he Day of Andalucía (Día de Andalucía), also known as Andalucía Day, marks the anniversary of a referendum held on February 28, 1980. A large majority of voters supported this referendum for Andalucía to become an autonomous community in Spain. Is Day of Andalucía a Public Holiday? Day of Andalucía is a public holiday in Andalusia, where it is a day off for the general population, and schools and most businesses are closed. What Do People Do? Many people spend the day quietly with family or close friends. However, some people organize or attend private parties with traditional music, dancing, food and drink. Some municipalities hold communal meals with traditional foods, drinks and entertainment. Local politicians may present people

with certificates or medals for service to the community. Public Life The Day of Andalucía is a public holiday in the autonomous community of Andalucía on February 28. Public life is generally quiet and many businesses and other organizations are closed. Many stores are closed but some bakers and food stores may be open. Public transport services generally run to a reduced schedule but there may be no services in rural areas. If February 28 falls on a Sunday, regional or local authorities may move the public holiday to a different date. If February 28 falls on a Tuesday or Thursday, many businesses and organizations are also closed on Monday, February 27, or Friday, February 29 or March 1. The Day of Andalucía is not a public holiday in the rest of Spain on February 28.

Background The autonomous community of Andalucía shares international land borders with Portugal and Gibraltar. Within Spain, it borders the autonomous communities of Castile-La Mancha, Extremadura and Murcia. People in Andalucía voted for the region to become an autonomous community of Spain on February 28, 1980. However, the Spanish Parliament only accepted Andalucía as an historic nationality in 2006. Symbols Andalucía's flag is widely displayed on the Day of Andalucía. It consists of three equal horizontal bars. The top and lower bars are dark green and the middle bar is white. Andalucía's coat of arms is at the center of the flag. Andalucía's coat of arms consists of an image of the mythical Greek hero Heracles between two columns. The columns represent the Pillars of Heracles. These are the rocks on either side of the Straits of Gibraltar.

NERJA CARNIVAL 2020 Thursday 27th February

T

he Carnival is a wellestablished tradition in Nerja which gathers more interest and momentum year on year as participants and visitors work on costumes and floats with ever more imagination. The Carnival takes place over a four day period (three days and an evening at least) in the week just before the start of Lent. The city is festooned in light, colour and imagination during carnival. Magic inundates the town streets which is transformed to enjoy this festival in a unique way. During carnival, Nerja draws visitors from around the entire province of Malaga. People from Frigiliana, VélezMálaga, Torrox and tourists come expressly for the occasion, so as not to miss the festivities. For four days there are numerous activities for children, for seniors and for all the family. The street parades, the Great Carnival Parade and the Burial of the Chanquete, huge

colourful spectacles, are just some examples of this.

The general idea of this fiesta is that of a big party prior to fasting until Easter. Although the weather for this February fiesta may not a be in the fabulous Andalusia sunshine this is no reason to give the Carnival amiss. It is one of the best occasions to take some pictures of the town and the locals. The locals go to incredible the lengths in order to win the contests for best outfit or best float. The days are filled with laughs and colour where people let their imaginations run wild, perfecting their costumes and fine-tuning their chirigotas (humorous musical groups) which they will later enter into the competition, attended by all those interested. The crowing of the "Momo King" and the "Carnival Nymphs" in three categories (children,

adolescents, adults) provides notto-be missed entertainment every year for Nerja residents. The Carnival includes two processions and a number of contests with the four days building up to the final event of the ‘Entierro del Bogueron’ or Burial of the Anchovy (although it’s often referred to as the burial of the Sardine). This is a somewhat bizarre tradition but one that seems to be really rather old and is seen throughout Spain. In Nerja a large decorated (fake) Anchovy is paraded through the streets with all manner of pageantry until it reaches one of the towns central beaches, La Calahonda, where it’s blown up as part of a fireworks display! The Nerja Carnival 2020 will begin on Thursday 27th February and continue until Sunday the 1st March.

