La tierra limo de la huerta fue transportada desde el lugar más fértil de Miraflores para armar las 30 jardineras especiales y sembrar hortalizas, y árboles de naranjas, mangos, aguacates e higos, convirtiéndose en el ingrediente secreto para el éxito de Espiritu Organic Garden. El huerto se encuentra en la montaña que circunda la Bahía de Palmilla, hecho exclusivamente para los residentes de Espíritu del Mar y Villas Del Mar, dos importantes comunidades gestionadas por el desarrollador local Ron Hatfield de la compañía Del Mar Development, famosas por la calidad de planificación y compromiso de amenidades que brindan a quienes lo visitan o residen ahí. THE STORY BEHIND THE COVER A luscious organic garden and orchard awaits A table setting fit for royalty in a luscious organic garden and orchard awaits a private party of guests inside the gates of Espiritu del Mar, one of Los Cabos most desirable residential resort communities. Here, hand-picked produce is served up to make fresh pizza in the authentic outdoor Italian pizza oven accompanied by wine tastings for community members. This magical venue is perfect for special catered events for residents and guests of Espiritu del Mar and sister community of Villas Del Mar. A 20-foot-long handcrafted live edge wood table seats 14 and is frequently decorated by the fabulous, locally based Del Cabo Events Design special occasions team. This unique environment immerses guests in the rich gardens which are lovingly tended by head gardener Santiago Medrano. Santiago was charged with the task of building the Espiritu Organic Garden for the increasing desire for the two communities to have a functioning garden and a serene setting for homeowners to enjoy and harvest organic produce for their own tables.

Soil from the most fertile location of the Baja in Miraflores, 25 miles away, was trucked in to build the 30+ raised beds and plant the maturing orchards of oranges, mangos, avocados, and figs; the secret ingredient to the abundant growth and success of the Espiritu Organic Garden. The garden is perched on the mountainside above Palmilla and serves the residents of Espiritu del Mar and Villas Del Mar, two prominent communities managed by renowned local developer Ron Hatfield of Del Mar Development. His communities are famous for the exceptional development planning and rich amenity offerings he has provided for his community residents. Traveling Mitos, leyendas, historias truncadas y archivos robados, quemados y destruidos hacen de la historia de Baja California Sur un verdadero laberinto respecto a los orígenes de su comunidad. El libro, “Guía Familiar de Baja California 1700—1900” compilada y revisada por Pablo L. Martínez hace casi 60 años, nos da una idea de las personas que iniciaron la sociedad actual con una diversa mezcla de apellidos provenientes de España, y de Sonora, Sinaloa y Durango en México. Estos nombres incluyen los de indígenas de remanentes tribus locales y, por supuesto, extranjeros desertores de barcos balleneros y piratas de la época que decidieron emprender sus aventuras en tierra sudcaliforniana. Hoy es fácil distinguir una sociedad local a través de apellidos como Rodríguez, Márquez, Arce, Verdugo, Ceseña, Castro, Ortega, Marrón, entre otros. Sin embargo, hay nombres como Smith, Sandez, Leggs, Gavarain, Fisher, Ritchie, Green y Kennedy, que de ninguna manera es limitativa, pero sirven como ejemplo de la interesante mezcla que sucedió entre los siglos XVIII y XX.

Myths, legends, truncated and stolen stories, and burned and destroyed files make the history of Baja California Sur a true labyrinth when it comes to the origins of the communities. The book, Guia Familiar Baja California 1700-1900, compiled and revised by Pablo L. Martinez almost 60 years ago, provides a detailed picture of the people who were the origin of today's society and who brought a diverse mix of surnames from Spain, and from Sonora, Sinaloa and Durango Mexico. Those names include indigenous people from remnant local tribes and, of course, deserters from whaling ships and pirates who decided to continue their adventures in this South Californian land. Today, it is easy to distinguish a “local” society through surnames such as Rodriguez, Marquez, Arce, Verdugo, Ceseña, Castro, Ortega, and Marron, among others. However, there are names such as Smith, Sandez, Leggs, Gavarain, Fisher, Ritchie, Green and Kennedy, as well. A finales de los años 70, con el proceso migratorio derivado del desarrollo turístico, el sur de la península cambió para dar paso a gente de prácticamente toda la República Mexicana y de una buena parte de ciudades estadounidenses, dándole un toque de pluralidad muy particular a la zona.

By the end of the 70s, the migratory process derived from tourist development in the south of the peninsula began to give way to people from practically the entire Mexican Republic and a good number of American cities. The influx of people provided the area with a touch of plurality.

Quizás sea este proceso, a principios del siglo XXI, el que empezó a caracterizar a la península como un polo turístico de altísima calidad para la pesca deportiva y el golf, después de haber sido su principal economía la agricultura, ganadería y pesca.

Perhaps it was this process, at the beginning of the 21st century, that began to identify the peninsula as a high-quality tourist destination for sport fishing and golf when, for decades, the main economy was agriculture, livestock and fisheries.

La población no creció significativamente en toda Baja California Sur durante muchos años. Esto fortaleció el espíritu de unión y la solidaridad de los habitantes que se conocían por nombre y apellido a pesar de las distancias. Incluso era común que hubiera matrimonios entre parientes de algunas familias, las cuales se identificaban por ser numerosas. Las familias con cinco, seis o más hijos eran fáciles de encontrar y todas participaban en las diferentes actividades económicas.

The population did not grow significantly throughout the State for many years. This strengthened the spirit of union and the solidarity of the inhabitants who knew each other by name and surname despite the distances. It was even common for members of some large families to marry. Families with five, six or more children were easy to find and all participated in different economic activities.

La interrelación socioeconómica y política del sur del Estado es diferente de la del norte. El sur tiene la parte de gobierno y turística, y, por otro lado, en el norte el desarrollo económico está basado en agricultura y ganadería principalmente. Las largas distancias en un Estado unido por una sola carretera acentuaron las diferentes economías a lo largo del tiempo, pero siempre en un marco de gran respeto e integración.

