Hello, and welcome to our first issue of 2023! It’s great to be back – we hope you all had a wonderful Christmas break and are slowly easing into the new year. Can you believe it’s already February? Here at Style HQ, we’ve hit the ground running with photoshoots galore, creative campaigns, and, of course, this fabulous new issue, where we’ve delved into all things love – from weddings to a love letter to our city, there’s plenty to sink your teeth into.

Meet one-half of the dynamic duo behind The Valley’s trendiest eateries, Rosmarino and Etna.

Lauren Smith never saw herself working a standard 9-to-5, instead she envisioned becoming her own boss one day. Fast-forward a couple of years, and Lauren is now running two successful Italian restaurants with her partner Andrea Gatti.

The pair opened Italian bar and restaurant Rosmarino (the caprese is just *chefs kiss*) in July 2021. A year later, high-end pizzeria Etna was born. “Opening a second restaurant one year after the first one was a career highlight for us,” she says.

Lauren started out in hospitality at a young age. “I got my first job in KFC when I was 14, and then in a restaurant when I was 17,”

she recalls. “It was then that I realised I really enjoyed hospitality.”

However, it wasn’t until she started working as a bartender at Hellenika on the Gold Coast (before it moved to trendy James Street) that she realised she wanted to open up her own restaurant. Lauren worked her way up the hospo ladder, moving to Brissy to work in a managerial role at the popular Greek restaurant and bar before she made the brave decision to go out on her own. Her now-partner Andrea was the head sommelier at Hellenika at the time.

“A huge part of my hospitality career was at Hellenika,” she says. “I learnt a lot from Simon [Gloftis] and Theo [Kampolis], who have created

a truly inspirational business.”

Now as director of The Valley’s coolest dining spots, Lauren starts her work day with a bit of light reading, and exercise before getting stuck into her day-to-day tasks, which consists of everything from checking emails, paying invoices, and editing menus. “I then head in at around 3pm for meetings and stay for service if I’m required.”

As for what’s in store for the year ahead, Lauren is looking forward to enjoying some down time. “We’re going to Italy in February and September,” she says. “It’s Andrea’s first time back in four years, so it’s massive for him. No new businesses this year… a year of pure enjoyment for what we have!”

Translated from the Indonesian word for ‘pyjama’, this coveted loungewear brand is the labour of love brought to you by Brisbane-based mother-daughter trio – Pea, Greer and Maddie. Let us introduce you to Piyama as we chat to one-third of this Brissy business success story.

Hi Greer, thanks for chatting with us! Tell us about your brand…

Hi! Our label is called Piyama and we are the mother (Pea) and daughter (Greer) co-founders with my sister Maddie joining us halfway into our 10-year business journey.

Are you Brissy locals?

Yes, mum grew up in Ascot and my sister and I grew up on the Shorncliffe waterfront. We will always remain Brissy northsiders.

What made you want to start Piyama?

Mum was the one who noticed a gap in the market in 2012 for sleepwear that was fashionable and feminine, but also of great value. After a couple of family holidays to Bali, where some of our friends ran their clothing labels, we decided we would give our concept a go.

What does a typical day look like for you?

We have a small team who work from our Brisbane office and the manufacturing and export operations happen out of our Bali office. Here in Brisbane, no one day is the same, we could be reviewing fabric or pattern samples, planning photoshoots, working with our web developer, or catching up with our warehouse partners – the list goes on.

Loungewear has skyrocketed in popularity over recent years. Why do you think this is?

During the pandemic, working from home became the new norm and there was also an increased focus on health, wellbeing, and self-care which has contributed to the growth of this space. Investing in high-quality lounge and sleepwear became justifiable, as people were spending so much time in their homes. We’ve always emphasised using more natural fibres including rayon, cotton and lyocell, for their lower environmental impact and breathability. I think the general trend towards responsible manufacturing and materials has worked in our favour too.

How is it working together as a family?

The three of us have generationally different styles, which we all know and respect. Mum is considerate of the more mature market, I have recently been more focused on maternity-friendly shapes, and Maddie has been across a younger demographic. This mixed input has worked well in terms of offering a wider range of shapes and styles. We love working together – seeing our little brand grow each year has been so rewarding as a family unit.

Shiraz + Wagyu

Morgan: I’m excited about the new ‘Syrah’ style Shiraz. Syrah is more perfumed, elegant, meaty, and structured typically than what we see in our classic Shiraz styles.

