BUSINESS AS USUAL AS WOKING’S DEVELOPEMENT MOVES AHEAD As Woking’s once in a generation’s project to radically improve the town’s highways and utilities for the benefit of residents, businesses and visitors rolls on, residents, visitors and commuters may be wondering what will come of all the development. Working in partnership, Surrey County Council and Woking Borough Council say that the multi-million-pound highway improvement project, when complete, will significantly enhance traffic flow in the area and make it safer for pedestrians and cyclists, whilst stimulating economic growth in Woking Town Centre. Let’s look at some of the immediate works underway affecting High Street and The Broadway

• High Street and The Broadway (from Duke Street) are one-way to west-bound traffic only. • No left turn from Victoria Way to Cawsey Way /High Street via Church Street West. • Creation of a new link road connecting High Street with Victoria Way. • The permanent closure of Church Street West and Cawsey Way to all traffic (from May 2017 subject to change). • The relocation of the taxi rank from High Street to The Broadway. • Improved bus facilities along High Street and The Broadway. • Wider pavements and dedicated cycle lane. • The realignment of Chertsey Road to improve pedestrian and cycle connectivity

VICTORIA SQUARE The redevelopment of Jubilee Square and Commercial Way were the first signs of a town beginning to reinvent itself for the 21st century, already putting Woking ahead of many other Surrey towns. But the next ma jor step to creating a truly vibrant, forward-looking Woking is coming in the form of Victoria Square. Victoria Square will completely transform the western quarter of Woking Town Centre delivering more than 14,500 square metres of new retail floorspace anchored by Marks & Spencer, a new Boots store, hotel with conference facilities, 390 residential apartments, medical centre, additional car parking and two new public plazas. It will also incorporate an international 4-Star hotel with spa, gym and two restaurants, one of which will be located on Level 22 to exploit the magnificent views. Cllr John Kingsbury, Leader of Woking Borough Council, said: “This is a huge investment for our ambitious town and I would like to assure people that this decision has not been taken lightly. This [development] will undoubtedly secure the vitality and sustainability of our Borough and will attract new commercial investment for years to come. Victoria Square is the next ma jor step to achieve our long-term desire for a vibrant, 21st century Woking that will meet the needs of current and future generations for which we can all be proud.” The Victoria Square development, comprising the former Woking Market, Post Office, Globe House and Woking Fire Station sites, is being delivered by Bandstand Square Developments Limited (BSDL), a joint venture between Moyallen, owners of Peacocks Shopping Centre, and Woking Borough Council. Whilst the demolition of the site is already underway, it is expected that the Victoria Square development works will commence during summer 2017.

Faustus

Gifted with immensely emotional vocals, Sara Dowling’s influences are wide and far-reaching. She is known for her unique interpretations of classic ballads leaving audiences spell bound as well as the energy and vigour with which she tackles the up tempo standards from the American Song Book.

Aficionados of the local folk scene should make their way over to Grayshott for a night of good times with English bloke-folk band Faustus. Nominated in the 2009 BBC Radio 2 Folk Awards, Faustus are three of the leading lights of their generation: Benji Kirkpatrick (Seth Lakeman Band, Bellowhead), Saul Rose (Waterson:Carthy, Whapweazel) and Paul Sartin (Bellowhead, Belshazzar’s Feast).

ROH: Madama Butterfly

30th March / Leatherhead Theatre Royal Opera House present this live screening of Puccini’s ‘Madama Butterfly’; one of the most popular of all operas, with ravishing music and a heartbreaking story of a loving geisha deserted by a callous American husband. MARTIN HARLEY Martin Harley is the singersongwriter, guitarist and worldtraveller from Woking who is one of the leading lights of blues and roots music in the UK and US. Harley’s phenomenal slide guitar and soul-drenched vocals has made him one of the genre’s most magnetic performers. With the February release of his seventh album and collaboration with Tennessee bassist, Static in the Wires, March sees the duo begin their UK tour, coming to Farnham Maltings on 15th March… What was it about blues and roots music that so mesmerised you in the beginning? Honesty. When you the hear the recording of Blind Willie Johnson, for example, I feel there’s a brutal truth and a degree of conflict in himself and his performance. He was a preacher in the 20’s singing music that was demonised by the church and drinking to fill the gaps. The conversation between the guitar and the vocal is mesmerising. I’ve always been drawn to slightly darker or melancholy music. It’s not that my perspective isn’t positive. It’s more that I find a great deal of beauty in music that affects me in an organic and unpretentious way.

