CHALLENGERS Imagine a childhood without play…. Shockingly, for the 51% of disabled children and young people who are deliberately excluded from play and leisure opportunities this is a reality. Challengers is a Surrey based charity which makes it possible for disabled children and young people to play, have fun and to spend time with their friends. A parent of a young man who comes to Challengers talks about the difference we make: “He really feels like the ‘normal teenager’ he so longs to be when he is there. He loves going shopping, to the cinema, the beach, or just hanging out with his friends there listening to music, playing football, table tennis, watching DVDs .... they are like a family and it is clear to see all the kids love it there! It costs £152 to make one day of play possible for one child and any amount can make a huge difference: £54.60 pays for a play worker to spend a full day of one on one time with a child. £38.50 could pay for an hour of inclusion training for 15 play staff. £13.00 could allow a Play Leader to spend an hour planning the next few days of play Any help you can give will make more days of play possible at Challengers this summer. TALKING TO… RANULPH FIENNES By Alexander D’Arcy
The epitome of the intrepid traveller and officially the Guinness Book of Records’ Greatest Living Explorer; The Guide 2 Surrey had the privilege of catching up with the great Sir Ranulph Fiennes ahead of his appearance at Guildford’s G Live this month. You come to G Live this June to talk about your life’s journey? Can you remember anything telling from your childhood that would suggest that your life would be full of the adventures that you have had? When I was a baby, not quite a year old, I got taken to South Africa for twelve years. My dad had just been killed four months before I was born - whether that has any psychological affect or not I don’t know (not being very philosophical or introverted). When I went over there I went to four different schools. I can remember that there was a Jan van Riebeeck Festival, which was a centenary thing (Riebeeck discovered Cape Town), a huge festival. Mum couldn’t go so told her Scottish neighbour/friend to take me, I think I was 6 or 7 years old. When I got there one of the highlights were these things called rickshaws – towed by 6’6 Zulus with feathers in their hair which made them 7’6 - bones sticking out of their ears and all that. Isabelle (the Scottish neighbour) said “Bae”, because that’s what I was called in those days, “you must go in a rickshaw, this is a once only experience”. I took one look at him and screamed, ran and hid. She later said to my Mum, “you are going to have to look after this son of yours – he is a right wimp!” I remember that story very well indeed, I don’t think I reacted purposefully against wimpishness, but I certainly do remember it. The Global Reach Challenge that you are carrying out to raise money for Marie Curie will ultimately see you become the first man to have crossed both polar ice caps and to climb the highest mountain on every continent… I’m three peaks off it, having failed on one just a couple of weeks ago in Australasia, Papua New Guinea, due to a chest pain in the same area that I had an angina attack on Everest in 2005. I had a double bypass in Bristol back in 2003, so I had to go back to there and to the surgeon who operated on me all those years ago. I had all those tests with wires up my arm etc. and last week I had the all clear. The doctor who was with me (Mike Stroud), who has looked after me on and off on expeditions for over 30 years, said
that it would be stupid to carry on without an ECG. So we had to helicopter out of Papua New Guinea and back to Bristol. So that expedition needs to be attempted again, Alaska has got to be attempted again in North America and Aconagua in South America. Over the last year I’ve done the European one in Russia (Mount Elbrus) which was successful, the one down in Antarctica was successful. I had previously done Everest, but only at the third attempt and of course Kilimanjaro. We have to find sponsorship (for the remaining attempts). Obviously failure means someone else doing it first which is always the risk we have to carry. Is there anything that remains on your bucket list to explore that doesn’t involve circumnavigating various corners of the globe? Gin distiller? Master carpenter? Alligator wrestler? None of the above. I haven’t ever done underwater stuff and I would like to. I’m in contact with an expedition to do with South Africa and an extremely fast current, quite deep, with new breathing apparatus which has been invented. That may or may not come off depending on whether they get sponsorship. You are a member of the advanced generation and serve as an inspiration to anybody who might feel like their time is spent, to crack on and get on with it. Is there a super human secret diet that you adhere to or is it simply a case of staying active? The older you get, particularly after 69, this is just personal, the more you have to waste time keeping fit. I don’t mean waste time, but you know, it’s a bore, but you have to do more of it. So where as in the past I might run for an hour 3 times a week, now I have to run at least 5 times a week for an hour and once for two hours – when I say ‘run’ I mean sort of shuffle, but as fast as I can. And then 20 – 25 minutes of stretching, sit ups and squats in the morning - which I never used to have to do. I got diagnosed with pre-diabetes, so I’ve had to go off my life long addiction of Cadburys chocolate, which is a nuisance.