Chardonnay + Truffle

Wineology, the newest arrival to Brissy’s thriving bar scene, is already beginning to revolutionise our city’s dining and wine-drinking scene. The venue is fitted out with state-of-the-art wine dispensers all the way from one of Italy’s most famous wine regions, Chianti. With an aim to help people fall in love with wine, customers can choose from 96 types, whilst indulging in a tapas-style menu designed to complement the wines of choice.

Curious about the dynamics of food and wine pairings, we sat down with Wineology’s sommelier, Morgan Golledge, and head chef, Carlen Uphill, to discuss their favourite drops and the dreamiest of pairings.

Carlen: The 2015 Rockford Basketpress is my current favourite, paired with our wagyu, soubise, and bone marrow jus. Make sure to add a charred broccolini with stracciatella and almonds to cut through and round everything out.

Rosé + Fig, Goat’s Curd, and Pomegranate

Morgan: Gaia Wines’ 4-6H Agiorgitiko Rosé is an incredibly vibrant, red-fruited, satiating Rosé that you will most definitely require more than one glass of.

Carlen: I’m loving Gaia Agiogitiko 4-6H Rosé paired with our fig, goat’s curd, and pomegranate tapas plate. The sweetness of the figs and the richness of the goat’s curd is expertly offset by the acid and fruit of the wine.

Carlen: Our Truffle Knodel – the wild fungi, black truffle, and burnt butter sugo need a wine that matches both the richness of the dish but also holds the acidity to cut through the fat and oil. The 2021 Vasse Felix Heytesbury Chardonnay works beautifully.

Pinot Noir + Duck Breast

Morgan: Pinot Noir, as Chardonnay, has so many different expressions across the world. Pinot should always show fruit, predominantly, followed by a midpalate earthiness and silky tannins.

Carlen: My current obsession is the Au Bon Climat `Lala Panzi` from the Russian River Valley vineyard. I would stay classic and pair with a charred duck breast to bring out the smokey and herbaceous notes in the Pinot.

Kaitlin Reid Soundtrack to love

A special kind of love exists for your children. So, it’s no wonder that Kaitlin Reid, co-founder and midwife at Kindred Midwifery, Obstetrics & Gynaecology loves love.

“It’s a mixed bag of pregnancy, birth, and postpartum – unpredictable days, early starts and late finishes, being on-call 24/7, celebration and at times heartache, but overall, it’s the most rewarding thing I could ever imagine doing,” Kaitlin says. The thing that makes it all worth it is love.

“There is love in every single story. It’s hearing a baby’s heartbeat for the first time after a long fertility journey, it’s people learning to feed their babies and settling them into life with a newborn. The ones that

are really special for me are being there to see families grow, welcoming a sibling into the world when I’ve been there with them for their previous birth/s too.”

Of course, in all jobs there are challenges, and for Kaitlin, those don’t go unnoticed. Supporting families through complicated pregnancies and births can be difficult, as well as dealing with pregnancy and infant loss.

“But that’s part of the job, and my role to support families experiencing these difficult times is as rewarding as those who are filled with happiness and celebration,” she says. “The love is the same; the love they need, the love they have for their babies, it’s as real and as raw as in any other family.”

Hi Frances, lovely to meet you! Firstly, can you tell us what your relationship with skincare and sunscreen was like before founding Airyday? Thank you so much for having me! Having been in the professional hair and skin industry for nearly 20 years, I’ve been lucky to experience some of the most incredible and innovative skin products, so, I’m quite the skincare groupie. However, my relationship with sunscreen was very different as it wasn’t even in my peripheral vision and my use of it was entirely non-existent.

Tell us about your journey with sun protection and how it inspired Airyday:

The idea for Airyday was born from a serious reality check. At 36, I was diagnosed with skin cancer. Fortunately, it turned out to be a Basal Cell Carcinoma (BCC). Detected early, it can be treated and cured. Whilst I acknowledged that you need to wear sunscreen every day, I actually never did. My excuse: I couldn’t find one that my skin loved. My skin is very sensitive and reactive, and most SPFs only irritated it. I also couldn’t stand the strong ‘screeny’ smells and thick, heavy textures. I knew this needed to change so I went on a hunt to find a sunscreen that I loved to apply daily, just as much as my skincare. It turned from a need, into a full-blown obsession.

The Airyday day range is classified as TGAapproved, can you let us know what this means and why it’s important?

In short, the Therapeutic Goods Administration (TGA) has the most stringent and well-rounded set of sunscreen requirements in the world. TGA-listed sunscreens have all met a rigorous checklist, inclusive of specific tests required to prove the Sun Protection Factor (SPF) and UVA/ UVB broad-spectrum claims. These regulations also include rules which must be followed through the supply chain and manufacturing process. This ensures the quality of the final product on the shelf.

