’ Resolutions New Years This year, we at TG Media solemnly pledge to find the best stories, interviews, events, people and businesses local to you. See? That wasn’t too hard. Of course, most New Year’s resolutions aren’t so straightforward. In fact, they’re a bit like babies: fun to make but notoriously difficult to maintain. So what, if anything, are you resolved to achieve in 2015?
Xenia 61 | Stall Holder They’re so difficult to keep. I don’t make big resolutions every year like, I’m going to lose a stone or run a marathon. If you’re going to make them it’s best if they’re quite small and achievable. I did achieve this year’s resolution which was to get the family album up to date, which was very worthwhile.
Tamas 40 | Chocolatier I usually don’t make resolutions because I never keep them! One for 2015? I don’t know – probably to make more time for myself.
Stephanie 21 | Personal Trainer I actually achieved my resolution of 2014: to train to become a personal trainer. So for 2015 it’s to actually get a job doing what I love. They’re the only resolutions worth making anyway.
Terry 31 | Stall Holder I think everyone makes them but they never stick. With me it’s always ‘I’ll give up smoking’ or something but so far… no such luck.

David | Gym Owner I don’t make resolutions. I tend to procrastinate so I set my self short term targets and goals instead. I do have targets for 2015: to move to Bermuda and explore the other side of the world. I’ve got a 2 year old boy so I want to spend more time with him as well and focus on quality of life.
Jo 33 | Wine Bar Owner I’ve made resolutions before but they probably only lasted about a month so I don’t make them anymore. They were always about giving something up or getting fit, all those things that make you utterly miserable in January. But for 2015 I resolve to maybe slow down a little bit and prioritise some Me time. If there could just be an extra day in the week that would be awesome.
Ros 29 | Marketing Manager I always make one but I never ever keep it. I made one for my boyfriend last year: to say less, do more. He kept part of it - the do more bit - but he still can’t keep his mouth shut! This year I would like to manage my finances better!

Young People’s Civic Awards Scheme 2015 Nominations are now being welcomed for the 2015 Young People’s Civic Awards Scheme, which aims to promote and reward community spirit in young people aged up to 18 years of age… We at TG Headquarters know all about the amazing people that live in our community – but there are young people out there who deserve more recognition. Woking Borough Council have therefore launched the search for under 18s with the eXceptional Factor, looking for young people who have achieved exceptional success.
Triumph Over Adversity - this includes endurance and bravery, such as overcoming disability or helping a parent or family member with a disability. Outstanding Achievement - this covers excellence in many fields - sport, music, drama, the visual arts - particularly in less academic subjects that are not normally recognised or rewarded in other ways.

After the Floods A year on, we remember one of the wettest and most turbulent New Years on record… It’s still hard to imagine but a little over a year ago great swathes of Surrey were underwater. Torrential storms experienced over Christmas 2013 and into the New Year saw the Rivers Thames and the Wey burst their respective banks, cutting off communities, damaging businesses, destroying property, and causing havoc to roads and rail networks.

However, we must never forget the huge efforts made by organisations such as the British Red Cross and Surrey Search and Rescue, alongside the emergency services, to go to the aid of thousands of residents in often dangerous conditions during that time.
In Southern England, January was the wettest recorded since 1910 and the Met Office suggests that this was one of the most exceptional periods for winter rainfall across the UK in 248 years. It is certainly hard to forget and many people, in Surrey and elsewhere in the UK, are still living with the damage left behind after the waters receded.
Elsewhere in Surrey, it was the towns and villages spread along the Thames that experienced some of the severest floods, including Esher, Walton-on Thames and Chertsey (who could forget the contentious ‘Chertsey Sausage’ that was flung up to protect against further flooding that February.) But it was only last month that Surrey County Council were awarded an additional £60million to further develop the River Thames Scheme and flood prevention measures.
The floods arrived after a succession of severe winter storms that hit the UK over December, January and even the first half of February. Scotland and North East England took the first blows on the 5th December but on 23rd and 24th December a storm brought widespread flooding to southern England, reaching Dorset, Hampshire, Kent and Surrey leaving around 50,000 homes without power over Christmas. The River Wey experienced some of its highest levels in nearly 15 years. More than 160 properties in Guildford, Cranleigh and Godalming were flooded after nearly 2.3in (60mm) of rain fell in one day. In Guildford, Conservative MP Anne Milton criticised the response by the Environment Agency who only released a severe weather warning when the river breached its banks on Christmas Eve. “It was terrible to watch local