Elsewhere at Always the Sun, visitors can find themselves at the HOUSE OF HATHA where they can feed their mind, body and soul with practitioners specializing in Dru, Ashtanga and Hatha Yoga, catering for wizened yogis and newcomers alike. Alternatively, you can shake it all loose with energetic dance workshops and displays. The problem with an event brimming with such unbridled creativity is that it’s too easy to get the itch yourself. Already a YouTube star at only 14 years old, Alton-based singer-songwriter Sapphire has caught the hearts of audiences all over the world thanks to her presence on social media. We caught up with the singer ahead of her performance at Guildford’s Always the Sun Festival in September…
Hi Sapphire. When did you first realise you wanted to be a singer?
and with people you love, it means so much. I feel so lucky to have all the support.
I think I realised singing was what i wanted to do for the rest of my life when I was around 4 or 5 years old. I used to go to a Saturday morning musical theatre school which I loved so much, and I just loved to sing. I literally would sing everywhere and anywhere. It’s been my passion from a really young age.
Life for any fourteen-year-old is quite hectic enough, so how do you manage to balance your music and videos with everything?
You’re very much the model of the new generation of artists to find their voice and fanbase online. What advantages do platforms like YouTube and Instagram give artists like yourself? Thank you very much. For me, social media is a way to get seen and heard. Lots of musicians nowadays get signed by record labels, scouted for TV shows, etc. through YouTube and sites like that. It gives artists such huge opportunities, and it’s so cool.
You’re so prolific with what you post, and some of your videos are very slick and creative. What goes into making them? When we make videos (my Dad films them all), the first thing we do is obviously choose a song that we think is going to be the next big hit, then if we’re incorporating dance into it, we’ll take the song to my choreographer, Emily, and we’ll create a storyboard and dance to the song. If we’re doing a full-production video, we may have to get props and venues, etc. But we’re a real family team, and we always have been. It’s so nice when you’re working with your family
I really don’t know! It’s all a bit crazy really. I’ve been really lucky though as my mum homeschools myself and my little sister, Skye, so we are a lot more flexible time-wise. We also usually see our friends after school times or at the weekends. It’s also really cool because we always try to get my friends involved in some of the videos too, because without the support from them, my family and my fans, I wouldn’t be where I am today.
You’ve just released your first original material. Tell us about your new single… It’s called ‘Turn The Music Loud’, which is a real summer-vibes kinda track. I’m so happy to be sharing original music with the world, as it means I can express myself. And the reaction to the song has been amazing! It means the world to know that people are enjoying my music.
You’ll be performing at Always the Sun Festival in September. What do you enjoy about performing at open-air gigs like ATS? I just love the vibe! Performing at festivals is always so exciting. I can’t wait for ATS, and my set is going to be a bit different than usual which I’m buzzing about!

