Charity Spot: The Royal Surrey County Hospital Charitable Fund

The Guide 2 Surrey have joined forces with The Royal Surrey County Hospital Charitable Fund to support them across a number of fundraising activities, including their campaign to open a vital early pregnancy unit… While we rely on the NHS to provide many of the services we access through our hospitals, an awful lot of fundraising is necessary to provide extra equipment an enable the redevelopment of facilities. TG Media, home of The Guide 2 Surrey and The Good Time Guide are delighted to announce that we will be working closely with The Royal Surrey County Hospital Charitable Fund to support them in their excellent work. An umbrella organisation which incorporates over 70 different trust funds related to different areas of the hospital, The Royal Surrey County Hospital Charitable Fund strive to raise additional funds for the hospital to facilitate the best possible patent care and medical treatment.

One in Five Royal Surrey County Hospital have launched an appeal to raise vital funds for an Early Pregnancy Assessment Unit. Tragically, one in five pregnancies will end in miscarriage and the Trust needs to raise more than half a million pounds to create a dedicated and protected environment for these women. Each year the Trust sees around 2,000 women experiencing difficulties in early pregnancy; more than 150 of these are for their second or more miscarriage. Currently, these women are forced to sit alongside other pregnant women in a busy outpatient department, which can add to their distress. The proposed facility will include its own scan room, which will be manned by a consultant gynaecologist and obstetricians who specialise in early pregnancy. It will also feature two counselling rooms, a clinical examination room, recovery area, and separate waiting area and reception, which is not overlooked. Doctor Karen Morton, the Clinical Director of the Department of Obstetrics and Gynaecology, says: “Very sadly, one in five pregnancies will end in a

miscarriage which means that many women come to the Royal Surrey for care in this distressing situation every single year. These women, and indeed their partners, are often losing a muchlonged for baby, and the kindness and timeliness of the care they receive can have lasting effects on their recovery, and ability to move on to happier times.” Lawyer Sarah Ring and her husband Charlie have lost three children at various stages of pregnancy, including one just before 12 weeks. “Having been in the situation repeatedly, I know that if you have lost a child or if there is a chance you have miscarried, it is debilitating to be faced with a room full of blissfully happy pregnant women. “A pregnancy loss before 12 weeks is still losing a child,” said the 34-year-old mother. “I loved each of my children from the first time that I saw the line on the pregnancy test stick. “Although the new facility will not change the fact that a mother has lost her baby, it will ensure that these mothers, and the fathers, are treated with the utmost dignity and respect at such a painful point in their lives.” TG Media will work in partnership with The Royal Surrey County Hospital Charitable Fund on a number of

fundraising activities, including the Royal Ramble, a charity walk that the whole community can get involved in in September.

Guildford Shakespeare Company’s popular Sonnet Walk Weekend returns this April, taking to the streets of Guildford for another magical mystery walking-tour, where you’ll encounter Shakespeare and his characters in the least likely of places. As ever, the route of the walk will be kept under wraps until you arrive! Each walk lasts approx. 60 mins and are every 15 minutes. Last walk starts at 3.15pm Walks start from Stoke Park Nurseries, Nightingale Lane, Guildford.

One of the most ancient festivals and a tradition that only goes back the odd millennia; be an early bird and rise and shine for May Day. Taking place on St. Martha’s Hill on the outskirts of Guildford, meet at 5.15 am for a delightful dawn overlooking the Surrey Hills. Be enchanted by the Pilgrim Morris Men as they wave their sticks and hanky’s in honour of the first day of May.

If you don’t know Imelda May, prepare to be amazed. If you are already a fan, get ready to hear her as you never have before. The truly unique artist has found a new groove, exploring blues, soul, gospel, folk, rock, sensitive acoustica, cinematic drama and explosive balladry on a set of the boldest, most personal and intimately autobiographical songs she has ever written.

