Charity Spot - Challengers One generous act of kindness could make a day of play possible this summer… This summer Challengers will be working hard to give disabled children and young people aged between 4 and 25 the best possible time and they need your help to make it happen. You might have seen Challeners out and about around Surrey. They’re the people in bright orange t-shirts having fun and making the most of our beautiful county. If you haven’t heard of Challengers, they are a local Surrey-based charity focused on inclusive play and leisure opportunities for disabled children and young people Challengers was set up in 1979 by Helen Foley, a local paediatrician, and Colin Hassell, the local leisure centre manager to start swimming lessons for disabled children. They did this because disabled children had nowhere to go to have fun, to try new things, to make new friends and provide families with a short break. In 2017, the need continues to grow and shockingly 51% of disabled children and young people continue to be deliberately excluded from play and leisure opportunities.

Challengers will never turn anyone away, never discriminate and see the individual for who they are, and what they need to enjoy their time at Challengers safely. Children are included from the moment they arrive at Challengers, enabling them to have fun, grow in independence and mature in confidence. The opportunity to play and have fun independently is vitally important to disabled children and young people and their families. Many parents with disabled children feel isolated and this isolation can lead to the breakup of the family. The opportunities for regular independent play make a positive difference for parents and the difference to the children and young people is life changing. A parent of a young man who comes to Challengers talks about the difference it makes to his life: “He really feels like the ‘normal teenager’ he so longs to be when he is there. He loves going shopping, to the cinema, the beach, or just hanging out with his friends there listening to music, playing football, table tennis, watching DVDs .... they are like a family and it is clear to see all the kids love it there!” Across the summer months hundreds of children and young people will be having the best possible time at the

Challengers schemes in Bookham, Caterham, Dorking, Epsom, Farnham, Godstone, Guildford and Leatherhead. They urgently need your help this summer to help make this happen.

£152 will pay for one child to come to Challengers for a day of fun and laughter. Any amount you can afford to give will make a real difference. For example: • £54.60 pays for a play worker to spend a full day of one on one time with a child • £38.50 could pay for an hour of inclusion training for 15 play staff • £13.00 could allow a Play Leader to spend an hour planning the next few days of play

Jazz Café: Lee Goodall

Public Service Broadcasting is the corduroy-clad brainchild of London-based J. Willgoose, Esq. who, along with drumming companion Wrigglesworth and multi-instrumentalist JFAbraham, weaves live drums, guitar, banjo and electronics with archive footage and propaganda material to create stunning sonic vistas of the past. With the recent release of their third studio album, Every Valley, PSB are bringing their dazzling live show to Always the Sun this September… The last time we saw you perform on Stoke Park, you blew away the crowds at GuilFest. That was 2014, so what have the last three years been like for PSB?

This feels like the most pointed, political PSB album to date. What other historic events, movements or issues might you want to explore in the future?

J. Willgoose, Esq: Hmm, I remember that gig well. Well, they’ve been busy. We’ve released two albums and done an awful lot of touring, but that’s what you want to be doing as a band, right? We’re actually taking it relatively easy this summer in terms of festivals (I think you have to as you start climbing the billing, as festivals tend to want you not to do so many), and it feels a bit odd; it’s nice to be busy and feel wanted.

This is definitely a more quietly political statement, yes, but I don’t think it’s hectoring and I don’t think it’s overly didactic or patronising. It’s not intended to be. I think it’s more powerful if you leave room for interpretation and for people to find their own way through it, rather than hammering people with a big Message Stick. And in terms of the future, I have a few ideas, but the main one is having a rest, to be honest, and letting my brain recharge a bit!

For your new album, Every Valley, you’ve focused on one subject in particular: the plight of Welsh mining communities. What appealed to you about that topic? I think I wanted to do something different from what we’d done before, to take more of a risk on a more human story. The more I read about the mining industry. and the strike in particular, the more I realised I wasn’t just researching and writing an album about mining; it’s as much, if not more, about community as it is about the commodity. It made sense then to start looking at framing it in terms of a community, and given the solidity of the Welsh Valleys during the strike I was naturally drawn there. There’s something about the geography, too, that I find inescapably romantic, even in the postindustrial landscape. Ultimately, though, I found it a fascinating story and one that just grabbed hold of me and wouldn’t let go.