Overall the December and January storms claimed seven lives and ruined 1,700 properties across England. So while we in Britain are fortunate to inhabit a relatively benign corner of the Earth, it’s clear that nature can always remind us of our vulnerability. We can only try to remember her lessons the next time the heavens open with such disastrous results.

Ten Tips on Avoiding Flooding this Winter What can you do to avoid catastrophe should the sky fall on us again this winter? David Lewis from Grillo LLP Chartered Surveyors in Godalming offers ten helpful tips to protect your property... Ensure gutters and downpipes to buildings are clear of leaves and debris and that gullies and underground drains are free running.

Check roofs and ensure that missing tiles are replaced and loose flashings are secure.

Check valley gutters and outlets to ensure they are free from obstructions. A dead pigeon or build-up of debris could block the outlet, leading to a flood inside the building.

Check that all your rain water for gullies and patios, drives and paths are all clear and free running.

Check that road and footpath gullies and drains are clear of fallen leaves and debris and have been cleared recently by the Council.

If any adjacent stream or ditch belongs to a neighbour or the Local Authority, ensure the appropriate body is aware of any obstructions, and that they organise clearance.

OUR CHARITY HOTSPOT 2015:
SURREY SEARCH AND RESCUE
Last year TG Media made a commitment to follow local charities, to showcase their tireless work in the community and to highlight the essential support they provide. As we enter 2015 we will continue to work with a charity for the year as well as bringing you all the charity news from your area. This year we will be showcasing Surrey Search and Rescue and the volunteers that run it. Focusing each month on different aspects of the organisation, we’ll talk to team members, dog handlers, the Swift Water Rescue teams and even those who the teams have helped over the years. You may have been aware that Surrey Search and Rescue existed even before the floods that ravaged the county last winter. It is a totally voluntary specialist organisation whose sole remit is to find missing vulnerable adults and children.
The team of over 50 volunteers and 8 search dogs are on call 24 hours a day, 365 days a year. Every year some 2100 people go missing in Surrey and the teams are trained to operate in all environments, from woodlands to urban and even on water, to ensure that these people are found and returned safe. Surrey is made up of 642 square miles and most of it is covered in woodland - we are the most wooded county in the United Kingdom. It’s a hard task, but one the volunteers never shy away from. Surrey Search and Rescue was formed in 2010 and is an official member of the UK’s Lowland Rescue Association. The team does not receive any government funding, or any funding from the police or the council. Indeed, they are a charity that relies entirely on donations to procure equipment and other resources. It is these donations that keep the team running, searching and saving lives.