E.G.O. HAIR AND BEAUTY Meet the Team

L

ast month Andy the owner of E.G.O. Hair and Beauty invited me to his salon to have a chat and meet his new colleagues. E.G.O is just off the main Plaza Almijara shown as map spot 9 on the Competa map on page 53. It had been a while since I had been in the salon and what immediately struck me was how different the place felt. The lightening, soft furnishings even the smell was different, definitely a women’s touch had uplifted the place! Andy introduced me to his team, Katie and Jan and on talking with them further, it all began to make sense. Andy is a great hairdresser but he needed some

help in organising the business and the Salon. In June of this year Jan started working at E.G.O and this has made a huge difference not only to Andy but to the business as a whole. Jan has made some subtle differences to the place that makes the Salon inviting, warm and attractive. Jan is also a hair stylist. When she first came to Spain, she had her own studio opposite the primary school in Competa but due to the working hours she decided to go mobile to allow more flexibility in her time while her daughter was young. Many years later her daughter now has her own child, so Jan has returned to hairdressing within a salon. She brings with her a client base from her mobile years but is hoping to

build on that even further. She works at the salon Monday to Friday and Saturday is by appointment only and she takes all the calls and books all the appointments for the Salon. She is efficient and organised and very welcoming when you arrive offering you tea or coffee and a chat! She clearly enjoys her work and meeting people. Together Jan and Andy have researched a new line of hair and beauty products that are now on order and they await with excitement to use them in the Salon. These new products are totally natural and organic and will be on sale too. Jan and Andy totally believe in natural and organic products and also they

One of the pleasures of cycling in the Axarquia is the abundance of superb food and drink available to fuel your riding. In our opinion, from the produce of the sea, to the fruits of the mountains, the quality and value in this region is amongst the best in Europe. Eating out is important to Spaniards. Consequently, the range of establishments is large and varied. For cyclists in the Axarquia this is good news as the rugged nature of the terrain stimulates your need for additional calories. Whilst there are many restaurants in the larger towns and on the coast most villages also have café's and bars that offer simple breakfasts, sandwiches, tapas and menu del dias. Village bars are often conveniently located for cyclists. They are a great way to not only refuel but observe the steady pace of daily life of the village inhabitants. Usually the food is

simple, tasty and cheap. Moreover, it arrives quickly so you can continue your ride without too much disruption. Many cyclists commence their rides having eaten breakfast at home or in their accommodation. However, if you do need further sustenance or have chosen not to eat before setting off then a brilliant option is Pitufo con tomate y aceite, (toast with tomato and olive oil). The word Pitufo literally translates in Spanish to “smurf”. In the Province of Malaga it describes a small roll. The dish consists of a roll, toasted and served with crushed tomato with a hint of garlic. Olive oil is drizzled on the toast and salt can be sprinkled on as an addition. The combination is irresistible and combined with a coffee can create an extra pep in your legs. Bocadillos with a variety of fillings are often available for breakfast or lunch. These are long filled rolls sometimes toasted.

I, on the other hand, would not be seen in the same frock, and if I couldn’t find one second hand, or a charity donation to fit or suit me, I would buy a huge skirted dress and remake one for me! I have heard that the West of Malaga on the costas is good for charity shops if you want 'posh' clothes and designer handbags!

work in a couple of charity shops, one is for furniture and the other clothes. In the Cudeca furniture shop a couple of year ago some of the items donated were really bad, wood worm, dirty or just dropping to bits. Then we hit on the idea of asking the public to send a picture of the item they wanted us to collect for the shop and the quality leapt up 100%. This is to ask you that when you do donate to a charity, look at the item objectively and think, would I want this, or has it had its day? Unfortunately, this cant be done in a shop with clothing. Yes, have a Spring clean and hook out the clothes that are too small or too large, don’t suit you any-more, or even never suited you in the first place! 'Its just that the sales were on and it seemed like a good idea at the time!' If the moth has got in, shrunk in the wash, elasticity gone or the colour has faded out of all recognition, put it in the clothing

If you get something for a few euros that you like and then find it suits you, alls well and good, if not, re donate it! Some of our customers come in on a regular basis. One lady came from the UK on one of our wet weeks and spent ages choosing clothes for her daughter, photographing them and sending them to her, and when she got the say so, bought them and had excess baggage and then came again on another holiday 4 weeks later for a second go of bargains! Personally I have used second hand shops and charity shops since the 80s. Needing 'posh frocks' for works occasions along with my husband. He was OK

