Where To Celebrate Easter In South Florida
Swim For Jenny Week
The YMCA of South Florida has been a steadfast champion of water safety.
Every year, as the sun shines down on South Florida, families flock to beaches, pools and water parks to enjoy the warm climate and vibrant aquatic culture. However, this picturesque setting belies a harsh reality: Florida holds the unfortunate distinction of having the highest childhood drowning rate in the country. With drowning standing as the leading cause of death for children ages one to four, the need for accessible swim education is more urgent than ever.
Proclaimed “Broadway’s big, fat hit!” by the New York Post and nominated for 10 Tony Awards, this hilarious smash journeys back to 1595 as brothers Nick and Nigel Bottom compete to write a hit play against the popularity of the insufferable superstar Shakespeare. When a local soothsayer foretells that the future of theater involves singing, dancing and acting at the same time, they set out to write the world’s first musical.
With a book by Karey Kirkpatrick and John O’Farrell and music and lyrics by Karey Kirkpatrick and Wayne Kirkpatrick, “Something Rotten” wears its heart on its ruffled
As Easter approaches, South Florida comes alive with vibrant celebrations, offering everything from sunrise beach services to lavish brunches and familyfriendly egg hunts. Whether you’re looking for a spiritual experience, a festive gathering, or a unique way to enjoy the holiday, the region’s diverse communities have something for everyone. From the sun-kissed shores of Fort Lauderdale to the lively streets of Downtown Miami, this guide will take you through the best places to celebrate Easter in South Florida, ensuring a memorable holiday filled with joy, delicious dishes and plenty of pastel-colored fun.

Grill-Free Greatness
Air Fryer Steak Recipe A Gastro Game Changer
I love a grilled steak, but I don’t love standing out in the cold to grill it. And I don’t love heating up the house with the oven, Especially during the warmer months. The air fryer is always a great option, regardless of weather or season! Why? Because of the consistent heat that is created in that small little chamber, the steak cooks perfectly every time in the air fryer. You’ll get consistent results because you don’t have to worry about the temperature changing up. It’s SO hands off! Once you get it going, you can go do other things! All you need to remember to do is to flip it once during cooking time. Go work on the sides for
amount of oil. You’ll want an oil with a high smoke point (I use avocado). This will help the seasonings you use stick to the meat. And then prepare the garlic butter by mixing together the softened butter, parsley, garlic, Worcestershire Sauce and the salt.
Step 3: Liberally season the steak Pat the Steaks dry with paper towels, then rub a little bit of oil over the Steak and on the bottom of the air fryer basket. Season your steak liberally. In this recipe, I used Kosher salt because I have the
butter and allow to rest for 1/2 the time it took to cook. Alternatively, turn off the Air Fryer, leaving steaks in it, top steaks with butter, close the Air Fryer and let rest for half the amount of time it took to cook.
How long does it take a steak to cook in an Air Fryer?
Cooking time will vary depending on your Air Fryer and the thickness of your steaks. So you need to have an instant read meat thermometer to know when your steak is done cooking! As a general rule of thumb, plan on about 15 minutes
want to remove the steak from the heat just a few degrees less to get a perfectly cooked steak!
There are two ways you can let the steak rest.
1. Remove the steaks and let them rest on a cooling rack (or something that keeps the steak lifted from the surface), and top with your garlic butter.
2. OR you can top them
seasoned butter that I will add at the end. It’s better to be a little heavy handed when it comes to salt and steak.
Important note: Be sure to get the sides too! You can dab them in any oversprinkle from your seasoning.
Step 4: Preheat the Air Fryer
In a lot of my recipes, I don’t worry about preheating. HOWEVER, preheating the Air Fryer for steak is a MUST! Preheat at 400 Degrees Fahrenheit or 200 Degrees Celsius for at least 5 minutes. Pro Tip: I like to place the fatty side down first in the Air Fryer and hold it there for a few seconds before I lay the steak down.