TALKING TO… HUNTER & THE BEAR Having shared the stage with Eric Clapton, Van Morrison, and Simple Minds, this young British band are making a big noise on the British rock scene. Their highly-anticipated debut album ‘Paper Heart’ released only last month and their current UK tour will see them play at this year’s unmissable One Live Festival in July. Rich Lee spoke to lead vocalist Will about the band’s blistering journey so far… Hi Will. So how did Hunter & the Bear get together? Me and Jimmy (lead guitar) went to school and university together - started playing music as a duo. We were never really musicians at all at that point, we just really enjoyed jamming. We ended up playing some pub gigs and fell in love with it. We decided to give it a proper go, recruited the two other guys (Gareth, drums and Chris, bass) and moved to London. It was never the plan at all but I’m glad I stumbled into it. It’s a lot of fun.
How did you get your name? Haha, well when we thought we’d just be a duo forever, we were thinking up names. Jimmy’s surname is Hunter, and I used to
be called Bear when I was little. We came up with thousands of crap names until we fell on that one and just went with it.
What was it like touring with a rock legend like Eric Clapton? It was terrifying, but amazing; a dream come true. We thought it was a joke when we were offered it. We went from playing pubs to playing arenas overnight, it was ridiculous. But the whole time we just wanted to glean as much knowledge as we could, because those guys were at the top of their game. The shows themselves were some of the best moments of our lives. It was the making of us; believing we could actually do this. We came back down to earth pretty hard though when it was over, though. The day after we had our own gig, which was sold out, but the capacity was 60 people, and we’d just come back from playing 50,000 arenas. So we were like, if we want to get back up to arenas we’d better start working hard and kicking arse.
What lead to you producing a video for every song on your debut album, Paper Heart? Yeah, it was a big undertaking. We thought that the way people consume music these days is different; I’d love to release an album and think people would everyone would sit there and listen to it. But the truth is that people take in singles, if that, so you have to grasp their attention with something visual. Also, we
believed in each and every one of these songs on this album and felt that each deserved its own spotlight. We released each song and video over ten months and it really did things for us and built momentum towards the album release. And you only get one debut album, so we really thought that anything we can do to make it better, let’s do it.
June sees you hit the road for the Paper Heart tour, your first tour under your own name. How’s it going? The tour’s going great. This is our first comprehensive, headline UK tour, but now we have the album it’s such a great thing to have something to hand out at shows. I now feel like we’re at this point in our progression, I’m really proud to have that album to show people where we’re heading in. I hope they like it.
What do you enjoy about playing open-air festivals like One Live? Festivals in general are just the best gigs for us. The ma jority of the crowds might not have heard of us but we love that challenge of winning over a crowd who don’t know who you are. We’d played One Live before and it was so good. The cause is so great, what the Supervet (Noel Fitzpatrick) is doing, and the other acts like the Boomtown Rats and the Darkness are just awesome. To open the day will be a real pleasure, so we look forward to bringing the noise to the people of Surrey!

Where to Eat: Blue Sardinia By Rich Lee
A restaurant that combines the rich culinary heritage of Italy with a little bit of Guildford’s, Blue Sardinia continues 1C Sydenham Road’s legacy of fantastic cooking and independent charm… I can blame a lot of what went wrong in my life, and an awful lot that went right, on a single meal I ate in this building on Guildford’s Sydenham Road many years ago. I, like many Guildfordians, fondly remember Bar Centro for its stripped back brownstone chic and reverence for classic Italian dishes given a modern spin, way before any of those were a thing. But I remember one dish in particular, a wild mushroom risotto so perfect, so heavenly in its flavours and texture, so indulgent and yet so honest, that it relit a fire that had long sputtered out since I’d left the kitchens of my youth behind for a ‘proper’ job in IT. That revelation reignited my dormant passion for food and would eventually lead to an ill-fated plunge back into the world of restaurants and a series of
bumbling professional misadventures, until I finally washed up on TG2 Surrey’s shores, where writing about food was just safer for everyone. I believe it was that simple plate of stirred Arborio and porcini that has lead me inexorably back to this building and its modern incarnation as Blue Sardinia. And the best part? It turns out that the restaurant’s owner may have made that fateful risotto herself.

Little nods to the Leccas’ family and heritage -Sardinian tapestries and a portrait of their father on the bar- remind you of the personal story woven into the restaurant. It’s all very inviting, and that’s even before the food arrives.
Cinzia Lecca and her brother Jonathan arrived in Guildford from Sardinia back in 1990 and fell into the creative cabal of cooks and restauranteurs that invigorated the town’s dining scene with places like Bar Centro, Cambio and Al Vicolo, the tiny temple to Sardinian food that Cinzia and Jonathan opened on Swan Lane in 2005. These days, the pair own the bright and breezy Shardana tucked just off the high street and, since 2016, Blue Sardinia, undoubtedly Al Vicolo’s spiritual successor which was previously inhabited by another independent star, Britten’s.
When it did we fell on a salad of sweet, roasted red peppers and chicory beneath rude hunks of wonderfully fresh ricotta given a little smokiness that took the flavour to fascinating places. There was a dish of Calamari, so often abused or just unrecognisable elsewhere, but here the little baby Cthulhus came whole, perfectly tender and graced with a little chilli and spice, gently laced with balsamic vinegar above a rich, glossy potato ‘cream’. Lovely to look at and light-speed tasty too.