Anyway back to the donations. Every type of charity shop welcomes clean clothing, books, shoes and ornaments, and all appreciate your efforts, but stains that cant be removed, are a No No, likewise shoes that need repairing. Broken electrical products, or jigsaws with bits missing. Empty DVD and CD cases, and books with broken spines and loose pages, turning brown to mention some. Old books can go into the cardboard recycle, shoes and clothes in the ropa bin, plastic in the plastic bin. And on that subject, why do people not break down brown cardboard boxes, but leave them by the side of the cardboard bin? Why do folks leave bottles on the outside of the bottle bank when its empty, its just as easy to put them in. Just because its an area to put our rubbish, there is no need to make it a 'rubbish tip'! I worry about broken glass around the area, and I do feel sorry for the rubbish collectors sometimes in the Summer when its piled high and smelly. If only some thought can go into depositing our rubbish, the car park would be a prettier place! I will get off my soapbox now and say that it is quite fun working in a charity shop, do try it! WHY SWIMMING IS THE PERFECT EXERCISE FOR SENIORS

Some Excersise To Get You Moving in Water

T

here are a many reasons why swimming and waterbased exercise may be the best choice for seniors. Water based exercises are second only to walking in lowest rates for injuries. They are commonly used for physical therapy modes for those recovering from major surgery. Water also provides more options for those who are lacking in general fitness or have a prior injury that makes land based activity difficult. Finally, water based activities work the entire body, serving as a form of both strength training even as aerobic training takes place.

Swimming utilizes nearly all major muscle groups simultaneously, imparting a total body work out. Because of the inherent resistance of the water, swimming develops both muscle strength and endurance, as well as helps flexibility.

Because of its horde of effects, swimming provides almost all of the aerobic benefits of running even as it yields many of the benefits of resistance training thrown in. Because swimming does not put the strain on connective tissues that running, aerobics and some weighttraining regimens do, swimming is the kind of low-impact work out that is perfect for seniors seeking to regain or maintain their fitness. This is a sport especially gentle to those who are physically challenged. The buoyancy factor of water makes swimming the most injury-free exercise available. So it is specifically interesting to seniors, especially those with any type of joint issues. In water, a person’s body weight is reduced by 90% as compared to its weight on land. For example, a 220 pound man will weigh about 22 pounds if he is standing in chin deep water. Exercises in water can also be done more often because of the

low incidence of injuries and it is more effective for exercising the entire body as any movement in water 12 times greater resistance than movement in air. For the elderly, water fitness is safe, fills the need for exercise, increases a body’s range of motion and is a low-impact exercise. We suggest giving the following exercises a try, but keep these safety tips in mind: be aware of your limits, never do water aerobics alone (it’s not as fun, anyway), and speak with your doctor about how your medications and overall fitness mesh with water aerobics. 1. Aqua Jogging Aqua jogging is the perfect aerobic, low-impact exercise to get the heart pumping and blood flowing throughout the body. Aqua jogging can be as simple as jogging through the water from one side of the pool to the other.

This exercise can also be simplified to walking back and forth in the pool or jogging or marching in place. Aqua jogging is designed to get the heart rate up and keep it up, so whichever modification you choose, be sure it’s at least a little challenging. 2. Flutter Kicking Flutter kicking is another great low-impact cardio exercise. This exercise can be performed with or without a kickboard. With a kickboard, hold it out in front of you and flutter kick your legs to propel you back and forth across the pool. You can also flutter kick without a kickboard if one is not available. Perform a front float with your head above water while holding onto the side of the pool and flutter kick your legs. Whichever way you do it, kick at a steady tempo that doesn’t tire you too quickly but also gets the heart pumping.

3. Leg Lifts Using the resistance of the water, leg lifts work all of the muscles in the legs. For this exercise, stand in the pool and lift one leg out to the side and back down. Repeat until your leg feels tired, then switch legs and perform the exercise on the other leg. Not only does this exercise work the legs, it also improves balance and strengthens your core. 4. Standing Water Push-ups Water push-ups are a great way to build arm, chest, and shoulder strength without putting too much pressure on the joints. Stand along the side of the pool and place your hands a little wider than shoulder-width apart on the gutter or edge of the pool. Bend your arms and lean in toward the wall, then push yourself back out. Repeat this exercise slowly and until your arms feel tired. Be careful not to push it too hard until you know your limits.

5. Arm Curls For this exercise, stand in the middle of the pool with water weights. Water weights don’t have to be used, but they do offer extra resistance. Hold the weights in front of you, arms in front with palms facing out. Curl the weights up then back down and repeat until fatigue. This exercise can also be done with palms facing toward you instead of away with the same curling motion. Exercising may not be at the top of your to-do list because of achy joints, arthritis and other health problems that develop with age. However, water aerobic exercises offer a great alternative to traditional exercise at a gym. Perform the above exercises at least three times a week to experience greater flexibility, bone density, and cardiovascular function–plus relief from joint and arthritis pain!

