CHOOSING THE RIGHT WINE to go with a great meal can be a daunting task. Not at Galaxy MacauTM’s Terrazza. Working closely with two other new recruits to mezza9 Macau – Restaurant Manager Carlos Netto and Sommelier Maggie Mak – Chef Richard aims to enhance guests’ dining experiences with a new menu, stronger emphasis on wine pairings and the introduction of tableside service. “To deliver great food and great service, it’s so important for everyone on the team to communicate and collaborate,” says Chef Richard. “The three of us are really working well together.” Chef Richard’s current specialty menu features a number of his memorable signature dishes. Two popular standouts are the roasted scallops with pea and mint risotto, and the sustainable Tasmanian salmon trout with clams. “Sustainable food is such a big part of the dining scene these days.” With an exciting new menu and lots of fresh ideas, Chef Richard is confident mezza9 Macau can reach even greater culinary heights. “Most importantly, we’re a strong team.”

THE KITCHEN at Cépage in Hong Kong is mysteriously calm. It’s not empty: there are lots of chefs and they’re all working hard. How can it be so tranquil? “More than half the members of my team are women,” says Executive Chef Sébastien Lepinoy. “It changes the dynamics of the kitchen. In a very good way.” In a hectic professional kitchen, nerves are sometimes stretched to the snapping point. More than a few chefs get burnt out by the stress and the high-testosterone atmosphere. That doesn’t appear to be a concern at Cépage. Sébastien’s kitchen is a haven of quiet, focused activity. “It’s important to surround yourself with smart people who have respect for their work,” he says. “There is no pressure in our kitchen.” Sébastien’s cooking style combines high-end French cuisine with distinctly Asian touches. Inspired by Japanese traditions, his dishes tend to be delicate and precise, with intriguing, complex flavors.

“We take the best of both worlds and present it all at a very high level,” he says. “Hong Kong customers are very familiar with Japanese cuisine, so they appreciate these touches.” Sébastien sources his ingredients from all over the world, but mostly from Japan. Like most great chefs, he uses nothing but the highest quality produce, always seasonal and fresh. “My philosophy,” he says, “is to take the best possible care of all the ingredients I use.” The way he executes his dishes with great reverence for every ingredient, his deep knowledge of how ingredients interact, and the way he and his staff concentrate as if casting a spell – all this makes Chef Sébastien come to seem like a kind of food druid. He has an uncanny talent for putting together the most unlikely – and at the same time the most elegant and refined – combinations of natural ingredients. Potatoes are not the first ingredient

that comes to mind when you think of elegant, refined cuisine, but just listen to this: for Sébastien’s potato salad, each slice of potato has been carved in the shape of a flower petal and delicately topped with a dollop of crème fraiche, a single black pearl of caviar, a tiny purple flower petal, a finely diced piece of onion, a piece of fresh smoked salmon and a thin strand of Japanese chive. “French chives are not that pleasing to the eye,” he says. “And they exude a strong onion taste that disturbs the delicate balance of the different flavors in the mouth, so I prefer to use these hair-like Japanese chives. They have a great flavor which adds a small amount of sweetness and color. I love working with caviar. I lived in Kiev, Ukraine, so I had lots of exposure to it. The pairing of the very humble potato with something very luxurious like caviar works marvelously and the visual aspect of it makes this one of my favorite dishes.” Another dish shows Sébastien’s sly side. Served on a Japanese style platter with chopsticks and a dish of soy sauce, intriguing morsels of something indefinite have been wrapped in a dark sheet which looks like seaweed, and then topped with a single celery leaf and a flake of sea salt. It looks like sushi, but it’s not. Sébastien smiles: “Scallop maki.” A closer look reveals that juicy white scallops and bits of celeriac are wrapped in very thin slices of black Perigord truffles. What looks like soy sauce is actually truffle juice. It’s a very clever combination, the best food from earth and sea, and the ultimate blend of French and Japanese touches, all on a single plate. “People can’t get enough of the truffle juice,” says Sébastien. “They drink it from the dish!”

Six months

before opening Yin Yang, Margaret Xu Yuan started two organic farms in the New

Territories so she could better control her restaurant’s produce supplies. Growing what she wants and cooking what she has allows her to change her menus monthly to reflect what is bearing fruit. Now, almost all of the fruits, vegetables and herbs she serves come straight from her own gardens.

