warm up, we order steaming Kürtóskalács (sweet bread). Then we surrender to the shouting salespeople and tough haggling.’ / ‘Een Oost-Europese stad is toch het mooist in de winter. Wanneer de mensen in dikke jassen voorover gebogen door besneeuwde straten lopen. Het heeft een nostalgische romantiek waar ik enorm van houd. Budapest is zo’n stad waar de poëzie van de stoeptegels afdruipt. Met een vriendin bezoek ik de rommelmarkt Ecseri-Piac. In een versleten, ijskoude bus komen we aan en om een beetje op te warmen, bestellen we een dampende Kürtóskalács (zoet brood). Dan geven we ons over aan gillende koopmannen en pittige onderhandelingen.’

The luminism created by artist duo Tijdmakers doesn’t just brighten dark days. Saskia Hoogendoorn (1973) and Lieuwe Martijn Wijnands (1970) also light up the skies at special locations.

adopting the form of 178 luminous bottles on a buoy, this magnificent centerpiece floated on the Amstel during the Amsterdam Light Festival. Each glowing bottle represented the 178 nationalities of those living in Amsterdam – the most diverse city in the world. It was then shown at festivals in Brussels and Bangkok before finally being sold to Amsterdam; it now illuminates the entrance at Sloterdijk train station. Just a stone’s throw away, above the Sloterplas lake, flies their ‘Light Kite’ – an irradiate kite that portrays summer and freedom throughout the dark winter months. tijdmakers don’t just bring light to dark days; their work also emblazons special locations – ‘like the finish line of the Elfstedentocht in Leeuwarden,’ says Saskia Hoogendoorn. This being the long-distance skating event that only takes place when sub zero temperatures permit. ‘We recently placed an arc there in the shape of the contour lines of the Elfstedenkruisje,’ the finishers’ medal. They use light consciously in all their pieces, as Hoogendoorn explains: ‘Light gives hope in the darkness. And seeing light has a positive effect on our brains; think of the therapy lamps people use to improve their mood.’ The duo also like to reach their audience through aromas. They’ve even proclaimed that the 21st century is that of the nose. During Dutch Design Week, they presented DIAG/ NOSE, an installation that lets people test their own sense of smell.

Op een steenworp afstand hangt sinds vorig jaar hun neon-geel verlichtte vlieger Light Kite boven de Sloterplas, die daar in donkere wintermaanden het gevoel van zomer en vrijheid verbeeldt. kunstenaarsduo Tijdmakers brengt niet alleen verlichting tijdens donkere dagen, maar markeert ook bijzondere locaties. ‘Zoals de finish van de Elfstedentocht in Leeuwarden,’ vertelt Saskia Hoogendoorn. ‘Daar plaatsten we onlangs een boog in de vorm van de contourlijnen van het Elfstedenkruisje.’ Het gebruik van licht is bij al die kunstwerken bewust. Hoogendoorn: ‘Licht geeft hoop in de duisternis. En het zien van licht beïnvloedt ook positief ons brein. Denk maar aan therapielampen waar mensen zich aan laven voor een beter humeur.’ Een ander zintuig waar Tijdmakers hun publiek graag mee bereiken, is geur. Ze riepen de 21ste eeuw zelfs uit tot Eeuw van de Neus. En tijdens de Dutch Design Week presenteerde ze DIAG/NOSE, een installatie waarmee iedereen z’n eigen reukvermogen kan testen. veel mensen kennen het duo van Eau d’Amsterdam, een parfum met de geur van de iepen van Amsterdam (verkrijgbaar in The Pillows Shop, zie pagina 78).

For singer-songwriter and film composer Helge Slikker, visiting Iceland is like coming home. The island’s raw, cinematic and inhospitable nature never fails to fascinate and inspire him. His new album Polar is the essence of the country and will be launched this autumn at Iceland Airwaves – the country’s largest music festival.

‘I landed in Iceland for the first time back in 2000; I think I fell in love within a second. The thin air, ground made of petrified lava, lack of trees, bright colours... Nothing is familiar, but everything you see is beautiful. It is constantly absurd. In Sletta in the north, it feels like I’m walking on another planet – there isn’t an Icelandic person in sight on this vast plain. The village of Raufarhöfn (1) is just like an abandoned film set. I was there once off-season and was allowed to sleep in a hotel that was actually closed! I was the only person in the whole hotel. The owner cooked for me and then went home; it was a wonderful experience. Seydisfjordur (2) is just about the opposite – a lively artists’ village in the east that surprises you with an unexpected abundance of colour after a kilometer-long mountain pass. It’s full of brightly painted houses and small studios, a light blue church, crazy derelict sheds and an LGBT pedestrian crossing right through the village... and even more bizarre, out of nowhere, the hippest bar ever, serving rotten shark!