COMPETA SOLAR An Interview With Malcolm Butcher

C

รณmpeta Solar have advertised in The Grapevine for a few months now but who are they and what exactly do they do. Malcolm Butcher is the owner of the business and perhaps is better known for his company House Martins which he and his partner Christine ran successfully for 13 years.

A second company he started about the same time called H M Heating installing Solar Hot Water and Heat Pumps for pool heating. Malcolm bought a villa in the Cรณmpeta countryside as a holiday home and a redundancy led to the idea to move to the area permanently in around 2001 when a job was offered to him. This opportunity didn't work out which led to his return to the UK to find work and where he met his partner Christine. They later decided to try the move again together and set up the House Martins villa management and

cleaning business. Malcolm is from a technical background originally working for the MOD in Electronics. When he left there he worked as a service engineer becoming to a senior engineer and finally as an area manager. He has always fixed things, he is technically minded and, in his words, can be a bit of a geek! Once in Spain with House Martins running well, he had an interest in solar heating and pumps. He worked as an installer for a local company on the side but where he really gained his professionalism and knowledge was from personal experience. Malcolm decided to buy another property an old Finca in Cรณmpeta which had no electric connection, it was totally off grid much to Christine's dismay! They were offered a long-term rental on their other villa and Malcolm agreed to this and moved into the Finca with no electric, no flooring and leaking roofs! Luckily for Christine she was going back to the UK for

a couple of weeks! Whilst Christine was away Malcolm set upon the task of rigging up the Finca with a small solar system by putting panels on the Finca roof. In order to connect the Finca to the grid it would have cost over 20,000 euros as he was told the nearby transformer had no further capacity. Malcolm made the decision that he would not only transform and modernise the Finca but create a totally off grid system. The Finca now has 30 solar panels and he never has problems with electric supply. The Finca runs 2 washing machines, a big America fridge freezer, 4 aircon units, Solar Hot Water underfloor heating using a heat pump to heat the hot water. The Finca is about as modern as it gets, with the supply of electricity to every modern-day appliance you can think of and with room for more capacity as technology changes, he believes he has made it future proof. It really is a show case of what can be done off grid and gives Malcolm total credibility of what he can do and

extreme, many people are still connected to the grid and use their own solar power and the grid can make up any difference in electricity needs. This is what he implemented in his rental Villa using Kostal solar equipment so has experience in both levels of solar power systems. Christine decided to retire from House Martins and Malcolm wanted to continue with Solar Power further which was made more exciting by new changes in the law. After a tricky situation with Endessa over the years, as the company weren't keen on people making their own electricity for obvious reasons! It is now possible to both borrow and push back electricity to the grid and gain a credit. This is not paid out in actual monetary terms as it is in the UK but works as a credit against any electricity you may need to borrow, for example at night from the grid. Malcolm showed me an App he can set up for people after he has installed a solar power system. It shows

what electricity you are making and what you are using and allows him to remotely check the system. This may be a bit technical for many people but I found it interesting! Malcolm is accredited by Victron Energy as a certified installer he chose Victron Energy as its used to power energy on large ships and as they are out at sea this shows how robust the system must be. Malcolm provides consultations and installations of solar electric, solar hot water, solar pool heating and heat pumps. He will visit your home and advise the best place for solar panels this may be on a Villa or house, the roof of the garden building where ever it may be best to gain the maximum capacity of power. He will ask what they hope to gain, what their electric usage is like and will advise on the costs and type of installation needed whilst bearing in mind future electricity needs. Many people ask is the cost of

solar power installation going down and he honestly answers the price per panels have remained approximately the same over the years but the output from the panels has gone from 260 to 370 watts so you now get more wattage for the price. Another question when will “I get a return on my money? “and Malcolm again answers it does depend on the usage but he believes around 5 or 6 years. Malcolm is accredited, knowledgeable, professional, experienced and lives Solar Power first hand. phrodisiac foods are said to increase your flavor for lust, desire and love. And this list is all you need to get things going this Valentine’s Day: 1. Chocolate we all know chocolate is delicious. But did you know that it’s believed to be an aphrodisiac? It’s been said that certain compounds in cacao can have an aphrodisiac effect. It’s said to be great for upping your energy levels. 5. Watermelon Back in 2008, researchers at Texas A&M University found that watermelon could cause Viagralike effects. The fruit is known to relax blood vessels and increase circulation. So, if you’ve got a craving for watermelon this Valentine’s Day, you should probably go for it!

