THE GRANGE SUMMER FUN FOR PEOPLE WITH LEARNING DISABILITIES 24 July – 18 August | The Grange, Great Bookham There are lots of summer activities and clubs for school children but what about ADULTS with learning disabilities on holiday from college? That’s why we’ve created the Summer Fun programme for those with learning disabilities at home for the holidays. We’re one of Surrey’s leading providers of accommodation and support for people with learning and physical disabilities (CQCrated ‘Good’) and we have a great range of activities and skills training on offer over summer on our lovely 8-acre site in Bookham. We have a pool, gardens and grounds, vehicles for outings and, most importantly, professional and friendly support staff. It’s a good way to discover The Grange’s other services – Residential Care, Supported Living and Skills & Activities. Summer Fun is great for people with a moderate learning or physical disability. This month, as part of National Deaf Awareness Week, organisations up and down the country celebrate the great work they do for the millions of people who live with some form of hearing impairment, while educating the public on the challenges they still face. Here, Dawn Hoskins from Dot Sign Language in Woking tells us about their mission to raise awareness of the importance of British Sign Language in society… More than 900,000 people in the UK are severely or profoundly deaf, many use British Sign Language (BSL) as their only language. These people form a cultural and linguistic minority and BSL is a recognised minority language - like Cornish or Gaelic. That is 1-in-74 of the UK population. If age-related hearing loss is included - there are 11 million people affected, 1-in-6 of the UK population. There is a common misconception that Deaf people will simply be able to read the information you want to give them. Phonetic input is vital for learning to read, without sound reading becomes excruciatingly difficult. 50% of the Deaf complete their education with the reading age of 9 years old. 30% are deemed functionally illiterate. English is not their language – BSL is. There is a crisis brewing. It is impossible for monolingual BSL users to comprehend English fully. Combine this with the fact that hearing people are not learning BSL. Previously, if a child was born deaf, the family and the child were taught BSL with

government subsidies. This no longer happens. It has led to an ever-increasing pool of deaf children who are completely isolated.

PAUL MCGANN This month sees the celebrated stage and screen actor Paul McGann come to Guildford’s Yvonne Arnaud Theatre in the touring production of Gabriel, a knife-edge thriller set in the Nazi-occupied Channel Islands during World War II. He tells Rich Lee all about his character, the terrifying German Commander Von Pfunz, and about being one half of Withnail and I… Hi Paul. You’re a veteran of the stage now yet this is your first touring production. Why the wait? Most of the tours one gets offered, generally they’re usually minimum six weeks, sometimes six months. They’ve been too long for me. This one is only eight venues over two months, so it’s doable. I don’t know if I could have done six months. As much as I love it, that’s hard work. I don’t know if I’d be that disciplined for that long. So this is good for me. I’m having a blast! What drew you to this play? It’s a really good thriller; a sort of ‘page turner’. It’s pretty unpredictable as well. The audiences have been saying to us, “We weren’t expecting the laughs.” And often with deeply serious subjects, the laughs, such as they are, punctuate the tension - you can’t just act unalloyed tension for two hours, it’s too exhausting. And the first ten minutes or so it’s funny, almost farcical. And then it’s sort of does ‘something’… It’s lovely being in something you know works. It’s just a great yarn and audiences are loving it. What makes Nazi-occupied Guernsey such a compelling location for a story like this? The islanders were in this really weird situation: it wasn’t Holland, it wasn’t France. There was no Gestapo, no resistance; what they called this model occupation. It wasn’t all sweetness and light, of course; there were deportations and they captured any Jews they found. And eventually there was an SS concentration camp on Alderney – many people forget there was a