Helge Slikker (1977) He graduated from the Kleinkunst academie in Antwerp in 2000. He composed musical scores for TV and film, including Kauwboy, which won a Golden Calf for best music. His debut album The Days of Young Pretty Davis was released in 2018, his album Polar is due to be released in November 2019. / Studeerde in 2000 af aan de kleinkunstacademie in Antwerpen. Componeerde muziek voor film en tv, waaronder Kauwboy dat een Gouden Kalf won voor beste muziek. Zijn debuutalbum The Days of Young Pretty Davis kwam uit in 2018, zijn album Polar wordt in november 2019 gelanceerd.

It may sound strange, but Iceland is comforting for me. Sometimes I find it difficult to understand how the world works, and how we’re stuck in the very systems we devised. But as soon as I step onto the island, I’m reminded: oh yes, this is the world. Its unspoiled, unpolished nature makes me feel small and insignificant – whether I achieve a goal or have followers on social media suddenly becomes completely unimportant. There is nothing to prove; what a breath of fresh air! I experience particularly strongly at the Gullfoss (3), considered one of the world’s most impressive waterfalls. It’s clear to see why: the water cascades thunderously in a broad line, taking several steps down. It’s gigantic and the water verberates with an awesome power! I also get that feeling of insignificance at Thingvellier (4) – it’s a sort of large, natural tribune on the fault line between the Eurasian and North American tectonic plates. This is where, in the year 930, representatives of the Icelandic people came together to form the Althing (parliament). It’s almost a holy place. B Y

Voor singer-songwriter en filmcomponist Helge Slikker is IJsland als thuiskomen. Het rauwe, filmische en onherbergzame van het eiland fascineren en inspireren hem keer op keer. Zijn nieuwe album Polar ademt IJsland en wordt dit najaar op Iceland Airwaves - het grootste muziekfestival van IJsland gelanceerd. ‘In 2000 landde ik voor het eerst op IJsland. Ik denk dat ik binnen een seconde verliefd was. De ijle lucht, de grond van versteend lava, de afwezigheid van bomen, de heldere kleuren… Niets van wat je ziet ken je al en alles wat je ziet is mooi. Het is voortdurend absurd. In de Sletta in het noorden bijvoorbeeld voelt het alsof ik op de een andere planeet loop. In deze uitgestrekte vlakte kom je zelfs geen IJslander meer tegen. Het dorpje Raufarhöfn (1) is net een verlaten filmset. Ik was er eens off-season en mocht slapen in het hotel dat eigenlijk dicht was. De eigenaar kookte voor me maar ging daarna naar huis. Lag ik daar alleen in dat hele hotel. Een wonderlijke ervaring. Ongeveer het tegenovergestelde is Seydisfjordur (2), een levendig kunstenaarsdorpje in het oosten. Na een kilometerslange bergpas word je nietsvermoedend verrast door een overdaad aan kleur. Felgekleurde huizen, kleine ateliertjes, een lichtblauw kerkje, gekke vervallen loodsen, een LHBT-zebrapad dwars door het dorp… en dan ineens de hipste bar ooit, met rotte haai op het menu. Het klinkt misschien gek, maar IJsland biedt me een soort troost. Soms kan ik er niet bij hoe de wereld in elkaar steekt en hoe we vastzitten in systemen die we zelf hebben bedacht. Maar zodra ik het eiland opstap, weet ik weer: o ja, dít is de wereld. Die ongerepte, ongepolijste natuur maakt mij als mens heel klein. Of ik iets bereik of volgers heb, is ineens totaal onbelangrijk. Er valt niks te bewijzen. Wat een bevrijding! Dat ervaar ik bijvoorbeeld sterk bij de Gullfoss (3); niet voor niets één van ’s werelds indrukwekkendste watervallen. In een brede lijn maakt het water een donderde val

You can clearly hear Iceland’s atmospheric elusiveness on my new album, Polar. Listening to the ethereal sounds, you can almost see the island. Working with my producer Dave Menkehorst and local musicians, I recorded the album in the space of a week and a half – largely in Iceland. Iceland clears my head, allowing space for creativity. That’s why the Secret Lagoon (5) is magical for me – the natural hot water pool between the rocks helps me let go and I step out of the water reborn. In addition to the landscape, Icelandic music is also a huge source of inspiration. Because the population is relatively low and everyone knows each other, as a musician you can’t get away with commercial rubbish. Staying true to yourself is so important; make music from the heart. It’s non-conformist, experimental and uncompromising; even if it’s not my taste I can almost always connect with it.’