6. Artichokes Artichokes may not sound like the most appetizing food to some people, but they’re actually delicious! Not only are they great to eat, but they’re packed with vitamins that are essential for blood flow. VALENTINES COCKTAILS Mix Your Drinks This Valentines Day Romance Cocktail Romance is a candy ‘tini with Kahlua, Baileys, Creme de Cacao and cream. Garnish it with shaved chocolate and pay attention to presentation, and this one gets a big “wow!” The Romance Cocktail is all about coffee, chocolate and cream flavors. It’s sinfully rich and sweet. You could certainly describe it as a dessert drink or even a candy drink – a sort of mocha milk chocolate truffle in a glass. Tis drink is all liqueurs, except for the ounce of cream, but it’s not a particularly strong drink because the liqueur proofs and the overall volume of alcohol are both low. The dominant note is mocha – chocolate with strong hints of coffee. The Irish cream adds a sweet caramel flavor, which is stronger if you use Carolan’s rather than Baileys. Tia Maria gives it more of an espresso

flavor while Kahlua tastes more like bold coffee. You can choose whatever you like, since it’s impossible to mess up this cocktail. As sweet as this drink it, it goes very well with a slice of cheesecake or pound cake with no toppings. In my opinion, it doesn’t work well alongside salty or savory foods. But it is terrific as a dessert following just about any meal. Romance Cocktail Recipe 3/4 ounce Tia Maria 3/4 ounce Carolan’s Irish cream 3/4 ounce dark creme de cacao 1 ounce heavy cream Shake the ingredients with ice and strain them into a martini glass. No garnish is required, but it looks great with speared cherries, and for Valentine’s Day, you might want to serve it with some chocolate covered cherries or truffles.

The Chocolate Cherry Cha Cha The Chocolate Cherry Cha Chauses cherry liqueur and sparkling water with chocolate vodka and coconut rum to reproduce the flavor of a chocolate covered cherry. Plus, it’s a gorgeous bright red. This drink makes a fabulous dessert, with the Malibu coconut rum adding sweetness and bringing out the cherry and chocolate notes. Enjoy a Robin’s Nest as a light dessert, as an aperitif, or whenever you want to chill out and enjoy something that pleases lots of different taste buds. There aren’t many lunch or dinner entrees I’d try to pair it with, but it goes very well with creamy desserts and baked items, such as a naked or chocolate-topped cheesecake, angel food cake or

croissants. It’s also great with some triple cream brie cheese, or with salty snacks such as nuts or pretzels. This is also a beautiful drink, just a clear red liquid in the glass. You don’t even need any sort of garnish. It looks wonderful when you present it to a guest, and it’s so easy to make. You can even make a pitcher beforehand and just keep it in the fridge until everyone arrives. That way, entertaining is not only easier on you, but you can just top off glasses as you go along because it’s all pre-mixed. You may be surprised by the number of children running free during carnival but after a while it will cease to shock you. There are plenty of children’s entertainments in the plazas and squares ranging from puppet theatre to the daily ‘Toronda’, the fireworks display that takes place in the Plaza San Juan de Dios.

CARNIVAL IN CADIZ 20th February to 1st March 2020

C

ádiz Carnival or Los Carnavales de Cádiz is one of Spain's most famous fiestas. Held during 11 days in an ancient Andalusian city in southwest Spain, the carnival traces its origin from Venetian and Genoese celebrations. The first records of the Cádiz Carnival were found in the works of historian Agustín de Horozco dating back to the 16th century. With the focus on humour and irony, the carnival with colourful parades, music competitions, and hilarious costumes attracts huge crowds. The air in Cadiz is full of music during carnival. This music varies in terms of skill and style but with everyone playing their hearts out it’s hard not to enjoy it. Check out the ‘chirigotas’, officially recognised groups of ‘gaditanos’ (people of Cadiz) who wander the streets entertaining everyone with their funny songs. These songs satirize everything from pop stars to politicians and, even if you don’t speak Spanish, you can get

into the swing of their jaunty tunes. If you develop a taste for their music and brand of satire, head to the ‘chirigota’ competition that takes place in Gran Teatro Falla. While ‘chirigotas’ usually set up in improvised locations like stairways and street corners the choirs (coros) are even harder to miss as they go through the streets in open carts accompanied by guitars and lutes. As if being in an open cart wasn’t enough, they have the most extravagant costumes in a carnival devoted to flashy (and sometimes flashing!) attire. In the streets you can also find a wide variety of improvisational theatre performed by ‘ilegales’, a term referring to just about anyone who fancies taking part. Head for C/ Ancha and C/ Columela as well as the neighbourhood of Barrio de la Viña for some of the best spontaneous entertainment. For more modern musical fare head to the Plaza de Catedral for some of the Spain’s most popular rock groups.