concentration camp on British soil. It was a weird, weird period and the islanders were trapped and the story and the play has that claustrophobia that audiences have been really responding to. What kind of conflict is playing out with your character, Commander Von Pfunz? ‘Von Pfunz’… sounds like a fart in a bath. He’s a new arrival, an army ma jor, the local commandant on that bit of the island (Guernsey), and he’s got power and sway over the occupied islanders. And he lets us know pretty early on that… he’s seen ‘something’. He’s come from somewhere. And although he’s not explicit about it, he lets slip to Jeanne, the main character, that something happened that affected him. Were they modern characters they’d talk about their feelings. But they’re wartime characters so they don’t. So he’s a little bit cracked, which is great. They’re the best characters to play. And you have to do all that while wearing a very sinister side-parting… My dad would be so chuffed were he still alive; it’s my first ‘sensible’ haircut! When I was home the other day I went to my sons’ barbers and I thought I’d better take a photo along to show them what the character looked like, and he said, “Oh yeah, I know that one. It’s every second haircut these days. I’ve done about five this morning already. Sit down.” It took him about five minutes. Von Pfunz was way ahead of his time (laughs.) The play celebrates its 20th anniversary in 2017, but the film that has, arguably, most defined you turns 30 this year. How do you feel about the phenomenal adoration for Withnail and I among film-lovers? Often the first film you did was always the best one you’ll ever do, because it was so exciting. The idea of being in a movie was so out-of-your-league as a 26-year-old kid. That really was the only ambition I’d ever had. We’ll always love that film, chiefly because it was the first film we ever did. I’d never done one, Richard E. Grant hadn’t done one, Ralph Brown hadn’t and Bruce Robinson had never directed one. In a way, you can tell that we’re sort of making it up as we go along. And a lot of that sprit comes across. When I watch it now it makes me laugh. I can’t watch it as a story so much but more like a home movie. I still remember how happy we were. And you never really get that feeling again; that first charge of excitement is just beautiful. And how jammy were we, that the first film we made was Withnail and I? Withnail and I is one of the most quotable films in cinema, so do you mind those famous lines following you around? Ah, you’re kidding, I love it! I remember being in Canada, in the depths of winter, in horizontal sleet with the parka hood up, and some disembodied voice from across the street shouts “You’ve gone on holiday by mistake!” You couldn’t make it up, it’s fantastic. It’s known the world over. How could you not enjoy that?

It may seem like spring has only just started, but for us the Surrey County Show heralds the start of the sunny season in our beautiful county. Since its beginnings way back in the fifties, the Show has become the county’s most iconic family day out. This year the organisers, the fine folk at the Surrey Agricultural Society, have heralded a more childrenorientated show with plenty of super cool things for your lambs, calves and foals to do.

This year the Show has been ‘zoned’ to it make it even easier for visitors to find their way around. You can discover the Motor Zone with a high-tech Formula One simulator; a Health and Wellbeing Zone, a Home and Garden zone as well as a Creative zone.

Food, Glorious Food Now of course, the Surrey County Show remains one of the most foodie friendly events of the summer and you’ll find plenty to make your mouth water at the Food and Drink zone, with demonstrations from a butcher, a baker, a chef and a brewery and, of course, a galaxy of food stalls selling all kinds of goodies.

Animals Galore As ever, the animals are the real stars of the Show. There are literally thousands of creatures from huuuge highland bulls, way down to pygmy goats. Competition is rife again this year; there will be two equine rings as well as the grand arena which will play host to everything from the World’s Grumpiest Pig completion to show jumping classes with national horse and rider combinations competing for a prize fund of over six thousand pounds. New this year, Noel Armstrong will be hosting Sheep Dog trials. The show is really inclusive and that means you have the chance to bring along your dog and maybe even win a rosette yourself as well as a canine photoshoot in the fun dog show. And yes, all breeds of four legged friends are welcome, there really is a class for everyone! Even as a spectator, there’s so much to see on the doggie front with dog agility, hounds and terrier racing

and even gun dog training throughout the day.

Loads for kids to do! As ever, the show will have loads for the kids to enjoy; Punch and Judy shows, vintage funfairs, brand new giant games as well as a return of Miller’s Ark Farm along with their range of small, friendly animals for the kids to enjoy. Keep a look out this year for the Dinosaur invasion; they could be lurking everywhere! Also new this year, and really cool to boot, is Action Wheels which is a safe and exciting cycling activity aimed at children aged 2 and upwards.

