With a little bit of Simcha…. Feivish Koppelman was an ardent Chassid of the holy Chozeh of Lublin Zatzal. Every Yom Tov, Reb Feivish would arrive in Lublin in order to bask in the sublime radiance and Kedushah of the Chozeh’s court. One year, a few days before Erev Yom Tov, Reb Feivish arrived in Lublin. He waited with the masses until he was finally ushered into the Chozeh’s private room. The Chozeh looked up at him, eyes shining, “Reb Feivish, return home, you do not belong here anymore!” Reb Feivish was deeply shocked, he opened his mouth to answer yet the Chozeh motioned he should leave the room. The next day saw Reb Feivish again standing in wait for an audience with the Chozeh. As soon as Reb Feivish entered the room, the Chozeh exclaimed, “Did I not tell you to go home yesterday? Please return home.” Reb Feivish slumped and deeply rejected he headed back in the direction of his hometown. Soon into his journey, Reb Feivish stopped at a wayside inn in order to spend

the night there. Upon entering, he encountered a large group of chassidim who were on their way to the Chozeh. After drinking Lchaim with each other, the Chassidim sprung into a lively fiery dance drawing in the disheartened Chassid. They sang and danced with such gusto and life that soon Reb Feivish’s gloom turned into immense happiness. With much spirit, they finally ended their dance and asked Reb Feivish to return to Lublin in their company. Reb Feivish alternated and then decided, one more try. He journeyed with them and approached the Chozeh once more. The Chozeh embraced him warmly and smilingly related, “When you came here the first time, I saw that in Shamayim that it was decreed that you were to die shortly. I thus ordered you to return home as I did not want you to die here on Yom Tov. However, your Simcha changed your decree!” Reb Feivish merited living to a ripe old age replete with health and nachas. Life can be overwhelming, situations can seem bleak, it just takes a little bit of Simcha and the picture is turned around…!

Seven Myths About Low Carb Diets
There are a lot of myths and misconceptions about low-carb diets. Antilow carb information often draws an image of people eating very unhealthy diets, with no vegetables or fruits. The truth is that low-carb diets focus on nutritious, healthy food, and research into reducing carbs continues to show more and more positive results. Here are the most common myths about low-carb diets. 1. Low Carb = No Carb This misconception is the idea that a “low”-carb diet eliminates all carbs. Fact: Not one low-carb diet author advocates this. Even Atkins Induction, which is very low in carbohydrates, is not “no carb,” is only meant to last two weeks, and actually can be skipped altogether. 2. Low-Carb Diets Discourage Eating Vegetables and Fruits Because vegetables and fruits are mainly carbohydrate, people believe that they are not allowed on low-carb diets. Fact: The opposite is true –- non-starchy vegetables are usually at the bottom of the low carb pyramids meaning they are the “staff of life” of the diet (replacing grains in that role) and people who follow a lowcarb way of eating, almost always eat more vegetables than the general population. For the most part, vegetables and fruits ARE the carbs eaten when following a low-carb way of eating. 3. Low-Carb Diets Have Inadequate Fiber The reasoning goes that since fiber IS carbohydrate, a low-carb diet MUST be low in fiber. Fact: Since fiber remains undigested (in fact, it lessens the impact of other carbohydrates on blood sugar), it is encouraged on low-carb diets. Lots of low-

carb foods are high in fiber, and on diets that encourage carb counting, fiber does not enter into the calculation. 4. People Eating Low Carb Are Courting Heart Disease Fact: In study after study, blood pressure, cholesterol, triglycerides, and other markers for heart disease risk decline on low-carb diets. Also, in one large long term study, even low-carb diets with a lot of animal fat and protein did not raise the risk of heart disease. 5. Low-Carb Diets Will Damage the Kidneys The reasoning here is that because people with kidney disease are usually encouraged to eat LOW protein diets, a diet that is higher in protein will CAUSE kidney disease. Fact: This has never been shown to be the case, and, in fact, a low-carb diet will protect the kidneys from the damage that is done by high blood sugar levels. 6. Low-Carb Diets Will “Suck the Calcium Out of Your Bones” This is based on the idea that low-carb diets are acidic because they are high in protien. Fact: it turns out that if one does not consume vegetables, grains can be just as acidic, and as mentioned before, vegetables, are a main part of any low carb diet. 7. Atkins “Died of His Own Diet” Fact: Robert Atkins, originator of the Atkins Diet, died from head injuries resulting from a fall. Also, he was not fat when he died, but took on a lot of fluid in the hospital while in intensive care after his injury.

Butter Pecan Crust Has it ever occurred that you have that desperate longing for a hot pie but not the roaring energy to make one? This trusty warm apple pie pot can be whipped up in no time at all. This is a delicious and satisfying dessert to have on hand, proven to add that finishing splendor to your Shabbos meal! Ingredients: 2 cups raw pecans 1 tbsp margarine/butter ½ tsp salt Directions: Preheat oven to 375F. Line a cookie sheet with foil. In a medium pot melt the margarine/butter. Turn off heat and add the pecans. Toss to coat. Pour buttered pecans onto the foil and sprinkle with salt. Bake for 15-18 minutes. **Keep an eye on them so they do not turn too dark. Remove from oven and allow to cool completely. Place cooled pecans into a food processor and process until a course, crumbly meal forms. Pour into a bowl and set aside. Apple Pie Filling Ingredients: 8 cups chopped apples, peeled and cored 2 tbsp margarine/butter 1/4 cup honey 1/4 cup almond flour 1 tbsp ground cinnamon 1 tsp ground nutmeg

Directions: Melt the butter/ margarine in the same pot you used for the pecans over medium heat. Add apples, honey and spices. Cook on medium/low heat for about 20-30 minutes until the apples are very tender. Turn off the heat and add the almond flour. Stir well to incorporate. (NOTE: This helps thicken up the filling) To Serve (serves 6) You will need 6 jars. You can use any jar you like but keep in mind that you may need to eyeball how much of each layer you use depending on the size of your jars. Place several spoonful’s of the pecan crust in the bottom of each jar. Follow with a generous amount of the apple filling. Top with your favorite lightly sweetened whipped topping. Garnish with freshly grated nutmeg and/or cinnamon and an apple chip and most importantly, enjoy!

The Himalayan jumping spider is pretty creepy looking. It has four eyes on the front of its head and its eight legs are covered in spots of white and black hair alternating in color. The spider is small and obvious to its name; it lives in the Himalayan mountains. It has been found at altitudes of 6,700 meters above sea level. The only source of food for the Himalayan jumping spider at those extreme heights is stray insects that are blown up the mountainside by the wind. It is possible that the Himalayan jumping spider is the highest known permanent resident on Earth. They lurk in crevices among rock debris, which gives them good camouflage with the color of their hair. The insects that they eat consume plant material and I’m sure they don’t enjoy the journey up the mountainside to meet their doom with the four eyed Himalayan jumping spider.