The socio-economic and political interrelation in the south of the State was different from that of the North. One carried the role of government and tourism, and the other agriculture and livestock. Long distances in a state linked by a single highway accentuated the different economies over time, but always within a framework of great respect.

El turismo que se generó como resultado del golf y la pesca propició la apertura de nuevos e interesantes mercados y oportunidades de empleo que hicieron que la zona fuera atractiva para personas que buscaban emigrar de las grandes ciudades o interesadas en emprender una nueva aventura.

The tourism that was generated because of golf and fishing led to the opening of new and interesting markets and employment opportunities that made the area attractive for people seeking to emigrate from big cities or interested in starting a new adventure.

Cierto es que, en el presente, el sur de la península es una zona pluricultural, absolutamente heterogénea, donde converge el espíritu de solidaridad, de ayuda, de desarrollo y de trabajo en equipo que la convierten en un imán social interesante.

At present, the south of the peninsula is a multicultural area that is heterogeneous. A spirit of solidarity, help, development and teamwork converge here, making the area an interesting social magnet.

No es difícil venir a vivir, a crecer y a desarrollarse en Baja California Sur. Lo difícil es dejar de hacerlo.

It is not difficult to live, grow and develop in Baja California Sur. What is difficult is stopping.

ARDEA, THE NEW RESTAURANT AT NOBU LOS CABOS

Lo primero que notamos al entrar al restaurante es el enigmático uso de texturas y colores. También nos maravillamos con la enorme escultura de ballena de color bronce colocada en el centro del comedor. La sensación de entrar a un restaurante completamente cerrado es una nueva experiencia en Los Cabos. El nombre de Ardea, la más reciente propuesta culinaria en Nobu, surge de una abstracción del latín et ardeat, que significa “en llamas”. En cuanto a los colores, encontramos que son muy similares al fuego. Hay un poco de rojo en las mesas y sillones, y mucho negro en las paredes y acentos decorativos. Ardea es un proyecto apasionante para los sibaritas que buscan experiencias gastronómicas porque combina un restaurante de carne con la cocina tradicional italiana. Los ingredientes imprescindibles del menú son los cortes de carne, una selección de quesos, embutidos y pasta elaborados de forma artesanal, y pizza cocinada en un horno de barro, todo inspirado en las raíces del chef y los ingredientes locales. Por supuesto que los mariscos están en el menú, y también hay opciones vegetarianas y veganas, sin importar cuán diferentes sean. Inclusive agregaron más de 700 etiquetas de vino en su menú para un maridaje perfecto. La mixología no podía faltar, hay un sport bar para disfrutar de cerveza artesanal, cócteles y un menú de botanas inspirado en el mismo concepto. Cuando platicamos con el chef ejecutivo del complejo hotelero, Paolo della Corte, nos dimos cuenta del acierto en el concepto de este nuevo espacio tanto para locales como viajeros con recetas y sabores que rompen con la cotidianidad. Con una cocina parcialmente abierta y un ventanal que sumerge en la experiencia culinaria, Ardea es una invitación para que digas: “jamás había probado estos sabores”. Conviértelo en el nuevo lugar de reunión.

The first thing we noticed upon entering the restaurant was the intriguing use of textures and colors. We also marveled at the huge bronze-colored whale sculpture positioned in the center of the dining area. The feeling of entering a completely closed-in restaurant is a new experience in Los Cabos. The name Ardea comes from the Latin et ardeat, which means “on fire.” Regarding the colors, we found they resemble fire. There is a little red on the tables and armchairs, and a lot of black on the walls and other furniture. Ardea is an exciting destination for epicures looking for a lively dining experience coupled with innovative mixology. The restaurant is a combination of a steakhouse and traditional Italian cuisine. Must-have items on the menu include a variety of fire-roasted seasonal meats, a selection of cheeses, artisanal sausages, handmade pasta, and pizza cooked in a traditional clay oven. Every dish was inspired by the chef’s roots and features local ingredients. Seafood is also on the menu, as well as vegetarian and vegan options, no matter how unique they may be. There are more than 700 wines available to pair with any dish you choose. Ardea boasts a sport bar at the entrance where guests can enjoy craft beers, cocktails, and snacks. When we spoke with the hotel’s executive chef, Paolo della Corte, he told us the idea behind this new space was born from the need to offer both locals and travelers the opportunity to try cuisines that are complex, as well as flavors that leave the hum drum of everyday life behind. With a partly open kitchen and a window that lets you enjoy the culinary experience before the dish reaches your table, Ardea is an invitation for you to say, “I have never tried this before.” Make it the new place to be.

Les presentamos nuestras invitadas en “La Entrevista”.

The Interview is one of our favorite sections. It gives us an opportunity to meet different personalities, discover the human behind the professional and find out how he or she makes sense of life. For this edition, we chose a group of women who have not only done their part for the speedy recovery of the South Californian territory in the face of the health crisis, but who also have impressive careers in tourism, business, and education. LA ENTREVISTA - INTERVIEW

Me enorgullece ser Sudcaliforniana, soy de Ciudad Constitución en el municipio de Comondú. Trabajé en el Fideicomiso de Turismo de Baja California Sur, es donde descubrí el maravilloso mundo del turismo, es un sector bondadoso. Soy Lilzi, presidenta ejecutiva de la Asociación de Hoteles de Los Cabos. Estamos trabajando en conjunto con toda la iniciativa privada para hacer de Los Cabos un lugar seguro para visitar.

Los Cabos lo que tiene de particular es la fortaleza. Es muy importante resaltar que la vocación es turística, las empresas nos hemos enfocado a mantenernos ordenados, competitivos y serios con la implementación de protocolos de seguridad. Soy Jazmín, consultora empresarial, fundadora y directora de Proyecta MX radicada en Los Cabos. Invito a las empresas para que sigan apostando por la innovación como un recurso para elevar su competitividad.

