STUFFED SARDINES Recipe To Try At Home
T
he sardines stay moist and tender, lending their juices to the mixture of parsley, tomatoes and bread crumbs inside.
DIRECTIONS Preheat the oven to 350 degrees.
until the sardines are tender and the tomatoes have softened.
Lightly grease a shallow baking dish large enough to hold the sardines in a single layer.
Divide among individual plates, including any pan juices; serve hot.
Combine 2 cups of the parsley, garlic, bread crumbs to taste and 1 cup of the tomatoes in a medium mixing bowl.
NOTE: To clean the sardines, cut off the heads and discard, then gut the insides, removing all bones. Cut open the fish, making sure the fish remain partially attached in the center.
SERVINGS: 4 - 6 INGREDIENTS Leaves from 1 large bunch flatleaf parsley, finely chopped (at least 2 1/2 cups) 6 medium cloves garlic, minced (at least 1/3 cup) 3 to 4 tablespoons plain dried bread crumbs About 6 firm plum tomatoes, finely chopped (3 cups; seeded or not seeded) Kosher salt Freshly ground black pepper 2 pounds fresh sardines , cleaned (see NOTE) Juice of 2 or 3 lemons (at least 1/2 cup) 4 to 5 tablespoons extra-virgin olive oil

Season with salt and pepper to taste. Sprinkle the sardines inside and out with lemon juice and a little salt. Spread a spoonful of the parsley mixture evenly inside each sardine, then place the fish side by side in the prepared baking dish, laying them on their sides. Drizzle with the oil to taste, then top evenly with the remaining tomatoes and parsley. Bake for 45 minutes to 1 hour,

BUYING A PROPERTY IN SPAIN A Full Property Guide Provided by Sunset Properties Spain Choosing the right area The first stage of the process is to pinpoint the area that is right for you. The key to achieving this successfully is research – the more research you do, the more likely you are to choose wisely. Aspects to consider might include climate, proximity to an airport, distance from the nearest beach, local amenities, the number of expats resident in the area, etc… Once you know which area you prefer, you then need to decide whether you want to buy on the coast, in the countryside inland or in a town or village. Generally speaking, coastal properties tend to be more expensive than those inland. The pros and cons between living in a village or in the countryside Life in a village can be quite noisy and the views are often limited, but the hustle and bustle of village life and the close proximity of local amenities including shops, bars, restaurants, etc can outweigh any drawbacks. Learning Spanish is easier if you

Choosing the right kind of property You must also determine the type of property you want – a modern villa, an older style country house, a townhouse or an apartment. You need to consider your priorities and decide what is important to you – outside space, views, swimming pool, garage, etc. If you are not intending to live in
Spain permanently, a property in the countryside will need to be looked after in your absence. Land and swimming pools have to be maintained whether you are in residence or not. Requirements for buying a property in Spain In order to buy a property in Spain you must have an NIE number (foreigner's identification number) and a Spanish bank account – both are essential and we will of course help you to obtain them. NIE numbers are obtained from the local police station for much of the Axarquia area this is in Torre del Mar and you have to attend in person in order to apply for the certificate. You need to take your original passport and also a copy. The NIE number is very important in Spain and you will be asked for it time and time again. A Spanish bank account is relatively easy to open – you need to decide which bank you want to use and then go in and open an account. You need to take your passport, a copy of your NIE

his popular soup from the Andalusian area , (an autonomous community of Spain), mostly known now for being served cold, has many different influences from Greece and Rome, but also from the Moor's and Arab culture. The original soup was blended stale bread, olive oil and garlic, with some liquid like water or vinegar that was pounded together in a mortar. Different vegetables and almonds that were available were also added. This soup evolved into different varieties, the most popular