swimming in a pool of blazing-bright saffron broth. It’s the sort of dish you’d go on holiday for, so it’s profoundly fortunate that it’s served so perfectly on a non-descript back-road behind Guildford’s High Street. Two months into spring and damn me if I hadn’t even been near lamb yet. Fortunately, a plate of juicy pink lamb cutlets coated in a tickly, minty crust came to the rescue, with a happy rubble of nutty purple potato and fresh new season asparagus for a seasonal bonus. I’m not ashamed to say I picked those cutlets clean with a caveman’s relish. Desserts offer a few old dependables of the sort you’d find in most Italian restaurants: pannacottas, tiramisu, semifreddos and such, but I chose a Millefoglie Tart, intrigued to see how the Italians treated the classic French millefeuille (let’s leave it to them to bicker over who came up with it first.) Spongier than the brittle French pastry, it was nonetheless as rich and indulgent as hoped.
At Cinzia’s gentle insistence we agreed to try a “Sebada”, a favourite of the islanders. This golden pastry filled with oozing ricotta and drizzled generously with a bitter honey was so good, I thought cheese-nut Photographer Fi was experiencing the same ecstatic epiphany that humble risotto had given me on this very spot all those years ago. How the Sardinians can live so long scoffing these sebadas down with abandon is beyond me, but I’ve long suspected they have superpowers our fickle climate just can’t bestow. In any case, Jonathan and Cinzia Lecca have created a restaurant glowing with Mediterranean sunshine and spirit, their hard-won expertise and inherent passion for the food of their homeland once again making 1C Sydenham Road an independent bright spot in Guildford’s dappled dining landscape. May Blue Sardinia live to be a hundred too.

Food Matters: Blid & Hatton In the red brick surrounds of Cobham’s Medicine Garden, two friends have been quietly building a reputation as a progressive and exciting hub for all kinds of captivating foodie events right in the heart of Surrey…
Maddie Hatton and Helga Blid-Martinsson opened their Blid & Hatton Food Studio in March 2016, a unique corner in the medicine garden that combines a kitchen, workshop and dining space beneath the timbered eaves of an old Victorian seed shed. “We wanted to create a food hub and a community for people who love food in Surrey,” says Swedish native Helga. “We found that there are a lot of great Surrey food producers but there didn’t seem to be anywhere that pulls them together. There was a missing piece.” Taking inspiration from local producers and the European tradition of cooking and ‘breaking bread’, Blid & Hatton set about offering a range of cookery workshops and demos, pop-up events and private and corporate dining that has built them a loyal following, and this year has seen them embark in a new direction as a draw for some of the UK’s most celebrated food writers and speakers to teach classes and meet their readers at the studio. “We’ve met so many interesting people,” says Maddie. “and the more conversations you have the more ideas come out of it, so it’s been quite organic from that point of view.” The two friends met at the same nursery their children attended and formed a mutual bond over great food. “I was born in Surrey but grew up in France and come from quite a foodie family,” explains chef, Maddie Hatton. “Later, I worked in restaurants to support myself while I studied photography at university. In my last year, I was running a kitchen in Brighton and just carried it
on afterwards.” Similarly, Helga grew up in the Swedish countryside, where many of today’s most exciting food trends, such as foraging, were a daily part of life. “I’ve always had a love of food from an eating point of view more than the cooking, although I do really enjoy it when I do it.” Helga came to London in 2000 to study and work in fashion, but after a career in media and PR she moved to Surrey. It was here that she met Maddie. “I think we have a brilliant balance between us,” says Helga. “Starting a business is a bit of a rollercoaster, there’s no way around it. When we get together we have a really good laugh but we can still get down to business. Maddie is ‘the Foodie’, and knows everything about food and new ideas and trends. I guess I come more from the business side, marketing and branding. For me, having worked in fashion, I realised early that I loved working with artists, and I find that Maddie’s an artist in what she does.” Blid & Hatton’s workshops, supper clubs and other events offer a colourful, contemporary and ever-shifting journey through the landscape of food, taking in everything from Scandi-inspired cooking to summer salads, nutrition workshops, health trends such as paleo eating and traditional skills such as sourdough breadmaking. Their spring calendar culminates in a celebration infused with Helga’s Swedish heritage: Midsummer Feast & Crown Making. As Blid & Hatton’s reputation as a forwardthinking destination for food lovers to explore new trends, old favourites and
meet like-minded people, Maddie and Helga have found ever more diverse customers getting on board. “We began with mostly local mums coming to our workshops,” says Maddie, “but now it’s widening out and drawing a younger crowd. We also have quite a lot of men coming along. That’s what’s nice about food: lots of people are interested in it. They learn something, they walk away happy. It’s a sharing experience, but it’s not scary or intimidating at all. It’s the best industry to work in.”