Chilworth Duck Race 17th April / Chilworth

The annual hoo-ha of whose duck will sail its way fastest down the babbling brook of Chilworth takes place on Easter Monday. Organised by the PTA of Chilworth C of E Infant School this year, race proceeds go straight to school projects. Be the spectator and watch hordes of multicoloured rubber-ducky’s head on downstream. TALKING TO WARD THOMAS 22-year-old twins Catherine and Lizzy from Hampshire made history in 2016 by becoming the first ever UK country act to reach the top spot in the U.K. Album charts with their second album, Cartwheels. This month they take the album on a UK tour, swinging by G Live in Guildford on 28th April to wow the audience with their uplifting and meticulously crafted, country-soaked pop. We caught up with Lizzie Ward Thomas to find out more about their meteoric rise… The last time we met you in 2014, you were the all-conquering heroes at GuilFest. You’ve clearly gone on to even bigger things… I know! I think it’s been the quickest three years – they’ve gone so fast, it’s been amazing and surreal. What drew you towards Country music in the beginning? When we watched the film “Walk the Line” we fell in love with ‘Johnny Cash’ and ‘June Carter’. But we were completely sold in what we wanted for our future when we heard the Dixie Chicks. Their music inspired us a great deal.

How did you catch that first break that took you to Nashville?

You’ve said that Cartwheels ‘isn’t a Country album’, but was it a conscious decision to explore genres other than Country?

Our singing teacher at the time was a session singer in Nashville and she had a lot of contacts there. We showed her our first song ‘Footnotes’ and she sent it over there to a producer and he invited us over. The next thing we knew we flew over to Nashville and recorded six or seven songs, and kept going back over two years until we’d recorded our first album, ‘From Where We Stand’ (2014.)

The whole songwriting process was very natural and organic, but we wanted to show a progression and show a development from our first album and sound which we wrote when we were. I like to think of every album as a portfolio of what you’re doing at the time – so definitely Cartwheels is a portfolio of us in our early twenties. And it shows that we’re listening to all sorts of music – obviously we’re still in love with our Country music too.

We were also writing stuff out there too and spending time writing and recording with all sorts of people and musicians in the community of Nashville. It was just incredible and we learnt a lot from Nashville. I think I know my way around Nashville better than London! (laughs) British-born country music is gaining recognition thanks to artists like Shires, Raintown, Sasha McVeigh and yourselves. What is it about the genre that translates across the Atlantic so well? I think people are starting to understand Country music more now; they realise it’s not like the old ‘Country and Western’ genre. ‘Country’ has a very wide meaning now with so many genres and artists within it. But I think what translates over here is everybody loves honesty, a story and a melody. And that’s what Country represents completely. Other genres too; I think the way Adele writes songs actually takes a kind of Country perspective. Country is becoming more relatable, you know it’s not just ‘trucks and cowboys and dirt roads’… (laughs.)

Your 2017 tour begins this month, but what do you enjoy – or don’t enjoy – most about life on the road? We love performing and seeing a different audience at every place we go. Every place is different, and it’s so exciting seeing people singing the songs back at you, especially when they’re singing album tracks, not just the singles. It shows they really listen to the whole album. What we don’t like about touring, is that it’s very tiring and your sleep patterns aren’t normal (laughs.) But what we do love about our team is that we’ve all grown together. We’ve been with our band since the very beginning, we know each other so well. I couldn’t imagine going on tour with session musicians which we didn’t know so well, so we’re very lucky that we’ve got each other. Ward Thomas perform at G Live, Guildford on 28th April. TALKING TO JAZZIE B