Some might say you’re as much historians now as you are musicians. Do you see yourself that way? Definitely not. I think a lot has been made from our early quote about ‘teaching the lessons of the past’… blah blah blah, but that was just a snappy one-liner I thought up to try and sell my solo show at the Edinburgh Fringe. I don’t see us as being historians or as teaching anything to anyone - we’re not that arrogant that we think people need to be educated about these things, or that we think we know more about these things and that puts us in a position to speak about them. I can see how we’ve helped to create that impression ourselves, but it’s really not what we’re about.

What was it like incorporating collaborators into the work this time aroundsuch as singers Tracyanne Campbell from Camera Obscura and James Dean Bradfield from the Manic Street Preachers? It’s great in that they’re all fantastic people to work with and brought a collaborative spirit to this album that we’ve been missing in the past, but also in terms of their voices, too, and just the quality of those instruments. It’s just a privilege to be able to work with musicians of that calibre.

Your appearances over the summer at events like Always the Sun precede a major UK tour supporting the new album. Do you enjoy the touring life? I love playing music for a living. It’s the greatest privilege I can imagine. Some of the travelling and the lack of sleep gets a bit trying, but one of the things you learn from making an album about coal mining is that we have it very, very easy.

The sound, subjects and visuals of PSB continually evolve, but it’s less easy to say the same about your image. Is corduroy simply non-negotiable for you? It should be non-negotiable for everyone.

BOHEMIA Chill out and take a step back into the ethereal sounds of the Bohemia Stage. A new area for the festival this year, expect a cacophony of colour within this laid back corner of Stoke Park. Expect alternative folk music, spoken word and poetry. Catch a whole host of local and not so local acts taking to the stage to serenade your senses.

CHINA BEARS Found on the Park Stage early on Sunday, catch rising stars of the scene and ACM students China Bears. Enjoy the sounds of ambient guitars, choral harmonies supported by a lifting back beat. They released their single ‘Hydra’ in April, which was featured as BBC Introducing in the South’s Track of The Day. They are set to release more music throughout the rest of 2017.

DREADZONE For some rubba-dub good times, catch dub reggae heavyweights Dreadzone on Saturday at the Park stage. With pure sunshine sounds and bass to make your head bob, these cool cats have been playing parties and festivals on a global scale for some three decades. Put on your dancing feet and get ready for some serious beats.

ALL THE WORLD’S A STAGE Explore the corners of your imagination through dance, theatre and storytelling at the All The World’s A Stage area of the festival this September. Be inspired by talks given from bright minds, take part in drama workshops and even be the rock star yourself at Always The Sun’s very own Band-AOke - take the mic and have a full live band back you up.

EARTHLING FOREST SCHOOL Kids can come too of course. Always The Sun is a super inclusive kind of affair, whereby young, old, small and tall can attend, enjoy and be entertained by the weekend’s frivolities. Bush Craft kids should make their way to the Imaginarium area of the festival and take part in the Earthlings Forest School, who will be providing a unique opportunity for learners to gain important life skills and appreciation of the natural world through play, woodland crafts and the freedom of self-lead discovery. FIELD TO FORK Brand new to the festival this year is the superb Field to Fork experience. Prepare yourselves for a sumptuous banquet of the senses provided by a trio of local food heroes and last year’s Always the Sun’s kings of the Outdoor Kitchen: The Alternative Kitchen’s Stu Henshall, Masterchef alumni Dan Britten and Smokey Joe’s Joe Docherty. THE STRYPES Headlining the Friday night party at Always The Sun on the Park stage will be Irish 4 piece The Strypes. Playing classic rhythm and blues, the band are inspired by the likes of Dr. Feelgood, Chuck Berry, Bo Diddley and the early Rolling Stones, In April 2012 they released a 4-track EP, “Young, Gifted & Blue” which hit no. 1 on the iTunes Blues Chart and ignited the interest of record companies. Most definitely one’s to watch, remember where you saw them first.

