THE BRICK Moshe was a confident, successful young man who had made it as a successful businessman and respected member of the community. One day, on an out-of-town business trip, he found himself driving down the street in an unfamiliar neighborhood. He was going a bit too fast in the sleek new car he had recently bought himself. He was watching for kids darting out from between parked cars and slowed down when he thought he saw something. As his car passed, no child darted out, but a brick sailed out and - WHUMP! - it smashed into the shiny side door of his pricey new vehicle! SCREECH..!!!! Brakes slammed! Gears ground into reverse, and tires madly spun his car back to the spot from where the brick had been thrown. Moshe jumped out of the car, grabbed the kid and pushed him up against a parked car. He shouted at the kid, “What was that all about and who are you? Just what in the world are you doing?!” Building up a head of steam, he went on. “That’s my new car, that brick you threw is gonna cost you a lot of money. Why did you throw it?” “Please, mister, please. . . I’m sorry! I didn’t know what else to do!” Pleaded the

youngster. “I threw the brick because no one else would stop!” Tears were dripping down the boy’s chin as he pointed around the parked car. “It’s my brother, mister,” he said. “He rolled off the curb and fell out of his wheelchair and I can’t lift him up.” Sobbing, the boy asked Moshe, “Would you please help me get him back into his wheelchair? He’s hurt and he’s too heavy for me.” Moved beyond words, the young businessman tried desperately to swallow the rapidly swelling lump in his throat. Straining, he lifted the young man back into the wheelchair and took out his handkerchief and wiped the scrapes and cuts, checking to see that everything was going to be OK. He then watched the younger brother push him down the sidewalk toward their home. It was a long walk back to his expensive new car, a long and slow walk. Josh never did fix the side door of his vehicle. He kept the dent to remind him not to go through life so fast that someone has to throw a brick at him to get his attention. . . The Fiber Trap One of the most frequently dispensed pieces of advice for those seeking to improve their diets is, ‘eat more fiber.’ While the studies are clear that diets higher in fiber are healthier than those on the lower end, just eating foods with more fiber may be a trap . Often the recommendation for raising fiber in your diet is paired with an additional recommendation to eat more whole grainsand lots of it. This may turn out to be bad for people who are trying to lose weight or manage their diabetes. It’s true that fiber does make you full without adding calories and it also slows the digestion of carbohydrates, which is good. However, by adding lots of carbohydrates to our diet even in the form of whole grain, our blood sugar still gets affected and may cause weight gain and high blood sugar. Initially, some people will see a benefit of switching to whole grain from white flour, and that is because obviously whole grain when compared to refined carbs is surely healthier. But just eating ten slices of whole wheat bread in an attempt to get more fiber into the diet is a bad strategy. A better, more sensible way to consume more fiber is by eating lots of vegetables. These fiber-filled foods have very little in the way of carbs and are packed with vitamins, minerals and phytonutrients. If you are eating whole grains, there are a few things to take into account. Not all whole grains are equal in their benefits derived from the fiber content. For one, even if it is whole grain, the difference in impact is quite significant depending on whether the grain is still whole or has been ground into flour. For instance, with wheat, if you cook up the grain itself, then it will have much a milder impact on your blood sugar than if you grind it into

flour, even whole wheat flour. It also makes a difference whether it’s plain whole wheat flour or stone ground whole wheat, with the latter being better. Another important fact is that some grains like oats and barley, especially whole hull-less barley, have more soluble fiber. Soluble fiber makes the digestion of the carbs even slower, thus reducing its glycemic index, and also controls appetite, making you fuller faster. Another way to add more fiber without going overboard on the carbs is beans. Beans have fewer carbohydrates, more protein and more of the soluble kind of fiber. All of this makes it a much better candidate when it comes to controlling blood glucose levels.

Chicken Fingers on a Stick Breaded chicken is a good bet for finicky eaters, and this variation, grilled and served on a skewer, makes it even more appealing to kids. Add your child's favorite dipping sauce, and there might not be any left for the adults! Ingredients: 4 boneless, skinless chicken breast halves, pounded 1/2 to 3/4 inch thick Salt and pepper 24 (10-inch) bamboo skewers, soaked in water for 30 minutes 3 tablespoons vegetable oil 2 tablespoons barbecue sauce 1 1/4 cups plain dried bread crumbs Instructions: • Cut each chicken breast lengthwise into 1/2-inch-wide strips and sprinkle with salt and pepper. Fold the chicken strips slightly and weave them onto the skewers. • Prepare a charcoal fire or set a gas grill to medium-high, close the lid, and heat until hot -- about 10 to 15 minutes. • In a small bowl, stir together the oil and the barbecue sauce. Spread the bread crumbs on a sheet of waxed paper. Lightly brush the sauce mixture over the chicken strips and then roll them in the bread crumbs. • Grill the chicken fingers uncovered until they're no longer pink inside, about 2 to 4 minutes per side on a gas grill. • Serve with the dipping sauce of your choice. Serves 6 to 8.