“A HAPPY FACE, A THUMPIN’ BASS, FOR A LOVIN’ RACE” A necessity to the formation and shape of popular culture today, Soul II Soul garnered global accolades back in the 90’s with their debut record ‘Club Classics Vol.1’. Led by the influential Jazzie B, they have been inspiring generations ever since with their undeniably dance floor friendly club jams. We caught up with Jazzie B ahead of Soul II Soul’s show at G Live this May to talk shop. What can people expect from a Soul II Soul show – have you got the whole crew with you? Any special surprises? Always got special surprises. The bands been together for close to 9 years now and we feature talent and hopefully go through all the hits that people are familiar with, and some songs that they probably wouldn’t be. It’s an amazing thing for us to still be out there doing what I really love to do and believe you me it’s a lot more fun now than it was during the hurricane season of soul II soul back in the 90’s. The idea of pressure, walking into unknown territory. I started my career in the studios in terms of making and producing music. The idea of the band on the road… it’s the other way round for me. So I’m more in the embryonic stages of my experiences on the road and as I’ve got older I’ve had more control over the band scenario where you can truly call us a collective as a band because it’s not session musicians. For members who have endured the music over the 20 years, most of us are around the same age but we’ve got quite a few younger cats in the band as well who share their experiences and knowledge and on stage it’s like the analogue world meets the digital world and its quite explosive. And for anyone out there who is still curious about what the sound is and what goes on, we’ve recently released an album where we’ve gone into the studio live, (‘Origins’), so on

the turntable you can actually listen to an actual show which will give you the idea of what’s going on both sonically and physically I guess. Sonically meaning that I’ve been able to interpret a hybrid sound from the studio on to the stage with live musicians who are of that calibre which I think nowadays is really interesting, where the musicians, in terms of us putting the band together, have really meshed as a real band. And I know that sounds a bit odd. But usually in situations, like back in the old days, we were literally hired a band back during 1990, which again was an experience and I guess because I had the pick of the best dudes out there in America I had an amazing band which really set the precedent for me 20 years later because it wasn’t just about playing the music that was put in front of them, it’s also about the musicianship and the depth in terms of how they interpret my idea of the groove. It’s a very important thing, especially with the style of music we play. The idea of the contrast between quantized music and musicians who can play at that level and have that input where you can actually feel what the person’s about. And every day’s an adventure in terms of when we go out live and I’ve been doing this for the past 12 years and I enjoy every moment of it.

You mentioned you’ve got some younger cats with you now and you do a fair amount of youth work don’t you? Well it’s a funny one because, we have a saying back home, it takes a village to raise a child, so I’m very much about the community that I live in and I was raised in… a much more tactile type community surroundings, meaning that we had a community centre and an adventure playground and somewhere we could practice our craft. Where nowadays with space being at a premium and all the other cuts that have had to happen over the last 7 or 8 years that doesn’t really exist around us. So sometimes it takes just keeping an eye on your neighbour and being a part of where you live in terms of trying to create a community. And it’s not about being known or

anything, it’s just a bit of input where you live and how you live you know? Your surroundings. I live right in the centre of London which is very transient which makes it even more unusual rather than living in the suburbs. But in terms of my input into the community its just things that normal people do.

You’re often credited with essentially creating a culture in the UK through your identity, such as the ‘FunkiDred’, the clothes you wore and naturally the funkier than thou bass lines – were you aware at the time that Soul II Soul would have such a lasting impact? This is going to sound strange but in a roundabout way, yes, because we had the b******s to call the album Club Classics, so there must have been some kind of underline in terms of what we were trying to express. The youth are always looking for an identity, (and its funny being around some of the young kids because they think you’re born like that) and in each generation I guess there is some kind of void in terms of what’s happening at that particular time that helps to shape your life. But without any ambiguity it was very clear that being part of the first three generations born and raised in Britain it truly was a different thing in terms of the things we went through then as opposed to what the kids have to go through now. Obviously the idea of the population growing and us being part of a colony in terms of where my parents grew up etc. etc. I was able to have the understanding and I guess the experience of that - in terms of where they came from, coming to a new world and then you cutting your own teeth. So on top of being a teenager with all the other anxieties of growing up, we were growing up in a place that didn’t have a footprint or an imprint from the previous generations as it were. In my case I came up through an area where change was inevitable and change happened between the 70’s and the 80’s. In terms of our evolution we were just dealing with the time you know? And without a regard for anything else as young people are.

