Editors Note... May is a great month in Spain. Temperatures are beautiful, there is little rain. I know we don’t have much rain and we need it, but it really does infringe on the working day and indeed the outdoor leisure activities which there is plentiful of in Spain. May also means we are nearer the summer holidays and the kids love the holidays so they are happier!

Photo: The Alhambra Palace, Granada

SALES HOTLINE

May is also a good month for festivals there is La Noche en Blanco, a culture night in Malaga and Aplec de Caragol in Lleida a snail celebration! Also, we have the Cordoba Courtyard festival “Fiesta de los Patios” which is a beautiful time to visit Cordoba. More information can be found on page 58. In Madrid we have the San Isidro Festival, one of its most famous holidays and lasts over a week. The capital is packed with locals and tourists. If you want to visit during this extremely popular and traditional festival I would suggest booking early. See more information on page 56.

The restrictions for rescue missions cannot affect the ship’s other humanitarian tasks Humanitarian Maritime Rescue. On its way through the Strait of Gibraltar this past Saturday, the Spanish Maritime Authority warned the crew, first over the radio and then by email, that it had to return to a Spanish port: “You do not have permission to cross the Mediterranean. Before leaving Spanish territorial waters… you must request a dispatch indicating the port and destination area, and detailing the activity you plan to carry out.”Since January, the Spanish Maritime Authority, which answers to the the Public Works Ministry, has been stopping this vessel from

going into Libyan waters to rescue migrants and refugees in distress. The non-profit organization which owns the Aita Mari, Humanitarian Maritime Rescue, accepted the order, and instead of rescuing migrants, decided to head toward the Greek island of Lesbos to deliver more than 40 crates of medical supplies, diapers and infant formula. The boat got authorization for this mission at a port in Lisbon, Portugal. However, the Spanish maritime authority has demanded that the boat return to a Spanish port to obtain new authorization. A ministry spokesperson said that the permission granted in Portugal is not valid. “As an NGO vessel dedicated to rescue missions it needs to apply for a dispatch at a Spanish port specifying its exact destination and the activity it plans to carry out.”

AXARQUIA SOLICITORS Difference Between NIE Number and Certificate of Residence.

W

hat is the NIE number? Is it the same as the residence number? Which one proves residence in Spain? These are some of the most common questions that a foreigner may have when coming to Spain. The NIE number means NUMERO DE IDENTIDAD DE EXTRANJERO. It is basically a Tax Identification Number for foreigners, to be issued by the police offices. It is a personal number which will always be the same and that will be used when buying for example a property or a car, and when paying the purchase taxes. Without this number it is not possible to purchase a property in Spain. Getting a NIE number does not allow foreigners to live and reside in Spain. Although EU citizens can live and reside in Spain,

Please also note that any foreigner who lives and resides in Spain must get the residence certificate, that is different from the NIE number and which is a legal document which confirms that person is living and residing in Spain. This document is also issued by the police offices.

Marbellasolicitors Group has a team of lawyers that can help and assist you with this or any other issues.

EU citizens can get this certificate of residence without problems, however other nationalities can only get it by appling for it at Spanish embassies in their own countries.

For many it was an exciting day out during the 11th Art Walk days, quite a few spent multiple days! Art works and craft works by 39 artists were on show at 26 venues in the beautiful town of Cómpeta. Most artists were present all 4 days and were happy to talk and exchange about their work, inspiration, vision and techniques with the eager to learn audience. This year there were also other activities, ranging from a meditation ceremony to Free Dance and the 'Art-Walkers', theatre makers moving in the streets of Cómpeta, submerging the village in creative vibes.

26 The Grapevine

To make the cultural event complete this year many of the visitors enjoyed exceptional live music every day! A big variety in styles was offered; jazz, flamenco, Italian music, blues, soul, rock and eclectic world music. People of all kind of nationalities found their way into the mountains to enjoy the jewel Cómpeta. Hotels were fully booked, restaurants packed. The village is already known as ‘a place to be’ for artists and musicians, and it seems every year more and more people find their way to this inspiring area with tempting art vibes all over the place! The Art Walk organisation is thanking the municipality for providing their available spaces in the town hall. The Art Walk is very pleased with the number of businesses who have chosen to support this great vibrant cultural event. A huge ‘thank you’ must also go out to the volunteers who