I am proud to be a South Californian from Ciudad Constitucion in the municipality of Comondu. Working in the Baja California Sur Tourism Trust is where I discovered the wonderful world of tourism. I am Lilzi, executive president of the Los Cabos Hotel Association. We are working together to make Los Cabos a safe place to visit.

What is unique about Los Cabos is its strength. It is important to highlight that the companies in the business of tourism have focused on staying organized, competitive, and serious with the implementation of safety protocols. I am Jazmin, a business consultant, founder, and director of Proyecta MX, based in Los Cabos. I invite companies to continue betting on innovation as a resource for increasing their competitiveness.

Desde que tengo uso de razón, mi padre me repetía la frase: “recuerda, cada cabeza es un mundo”. Siempre me impulsó a ser la mejor versión de mí misma. Él era fuerte, determinado y amoroso. Mi madre ha sido ejemplo de bondad, generosidad, fortaleza, y resiliencia. Todo esto me quedó impregnado. Desde niña me cuestionaba todo. Cuando llegué a la adolescencia, pasé mucho tiempo observando el comportamiento de otras personas, así como el mío. Esas ganas de indagar me llevaron a estudiar primero psicología y la especialidad en relaciones de pareja. También desarrollé una pasión por la comunicación y así fue como me enfoqué en el ámbito de la educación.

Since I can remember, my father repeated the phrase: "remember, each mind is a world of its own." He always pushed me to be the best version of myself. He was strong, determined, and loving. My mother has also been an example of kindness, generosity, strength, and resilience. All this was driven into me. Since I was a child, I questioned everything. When I reached adolescence, I spent a good deal of time observing other people's behavior, as well as my own. The desire to investigate led me to study psychology with a focus on couple relationships. I also developed a passion for communicating and that's how I entered the field of education.

As executive president of the Los Cabos Hotel Association, Lilzi works with different hotel directors, as well as service providers that are part of the backbone of the tourism industry. The team members are in charge of making sure tourists are happy when they stay in Los Cabos.

El mayor desafío que enfrentaron estos últimos meses fue aprender a reaccionar ante la pandemia para que el sector turístico sufriera lo menos posible. Como resultado el equipo trabajó en un plan de apertura desde el momento del confinamiento. A su vez, implementaron diversas medidas de bioseguridad y coordinaron con los hoteles qué camino tomar.

The biggest challenge in recent months was learning how to react to the pandemic so that the tourism sector suffered as little as possible. As a result, the team worked on an opening plan from the first moment of confinement. In turn, they implemented various biosecurity measures and coordinated with the hotels regarding which direction to take.

JAZMÍN ALMADA DUARTE Desde hace 10 años, la empresa que lidera Jazmin, Proyecta MX, asesora a otros negocios sobre cómo construir una estructura inteligente y sostener el orden internamente. Para ella, es importante que las compañías a las que asesora tengan claro su propósito. Su carrera profesional comenzó desde joven en negocios familiares. Años más tarde, antes de emprender su propia empresa, también se desempeñó en puestos directivos dentro del sector privado y público. Ante el reto de la pandemia, Proyecta MX diseñó un programa de tres etapas que contenía una mayor planeación y una mejor previsión para las empresas. De esta manera, los empresarios pudieron transitar sobre el fenómeno sin sufrir pérdidas sustanciales, sensibilizando a su equipo de trabajo, encontrando nuevas formas de reconfigurarse e incorporando una cultura de trabajo híbrida que les permitiera hacer una transformación para mantener el funcionamiento del negocio. Para Jazmín, la evolución de cualquier empresa es fundamental. For 10 years, Jazmin’s company, Proyecta MX, has been advising other businesses on how build an intelligent structure and internally maintain order. For her, it is important that the companies she advises are clear about their purpose. Jazmine’s professional career began at a young age in the family businesses. Years later, before starting her own company, she held management positions in both the private and public sectors. In the face of the challenge caused by the pandemic, Proyecta MX designed a three-stage program that contained greater planning and better forecasting for companies. Los factores determinantes son y siempre serán el contacto, el amor y el acercamiento personal a cada vida. Esto, los ha llevado a aprender, asimilar y adaptarse a los nuevos procesos con éxito a pesar de los desafíos que han enfrentado. ¿Cómo se mantiene positiva ante la adversidad? The fishing experience starts when you glimpse the beginning of a new day and the immensity of the ocean. The feeling of peace is immediate. Facing the depths of the blue sea, fishing rod in hand, a state of relaxation and contemplation takes over you swiftly.

Nos dimos cuenta que para varios tripulantes, el mar representa un segundo hogar, especialmente para Ángel Carbajal que comparte la jornada de pesca con su equipo de cocina. Con paciencia y afecto el Chef y también capitán transmite con paciencia y afecto su conocimiento, enseñanza y seguridad hacia sus acompañantes.

We soon realized that, for several of the crew, the sea represented a second home, especially Angel Carbajal who shared a day of fishing with his kitchen team. They all expressed a love and respect for the sea. While on board and listening to Angel's instructions, we noted the patience and affection with how he transmitted his knowledge and to make his companions feel comfortable.

Si nos remontamos en la historia de Ángel, recordamos el valor de la mentoría que le brindó Nick, con quien aprendió el arte de la cocina japonesa. Ángel supo cómo unir dos culturas—japonesa y mexicana—para crear recetas únicas. Los dos ahora son grandes amigos y han compartido el amor por la cocina y el golf durante más de 30 años. Ángel toma como ejemplo a su mentor y el tiempo que ambos pasaban juntos platicando de intereses en común en un ambiente casual para relacionarse con su equipo. Esos momentos son los que se llevan en el corazón y a menudo los que transforman tu carácter. De pronto, una ráfaga de aire golpeó nuestros rostros cuando el capitán cambió el rumbo para dirigirnos hacia el Golfo de California. Allí iniciamos la búsqueda de nuestro gran pez. En esta ocasión fue una espectacular sierra, lo peculiar de la pesca es que no siempre regresas a casa con el botín que querías, pero aprendes a utilizar de la mejor manera los recursos y resaltar el sabor de cada especie. Luego de explorar el Golfo de California, cambiamos de rumbo, ahora hacia el océano Pacífico.

