The Keepers of the Shabbos R’ Zalmen Grossman, who lived In Jerusalem, would often tell his children, “When Shabbos comes, I’m the king.” What did he mean by that? R’ Zalmen observed the Shabbos with great honor and royalty. He had the unique practice of remaining awake every Friday night, singing and learning all night long. R’ Zalmen was a poor man. He worked in the Lower East Side in Manhattan, in a tiny office furnished only with the barest necessities. Nevertheless, he was a happy man. One Friday night, R’ Zalmen was preparing to make Kiddush when he suddenly felt a sharp stab of pain in his side. He tried calling for help, but there was no one around to heed his cries. His pain was so acute that he weakly dropped the cup of wine and fell to the floor. R’ Zalmen had a friend named Nachum who had also made the journey to America in the hopes of earning the money support his family back in Jerusalem. Nachum had finished his meal on this Friday night and had gone for a walk. As he inhaled the fresh air and his thoughts traveled between topics on the parsha, his family back home, etc… his feet took him around the neighborhood of their own accord. Suddenly, he stopped, noticing that somehow, he had arrived at his friend R’ Zalman’s home. He was aware that his friend had the custom of remaining awake throughout the night on Shabbos and decided that a visit to him might be a good idea. He knocked on door but the only answer he received was silence. That
was strange, so he knocked louder. Suddenly he heard strange sounds emanating from deep within the apartment. Frightened, he ran to call the police. Officers arrived and broke into the apartment, only to find R’ Zalman sprawled on the floor, writhing in agony. R’ Zalmen was rushed to the hospital. Emergency care doctors administered prompt treatment, and after his condition stabilized, they informed Nachum that his friend needed to undergo an operation. The doctors also told him, “You are lucky you found him right then and not an hour later –you saved his life!” Because of his unusual dedication to honor the Shabbos, Hashem saved his life. We sing Ki eshmera Shabbos keil yishmerani, - “If I keep Shabbos, Hashem will watch over me.” Indeed, R’ Zalmen kept Shabbos to the highest standard, and he merited having Hashem watch over him in an openly miraculous way.

Health Fr ying f ood, t he healt hy way One of the few things everyone involved in the health/nutritional field agrees on is that fried food is bad for your health. Generally, that’s true, but here we would like to bring you a few pointers that will allow you to fry your food while avoiding much of the harmful side effects.
Lipid peroxidation
When we heat up fats to a high degree, the fats can sustain damage. This process is called Lipid peroxidation, whereby a fat molecule turns into a lipid peroxide, an oxidant. This fat molecule becomes unstable, and when we ingest it, it does damage to our cells. The damage will occur unless our bodies posses enough antioxidants like vitamin E, which can stabilize the free radical.
Not all fats are equal
But these harmful effects do not occur with equal severity with all types of fat. There are three general categories of fat: 1. Polyunsaturated fats: These fats remain completely liquid in consistency even at cold temperatures; they are the omega 3 and 6 oils, and include most vegetable oils like corn and sunflower. Because of their molecular makeup, these fats become damaged faster than any other fats, and should never be used for cooking and certainly not for frying. Unfortunately these are the most common oils used. Therefore, eating fried foods from commercial sources is quite detrimental to our health. 2. Monounsaturated fats: They include olive oil and canola oil, though canola does contain less monounsaturated fat than olive oil, making it a less stable fat. These oils are fairly stable and don’t become damaged so quickly. They can be used for cooking and in general, will not become damaged. However, when we fry food, the oil tends to become hotter for longer periods of time.
Consequentially, these fats aren’t the best option for frying. 3. Saturated fats: These fats have wrongfully been vilified as one of the worst foods for our health without any credible scientific backing. We will go into more detail about saturated fats in a future article. Here, we would like to emphasize that one of the notable characteristics of saturated fat is that it is very stable and does not easily become damaged. It follows that these fats would be the most sensible option for frying. Fats that are saturated include; butter, palm oil and coconut oil. The hard palm oil is the best option for frying as coconut can be very expensive and has a strong flavor, and butter can’t be used in nondairy dishes. So when frying, use mostly saturated fats. These fats are hard even at room temperatures. Don’t overheat for long periods as even these oils will get damaged after being exposed to heat for too long. So now you can fry your food and eat it too…