We’re hearing the term ‘skinscreens’ a lot more these days, can you explain how these differ from regular sunscreens? They’re essentially a new generation of sunscreen where sun protection and skincare benefits collide. They are pushing the formulation boundaries and breaking away from the traditional sticky or thick sunscreens with textures that feel and act like skincare.

How does the Airyday range vary from other sunscreens?

Our goal was to create a SPF Wardrobe – a collection of sunscreens that people could choose and swap to, based on their skin and lifestyle needs. We stand out with our unique formulas and textures by creating ‘dreamscreens’ that feel and act like skincare. Our dreamscreens are lightweight, luxurious, smell great and are infused with skin-loving actives like hyaluronic acid, vegan collagen, and niacinamide (to name a few). Each SPF can be used as the final step in your skincare routine or as a primer as the first step in your make-up routine, with a different finish (from satin, to dewy or luminous). We spoke to Brisbane-based Clinical Sexologist Naomi Hutchings to find out more.

Hi Naomi! Thanks for chatting with us. Do you think intimacy and wellness are connected? For sure. For some people intimacy always includes sex, but then [I speak to] other people who go, ‘no, for me being intimate is a really amazing conversation with my partner’.

How do you think sexual wellness relates to self-love or self-care?

For some people solo sex is part of their self-care routine – it can [help to] relieve anxiety, it can relax [you], there’s just a lot of health benefits.

How do you see the sexual wellness industry progressing?

I certainly think we’re getting better at just making it part of our everyday [lives]. I think it’s going to continue to be more normalised. The more we [talk about] this, the less shame, right?

We’re seeing a big shift in the marketing of personalised products, how do you think this affects our awareness of sexual health?

I just think they’re making them [different], different colours, different materials – it just helps to take away the taboo and hopefully help people not have shame around it.

Once February rolls around, the temperature in Brissy can get pretty steamy, and for those who suffer from varicose veins it can often be unbearable.

The heat can cause veins to dilate, which in turn can lead to increased discomfort and swelling. I find many of my patients complain that their skin becomes more sensitive with increasing itchiness and dry patches irritated by sunscreen and sand. Fortunately, some of the best activities for leg health are easy to do in our city. Going for a walk along the Brisbane River in the morning or as the heat of the day subsides is a great way to relieve venous congestion. You should aim to walk for 30 minutes every day preferably in comfortable flat shoes.

Swimming or aqua aerobics are also fantastic ways to help reduce symptoms and can even temporarily reduce the appearance of veins. Don’t own a pool? Get some friends together and visit one of the many public pools in Brissy.

The ‘anti-gravity’ movements in the water help take the pressure off and increase circulation which has been reported to help reduce restless legs at night.

Describe your wedding in one sentence...

An incredibly intimate ceremony followed by the chicest dinner party out. Boutique. Emotional. Fun. Us.

Where and when did you both meet?

We met on our first date at putt-putt golf (after a sneaky swipe right on Tinder).

How did he propose?

Jack surprised me on my lunch break, saying we were going away for the weekend. He drove us out to Sirromet Winery (memorised the directions to not ruin the surprise). We checked into our glamping cabin and set up a cheese platter. Jack supposedly had one more surprise for me… On the bed, a box of my favourite cookies, I opened the box to find a card, saying “Will you marry me?” And turned around to Jack on one knee. I’ve never cried so much! We spent the rest of the weekend soaking up that ‘just engaged’ feeling. Celebrating with plenty of delicious wine.

Where did the ceremony and reception take place?

Our ceremony was on the private rooftop of The Calile Suite at The Calile Hotel, followed by post-ceremony drinks on the main rooftop. Our reception was at Mosconi – a beautiful Italian restaurant off James Street.

Describe Mosconi and why you chose it….

Jack and I absolutely LOVE food. We love dining out – it’s one of our couple hobbies! So having delicious food at our reception was super important to us. We restaurant scouted one day after lunch in The Valley and stumbled across Mosconi. Initially, we were drawn to it because of how moody the restaurant was; shades of sage, old artwork, navy encaustic tiles, the wooden bar, and the chandelier in the dining room. We booked dinner one night to go check it out and I fell in love. There was no way we weren’t having our reception there.

What made you want to elope?

We never wanted a big traditional wedding. It’s just something neither of us could imagine. We wanted it to be true to us so being able to have our closest family and friends in one little restaurant, eating good food, drinking good wine, laughing, and dancing was our ultimate dream.

Where did you honeymoon?

We went to Tulum, Mexico, and then to New York City.

Advice for brides-to-be?