If we go back in Angel’s history, it’s important to point out the value of the mentoring provided by Nick with whom Angel learned the art of Japanese cuisine. Nick taught Angel how to unite two cultures — Japanese and Mexican — to create unique recipes. The two are now great friends and have shared a love of cooking and golf for more than 30 years. Angel takes as an example his mentor and the time they both spent together discussing common interests in a casual setting to interact with his team. Those moments are the ones that are held in your heart and often the ones that transform your character. All of a sudden, a blast of air hit our faces as Angel, who was at the helm as captain, directed us towards the Gulf of California. It was there we began our search for the great fish. This time it was a splendid sawfish. The peculiar thing about fishing is that you don't always come home with the loot you wanted but you learn to use the best way your resources and highlight the flavor of each specie. So, after exploring the Gulf of California, we changed course and headed to the Pacific Ocean.

Después de esta emocionante aventura en altamar es momento de regresar a tierra. Con una sonrisa dibujada en el rostro y tras haber alimentado a “pancho”, el conocido lobo marino que siempre está en la marina de Cabo San Lucas, emprendemos el camino a casa, no sin antes disfrutar un desayuno completo en The Office. Visitar este restaurante después de un día pesca se ha convertido en una tradición para Ángel.

After this exciting adventure, it was time to return. With a smile on our faces and after having fed “pancho,” the wellknown sea lion that is always at the Cabo San Lucas marina, we set out on our way home, not without first having enjoyed a big breakfast at The Office. Visiting this restaurant after a day of fishing has become a tradition for Angel.

La California Mexicana Parte 1 La Prehistoria de La California Mexicana Si la historia de la California Mexicana es fascinante y extraordinaria, su prehistoria puede superarla. En el proceso de formación de la península, en paralelo, surgió su cordillera central: el Golfo de California y los oasis. En el mismo período prehistórico, pero muchísimo tiempo después, la presencia humana quedó registrada con las pinturas rupestres en varios sitios de la península. Sin duda con estas formaciones geológicas y el arte rupestre, la prehistoria es una de las 7 grandes historias de la California Mexicana.

The Prehistory of Mexican California If the history of Mexican California is fascinating and extraordinary, the prehistory may be even better. During the formation process of the peninsula, the central mountain range emerged in parallel with the Gulf of California and the oases. In the same prehistoric period, but a long time later, the presence of humans was recorded with cave paintings at various sites on the peninsula. These geological formations and the rock art undoubtedly make the prehistory one of the seven great stories of Mexican California.

Hace aproximadamente 30 millones de años se iniciaron movimientos tectónicos asociados con la falla de San Andrés que cambiaron la geografía del macizo continental, formando parte de la península y el golfo de California. En este largo proceso geológico, finalmente hace 3 millones de años, el hoy municipio de Los Cabos emergió del fondo del mar. Estos hechos fueron determinantes en el futuro de los seres vivos en la península, definiendo, por ejemplo, el clima y la forma de vida de los seres humanos a través del tiempo. Approximately 30 million years ago, tectonic movements associated with the San Andrés fault began to change the geography of the continental mountain mass, forming part of the peninsula and the Gulf of California. In this long geological process three million years ago, what is now the current municipality of Los Cabos emerged from the bottom of the sea. ESTERO JOSEFINO JOSEFINE ESTUARY Es un oasis costero de los más grandes y el más sureño de los 180 oasis en Baja California Sur. Sus condiciones naturales generan una concentración muy alta tanto de flora como de fauna en proporción a su tamaño. Por esta importancia ecológica ha sido designado sitio RAMSAR (humedal de importancia internacional) como Área de Importancia para la Conservación de las Aves a nivel nacional (AICA), y a nivel internacional (IBA, Important Bird Area), así como también Reserva Ecológica Estatal. The Estero Josefino is one of the largest and southernmost of the 180 oases in Baja California Sur. The natural conditions generate an extremely high concentration of both flora and fauna in proportion to its size. Due to this ecological importance, the RAMSAR site (wetland of international importance) has been designated as an Area of Importance for the Conservation of Birds at the national level (AICA), and at the international level (IBA, Important Bird Area), as well as a State Ecological Reserve.

The gulf is an inland sea full of life with more than 8,000 animal species. It stretches nearly 750 miles and is between 50 and 125 miles wide. The Gulf of California is located between the Baja California peninsula and the mainland states of Sonora and Sinaloa. There are almost a thousand islands in the gulf. Two are the largest in Mexico: Angel de la Guarda and Tiburon. The United Nations Educational, Scientific and Cultural Organization (UNESCO) has declared some locations in the Gulf of California as natural heritage sites.

This mountain chain runs from north to south between the municipalities of La Paz and Los Cabos. In the Sierra La Laguna, there are natural ecosystems unique to the peninsula. A highlight is the only Dry Forest on the peninsula. In addition, this area is the main source for the recharge of water tables in the south of the peninsula, and, likewise, it is one of the rural regions where a great number of ranches and towns are located.

Ubicadas en la Sierra de San Francisco pertenecen al estilo Gran Mural, dentro del periodo arcaico que lo caracteriza. Por el gran tamaño de sus figuras que van desde uno hasta cuatro metros de altura, su alta calidad, extensión, la variedad y la originalidad de las representaciones humanas y animales, sus sorprendentes colores y su excelente estado de conservación, en 1993 la Organización de las Naciones Unidas para la Educación, la Ciencia y la Cultura (UNESCO) las designó como Patrimonio Cultural de la Humanidad en México. The cave paintings of the Sierra de San Francisco are representatives of the Great Mural style that is characteristic of this archaic period. Due to the large size of the figures that range from three to 12 feet in height, the high quality, length, variety and originality of human and animal representations, the surprising colors and the excellent state of conservation, the United Nations for Education, Science and Culture Organization (UNESCO) designated them as a Cultural Heritage of Humanity site in 1993.