VAPORS Turning Japanese, they think they’re turning Japanese! Local veterans of the music scene, the new wave 80s cult classic sounds of The Vapors will be taking to the Park Stage on Sunday. The band, all hailing from Surrey, formed in 1979 and after establishing themselves locally as an exciting live outfit, got their big break after ‘The Jam’ Bass player Bruce Foxton saw them playing in a local pub and invited them to tour with The Jam on the ‘Setting Sons’ tour. The rest as they say, is history.

Why not escape the Summer sun and head for the piste to cool off? Sandown Ski centre runs their Junior Club on Saturday mornings. The session caters for both children who can slalom and schuss as well as those who’ve never tried. The good news is that during the session the slopes are open for the kids so there’s no danger of a repeat of the time Kate drank too many Schnapps and ploughed into Tarquin’s kids. Bear in mind though that all sessions must be booked in advance so the team at the centre can make sure there are enough instructors to go around. Also remember that all minions must wear helmets while skiing, and these aren’t provided.

Well who would’ve have thought that nestled in the Eastern Holds of our fair county sits one of the World’s top Mountain Board Centres? Ride the Hill has something for everyone and, mercifully, a lift to take you back up after your descent. The centre’s aimed at everyone even if you’re an absolute beginner so this is definitely one for joining in with the kids. All the instructors are ATBA qualified so you’ll be

zooming down the slopes in no time! But if you’d rather watch your offspring take off then you can take in the wonderful countryside that surrounds the venue as well as eat from the local farm shop. Now for the bad news. Sadly, Ride the Hill will be shutting on the 30th of September so this really is your last chance to enjoy a fantastic day out on the hills.

GUILDFORD AND TOWN TREASURE TRAIL Get the kids outside on a good old fashion treasure trail. The idea is a self-guided themed Treasure Trail through Surrey’s pretty Guildford and its quiet river The Wey. This trail is actually one of three different trails in Guildford itself and one of a whopping 13 across Surrey! You and the kids follow a set of clear directions whilst searching for the answers to the clues which can be found on the way on plaques, buildings, statues and just about anything else! Now, every time you solve a clue, you’re eliminating a

possible resting place of the long lost treasure on the old treasure map. Get the clues right and like The Goonies you’ll discover the location of the treasure. In the meantime, you and the wee ones have been completely oblivious to the fact you’ve had a great day outside in the fresh air! This is a walking activity and the trail is about one and half miles long so bear that in mind. Also, it’s not really one for prams so dads will have to don the baby backpack.

We’re back outside now for something a little less adrenaline filled but no less exciting. Not far from Chertsey you’ll find The Great Cockcrow Railway. This is the country’s most extensive miniature railway and offers children and adults a chance to experience the thrill of a train ride. The railway is divided into two routes which offer either a non-stop tour around the railway or a “stopping” route which takes in the local Jungle! It really is a wonderful little railway with signal boxes and station halts as well as authentic signs from bygone years. The railway also has refreshment facilities with wonderful fayre including savoury snacks, wonderful cakes and ice creams. Oh, and there’s free parking. The railways is usually only open on Sundays but throughout August the railway will be open on Wednesdays as well.

SUMMER OF ADVENTURES AT LEITH HILL PLACE Leith Hill Lane, Dorking

This summer the team at Leith Hill Place have put together a packed programme of activities ranging from outdoor fun with the rangers, to the first ever outdoor theatre performance in the grounds. Throughout August on Wednesdays the Leith Hill rangers will be offering a special trail, all a part of The National Trust’s “50 things to do before you’re 11 ” activity ideas. You and your brood can pick up a trail map from Leith Hill Place and head out to explore the gardens and grounds, trying your hand at bug hunting, making a trail with sticks or creating natural art. Even though the house itself isn’t open there’ll still be hot and cold drinks to keep you going. Why not take a picnic? This is a free event as well which is nice!