A Wealth of Cognac Chef David Fransoret shares his expertise about pairing food and cognac

David Fransoret is Private Chef of the Château de Bagnolet – Hennessy Maison, the elegant Hennessy house located near the vineyards of Cognac in southwestern France. Chef Fransoret was recently in Macau, at the City of Dream’s The Tasting Room, to prepare a banquet of food to be paired with Hennessy X.O and Imperial Paradis cognac. He took time out to share his thoughts about cooking and cognac.

Which of the Hennessy cognacs do you most like to work with? I enjoy them all, but there are two that I work with more extensively – X.O and Paradis Imperial. In X.O it is the male character that is prominent; it is very robust, while the Paradis is feminine, softer. Is it more difficult to pair food and cognac as opposed to food and wine? I should say that the work is different. With cognac we first select the range of cognac we wish to work with. We then select the flavors from within those cognacs, one or two flavors maximum, and it’s only then that we will select a dish that will pair with the cognac. We are a private house, so we have guests rather than clients. We don’t have a menu as

such, but we elaborate seasonal menus. All the dishes are paired with different cognacs, and our menus are adapted according to the nationality of the guests we are welcoming. We pay particular attention to the cooking and the flavoring, and the selection of cognac is also made in accordance with the nationality of our guests. The range of Hennessey cognac is so varied. With this great variety of cognacs, we can create an infinite number of dishes and this is really the wealth of the Hennessy House. Cognac is so complex – how do you choose which flavor you wish to highlight? I regularly collaborate with the Hennessy tasting committee to define new cognac associations. The Guide des Saveurs is a complete guide to pairing cognac and food. In it, we have established an identity schedule for every cognac within the house, stating every flavor that can be found in each. The guide took us three years to prepare, and we keep creating new cognacs so it needs to be updated all the time. This is what is really exciting. What are some of the ways in which you use cognac in the preparation of a dish? There are many ways, but cognac is not good to use in slow-cooked dishes – the alcohol all burns off and the flavors are lost. We add cognac at the end. I use it in reduction without flambé. From a taste point of view, flambé doesn’t bring anything to the dish and it’s not suitable to flambé really good cognac. And for sauces I use it raw, at the very last minute, to bring out the flavor of the sauce.

What are some of your favorite cognac and food combinations? All foods can match with cognac. You have to select your cognac to agree with the food and its flavor. For acidic flavors or very young flavors, you would choose a young cognac; and for fish and food that tastes slightly of iodine, choose a VSOP; and then for meat and venison, an X.O is best because the flavor is so robust. Paradis is excellent with chocolate. In addition to selecting cognac with particular flavors, it is important to consider how the cognac will be served, which can change its taste. You can serve it on ice, or with water or sparkling water. You can also chill it at minus 15 degrees so that you have a very syrupy texture and you feel the alcohol only later. If you have a very hot dish with a very cold cognac, the flavors become apparent much later, and they are very strong. You must also consider the order and the potency of the cognacs you will serve. You start by diluting them on the rocks and you end with chilled. It is also a question of the right doses. It is important to select the cognac properly right from the beginning. One has to start with young cognac at the beginning of the meal and progress to older cognacs throughout the meal, ending with something extremely memorable like, for instance, Richard. The idea is to share something new, to help people appreciate the cognac. After coffee is an ideal time to really appreciate cognac properly. With a cigar at the end of the meal, a Richard Hennessy cognac, with its very strong flavors, is perfect.

he history of this famous restaurant spans over four generations and more than a century. Fat Siu Lau opened its first branch in 2006, Fat Siu Lau 2 is situated in the bar street area, next to MGM Grand, with its bright red unique color scheme and huge windows providing enchanting views of the nearby lake. Fat Siu Lau 3, on the other hand, is located in Taipa village near Galaxy Macau with a green European motif. It can cater for private parties up to 100 persons. Menu highlights include perennial favorites like roast pigeon (prepared to a 105-year-old secret recipe), curry crab, African chicken and grilled prawns.

數澳門歷史悠久及著名的葡式餐廳,「佛 笑樓」應該是當之無愧了。餐廳開業至 現在已超過一個世紀,當中經過了四代人的悉 心經營。遐邇馳名的燒乳鴿,是佛笑樓的招牌 菜,采用祖傳秘方炮制。其他經典菜式有咖喱 炒蟹、非洲雞、扒魔鬼大蝦。 為了迎合發展,佛笑樓在2006年於酒吧街開 了佛笑樓2,裝潢以紅色為主調,可透過玻璃望 向海傍景色。而佛笑樓3更位於 仔著名的手信 及美食街——地堡街,与剛開業的澳門銀河為 鄰。餐廳以清新綠色為主調,可舉行多達100人 的私人派對。