One thing you’ll notice is that the costumes are a lot less showy than the ones you might see in Rio. In Cadiz, which has a reputation as the funniest town in Spain, the emphasis is on satire and cleverness and you’ll see plenty of politicians and clergy being mocked. You’ll have the most fun by joining in which is easy as wigs and hats are sold on every corner. Leave your selfconsciousness behind and follow the crowds to find the best parties. About 300 chirigotas, the choirs, quartets, and the comparsas prepare all year to compete for the chance to take part in Grand Final on the eve of Carnaval, that is broadcasted on TV. Other contests are held during the carnival by various organizations and take place right in central squares. Short songs, called "The Couplets", have to be original and witty. Longer songs are called "The Pasodoble" and are usually more serious. Music and bitter satirical lyrics are in the centre of everyone's attention. The final day of the carnival features fireworks and the symbolic burning of a witch. Carnival in Cadiz ends with the Burial of the Sardine and you can join hundreds of “mourners” following the paper mache fish and loudly mourning its passage. Most understandable as no one wants to see the end of a great party!

Cumbre Vieja, La Palma The Cumbre Vieja is a volcanic ridge located on the island of La Palma, part of the Canary Islands. ANDALUCIAN EXPRESSIONS Explanation of Some Local Slang

I

N ANDALUCÍA, each province of Sevilla, Jaén, Huelva, Cádiz, Granada, Málaga, Córdoba and Almería that you venture to, will use some type of local slang. It can get tricky to follow the conversation — even if you think your Spanish is fluent. And with the heavy Andalucían accent, i.e, the use of the “th” sound, and each province’s different accents, it makes communication even harder. Here are the basic expressions

Ex. “Gracias, mi arma” (Thank you, my soul).

1. Mi arma “My soul”

2. Del tirón “All at once”

Arma, meaning “weapon”, is actually meant to be alma – meaning soul. The “L” is replaced with an “R” with their accent. Mi arma is an expression used in everyday conversation and is a term of endearment. Used mostly in the city of Sevilla.

Ex. “Venga, ya. ¡Toma el chupito del tirón! (C’mon already. Take the shot!” 3. ¡Ponme una caña! “Give me a beer” Translating this in the literal does no good. Ponme is synonymous

with dame or “give me”. Una caña means “cane” or “sugar cane.” So, saying: “Give me sugarcane,” doesn’t make sense. Specifically, una caña denotes a size of the beer (it’s small — about 6 oz.) You use this to order a normal size beer. Now if you said ¡Ponme una jarra! (a jug) then now we’re onto something. Ex. Waiter: “What do you want?” You: “¡Ponme una caña!” 4. No ni ná (no ni nada) “Yeah, right!” This is my favorite Andalucían expressions. It’s a triple negative that is complicated to understand but once you get it, and use it correctly, your Andalucían friends will be roaring with laughter. The ná at the end is a shortened version of nada. You use this when someone says something that is clearly untrue and you are calling them out on it. Ex. Friend: “I’m not going to drink tonight, in fact, I’m thinking about stopping going out all-together.” You: “¡No ni ná! You go out eight days a week!” 5. Pischa/Boquerón/Choquero “Local ways to identify oneself.” In Andalucía almost every major area has a word to describe where you are from. In Cádiz, they use the word pischa/chocha, which literally means “penis/vagina” (don’t ask me why, no one knows). In Málaga, they use the word boquerón/boquerona, which means “anchovy”. In Huelva they use choquero/choquera, meaning “squid”. All the other inhabitants of the provinces use the name of their communities Ex. “¿Eres Pischa?” “¿Pischa? Soy de Sevilla, tío. Pero mi padre es boquerón.”