Rural Activities But we all know that at the heart of the Surrey County Show is a celebration of Surrey’s rich rural life, its country heritage and the people that keep that history and culture alive. And that’s what makes it such an experience; yes, there’s so much to do but just when you thought you’ve seen it all you come across all the mighty hawks and ma jestic eagles in the falconry displays, hilarious duck racing in the Countryside Arena, a working milking parlour with real cows, a steam saw bench and an impressive Farming through the Ages display. Increasingly important in this day and age, there is also the crowd-favourite bee and honey tent offering advice, demonstrating candle-making and a live bee release on the hour every hour. The list goes on and on; a floristry marquee full of colour and scent, a poultry tent featuring an array of weird and wonderful feathered friends and Dorset Axemen – we don’t quite know what that last one is but it sounds awesome!

We never underestimate the level of devotion people can have for a particular ingredient or crop. Even something as humble as watercress can be cause for celebration. Just ask the good people over the county border in Alresford, Hampshire. Their nationally acclaimed annual festival brings together thousands of visitors drawn from the local community and from far and wide to celebrate watercress on 21st May - the superb locally grown, delicious and super-nutritious and versatile crop. The entire centre of New Alresford in Hampshire becomes a huge street festival. Hampshire Farmers’ Market and others will create a large food market showcasing the very best local producers and celebrity chefs will demonstrate some delicious dishes. There will also be a large festival market with stalls selling arts, crafts, jewellery and clothing, items for house, garden and much else besides. One of the main highlights of the festival is the street cavalcade up Broad Street starting at 10.30am when jazz musicians, Morris dancers and local school children accompany the Watercress King and Queen who sit atop a horse and cart. The children distribute the first of the season’s watercress harvest to festival-goers.

Throughout the day, entertainment is provided by the many musicians and performers and there are activities for children of all ages, including circus skills workshops, face painting a petting farm, climbing wall. Visitors will also have an opportunity to take a look at Alresford’s historic Fulling Mill and the Eel House - a short walk along the banks of the picturesque River Arle. stu henshall’s Transplant Supper Clubs set off for Summer... Few cooks have put such an inimitable stamp onto Surrey’s food scene in recent years as Stu Henshall. Since 2015, Stu has been evolving his Alternative Kitchen into an awesome portal into his world of bold, delicious, creative plantbased cooking and sustainable living. The Guildford-based musician, cook and host of his Alternative Kitchen TV series, has become a draw for Surrey’s foodies online, in print and in person at all kinds of events, particularly last year’s Always the Sun Festival where he stole the show at the Outdoor Kitchen. Always on the go and bursting with ideas, Stu’s latest venture is taking the Alternative Kitchen out on the road, the water, possibly the air (well, if anyone could pull it off…) and by any mode of travel that becomes available as part of his new touring Transplant supper clubs, travelling up and down the UK, from Brighton to Edinburgh, inviting lucky diners to sample his super-tasty, 100% plant-based, ethical grub. What makes Stu Henshall’s recipes so outrageously eatable is his innovative

approach to making the most of plantbased ingredients to conjure all the comforting, sweet, savoury, creamy, crusty, gooey, crunchy, mouth-watering flavours and sensations of your favourite dishes with plenty of left-field surprises thrown in for good measure. “I wanted to get out of my kitchen and cook in some unusual places and let people try the food,” Stu says. “That’s where the Transplant idea came from. I want to take it to different parts of the country, and I thought where best to start it than in my hometown of Guildford. “For as long as I’ve lived here I’ve always admired the town’s waterway but been frustrated by how little it’s used in interesting ways. I was walking along the river and spotted the Angel Blue, a narrow boat owned by Surrey Outdoor Learning Development, which was an ideal size for the supper club I had in mind, and they agreed to let me use it.” Fortunately for us Surrey-types, Stu will be embarking on his first Transplant travels with three supper clubs in June in Guildford, from the deck of the Angel Blue. Each event can accommodate ten diners, who will enjoy a three-course meal cooked by Stu right on the deck while travelling languidly down the River