Impression from one of the volunteers: "Running up and down the village to help fixing the many details that help make the day was exhausting because of Cómpeta’s famous many steps, but still a real pleasure because of the great atmosphere at all 26 venues. Hope to be running around in 2020!" Last but not least we like to thank Lieuwke Loth for her endless efforts to make it another success. She dedicates much of her time, skills and energy to make it an event that’s giving big value to the town and the people. From a small Art Walk she made it into a big cultural event of which we all can be proud of! For pictures of the event you can visit the website: www.artcompeta.com, or the facebook page: artcompeta. Lara Jayne Jackson has filmed and interviewed quite a few of the artists and their work during the Art Walk and will make a compilation that will be online later on. That was it for 2019! Cheers on the arts & music & inspiration! Art has no borders.

Snow in Competa (2006)

BECOMING A COMPETANIAN By Josephine Drew

T

his article was prompted by a chance remark that I heard on the coast, and I quote,'I’ve just seen someone putting olive oil on bread and some people dip bread or croissants into their coffee, how disgusting'! (Its not and its delicious). Then I was told, (not sure if its an urban myth), that someone was overheard in the Plaza saying, 'Nice little place, but too full of Spanish'! So a few musings on Competa life, traditions and local knowledge. Competa is a Spanish working village and proud of it, and the residents are tolerant of tourists and immigrants as long as they are met half way, and try to learn a bit about their customs and language. There has been a lot of changes in the village to bring up to the 21st century. But wasn't it fun years ago, rather like being in a 1950s time warp? There are 'extranjeros' who’ve been here since God was a boy,

who remember much more about the Village than I, (and no doubt they will put me straight of some aspects) but I am addressing this the recent arrivals. I have been told that some stalwarts had furniture being brought up from the coast by donkey cart, because the road was a track! Those who had to fill their cars on the coast with petrol and then get extra cans filled in case they ran out. Telephone was via satellite on the campo, and in the village there was a telephone in the old Post Office, so everyone could listen to your call. Electricity was forever cutting out (still does). The old men on the Plaza who would sit over a glass of water or small coffee in Pericos playing dominoes, hogging the shady seats, while their wives, cooked and cleaned the tiny houses, and in the Winter wrapped in a shawl, stoke up the Brasero, (a little covered fire, filled with wood, then covered with a damp cloth and left to turn into charcoal) which was put under the round table in the

evening. And 'donkey man' who came through Plaza Vendimia so drunk that he held onto the tail of his donkey, who took him safely home. He was called Fernando. There was even a post-card of him! Then there are more recent memories of the car park as waste ground with trees, or the play area near Bar Miguel. The old outside swimming pool which is now the covered car park and a lovely orange grove complete with donkey grazing, above where Jara the fruit shop is. The public laundry, was near where La Teteria and the Bodiga are. This was where the ladies jostled for pole position to get the best sinks, then gossiped and got the washing done at the same time, with plenty of mountain water (there is one left to view in Canillas). The covered market near the Church, now the Paseo de Tradiciones, or the fountain outside the church. The Museo (well worth a visit to see how life was not so long ago) was the Guardia Civil headquarters.

Rosa Luz Fernández Cebreros, candidate of Por Mi Pueblo for the Mayor of Cómpeta

I would like to introduce myself; I am Rosa Luz Fernández Cebreros, candidate of Por Mi Pueblo for the Mayor of Cómpeta. I am a woman from Cómpeta. Many of you might know me because of my family. My parents are the owners of the Komo Komo supermarket in the Cómpeta car park. Others will know me for my work as I am always at the service of one and all for one reason or other who needs help. I consider myself a hardworking, cheerful, sociable person who hates injustices. I am always willing to collaborate in all that is asked of me. I love both my fellow compatriots as well as the foreigners who have decided to join and live with us in this wonderful place. I am in love with my town and It fills me with joy and pride to know that I'm not alone in thinking that Competa is a special place, and every year more of you decide to spend some time of your lives in this village. I have decided to run for Mayor because I think that we need to evolve and improve many things in order to keep this town moving forward. All the people who have decided to live here need representation in the town hall as we are all part of the life that make-up this village. Foreigners are a fundamental pillar giving the village a cultural diversity that enriches us and makes us unique. That's why, in my team there are people from different backgrounds and nationalities which will represent you in the town hall. Additionally, there will be an office with qualified personnel who will listen, answer and help in all that foreigners needs. The office will be there to listen to all your complaints and requests in order to be able to maintain a direct communication with all nationalities. I will personally take care of this and I will also be available to you whenever you need me. Our party, FOR MY VILLAGE, is a municipal party, independent, which is not considered right or left. Which will give us the freedom to work and choose all the good ideas, and carry them out without looking from where they originate. They give us the possibility to manage our town just looking for the best interests of our village. In other words, we will work for you and for Competa. We have developed

a program, which we will show you in detail during the election campaign.

