Sensitive to other’s needs Rabbi Ephraim of Pshedbarz, author of Oneg Shabbos was once travelling from Poland to Eretz Yisroel. One day, Rabbi Ephraim and his travelling companions were put up in a barn for the night. Rabbi Ephraim entered the barn and found a rooster asleep on his bed of straw. One of his companions observed that Rabbi Ephraim left the barn and returned multiple times during the next few hours
until the rooster awoke of its own accord and vacated the place. Only when Rabbi Ephraim saw the rooster leaving did he peacefully retire for whatever was left of the night. Rabbi Ephraim was extremely sensitive to the feelings of others that he even placed the comfort of a rooster above his own. Baby Red Potato Salad This salad will captivate you with its fine taste and may just have you taking involuntary seconds and thirds…. Ingredients: • 4 cups of baby red potatoes, cut in small pieces • 1/2 cup green bell pepper, finely diced • 1/4 cup red onion, finely diced • 3 scallions, diced • 1 tsp dijon mustard • 1 Tbsp extra virgin olive oil • 1 Tbsp red wine vinegar • 1 Tbsp reduced fat mayonnaise • Salt and fresh pepper to taste Directions: • Boil potatoes in salted water until soft, approx 10 minutes. Drain and let cool. • While potatoes are boiling, combine red onion, green pepper, mustard, olive oil, vinegar and mayonnaise and season with salt and pepper. • Mix well and let the flavors marinade until potatoes are cooked. • Once the potatoes are ready, let cool and mix into the bowl • Add scallions and additional salt and pepper to taste • Serve at room temperature or refrigerate until ready to serve.
