Not only is it my first as Deputy Editor since Style Media took the helm, but it’s a chance for me to rave about our fabulous region and all the incredible things it is so loved for. As a local myself, I’m thrilled that this month’s cover with Secrets Shhh highlights a true local success story that started 22 years ago. hile her birth certificate lists Denmark, when it comes to old fashioned heart and soul, Nilla Tomkin may as well be Noosa born and raised. Arriving in Australia over twenty years ago, she worked her way through the food scene, trekking through kitchens on the east coast, cooking up a storm in the likes of Eumundi, before taking things out on her own. Originally a catering and wholesale business, Nilla started VanillaFood in 2012. Now known for their delicious, organic, and locally-sourced menu, it’s no surprise that the business expanded to VanillaFood Organic Cafe in 2014, opening at the Belmondos market. Now operating in two Noosa
locations, including a flagship store in Noosa Junction, Nilla’s passion for organic and sustainable eating reigns strong – and the locals love it. “I grew up helping my mother in the kitchen. I was the only girl out of my siblings, so I learnt a lot from my mum around the house. She taught me that fresh and local is best,” Nilla says. Bringing together the philosophy of good food, organic produce, and wellbeing in one place, it’s surprising Nilla isn’t vegan herself. “I actually eat anything and everything in moderation, trying to be as healthy as I can. I’m a strong believer in eating local, organic, and sustainable,” Nilla says. You’ll often find the dishes at her cafes are changing, driven by @STYLEMAGAZINES
local produce, stock availability, and Nilla’s anticipation to always try out something new. While we all struggle to balance both work and life, on her days off, you may find Nilla walking at Noosa National Park, indulging in breakfast at one of her VanillaFood locations, or perusing the local farmer’s market. “We are so lucky here on the Sunshine Coast. Where else in the world can you be at work in 10 minutes, driving along a stunning coastline, whilst watching the sunrise?” she says. Looking ahead, it doesn’t look like this foodie is slowing down anytime soon. After just releasing her very first cookbook – VanillaFood The Cookbook, we can’t wait to see what’s next.

SNAIL OF APPROVAL The early bird might get the worm, but in this case, it’s the snail Noosa restaurants are seeking. By ANNA WALL

A
s the world slowly eschews fast food and fast goods in favour of sustainability and locally sourced produce, the Slow Food movement is snowballing around the world. Restaurants and producers in Noosa are leading the Slow Food charge in Australia, and it seems only right to award such eateries something apt, like a snail, in approval of their work. First launched in 2017, Slow Food Noosa’s Snail of Approval Award has garnered huge support and following from the region, as restaurants, cafes, food stores, producers, and farmers are encouraged to do the right things. In order to proudly display their snail, businesses need to
prove they are doing good for the environment, encouraging clean food and fair practices, and highlighting local produce. In early April, a further 15 local businesses were awarded their snail, meaning the region now boasts 21 restaurants, 26 producers, 10 food outlets, and 13 artisans on board. President of Slow Food Noosa, Jason Lewis, says this highlights that people are beginning to care more about what they eat and where it comes from. “Slow food is an international movement supporting the good, clean, and fair philosophy,” Jason says. These values are becoming very important in the community, as is food security. Heroing quality, flavoursome, and
healthy food produced in harm-free environments, the movement offers accessible prices for consumers, and fair conditions and pay for producers. “Our vision for the future is to help protect small scale producers and artisans by connecting them with restaurants, food outlets, and the public,” Jason says. “This will help keep food in our region local and sustainable.” While the Snail of Approval program is an Australian first, the Slow Food movement is part of an international movement of over 160 countries, all dedicated to supporting local food and ethical, sustainable practices. BURGER QUEEN As you walk out of the ocean, waves still rolling off your sun-kissed skin, there’s only one thing you want to get your hands on – a fresh, juicy burger seasoned by the sea. By DINUSHKA GUNASEKARA