You’ve travelled to dozens of countries but always return to your roots in the UK. Haven’t you been tempted to pick up the family and put down new roots elsewhere? My parents live in Woking and my favourite pub is in Sutton Green. It’s where my oldest friends and I still meet up when we get the chance. I’ve lived in Hertfordshire for the last few years so that my partner can be near her parents as we have two young children. I’ve been touring intensively overseas. We’ve toyed with the idea of moving to Nashville but my oldest daughter is coming up to school age and America is currently being run by my least favourite world leader.

If touring takes up so much of your professional life, how do you find the balance with a young family? It’s a “you wash, I’ll dry” kind of arrangement. I try not to be away for more than three weeks at a time and I take longer breaks that I used to. It’s still hard to maintain a career that involves so much travel and family life so I’m deeply thankful for an upstanding partner (and FaceTime).

Why did you strike out solo from the Martin Harley Band? Not so much of a strike as a side step across the pond. I wanted to travel across America and Canada to see what might be possible there. Moving the whole band with no concrete plan was not an option.

How did you first meet your collaborator on Static in the Wires, Daniel Kimbro? We met on the back of a U-Haul truck at a festival in Tennessee. The intention was to run a song or two and to play on stage. When we got up there we played an hour-long set. I found that exciting and nerve racking. It was out of my comfort zone and I think that’s when I improve. We decided to try and capture some of that improvisational energy by recording an album in four hours at Southern Ground Studios in Nashville. The new album “Static in the Wires’ is a more considered affair with drums and piano but keeps that live feel.

This is your seventh album. What is it like to listen back over nearly 15 years to your previous recordings? Listening to my younger self is almost like listening to my voice on an answering machine. Is this really what I sound like? There are certainly moments where I feel I accurately expressed who and where I was at that time. There are times when I got it wrong. On the whole, I’m proud of the fact I put my music out into the world almost exclusively independently and that I make a living in a tricky profession. Are there things I would change? Yes, but I can’t, so I carry the lessons with me and continue to refine my craft in the hope that I can evolve and improve.

And Ripe & Nine went from there.” Think snickers-inspired raw chocolate bars, rippled blueberry acai cakes, healthy lemon zinger energy balls and raw vegan nutella doughnuts for just some of Ripe & Nine’s inspired offerings. WHERE TO EAT: BIRD IN HAND, MAYFORD

A pub-restaurant restored to its full glory, the Bird in Hand is a local success story and an essential destination for diners… It’s always reassuring when a oncecherished pub is rescued from encroaching obsolescence. But it so often seems to be at the hands of a mighty chain like Young’s or Fuller’s, when the local’s time-worn character goes under the knife and emerges spick, span and yet utterly ordinary among its ubiquitous cousins. So it’s even more heart-warming when a place like the Bird in Hand, long a landmark on the road between Guildford and Woking, is resuscitated by the Home Team. Local lads Mike Cumberland and Markus Hebbourn, both veterans of other such fine local gastropubs like the Red Lion in Horsell, saw the dwindling state of the Bird in Hand in Mayford and an opportunity to make their mark after years in the pub trade. The refurbishment that ensued

saw the pub open in October 2015 and enthusiastic word of mouth has been building ever since. Today’s Bird in Hand is every bit the modern, independent gastropub, where contemporary design meets unhurried, traditional comfort. The bar area provides intimate corners as well as airy, open spaces, squishy leather sofas and, very welcome in these colder months, a cheery open fireplace. A stylish, well-stocked bar is furnished with all the lagers, real local ales and carefully selected wines you could ask for, but lunch was our mission today, not a lazy pint (although that will certainly be on my agenda on future visits.) The dining room presents a pleasant if functional space but one that invites closer inspection and appreciation. Light falls from above through deep skylights and from upcycled Edison lamps; potted palms add splashes of green against sand-coloured walls; rough-hewn timber panels, cargo crates and paintings depicting bygone Victoriana… if I didn’t know better, I’d say the Bird in Hand was a portal