THE SURREY GAME AND COUNTRY FAIR A fantastic rural day out for the whole family on Sunday 24th September The Surrey Game and Country Fair is an action packed, rural day out for the whole family, combining top class entertainment, have-a-go activities, shopping and rural crafts and local food and drink. The event is organised by the Surrey County Agricultural Society, a small charity that exists to promote agriculture and good farming. Rural pursuits are at the heart of the event with duck racing and sheepdogs, the amazing Warrenby gun dogs, ma jestic birds of prey, terrier racing and a parade of hounds all performing in the main arena. Fly fishing, ferret racing, a family dog show with fantastic prizes and dog agility can also be found around the Fair ground. Food lovers are in for a real treat this year with the Food Theatre complementing the ever-expanding Food Hall. Demonstrations include hedgerow foods and medicines and the popular Tillingbourne Trout Farm complemented by a butcher and a chef.

The Fair is the ideal place for some early Christmas shopping – or simply to treat yourself! You’ll find everything from unique pieces of jewellery to handmade leather goods. And the kids will have fun with donkey rides, The Sheep Show, Punch & Judy and their own model railway. This year, the Fair will be run in association again with Hownhall Shooting, who will host an all-day shoot as part of the day’s activities. This will include a 50-bird sporting shoot with various awards and have-a-go pursuits for all ages including clays, muzzle loading, air rifles and simulated pigeon. Archery also features for the first time at the Fair. On the same day, but a few miles away at Eashing Farm near Godalming, is the 2017 Surrey County Ploughing Match, the most prestigious in the South East. The match brings together around 70 ploughmen with vintage and modern tractors, heavay horses and hand ploughs. Entry to the ploughing match is free and runs between 10am and 1pm.

CANNABINOIDS

Treatment ceased when the Misuse of Drugs Act came into force, creating the A, B, C classification we recognise today. Due to the prohibition of cannabis, only limited research and scientific studies have been able to be carried out. In the age of the internet where information is so transferrable, and as time moves on, so too does it seem, that our understanding and knowledge of this plant is ever increasing. So what do we know?

Cannabinoids Found predominantly within the cannabis plant are molecules called cannabinoids which act to some degree on the endocannabinoid system in a variety of ways. Other plants such as Echinacea, the Chinese rhododendron and even our beloved cocoa also contain various cannabinoids within them that play their part in keeping our ECS in check. The fact that our bodies have an ECS in the first place, suggests that we ourselves produce our own cannabinoids. Research has even shown that breast milk contains cannabinoids that encourage babies to make the suckling action. Interestingly, much like Vitamin C may boost our immune system, cannabinoids may have the potential to boost our endocannabinoid system. One such theory being explored currently is cannabinoid deficiency, which may contribute to migraines.

The Difference between Cannabis and Hemp? An area that has caused much debate over the years due to a lack of research and education is the difference between hemp and cannabis. Of the same family, the difference between the two plants is their purpose through time and cultivation. Known for its durable and hardy fibres, hemp can be used for textiles, paper, clothing as well as a food supplement due to its CBD content,

Hemp merely describes a Cannabis Sativa plant that has low traces of THC. Cannabis (or marijuana) is used to describe a cannabis Sativa plant that is bred for its resinous glands (known as trichones) that contain high quantities of another cannabinoid, the psychoactive molecule THC).