s the land of the burger shack, Noosa locals and regulars of the Sunshine Coast will all fondly remember Beatrice “Betty” Wallace, who was renowned for her $1 burgers that fed beach-going crowds by the droves. And although her shack has long since closed, there’s another Betty in town and she’s already taking the nation by storm. Betty’s Burgers & Concrete Co. is the slick chain of burger joints with a cult following, sending Aussies all around the country in a frenzy to get two hands around their minimalist menu of fresh 22

bites. What began as a 50s-esque diner in Noosa now has a home in almost every state and capital, recognisable by their minty fresh design and laidback energy that brings the beachside atmosphere wherever it goes. Here, we spoke with National Marketing Manager, Lyndal Guterres. What inspired Betty’s Burgers? The concept of Betty’s Burgers evolved mainly from a gap in the Noosa market for quality casual dining. The Betty’s dining experience while casual is quite unique – everyone dining is individually greeted, and no request is too hard for our team to accommodate. Bistro C Dripping with coastal décor, Bistro C’s funky interior is just as sun soaked as the beach you’re overlooking. Settle in and enjoy the salty sea breeze while you devour Bistro C’s divine menu and uninterrupted (bar a few cabanas) ocean views. Choosing a highlight of this menu is tough. Offering locally caught fish, delectable squid ink pasta, fresh oysters, and their famously mouth-watering calamari – the seafood-heavy menu is inspired by the region’s local produce and showcases the changing seasons with delectably curated dishes. Maisie’s Seafood & Steakhouses Arguably Noosa’s oldest seafood haunt, Maisie’s has been around since 1920. Serving up local produce through the depression and WWII, it became a favourite dining place for the troops. Located overlooking the river in Noosaville, Maisie’s is still one of our favourites and a well-known local legend. Sit back and enjoy the casual ambience, river views, and big authentic portions that’ll leave you planning your next visit. Must-try dish: the legendary seafood chowder served inside a crusty bread bowl.
La Vida With an ethos of European dining in the heart of Noosa, La Vida combines luxury with casual European vibes that satiate our forlorn wanderlust. Smoked Trout Tostadas
TASTE OF SRI LANKA Known for his rich cultural cooking, Peter Kuravita of Alba By Kuravita is a locally celebrated culinary genius. This month he shares his smoked trout tostadas which are quick, easy, and the perfect party food. Method: To make the pepian, place the tomato, tomatillo, and onion in a small pot and cover with water. Bring to the boil then reduce to a simmer. At around five minutes, or as each item softens, remove and place in the blender jug. The tomatillo will usually take two minutes more than the tomato, the onion slightly longer again. Warm a 25cm frypan to medium heat and toast the pumpkin seeds, tossing or stirring frequently until golden and puffed up.
Remove and add to the blender jug. In the same pan add the sesame seeds and toast lightly. When nearly golden, add the allspice and pequin chilli. Add to the blender jug, then add salt and puree for two minutes until very smooth. Check seasoning and reserve. Line up the tostadas on a tray and top each piece with a smear of pepian paste. Place a small portion of smoked trout, then garnish with the julienned vegetables and serve immediately. @STYLEMAGAZINES

Tell us the backstory to ALÉMAIS’ PF22 campaign, where did the inspiration come from? The PreFall collection, Hera, draws inspiration from the mythical past and motifs seen in the ancient world. I was inspired by the notion of giving these a futuristic twist in pop pastel colours and prints to bring a dreamlike quality.

ALÉMAIS is renowned for its artisanal approach to design – tell us how this collection showcases that craftmanship: Collaboration is at the heart of ALÉMAIS, particularly working with artisans on traditional techniques that have been handed down through generations. The Hera collection features handmade crochet, hand-embroidered floral motifs, and delicate pintuck panelling.

Prints are such a cornerstone of your design aesthetic. Tell us about the unique prints of this collection and how they were created: I love the process of creating prints with interesting and inspiring creatives. In this process we always leave room for exploration, for something uncertain and accidental to come together in an unexpected way. I think it is this creative
collaboration and exploration that brings magic and a richness to ALÉMAIS prints. For Hera, we’ve worked with Newcastlebased fine artist Annie Everingham on prints that have artful leaf-like floral compositions and abstract brushstrokes. Ancient motifs appear to be a muse for this collection. What drew you to these themes? I’m always inspired by travel references and a starting point for Hera were the motifs found in mythical cities. I also connected with some of the themes found in ancient myths, I just became a mother and found resonance in the Roman god Janus, presiding over new beginnings, transitions, and doorways, interpreting these abstract themes in a pastel and dreamlike printscape.