to some 19th century colonial North African coffee house. But then my mind often wanders to strange places when I’m hungry. Grazing on some fluffy, dukkah laced hummus and toasted pitta, we pored through a great value midweek lunch menu and a main menu that crowds out it’s gotta-keep-them pub staples with plenty more progressive dishes. Within minutes I was tearing through a stack of juicy prawn skewers given some aromatic Thai love and glossy globs of chilli oil and soy to swipe through, but I almost missed the crushed peanut and chilli butter beneath (I’ll remember next time). Across from this a happy disc of tender twice-cooked pork belly had been given a lovely, tickly golden crust beneath a luscious mound of slaw and a cunning dusting of pork crackling to the side. As a tease of Head Chef Nathan Madden’s confident technique and grasp of great flavours and textures, these two starters easily raised expectations. Fortunately, these were met gamely by a couple of

exquisite main dishes. Parmawrapped chicken supremes stuffed with smoky chorizo and luscious spinach were delicious on a simple, satisfying, primal level, but were accompanied magnificently by crispy/velvety garlic and cheddar croquettes, dabs of red pepper puree, burnt lemon, port jus and a little kale to lighten it all. A pork loin steak arrived in dreamy burnt-gold crust and fat rubbed with Dijon for that modern British nod, but took on rather stunning new life with gentle Asian touches like ribbons of shaved pineapple, the flavour melting fantastically into the pork, chilli caramel and charred veg and vegetable noodles cooked al dente, jacked up with a sweet and spicy dressing and a lick of heat from wasabi. Oh, and an oozing crispy, fried egg which offered no explanation for its inclusion in this dish, and frankly, didn’t need one. This, it has to be said, is some considerably confident, agile

and generous cooking for a pubrestaurant, even in this gilded day and age, although desserts played things slightly safer (I’m looking at you, chocolate brownie.) That said, I’d defy anyone not to love their simple yet sumptuous vanilla cheesecake with pistachio crumbs and the subtle fruity spice of tonka bean. For myself, I felt compelled to embrace the season while it was still upon us and fell on a steamed apple and vanilla pudding; pure winter comfort with a splash of warm custard, but improved nonetheless with roast pecans and rich salted caramel. Meal accomplished. With a something for everyone approach, super-friendly service and a kitchen working at the height of their powers, it’s no wonder the revitalised Bird in Hand has won such an enthusiastic following in so short a time. And the fact that it took some passionate local talent to return a local pub to relevance once more is a story we should never be tired of hearing.

BLOOD ORANGE OSSOBUCO WITH GREMOLATA FROM LIDGATES BUTCHERS This year’s National Butchers’ Week runs from 13th to 19th March and focuses on the fantastic innovation that takes place within butchers’ shops across the land. Here in Surrey, one of the UK’s most successful family-run butchers, Lidgates of Holland Park, London, recently set up shop in Crockford Bridge Farm Shop in Addlestone, bringing five generations of knowledge and passion to the area.

“Ossobuco (braised shin of veal) is a tremendous late-winter dish, and the blood oranges now in season make this a vibrantly colourful stew. We use the hindquarter shin as it is less tough than the forequarter and cooks a little more quickly. Ask the butcher to cut it to size. The traditional Italian garnish for slow-cooked meat is gremolata, a delicious combination of garlic, parsley and lemon zest.”

Ingredients

Method

3 tablespoons plain flour 1 veal shin (hind is best), cut into 4 pieces about 5cm (2in) long

Preheat the oven to 160°C/325°F/Gas Mark 3.

3 tablespoons olive oil 1 large carrot, finely chopped 1 large bulb of fennel, finely chopped 1 large onion or 2 banana shallots, finely chopped 50ml (2fl oz) balsamic vinegar 400ml (14fl oz) fresh orange juice 400ml (14fl oz) veal or chicken stock 1 blood orange (if unavailable, use an ordinary orange) salt and freshly ground black pepper