Step 5: Air Fry Steak
Once the Air Fryer is preheated, place steaks in the Air Fryer and then Air Fry for 10-16 minutes, flipping and rotating halfway through. Cooking time will vary depending on your Air Fryer and thickness of steaks. Internal temperature of the steak should be 130˚F or 54˚C – 135˚F or 57˚C for Medium-Rare or 140˚F or 60˚C –145˚F or 63˚C for Medium.
Step 6: Rest air fried steak Remove steak from the Air Fryer and place it on the baking rack. Top with garlic
to cook with 1 1/2-inch thick steaks, but check the temp to get it just right just right.
Air Fryer Steak Internal Temperature Guide
The nice thing about steak is that you can cook it to the internal temperature that you love best. Here are the recommended internal temperatures for steak.
Rare: 125˚F/52˚C
Medium Rare: 135°F/57˚C
Medium: 145°F/63˚C
Medium Well: 150˚/66˚C
Well Done: 160˚F/71˚C
You’ll need to flip and rotate the meat just once during cooking if you are using an Air Fryer. Only do that once, as you want to handle the meat as little as possible. Once the steak reaches desired internal temp, it’s time to let your steak rest. The general rule of thumb is to let the steak rest for half the time it took to cook it. This will allow the internal temp to equalize and lock in the juices. YUM.
It’s also important to remember that the steak will continue to cook after removing it from the heat. For example, if you want to cook it to 130˚F/54˚C, you will
Life-Saving Initiative
The initiative was born from tragedy. In 2011, Jenny, a young girl from South Florida, lost her life to drowning simply because she never had the opportunity to learn how to swim. Devastated by the loss but determined to prevent further tragedies, the YMCA of South Florida launched “Swim for Jenny” in 2013. Since then, the program has reached more than 25,000 people and provided over 100,000 swim lessons, making a tangible impact on water safety in the community.
“Swim for Jenny” is more than just a free swim program; it is a movement towards a safer community. “The need for accessible and affordable swim lessons is greater than ever as drowning remains the leading cause of death for young children,” said YMCA of South Florida President and CEO Sheryl A. Woods. “Swim lessons are critically important for ensuring that our kids are safe, particularly here in South Florida where we are practically surrounded by water. It’s been proven that children who receive formal swim instruction are 88% less likely to drown and this is why ‘Swim for Jenny’ has enabled us to positively affect tens of thousands of people in our communities by facilitating these life-saving lessons.”
A Community Call to Action
Last year, Florida reported 101 fatal child drownings, with Miami-Dade and Broward counties leading the nation in these heartbreaking statistics. For every child who drowns, seven more receive emergency care for nonfatal submersion injuries. The YMCA of South Florida understands that swim education is not a luxury but a necessity, particularly in a region encircled by beaches, lakes and pools.
Through “Swim for Jenny” Week, families have an opportunity to take proactive steps to prevent drownings. The free swim lessons cover essential skills such as floating, treading water, basic strokes and how to safely enter and exit the water. The program welcomes participants of all ages and skill levels, reinforcing the notion that it is never too early—or too late—to learn how to swim.
For parents, this initiative offers peace of mind. “It’s terrifying to think that one misstep near a pool can turn into a tragedy,” says Maria Gomez, a mother of three from Hollywood, Florida, whose children participated in the program last year. “Thanks to ‘Swim for Jenny,’ my kids now have the skills to keep themselves safe in the water. This program is truly lifechanging.”
A Partnership in Prevention
The YMCA of South Florida could not carry out this life-saving mission without the generosity of its community partners.
Nicklaus Children’s Health System has played a crucial role in making the program a reality by funding “Swim for Jenny,” ensuring that no family is turned away due to financial constraints.
“Children’s health and safety are at the core of what we do,” said a spokesperson for Nicklaus Children’s Health System. “Partnering with the YMCA for ‘Swim for
Jenny’ aligns perfectly with our mission to protect and support the well-being of our youngest community members. We’re honored to help provide children and families with the tools they need to stay safe in and around the water.”
How to Participate Registration for free swim lessons through “Swim for Jenny” is now open, and families are encouraged to take advantage of this crucial program. To sign up, visit: https://ymcasouthflorida.org/ swim-for-jenny. Spaces are limited, so early registration is recommended.