I

would like to give you some points in advance so that you start learning about us.

We will work to improve the recycling infrastructure of our village.

Ÿ

We will improve the cleaning and garbage service, both for the town and for the campo.

Ÿ Ÿ

We must improve the Campo roads and tracks and expand and improve the roads that lead to the village and those that link us to the other towns and take us to the Sierra Tejeda and Almijara whilst always being respectful to the environment.

Ÿ Ÿ

We must take care of the environment that surrounds us, thus protecting all species of animals that inhabit with us. We all have the right to inhabit and enjoy Competa.

Ÿ Ÿ

We will also promote sports, offering new activities for all ages, promoting a healthy lifestyle, keeping everyone especially young people from the dangerous world of drugs, which we will fight from the town hall.

Ÿ Ÿ

We will work to guarantee water throughout our Campo so we are not affected by the drought. Another one of our fundamental points will be the one of the creation of specific jobs for young people through workshops and training courses. They are our future and in them we must focus in order to guarantee them a better future.

To conclude, I would like say the Town Hall needs young people like us prepared to carry out all these projects and many more. Our group is the best one to represent you, since in it, we have people of various ages and with different skills and abilities in order to reflect the diverse population that exists in Competa, we all have in common the desire and the willingness to work to improve the lives of all of you. I give you my woman's word that it will be that way. I ask for your support and confidence on the 26th of May. Without your support none of this would be possible. With all of your help, we will advance towards the future. We will be happy to assist you individually and we hope you will share your ideas and your questions with us. GALICIAN STYLE OCTOPUS RECIPE Spring Recipe

G

alician style octopus (polbo á feira in Galician, pulpo a la feria in Castilian, because it is typical in festivals, fairs, pilgrimages) is a traditional dish of the autonomous community of Galicia, Spain, that people eat in the rest of the country too, in restaurants or as “tapas” in the bars. Before cooking it, it is recommended to freeze it to soften its meat and to thaw it the day before you want to prepare this recipe. Ingredients (4 pax ) 1 octopus (of about 4.4 pounds) 1.1 pounds of potatoes Sea salt (to taste) Spanish sweet or hot paprika (or a mixture of both, depending on your taste) 1 tablespoon extra virgin olive oil from Spain

42 The Grapevine

6 tbsp honey 1 large onion and water It is important to soften the octopus before you cook it. You can get it buying the octopus fresh and then freezing it, or buy it already frozen. The day before, take the octopus out the freezer and leave it in the fridge to thaw. Fill a large pot with water, ad a whole peeled onion, and bring to a boil for about 45-50 minutes over medium heat. While the octopus is boling, wash and peel the potatoes and then cut them in halves. Set aside. When the octopus is done, remove from the boiling water; place in a platter and let it cool.

Add the potatoes to the boiling water and boil for about 15 minutes. Slice the octopus legs with scissors (about 1/2 of an inch wide slices), cut the head into small pieces. Serve on a wooden platter: place the potatoes on the bottom and the octopus on top. Add the sea salt, sprinkle the paprika, and add the olive oil. I also like to add a little bit of the cooking water. Pulpo gallego, or Galician-style octopus, is a popular dicsh served all over Spain today. It originated in the northwestern Spanish region of Galicia, where octopus is a specialty and a common catch for local fishermen. .

Benalmadena and now lives in Competa. She was a chef in a hotel in Benalmadena and loves to cook traditional Spanish food. Now La Pena serves homemade tapas and traditional main dishes. The Menu Del Dia is extremely popular Tuesday to Saturday and each day there are different dishes to choose from. For 7.50 euro it is excellent value or if you are retired the price is discounted to 6.00 euro. As I was chatting to Colin there were wonderful smells coming from the kitchen. That day’s Menu de Dia certainly smelt good! The bar itself is traditional looking, complementing the food. However, Colin still has kept with the times by installing a 55” TV for all the major sporting events and hosts a darts team entered in the Competa darts league. Once a month he endeavours to provide live music. However in the month of May he has organised live music with Eu Remolone on the 11th May and on the 24th May he has booked Dave Parker who sings live music from Neil Diamond, The Drifters, Michael Buble, Frank Sinatra and more party music hits.