How can you support your ECS in the UK? Whilst cannabis is illegal in the UK, Industrial Hemp (less than 1% THC) is not, though a license is required. Hemp is a great source of the cannabinoid CBD, which is known for its calming effects and positive effect on the body overall homeostasis. With the UK known for the largest consumption of cannabis in Europe (if not the world per capita), we suspect that are, as a nation, we were to follow suit and legalise cannabis,

Do we think thereâ&#x20AC;&#x2122;s something in all of this jamboree of marijuana discovery that might have an ounce of integrity and truth? Only through discovery, education, regulation and legalisation, will we begin to understand more about cannabis and the potential medical benefits that cannabinoids may reward us with. woking food and drink festival 2017 Over the course of five years, Woking’s Food and Drink Festival has grown from a spirited little food fete into an event of unbridled epicurean epicness. Thousands of hungry visitors will once again descend on Jubilee Square, Mercia Walk, Commercial Way and Gloucester Walk this September for three days of glorious food and drink as well as the chance to learn from some of the finest culinary talent in Surrey and the UK. Oh, and the cherry on the sundae? It’s completely free to attend! The town centre will sprout more than 80 stalls from sellers and artisan producers, with most giving away mouth-watering samples of the finest regional produce as well as that from further afield. Given the increased stature of English wine on the world stage, a welcome new addition to the festival sees the brand-new Wine and Cheese Zone running across all three days. Visitors can sample wine from Surrey and English vineyards along with opportunities to buy the carefully crafted cuvees. Weybridge based John Mobbs, lead writer for Great British

Wine, will also be on hand to host regular tasting and Q&A sessions. Another new addition to this year’s line-up will be the introduction of BiteSize Talks delivered by local producers, gastronomes and chefs, hosted at a range of town centre locations, including Tante Marie Culinary Academy, New Victoria Theatre, The Lightbox and WWF-UK’s The Living Planet Centre. WHERE TO EAT: White Hart, Witley A rebellious, indie spirit and a reverence for amazing barbecue make this gorgeous country pub an essential visit for foodies after a little smoke and fire… As traditional British country pubs go, you could pass by the White Hart in Witley any number of times and never see more than a lovely olde watering hole, strewn with bunting and flowers and lazy, rural charm. And while it certainly has that in spades, actually visit the White Hart and you’ll discover, as we did, a very different beast than you’d expect. Chef Sam Daffin took on the 16th century public house a few years ago and brought his obsession with whiskey, beer and rock and roll, and his genius in the dark arts of real barbecue, with him. Now the White Hart, and her sister pubs the Winterton Arms in Chiddingfold and the Grey Horse in Kingston, enjoy an unmatched reputation for insanely good smoked meats as well as redefining ‘British BBQ’ in a classic pub setting.

Inside, the White House has retained all its old-world appeal, but serves as a canvas for the idiosyncrasies of its owner and his equally colourful team. All manner of quirky objects, old record sleeves, cult movie and rock posters and indie artwork adorn the pub, infusing it with a personality you just don’t find enough of in other country pubs. Still, a summers day begged to be enjoyed outside in the pub’s pretty courtyard, where we settled down to explore the White Hart’s infamous food and drink. There’s a new burger special every month; barmy constructions inspired by cherished patrons or the staff’s own adventures. This month’s was ‘Up to No Gouda in Amsterdam’. I tried to probe further but received only a sheepish ‘don’t ask’ expression from the pub’s manager Gareth, who was otherwise as unfailingly affable as the rest of the young team here, all of whom exude a tangible pride in their pub, and especially their food and booze. Whiskey’s most definitely the thing at the White Hart, with a blackboard and bar groaning with the stuff. From the cocktail menu, we discovered some fiendishly

clever concoctions including a ‘Dill or No Dill’ that tasted of apple, dill, cucumber and summertime over gin and the ‘Mary-Le-Bone-Licker’, a bloody mary infused with smoked vodka and something referred to, troublingly, as ‘smoker jizz’. I know, I know: “don’t ask.” We sipped these as we poured over the pub’s concise menu, grazing on some olives and grilled pitta smothered in a luscious avocado hummus spiked with that earthy, spicy Egyptian condiment dukkah. Now, I won’t lie; we’d been lured here by the promise of smoky slabs of masterfully cooked meat, but even so we ordered some seafood to kick off the meal proper. It felt like the polite thing to do. Where many pubs and restaurants seem almost embarrassed to present octopus in anything like its original form, the kitchen at the White Hart proudly serves the tentacle whole, after giving it some lovely smoky char and a crispy surface that disguised meat so succulent and sweet, I swear I’ve never known cephalopod so good. Amazing by itself, a cunning pesto of capers, garlic and parsley drizzled over chorizo matched it perfectly. Opposite that, and