This collection sees an expansion into swimwear – will this be a regular occurrence for the brand? What can we expect next? We had such a positive response to our recent Resort 2022 collection that swimwear felt like a natural progression for the ALÉMAIS story. We wanted to offer our community the option to feel inspired by a resort look that encourages a holiday or seaside escape. We’ve got another new category coming in our fall collection, so watch this space!

By ASTRID TAEMETS Describe your interior style: My interior style is inspired by past experiences, travels, and memories – a mixture of new and old. I’m a huge art lover and collector, and I am constantly drawing inspiration from paintings, sculptures, and photography. Tell us about your office space: A beautiful light-filled, calm environment that sparks creativity, helps me think clearly, and where I feel focused and empowered. The palate is light with soft colours and textures brought to life by edgy fabrics, marble offcuts, and paintings. The space is decorated by pieces collected over the course of my journey. My collection of old design and art books are stacked to the ceiling, while my art collection layers the walls. One of my favourite pieces is our kitchenette tap I found on a buying trip to Morocco. When I use it, it brings back memories from my time there. I also love fresh flowers, and often pick some straight from our showroom garden.
Candle or incense? Incense.
Laptop or desktop computer? The laptop and iPad are easiest while on the run, successful day for myself and my team. I’ll attend to emails then head into meetings with clients, and collaborative workshops with my design team. Lunch is usually from my favourite café, Vanilla Food, then I might pop into the showroom to say hello to the team and chat with customers.
Fresh flowers or plants? Flowers – wildflowers with lots of colour are my favourite.
Tea or coffee (and what’s your order)? Both! A piccolo in the morning, and herbal tea in the afternoon.
Heels or flats? Heels, always!
Morning or afternoon? Morning – a morning swim and meditation while the sun rises, sets me up for the day.
What’s in store for CLO Studios in 2022? We have an exciting year planned with a rebrand and new website on the horizon, and CLO Studios’ interior design studio is soon to be CLO Studios Atelier. We’re currently renovating our design studio and we have a renovation planned for the showroom, which we cannot wait to share with clients and customers. 2022 is proving to be our biggest year yet!
What are some must-have items in your office space? Books, books, and more books! I also couldn’t go a day without my Malfatti Glass mouth-blown carafe – a beautiful brand we now stock at CLO Studios. What does a typical day for you look like? I like to start my day early. What’s your best tip to elevate alfresco dining? I’ve always loved handwriting menus, personalising name cards, and going all out with the table setting. Creating a beautiful centrepiece for the table is a great way to elevate alfresco dining at home. You can get creative with what you already have at home – I am currently obsessed with placing oversized branches in vases as the central focus on the table. With real estate being a hot topic of conversation around barbecue’s this past summer, we thought it timely to ask an expert to uncover what’s next for Noosa property.
eet Alex Harris, Principal and Managing Director of Noosa4Sale. Alex has a stellar reputation for results with integrity and rave reviews from clients. She sells across the Noosa Shire from her office in the Noosa Junction Plaza. Hi Alex! Tell us, how many homes on average do you sell a year? I sell on average 30 properties per year, from affordable through to luxury homes. In the nearly five years Noosa4Sale has been operating I have sold well over $150m worth of property. What has been your highest sale to date? My highest sale so far was for $6m in 2020, with a majority of sales in the mid-range $1.5m-$3m, from holiday units through to luxury homes and everything in between.
Can you give us a run-down on the Noosa property market? To understand that we have to look at recent history, wherein record prices have been achieved across Noosa. For the past two years there have been very few properties available for sale in the area – in some months there were 30% fewer properties for sale than the same period in 2019.
With hard lockdown in southern states, an inability to travel overseas (let alone interstate), and companies allowing staff to work from home, the only escape was to relocate to the regions – most notably the Byron and Noosa shires. This drove prices above all expectations, especially given economists and commentators had predicted a COVID induced price crash of 30-40% by the end of 2020. Instead, we saw Noosa increase by 125-145%, depending on suburb and type of property, over the course of the past five years – with most of that in the last two. How long will this sellers’ market last? All indications are that we peaked in November/December of 2021. I am not predicting a major drop in price, because there remains strong demand and a lack of supply, but it is hard to see further large capital gains going forward and certainly not at the pace experienced recently. Why? Because the lending criteria changes of November 2021 are starting to impact on buying decisions, we have a Federal election scheduled for May this year, interest rate increases flagged to commence midyear, and the usual slow down for end of financial year ahead of us. So, all of this combined suggests price growth will stagnate. @STYLEMAGAZINES
How else has the market changed? In October the average days on market was four, meaning it took around four days to sell a house, longer for apartments and acreage. By January, our average days on market had grown to 22, reflecting the change in buyer time constraints and it now looks like it is closer to 40-50 days. Which means we are settling into a more balanced market, evidenced by more properties coming onto the market for sale in the second quarter. So, should we sell now or wait for the market to rise again? Despite the above, now is a good time to sell. It remains a buoyant market with low inventory. You will still get a great price! It may not be higher than you could have achieved in November, and maybe a little lower than when average days on market was four, but it remains a good time to sell. And for buyers, there will be more properties coming on the market this year than last, there will be less urgency and more time to find what they really want. Instead, enter a new wave: a movement that allows your table to become a placemat to explore both reality, art, and design. Some call it a fruity tale – a story of candles re-invented, but when it comes to Nonnas Grocer, we call it pure imagination. We had five minutes with Madeleine to get the juicy details of it all, and here’s what we learned…
What inspired Nonnas Grocer? My family history. My great grandfather had a chain of fruit shops across Victoria, and I take a lot of inspiration from his stores, as well as contemporary furniture and graphic design.