THE 1940S RELIVED AT BROOKLANDS The legendary motoring and aviation museum brings the sty le and swing of the 1940s to life with the ultimate annual vintage event this May… For the huge ma jority of us who didn’t live through the 1940s, the period most readily conjures an austere world of black and white, where war hung heavy in the air and sapped the heart and the spirit. But in truth, the decade produced one of the most colourful and iconic eras of the 20th century, one that championed fashion, fun and frivolity all across the social spectrum in defiance of the anxious times the people were living in, and recovering from long after the bombs stopped falling. Brooklands Museum’s hugely popular 1940s Relived brings that magic cocktail of style and swing to life for a whole V-Day of fun with the entire site dedicated to the fashion, music, cars, dancing and panache that this decade was renowned for. What makes Brooklands such an ideal setting is the Motoring Village, Racing Bays, petrol pagodas and other buildings have changed very little since the heyday of the 1930s. Visitors come from all over the region dressed in original outfits; cars, motorcycles and commercial vehicles park up on site and their owners step out as if it were a post-war Britain with military personnel, civilians and land army girls meandering through the site. The Dance Marquee is easily the event’s hub and heart, with free dance classes, a live band playing hits from the era and chanteuse Noelle Vaughn serenading couples through a non-stop programme of music curated by period music specialist Swing Shift. The Race Bays and surrounding areas will be filled with traders selling original and repro clothing, shoes, accessories and

homewares and in the Press Hut, the girls from Hair That Turns Heads will be setting up their beauty parlour and offering quick hair up-dos and make up all in the period style of the time. For those that wear the decade the best, the Brooklands style scouts will be on the hunt for finalists in their Best Dressed Competition which is judged by none other than Winston Churchill himself (played brilliantly by deadringer lookalike Winstan). You can explore the historic period backdrop of the Museum and discover so many hidden treasures like the original 1907 banked Race Track, the 1930s Motoring Village and the only surviving Wellington Bomber that saw active service. In the Ladies Reading Room in the Clubhouse, there will be a photography studio set up so you can have your picture captured in perfect vintage style. The Sunbeam Café will have a special 1940s themed menu and lots of other outlets will be catering for visitors as the music and dancing continues until 9pm.

Fleecy Frolics For the ultimate family springtime treat, Merrist Woods’ annual celebration of lambing and countryside crafts is hard to beat…

Well the daffodils and cherry blossom have appeared, the sun’s out and the sky is clear (possibly) with fresh spring air. Which means it’s that time of year when Merrist Wood College invite the public for two days of Fleecy Frolics. Fleecy Frolics is the College’s annual lambing event and is a celebration of nature and countryside crafts. Throughout the academic year, the college’s flock are the responsibility of the students. Watched over by the Academic staff, the students herd their charges from September tupping all the way to now, the lambing period and this is there chance to show off all their hard work. The event is a little different this year. Following the last few years, the college has decided to make the event a two day affair. This ensures firstly that the lambs are not distressed and secondly that everyone gets a turn at seeing the sheep and their lambs and gets a cuddle in too. Saturday entry is tickets only, and the event is so popular you’ll have to move fast to book yours. But fear not, Sunday is wide open to visitors with pre-booked tickets or those who simply turn up on the day. So what’s actually happening over the two days? Well there’s all the fun of lamb cuddling along with animal handling in the brand new Animal Management Centre. But there’s also animal feeding on the farm as well as sheep shearing. There will also be loads of woodland crafts and demonstrations including Merrist Wood’s men of steel the Arborculturists in action. You can also meet local crafts specialists and pick up some goodies from plant and craft stalls.