Beyond “Swim for Jenny” Week, the YMCA of South Florida offers year-round swim instruction, drowning prevention
courses and lifeguard training to ensure water safety remains a priority throughout the community.
The YMCA’s Commitment to South Florida For over a century, the YMCA has been a cornerstone of community life in South Florida, providing services that strengthen individuals and families alike. As an award-winning nonprofit organization, the Y operates more than 200 programs designed to enhance the well-being of people of all ages. From state-of-the-art fitness centers to holistic wellness initiatives, summer camps, and after-school care, the YMCA is committed to fostering a healthier, safer and more connected community.
The organization’s dedication to water safety is just one facet of its broader mission to serve and uplift the South Florida community. By expanding access to essential programs like “Swim for Jenny,” the YMCA continues to make a profound difference in the lives of thousands. By embracing water safety education and ensuring that every child has the opportunity to learn to swim, South Florida can turn the tide on this crisis. The message is clear: swim lessons save lives. And thanks to “Swim for Jenny,” those lessons are available to everyone. Join the movement by connecting with us on Facebook, Instagram and LinkedIn. Or: https://ymcasouthflorida.org/

DNA Testing Comes Under Fire
In Criminal Defense Attorney’s New Book, The Cockfight
After 37 years as a Federal and State Criminal Defense Attorney, Frank Abrams decided it was time to shed light on what can happen when the criminal justice system fails. In his eye-opening new book, The Cockfight, DNA evidence becomes the nail in the coffin for a teacher falsely accused of sexual assault. But as readers will learn, DNA tests can be contaminated and results can be wrong - sometimes intentionally.
“When someone’s life and someone’s freedom is at stake, there has to be more than just ‘oh, well, we have this test and we’re going to absolutely rely on the results of this test,’ “ Abrams said.
Through a riveting parable, The Cockfight introduces readers to William Bradford, an educator recently named “Teacher of the Year” who was arrested and charged for the attempted rape of a 14-year-old student during a class trip to Washington, D.C. Married with two kids, Bradford would spend time in a hellhole of a jail in South Georgia and eventually take up residence under a bridge - all because of a lie.
Although fiction, many of the facts concerning the law and its application are
or were authentic at the time the story is set and are still factual, Abrams explained.
The Cockfight is the story of the teacher’s fight to clear his name, of the people around him and how the system impacted all of them, as stories of actual cockfighting fill the backdrop with the dismal “kill or be killed” dread that descends on many people caught up in an often unjust “justice” system.
“There are many victims of our unjust and unforgiving ‘justice’ system. Once they are caught in its web, it is difficult if not impossible to extricate oneself,”
Abrams said. “Cockfighting is a system that treats animals in the same brutal way that the justice system treats people. It makes them mean and angry toward each other and generates money at the same time.”

Abrams noted that American prisons are filled with more prisoners per capita than virtually every other country and that the American prison population has grown 500 percent in the last 40 years thanks, in part, to the operative assumption that once charged, always guilty.
“I wrote The Cockfight to emphasize what can happen when things go wrong,”
is my hope that the message in this book leads to both a change in attitude and action, that injustice will no longer be tolerated and that a fair, honest and just system will take its place.”

The Swinging Soul & Sultry Sounds Of Runway 84
Inarguably, Anthony’s Runway 84 is an iconic Florida eatery and one of the Sunshine State’s most successful restaurants, clocking in over 40 years in Fort Lauderdale; whether it’s for the buzzing bar scene (where a perfectly made dirty martini is always a good idea) or its expertly-crafted Italian-American comfort food, Runway 84 never disappoints. Its hallowed place in the restaurant marketplace is a matter of fact. But what many might not realize is that Runway 84 is one of Fort Lauderdale’s preeminent destinations for live music.
How did this come to be? In 2022, the restaurant closed for a multi-million-dollar renovation and refresh, resulting in a January 2023 launch that signaled a new era for the beloved restaurant. In its new incarnation, it embodies a modern-day Italian supper club, serving up just as much Copacabana vibes as it does its signature cauliflower rigatoni. Performing nightly, the house band takes the stage
with a rotating array of singers, dishing out everything from Rat Pack favorites to R&B classics, favorites from the 70’s, 80’s, 90’s, Soul and more. In fact, it’s not out of the ordinary for a swinging version of an Old Blue Eyes American songbook staple to segue into a Reverend Al Green cut or a swooning Barry White ballad.