6. La que tú me haces “It’s you that makes me this way.” or “I cannot help but be this way around you.” If you’re going to visit Andalucía, get used to people flirting with you, or in the very least telling you how attractive they find you. And it can be a breath of a fresh air if it’s done with charm. La que tú me haces is a piropo (a compliment) that is meant to reverse something neutral or negative previously said, to turn it into a compliment. Ex. “Ay, Pepe. Me haces gracia.” (Oh, Pepe. You make me laugh.) “Pues, es la que tú me haces, Carmen.” (Well, it’s you that makes me act this way, Carmen.”) 7. ¡Estoy flipando en colores! “I’m flipping in colors.” This is also a great expression that is particular to Sevilla. It’s an expression to denote extreme excitement. Ex. “Are you excited for the concert this weekend?” “¡Estoy flipando en colores, tío! ¡Vamos!” (I’m flipping out in colors, dude. Let’s go!) 8. Si no sabes torear, para que te metes. “If you don’t know how to bullfight, you’re going to get gored.” It means that if you don’t know how to do something, be aware that you might fail. 9. Canelita en rama “That is perfect.”

Ser muy salado/salada “To be salty.” This is used to describe someone’s personality as vibrant, and full of life. Pronounced: Salao 12. Ser un soso/una sosa “To be saltless.” The opposite of Salado: lacking salt, boring, life-less. Ex. “Juan is coming? But he is soso!” 13. Darle caña “To scold someone. To beat someone figuratively.” This expression is used when someone is telling you what’swhat. They are “giving you the cane”. 14. La malafollá Used to describe a rude comment/situation from a granaína. Literally meaning “the bad sex”. La malafollá is the phrase used to describe a rude exchange someone from Granada. 15. Hacer la mona “To have no class.” Means: to make the monkey. To be rude and act trashy.

This is typically used to convey agreement with a suggestion. When something is a prime choice you use this phrase. Ex. “I was thinking we could go to Plaza El Salvador for drinks at

ow the chorizo is made?The chorizo is made with chopped pork meat and pork fat, seasoned with paprika and garlic, all stuffed into natural gut. The red colour so characteristic of chorizo is gived by a special paprika known as "pimenton". This feature is what makes different Spanish chorizo from other sausages elsewhere. The sausage is stuffed into pork guts, whether the small intestine and the large (for instance), in our time are used edible skin of nonanimal origin. Chorizo Qualities The perfect combination of pork meat with a suitable proportion of bacon and traditional curing process, produces a natural product with high calorific value and high biological value protein and special organoleptic characteristics. The history of Chorizo The chorizo has a primitive origin as it is closely linked to the "slaughter of the pig," one of the gastronomic traditions, festive, cultural and even religious

tradition in most rural villages in Spain. Most of families were supplied with a storage of meat for the entire year. Preservation Methods Salt: Until the salt does not appear and began to be use we can not talk about chorizo. Salt appears in the years 3000 BC in the reign of Simer, where spicy foods (like meat and fish) and foods were used in trade. In prehistoric times, the meat was better preserved by cutting it into thin strips and letting them dry in the sun. The Fire: After the discovery of fire, possibilities increased for conservation and the smoke as a way to preserve the meat. Earliest references to sausages It seems that the story begins with the "morcilla", blood sausage. In the Odyssey, the ninth century. BC, Homer makes mention of the gut filled with blood and fat that can be roasted in fire. It is the earliest reference we have of a sausage. In Greece and Rome there were different sausages, this can be

The Romans and sausages In Roman times some sausages are called "botulus" or "botellos" (by the way), which are now those called botillos, typical from Galicia, Asturias and Leon. The Romans had little liking for sausages. We know that they had many variants of sausages and the "botulus" was a kind of sausage that was sold on the streets. Evolution of the Chorizo In the fifteenth century cattle are bred outside the cities and parts were sold to butchers when killed. But it was different with the pigs. The pig was growing up in the villages, were killed in the streets and the chorizo was prepared by the family. This custom is something that still exists in some villages, "The slaughter of the pig." It was not until the nineteenth century when the development of meat products is reached , which is closely linked to the progress of industrialization, which gave n greater freedom to trade and movement of goods. Probably the chorizo is the first of the Spanish sausages to be defined by the Royal Academy of Language in the Dictionary of Authorities, 1726 as "short piece of gut, filled with meat, regularly pork, chopped and seasoned, usually cured by the smoke. not very common into the Spanish charcuterie. Origin of the chorizo As explained above, the Spanish chorizo is red due to paprika, "pimenton". This ingredient did not arrive to Spain until the sixteenth century from America. Before the discovery of America in Europe sausages were white or black, if they were produced with blood. The pepper also came from America, it was originally handmade until it was found in all markets. There's a story involving King Charles IV and chorizo. The king was hunting, he found a chorizo maker who offered the king a chorizo. The king loved it, so he was proclaimed the royal chorizo provider. This fact was portrayed in a tapestry called "The choricero Jose Rico, Candelario" made by Bayeu, brother of Goya.