A Couple of Things… While we hope all and sundry enjoy Fleecy Frolics, due to certain agricultural-based restrictions there are a couple of health warnings to adhere to. First of all women who are, or think they may be, pregnant MUST NOT attend this event. There is risk of disease amongst the lambs which can cause harm, including miscarriage. In the case of wet weather, please wear appropriate footwear as it can be muddy. All visitors should thoroughly wash their hands after touching any of the animals or areas where the animals are housed. Handwashing facilities are available in all areas. Finally there are no dogs allowed except for guide dogs.

Farnham Beerex 2017 27th to 29th April, Farnham Maltings Farnham Beerex is the longest running beer festival in the country at the same location since it started in 1977, and 2016 was a special year indeed - the 40th Annual Beerex in Farnham. Organised by the Farnham Lions Club in cooperation with both the Farnham Maltings and CAMRA, this event is the ma jor fun and fundraising event for the charity. Staffed by well over 300 volunteers, all of whom are unpaid, it’s a truly unique event that is firm, fun fixture in the Farnham’s social diary. Over 5000 imbibers descend on the town for a few days each spring to sample the year’s selection of fine ales, ciders and perries, munch on BBQ food and hear the great bands playing. This year’s event won’t just be the Farnham Lion’s 41st Beerex, and all are hoping that they will reach their goal of raising £40,000, every penny of which will be used to support local good causes. WHERE TO EAT: THE CLOCK HOUSE, RIPLEY

Formerly Drake’s in Ripley, the Clock House restaurant remains one of the most essential restaurants in Surrey… One day very soon people will talk about the Clock House in Ripley on its own considerable merits, but for now it’s impossible to discuss one of Surrey’s most discussed restaurants without mentioning the Michelin-starred elephant in the room – or the chef-founder who won the award for the restaurant 14 years in a row. Steve Drake’s dogged pursuit of culinary perfection, and his wife Serina’s steady guiding hand, helped ensure that Drake’s became almost a byword fine dining and progressive British cuisine for the county. Then 2016 happened, and what was once Drake’s is still, well, Drake’s, albeit Serina’s who won sole-ownership of the restaurant from her husband in a divorce settlement last year. The loss of such a figurehead like Steve Drake may well have been cause for much navel-gazing and nailchewing for other restaurants, but for the newly christened The Clock House (aptly named for the stately timepiece suspended outside the handsome Georgian building) this is simply another

reason to lay the linen, polish the glasses, sharpen the knives and get on with doing what they do best. The only real change of note at the Clock House would be the young chef now filling the weathered crocs of his mentor, a protégé of Drake’s by the name of Fred Clapperton. The former sous chef may have the unenviable task of maintaining the departed Drake’s fiercely high standards while moving the restaurant’s reputation forwards (especially since those ghostly gourmands of the Michelin Guide dropped them from their pages last year) but with the trust and confidence of Serina, and the incredibly efficient team around him at the Clock House, he has every opportunity to do so. Having reviewed Drake’s two years ago, we felt like we were visiting old friends upon our arrival at the Clock House, thanks entirely to the unforced grace and charm of the restaurant’s front of house team, and particularly their genial manager Joseph. Taking a table in the rustic elegance of the dining room, it seemed like only seconds had passed until we were enjoying a glass of crisp, sparkling Nyetimber Classic Cuvee. Tip: give the Clock House’s sommelier the benefit of the doubt and a free hand throughout the meal and you won’t regret it, as we experienced some truly stunning wines weaved in and around each course. The Clock House has made the welcome

move to make their prices more friendly and accessible, particularly their lunch menu which offers superb value at two courses for £26 and three for £30. But they haven’t lost their knack for the kind of quiet showmanship that makes a visit here something special and memorable. Some disarmingly delicious amusebouches arrived although now referred to cheerfully as ‘snacks’ (could it be that the Clock House are starting to relax that famously fine-dining posture of theirs?) A starter of enchanting purity swiftly followed: a loch-caught salmon fillet had been slow-cooked until the centre was soft and buttery, the surfaces given just enough crisp from the pan, then nuzzled up to crab laced with crème fraiche and lime with a touch of fennel mayo and cucumber pearls. But this simple starter’s gentle thunder was roundly stolen for me by a bowl of gnocchi, kissed a light golden-brown and offering several distinct layers of texture within each bite. More, they perfectly carried the flavours of caramelised onion from the broth, braised leek and the tang of pickled onions, just as good gnocchi are supposed to, yet so often don’t, even at many decent Italian restaurants. Another continent entirely loomed into view with artfully cooked brill and mussel graced by soft Asian flavours of lemongrass and ginger above a rich pumpkin puree. Across from this and a

