A Novel Method of Accounting Traditionally, as the month of Elul begins and the high holidays approach, Jews around the world review their deeds of the past year, the good and the bad, make an accounting of everything they have done, and repent. There are many ways to accomplish this task, but there is something we can all learn from Moshe the innkeeper who did so in an unusual and very inspiring way. One year, the Ba’al Shem Tov was approached by his talmidim, who asked for their Rebbe’s advice in repenting before the approach of the new year. The Ba’al Shem Tov instructed them to visit a certain innkeeper named Moshe and unobtrusively observe his actions. His talmidim rented a room at Moshe’s inn and waited to see what the Ba’al Shem Tov had meant. It was midnight before Rosh Hashana that they got the answer to their question. The sky was already dark and most people were asleep when they heard someone moving around in the main room. They peeked through a crack in the doorway and watched as Moshe the innkeeper took down two large notebooks from the shelf. He sat down at the table, lit a candle, and began reading aloud from one notebook. As he read, it became clear to the talmidim that this was no ordinary notebook. It was a diary in which the innkeeper had recorded all the sins he had committed over the past year. His sins were not of the startlingly grievous variety; one day, he had spoken a word of lashon hara; on another, he had overslept and missed the time for shacharis; on a third day, he had forgotten to give money for tzeddakah. Nevertheless, only several pages into the diary, Moshe was crying like a baby. For over an hour, Moshe read and wept, read and wept, until he came to the last page. Then, the innkeeper reached for the second book, a diary as well. But in this one, he had recorded all the troubles and misfortunes that had befallen him over the past year. One day, as Moshe was walking through the streets, he was attacked by a gang of peasants; on another day, his child became ill;

on another occasion, he could not procure enough firewood, and his family slept in the freezing cold through several winter nights. There was also the day their cow died, and the children went without milk until they could save up enough to buy another one. When he finished reading the second notebook, Moshe looked up to the heavens and said: “So you see, dear Father in heaven, I have sinned against You. Last year, I repented and promised to fulfill your commandments, but I repeatedly succumbed to my evil inclination. But last year I also prayed and begged You for a year of health and prosperity, and I trusted in You that it would indeed be this way. “Dear Father, tomorrow is Rosh Hashana, when everyone forgives and is forgiven. Let us put the past behind us. I didn’t always do what was asked of me and You didn’t always do what was asked of You. I forgive You and You forgive me, and we’ll call it even.”

First of all, raw honey has not been heated excessively through pasteurization. The only way to get that perfectly clear look of most commercial honeys is to heat it and then filter it excessively. The problem with heat is that many nutrients are very sensitive to it and die. You may get strange looks when you tell people your raw honey is ‘alive’, but you’re absolutely correct to a certain extent.
When selecting a raw honey for you and your family, make sure the word “raw” is on the label. Or “un-pasteurized.” 100% Canadian is reassuring as well (or at least know which country the honey is coming from). It is extremely rare to hear of raw honey being blended with cheaper off shore honey so if you stick to raw, you should be safe!
It’s the beneficial enzymes found in raw honey that make it so digestible to humans. Raw honey is filtered, but very minimally and in a manor not to destroy the health promoting enzymes and other nutrients. You’ll also notice raw honey is solid at room temperature (like honey should be) and it also looks almost milky. It is not a golden and perfectly clear liquid. Penguins are pretty awesome, so it shouldn’t be a big surprise that they are capable of drinking and ingesting salt water right? Well, that’s 2/3 right; yes penguins are awesome, yes they are capable of drinking salt water, but no, they can’t ingest salt water. They are able to drink salt water because their supraorbital gland filters excess salt from the blood stream, which is then secreted in a concentrated fluid from the nasal passages. This mechanism was designed to allow penguins to live in the coldest places, like the North and South Pole; both of which are completely surrounded by salt water and usually freeze any fresh water they come into contact with.

This is a bit of a patchke but not much, and presents very elegantly as a side dish with the main course of any Yom Tov meal. First Layer: 1 ½ cups flour 1 Tbs. sugar ½ tsp. salt ½ cup oil 2 tbs. water Instructions: Mix all of the above ingredients and divide into two 9-inch round baking pans. Bake on 350 degrees for 15-20 minutes. Second Layer: 3 sweet potatoes 1 tsp. honey ½ cup sugar 3 eggs 3 tsp. mayonnaise ½ tsp. vanilla extract Instructions: Cook the sweet potatoes and mash them in a separate bowl. Mix the rest of the ingredients separately. Combine with potatoes and blend. Pour half into each of the round pans over first layer. Topping: 1 cup flour ½ cup brown sugar 1 stick margarine Instructions: Mix all of the above ingredients until crumbly. Layer crumbs on top of 2 sweet potatoes. Bake on 350 degrees for 1 hour.