Wey over two easy hours of relaxing fun. They’ll receive a welcome cocktail on arrival and drinks are included in the price of the ticket. Guildford’s own micro-brewery The Little Beer Corporation will also be brewing a beer especially for the event. Tickets are selling fast, so don’t delay, but you’ll have another chance to experience Stu’s Transplant supper club this summer as part of the Always the Sun Festival’s Field to Fork Dining Experience in September. Transplant will be taking over the Saturday night and Stu will be giving an exclusive demo on Sunday. GUILDFORD BEER FESTIVAL 2017 We’ve been working up a mighty thirst in anticipation of the return of the glorious Guildford Beer Festival, an event that manages to capture summer, Surrey and the salubrious art of drinking beer in the sunshine all over two days. This year will mark the eighth Guildford Beer Festival (GBF), and since its debut in 2010, the event has grown in stature to become one of the most celebrated beer bashes in the south east.

The event’s success is surely down to the fact that there are now over 100 fantastic breweries and micro-breweries within 30 miles of Guildford, something that the Guildford Beer Festival exists to celebrate with more local cask ales, craft beers and ciders this year than ever before. And with even more people riding the wave of truly artisan beers these craftsmen can be sure of a wildly enthusiastic audience at the GBF. James Faulkner, Chairman of the GBF, says: “The GBF has become something of a Guildford Summer Institution. Nearly 4,000 attended last summer. We always try to improve the event each year but also to ensure we don’t make big changes to what is a very successful format.” From 2nd to 3rd June, the GBF will sprout up in its traditional home, the Guildford Cricket Club. This location in the heart of Guildford makes travel to the festival super-easy thanks to the proximity of mainline rail and bus routes. And with free parking you’re looking at zero hassle, maximum fun. There will be over 80 different cask ales, craft beers on draught and ciders to sample over three timed sessions. These are sourced from

around 30 local independent and micro-breweries and cidermakers including old favourites Hogs Back and Little Beer Corporation breweries. Separate bars will sell a selection of spirits, wines and soft drinks and visitors can tuck into that ultimate al fresco feast, a hog roast courtesy of The Barbecue Chefs and handmade, wood-fired pizzas from Stromboli Pizza. New to this year’s festival is The Silent Pool Gin Bar. The nowlegendary local distillers will offer bespoke, hand crafted gin and vodka fresh from their Silent Pool distillery based in the Surrey Hills. These will be expertly served with FeverTree tonic. Silent Pool’s stunning Coppa glasses will also be available for purchase. Throw in a commemorative Guildford Beer Festival glass and souvenir programme with every ticket, and live music culled from some of the finest local artists in the Andertons Music Tent featuring headliners the Sheratons (Friday), Tom Worrell and His Band and Sunhouse (Saturday), with – fingers crossed – some lovely weather – and we’re talking about the kind of unmissable beer festival that leaves all others scraping the barrel.

SONDES PLACE ASPARAGUS WITH A SALMON SCOTCH QUAILS EGG, BY TWO MANY COOKS Spring hasn’t truly sprung for us until beautifully fresh and buttery asparagus arrives, and the month of May is when these seasonal spears hit their peak. Versatile, nutritious and unfailingly delicious, some of the best asparagus in the UK is grown here in the south east, and we certainly can’t wait to see how Surrey’s chefs are planning to use this hero among vegetables over the next few months. For those eager to work wonders with asparagus in their own homes, one of Surrey’s best loved events caterers, Two Many Cooks, have provided a simple, succulent dish they often use to wow wedding guests, using asparagus grown at Sondes Place Farm near Dorking, but that can easily be made at home for a light and lovely taste of spring.