BAR LA PENA, ARCHEZ An Interview with Colin, The New Owner

C

olin has been visiting Competa for many years and 6 months ago he decided to come out to Spain on a permanent basis. His aim was to continue with what he knows well and that is the bar and restaurant business. He has managed pubs for over 35 years all over the UK from Cornwall to London to Milton Keynes. The pubs have included Green King and the Hungry Horse chains. He has done everything from front of house, managing and even at times cooking. Colin and his wife, who sadly

50 The Grapevine

passed away before they had chance to move here, felt La Pena Bar in the white village of Archez would be the perfect place for a business in Spain. Colin wasn´t ready to retire but wanted the sun and the relaxed attitude of Spain. At the end of last year he opened La Pena and served drinks only. Once he found his feet he started to cook each day en mass, with fresh produce, large dishes of popular food such as curry and served it throughout the day as tapas. As the bar became more popular Colin employed a Spanish cook Carmen. Carmen moved from

Recently the bar has started to open at 9.00am to serve breakfast both traditional Spanish and English are available. If you haven’t been to La Pena before it has an outside covered terrace as well as a traditional inside seating. Over the summer Colin hopes to open the roof terrace which will be great for BBQ’s events and live music nights. Bar la Pena is also the perfect place to cater for private parties and functions with both large inside and outside spaces and eating areas along with a great cook. Bar La Pena is easy to find opposite the river bed, near the town hall with ample parking next to the Bar.

MOUNTAIN WINE & MUSIC 2019 Summer Concerts in Sayalonga

I

’m already looking ahead to the long hot summer months – and thinking of enjoying long evenings as the air cools with a glass of wine in my hand. Lucky for me there is a winery just down the road! Bodegas Bentomiz near Sayalonga makes the exceptional Ariyanas wines – which are served in Michelin starred restaurants all over Europe – and they offer a winery tours and tastings at 12.30 daily from Wednesday to Sunday. Guests can follow the tasting with the winery’s own gourmet lunch, served at 14:00. This is a superb service and guests have been very happy with it but, though their wine-salon, with its open balcony and back terrace enjoys cool air all summer, owners Clara and André were keen to do something outdoors on those long summer nights. A couple of years ago they began hosting the Mountain Wine & Music summer concerts – and each year the musical line-up is more exciting.

54 The Grapevine

This year they are offering guests (who can arrive any time after seven to enjoy a couple of glasses of wine and relax) a three course dinner served al fresco in the forecourt, between the winery itself and the vineyard, followed by a live concert. It is the most beautiful place – an elegant, modern Bauhaus building, clad in slate and surrounded with steep slopes clothed in vines. From the forecourt there are views all the way from the rocky slopes of La Maroma, across to Corumbela on the other side of the valley, and all the way down to the Mediterranean sea. The food they serve is exceptional – reviews on TripAdvisor are ecstatic – and as they design each dish to the wine, the taste pairing can’t be bettered. Then there is the music. Concerts include Flamenco, Classical and Jazz, with superb artists at the top of their game already signed-up. Samaruco, a group of 5 flamenco artists led by Rúben Portillo from Velez-Málaga

will perform in June. In July the bodega will welcome back concert pianist Thomas Kaurich, along with two of his friends and fellow graduates of the Julliard school of New York: violinist Liba Shacht and cellist John Sharp, who play for the Chicago Symphony Orchestra. And La Bejazz, the flamenco-jazz fusion group who dazzled guests in 2017 are back for the first jazz night at the end of July. That’s just the first three; there’ll be more flamenco and jazz to come. It’ll be ideal for me to take visiting friends and family as well – a truly unique experience. What a way to enjoy the best the Axarquia has to offer – warm summer nights, good food, good wine and good music! I know they have lots of space for the summer open-air events but all the same, I’m going to make my bookings now – just in case. See advert opposite

THE FESTIVAL OF SAN ISIDRO, MADRID Madrids´ Most Celebrated Festival

O

ne of the most famous national holidays occurs on May 15th—locals celebrate the day of the patron saint of the capital—Saint Isidro. For the first time, the festival took place on May 15th, 1620 in the Plaza Mayor and lasted for 8 days. San Isidro was born in Madrid in 1082 and died in 1172. Legend has it that while the saint was praying, two angels ploughed the land for him. Amongst the miracles attributed to him, hagiographers say that once when he was building a well, his son fell in; but through his mediation he was miraculously brought back to the parapet when the water level rose causing the child to float.