THE HORSE AT WAR From now until the 1st of March, The Lightbox Gallery in Woking will be continuing their commemoration of the centenary of the outbreak of the First World War with a stunning exhibition ‘The Horse at War: 1914 – 1918’ The exhibition will delve into the pivotal role of horses during the conflict. The exhibition will also feature “Joey”, the original horse puppet from the National Theatre’s stage adaptation by Nick Stafford of Michael Morpurgo’s novel War Horse Other highlights of the exhibition include a breath-taking 24 metre panoramic by Rae Smith titled The War Horse Panorama as well as some of the finest examples of work by First World War artists. For most of us, going a day without a good cup of coffee is unthinkable. It’s not just about the caffeine - although we doubt we could produce this magazine without a steady stream of coffee bean fuelling us. But the joys of a freshly brewed coffee can all be found in the flavour. Unlocking the subtle caramels, chocolates, florals and fruit tones inherent to coffee all comes down to the brewing method, and while there are dozens of gizmos and techniques out there, we thought we’d explore the most common ones – and a couple more unusual – to discover what goes into the perfect brew. ESPRESSO MACHINE Espresso coffee machines come in all shapes and sizes and at all price levels. But the method for perfect espresso remains the same for most. The important factors involved in making espresso with a machine are: THE COFFEE – Quality is king, but only use coffee within three weeks of grinding, whether you grind your own beans or not. Dark roasts tend to be more complex, with chocolate and caramel flavours; lighter roasts are more fruity and floral. THE DOSE - A traditional Italian 30ml double espresso is made with a 14g dose. TEMPERATURE – The optimum temperature for producing espresso is between 92C and 96C. EXTRACTION AND THE GRIND – You’ll want to aim for 30 seconds to extract - that’s 30 seconds between switching the water flow on and off again. Any longer and the coffee will be bitter.
THE POUROVER METHOD This is a quick, time-tested method of brewing coffee from Japan that has seen a resurgence in recent years. And perhaps the finest purveyors of Pourover Drip Coffee in Surrey are the award-winning Pinnock’s Coffee Shop in Ripley. Co-owner of Pinnock’s Russell James says: “When you’re making coffee with the Pourover method, you’re extracting all the flavours, all the subtleties and the interesting notes within.” FOLLOW RUSSELL’S METHOD FOR PERFECT POUROVER COFFEE • When your kettle has boiled leave it for about three minutes to let the temperature fall to about 93-95 degrees. This prevents the water scalding the coffee. • Place filter in a drip cone (plastic, china etc. available from many kitchen stores and online) above a cup or mug. • Wet the filter with hot water. This removes the paper taste. Discard water. • Measure out 20 grams of medium ground coffee and place in the filter. • The ‘pre-pour technique’: Just cover the grounds with enough water then ‘agitate’ the coffee by stirring gently. This begins to extract the flavours. • As the water starts to go down, pour more straight into the centre. It will balloon a little like a chocolate soufflé. STOVETOP ESPRESSO MAKER Can’t afford an espresso machine but still desire a rich, concentrated coffee with an espresso-like crema? Then you need one of these stovetop –or Moka- espresso makers. They produce coffee by passing boiling water pressurized by steam through ground coffee. They’re cheap, simple to use, easy to clean and take up very little room. A real coffee mate.
CAFETIERE Another affordable and very reliable coffee maker, a cafetiere rarely lets you down. Use only coarse ground coffee and boiled water that’s been left for a minute or two. A pour and a good stir and then the only hard bit: leave it for a minimum of four minutes before pouring – not a minute less. You can wait four minutes, right?•
IF YOU HAVE TO MAKE INSTANT… • Use high-quality instant coffee. Use a rounded teaspoon to start with, but experiment with quantity from there. • Fill the kettle with bottled, filtered or purified water. • Turn off the kettle just before it reaches full boil. • Pour a teaspoon of water over the coffee and stir and crush into a paste. This is the moment to add any sugar to the mix. Stir well and continue to fill with water. • Add cream or milk and continue to stir well. Posh up your coffee even further with a dash of syrup and even a dusting of powdered chocolate or cinnamon.

Talking to - The Naked Grocer Chris Bavin is on a mission to return the local greengrocer to relevance on the high street once more, with his award winning shop in Walton-on-Thames, the Naked Grocer. He also presents BBC One’s family food programme Eat Well for Less? alongside Masterchef ’s Greg Wallace. We caught up with Chris ahead of the programme’s return early this year. What do you do? I have a high end greengrocers in Walton called the Naked Grocer. I also import fruit and vegetable for a company called Pacific Produce. Alongside that I have done a tiny bit of TV , some key note speaking and retail consultancy. I have been a Greengrocer in the literal sense for 5 years, but have been involved in the fresh produce industry for 18 years. What makes the Naked Grocer in Walton-on-Thames different from other food shops? We have tried to take all that is good from a traditional greengrocer and give it a modern twist. Great customer service is at the core of everything we do, supporting local growers and the community we are in (winning the Contribution to the Community Award for Elmbridge last year). You opened the shop in 2009 during the height of the recession and when similar independent businesses were in decline. It must have felt like a terrible gamble? Yes very much so. Starting any business is a big gamble especially in a sector that has known to be strolling and in the worst recession the UK has seen for a very, very long time. But I was confident that if the offering was as good as it can be -offering top quality fresh fruit and vegetables at low prices - you will always do ok.
Do you ever see the ma jority of the public turning away from the supermarkets in favour of small, independent grocers once again? I don’t think we will ever turn the clock back completely, and I am not anti-supermarkets at all. But I think spreading your weekly shop around not only makes good financial sense but will also do wonders for your local economy. How did you get involved with the BBC and the programme Eat Well for Less? I got a phone call out of the blue from a researcher at RDF television and they were looking for people to give some opinions on a consumer show. After meeting a few times we looked at the possibility of making a food show which the BBC really liked, and the rest as they say is history. Eat well for less? is a show that looks into families’ shopping budgets and how they can be reduced without compromising on quality. Where has this series taken you this time and what surprises did you uncover? We worked closely with 3 families in different parts of the UK, and then through that we went off to investigate some of the alternatives we were suggesting, leading to some very interesting findings. Finally, what are your New Year’s Resolutions? To try and spend more time with my family and get a better work/life balance.