Op mijn nieuwe album Polar hoor je het sferische, ongrijpbare van IJsland duidelijk terug. De ijle klanken maken dat je het eiland bijna ziet. Ik heb de plaat in anderhalve week tijd grotendeels opgenomen op IJsland zelf, samen met mijn producer Dave Menkehorst en lokale muzikanten. IJsland maakt mijn hoofd leeg en daardoor ontstaat ruimte voor creativiteit. Zo is de Secret Lagoon (5) voor mij magisch. Dit natuurlijke warmwaterzwembad tussen de rotsen helpt me dingen los te laten; ik stap er als herboren weer uit. Naast het landschap is ook de IJslandse muziek een enorme inspiratiebron. ‘For Coperto Restobar, organic vegetables and herbs are grown at De Huppe, a farm and country store in Zwolle. I am there every week to see, taste and smell all the beautiful things that are going on. At De Huppe, the feeling of home is paramount, just like at Pillows. The stunning fields play host to everything from butternut squash and Swiss chard to East Indian cherry and specially-grown garlic chives. I like to work with vegetable shoots – for example, fennel shoots are wonderfully tasty, and I use the seeds for marinades. I’ve been fascinated with cooking and food my whole life from the growth, flowering and development, ideally from seed to the final product. I want my guests to taste that.’ / ‘Voor Coperto Restobar worden de biologische groenten en kruiden verbouwd bij zorgboerderij en landwinkel De Huppe in Zwolle. Ik ben er wekelijks om al het moois wat daar gebeurt te zien, te proeven en te ruiken. Bij De Huppe staat het thuisgevoel centraal, net als bij Pillows. Er zijn prachtige akkers met flespompoen en snijbiet tot Oost-Indische kers en speciaal gekweekte tai-soy. Ik werk graag met de uitlopers van groenten. Die van venkel bijvoorbeeld zijn geweldig smaakvol en de zaden gebruik ik voor marinades. Mijn hele leven ben ik in de ban van koken, eten, producten maar ook de groei, bloei, ontwikkeling. Het liefst van het zaadje tot het eindproduct. Ik wil dat mijn gasten dat proeven.’

Ingredients

100 ml rice vinegar / 1 dl rijstazijn 80 g jelly sugar (with pectin) / 80 gr geleisuiker

1. Rillette

Put the red cabbage in a pan and add all ingredients, except the jam and jelly sugar. Bring to the boil, creating a beautiful purple glow. After 30 minutes, add the jelly sugar and simmer for another 10 minutes. Take the pan off the heat, remove the star anise and cinnamon and let the red cabbage cool. Mix in the rosehip jam and divide into 4 portions. Serve cold. Doe de rodekool in een pan en voeg alle ingrediënten toe behalve de jam en de gelei suiker. Breng aan de kook. Voeg na 30 min de geleisuiker toe. Haal na 10 minuten de pan van het vuur, haal de steranijs en kaneel uit de pan en laat de rodekool afkoelen. Meng de rozenbotteljam erdoor en maak 4 porties. Serveer koud.

Rilette of duck leg

2 duck legs / 2 st eendenbout 400 g goose fat / 400 gr ganzenvet 1 L water / 1 L water 100 g brine salt / 100 gr pekelzout 1 sprig rosemary / 1 takje rozemarijn 20 g thyme / 20 gr tijm 5 juniper berries / 5 st jeneverbes 2 garlic cloves, chopped / 2 tenen knoflook