For the gremolata

Put the flour in a shallow bowl and season with salt and pepper. Carefully turn each piece of shin in the seasoned flour to coat on all sides. Reserve the flour left in the dish. Pour the oil into a flameproof casserole dish over a high heat. When hot, add the pieces of veal shin and brown on both sides. (You might need to do this in two batches.) Remove the browned meat and set aside. Tip the chopped vegetables into the pan, lower the heat and fry gently for 10 minutes, stirring occasionally, until soft. Sprinkle in the reserved flour and cook, stirring, for 1 minute. Turn up the heat slightly. Add the vinegar and stir well, scraping up the browned bits on the bottom of the pan. Stir in the orange juice and the stock. Return the meat to the pan, bring to the boil, then cover and place in the oven for 1 hour. Remove the lid and cook for another hour, then taste to see if the veal is tender. If not, continue to cook, covered, until it is (veal varies in its tenderness). While the veal is cooking, mix the gremolata ingredients together in a bowl. Set aside.

1 small garlic clove, very finely chopped finely grated zest of 1 lemon

Peel the orange and cut into segments between the membrane, removing any pips and pith.

3 tablespoons finely chopped flat leaf parsley

Once the meat is tender, gently stir in the orange segments and sprinkle the gremolata over the top.

1 tablespoon extra virgin olive oil.

Serve with mashed potatoes and a green vegetable such as kale orchard.

This dish is the go to feast food in our house. It is easy to prepare, so tasty and highly addictive. And if you haven’t eaten queso before, I should warn you, that is where the addiction starts!

red pepper Chilli

1 red onion finely chopped 2 red peppers chopped 2 tbsp. olive oil 2 cloves fresh garlic, finely chopped 1 can black beans 1 can aduki, black eye or kidney beans 2 tsp. ground cumin 1 tsp. mild chili powder 1 tsp. smoked paprika 2 tsp. tamari soy sauce 2 tbsp. tomato puree

Sauté the red onion and red peppers in olive oil until the peppers are soft and the onion translucent. Add the garlic and sauté for a few minutes then add the beans, cumin, chili and paprika and mix thoroughly. Add the tomato puree and soy sauce and mix again. Half fill one of the empty bean cans with water and add to the pan. Give the dish a good mix, bring to the boil and immediately reduce to a gentle simmer and cook for ten minutes. Season with salt and pepper.

›guacamole 2 avocados Juice of 1 lime 1 tbsp. olive oil

›queso Taking the place of the traditional nacho accompaniments of cheese and sour cream, queso is so good. 90 g pre soaked cashew nuts (cover in water and soak for at least 2 hours) 1 small white onion, finely chopped Green jalapenos 1/2 pint vegetable broth 3 tbsp. nutritional yeast flakes 2 cloves of garlic, peeled 2 tsp. ground cumin 2 tbsp. fresh lemon juice 2 tsp. olive oil

Once your cashew nuts are soaked, gently fry the onion and jalapenos in the olive oil. Whilst these cook, using a blender, puree the drained cashew nuts, vegetable broth, yeast flakes, garlic, cumin and lemon juice. You are looking for a super smooth consistency, so you may need to puree for a few minutes to get the desired result. Once there, add the cashew mix to the pan with the onions and jalapenos and turn the heat up to medium. Cook for approximately ten minutes, stirring occasionally, until the sauce has thickened.

›tomato Salsa 300 g mixed color tomatoes 1/2 red onion Juice of 1 lime 1 tbsp. olive oil Handful of fresh coriander 1/2 fresh red chili – optional Freshly ground salt and pepper

Place all the ingredients into a blender and process until you reach the desired consistency. The salsa should be finely chopped. Taste and adjust seasoning as necessary.

›ASSEMBLY! Grab a big bowl and fill with your tortilla chips (if you like them warmed up, pop in a warm oven for a few minutes). Top with chili, then pile on the queso, guacamole, salsa and a salad garnish. Enjoy!

Handful of fresh coriander Freshly ground salt and pepper

Place the roughly chopped avocados, lime juice, olive oil and fresh coriander into the blender and process until you have a chunky guacamole. Season with salt and pepper.