around the world is a tomato based variety, served cold. It is often served heated in certain regions in Spain. Now Gazpacho has become a generic term for a cold soup that has a vegetable or fruit base or both , that has similar spices to the traditional. The word gazpacho is derived from the Arabic for “soaked bread.â€? Gazpacho may be served with croutons, additional chopped vegetables, and chopped egg that the diners add to taste. The gazpacho of MĂĄlaga province in Andalusia is based on almonds and contains grapes.
While it was common for Roman soldiers to carry dried bread, garlic and vinegar to make the basics of this early soup, it was popularized in the Andalusian area of Spain. In the 8th century it was overtaken by the Ottomans and the Moors from Morocco just across the mediterranean sea came over with a soup they called Ajo Blanco. Christopher Columbus probably took this soup with him on his voyages from Spain. When he brought back tomatoes, cucumbers and different peppers

that is when the soup evolved to it's present state.
You can easily make this a high fiber and low fat meal, so I feel that this soup has a great future. Cold soups are becoming more and more popular.
Now all kinds of things are added such as watermelon and Cantaloupe. Gazpacho Ingredients • 1 kg of seasoned ripe tomatoes • 2 whole cucumber • 1 chopped onion • 2 cloves garlic • 6 tablespoons of vinegar • 3 tablespoons olive oil • 2 green peppers • 1 loaf of bread crumbed (about 250 grams) • salt • 1.5 litres of water

BEST CLIMBS Cycling in Andalucia By Andy Baker
T
he Axarquia region to the East of Malaga is a beautifully rugged area of hills, mountains, ravines and valleys. For cyclists, this terrain provides a range of climbs to be conquered many of which are utilised in the thriving local race scene. There are many stretches of challenging ascents, but we have selected what local cyclists believe are the best.
Fuente de la Reina/ Puerto del LeĂłn. The climb to Fuente de la Reina starts in the outskirts of Malaga. The hustle and bustle of a busy city and noise of traffic is soon replaced by peace and tranquillity. The only sound you may hear will be the amplified sound of your breathing as you tackle the steady gradient of this beautiful climb. Along the way are a string of interesting BBQ restaurants. These are busy at the weekend with Malaguenos enjoying the pine scented air of the Montes de Malaga Natural Park. The road is surprisingly quiet despite the proximity to the busy city below. Most of the

ascent is in fresh pine forests offering amazing glimpses of the city shrinking below as you climb upwards. The ascent from Malaga is approximately 15 kms and has an average gradient of 6.5. At the peak you are just over 900 meters above sea level. The fountains themselves are near the top of the climb at the Puerto de Leon. A spring has remained here from time immemorial. However, it is thought to be named after Queen Isabelle who drank here in 1492 during the Reconquest. Cyclists can also replenish their Bidons here with spring water. There is cafĂŠ near there fountains for basic food and coffee or you could press on to Hotel Galway a few kms over the top of the Puerto for more substantial fare. For cyclists wishing to compete there is the annual Subida de la Fuente de la Reina at the end of September. This is part of a hill climb series in the Malaga area. Puerto del Sol. This pass is considered by some local riders to be the greatest
climb in the Axarquia region. It is situated to the north of the province and starts a few kilometres from the village of Periana. This is a remote and rugged area populated by hardy farmers, goats and eagles. During the ascent be vigilant for goat herds supervised by wily dogs keeping things mostly under control. The climb offers stunning views back down to the coast and, on clear days, over to the Moroccan coast. The road itself winds upwards into the rugged Sierra for 6.5 kms at an average of 7 percent. However, some of the switchbacks have gradients up to 16 percent and can be a tough test. The Puerto Del Sol is the final climb in the annual Pirineo Costa Del Sol race. This crosses the Sierra via three different passes. It is not to be missed if you are in the area in late May. You crest the peak at 1078 meters above sea level before a relatively brief descent down to the village of Alfarnate. The climate is notably cooler here and olive and almond trees give way