“When we envisioned the ‘new’ Runway 84 live music had to be a part of it,” notes Anthony Bruno, whose family originally opened Runway 84 and who coowns the restaurant with partners Pat Marzano and Marc Falsetto. “The music we played at Runway was always an important part of the experience and with the reopening we wanted to double down on that and deliver something we thought Fort Lauderdale was lacking and would love – an honest to God supper club.”
And the trio have delivered that in spades and done so in such a manner that longtime fans and newbies have found their own “best way” to appreciate a night at
Runway 84.
For those seeking a decidedly moredemure experience with more table talk than tunes, Runway 84 delights as an earlier-in-the-evening dining destination.

Doggie Decoding: Understanding Canine Body Language
Without the gift of gab, dogs are left to rely on a bark, a tail wag, or, sometimes, even a snarl to communicate with their two-legged companions. However, as we attempt to connect with our canine friends, understanding the unspoken becomes immensely important in recognizing their wants and needs.
“Understanding our dogs’ basic body language allows us to gain insight into their thoughts and feelings about the world around them and what they are experiencing,” said Harmony Diers, a Veterinary Technician and Project Manager for the Dog Aging Project at the Texas A&M College of Veterinary Medicine & Biomedical Sciences.
To help owners “decode” their dog, Diers describes the meaning behind some common body language signals that dogs use to communicate.
Reading The Relaxation
Happy dog, happy life is a wonderful sentiment to live by. But how do owners know when their dogs are happy?
“Happy and relaxed dogs offer us a great deal of body language intel,” Diers said. “The ears of these dogs can range from forward and relaxed to pointed back and relaxed. Dogs that are happy and submissive may even fold their ears back. But the takeaway is ‘relaxed.’”
A key sign is found in circular wags — if your dog is wagging its tail in a circle, it is showing you that it is very happy and joyful, Diers said.
Other body language-based observations of a content and calm dog include:
• Eye squinting
• Leaning on you
• Soft, yet direct gaze
• Laying down
“It is important to recognize a calm and content dog’s body language to determine whether he or she is comfortable with the current environment and circumstances,” Diers said. “When we learn to recognize our dog’s communication, we can set them up for success within their boundaries and also identify situations where they may need more support or training.”
Personal Space Advised
On the other hand, discontented body language refers to behaviors that raise concern — reflecting defensive or submissive signs. This can be influenced by a multitude of variables, such as overstimulation, new environments, or unfamiliar individuals.
Once again, a key source of information lies in a dog’s tail; for example, a frightened dog may tuck his tail, while an alert or nervous dog will carry its tail high and possibly wag it vigorously.
“A dog experiencing an uncomfortable situation may also turn his body away from the threat to present his back,” Diers said.
Similar to shaking off water from the pool, dogs also give a shake to reduce tension or stress from their bodies.
Other signs of a nervous or alerted dog include:
Upright and forward ears shows an attempt to be ready for “fight or flight”
Pinned back ears near the head shows the dog is attempting to make itself look smaller
Alerted eyes
Tense lips often pulled back/lifted over the teeth
Licking lips often accompanied with yawning
Being able to recognize the signs of a discontented dog is vital for your furry friend to feel a sense of security at home as well as encountering unfamiliar dogs outside of the home. Diers notes that while these are common signs, some breeds’ natural characteristics may appear alarmed upon first glance.
For example, German shepherds’ natural ear shape means they’re often upright, husky and malamute breeds have curledup tails, even when relaxed.
“When these dogs are in alert mode or feel threatened, the tail may go higher and stiffer and wag quickly,” Diers said “Look at our pugs. They always have big open eyes, but if a wide-eyed pug is giving the whale eye, he may be experiencing a threat or feeling nervous.”
Trouble In Paradise
In understanding your dog’s body language, you can also be better prepared to recognize potential health concerns.