dish that glided deftly from winter into spring: 24-hour marinated shin of beef accompanied by the brassica family in the form of broccoli, savoy cabbage and kohlrabi puree. The delicate vegetables, earthy-sweet chanterelle mushrooms and gently pickled mustard seeds mingled with the brute pleasure of meltingly soft and flavoursome beef to produce a dish that, honestly, I can’t stop thinking about many weeks later. I didn’t quite get a dessert that brought together batons of fresh pineapple, a springy vanilla sponge, caramelised white chocolate and dabs of lime and yoghurt gel, but a dark chocolate mousse – humming with very fine cocoa – all pretty in pink and lashed to garden flavours from rose-infused gel, a sail of gossamer-thin rose ‘leather’ and thymeinfused ice cream was all the decadence I was after. It wouldn’t be controversial to say that such richly imagined and executed dishes still bear the influence of the Clock House’s former Head Chef, but that reverence for ingredients, technique and flavours is a legacy that Fred Clapperton has clearly absorbed and more than meets on his own terms. Where Clapperton takes his menus from here is anyone’s guess, but that’s all the more reason to visit the Clock House, which easily remains one of Surrey’s finest restaurants, in the future.

TALKING TO… CARLO’S TRATTORIA "Give me a full restaurant and I love every moment of it" Where Guildford meets the Surrey Hills, Carlo’s Trattoria has been serving their devoted customers beautiful, authentic Italian food for over thirty years. So how has this beloved local restaurant survived where so many others haven’t been so lucky? Owners Carlo and Bonnie Crosta let Rich Lee in on their story of restaurant life, strife and fresh pasta… Sailing past your 30th anniversary would tip most people into deep wells of profound reflection. And Carlo Crosta -owner, figurehead, chef and one-man charm offensive behind Carlo’s Trattoriais no different, although it appears he feels the weight of that colourful history best in the pasta dough that he kneads, teases and stretches into fresh streamers of tagliatelle in the same easy manner that he has for decades. Today he is standing in for his head chef Giuseppe -recovering after his fingers met the bitey bits of a pasta machine just days before- and looks remarkably at rest given the meticulous manual work he’s doing to produce dozens of batches of fresh noodles and ravioli for the lunch service ahead. “I thought I’d be gone in five years,” says the 66-year-old of the days after 1986, when Carlo’s Trattoria was born out of a shabby roadside transport café known as the ‘Shack’, “because in those days that was all the life-expectancy restaurants were given.” Other than Carlo, the person most crucial to the restaurant’s success and longevity turned up for dinner once on her 18th birthday, and went on to marry him. Carlo’s cool-headed ying to his fiery yang, Bonnie Crosta has run the restaurant beside him for most of its life, crunching

the numbers and steering the ship while raising their two children. So how do they make it all work? “Stress and duress!” snorts Carlo, while Bonnie just sighs and elaborates: “We are a good balance because I’m a worrier; he doesn’t worry. He’s explosive; I’m the mediator. So somehow we muddle through. There are times when we want to kill each other, of course. I can do everything in this restaurant bar cook. He can do everything in this restaurant bar use a computer. So, at the end of the day, we have mutual respect for each other’s roles.”

are like a club. We know what we have and we know what they want. We try to stay with the times, and we do, but we’re a little bit like marmite – you love us, or you don’t.”