How to make traditional chorizo The main ingredients are pork meat and pork bacon, paprika, garlic and salt. But there are as many recipes as different chorizos. The species used can be very divers. It is not one species that gives the flavour to the chorizo but the mixture of each of the flavours of garlic, pepper, cumin, bay leaf, thyme , onion, paprika, oregano Some have a little more of this or a little less of that, it's difficult to know.. The possible recipes can be very varied. The development of the chorizo has always been pretty homemade and each family had its own recipe. So, let's explain the four bases of the process. The traditional process of preparing the chorizo is very simple and consists of several phases:

- Chop meat and bacon. - Mixing it with all the species. - Rest for 24 hours. - Make the sausage with natural pork gut - Curing process: tied and exposed to air in the natural environment, choosing suitable sites based on their characteristics of temperature and humidity. The traditional way has always in rooms with fire and smoke in order to protect it from insects. - The period of maturation is a process of drying and acquisition of texture, while the natural flavors develop. The chorizos are cured for around 50 days in a cool dry place. Sometimes the sausages are usually smoked over oak wood and then we let them dry on a cool place.

s I write this, 8th January, the latest figures for land burnt in Australia stand at 10.7 million hectares. That is an area bigger than Andalucía. Horrific. For people, animals and plant life. Fire has always been a way of life in Australia, though not like this, on such a scale. The Australian landscape revolves and evolves from fire but there are also other harsh climates, worldwide, where many plants have cleverly adapted to survive it. Some will survive because of their insulating bark, dead leaves or moist tissues. Some trees, such as larch, giant sequoia and our own cork oak have incredibly thick fire-retardant bark; they can be directly burnt without sustaining damage to their internal vital tissues. Only when the fire is extremely intense will they succumb and burn down. Many aloes, yuccas and palms

develop thick trunks with dead leaves hanging down to insulate from both heat and cold. And many thick-leaved succulents repel fire with their fleshy moisture-rich leaves which protect the plant from dehydration. Proteas have a covering of corky scales that protect their buds from dessication. The devastation of a wildfire is mighty but there are many plants that will re-sprout from apparently charred and blackened wood. We see this often around Cómpeta when old olives often re-shoot from totally burnt stumps. In Australia many of the eucalyptus are already shooting vigorously. Some of the banksia species have swollen stems at the base or underground woody tubers, known as lignotubers, from which new shoots can emerge. Similarly there are many herbaceous plants, such as anigozanthus, agapanthus, dietes, dianella and iris, that have fleshy bulbs, tubers

or rhizomatous roots underground from which fresh green shoots can emerge – creating a startling contrast to the blackness all around them. The xanthorrhoea, or grass tree, epitomises the Australian bush – all 66 species of it are endemic to Australia. Many of these have an amazing ability to survive fire; their leaves may burn and their trunks blacken but their living growth point is buried underground, protected by tightlypacked leaf bases. Another decade begins and the Costa Animal Society (CAS) will soldier on doing the best we can to help the homeless, abandoned and/or abused animals in Nerja and its near environs. Despite a sense of always feeling overwhelmed, progress on the issue of animal rights and welfare has been made in recent years in Spain. Not from the politicians of course (aside from an exemplary few) but primarily from the under-40 Spaniards who appear to have a sense of justice, onscientiousness and compassion, certainly surpassing that of previous generations.The Costa Animal Society would encourage you to visit the website of the Partido Animalista PACMA the Spanish political party that “works for animal rights, environmental protection and social justice”. Unfortunately, the website is only in Spanish but you can always Google translate. They are at the forefront of the issue of animal rights in Spain and are growing quickly. The only way the issue of animal abuse is going to be solved is if the laws on the books are enforced and new laws enacted and that is what PACMA is all about Colin and Marjorie

The couple began helping CAS in 2002 and for more than 17 years they have raised funds at the Almuñecar Car Boot Sale, the Trapiche Market and have lent a helping set of hands at numerous Scruffs Dog Shows, Balls and various other events. Not to mention the numerous dogs and cats they have fostered and taken in over the years.