Ingredients Asparagus Flaked Poached Salmon Fillet Diced Smoked Salmon Cooked fine diced Shallot Chervil, Chives and Dill Seasoning Quails Eggs Egg Flour Breadcrumbs

Method

Mix together all the salmon, herbs and seasoning in a bowl. Cook your quails egg in boiling water for 2 and a half minutes then chill in iced water immediately and peel very carefully. Next use 35g of the salmon mix per egg to mould the mix gently around the egg. Use the palms of your hands to mould. Roll your egg with its salmon casing gently in a plate of flour then in some mixed egg then lastly a plate of breadcrumbs. Boil your asparagus for 2/3 minutes. You are now ready to deep fry your scotch egg until it is golden brown. Serve with hollandaise sauce.

TALKING TO… GINO D’ACAMPO The UK food revolution has produced a galaxy of culinary TV stars over the last couple of decades, but few have been as popular as Naples-born Gino D’Acampo. Author of over a dozen cookery books and founder of his own string of restaurants, My Pasta Bar, Gino is most recognisable from his many TV appearances. Fresh from a hugely successful fourth series of Gino’s Italian Escape on ITV, Gino D’Acampo is bringing his passion and flair for Italian cookery to G Live, Guildford, on Thursday 11th May…

One of the first restaurants you worked at when you arrived in the UK in 1995 was Cambio in Guildford (now closed.) What do you remember about your days working and living in Surrey? I particularly remember how varied and appreciative the customers were - they know their food in Surrey, so it was always a pleasure to welcome them to the restaurant.

Any chance we’ll be seeing one of your restaurants open near us any time soon? Maybe! We’re looking at a number of new sites and when the right one comes along, we’ll be there like a shot! It’s a perfect area for a restaurant like mine which offers a fun, modern take on the Italian experience while staying true to the traditional values of fantastic fresh food prepared with passion.

Your career has gone in so many directions, from restaurants to development, to TV, radio, apps and live shows -and even the jungle. What drives you to always try new things? I like to keep busy! All my life I’ve tended to be quite impatient; when I make my mind up about something I want it to happen right away. I don’t really know why, but I’ve always been attracted to the next new project – especially if it’s a totally new experience.

What has been the greatest challenge of all of them? Having to eat a rotten egg on I’m a Celebrity was absolutely disgusting and definitely the most difficult thing I’ve had to do.

What are your earliest food memories and when did you know you wanted to cook for a living? I grew up in Naples, in Southern Italy, and inherited my love of cooking from my nonno (grandfather). He used to let me help him in the kitchen and taught me so much - about cooking and about life. If I close my eyes, I can still see him rolling gnocchi into shapes while I helped him serve it to our huge family. When I saw the pleasure and happiness good food can bring to people, I thought: “This is what I want to do”.

How do you think the industry has changed for young chefs since you started out?

so many combinations and sauces . . . I never get tired of it. A simple plate of spaghetti, with extra virgin olive oil, fresh cherry tomatoes, chilli, fresh basil and garlic is enough to keep me happy!

Finally, what do you most enjoy about a live audience such as those coming to see you at G Live, Guildford this month? I love a live audience – you never know what is going to happen! This is my second live tour and I can’t wait to get on the road again – there will be loads of food and fun and I’d really like to think that the audience will come away fired with the enthusiasm to get cooking the Gino way!

Because of TV, everybody nowadays knows so much more about food and its preparation – and everyone has become a restaurant critic, ready to tell the entire world the moment everything isn’t entirely perfect. Young chefs, therefore, are liable to be judged more severely than they were years ago and consequently are under greater pressure than before.