Bring the water to boil, add the salt and herbs. Allow to cool. Place the duck legs in a container and pour the salt bath over them. Cover and leave for a 12 to 16 hours. Dry the duck legs, place them in a small baking dish. Melt the goose fat, pour it over the duck legs and add the garlic cloves. Cover with aluminum foil and cook in the oven at 110 degrees for 2 hours. Save a little of the goose fat. Remove the meat from the duck legs, then mix in 2 or 3 tablespoons of goose fat and allow to cool. Breng water met het zout en kruiden aan de kook. Laat afkoelen. Plaats de eendenbouten in een bak en giet het zoutbad erop. Dek af. Dep de bouten na 12-16 uur droog. Doe ze in een kleine ovenschaal. Smelt het ganzenvet, giet dit op de bouten en voeg grofgesneden knoflook toe. Dek af met aluminiumfolie en stoof het op 110 graden in 2 uur gaar. Bewaar wat ganzenvet. Pluk en ontvel de eend. Meng met 2 á 3 lepels ganzenvet en laat afkoelen.

2. Broken hemp seed / Gebroken hennepzaad 4 tbsp hemp seed / 4 eetlepels hennepzaad

Roast the hemp seeds until golden brown, allow to cool. Use the cooled duck rillette to make 8 to 12 round balls, approximately 15 grams each. Then roll the balls through the hemp seed until fully coated. Rooster het hennepzaad goudbruin en laat deze afkoelen. Maak van de rilette 12 balle tjes van ongeveer 15 gram. Zet ze nog even koud. Rol deze door de hennep.

4. Cream of chestnut / Crème van kastanje 100 g sweet chestnut (peeled) / 100 gr tamme kastanje (gepeld) 4 g smoked sea salt / 4 gr gerookt zeezout 20 g brown sugar / 20 gr bruine suiker

Put the chestnuts in a pan with water and a small pinch of salt. Cook until soft. Drain, keeping the liquid. Put the warm chestnuts in a blender and mix until smooth, adding the smoking salt and brown sugar. If needed, add a little of the liquid to make smoother. Allow to cool and place in a piping bag. Kook de kastanjes met een snuf zout tot ze zacht zijn. Giet af, vang het vocht op. Maal de kastanjes glad met rookzout en suiker. Voeg een beetje kookvocht toe. Doe de afgekoelde massa in een spuitzak.

To garnish, serve with roasted pecans, grape mustard (with a twirl of port sediment) and mushrooms. Immerse the 2 mushrooms in boiling water for 5 seconds before putting them on the plate. ‘The meat arrives in enormous chunks of six ribs, which we cut into 700-gram pieces. I buy my meat at Monarti in Izegem. Owner, Olivier Monteyne is an expert in dry aging – a technique whereby beef is stored for 21 to 120 days in a cool, dry space. Olivier is always traveling – from Italy to Portugal and to Scandinavia via Spain – looking for the best cows, which he then takes to Belgium and slaughters in Izegem. His approach pays off: he supplies really beautiful meat. I have been working with him for half a year and I really think he’s the top prize; I don’t know a better butcher. Plus, he’s a really nice guy, in his early forties so still young, with a fresh perspective on the butcher’s trade.’ / ‘Het vlees komt binnen in hele stukken zesrib, gigantisch groot, die we uitsnijden tot delen van 700 gram. Ik betrek mijn vlees bij Monarti in Izegem. Eigenaar Olivier Monteyne is een expert in dry-aging – een techniek waarbij rundvlees 21 tot honderdtwintig dagen in een droge, koele ruimte wordt bewaard. 750 g Black Angus dry-aged beef / 750 gr Black Angus dry aged beef 20 g shallots, chopped / 20 gr sjalot gesnipperd 20 g chives, finely sliced / 20 gr bieslook fijngesneden 20 g parsley, finely chopped / 20 gr peterselie fijngehakt Beurre noisette / Beurre noisette

Grill the meat, turning it occasionally, prefer ably using a Green egg, at 350 degrees. Continue cooking in the oven at 200 degrees for 4 minutes. Finely dice the shallots, chop the parsley and cut the chives into rings. Leave the meat to rest for a while and then slice thinly. Brush with beurre noisette, sea son with Maldon salt and white pepper then finish with fresh herbs. Gril het vlees op de Green egg op 350 graden. Gaar het in de oven op 200 graden (4 minuten). Snijd de sjalot in fijne brunoise, hak de peterselie en snijd de bieslook. Snijd het vlees in dunne plakken. Bestrijk met beurre noisette, strooi er Maldon-zout en witte pe per over en garneer met verse kruiden.