¡Qué desesperación! No le puedo echar la culpa a la pandemia porque siempre nos ocurre. Justo cuándo uno quiere definir algo, el lenguaje se angosta, como decía el poeta Sabines. Y ahora que quisiera definir algo que todos conocemos, la escultura, nada, nada que se me ocurre me satisface. Así que me atengo al concepto que tenga o al tradicional “Arte y técnica de representar objetos o crear figuras en tres dimensiones trabajando o labrando un material”. Los Cabos tiene un patrimonio escultórico sensacional y que a veces no valoramos. Empecemos por el monumento en la Plaza Teniente Antonio Mijares dedicado al astrónomo Abate Jean Baptiste Chappe d’ Auteroche quien observó y midió exitosamente el tránsito de Venus sobre el disco solar cuando vino a la expedición científica franco-española. También podemos apreciar el de los próceres y cabeños ilustres y otras maravillas como, por ejemplo, en una fuente del Colegio Baldor encontrarás cuatro cérvidos endémicos en bronce de Baja California Sur casi del tamaño natural del maestro Emilio González Plascencia llamados Ammo-Gokio (berrendo en lengua cochimí).

Hay un romance entre el mar, la arena y la tierra en Sudcalifornia. Del mar vienen los vientos que forman esas maravillosas y singulares figuras de arena como medias lunas y estrellas perfectamente trazadas, es poseedora de espacios asombrosos donde las acumulaciones o montañas de arena se forman tanto en las zonas desérticas como en las costas. Las dunas son como otro mar, pero hecho de arena.

There is a romance between sea, sand, and land in Sudcalifornia. From the sea comes the winds that form those wonderfully singular figures of sand that are perfectly traced half-moons, stars, and more. This soil is the possessor of many wonderful spaces where accumulations or mountains of sand are formed in both desert areas and on the coasts. The dunes are like another sea but made of sand.

Marco Polo cuenta en El libro de las maravillas cómo al atravesar las llanuras mongolas escuchó el tambor de las arenas. El origen del canto de las dunas estaría en la sincronización de los granos de arena al escurrir unos sobre otros formando las típicas grietas que se observan a menudo sobre las dunas y los bancos de arena. Sin embargo, no es posible encontrar estas cordilleras en todas las dunas debido a las condiciones geomorfológicas. En La Paz, existe un ecosistema de dunas costeras cerca de la ciudad, a 30 minutos. Dirigiéndose hacia el norte por la Carretera Transpeninsular llegarás a un entronque a San Juan de La Costa. En el kilómetro 4, está la desviación por un camino de terracería que conducirá al mar y a las Dunas del Mogote. Durante esta travesía los guardianes del desierto, los cactus — con sus formas extravagantes y variedad de flora — te acompañarán. Encontrarás también fauna como correcaminos, lagartijas, liebres, cardenales rojos, amarillos, y águilas pescadoras descansado sobre los cardones. El atardecer es el momento perfecto para disfrutar de este lugar, desde aquí podrás tener una espectacular vista de la ciudad de La Paz y su malecón.

In La Paz, there is an ecosystem of coastal dunes close to the city, just 30 minutes away. Heading north on the Transpeninsular Highway, you will reach the junction to San Juan de La Costa. At kilometer 4, turn onto a dirt road that will lead to the sea and the Mogote dunes. 2. ¿Cuál fue el objetivo de abrir Haute Galleria en Los Cabos?

3. ¿Por qué eliges dedicarte al diseño interior? Como empresaria,

y tras varios años de trabajar en las empresas de mi padre, al mudarme a Los Cabos consideré crear algo que me representara, una empresa donde pudiera expresar todo lo que me apasiona. No soy diseñadora, soy Licenciada en Comunicación con una especialidad en producción de cine y televisión en Madrid España, siento que esto me da la capacidad de ver el diseño y los espacios desde otra perspectiva. Claro que contamos con un gran equipo de interioristas profesionales en Guadalajara y Gisela Rodríguez en Los Cabos. En la memoria, cada lugar se recuerda con una imagen, como una fotografía. Es importante lo que los espacios quieren comunicar con la iluminación, la forma en que están constituidos cada uno de los elementos, el aroma, la distribución, los colores, y esa sensación de confort y calidez. Me gusta trabajar con tu mente para conceptualizar tus espacios y traducir el mensaje que quieras expresar. La percepción es el paso hacia el recuerdo. Es necesario sentir para percibir y por lo tanto crear espacios acogedores e inolvidables.

2. What was the goal of opening Haute Galleria in Los Cabos?

I felt the need to open something unique, with a style different from what was always found in the city, a place that would bring everything together to create your ideal space. I always keep in mind that interior design should not impose a style, but rather capture and reflect the identity of each person.

3. Why have you chosen to dedicate yourself to interior design?

As a businesswoman, and after several years of working in my father's companies and moving to Los Cabos, I felt the need to create something that would represent me, a company where I could express everything that I am passionate about. I am not a designer. I earned a degree in Communications with a minor in film and television production in Madrid, Spain. I feel that this gives me the ability to see design and spaces from a different point of view. Of course, we have a great team of professional interior designers in Guadalajara and Gisela Rodríguez in Los Cabos. A location gets implanted in our memories with an image, like a photograph, so what each as space wants to communicate is important, including the lighting, the way in which the elements are distributed, such as aromas, colors, and that feeling of comfort and warmth. I like to get into your head and work with you to conceptualize your spaces and translate the message you want to express. Perception is the first step towards memory. It is necessary to first perceive what you want in order to create cozy and unforgettable spaces.

4. ¿Cuáles son las tendencias en diseño para este 2021?