Carlo was only eighteen when he arrived in the UK fresh from travels after graduating culinary school in Italy. Raised in the picturesque north eastern town of Liguria, he remembers how the kitchen became his life thanks to his mother. “Liguria was a lovely part of the world to grow up in and my love for food definitely comes from her. I remember going to the market with her every week, all the fresh produce, and everything she’d cook at home I had to help her with. The kitchen has always been in my family.”

“That’s the difference between us,” says Bonnie. “The chef can nearly lose three fingers, the restaurant can be rammed and I will be having a meltdown, but he will think: “Great. What a challenge”” He loves the thought of being in total chaos and pulling us out of it.”

Although he trained to be front of house (which is obvious to anyone who’s ever enjoyed a meal at Carlo’s Trattoria from the effortless charm and attention its owner wields over his dining room) Carlo trained himself in the kitchen, bringing his love for simple, true, uplifting Italian food to bear on his menus and engraving his Trattoria on the hearts of many hundreds of loyal customers over the years. Not that the Crostas have ever allowed themselves to become complacent. “You cannot take your foot off the pedal,” says Bonnie. “I never take anything for granted.” “We’re always reinventing,” affirms Carlo. “Unlike being in the centre of town, where you have the passing trade, out here we can only build on our reputation. About 90 percent of our clientele are regular customers. It might sound stupid, but we

So what does he love about the life after so long in the restaurant business? “The fun of it! I don’t do it for the money. The day I stop enjoying myself, doing what I do, is the day I won’t be here anymore. I enjoy the customers, the people. And I still love the challenge. You give me an empty restaurant and I’m the worst person to know. Give me a full restaurant and I love every moment of it.”

I ask Carlo what he’s like to work for. “A bastard,” mutters their indispensable restaurant manager Carmello as he passes by, but rather than prompting his boss’s ire, Carlo just bursts into laughter. Bonnie wastes no time piling on. “He’s cantankerous. The people closest to him get the worst of it, like me and Carmello. He’s so fiery, and there’s times when you think ‘how can you speak to someone like that?’, and then ten minutes later he’s whistling and asking what they want to eat. But the thing is, he’s fair.” Despite surrendering his kitchen to the management of a full-time head chef for the last ten years, Carlo can barely conceive of the idea of fully relinquishing control. “He will never not have a foot in the kitchen,” she says. “He could never entirely distance himself. He loves the thought of someone delegating and doing all the horrible tasks of the kitchen, but when it comes to choosing the dishes and buying the best ingredients he’s as involved as he’s ever been.”

Easter Meringue Nests with Lemon Cream

Easter should be all about having fun with the family, and little ones will love helping to whip up these gorgeous little nests of sweet and crumbly meringue filled with crispy chocolate eggs and zesty lemon…

INGREDIENTS:

For the meringue 3 egg whites 7oz caster sugar 1 teaspoon of cornflour 1 teaspoon of white vinegar 1 teaspoon of vanilla extract For the filling 300ml double cream 2 tablespoons of lemon curd

METHOD: •

Whisk the eggs whites until stiff, then slowly add the sugar & a mixture of the vinegar, vanilla extract and corn flour alternately until glossy

Put the meringue mixture into a piping bag and pipe nest shapes onto a baking tray lined with greaseproof paper, bake in a 1500C oven for 10 minutes, reducing the temperature to 1400C before cooking for a further 50 minutes before turning the oven off and leaving to cool

Prepare the double cream by whisking until stiff and then gently stirring through the lemon curd

Next remove the rind of one lemon using a potato peeler and cut into thin strips. Boil in 2 tablespoons of caster sugar and 2 tablespoons of water until syrupy, then roll in additional caster sugar and leave to cool and crystalize

Pipe the lemon cream into the nests, top with the crystalized lemon and the coloured eggs, and the nests are ready to go! Happy Easter!