Brown the chicken carcasses in the oven at 250 degrees. Melt the butter in a pan. Add the shallots, leek, carrot, celery, thyme and garlic. Deglaze with the red wine and the diced tomatoes. Replace the chicken carcasses in the pan with the vegetables and cover with a little water. Cook for 4 hours. Sift out the bones and vegetables and cook a little longer. Laat de kipkarkassen bruin worden in de oven op 250 graden. Smelt boter. Voeg de gesneden sjalot met de prei, de peen, bleekselderij, tijm en knoflook samen. Blus af met rode wijn en blokjes tomaat. Roast the garlic in aluminum foil at 200 degrees for 30 minutes. Melt the butter and add the sage so that the flavor infuses. Remove the sage leaves and add the melted butter to the chicken stock. Peel the roasted garlic and add to the gravy. Blend with a hand blender until smooth. Pof de bollen knoflook in aluminiumfolie 30 minuten in de oven op 200 graden. Smelt de boter en voeg de salie toe zodat de smaak in de boter trekt. Verwijder de salieblaadjes en voeg de gesmolten boter toe aan de kipjus. Pel de knoflook en voeg de gepofte tenen ook toe aan de jus. Maal fijn met een staafmixer.

4. Crôute 100 g breadcrumbs / 100 gr paneermeel 100 g parsley / 100 gr peterselie 5 g gruyère / 5 gr gruyère 1 garlic clove / 1 teen knoflook 200 g butter / 200 gr boter

Blend the parsley with the breadcrumbs and garlic in a food processor. Add the gruyère and butter. Then roll out between two sheets of baking paper, allow to cool in the freezer. Pluk de peterselie en meng deze in de foodprocessor met het paneermeel en de knoflook. Voeg de gruyère en de boter toe zodat er een samenhangend mengsel ontstaat. Rol het uit als een deeglap met bakpapier aan beide zijden en laat afkoelen in de vriezer.

5. Marrow / Merg 2 marrow bones, 3 cm / 2 mergpijpjes van 3 cm

Place the marrow in the Green Egg for 5 minutes (with the lid closed) at 350 degrees. Once the marrow is smoked and tender, stretch out a slice of parsley crôute and place it on top. Turn up the temperature and allow the crôute to melt. Season with salt and finely chopped parsley. Serve the meat and marrow with hot gravy on the side. Leg het merg 5 minuten in de Green Egg op 350 graden met gesloten deksel. Leg op de zachte merg een uitgestoken plakje crôute. Draai de temperatuur kort flink omhoog, zodat de crôute smelt. Strooi er zout over en fijngehakte peterselie. Serveer het vlees en de merg met de hete jus ernaast.

1. Savarin

Savarin of blueberries ‘I love the contrast of sweet and sour, and the dry base goes well with that. The purple color is amazing – completely on trend for fall and winter. I get the tarragon I use in the savarin from Microflavours, here in Brussels. Run by three very likeable guys who grow herbs and young shoots of well-known vegetables, all as sustainably and organically as possible. They have a warehouse in the middle of the city, which means they can deliver very soon after the products are harvested; it’s almost impossible to get fresher ingredients. They sell really wonderful, very high-quality products, and supply only the best restaurants in Brussels.’ / ‘Ik houd van het contrast in de combinatie zoet en zuur, de droge bodem past daar goed bij. De paarse kleur is geweldig; helemaal in stijl van het najaar en de winter. De dragon die ik gebruik in de savarin haal ik bij Microflavours – hier in Brussel. Drie sympathieke jongens die kruiden en jonge scheuten van bekende groenten telen, alles zo duurzaam en biologisch mogelijk. Ze hebben een loods middenin de stad, waardoor ze kort na de oogst al kunnen leveren. Verser kan bijna niet. Ze verkopen echt heel mooie producten van zeer goede kwaliteit, onder hun klandizie bevinden zich eigenlijk alleen de beste restaurants van Brussel.’

75 g flour / 75 gr bloem 2 g baking powder / 2 gr bakpoeder 40 g sugar / 40 gr suiker 20 g milk / 20 gr melk 2 eggs / 2 eieren 20 g blueberry puree / 20 gr blauwe bessenpuree 20 g butter, melted / 20 gr gesmolten boter 20 g tarragon oil / 20 gr dragon olie 10 blueberries / 10 blauwe bessen

Mix the dry ingredients in a cake mixer, add the eggs and lastly the butter, puree and oil. Mix until even and then pour into a mold. Put the blueberries into the mixture and bake at 180 degrees for 15 minutes. Meng alle droge grondstoffen met de mixer, voeg de eieren toe en als laatste de boter, puree en olie. Giet de gelijkmatige massa in een vorm. Duw de blauwe besjes in het beslag en bak het mengsel 15 min op 180°C.