Where to Eat: The Station House Last year, Haslemere’s iconic Inn on the Hill was transformed into the Station House, a modern love letter to vintage steam travel and hearty French cooking. We just knew we had to get on board… Sometimes, to go forward you have to go backwards. Perhaps that was the thinking behind the reimagining of the historic ‘Inn on the Hill’ last year by new owners the Upham Pub Group, perhaps not. But in choosing to retrofit the building to conjure the soot-streaked glamour of vintage Victorian train travel, it’s hard to argue they haven’t stumbled upon a pitchperfect aesthetic for this storied building, which has overlooked Haslemere train station since the 1860s. It’s a subtle spell, but one you can’t help but fall under the moment you step inside the Station House. The dining room runs through the ground floor and segues towards the bar, the whole space wrapping you in dark woods, mustards and petrol blues. Fetching art deco touches abound, from cut-glass spherical chandeliers and evocative tourism posters and advertisements from the early 20th century.

And you can’t help but smile when you glimpse the booths fashioned to look like steam-era train compartments. You suspect the fictional Belgian sleuth Hercule Poirot would feel very much at home here, resting his Homburg hat on the brass nook above and lighting one of his Russian cigarettes while sipping a crème de menthe. The Station House’s cocktail menu serves anything but that fusty old drink it seems, but an impressive wine list and winning selection of craft beers and ales should tempt anyone who doesn’t consider themselves the ‘greatest mind in Europe’. Poirot aside (thanks, Wikipedia, you can go now), and the Station House offers many more surprises. Brasserie turns to bistro just beyond the bar with a chic little semi-rotunda bathed in natural light and suspended coppertone lamps (just try to imagine the view outside is the Med and not the car park.) Head upstairs and the Station House unfurls further, offering a whip smart café that makes for an ace coffee stop and a sun-trap terrace patio ideal for soaking over some summertime drinking. But, to the food and the restaurant’s breezy lunch menu offered up a happy choice of light bites and plenty of nods to some classic French bistro plates. That meant Escargot, naturally; an icky choice for some, a genius, juicy ‘garlic butter delivery system’ to everyone else, and these didn’t disappoint at all – although a

bit more bread to sop up those fragrant, oily pools the snails had vacated wouldn’t have gone amiss. We also fell on a ham and parsley terrine; succulent, herby and seasoned in all the right places and nicely spiked with slivers of pickled vegetable and a mustard sabayon, and a really delightful dish of cognac cured sea trout. Although the cognac had faded a little far into the background, the fish itself had kept its beautiful flavour with that cool and soft, gummy texture sublimely paired with some crispy-airy blintz-like sweetcorn pancakes flecked with tarragon. Magic. A smoked duck breast salad came to life with some bright mango, tangy fennel, pickled radish and toasted pecan nuts tumbled beneath generous slivers of that lovely rich meat, but a classic of French comfort food really won the day for me. A Chicken Cordon Bleu - a plump chicken supreme rolled in bacon and a rustly golden breadcrumb crust - came perched on fat spears of juicy new season asparagus, the hallowed veg bringing freshness to the bird above with a little extra crunch from toasted pine nuts, the whole glorious business sat atop a glossy pool of buerre blanc. You don’t have to be a hopeless Francophile to enjoy this kind of cooking: You just need a beating heart. bear on their evening menu. A glance later proved it. It’s at dinner that you’ll find the truly crowd-pleasing dishes beloved by us French-fanciers, dishes like beef short rib bourguignon; pan seared foie gras; grilled lobster thermidor; Provence herb battered hake, Parisian gnocchi... I could go on, but then the only sensible thing to do would be to return to the Station House, which has given Haslemere a fantastic new destination for some hearty French cooking, a vibrant spot for coffee and spangly new hotel rooms making it perfect for adventures in Surrey, Sussex and Hampshire. BAKE WITH JACK’S Olive & Feta Cheese Twist Bread

ack Sturgess is the award-winning chef behind Bake with Jack, the Surrey-based foodie phenomenon that has got loaf lovers baking awesome artisanal bread in their own homes. Here he shares his recipe for a bread that tastes like nothing short of sunshine.

Jack says: “This bread is packed with all my favourite Mediterranean flavours: Feta, thyme, lemon, olives and tomato, perfect for the warmer months coming up! Serve this one with a simple pasta dish, risotto, or just some cured meats and salamis.”