Tradition also tells that San Isidro miraculously made a spring gush by banging the ground while he was ploughing. A hermitage dedicated to the saint was built

56 The Grapevine

on this spot in 1528, ordered by the Empress Isabel, after Prince Felipe came back into health by drinking water from the spring. Later, Baltasar de Zúñiga, Marquess of Valero, built the current day hermitage, with a single nave and a dome. In 1811 the Sacramental Cemetery San Isidro was built on the apse.

performers, theatrical productions, and dance shows are held in the most emblematic places of the city (Plaza Mayor, Plaza de Oriente, the Temple of Debod, etc.). As for the dances on St. Isidro's Day, the locals perform the traditional Spanish dance chotis borrowed from the Scots.

The best traditions of this holiday in Madrid have survived. Solemn events last for several days (between the 11th and 15th of May). The official opening of the festival takes place in the centre of the city on May 11th at six o'clock in the evening with a procession of giant doll heads from the Plaza Santo Domingo. The parade passes through the main streets of Madrid and finishes at Plaza de la Villa (Villa Square).

Oin the streets of Madrid, you can meet a huge number of women dressed in tight dresses flared at the knees, and men in checkered waistcoats and flat hats. Also, the ladies cover their heads with a white shawl and decorate their hair with a red carnation, and the Caballeros attach a flower to the lapel. There are special dishes for this day—small doughnuts Rosquillas.

During the next three days, concerts of brass bands, contemporary pop and rock

there, and after it, Catholics will go to the courtyard to fill the vessels with water from the holy spring. Afterwards, many Spaniards organize picnics on the hillsides. During the San Isidro celebrations, the other attraction is of course bullfighting. The San Isidro bullfighting festival is Spain's most important. This is where the best bullfighters, and bulls can be seen at the Las Ventas bullring during almost a month. Tickets are sometimes hard to obtain and are best purchased in advance. Besides the San Isidro bullfights, we need to highlight two other bullfights for their importance and tradition: the bullfight of La Prensa and the Charity Bullfight, where you will surely find someone from the Royal House.

Plaza Mayor and the so called Opera Girl for its more popular, folkloric character - bringing joy to the nights of San Isidro. But if Zarzuela is not your musical genre, you can choose between different rock concerts that take place daily in the Vistillas or Pradera of San Isidro from 9 to 12 at night. To end each day at midnight, the skies of Madrid fill with color with the nights of fire and music in the gardens of Retiro. It all ends on the 18th with a large fireworks display on the Prairie of San Isidro.

San Isidro Museum If you wish to learn more about San Isidro you should visit the museum dedicated to this saint (Plaza de San AndrĂŠs, 2; Telephone: 91 366 74 15). that this was the house of the Vargas, gentlemen of San Isidro, and the saint lived and died here. The building was constructed in the 16th century by the LujĂĄn family. When the Royal Court was transferred to Madrid, this was the residence of Nuncio until half way through the 17th century. Later, and until well into the 19th century, the Count and Countess of Paredes acquired the building, although it then entered a period of decline. In 1974, following an archaeological excavation, the whole complex was demolished and rebuilt. A visit to the Museum entitles you to a visit to the Pozo del Milagro, or Miracle Well, where San Isidro supposedly saved his son by causing the water level to rise. towns of the province gather for a weekend around the Snail celebration and mingle with snail lovers from all parts of the country: more than 200.000 people take part in this big Snail feast! The organization of the Festival is carried out by an association made up of more than one hundred social clubs whose main event is the Festival itself and who cook and eat snails, but also show themselves in parades and street activities. Because the Festival is not only about snails. There are loads of other festive and traditional activities like street performances, charanga music, outdoor evening celebrations, exhibitions of dances and human towers and entertaining competitions. The City of Lleida is home of the Snails, but also heart of the agricultural and farming industry in Catalonia, Lleida is a city of traditions. It is connected with Barcelona by high-speed train and the trip takes one hour

The patios and courtyards can be found all around the city although the main areas to visit include the Alcázar Viejo district, between the Alcázar and the parish of San Basilio, around the church of San Lorenzo and near la Magdalena as well as around the MosqueCathedral area and the old Jewish quarter. One of the most spectacular displays though can be found in the Palacio de Viana (Viana Palace), which boasts twelve different courtyards. The town hall organises competitions for the best courtyards which dates back to 1921. There is also a full itinerary of events which surround the festival which include performances by top local singers and dancers. Cordoba is also well know for its Delicious tapas and local fino sherry wine from nearby MontillaMoriles, what better way to spend a few days in one of Andalucias most typical of cities.