2. Glaçage 50 g water / 50 gr water 50 g sugar / 50 gr suiker 100 g glucose syrup / 100 gr glucosestroop 100 g white chocolate / 100 gr witte chocolade 50 g gelatin / 50 gr gelatinemassa 70 g condensed milk / 70 gr gecondenseerde melk

Heat the ingredients to 107 degrees. Mix the chocolate, gelatin and milk. Pour the syrup on the mixture and stir until smooth. Add food dye. Pour the glaçage over the savarin at a temperature of 30 degrees. Warm de ingrediënten op tot 107 graden. Meng chocolade, gelatine en melk. Giet de siroop op het mengsel en roer tot een gladde massa. Voeg naar wens kleurstof toe. Giet de glaçage op 30 graden over de savarin.

3. Crèmeux 100 g blueberry puree / 100 gr blauwe bessenpuree 70 g sugar / 70 gr suiker 2 eggs / 2 eieren 1 gelatin leaf / 1 blad gelatine 100 g butter / 100 gr boter 1 lemon / 1 citroen

Whisk the sugar and eggs until fluffy. Heat the blueberry puree, add the soaked gelatin and pour it on the sugar and egg mixture. Allow B Y

the mixture to cool to body temperature and mix in the butter. Meng suiker en eieren tot luchtige massa. Warm de bessenpuree op, voeg de geweekte gelatine toe en giet op het schuim. Laat het mengsel afkoelen tot circa 37 graden en meng door de boter.

4. Caramel tuille 50 g butter / 50 gr boter 50 g sugar / 50 gr suiker 50 g flour / 50 gr bloem

Mix everything and smooth out to a thickness of 0.5 cm. Bake at 180 degrees for 10 minutes. Allow to cool and cut into the desired shape. Alles mengen, glad uitstrijken op ongeveer 0,5 cm dikte. Bak in tien minuten af op 180°C. Laat afkoelen en snijd in de gewenste vorm.

5. Caramelized chocolate

Melt white chocolate in a microwave, spread out on baking paper and bake in the oven at 170 degrees for 5 minutes. Cut shape. Witte chocolade smelten in magnetron, op bakpapier uitsmeren en 5 min afbakken in oven op 170°C. Steek de gewenste vorm uit.

6. Yogurt ice cream 400 g milk / 400 gr melk 100 g cream / 100 gr room 120 g sugar / 120 gr suiker 40 g glucose / 40 gr glucose 4 egg yolks / 4 dooiers 250 g yogurt / 250 gr yoghurt 1 sprig tarragon / 1 bot dragon

Heat the milk and cream with half the sugar and glucose and infuse with tarragon. Whisk the remaining sugar and glucose with the egg yolks until light and fluffy. Pour the warm milk mixture over the egg mixture and heat to 85 degrees. Allow to cool quickly, to body temperature, then mix with yogurt and make it into ice cream. Warm melk en room op met de helft van de suiker en glucose en meng met dragon. Klop de andere helft op tot een luchtige massa. Giet de warme melk erover en warm op tot 850C. Laat afkoelen tot circa 37 graden, vermeng het met yoghurt en bereid het tot ijs.

7. To serve

Place the caramel tuille on top of the savarin. Add crémeux, blueberries and caramelized chocolate. Finish with tarragon and ice cream. Leg de tuile op de savarin, versier met cré meux, bosbessen, chocolade, dragon en ijs.

Every spring, the elms spread their seeds across Amsterdam, like spring snow. This magical natural phenomenon is what inspired the creation of the perfume Eau d’Amsterdam, Scent of the Elm Trees. It is the first ever green perfume to generate from Amsterdam’s historic center, creatingWorld Heritage in a bottle. Eau d’Amsterdam was launched at the end of 2014 at the Parfum Lab in Meesterlijk, a design and applied art event in Amsterdam. The scent was the brainchild of art duo Saskia Hoogendoorn and Lieuwe Martijn Wijnands of Tijdmakers.