Principalmente, las tendencias resaltan la necesidad de crear una sensación de bienestar en nuestros hogares. La comodidad como parte esencial expresado con tonos neutros, beige y gris. La madera será protagonista en tono natural, blanco y negro. En 2021 buscaremos interiores cálidos sin dejar a un lado las piezas clave como acentos metálicos y muebles únicos que tanto distinguen a Haute Galleria.

4. What are the design trends for 2021? Mainly, the

trends highlight the need to create a feeling of well-being in our homes. Comfort is an essential part expressed in neutral tones, beige and gray. Wood will take center stage in natural, black and white tones. In 2021, we will look for warm interiors without abandoning key pieces such as metallic accents and the unique furniture that so distinguishes Haute Galleria.

The best wines for the spring season Empezamos la primavera 2021, y mientras los vientos helados del norte siguen haciéndose sentir como para disfrutar vinos blancos frescos, espumosos y champagne, tenemos algunas recomendaciones de vinos ideales para estos meses de temperaturas frescas a bajas que caracterizan esta temporada.

The year 2021 is upon us, and while the icy winds from the north make us feel like bringing out fresh white and sparkling wines and champagne, we have some other recommendations for wines to enjoy during these months of cool to low temperatures.

Si tomamos en cuenta que la temperatura máxima de servicio de un vino son los tintos de cuerpo completo y se deben de servir a máximo 18°C, entonces debemos de aprovechar y degustar vinos que no requieren enfriarse demasiado para beberse. Tal es el caso de los Chardonnay con Barrica y de guarda, es decir, aquellos vinos de añadas más viejas, de 5 a 7 años de la añada en la botella.

If we take into account that full-bodied wines should be served at a maximum of 65 degrees, then we must take advantage and taste wines that do not require too much cooling to drink. Such is the case of Chardonnays, more specifically, wines that have matured five to seven years in the bottle.

Ya sean los amaderados Chardonnay de California o lo elegantes menos amaderados pero muy complejos blancos de la Borgoña — elaborado también con la uva Chardonnay — algunas etiquetas que sobresalen son Mersault, Puligny-Montrachet, Le Montrachet, Chablis Grand Cru. Algo importante es tratar de que en 2021 sean cosechas entre 2012 y 2016. También los finos y complejos Riesling alemanes de vinícolas de alta calidad como Von Winning, Joh Jos Prüm y Robert Weil del 2016 y 2017 son ideales para estas épocas. No olvidemos los deliciosos y complejos vinos blancos franceses de la región de Sancerre, elaborados con uva Sauvignon Blanc que empiezan a tornarse interesantes a partir del quinto año de su cosecha. Todos estos vinos blancos se sirven entre los 9°C y los 12°C de temperatura.

Sin embargo, este clima es ideal para el mundo de los vinos tintos, todos, desde los Pinot Noir, pasando por los Tempranillos españoles, Merlot, Zinfandel, Sangiovese italiano, y Syrah hasta los vinos de ensamble de varias uvas. Lo que debes de recordar es disfrutarlos entre los 15°C a los 18°C.

Be it the oaky Chardonnay from California or the elegant less oaky but highly complex Burgundy whites also made with the Chardonnay grape, some labels that stand out are Mersault, Puligny-Montrachet, Le Montrachet, Chablis Grand Cru, and more. Wines aged in the cask from 2012 to 2016 will be ready for consumption in 2021. Also, the fine and complex German Rieslings from high-quality wineries such as Von Winning, Joh Jos Prüm and Robert Weil from 2016 and 2017 are ideal right now. And let's not forget the delicious and complex French white wines made with Sauvignon Blanc grapes from the Sancerre region that start to become interesting from the fifth year of their harvest. All these white wines are served between 50 and 55 degrees.

However, this climate is ideal for the world of red wines, everything from Pinot Noir to Spanish Tempranillos, Merlot, Zinfandel, Italian Sangiovese, and Syrah to multi-grape blended wines. What you must remember is to enjoy them between 60 and 65 degrees.

En la historia de Baja California Sur la gastronomía tiene diferentes lapsos de tiempo. Los primeros poblados eran cazadores y recolectores, con la llegada de los jesuitas procedentes de diferentes partes del viejo mundo se hizo una interesante fusión de cocinas, y desde entonces, no se ha detenido. En esta nueva sección publicaremos una receta sudcaliforniana en cada edición así haremos una aportación al rescate de la gastronomía tradicional y estarán a disposición de los amantes de la cocina.

In the history of Baja California Sur, gastronomy has different periods of time. The first settlements were hunters and gatherers, with the arrival of the Jesuits from different parts of the old world an interesting fusion of cuisines was made, and since then, it has not stopped. In this new section we will publish a South Californian recipe in each edition so we will contribute to the rescue of traditional gastronomy and it will be available to those who love cooking.

RECETA MACHACA ANCESTRAL Porciones: 15 personas Tiempo de preparación: 20 minutos Tiempo de cocción: 5 minutos Ingredientes: • 10 kg de carne de res (pulpa, lomo) • 1 ½ kg de sal • ½ kg de machaca • 1 ½ cebolla • 2 chiles poblanos • Manteca o aceite Para hacer la carne: 1. Limpia bien la carne para después cortarla en tiras. 2. Cúbrelas con sal de grano y aplasta con la mano para que se adhiera y penetre en la carne. 3. Acomoda la carne en una tina de peltre y deja que duerma en la sal. Tiéndela al sol por la mañana. Recuerda voltearla para que se oree parejo y guárdala por la noche para que no se humedezca por la brisa. Tiéndela al sol a la mañana siguiente hasta el mediodía. 4. Una vez seca las tiras, pon costales de ixtle en el piso para extender la cecina sobre ellos. Cúbrela con un mantel de tela y otro de plástico. Después, písala con los pies descalzos por una hora para que se ablande y tire la sal. 5. Vuelve a tenderla al sol por dos horas. Pasado el tiempo, recógela y enjuágala. 6. Sacude el exceso de agua y ponla sobre la parrilla. Ásala en las brasas. 7. Machaca la carne con ayuda de una piedra añadiendo orégano y suficiente ajo. Para hacer el guiso: 1. Separa ½ kg de machaca y guísala en manteca caliente hasta que quede suelta y desprenda su aroma. 2. Sofríe en otro sartén el chile poblano y la cebolla en julianas. Después, incorpóralos a la machaca hasta que se mezclen los sabores. 3. Sírvela y disfruta de uno de los platillos más emblemáticos de Baja California Sur. Recuerda: Puedes acompañarlo con tortillas de harina, queso fresco y frijoles.