Blid & Hatton’s Strained Yoghurt (Labneh) with Zehug & Raw Farmers Market Veg
For the Labneh
Zehug
300g good, organic plain yoghurt 1 tablespoon lemon juice 1 tablespoon olive oil 1/2 tsp sea salt
1 large or 100g bunch fresh coriander 1 green chilli 1 clove of garlic a good pinch of sea salt 1/2 tsp ground cardamom seeds 4 tbsp olive oil Juice of half a lemon
Mix together the yoghurt ingredients and place on a large piece of muslin. Bring together the four corners and place in a sieve over a large bowl. Place in a fridge overnight to strain. The longer the labneh is left to strain, the thicker it will become. 24 hours should be adequate for this recipe.

In a blender, roughly blitz all the ingredients. Check for seasoning and put to one side. (Any left over paste may be stored in a clean jar, with a layer of olive oil on top for up to a week.) To assemble your dish drizzle the zehug over the labneh and serve with shaved, raw asparagus, peas, broad beans, baby carrots, fennel etc… be creative! Serve with flatbreads, crackers and some good crusty bread.

On the Go: Tea, Reigate Tea isn’t just a British tradition, it’s a national birthright. And while coffee has inexorably won the hearts and minds and tastebuds of the UK over the last few decades, the Cup of Tea remains a near sacred ritual for the ma jority of us. Not that you’ll see that reflected on most high streets these days. Coffee shop chains might rule the roost, but you’re more likely to find the once revered cup of rosy buried beneath the legions of lattes, frappes, ‘cinos, macchiatos and Americanos, almost as a footnote. Fortunately for lovers of the refreshing, soothing joys of real tea, one little teashop in Reigate stands as a temple to a really good brew, and the convivial experience that should always accompany a proper cuppa. Carolynne Farrer opened TEA three years ago, and in that time has seen her unique teashop become a favourite haven for locals looking to unwind. Inspired by the memory of a quirky Tottenham tearoom years before, Carolynne has fashioned her shop into an expression of her personality and her enthusiasm for tea. Vintage style threads throughout the shop thanks to distinctive furniture supplied by Reigate Retro. Carolynne hunts down beautiful vintage china cups and pots to serve her tea in, expressing that it’s easy to have favourites and to despair when the occasional piece of crockery meets a smashy end. TEA serves a cheery little food menu to suit most appetites, including Carolynne’s signature Welsh rarebit, and if you’re a
coffee lover you’ll be relieved that TEA also serves a fantastic roast from Woking micro-roastery Beanberry, although you won’t be surprised to know that Carolynne isn’t much of a coffee person. “I don’t have a big smelly coffee machine because they’re too expensive and I can’t compete with the big coffee shops anyway. So I grind it to order and serve it in cafetieres with hot, cold or frothy milk, so people can still enjoy a cappuccino if they wish.” It could be said, however, that ordering a coffee at TEA is slightly missing the point. Carolynne serves nearly 20 loose-leaf teas in a staggering variety of characters. You’ll find your English Breakfast and Earl Greys of course, although of a quality that you’d never find out of a box from a supermarket. But then you’ll discover her ‘Speciali-teas’ such as an Orange Oolong, a Char Fruit Basket that bursts with fruity, floral flavours and an ‘Anti-Stress’ tea that does just that thanks to a soothing blend of cinnamon, liquorice and ginger. There are even more esoteric teas to explore. On the advice of Carolynne’s husband Steve, we agreed to try a pot of an odd sounding Palace Pu Erh tea that was even odder smelling, with an aroma like hay soaked in brine. It was, however, utterly delicious, conjuring memories (as tea does so well) of warm summer days in the English countryside. A quiet revelation then, much like TEA itself, which thanks to Carolynne has to be one of Surrey’s most delightful tearooms and a tribute to the long-lost art of drinking tea with good company in a homey, relaxing space, with nothing to do but let the tea brew.