The eighth annual Guildford Beer Festival (GBF) returns to Guildford Cricket Club this June, promising once again to kick summer off with a merry bang. GET SET FOR THE SURREY HALF MARATHON Surrey’s premier running event, The Surrey Half Marathon returns to the streets of Woking and Guildford on March 12th, to push the pulse rates of the local population and to raise valued funds for charities large and small the length and breadth of the county and beyond. The Surrey Half Marathon has been the County’s largest half-marathon for the past 4 years, and according to a survey carried out last year, raised £0.4 million for charity in 2016. The half marathon sees the return of Macmillan Cancer Support as a national charity partner for 2017, alongside Harrison’s Fund as the local charity partner. The Surrey Half is proud to support and work with a number of other charities including Alzheimer’s Research UK, KSS Air Ambulance and Woking & Sam Beare Hospices. In addition to the title Half Marathon event and Kids’ Race - which saw over 500 children take part in 2016 - a brand new 5km run has been added for 2017. Race Director Toby Jenkins says that the 5km “is a very achievable distance for beginners” who want to enjoy the Surrey Half experience, but who are not ready to complete 13.1 miles. He went on to say: “The Surrey Half Marathon 2017 will be a bigger and better event for runners, spectators, volunteer, local businesses and spectators alike. Do join us.”

Peugeot’s bold reinvention of their 3008 SUV range turned heads and won hearts last year. Rich Lee took the top-of-the-range GT model for a spin to find out why… Among contemporary SUVs the 3008 is something of an elegant brute. It’s neither compact nor overbearing, with a confident raised ride height and strong shoulder line, but the car’s chiselled, chunky exterior of hard lines and soft creases may be one feature that could divide some drivers. It shouldn’t though, unless they’re hopelessly stuck in the past. This is undeniably the look of Now, all aggressive grilles and vents, sharp headlights and chrome and stainless-steel trim. The 3008 is simply a beautifully imagined car that should raise the bar for how SUV exteriors will be designed years hence. The interior loses none of that attention to detail, but ups the chic factor considerably. It’s effortlessly spacious thanks to its modular layout with more storage than anyone could ever need. Every surface is beautifully tactile – one stroke of the hand touches full-grain leather, brushed wood effect panels and soft touch ‘Brumeo’ fabric. And when you settle in and turn on the multi-point massage function in the front seats, you discover a car that caresses you back. This is just one feature among a galaxy of optional additions to the fully tricked-out GT model that I had the pleasure of taking for a test spin, thanks to Peugeot dealers Robins and Day in Hurtwood. An 8-inch touch screen on the centre of the dash burrows into all sorts of settings and can be operated from soft-touch switches beneath or voice control. Here you’ll adjust the hi-fi system including digital radio, Peugeot’s superbly intuitive sat-nav system, those heated, massaging front

seats, dual zone climate control, interior ambient lighting and even several choices of fragrance. And that’s barely scratching the surface of what is customisable within the car. The experience is refined further for actual, you know, driving with Peugeot’s iCockpit system. The 12.3” touchscreen digital instrument panel is crisp and clear, can be tuned to display whichever configuration of information works best for you, including navigation, and sits perfectly within your field-of-vision. I could have tinkered all day, indeed I was tempted to, but by now the call of the road was deafening. Out in the wild, the new 3008 drives with a stately, agile grace, untroubled by potholes or the kind of sharp turns that make MPVs and some other SUVs feel perilous above 40mph. The steering wheel is notably smaller than I am used to but it’s comfortable and provides outstanding feedback, as does the ergonomic gearstick, although this model was automatic only. The technology that underpins the driving experience, making it so smooth, stable and safe (the list of safety features is as long as a seatbelt) makes the 3008 feel designed to the point of sentience. Just witness the invisible, ghostly hand that gently corrects your course when gliding away from your lane. That would be lane departure correction during adaptive cruise control with a subtle layer of automatic emergency braking working together in quiet harmony, something that only further enhances the feeling that you’re surrounded by an omniscient digital guardian angel. Over the top? Maybe, but that’s just where we are in 2017 with such cutting-edge safety technology, something every model of 3008 has in spades. All this luxuriously easy driving is nice enough, but have no doubt that the 3008 GT’s 2.0l BlueHDi 181hp diesel engine is a beast in beauty’s clothing. A ‘Sport’ mode adds a button to the steering wheel which,

with one press, transforms the car from a gentle cruiser into a snarling beast, instantly tightening the response of the power steering and accelerator and filling the car’s interior with a full-throated roar as it thunders forward. If, like me, you thought SUVs couldn’t thrill, I can happily attest that the 3008 does so in many more ways than just pure grunt. From the striking exterior, the comfort, style and detail inside and the dazzling levels of technology found in every component, the 3008 is an SUV at the top of its class. THE smart fortwo CABRIOLET FROM MERCEDES- BENZ