ANCESTRAL MACHACA RECIPE Serving size: 15 Active preparation time: 20 minutes Cook time: 5 minutes Ingredients: • 20 pounds of beef (roast or loin) • 3 pounds salt • 1 ½ medium onions • 2 poblano peppers • Butter or oil To prepare the machaca: 1. Dry the meat well and cut it into thin strips. 2. Season with the salt and press with your hand to make it stick and penetrate the meat. 3. Arrange the meat in a deep pot and let it marinate in the salt overnight. Lay it out in the sun in the morning. Remember to turn it over so that it airs evenly and bring it in at night, so it doesn't get damp from the evening breeze. Lay it out in the sun the next morning until noon. 4. Once the strips are dry, put sacks made of ixtle on the floor and spread the meat over them.

Cover the meat with a cloth and a plastic tablecloth. Then, step on it barefoot for an hour to soften. When done, throw out the salt. 5. Lay the meat out in the sun again for t wo hours. When time is up, rinse it off. 6. Shake off the excess water and put the meat on the grill over hot coals. 7. Soften the meat with the help of a stone pestle and season with oregano and garlic. To make the stew: 1. Separate one pound of machaca and cook it in hot butter until it is softened and gives off a savory aroma. 2. Sauté the poblano pepper and the julienned onion in a separate pan. When softened, add both to the machaca until the flavors are blended. 3. Serve and enjoy one of the most emblematic dishes of Baja California Sur. Remember: You can accompany it with flour tortillas, fresh cheese and beans.

Los Comondú

Sierra de la Giganta tiene una ladera que desciende hacia el Pacífico sobre la que existe una verde, larga y sinuosa cañada en la que desde 1714 existen dos pueblos: San José de Comondú y San Miguel de Comondú, coloquialmente llamados Los Comondú. The Sierra de la Giganta descend towards the Pacific Ocean and there is a long, sinuous, green ravine on the slope where two towns have been located since 1714: San Jose de Comondu and San Miguel de Comondu, colloquially called Los Comondu.

¿Quiere conocer cómo son los habitantes y su entorno desde siglos pasados? Al visitar Los Comondú es inevitable percibir y contagiarse de una forma de vida sencilla, diferente, pues a pesar de ser apacible y relajado, conserva la disciplina del trabajo de los ranchos exigente y continuo, que, con todo y ello, no puede evitar la amable hospitalidad con la que reciben a los viajeros. Ambos poblados están separados por un camino de 3.5 kilómetros que fue parte del Camino Real Misional. Se asientan entre pequeñas huertas a las que atraviesa un arroyo cristalino y fresco, que de forma perenne brota en ojos de agua localizados en la parte oriental de la cañada, llamado desde la época de los jesuitas Arroyo de San José, el cual serpentea caprichosamente en su recorrido acercándose a uno u otro de los acantilados que bordean la cañada. La misión de San José de Comondú contó con la más grande de las iglesias misionales de la que aun se conserva una parte. Estos pueblos fueron protagonistas del desarrollo peninsular, pero su población descendió tras quedar aislados por el trazo de la Carretera Transpeninsular; no así su esencia, que hasta hoy conserva una particular forma de vida característica de los californios herederos del paisaje misional que continuaron la tradición agrícola y ganadera iniciada por los misioneros, pero que al igual que los cazadores-recolectores que ahí habitaron, tuvieron que respetar y saber administrar los recursos que el entorno les ofrecía para poder sobrevivir y progresar, por lo que desarrollaron una sociedad coordinada, trabajadora, honesta, disciplinada y austera que logró una modesta prosperidad complementada con una educación, tanto familiar como formal, enfocada en los valores humanos.

When visiting Los Comondu, you will inevitably notice and then become infected by the simple, different way of life. In spite of being peaceful and relaxed, the people of Los Comondu maintain the discipline of demanding and continuous ranch work. At the same time, they steadfastly keep up the friendly hospitality offered travelers. The towns are separated by a two-mile road that was part of the Camino Real Misional. The people live among small orchards divided by a crystalline, freshwater stream that gushes out in springs located in the eastern part of the ravine. The ravine has been called Arroyo de San Jose since the time of the Jesuits. The stream meanders capriciously on a route approaching one or the other of the cliffs that border the canyon. The mission of San Jose de Comondu had the largest of the missionary churches, part of which has been preserved. The towns played a major role in the development of the peninsula. However, their populations declined after being bypassed by the Transpeninsular Highway. Not so the essence of the inhabitants. Their particular way of life that is characteristic of the Californian heirs of the missionary landscape remains strong today. The people continue the agricultural and livestock traditions started by the missionaries, and like the hunter-gatherers who lived there before, they have respect for the land and know how to manage the resources that have been offered them. To survive and progress, they developed a coordinated, hard-working, honest, disciplined and austere society that achieved modest prosperity complemented by an education, both familial and formal, based on human values.

Y si uno permanece un par de días por lo menos conocerá parte de sus tradiciones: gastronomía, fiestas patronales, cabalgatas, vino misional y el trato entre la gente, entre otras actividades como senderismo hacia las pinturas rupestres y prismas basálticos, un verdadero tesoro que Los Comondú ofrecen a quienes llegamos a ese edén que un escritor mexicano consideró el lugar “en el que se comprueba la existencia de Shangri-la”.

