A view on 'Local' from the time-short foodie Vanessa Kimbell takes some time out from her hectic schedule to give us her views on 'local' and why it's so important. What do you consider to be 'local'? When I first considered food to be local I was thinking of products that were produced in quite a small radius. As time has gone on however, I have widened what I consider to be local and perhaps a better word to use would be regional, simply because not everything I want to buy is on my doorstep. Why is 'local' so important to you? The provenance of or food is so important to me on so many levels. Of course you reduce food miles, and encourage a thriving local economy. But there is an emotional level to my decision. It is a choice to support real people. The artisans who make local food never compromise and their products are made with love, care and attention. The taste of their food reflects the years of experience making it. For me the region in which I live produces fabulous food and the beautiful landscape around me is based on that agriculture. The men and women who work and trade our off the land are my people, and I feel a sense of community, belonging and loyalty to my region when I prepare a meal made with local ingredients. I am proud to be British and when we produce good local and delicious food why would I buy anything else? What would your top tips be for people wanting to start sourcing more local produce? Making a decision to eat local food is a lifestyle choice and you are not going to find everything you like to eat all at once, so take one small step at a time. Perhaps stop in and buy your food at the local green grocer and ask him what is local or pop in to the nearest farm shop at the weekend and check out their offering.

You can sign up to a local vegetable delivery scheme easily to. Your local butcher will certainly be pleased to see you as they often have beef, pork and lamb from nearby. Look out for a farmers market and invite a friend to come along. It's a fun morning and social too making your food a talking point. Engage with the people there, interact - they've often been up since the early hours to get there and have personally made the food (and it tastes even more delicious after a chat with the producer!) Don't discount what the supermarkets have to offer. These days even the largest of supermarkets have realized that ultra homogenization of food is boring and consumers want to purchase food produced close to home so it's worth asking what they have, and if you can't buy local then buy British.

Food Trends 2011 Ben Vear from Winstone's Ice Cream, in the beautiful Cotswolds, provides an insight into Food trends so far this year and the links to both the weather and the economy. The gorgeous and somewhat unexpected long spell of sunshine that we have been lucky enough to be currently enjoying in the UK in April has brought with it many an impromptu garden party and BBQ's across our towns and cities, with many expected across the bank holiday weekends through April to May. The sunshine has brought with it an array of beautifully ripe fruit on our shelves and amongst our hedgerow. The good weather and growing confidence in the economy has seen spending on the high street and in particular on food, rise month on month since January. In particular we have seen a return to growth in local and regional food sectors, amid tough economic conditions and very disappointing news that organic food is on the decline and has been since last year. While this trend is unlikely to continue, it does mean that local food producers, farms and delis have to work harder to encourage and educate the consumer into understanding why organic food is important. The guild of fine food has also reported that cottage industries and artisan producers, particularly in cheese, ice cream and luxury drinks are set to be top sellers in 2011. Brands including Samuelsons Lemonade, Bottlegreen, Belvoir Cordials and Devon based Luscombe drinks are leading the charge amongst the premium soft drinks range. While Winstones Cotswold Ice Cream, Mendip Moments and Purbeck ice cream are all set to see phenomenal growth in 2011. While the price of sugar, cocoa and vegetable fat will continue to rise in price, they are nearing their peak, which means the cost of food should begin to show signs of falling. Thanks to the cost of food, flavour trends likely to be popular this year are set to see foraged and seasonal food continue to be in vogue, both on restaurant menus and in across the local retail sector, in farm shops, delis and specialist food stores. The Royal Wedding and next years London Olympics are set to see a British food revival and perhaps even a return to nostalgic food, jelly and ice cream anyone? Keeping things seasonal, April and May are the perfect time to enjoy early Blackberries, Cherry Plums, Rhubarb and Gooseberries while sat on the lawn soaking up some great British sunshine. A new wave of cookery books from fantastic authors such as Vanessa Kimbell and even my own book, are due out later this year and will continue to encourage time short home cooks to make use of seasonal, organic (where possible) and affordable ingredients in cooking.

Seasonal Recipes Each month, we'll be including some great recipes to celebrate the best of British Seasonal food. To kick off, this month, we're celebrating Spinach, with a simple but delicious Spinach and Cottage Cheese Cannelloni, a twist on the usual Spinach and Ricotta to keep things local and a lovely Spring Vegetable Risotto.

Spinach and Cottage Cheese Cannelloni (Serves 4) 225g spinach, washed and chopped 275g cottage cheese 1 medium egg, beaten 1 tsp grated nutmeg 16 cannelloni tubes 2 x 400g tins chopped tomatoes 1 clove of garlic, crushed 1 small onion 1 tsp dried mixed herbs 100g mozzarella cheese Salt and pepper to taste Fresh basil leaves to garnish

Lightly oil and ovenproof dish and set aside. Pre heat the oven to 200 degrees C (gas mark 6). Place the spinach, ricotta, egg and nutmeg in a bowl. Mix well and season. Fill the cannelloni tubes with the mixture and arrange in a single layer in the prepared dish. Put the tomatoes, garlic, onion and herbs in a saucepan , season, bring to the boil then lower the heat and simmer for 15-20 minutes until slightly thickened. Puree the tomato mixture in a blender until smooth then pour over the cannelloni. Cover the dish with aluminium foil then cook in the oven for 35 minutes until the cannelloni is tender. Remove the foil and arrange the mozzarella slices over the top. Return to the oven, uncovered and cook for a further 10 minutes until bubbling and golden. Serve immediately. supplylocal.co.uk/food

Spring Vegetable and Salmon Risotto (with optional salmon) (Serves 4) 2tbsp olive oil 1 clove garlic, chopped finely 1 small onion, chopped. 225g arborio risotto rice 850ml vegetable stock 100g spinach, washed and trimmed 100g fine green beans 100g fresh peas (or frozen if out of season, defrosted) 1 bunch (approx. 10) asparagus spears Salt and pepper Handful of chopped parsley 200g grated cheddar cheese 2 x 100g salmon filets, cuts into bite sized pieces

Cut the asparagus spears into bite sized pieces (approx. 1 inch) then blanch in a pan of boiling water for 2-3 minutes until tender. Set aside. Blanch the peas and French beans for 2-3 minutes until tender and set aside along with the asparagus. Heat the olive oil in a large pan over a medium heat. Add the garlic and onion and cook for 3-4 minutes until soft. Add the rice and stir well to ensure it's well coated. Cook for a further 2-3 minutes. Increase the heat slightly and begin to gradually add the stock, stirring constantly until the liquid is absorbed. Once the rice is tender (this should use up most of the stock), stir in the blanched vegetables. Cook for 2-3 minutes. Remove from the heat and stir in the spinach. Mix well and leave for 2 minutes whilst the spinach wilts. Add the salmon to the pan (the heat in the risotto will cook the fish in the final couple of minutes), stirring gently in order to avoid breaking up the fish. Season well, and mix in the grated cheese and chopped parsley. Serve immediately.