a delicate contrast: salmon gently cured in Hibiki Japanese whiskey; soft, cool and pleasantly gummy with just enough whiskey background, with a dressing that was part cucumber kiss and another part wasabi slap. And then the main event, and here I’ll confess that there was one item that had drawn me here today above all others. The ‘Gianfranco Gorgonzola’ was a Burger of the Month so brilliantly demented it has remained a permanent fixture on the menu. They start with a fat, juicy patty cooked pink as God intended, throw it in a brioche bun, load it with cheese, tomato relish, dill pickle and something tangy and wondrous they call a ‘garlic bread aioli’ before topping it with – and I’m not making this up – a golden-crusted, deep fried lasagne. With liquid gorgonzola streaming down the sides like white lava, it’s a burger that exists in both dreams and nightmares. And it was absolutely awesome. Honestly, the ‘Gianfranco’ feels so wickedly illicit it should be a whispered secret, a suburban legend infecting an amoral underground foodie sub-culture, where those who possess the forbidden knowledge often turn up dead or fat

or both; a burger that sends shifty gluttons down dark alleyways to murmur codewords through heavy steel doors, then descend into gloomy basement kitchens in pursuit of the most seedy and sordid culinary perversions. It’s that wrong, and yet so, so right. Not as gimmicky, but no less delicious, was a plate of St Louis Cut Pork Ribs glazed in the pub’s own barbecue sauce. Here, the kitchen’s mastery of smoke and alchemy was on full show, the meat parting from the bone in soft, succulent waves of pork and that shimmering, sticky-sweet glaze clinging to it like a spicy, savoury caramel. Sides aren’t a sideshow here, either. Sweet potatoes roasted over coals until butter-soft and the colour of blood and honey, sat over a pungent dill aioli laced with black garlic, was almost too much, and even something as simple as sweetcorn licked by fire and bathed in bacon butter felt less like feeding us and more like flirting. I may have even blushed. Vision swimming by now, we finished with a cheerful ice cream sundae sprinkled with cornflakes, with lashings of

dulche du leche and hot fudge sauce sinking into the cool, creamy depths. Like just about everything else on the menu, it’s intended to produce nothing more than big, soppy, satisfied grins from diners, but make no mistake; the level of cooking, the precision, imagination and the reverence for their dishes and ingredients set the White Hart quite apart from many other pubs that merely pretend to those standards. There’s swagger and confidence baked into every facet of this place, from the team to the décor and, especially, the food and drink. This, truly, is Where to Eat.

Kimchi 1 kg (2 lb) Chinese cabbage 140g cup sea salt 1125ml water 5 garlic cloves 2” piece ginger 2 teaspoon caster sugar 2 tablespoon apple juice mixed with 1 teaspoon maple syrup 3 tablespoon chilli flakes 2 tablespoon toasted sesame seeds

Method Preheat grill to 300 degrees and place 2 cups of hickory woodchips straight on the coals or if using gas you can pick up a smoke box pretty cheap. After 15 minutes place your mushroom on the BBQ and leave to dry out and darken for about 20 minutes. Leave to cool while you make the BBQ sauce and then shred. Add liquids to saucepan, then add sugar and garlic powder. Bring to boil and reduce to simmer for 15 minutes until it thickens slightly. Add loosely pulled mushroom to saucepan and heat through. To make the kimchi slice cabbage finely. Combine salt and water and bring to a full boil and Cool for 5 minutes. Pour over cabbage in mixing bowl. Let it sit for 15 minutes. Rinse once and drain. In a separate bowl combine garlic, ginger, sugar, apple juice, and syrup in a blender and puree until smooth. Add chilli flakes and mix. Place drained cabbages in a large shallow mixing bowl, add puree and toss with sesame seeds.