If you stay at least a couple of days, you will get to know some of the traditions, including the gastronomy, patron saint festivities, horseback riding, missionary wine and the relationships between the people. There are other things to as well, such as hiking to the cave paintings and basaltic prisms, true treasures. The Comondu offered those of us who visited a little bit of Eden. No wonder a Mexican author once considered Los Comondu a place “where the existence of Shangri-la is verified.”

Rancho Los Algodones, ubicado a tan solo 15 minutos al Este de Santa Anita en San José del Cabo, pertenece a la Familia “Álvarez Carrillo” la cual cuenta con cerca de 50 años realizando el tradicional queso fresco. Unos amigos y yo fuimos a acampar a ese lugar y como parte de la familia de mi amiga Cristina vive ahí, pues nada mejor que emprender la aventura en donde hay confianza. Lo mínimo que podíamos hacer era llevar una buena despensa. Los apoyos en rancherías siempre son bienvenidos, es una vida tranquila, pero, dura, y sabemos que no hay tiendas cercanas con productos básicos.

Rancho Los Algodones, located just 15 minutes east of Santa Anita in San Jose del Cabo, belongs to the Alvarez Carrillo family. Members of the family have been making traditional fresh cheese for more than 50 years. Some friends and I went camping at the ranch because part of my friend Cristina's family lives there. There’s nothing better than undertaking an adventure where there is trust. The least we could do was provide a full pantry. Support for the rancherias is always welcome. It is a quiet life, but it is hard, and we know that there are no nearby stores with basic products. DESTINO INVITADO - GUEST DESTINATION

Al llegar ya se encontraban escurriendo el suero de la “cuajada” para después quebrar (desmoronar) y salar el queso. Una vez listo se colocó en bolsas de tela y se dejó reposar en una prensa que le da la forma del tradicional “chopo”. Fue impresionante la degustación, primero lo probamos sin sal y estaba muy bueno. Le echaron sal y ¡supo mucho mejor! Cuando nos dieron otro reposado vi cómo mis amigos agrandaban sus ojos, así que no lo dudé y, sin lavarme las manos, decidí moverme con agilidad para tomar un pedazo y efectivamente: estaba buenísimo.

Upon our arrival, the whey was already being drained from the curd and broken up (crumbled) and the cheese salted. Once ready, it was placed in cloth bags and left to rest in a press that resulted in the shape of the traditional “chopo.” The tasting was impressive. First, we tried it unsalted and it was very good. Next, salt was added and it tasted so much better! When given another piece, I saw how my friend’s eyes widened. I did not hesitate and, without even washing my hands, I ran and grabbed a piece. It was absolutely delicious.

Al día siguiente vimos desde temprano lo obediente que es el ganado mientras los turnaban para comer. Aprendimos que nos faltan años de práctica para sacarle la leche a la vaca. Que la vida de campo es muy pacífica, se come rico, se platica sin prisas, y se disfruta de la compañía de la vida silvestre: desde las chivas y guajolotes, hasta cardenales que bajan a comer maíz cerca de la cocina. De hecho, vi por primera vez a una gallina de guinea.

Early the next day, we saw how obedient the cattle were as they took turns eating. We also learned that we lacked years of practice when it came to getting milk out of the cow. Life in the country is very peaceful; you eat deliciously, you converse without hurry, and you enjoy the company of animal life from goats and turkeys, to cardinals who come down to eat corn near the kitchen. In fact, I saw a guinea fowl for the first time.

Como equipo, en Tendencia decidimos compartir nuestro tiempo con los jóvenes residentes de la Casa Hogar ubicada en Cabo San Lucas. Contactamos a Jayson Stirrup, director ejecutivo para que nos orientara. Nos recibió calurosamente en las instalaciones y nos brindó la información que necesitábamos para empezar.

The team at Tendencia decided to share some time with the young residents at Casa Hogar located in Cabo San Lucas. We contacted Jayson Stirrup, executive director, for guidance. He warmly welcomed us at the location and provided the necessary information to get started.

¡Y surgió la idea! Una tarde de plaza con artistas. Nos inspiramos en el Distrito del Arte en San José del Cabo y Viva La Plaza en Cabo San Lucas, dos conceptos de éxito alrededor del arte ideales para convivir. Llevaríamos el material necesario para impartir una clase de pintura.

Just like that, the idea was born! Inspired by two successful organizations that work together, the Art District in San Jose del Cabo and Viva La Plaza in Cabo San Lucas, an entire afternoon would be spent with young artists. We would bring the necessary material for a painting class.

Para hacerlo realidad, requeríamos de un cómplice y lo conseguimos: Manu Castillo, artista residente del hotel Casa Dorada, quien amablemente coordinó la clase de pintura en la que acompañamos a los pequeños artistas durante la creación de sus grandes obras.

We needed an accomplice to make it happen. We found that person in Manu Castillo, resident artist of the Casa Dorada hotel, who kindly coordinated the painting class where we accompanied the little artists while they created their masterpieces.

Con pincel en mano y un lienzo en blanco revivimos la magia de la infancia, cuando no hay límites para la imaginación y descubrimos el talento de cada uno. El resultado de la actividad fue una colorida y divertida obra que esperamos se convierta en la primera de muchas más.

With brush in hand and a blank canvas, we relived the magic of childhood when there is no limit to the imagination and the hidden talent in every painter is discovered. The result was colorful and fun memories that we hope will become the first of many more.

Más tarde, hubo una pequeña exposición de arte, pero este no fue el final de nuestra jornada. Los colaboradores de la Casa Hogar se unieron a nosotros para replicar un día de plaza y comer deliciosos esquites, taquitos de canasta y sodas de frutas.

Los residentes actuales en la Casa Hogar tienen entre 7 y 16 años. Gracias a la fundación se ha formado un hogar para una gran familia de 31 residentes.

Current residents at Casa Hogar are between the ages of seven and 16. Thanks to the foundation, a home has been made for a big family of 31 residents.