INGREDIENTS 200g 50g 5g 10g

Strong white bread flour Wholemeal bread flour Salt Fresh yeast or a 5g dry fast action yeast 150g Room temperature water 10g Olive oil

For the Filling 65g Olives 3tbsp Sun dried tomatoes in oil 1 Lemon 100g Feta cheese Fresh Thyme

METHOD 1.

Weigh your two flours and salt into a large bowl. Weigh the water into a jug. If you are using fresh yeast you’ll need to dissolve it into the water before moving on to step 2. If you are using dry yeast, pop it into the flour bowl.

Pour the liquid into the bowl and the olive oil, give it all a mix until the dough comes together.

3. Knead the dough on a clean table for 8-10 minutes, without adding any extra flour. 4. Shape the dough into a ball, using a very light dusting of flour, and place it back into the bowl. Dust again, cover with a clean cloth, and leave to rest at room temperature for 60 minutes. 5.

While the dough rests, you can prepare a sun dried tomato paste, either by chopping the tomatoes very finely, or blitzing into a paste in a food processor with a little of the oil they are kept in, set aside.

6. When your dough has puffed up nicely, dust the table with a little flour and turn the dough out onto it so it lands upside down. It should come out in a circle shape. Dust the top very lightly, and press the dough out with your fingertips to flatten slightly. Pull out four corners making it square.

7. Use a rolling pin to roll it out into a rectangle, about 25cm by 35cm, with the shorter side closest to you. 8. Spread your sun dried tomato paste evenly over the dough, right to the edges. Then, crumble over the feta, tear the olives and sprinkle them over too. Grate a little lemon zest and pick some thyme leaves over the top. 9. Press everything down with your hands to stick, and begin to roll up the dough starting from the side closest to you. Roll everything up into a sausage and pinch to seal the edge. Dust the dough really well. 10. Cut the dough sausage longways into two, and turn each piece so the filling faces outwards. 11. Hold the two pieces of dough by the ends, and twist up in opposite ways. Tuck the end pieces underneath and transfer to a parchment lined tray. 12.

Allow 30-45 minutes for your shaped dough to prove up under a cloth. In the meantime preheat the oven to 180°C Fan/Gas Mark 6.

13. Slide the tray with the dough on into the oven. Bake for 30-35 minutes. Remove from the oven and allow to cool on a wire rack

RUN FOR THE SURREY HILLS! Haslemere Bumpy Triathlon 2017 Sunday 4th June | Haslemere Leisure Centre It’s not too late to sign up for The 2017 Bumpy Triathlon – part of next year’s Haslemere Festival. This will take place on Sunday, 4th June and will again incorporate Haslemere’s very own Sprint Triathlon, with the bike and run coursing through the South Downs National Park and some of the most attractive scenery in Surrey and West Sussex. The starting venue (and Transition area) will be Haslemere Leisure Centre off King’s Road in central Haslemere.