FOODIES FEATURE GUILDFORD BEER FESTIVAL The eighth annual Guildford Beer Festival (GBF) returns to Guildford Cricket Club this June, promising once again to kick summer off with a merry bang. A Guildford institution that continues to grow, drawing more and more visitors every year from the area and beyond. 4,000 beer worshippers attended last summer making it the festival’s most successful event yet. So what’s drawing all these thirsty revellers you might ask? Well, with a passionate focus on local, independent breweries there will be almost 100 cask ales, craft beers and ciders on offer, with a separate bar selling wine, gins and other spirits and soft drinks. With so many breweries around there’ll be a fascinating variety of beers to experience from both established breweries and the new kids on the block. t’s April, spring is in full swing – so we guarantee you that a visit to a Garden Centre is in order. And what better place than Sutton Green to find some fauna? Sutton Green is an independently owned and managed garden centre, run by gardeners, for gardeners. The good people at Sutton Green Garden Centre know about growing and gardening, so you can always ask their advice, and of course with a dedicated Pick Your Own section you can grab your own fresh fruit and veg. Indeed there is a huge array of things to buy, plant and prune at Sutton Green GC, including an abundance of bedding plants, trees, shrubs and a lovely range of garden pots, garden ornaments and garden sundries. They also stock Tunisian Terracotta Pots, direct from the manufacturer, all handmade and frost resistant in many shapes and sizes. There is far more on site too. The peerless

Noel’s Farm Shop stock a huge variety of fruit and veg, free range meat and eggs, bread, cheese, organic whole foods and gourmet groceries sourced from Surrey. The Blue Shed Coffee House is there to supply you with scrumptious breakfasts, tasty lunches and tempting cakes, and they have recently opened a new florist – The Flower Pot - here as well. Moreover, the Crafty Corner Craft Centre is an Aladdin’s Cave for the craft enthusiast, DoLittle Pet Supplies can supply your beloved pet with treats and the Woking Stove Centre are based at Sutton Green Garden Centre too. Anything missing? ummer evenings just got a new BFF in the Forno stove by Morsø available at the Fire Gallery in Chertsey

When something rockets to the top of our ‘Want’ list, we hope you readers will forgive us for shouting about it from the very rafters of TG Towers. Because that devilishly sexy, cast iron love pod pictured above just might be the very gizmo our gardens have been crying out for. But what is it? Is it a BBQ? Is it a pizza oven? An outdoor heater?

FORNO range. The FORNO is a three-in-one outdoor heater, pizza oven and BBQ.

Unlike with a standard BBQ, once you have finished cooking, you keep on feeding the fire and, as the outdoor range is made of cast iron, it will keep on heating your outside space whilst creating a cosy atmosphere.

Yep, it’s all three. This is the FORNO, manufactured by Morsø who, by that fetching slash through the ‘o’, you can probably guess are of Scandinavian origin. Denmark in fact, where Morsø have been producing cast iron stoves for 163 years. And their entire range, the Forno, is available from our friends the Fire Gallery in Chertsey. Watts Gallery is a hub for local and national artists. A lovely space that oozes creativity and is a real inspiration. So why not experiment with your artistic flair learning a range of pottery techniques with terracotta clay. Throw, decorate with slips and gauzes, coil and pinch pots, this is your chance! Local potter James Parson will be on hand to run the course in the Foyle Pottery Studio so let your creativity flow. The course lasts for five weeks and will run on every Thursday.

HIDDEN GARDENS OF GRAYSHOTT 28th to the 29th of May Get heaps of inspiration for your own garden at this event down just over our southern boarders in Grayshott. Nestled in the village, private gardens open their gates every two years in order to raise much needed funds for gardening projects around the village. The event was first staged back in 2005 and shone a light on this pretty village which the subsequent years have left undimmed. Indeed, the event has attracted 750 people over the years who came to look at the gardens and of course enjoy some tea! This year the gardens will open on the 28th and 29th of May. In keeping with previous years there will be over 20 gardens open for you to peruse and enjoy.