Will Knowlton, Jeep addict, has his preconceptions turned upside down by the versatile drop-top beloved by city drivers… I don’t drive a small car, and have refused to ever since I passed my test many years ago. The moment I scraped together enough money I was off buying a 4x4, because, well… reasons. So before taking the smart Cabriolet for a test drive, I found it impossible to imagine that a small space could be practical for anything other than a single university student heading to fresher’s week. How wrong I was. The first thing that struck me was how good looking this car is. Bathed in rare February sunshine and glistening in white, it’s a very attractive car and that’s critical because no one wants to be embarrassed by their vehicle. The guys at smart have taken the time to design a body that is aerodynamic but also creates its own sense of style and grace. The Cabriolet’s electric sunroof was folded away very neatly revealing a clean and practical layout inside. In the driver’s seat, I didn’t feel confined at all. And on closing the roof I was surprised to see that it didn’t detract from that sense of space. The interior, the upholstery and the layout of the controls made it a thoroughly nice place to be. This is important, because the Cabriolet lauds itself as an all-round car, not just a

city hopper. If I’m spending 4 hours driving to the mountains in Wales I want to know I will be comfortable. The car comes with a cradle that plugs in via a USB on its back into a hidden port on the centre console. I like these clean lines and the cradle is stored away when not in use and there’s no gaping hole in the dash where it should be. This is smart (pun intended) because it future-proofs the car. The boot is surprisingly spacious too, even when the roof is stowed. Plenty of room for shopping and I saw, with some relief, that I would easily fit my climbing gear, back pack, walking poles and even an ice axe or two in there. There’s no doubting the Cabriolet’s city driving calibre. As I cruised towards Guildford I knew finding a parking space would be a breeze and having the ability to perform a one-point turn was amazing. It was all so easy: being in an automatic crawling in the traffic around the one-way system was instinctive. The car is fitted with a stop start system, which while not really my thing, the engineers knew there’d be a few of us like that and so the function can be switched off. Heading back out towards the Stoke interchange I was keen to stretch the car’s legs and get her onto the A3. I was relieved to see and feel the car accelerate smoothly onto the carriageway easily transferring from 30 up to 65 as I merged with a satisfying engine roar as we galloped towards the M25.

I cruised lazily for an hour or so happily unaware of life. And that really is what driving is about; you and the car, miles of tarmac and care-free dreaming. The smart Cabriolet won my heart by reminding me of the joy of driving, a feeling I haven’t had since I first turned the ignition of an old rust bucket the day after I passed my test and drove solo for the first time. I clambered back into my truck when it was all over feeling like I had been on a date with a beautiful woman and now had to explain to my wife where I’d been. I mumbled excuses, powered up the car and drove off, wondering if it was all a dream.

EASY RIDER: CBT Training with RideSure

For anyone yearning to experience the freedom of riding a motorcycle, some training is essential. Fortunately, thanks to RideSure in Dunsfold, Will Knowlton discovered that CBT training can be a thrill in itself…

L

ike all men, nestling inside me is road warrior just crying to get out on two wheels. Fortunately for the citizens of this Fair Isle I, I am required to attend Compulsory Basic Training if I were to ride a motorbike on the road. CBT is the basic minimum requirement that allows you to ride a 125cc motorbike on public roads and you must pass it in order to proceed to take a full licence test. Once that is passed you can sell your wife/husband and children and get your hands on that Ducati you’ve always dreamed of. I was greeted by Mark who showed me into the office where there was some paperwork to fill out and a nice cup of tea waiting. One by one more of us newbies started to arrive and as the outline of the day was presented to us. The session took us through not just the basics of riding but also road awareness, the Highway Code as well as choosing your safety gear. This was especially useful because, as a complete novice I wouldn’t have had a clue how to assess the quality of, say, a helmet. Another cup of tea later we headed outside to look at the bikes we’d be