GET YOUR BODY SWIMSUIT-READY, STARTING NOW Summer is fast appraoching!

T

ank tops, shorts, and swimsuits… oh my! It's May, which means you'll have to peel off your winter clothes soon. While only you know what you've been hiding underneath all those layers, you’re not the only one who feels insecure this time of year. Although you can safely lose only about 1 to 2 pounds of body fat a week, you can feel more confident by swimsuit season if you begin making changes today. Here are 7 attainable goals to set and stick to, starting now:

1. Get your sweat on with strength training! If you want a bikini body, this is non-negotiable: Fit your workout in, no excuses! Commit to a full-body strengthtraining program at least three times a week to burn calories during the workout, boost your metabolism's calorie-burning

power for 24 to 48 hours after, and develop lean muscles that look and feel better than flab. Perform exercises that use more than one muscle group such as squats, pushups, rows, and lunges in a circuit to make your workouts most efficient. Tip: Try working out in the morning to get your metabolism revved up for the rest of the day. 2. Make your butt and belly your top priorities. Your glutes (butt muscles) are the biggest muscles in your body, so working them out is one of the best ways to burn calories—and prevent a saggy bikini-bottomed butt. (There's nothing worse!) Of course, everyone knows that the real key to looking great in a bathing suit is having a flat belly! Give both areas extra attention during workouts leading up to and during bikini season by performing this move right after warming up at

the beginning of each workout, 2 to 3 times a week: Bridge Marching: Lie on your back with your knees bent and your feet flat on the floor. Lift your hips off the floor so your body forms a straight line from your shoulders to your knees, keeping your hips parallel to the ground. Maintaining that straight line, lift your right knee upward, so your foot comes up off the ground. Then, return it to the starting position and lift your left knee the same way. Continue alternating (as if you are marching in place), keeping your butt muscles contracted the entire time for a total of 10 on each leg. 3. Drink extra water. Skimping on water can reduce the effectiveness of your workouts because even mild dehydration can affect your performance and fat-burning potential. If you need

another reason to drink up, swallow this: the best way to rid yourself of excess water weight is to flush your body with water. You should drink at least half your body weight in ounces each day (e.g., a 150-pound woman should drink 75 oz. or the equivalent of about four and a half 16.9 oz. bottled waters a day). Just don't skimp on the ice! Research has shown drinking ice-cold water causes your body to work harder (i.e., burn more calories) to maintain its ideal core temperature. So gulp down the cold stuff like it's your fat burning fuel—because it is!

7. Stand up taller and engage your core muscles. Think about tucking your hips underneath and tightening up your stomach as if you were going to be punched. Improving your posture will instantly make you look thinner—even if you haven't lost a pound yet!—and train your body to hold everything in once you're in a swimsuit. Every 15 minutes, set an alarm for a "posture check" to train your body: If you're standing, stand up straight and hold everything. If 4. to extract the “juice”, quite different from the processes used to extract oil from seeds for example, which usually involves chemical solvents. In order to label olive oil as EVOO, it must meet strict criteria. Including being extracted at a lower temperature and within 24 hours from the olives being picked. The oil must be obtained by mechanical cold pressing (without the addition of solvents) and be bottled immediately. It must also have no more than 1% oleic acid.

FOUR FACTS ABOUT OLIVE OIL Interesting facts about Spanish Olive Oil

O

live oil is a truly wonderful ingredient and a staple in kitchens across the planet. But despite this, a lack of knowledge around the finer details of the product is pretty widespread. Myself included. And so, I’ve collated some facts about olive oil you might find useful. 1) Spanish olive oil (and all other olive oils) are essentially a fruit juice You’ve probably never thought of it like that before. But this is one of the facts about olive oil that can surprise people: olives are a fruit and the oil is that fruit’s juice. We all know that the best juices are freshly squeezed and consumed as soon after they’re produced as possible. The same goes for olive oil, which leads me onto my next fact. 2) The difference between olive oils that taste good and those that taste less good is often down to how long ago the bottle was opened Basically, consume your best olive oils quickly once you’ve opened them. In a similar way to wine, once the contents have been exposed to air, oxidation begins and the oil will lose its flavour and aroma. We’re talking about using up your bottle within a month or two of opening it.