to cherries and pears. The mountain scenery surrounding Alfarnate is exceptional. It can be appreciated from one of the little cafes in the Moorish village. A very old Venta with a museum lays 2 kms outside of the village. The venta is famous for being a bandit's hideaway in earlier times. It can sometimes be closed so best to check the opening times before starting out. The Ruta de Cabra The Cabra is strictly speaking outside of the Axarquia region but is easily reachable by the N340 coast road. This links the resorts of the coast to the beginning of the climb at Almunecar. It is a long ascent into a rugged landscape with craggy pinnacles and bubbling streams. The busy resort town of Almunecar is the point that you leave the coast and commence the incline of the climb of the Ruta de Cabra. Initially the road heads away from the town's outskirts into mango and avocado groves along the Rio Verde. You then cycle under the soaring bridge of the A7 coastal

motorway before reaching the villages of Jete and Otivar. Both towns offer places for refreshments. This is a sensible option as places are limited for the next section of the ride. Soon you will be ascending in earnest up a spiralling road into the Sierra Almijara. The climb is in two sections. The first is 18km of steady 5 percent gradient before a short descent. The second is a further uphill section of 5 kms at 4 percent gradient. On the route you have magnificent views of the sea way below, some beautiful rock formations and a short tunnel cut through the mountain rock. The official climb goes to the Mirador. The more adventurous may wish to continue to ride through the mountains completing a long loop via Zafarraya. Boquete de Zafarraya This is a climb on most cyclists to do list and for good reason. The boquette itself is visible for miles around when looking up to the inland Sierras from the Torre Del Mar and Velez Malaga area. At the summit stand 2 sentinel rocks
on either side of the road. It is a beautiful example of glacial geology. As you ascend from Puente De Manuel there are sweeping views over to the village and campo of Alcaucin in the foothills of Mount Maroma. On the left the ruins of a Moorish castle named Zalia can be spotted just above the road. The gradient is a reasonably constant 5.8 percent average. The hardest part of the climb is psychological. The pass is always visible and appears interminably above you. The twisting road ahead on the mountain side plays mind games giving the impression that the road is longer and harder. At the top as you pass through the two rocks you enter the province of Granada and the small town of Venta de Zafarraya. As you look back you can look down to the sea way in the distance! RIOJA WINE Spain In A Glass
R
ioja is Spain in a glass of red wine. When we think of Rioja we also immediately picture Spain’s other famous culinary delights: beautiful slices of Jamon Serrano salty chunks of Manchego cheese and a bowl full of ripe green olives. The wine is known for its structure and tannins, similar to Cabernet Sauvignon, but it also has a fruity characteristic. This is a wine perfect for a drinker who loves Cabernet but is also looking for the dominant cherry flavour that’s often present in a wine like Pinot Noir. Great Reservas are a steal! One can find incredible Reserva wines in the 8- 25 euro range. The most famous Spanish wine on the American market, Rioja is made from a blend of grape varieties, with Tempranillo the dominant grape (Garnacha is typically included in the blend to add some fruitiness. Mazuelo and

Graciano may also be included). The blend takes its name, like many other wines made in the Old World, from the Rioja region where it is produced. Spain is very proud of its indigenous Tempranillo grape because they have been making it into wine for over 2,000 years. Unlike other countries who have adopted grapes that were originally indigenous to France of Italy, Tempranillo was born and cultivated in Spain, and there is no region for which they are more proud, and taken more seriously, than Rioja. Rioja is as age-worthy as the wines of Bordeaux and Burgundy, yet it flies under the radar compared to its more well-known peers. This means that a stellar bottle of age-worthy Rioja can be procured for far less than a similarly rated bottle of Bordeaux or Burgundy. I When choosing to buy a Rioja, the most important thing to know is that the wine separates into
four levels of classification, which depends on the amount of time the wine spends in oak, and is similar to the Burgundy Cru classification system. The classification of each Rioja will be labelled clearly on the bottle. The four classifications are: Rioja: This is the basic form of the wine. It has been aged for only a short amount of time in oak, potentially only a few months, and then the wine is bottled and sold. It is in this wine where the juice will taste the “ripest” because the wine is very young. Crianza: For a wine to be labelled a Crianza, it must spend a minimum of 1 year in oak. Following its removal from oak, the wine must spend at least another few months in the bottle, before being sold. This is the level of Rioja that is most widely available and it’s incredibly affordable.