riding. Mark took us through the parts of the bike, explaining everything in slow time making sure we knew what was where and how to use it. Next, the bikes were loaded onto a truck and whisked away over to the other side of the airfield to where we’d be riding. Ten minutes later we were suited up in safety gear and tucked away in a quiet area of the airfield with nothing but open tarmac stretching out before us. It was here that David and Mark would hone our skills and get us ready for the big challenge in the afternoon: a road ride. For now we were let loose, first trying simple manoeuvres like turning slowly in a circle, learning to get the “bite point”, stopping and starting. There was no pressure, and both David and Mark made sure they had one-on-one time with all of us budding Sons (and Daughters) of Anarchy. We perfected our skills in time for lunch but not before we became competent at an emergency stop. Now relatively able and a little more confidant, we rode back to the offices for a spot of lunch. I zoomed along, in love with the whole experience. Here I was, the road stretched before me, a master of

all I surveyed cruising along. This fantasy was soon destroyed as Mark overtook me and, looking down, I realised that I had only been going 15 miles per hour. Lunch done it was time for us to be wired up with radios so we could hear our instructors as we rode through the Surrey Hills. I set off with David giving snippets of advice here and there and as we left Dunsfold. Then I saw a car and panicked, it was just like when I first learnt to drive; I was utterly convinced that every vehicle on the road was out to get me. Having David on the radio was vital. He calmly pointed out cars, potential hazards. Having him there made me feel more and more confident and I soon relaxed enjoying the view and experience. Talking to JOE SWIFT

Spring is in the air so we caught up with garden designer, writer and TV presenter Joe Swift ahead of his visit to Camberley Theatre this month to find out about his passion for being ‘A Man About the Garden’… What purpose does a garden fill? For me, it’s the chance to connect with nature. It works on many different levels- to relax and destress, to grow and create. Some gardeners get so obsessed with the gardening of it that they can’t sit down and relax without spotting a weed; I think it’s really important to be able to sit down and enjoy the fruits of your labour.

Why is gardening so important to you? Plants are incredibly important: without them, we wouldn’t survive. I have to connect to nature every day, I have a yearning for it. Living in a city of concrete and glass, asphalt and steel can be a harsh environment and it’s really good for your soul to get out into the garden. Without them we’d just live in a sterile world and that’s no good. Gardeners just know that they just have to garden!

What’s your own garden like? I believe in versatility of space: I’ve got a pond there to attract wildlife, I’ve got a garden studio so I work there, the family use it to eat outdoors, I obviously garden in it (laughs.) I don’t have a lawn, sacrilege, I’ve just got paving and lots of planting which makes it really practical. It doesn’t restrict when you can use it, even in winter, it doesn’t turn in to a mud patch that you have to keep off. It’s an all year-round space that hopefully looks good too.

You’ve written a book called Joe’s Urban Garden Handbook. How can people add a bit of green to their lives if they don’t have a garden? The smaller a space gets, the trickier it gets, but there is always a way. There’s always a wall, or a fence, or climbers, so if you’ve got limited ground space, think about going up. Green walls are trendy, but I’ve seen quite a lot of green walls fail. They need watering so regularly a good climber or two is easier to maintain than a green wall. If you see all the boundaries of a garden in one go, it actually makes it seem smaller because you know where it ends and if you can green up the boundaries it tricks the eye.

You create bespoke garden designs. What’s the most interesting project you’ve been involved with? I’m designing a garden for the spinal unit at the Stoke Mandeville Hospital. At the moment, there’s nowhere for patients and visitors to spend quality time. It’s a challenge to create an accessible garden patients can enjoy from wheelchairs and beds- we’re digging out huge amounts of soil and putting in retaining walls, making sure there are no hazards in which equipment could get

You’ve won a gold medal at Chelsea and you mentor others on The Great Chelsea Garden Challenge- have you got a recipe for success?

You’ve got to be practical and think about boring things like levels and transitions from one area to another and then with the RHS, the horticulture has to be totally soundyou can’t put drought loving plants next to bog loving plants; they’ll spot that a mile off. If you try to be too ground breaking or too thematic, you end up down this route that you can’t come back from and if you planted a real garden like that, in three or four years when it’s matured, it would be very passé so, classic, contemporary style and really good practicality are my tips. Try to get away from the ‘rectangular garden’ and instead create something where you can take people on a journey.