With a career in real estate spanning decades, and an impressive sales record to boot, Ray White Noosa River’s Deni Castle has one thing to say to buyers – don’t wait to buy real estate, buy real estate and wait.
eni’s reputation precedes her, having been a firm fixture in the broader Noosa community for almost 25 years, so it’s no surprise the agent who ranked in the top 1% of Australia’s real estate franchises has some hot tips for buyers. The decorated real estate agent says that too often dream homes slip away from buyers when they fail to recognise the value of the property and pass on the sale, leaving dream homes on the market. Among a string of properties that didn’t sell, there was one perched on the hill at Sunshine Beach with uninterrupted ocean views that stood out to her as a steal. “This property had the lot; potential, position, and a great price, which represented great
value at the time,” she says. “It certainly wasn’t overpriced, but the buyers had a differing opinion. Too often I heard comments like ‘oh, there is a power pole over there’ or ‘oh, it’s opposite the beach steps, it isn’t private enough’ yet, all I could think was – what about the views, the position, the potential?” In today’s market, Deni says the property would be snapped up in a heartbeat for $4million minimum, with an estimate worth of $7million. And with the three p’s central to the real estate market: position, potential, and price, Deni says position should always come first. Deni says that too many times she has seen people pass on a sale due to price, only for it to sell later @STYLEMAGAZINES
at a much higher value. “I was selling land at the northern end of Sunshine Beach and beachfront land at Castaways Beach priced around $200,000 and $220,000 with buyers’ comments being ‘it’s too steep, too far from the surf club and shops, wrong aspect,” she says. “Imagine the price of this land today. Recent sales of beachfront property in Castaway’s Beach have been $5.5million last year and $4.75million in 2020,” she says. onsumers showing an avid interest in where ingredients come from has increased exponentially in the last few years, so it is a real luxury to have so much local produce grown right here on our doorstep. From garlic to finger limes, regionally grown coffee or fresh milk and cheeses, to seafood and biodynamic beef – dining out in the Noosa region means that you are experiencing some of the finest regional ingredients. Here, we take you through a few of our stand out top picks in the region to add to your food bucket list. With an inherently sweet flavour, a must-try are the spanner crabs harvested from the coastline off Fraser Island, made remarkable by the bright scarlet red they turn when cooked. Family business Fraser Isle Spanner Crabs has been supplying these delicacies to local vendors since 1993. General Manager, Jason Simpson, is passionate about the finest quality crab, but equally about the health of the waterways. “No other organisms are harmed or taken in the process of fishing,” Jason says. At Noosa Waterfront Restaurant and Bar, Chef Andrea Ravezzani serves up the spanner crab with a twist – in their own delicate version of a hash brown, or pop into Rickys River Bar and