Reserva: This is a Rioja made from the best grapes of the harvest, and is only made during years that were considered to have a good growing season. A Reserva must be aged a minimum of 3 years, with at least one year being in oak, and the rest in the bottle.

ell lockdown is over and we can go back to 'normal'. Whatever that may be for each and every one. Reading all the things on the internet, it was like New Year resolutions the first weeks, 'I will learn more Spanish', 'I will learn Sanskrit', 'I will exercise every day,' 'I will be kind', 'I will not covet my neighbours' dog', 'I will bake bread', 'I will let my hair self-clean', as Suzanna Constantine advised, 'I wont slob about the house, I will clean more', and so on. But after a few weeks, boredom sets in and the resolutions dropped, much to the relief of children who had to eat the said home baked bread. I know, I made bread for my family for 30 years and when the boys were teens they asked if they could have normal bread like their

friends, the white sliced kind! Learning another language is OK but you need interaction with other humans, and after a while talking to the computer, or doing it with a teacher online, begins to pall. There are so many boxed sets to watch on BBC catchup! Exercising in front of the TV is quite a chore, and when you shout, 'hold on, I didn't get that', the instructor just carries on! Some folks have been renting out their dogs, which is all well and good, but having to clean up the poo of a dog that is not yours is yukky! Besides which, the police cottoned on to this and asked for pooch's papers! Self-cleaning hair sounds horrible, I tried nearly a week, and my scalp felt odd, as if the hair was in the wrong place. Mind you on the plus side doing without fancy hot drying and sticky products does make the hair feels nicer! Likewise, the lack of makeup, one's pores can breathe at last!
We are all going to be nicer and kinder to each other. Don't make me laugh, we will still gossip, the incidents of 'denuncias' has risen. 'She went to the bins six times yesterday,' etc And finally, to cleaning the house. I found that after the first initial blitz, it more or less was clean, only got dusty. Then it rained on the clean windows, and that was that. I admit I did not make any resolutions, because I know I'm lazy, and this is the first time, (and its day 40), I have wanted to get onto the computer and write. I am lucky I am not on my own, my Son visited and has not gone back, but for all those on their own during the Lockdown, I hope you stayed fairly sane, and will be out for coffee, discussing your ailments with the best of us. PADEL TENNIS Origins, History And How To Play
P
adel-Tennis, also known as Padel or Paddle, has its origins on a not so popular variant of enclosed Tennis called Platform Tennis. Enrique Corcuera in 1969 decided to adapt his Squash court at his home in Acapulco (Mexico) with elements of Platform Tennis creating what he called "Paddle Corcuera". He is considered the inventor of Padel. Enrique's Spanish friend Alfonso of Hohenlohe-Langenburg tried this new invention at Enrique's home and instantly felt in love. Immediately after, he decided to create the first two Padel courts in a Tennis club in Marbella (Spain), this was in 1974. Alfonso included few modifications from Enrique's original designs to make it more competitive.

In the meantime in 1975, Julio Menditeguy an Argentinian member of Alfonso's Tennis club in Marbella felt the same passion and decided to import the sport to Argentina. Padel's origins, Platform Tennis, Modern times Since the first courts in Spain, Padel took nearly 25 years to be extended all over the Spanish geography. In the early 2000s there were more than 500 Padel clubs and many Spanish hotels already included padel courts as a sporting activity. By 2005 Padel was wellestablished in Spain with more than 1000 Clubs. This is when the most important Padel Associations decided together to establish an International Championship played wholly in Spain. This was the beginning of the Padel Pro Tour, which lasted
until 2012. Since 2010 the sport has constantly grown and blossomed all over the world and it is now, for many people, considered the fastest growing sport around the world. Professional future In the professional sphere the World Padel Series founded in 2013 is the most important, prestigious and professional Padel Championship worldwide, in replacement of the Padel Pro Tour. It gathers the Padel elite around the world, the equivalent of ATP & WTA for Tennis. Since 2014 this new Championships has included Tournaments outside Spain and has travelled to Andorra, Argentina, Monaco, Portugal, United States and United Arab Emirates.