As per the definition above, Upcycling is the practice of improving upon that what you already have or what has already been produced; whether it be transforming your withered dining room table or creating something completely new from old. Check out our Pinterest board online (pinterest.com/Theguide2surrey) for some great examples that have tickled our fancy and are a great source of inspiration for budding upcyclists… No doubt about it - we consume. It could be said that our consumption of daily and household products could be catastrophic; in our consumption of household items are we not adding a burgeoning hole upon our current resources, and indeed mother earth? Compared to our neighbouring countries on the continent, the carbon footprint of the UK is the size of the BFG’s end of year party attendees dancing Gangnam style in Peter Rabbits vegetable patch. So, in the words of a well-known super conglomerate retailer – every little helps.
Here at TGHQ the idea of becoming a carbon neutral country is a notion we hold dear to our hearts – so quit your dilly dallying and let’s start with self…
Getting Started Once you’ve decided that upcycling is going to be your new hobby / way of life, you’ll need to decide upon what it is you exactly want to upcycle. Eventually you’ll come across something in your homestead that isn’t looking the sharpest and could perhaps do with a new lease of life; great – your first item! See next sections on ‘courses’. If however, none of your personal effects are in need of repair or sprucing, then the next step is to source your materials. Now let’s be clear; the idea of upcycling is a) to improve on something that already exists and b) to spend as little as possible in the process.
Here are some handy sources for finding your next favourite piece of furniture FreeCycle – most towns will have a local Freecycle website whereby you can go and collect household items for free from other users. Check out www.freecycle.org to find your local group. Charity Shops with furniture – A fantastic source of unwanted furniture and bric-a- brac at a fraction of the cost, all the while giving to charity. See the DEBRA in Guildford or Phyllis Tuckwell Hospice shops. Freegle – Don’t throw it away, give it away! That’s the motto of website Freegle. Not dissimilar to Freecycle, another great online community of users giving their unwanted items away. Furniture Link – Based up at Cathedral Hill and part of the charity Guildford Action, FurnitureLink reuse, recycle and refurb unwanted items. Talking to...Pam Cookey The end of January sees the start of the netballing season, with Surrey’s very own Surrey Storm amongst the favourites to pick up silverware this campaign. Last season saw Storm miss out on victory by a last minute winner against Manchester Thunder to make the final score 4849, leaving them Superleague runners-up for the third time in four years. This time, out Storm are confident that they can go one better. We spoke to returning Surrey Storm captain, and captain of the England national team, Pamela Cookey, on her expectations for the forthcoming campaign… How is it to be back at Storm after a brief spell away? I’m really excited to be back. There are some old faces and some new ones too, which is always good to see. The season doesn’t start until the end of January, but still, even now, we’re all looking in great shape. Will this be the season Storm get their hands on the Superleague? I’m confident we can get to the final and win it this time. There’s no doubt in my mind we’re good enough, so as long as we stay focused and on-point, then we can do it. Surrey did a really good job last season and were so close in the final. I hope I can help push them on to do one better this year! You’ve captained England at all sorts of world stages, what’s that like? It’s such an honour to represent your country, but to captain it is something else entirely. It’s a privilege. We have a superb set-up for the national team, which makes my job, as captain, a lot easier. It also adds that extra dynamic to my game. I’m not just going onto court and playing for myself, I’m leading my team, my country and that’s made me a better all-round player. What’s it like to have Surrey Sports Park and its facilities at Storm? The sports park is amazing. You’ve only a handful, really, at such a high standard around the country. You’ve got the sports hall that has three courts, you’ve got the gym upstairs, you’ve got everything. There are so many elite sports teams there with badminton, rugby, basketball etc. It’s a superb place to be and an incredible up-beat environment. The staff are amazing too, it’s great. PJ Farr served in the Prince of Wales Royal Regiment for 4.5 years and went on to found Countrywide Telecoms, developing the ground-breaking Office in a Box in the process. He now employs a number of ex-military personnel, and has achieved contracts with some of the country’s top house builders. Describe your business in no more than a dozen words? Independent communications provider of IT/broadband solutions primarily to the construction industry.
Why did you decide to start working in your sector? While I was in the British Army, I was often posted to remote locations and, in an age where the internet is so fundamental to day-to-day life, it got me thinking about how businesses survive in areas where broadband is not available. When I left the army, I developed Office in a Box, it provides super-fast broadband to 90% of the UK in under 10 days – it’s tailor made for the construction industry who usually start on site with no facilities in place. Now they can have an office set up virtually immediately – essential for ordering supplies and liaising with all their agents, suppliers, architects, planners etc.
Tell us about your project to help members of the armed forces set up in business.
What key skills do you have that have been key to your success so far?
After being made Business Ambassador for Guildford, I decided that I would like to help other ex-forces personnel, who were in the same boat as me. I now visit large business to explain the benefits of employing exforces personnel.
Determination - and the ability to pick yourself up when you’re having a bad day. Courage; discipline; respect; integrity; loyalty; selfless commitment. I have also found that we have broken the mould when dealing with customers. We don’t believe in B2B but ‘human to human’ (H2H) personal contact and we follow a strict set of core values that were imprinted on me when I was in the Army.
What has been your greatest challenge? Managing growth has been the biggest challenge – demand for the product has really grown!
To date, what has been your greatest success? Apart from actually getting our business off the ground it’s been winning the contracts with some of the biggest house builders in the UK such as Barratt and Linden Homes as well as some of the smaller developers such as Burton Homes.
What motivates you? Growing the business and showing people that, with the right mind-set, you can take your business as far as you want.
What do you do to relax? Ha ha, this is a hard one to answer. I don’t think any business owner can truly relax but I enjoy going to the gym and riding my motorbike.

