The Overlooked Role of Probiotics in Human Health

We now recognize that allergic disorders, asthma, and even obesity are also related to an unhealthy population of intestinal bacteria. Due to modern diets and lifestyle, as well as environmental factors such as pollution and the irresponsible overuse of antibiotics, the beneficial bacteria in your microbiome is at risk which can lead to an increased incidence in metabolic and inflammatory chronic diseases. Even simple aging gradually shifts your intestinal bacterial population towards a disease-promoting, rather than a diseasepreventing, state. Deli Rolls Mouthwatering sandwiches featuring roast turkey, smoked turkey, pastrami and mashed potatoes, rolled up and baked in one flaky puff pastry. Perfect for your Purim Seudah, this recipe is a guaranteed success! Ingredients • 1 egg yolk • 1 cup plus 1 tbsp water • 2 tbsp vegetable oil • 1 small onion, chopped (about 1/4 cup) • 1/4 tsp salt • 1 tbsp margarine • 1/3 cup soy milk • 1 cup instant mashed potato flakes • All-purpose flour • 1 package Puff Pastry Sheets, thawed • 6 tbsp Dijon-style or honey mustard • 1/2 lb deli smoked turkey, thinly sliced • 1/2 lb turkey breast, thinly sliced • 1/2 lb pastrami, thinly sliced • Poppy seeds Directions: 1. Heat the oven to 400°F. 2. Beat the egg yolk and 1 tablespoon water in a small bowl with a fork. 3. Heat the oil in a 2-quart saucepan over medium heat. Add the onion and cook until tender, stirring occasionally. 4. Stir in the remaining water, the salt and margarine and bring to a boil. 5. Remove the saucepan from the heat.

Stir in the soy milk. Slowly stir in the potato flakes. Let the potato mixture cool to room temperature. 6. Sprinkle the work surface with the flour. Unfold 1 pastry sheet on the work surface. Roll the pastry sheet into a 16 x 12-inch rectangle. Repeat with the remaining pastry sheet. 7. With the short side of 1 pastry sheet facing you, spread half the mustard on the bottom half of the pastry to within 1-inch of the edge. Spoon half the potato mixture across the middle of the pastry to within 1/2 inch of the sides. Layer half the smoked turkey, roast turkey and pastrami on the bottom half of the pastry. Starting from the top half of the pastry, roll up like a jelly roll. Place seam-side down onto a baking sheet. Tuck the ends under to seal. 8. Brush the pastry with the egg mixture. Sprinkle with the poppy seeds. Repeat with remaining pastry. 9. Bake for 25 minutes or until the pastries are golden brown. 10. Let the pastries cool on the baking sheets on wire racks for 10 minutes.