Enjoy the lead-up! When looking at a hotel for your venue, book a staycation, pop champagne at every finalised decision, and have scorecards while cake testing. Make every milestone memorable because it’s not just about the wedding day itself – it’s also how you get there, so have fun!

most of the time without a second thought. I do or I don’t, in a growing progressive world it’s not surprising that people are beginning to push back on tradition. We took things to our HQ, asking our very own, WOULD YOU, or have you taken your fiancé’s last name? And more importantly, WHY?

As a single male with no marriage plans on the immediate horizon, I strangely have often thought about whether I’d want my partner to take my last name. Would I double barrel our surnames or even create a whole new combined name? Nowadays the options are endless. Whichever way I think about it, I always come to the same conclusion – a name is something so personal and carries with it a family history, and to change it is a big decision. Every couple is different and what may work for some, may not for others. I believe as long as both partners come together and agree on what works for them, that is the way to go. Shakespeare did say after all, a rose by any other name is still as sweet!

My family name also comes with a lot of history from WWII. My great grandmother made up the name ‘Taemets’ when her family fled Estonia to hide their true identity from the Russians. It means ‘forest brother’ as they spent several months living in the forest with other civilians, who formed a community. My heritage and family story are significant and I’m very sentimental about it. I could never lose that part of me.

Brisbane’s first swim-up pool bar is open for business.

News splash, there’s a new kid on the block, and by ‘new’ we mean ‘one and only’. Yep, the city’s only swim-up pool bar is officially open to all! Where? Brisbane or the Amalfi Coast? At The Westin Brisbane, you won’t know the difference…

The award-winning hotel located in the heart of Brisbane has taken the plunge this summer, debuting the Nautilus Beach Club – an Amalfi Coast-themed club open from Friday to Sunday until March. It’s the perfect location to dive into an afternoon filled with sparkling spritzers and poolside laxin’. After all, it doesn’t get much better than seafood towers, DJ tunes, and coastal cocktails aplenty.

Their aptly named beach club means Brisbanites can finally escape the scorching hot days and opt for bevvies in their bathers instead!

Brad Mercer, general manager of The Westin Brisbane says, “It’s a sophisticated and stylish venue suitable for all the weather that summer may bring. The pool opens out onto a cityscape and is everything a Brisbane summer represents, heated to a comfortable 28 degrees and ready to welcome guests.”

When you aren’t afloat, be sure to enjoy their array of delectable eats – featuring Moreton Bay bug rolls, Hiramasa king fish ceviche, and their infamous Nautilus seafood platter (which happens to be included when you book a private cabana for two).

Nicolo’s tips for perfect carbonara (hold the cream!)

1 . Use the best ingredients: guanciale (cured pork cheek), Pecorino Romano (tip: use Pecorino Romano and Parmigiano Reggiano to make it less salty), egg yolks, and a good amount of black pepper (tip: use a mixture of kampot, tellicherry and sarawak peppercorns).

2 . Use good quality pasta – tonnarelli, rigatoni, tortiglioni are good, but please do not use fettuccine!

3 Don’t drain all the water – the secret for a perfect carbonara is to use some cooking water as it’s full of starch.

Penne for your thoughts

Ripiena is everything you’d expect from an authentic pasta laboratory, it’s fresh, traditional, and oh-so-delicious!

Where does one find the tastiest pasta dish in Brisbane? Ripiena, of course! This hole-in-the-wall pasta laboratory serves up some of Italy’s most popular pasta dishes, and pasta varieties. And with Italian chef Nicolo Campagnari at the helm, you know you can only expect the best.

“Call us old school, but at Ripiena we are inflexible in our Italianity,” Nicolo, who was born and raised in Verona, says. (Yes, you’ve guessed it, you won’t be finding any chicken in their pasta dishes!)

All their pasta and fillings are made fresh in-house several times a day with a focus on take-home options (there are a handful of tables for customers to dine-in as well!).

For example, the pork in their popular tortellini di Bologna is marinated for 24 hours before being combined with prosciutto di Parma, Parmigiano Reggiano, and mortadella di Bologna and left to rest a further 24 hours.

Nicolo opened Ripiena (Italian for filled) with his wife in 2018. While the pair had only been living in Brisbane for six months, the idea of one day opening up a pasta laboratory had always been a dream of his.

Nicolo has been surrounded by food his whole life, working his first job in his family’s osteria at the age of 14. “My family used to own a small restaurant in the countryside of Verona,” he says. “The chef was this very talented young lady from the north of Italy.”

“I remember spending my afternoons in the kitchen just watching her prepare pasta every day,” Nicolo recalls, adding he would then go home and try to imitate her dishes.