With more of us exploring or embracing a vegetarian or vegan diet and lifestyle, recipes and cooking methods are evolving to keep up. Some veggie cooks pursue the art of preparing meat free dishes that ape their animal inspirations, while others let the pure, natural ingredients stand on their own. You only have to look at Instagram to realise that, as chefs and home cooks get more creative with vegetables, fruit, pulses, nuts and all, so too do the possibilities for dazzling dishes that contain nary a trace of animal protein.

The image of burgers, steaks, sausages and chops sizzling, spitting and dripping fat over hot coals, the smoke and aromas wafting over friends and family on a summers day, is so entrenched that many of us can’t imagine the world of flavours and textures we’re missing out on if we could only think beyond meat. “I think the thing is we are just conditioned to think BBQ equals meat,” agrees former Great British Bakeoff contestant Stu Henshall, “so a lot of non-meat eaters just stay clear and pick at the salad on offer while the rest of the family tuck in.”

So what’s been on his grill lately? “Don’t take this the wrong way, but I am totally addicted to smoking mushrooms at the moment. I’ve even shared my go-to pulled shroom recipe for you to try. Also, I have just got back from Greece where they loooove their grills and I couldn’t get through more than a few hours without snuffling a plate of grilled aubergines.”

It’s no secret to say that children and vegetables have always had an uneasy relationship, but Stu believes that the smoke and fire and excitement of a BBQ is a great way to turn them around. “Let them at the grill,” he says. “Tools are longer, no open flames; I let my son jump on it with me. It’s the best way to get kids involved. The healthy eating battle is a long one but they are much more likely to give it a go if they have been involved in the cooking.”

RECIPE: SECRETT’S HUSK ROASTED CORN WITH WHIPPED The corn grown at Secrett’s at Hurst Farm in Milford is super-sweet and picked fresh everyday for the farm shop and wholesale customers. Of course, if you pick your own you could be eating it within an hour of harvesting. One of the most delicious ways to cook corn is whole in its husk, in the oven or on a BBQ. For the best results, you need to soak the corn in water for at least 15 minutes and if you are going to cook it directly on the BBQ, overnight is even better. The leaves soak up the water and helps protect the corn during cooking. To prepare the corn, simply fold back the leaves without removing them to remove the silk. This is inedible and comes off easily when the corn is raw. Fold back the leaves to cover the corn and tie the top with string. This helps keep the corn covered during cooking.

Serves 6 Preheat the oven to 190°c / Gas Mark 5 or cook on a pre-lit BBQ.

Ingredients 6 ears of corn, with outer leaves intact 2 tablespoons rapeseed oil 1 red onion, finely chopped 2 cloves smoked garlic, chopped 1 dessertspoon of mixed chopped garden herbs (we used thyme, sage & chives) 2 teaspoons smoked picante Spanish paprika 1 teaspoon toasted cumin seeds, crushed 1 tablespoon ancho chili powder 125mls water 1 x 250g pack of butter, at room temperature Salt and freshly ground black pepper (use smoked salt) if you have it

Method 1.

Trim the outer leaves leaving enough in tact to protect the corn during cooking. Remove the silk and pull the leaves back over the corn.

Place the corn in a baking tray in the oven or on the BBQ. Roast in the oven for 30 minutes. A BBQ should take 20 minutes but turn every few minutes. While the corn is cooking make the butter (this can be made in advance but serve at room temperature).

Heat the oil in a frying pan and add the onions. Cook for 2-3 minutes and stir in the

garlic cook for a 2 minutes, add the spices, herbs and seasoning. Pan fry for 1 minute and add the water and reduce. 4.

When cool place in a food processor with the butter and blend until smooth or in mixing bowl of a stand mixer and whisk until light and fluffy. Place in a serving dish to serve with the corn.

Remove the husks from the corn and spread on the butter while the corn is hot. Serve immediately.