The World Padel Series is currently holding the international ranking of best male and female players. It consists of 15-20 tournaments per year plus a final Master Series by end of every season. How Do You Play Padel tennis is a combination of tennis and squash that is played by 2 players (singles) or by 4 players (doubles). You play using a small thick racket (a paddle) and a type of tennis ball. The court is much smaller than a tennis court. There is no overhand serve either and point counting is easier. The court is fully enclosed with a glass rear and sidewall. Rules Of Padel As previously mentioned, the serve is underhand after the ball has bounced once behind the

service line. The ball must be hit lower than at hip height and diagonally into the right or left service court of the opponent. The ball must touch the floor in the service court without touching the metallic mesh, but the glass walls may be hit. You get 2 tries as you do in tennis. The ball may only bounce once on the ground and might be played before or after bouncing possibly after coming in contact with the wall. The ball may not hit the wall and metallic mesh directly. You can play the ball against your own glass wall as a player to get it to the other side of the net. What You Need Padel tennis is played with a paddle racket that can be attached to your wrist. Usually, the racket is made of graphite,
carbon or fiberglass. The rackets can vary in shape, weight and base material. Padel tennis is played using a ball similar to a tennis ball. It is slightly smaller and it must be able to bounce properly. Padel is fun, social and easy to play. It appears like an oasis in the desert of Spain’s sport crisis. Padel has overtaken its ‘older brother’ tennis as the primary sport in Spain. Every year, around 900,000 padel racquets are sold compared to 400,000 tennis racquets. This padel mania is spreading all over the country and is no longer a secret that many Spaniards cheated on tennis and fell addictively in love with padel. LA CONCEPCION The Fabulous Malaga Gardens
L
a Concepción gardens and house were built in 1855 when two members of Malaga’s rising bourgeois class, Amalia de Heredia Livermore and Jorge Enrique Loring Oyarzabal, got married. Between them, they brought and ordered plants and trees from all round the world and created a tropical oasis throughout the 23-hectare site.
In 1911, La Concepción was acquired by the EchevarriaEchevarrieta family – another influential family in Malaga – who added to the gardens and built the famous mirador at the southern end of the grounds. In 1943, the gardens were declared national treasures and just under 50 years later La Concepción became municipal property. In 1994, the gardens opened to the public. Historical Gardens Acknowledged in 1943 as a “garden of historical and artistic

interest”, this covers a total of 3.5 hectares. Its merit resides largely in its physical characteristics, the preservation of its original design, and the collection of subtropical fauna to which it is home. Located on the side of a hill, its landscaped layout comprises a series of waterfalls, streams, fountains, flights of steps, greenhouses, large trees and centuries-old palms, the latter constituting one of the finest collections in Europe. Worthy of special note among the 3,000-plus species to be found here is the garden's enormous grove, which features a number of hundred-year-old specimens of ficuses (Ficus microcarpa and F. macrophylla), araucarias (Araucaria heterophylla and Araucaria bidwillii), casuarinas, magnolias, pines, cypresses and cedars. Other examples include cycas (Cycas revoluta and Cycas circinalis), giant birds of paradise (Strelitzia nicolai), bamboos (Phyllostachys nigra, Bambusa
vulgaris, etc.), water lilies, and an unusual climbing vine (Wisteria sinensis) which covers an enormous 19th-century iron gazebo. Surrounding the Historical Garden is the botanical garden, whose plants are arranged in scientific order. Near the entrance are collections of aquatic and prehistoric plants, a rockery highlighting biodiversity, a greenhouse of insectivorous plants, bromeliads and orchids, as well as collections of African plants and bamboos. To the north lies a route known as “Around the World in 80 Trees”, a further collection of palm trees to add to the one in the Historical Garden, and examples of different varieties of Malaga vines and olive trees in the section entitled “Plants of Our Region”. The upper fringe of the Historical Garden is home to the “Forest” and “Viewpoint” routes, both of which feature indigenous plants. The southernmost point of the