The Hurt - 5km, 10.5km or 21km Saturday 3rd June Lawbrook Lane, Peaslake With a name like that, we’re guessing this isn’t going to be a walk in the park, much less a gentle jog through the Surrey scenery. As it happens, The Hurt, one of AAT Event’s most challenging (in a very strong field) fitfests, is truly the ultimate a test of every off-road athlete who participates, no matter what kilometres they put in. Throw yourself into a 5km, 10.5km and 21km (half marathon) trail run that climbs through the enchanted forest of the Greensand Ridge in The Surrey Hills. This off road run will offer magnificent views and superb scenery as you race through the alpine-esque forests of “Little Switzerland”. Come prepared for steep ascents and descents, running on sandy and stony trails and single tracks. This is a chip-timed event for participants, Coffee and tea will be available at the start and finish. Jelly babies and water will be available if you need a ‘pick-me-up’ during your race. Water, cakes and bananas will be available at the finish. The Peaslake Village Stores is in the centre of Peaslake so remember to take advantage of them during your post race debrief. Realising that Haslemere naturally provided the perfect location for a triathlon, a group of triathlon enthusiasts from Haslemere Border Athletics Club got together with The Haslemere Festival in 2015 to put on Haslemere’s first ever triathlon - and The Haslemere Bumpy Triathlon was born. Although an undulating course, Haslemere Bumpy Triathlon is still a Sprint Triathlon (400 metre Swim (16 lengths), 20km Cycle, 5km Run) and suitable for all abilities. The aim of the organisers was to encourage absolute beginners and novices to participate in the UK’s fasting growing lifestyle sport – and, as a result, the first Haslemere Bumpy Triathlon was awarded Sports Initiative of the Year! The triathlon is organised by volunteers and is a not for profit event supported by The Haslemere Festival and every competitor receives a free t-shirt and drinks bottle! TEST DUMMY: BARRE Chloe Kearns discovers a workout that combines pilates, yoga and the grace and power of ballet at boutique fitness studio CYC:D in Haslemere.

On Monday evening I went to barre. Not a drinking establishment, although at least four people in my office made that joke so that I might need to address that, but barre, the ballet sort. More sugar ‘plump’ fairy than ballet princess, I wasn’t quite sure what to expect or if I’d be able to master anything remotely resembling graceful but, dedicated Test Dummy that I am, off I went to have a go. CYC:D in Haslemere was easy to find in its central location just off the High Street. Entrepreneur and owner Faye Walton met me in reception and showed me round. Despite being a small space, they’ve certainly made a lot of it, even finding room for a cool juice bar area serving coffees, superfood smoothies and energy balls. This boutique fitness studio is finished to a high spec, complete with colour changing neon light bars that add a special something to the atmosphere. Suddenly the name clicked: CYC:D. Yes I was! I could feel my enthusiasm mounting. Faye introduced instructor Sophie who’s been leading classes at CYC:D since they opened last year. “It’s been quite a ride,” explained Faye, having grown this place from concept to reality in an impressively short period of time. “People say I’m crazy doing this with four kids, but I love it.” A lawyer in a previous life, Faye was inspired by what she saw on a trip to the states and knew that Surrey was ready for a new kind of workout concept. Regulars started appearing, a mixture of gal pals and those flying solo, and a dude- blokes should be aware of barre too. The workout was about to prove that barre really develops key competencies required across a variety of sports and disciplines, focussing on stamina, co-ordination, flexibility and core strength. Kit on, socks off, I took my place at the barre

in the intimate studio, ready to begin. Nothing too tricky to start with- Sophie uses the same routine to get the class going with something familiar before mixing it up with progressively demanding sets of moves when the muscles have been inducted. Although the moves seem relatively simple, repeating them multiple times requires concentration and focus. Even with my increasingly vague recollection of childhood ballet classes, I recognised enough of the dance vocabulary to be able to anticipate each move ahead of time- plié, développé etc. Sophie added in coordinating arm moves and pulse sections which REALLY got the burn going. I was concentrating so hard, it didn’t occur to me to look at myself in the wall of mirrors. When we turned at the barre to work the other side, I was grateful for the air-con but this was a motivating, feel-good class for sure, free from any of the ‘omg, look at her’ nonsense that might put some people off trying this kind of thing. With a funky playlist of everything from ‘Let Me Be Your Fantasy’ to more modern club hits and classy cool strip lighting, this was cool with a capital C, and I’m pleased to say, I felt comfortable here- yes, me- sugar plump fairy. Minus tutu and inhibitions. After the class, people stayed to chill and chat before the room transformed into a spinning studio with a club vibe at the tap of an iPad and there was just time for me to sample some apricot, almond and coconut energy balls at the bar (the more familiar sort) as I mopped my brow post workout. With 15 instructors running cycle, barre, yoga, pilates and HIIT classes, no membership fees and some fantastic bulk buy deals, there are plenty of ways to sweat it out at CYC:D.