Naturally the warmer months invite us to spend more of our time amongst the great outdoors. For a truly magical experience this August, why not venture to Ockley and to The Hannah Peschar Sculpture Garden. The brainchild of owner and curator Hannah Peschar, the Sculpture Garden has opened its doors to the public during the summer for over 30 years. With over 200 sculptures exhibited this summer, the garden itself is an oases of calm and tranquillity all the while serving as aesthetic inspiration for visitors. This year the garden’s exhibit is curated by award winning landscape designer Anthony Paul and Vikki Leedham and features a range of work that encompasses styles varying from figurative to highly abstract. With a range of mediums used, expect to find contemporary metals, wire, glass, ceramics and plastics as well as the more traditional stone, wood and bronze sculptures. Set sympathetically within the garden, each sculpture is placed and positioned with careful consideration given to its environment and other sculptures in the garden. Notable pieces include Ronald van der Meij’s ‘Sound Architecture 5’ which is part of a sound architecture series. Formed from 5,000 stainless steel bicycle bells meticulously placed underneath an Oak Tree, in the autumnal months its acorns will play an atonal symphony and with a high wind, the bells will sing to passers-by who listen carefully.

endless. We see kitchens in every colour imaginable. The design trend seems to be a combination of traditional and contemporary, in fact an evolution of the 90’s and noughties. Bathroom design has seen a dramatic change. During the 1990’s we moved away from peach, avocado and turquoise suites coupled with wall to wall carpets and cumbersome vanity units. Shower baths, low profile shower trays, wall hung and back to wall toilets along with plenty of storage became desirable. Today we dream of a luxurious hotel style bathroom. 2017 sees heritage style being popular, especially in Victorian and Edwardian homes, also spacious walk in showers with statement basins with matte, neutral large tiles. HHHHHH Reasons to Not Let this Property Market Make You Glum HHHHHH I was on the phone with a potential client yesterday who said she was thoroughly fed up with house hunting. The houses they liked were being snapped up before they had a chance to get a foot in the door, and they were beginning to think the other houses on the market were just the dregs that no one else wanted. Firstly, it should be pointed out, that this was only one person’s opinion and a fed-up person to boot. Secondly, we are sympathetic to house hunting becoming quite a despondent task, as every visit to a property comes with a high level of expectation, and when it turns out to be the ‘wrong’ house, it leaves you feeling doubtful that you’ll ever find the ‘one’. If you are finding yourself in this quandary, we want to assure you that all is not lost and even in a market that is a little subdued currently, we have some examples from our own experience that will hopefully inspire you – or at least encourage you to dust yourself off and start to think about house hunting from a different perspective.

Buying a project may pay off in the long term

Take our London based clients ‘Jules & Sam’. They are in the process of buying a house that we found after the first house – a development project – that they had set their hearts on went to sealed bids and went for way over asking price (and their upper limit). There appeared initially

to be nothing else either on or off the market which would have suited them. However, because they had showed willing to take on a substantial project, we started to look at houses at the lower end of their budget with the potential to create what they really wanted. Only a week or so later they made an offer on what appeared online to be an average, rather dated house, but in a fantastic location, five minutes’ drive to the station and with huge development potential. By opening their minds to a project, they have ended up with what will be a fabulous family home that otherwise would have been out of their reach financially.

It might not be the house, just the location you need to change ‘Jill and Jack’, another London family, had been looking for months on their own until they met us in March. They knew what type of house they liked but were struggling to find the ideal location in an area that they didn’t know very well. If you are really hitting a brick wall in terms of the houses you are viewing, it may be time to change location. For this family, a fast commute was crucial. Following an orientation tour showing them other areas to the one that they had previously been considering, we opened up their eyes to other options, therefore opening up the choice of houses available to them. This led to them finding a fantastic family home in a completely different area to where their search had started.

In this market you won't be paying too much for a house Sometimes when the market is especially buoyant the price paid for a house can go over asking, in most cases everyone is happy; the seller gets a good price for the house and the buyer is so happy to have secured the house they wanted so don’t mind paying a bit more. In this current market, the good news is that sellers are more likely to take sensible offers on their houses. This doesn’t mean they are making huge losses but the market is self-regulating.