“An ill dog may sleep more, be grumpier and not want the normal interaction he usually gets excited about,” Diers said.
• Tense posture
• Tucked belly
• Arched back
• Whimpering
• Lip-smacking (precursor to nausea)
Diers notes that lip-smacking can also indicate a self-soothing method for stress or anticipation of a snack.
“Ultimately, if your normally active and happy dog starts to isolate and show lethargy and/or decreased appetite, this is a sign that something has changed with their overall health and seeking the care of a veterinarian is a suggested course to take,” Diers said.
Reading, understanding and responding to your dog’s body language is a key part of the companion-to-owner relationship. By understanding their cues and appropriately advocating for your dog, owners can continue to ensure their dogs remain happy, comfortable and safe while also guaranteeing the safety and wellbeing of those around them.

Studies have shown that Chess can have a positive impact on academic performance, particularly in subjects like mathematics and reading. Through events like the Mayor’s Chess Challenge, the hope is that more young people and families will be inspired to explore the game, reaping its cognitive benefits along the way.

“Sands bags are ok but heavy and cumbersome and not easy to transport.
I did some research last year and found many resources online. Reusable Flood dams are one such finds. They can help secure doors and garages.” Hallandale Beach Mayor, Joy Cooper
Hallandale Beach continues to address the rehabilitation of our Sewer Infrastructure. This citywide modernization will not only improve our system but make it more resilient during hurricanes and flooding. In January, we asked for a release of $16.9 Million Dollars of Community Development Block Grant funding from the State. These funds are over and above the traditional CDBG Funding we receive through a disbursement agreement with Broward County.
Residents may recall that Governor DeSantis approved a large grant for our city to replace our old lift stations particularly in areas that are prone to flooding. He announced the award when he kicked off
the first tranche of Everglades Restoration Funding and Water Projects.
This funding will go towards retrofitting five lift stations and installing two main pipelines. These improvements are designed to increase system capacity, prevent sewer spills, and reduce public health risks. Work will be carried out across various locations, including Northeast 12th Avenue, Northwest 8th Street, Southwest 4th Avenue, Southwest 8th Street & 9th Avenue, Northwest 10th Terrace, Northeast 7th Avenue and Northeast 14th Street.
These improvements are designed to increase system capacity, prevent sewer spills and reduce public health risks. The City will also be adding a new telemetry system, it will be integrated to enable remote monitoring and emergency response capabilities.
Our city crews have also been working on a pump system that is located off 12th and 2nd. During an assessment of the area, a pump was located by our engineer. It is not certain when it was installed. Our
City did not have a Geographical Information System GIS in place to ensure we had an inventory and location of all our systems.
At first, it was thought that the system was to boost drainage to the outfalls. Staff began with the rehabilitation of the three pumps and found they were tied to an injection system. Obviously, we are extremely excited to uncover this neglected system. Currently, staff has cleaned out the system and rehabbed the pumps. The next steps will be to evaluate their capacity and research if others can be tied in.
As Hurricane Season is right around the corner, I will be working alongside our Fire Chief, Fucci and our new Emergency Response Coordinator on a Hurricane Preparedness Forum with a focus on how residents can work on flood proofing and preparing for natural disasters. We are looking forward to a date in May.
We will continue to address Infrastructure on the City side but I encourage all our residents to begin to
look at the many ways to harden your homes for storms. We need to not simply think about wind but flooding. As Mayor, I have always worried more about floods than the winds. Hurricane force winds are certainly a start but flooding particularly flash flooding can kill. Our City has reinstated sandbags after I pushed and Commissioner Lima Taub raised the issue at a meeting. Sands bags are ok but heavy & cumbersome and not easy to transport. I did some research last year and found many resources online. Reusable Flood dams are one such finds. They can help secure doors and garages. Please save the date and join us at the CRA Meeting on Tuesday, March 25th, 2025 at 5:30 p.m.
As always, I am available anytime for your questions, concerns and ideas to make our City a better place on my Phone/Text at: (954) 632-5700. Or you can email me at: jcooper@cohb.org. Please visit me on my Facebook page at Mayor Joy Cooper. Like! Follow! And Share!