garden houses two further collections, namely the cacti and succulents and the subtropical fruit trees, as well as the historical lemon grove. Since La Concepcion was acquired by Malaga City Council, strenuous efforts have been made to increase the number of species present in the garden. A scientific approach has been adopted, with plant collections being laid out around the fringes of the Historical Garden, thus significantly expanding the landscaped area. The main aim is to achieve a wide diversity of subtropical species, since Malaga's climate is ideal for warm-zone plants that would struggle to thrive in other parts of Europe. These collections are complemented by others featuring indigenous plants from the Malaga area and specific projects designed to protect threatened and endangered flora.

oxgloves are things of fable, fairytales and folklore; they're also one of the plants that we get asked for a lot. Their name is wellknown and loved, even amongst non-gardeners, but no-one knows where that name came from. Some say that is merely a misrepresentation of 'folk's glove' or gloves that little people might wear. Others say that the gloves were given by fairies to foxes to put on their paws so they could stealthily invade hen houses for their dinner. The mottled spots inside the 'gloves' are actually fairy handprints! Another tale tells us that the bell-shaped flowers would make a magical ringing to warn foxes when a fox hunt was about. Either way, foxes seem to be inextricably involved with foxgloves, or digitalis from the Latin for finger. The genus digitalis contains nineteen species belonging to the

family plantaginaceae. Most are native to central and western Europe, central Asia and northwest Africa but digitalis purpurea would be the one most commonly seen. This is the one of tall spires of flowers tucked under thick thatch roofs of country cottages, the quintessential cottage garden plant. Its pink-purple flowers are beautiful, dappled with spots inside – those fairy hand prints! Paradoxically, the plant is a deadly poison but also a lifesaving heart medicine. It's all in the dosage. The Canary Islands, off the coast of Morocco, are home to many little-known flowering gems. One of these is the Canary Island foxglove, or isoplexis canariensis, another member of the digitalis family. Its apricot coloured blooms are exotic and tropical in looks with a very long-flowering season from March through to December. It is shrubby with glossy, deep-green leaves which
make a great backdrop for the soft orangey tubular flowers which have a distinctive large upper lip, unlike other foxgloves. In flower, the spires can reach almost 2m tall, a glowing eyecatcher beloved by winged pollinators. Usually found on the edges of wooded areas, they are happiest in a partially shaded spot with some shelter from hot afternoon sun and very strong winds. Easycare, they are very drought resistant and hate having wet feet; when grown quite dry they are hardy down to -5C. After a few years, it will lose its flowering vigour but it can be propagated from cuttings or seeds. Sadly, it is now rare in the wild and hardly seen in cultivation either. But very recently a new hybrid has come onto the market, a cross between digitalis purpurea and isoplexis canariensis.

Once in a while a plant comes along that has 'star' written all over it and digiplex Canary Berry is generally considered as one of those. It has the best qualities of both parents with verdant rosettes of dark green, glossy foliage and spectacular spikes of hot orange-pink flowers with creamy throats speckled with burgundy – it's a winning combination and a beautiful hybrid. The magnificent flower spikes, some 1m high, rise majestically to best display the flower-packed stems. It thrives on minimum care, just a soaking now and again, and, even when not in flower its lush, evergreen foliage looks good. Commonly known as the tender foxglove, it is hardy down to -10C so tough enough for even hillside dwellers and flowering from springtime through until cold weather hits. Its isoplexis heritage means that it will want more sun than most foxgloves and it has a good degree of drought tolerance.