Restaurant for the sought after spanner crab spaghettini as an entrée item. If you are keen on a cook-at-home experience and love to use the very best local ingredients, then Organic Certified 2021 winner of Farmer of the Year (Australian Industry Awards), Good Harvest Farm, in Woombye is one to visit. Operating three certified organic farms in the Hinterland, Organic Farmer Mick Dan says “We love being able to grow a seedling through to harvest and within 24 hours of being picked, that veg is ready to be served up to dinner to families across the coast. It’s a pretty special way of farming.” While boxes can be ordered and supplied to locals, Mick can also be found every Sunday at the Noosa Markets, where many local chefs come to buy their produce for the following week. In particular, Chef Stacey Conner from the boutique 14-seater restaurant Humble On Duke, creates meals with locally grown produce from Farmer Mick in her ever-changing seasonal menu that heroes Australian and Middle Easter cuisine. For another dine at home option, try the locally sourced, chef-quality, ready-made frozen meals available from renowned Chef, Josh Smallwood at Noosa Cartel. Here, his dishes include everything local you could imagine – from Kilcoy beef, Mooloolaba prawns, Noosa red tomatoes, Pomona honey, and Elgin @STYLEMAGAZINES
Valley chickens, through to specialty mushrooms from Tagigan Rd Produce in Goomboorian. Another one to keep an eye out for is Noosa’s only locally grown coffee brand, Noosa Black, which heralds from a small family-owned-and-run coffee estate in the Noosa hinterland. As the only commercial coffee grower in Noosa Shire with single-origin roasts and hand-crafted blends, they are also 100% arabica and locally roasted. So, whether it is the local fresh garlic, mushrooms, or seafood, we really have an abundance of choice here in Noosa. Finally, in more great news that shows the farm-to-plate movement continuing to grow in popularity and following, the Noosa Biosphere Reserve Foundation (NBRF) is looking to increase the local agri-business sector. “The importance of our local restaurants showcasing locally grown food is a quintessential part of the authenticity of Noosa, which is why we are working on developing an Agri Hub designed to foster more local farmers,” says Rowan Rafferty, the chair of the NBRF. PHOTOGRAPHIC JUSTICE With influences from the roots of justice, Fiona Foley’s Nguthuru-Nur collection is now showing at Noosa Regional Gallery. Nguthuru-Nur is a new series of photographic works shot on Badtjala Country inspired by the Magna Carta. The series examines a mangrove tree named by cattle farmer, Lindsay Titmarsh, on whose property – Tandora – the tree has been living for over 700 years. The farmer named the tree after Magna Carta – which was underwritten in 1215. It is about the same age as the tree on the farmer’s property. Magna Carta is an infamous charter that has led much of Western
law since its inception. The works emulate the 39th Clause of the Magna Carta Libertatum. The series creates its own rich and swirling narratives around the history of the pirri (mangrove tree in Badtjala language). In Foley’s wry style, the series references invasion, the contradictions inherent in law, and the ownership of land, all the while celebrating the rich cultural heritage of the Badtjala people and the land with which they are, and have been connected to, for millennia.

STRUTTING YOUR STUFF Eumundi was found through the late 1800s out of pioneer necessity, and a push for the northbound Queensland railway.

odern day Eumundi is a quaint country town peppered with Queenslander style establishments forming a picturesque main street and surrounding area.