62 The Grapevine

If it’s been longer than that, the olive oil is best reserved just for cooking with. Purchase a new one for drizzling. 3) Light will destroy even the best olive oils Ever wondered why olive oil typically comes in a dark green bottle? It’s to minimise the amount of light that reaches the nectar. As well as air, light also causes oxidation, changing the beneficial chemical compounds and swapping out the antioxidants for free radicals. When shopping, the colour of the bottle is a good starting point as to which are the best olive oils on the shelf – the darker the better. Once you get your bottle home, a room temperature cabinet is the best place for your lovely Spanish olive oil to live. 4) What’s the difference between olive oils? Extra Virgin Olive Oil In my opinion, the best olive oils are those from Spanish olives. But the best olive oils in general are the Extra Virgin Olive Oils (aka EVOO). They are considered unique amongst oils as they are essentially 100% fruit juice. The olive “fruit” is crushed by machines

Extra virgin olive oil is considered an unrefined oil, meaning no chemicals or heat are used to extract it. Virgin Olive Oil Next in quality is virgin olive oil, but you won’t often come across this in a shop. It’s made using a similar process as EVOO and is also an unrefined oil. Virgin olive oil maintains the purity and taste of the olive, though production standards are not as rigid as with EVOO. It also has a higher level of oleic acid and a less intense flavour than EVOO. But it does share EVOO’s antioxidant capacity and richness in monounsaturated fatty acids. Olive Oil or Pure Olive Oil After EVOO, the other type you’re most likely to come across is labelled simply as olive oil or pure olive oil. This is typically a blend of virgin olive oil and refined olive oil. The refined olive oil is obtained with the use of heat and / or chemicals in order to remove flaws from the fruit. Pure olive oil has a lighter colour, more neutral flavour, and oleic acid measuring between 3-4%. It’s best used as an all-purpose cooking oil. That said, it does still share the same high content of monounsaturated fatty acids as the previous oils.

NEVER ENOUGH THYME! Campo cuttings by Lorraine Cavanagh of Viveros Florena, Cómpeta

here are few things more glorious than the look, scent and flavour of herbs and it is springtime when we probably appreciate them most. The powerful aromas as they jostle together, rubbing shoulders in the box in the car .make you long to get home and Iget them planted. Herbs, defined as plants with woody stems, were once, unsurprisingly, considered as gifts of the gods. Elaborate rituals and ceremonies celebrated their growing, harvesting and usage. They have a cornucopia of uses; we love them for their beauty, flavouring, perfume and uses ranging from medicinal, cosmetic to insecticides, animal repellents and fertilisers. You don´t have to have green fingers to grow herbs or even need a garden, nearly all will grow happily in pots and it's often handy to have them clustered around the

kitchen door where you can easily pick some sprigs to creating culinary masterpieces! They're cheap and easy to buy in pots – we always have a good seasonal selection at Viveros Florena – but, if you're not planning on planting them in the garden, then I would always suggest moving them on into bigger pots or troughs and terracotta is better than plastic. The little potfuls you buy are starter pots and they need more root space to develop properly and form big bounteous bundles of leaves. The first thing you need to know is how to group them. The Mediterranean herbs can take full exposure (to both sun and wind). Many of them are natives so they're used to tough conditions. Within this group are lavender, rosemary, sage, oregano, marjoram, lemon verbena, lemon grass, bay and thyme. These toughies will grow in poor soil and

are very undemanding for new gardeners. The softer herbs are things like parsley, cilantro, basil, chives, dill, tarragon, savory, borage, hyssop, fennel, stevia, comfrey and lemon balm which will grow admirably in dappled shade and are often used in salads or added towards the end of cooking time to give flavour. They like to be spoilt just a little; placed in a better soil/compost and away from ripping winds. Herbs, such as mint, are very invasive and best in a pot or patch of ground on their own; it's one of the few that will will grow in deep shade. Some others are angelica, sorrel, chervil, lovage – ones we don´t see too often here. Though most are grown for their leaves, not all. In general, you do not want herbs to flower – this will stop leaf production as the plant seeks to reproduce but borage is grown specifically for its lovely blue star flowers and chive flowers are full of taste, just like their leaves.
