When the wind blows! Years ago a farmer owned land along the Atlantic seacoast. He constantly advertised for hired hands, however, most people were reluctant to work on farms along the Atlantic. They dreaded the awful storms that raged across the Atlantic, wreaking havoc on the buildings and crops.

As the farmer interviewed applicants for the job, he received a steady stream of refusals. Finally, a short, thin man, well past middle age, approached the farmer. ‘Are you a good farm hand?’ the farmer asked him.
Enraged by the response, the farmer was tempted to fire him on the spot. Instead, he hurried outside to prepare for the storm. To his amazement, he discovered that all of the haystacks had been covered with tarpaulins. The cows were in the barn, the chickens were in the coop and the doors were barred. The shutters were tightly secured. Everything was tied down. Nothing could blow away. The farmer then understood what his hired hand meant, so he returned to his bed to also sleep while the wind blew.
‘Well, I can sleep when the wind blows,’ answered the little man. Although puzzled by this answer, the farmer, desperate for help decided to hired him.

Benef its of sunlight Benefits of sunlight? Sunshine has been on the receiving end of quite a bit of bad press, and you may be wondering how the sun could possibly be good for your health and well-being. Report after report has warned us that even a small amount of exposure to the sun is bad for us. True, it is good to be cautious when it comes to how much sun you are exposed to. After all, too much sunlight can put you at higher risk for skin cancer and cataracts. And it can make your skin wrinkle and age way too early in life. But does being cautious mean that you should avoid the sun altogether? No! Sunlight happens to be one of the greatest healing remedies that you can find in nature. The sun provides the energy that all living things need in order to exist on this earth. Sunshine produces vitamin D Our readers know by now how vitally important Vitamin D is to our health. It is hard to find a disease or condition that is not linked to vitamin D. Sunlight is the natural way by which our body produces vitamin D. Sunshine puts us in a better mood. When you step outside and suddenly feel like smiling, odds are that the sun is smiling down on you. David Strohmetz is a psychologist at Monmouth University. As he told Psychology Today, “Nice days put us in a good mood, which engenders helping and generosity. When we’re in a good mood, we want to maintain that mood.” This even makes us better tippers. Sunshine helps you heal. A 2007 study found that not getting enough direct sunlight could increase our chances of cancer by at least 70%. However, sitting in too much sun without protection can cause skin cancer. Happy mediums for all!

Delicious Onion Rolls 3 T olive oil 3 medium onions, finely chopped 1/4 cup plus 1 tsp. sugar 2 tsp. kosher salt 2 0.25-ounce packages active dry yeast 2 large eggs 6 T (3/4 stick) unsalted butter* / margarine, melted, plus more, at room temperature, to grease the pan 6 cups all-purpose flour, spooned and leveled, plus more for shaping the dough
Directions: Heat 2 tablespoons of the oil in a large skillet over medium-high heat. Add the onions, 1 teaspoon of the sugar, and ½ teaspoon salt and cook, stirring occasionally, until golden brown, 15 to 18 minutes.

Heat oven to 400° F. Remove the plastic wrap and brush the dough with the remaining 2 tablespoons of butter. Bake until the rolls are golden, 18 to 22 minutes (tent with foil if the tops brown too quickly). Cool in the pan for 5 minutes before serving.
Note: This recipe freezes very well. *If you are using the butter, ask your Rav about ensuring that the rolls are clearly identified as milchigs.

Pour 2 cups of warm tap water (105° to 115° F) in a large bowl; sprinkle with the yeast and let stand until foamy, 4 to 5 minutes. Whisk in the eggs, 4 tablespoons of the butter, the remaining ¼ cup of sugar, and 1 teaspoon salt. Add the flour and threequarters of the onions and mix until a sticky dough forms. Brush the top of the dough with the remaining tablespoon of oil. Cover the bowl with plastic wrap and let rise in a warm place until doubled in bulk, about 1 hour.
Butter a 9-by-13-inch baking pan. Punch the dough down. With well-floured hands, form the dough into 16 balls and place in the prepared pan, spacing evenly. Sprinkle with the remaining quarter of the onions. Cover the pan loosely with plastic wrap and let rise in a warm place until doubled in bulk, 30 to 40 minutes.