“In December, we had extra stalls for Christmas wreaths and table arrangements. And we expect to be really busy. We’ve got storage rooms and chillers here that we couldn’t have had at the old market. The storage we’ve got serves our Guildford shops too. I call this an ‘up-market’.”

NEW YEAR, NEW CAREER The beginning of another year arrives with huge potential for personal development and opportunities to progress in our lives. For many, the New Year offers the potential to improve relationships, take up new hobbies or dust off old ones and to reassess our values and what matters to us as we forge ahead into the next twelve months. But perhaps the most significant goal many aspire to is finding a new career or progressing in their current one. If you’re unsatisfied in your current job or yearn for a more challenging or creative vocation, consider these tips as you seek more rewarding pastures in 2015.
STAY POSITIVE Anyone who’s experienced jobhunting before will remember what an exhausting and often dispiriting endeavour it can be. It is even becoming common for many companies to not inform applicants that they haven’t been successful and not to take it personally. However, maintaining a positive mental attitude is crucial when it comes to your own resolve and how employers perceive you. Believe in your skills and your worth and others will too. The process of job hunting, even if it ends up drawn out over some months, still provides valuable research and networking within the industry you want to enter or progress in.
BRUSH UP THOSE SKILLS A little patience can bear fruit, so maybe rather than knocking on doors and emailing CVs straight away, consider taking some time to obtain the skills in areas you feel you are lacking or that are required by the job you’re after. Almost anything can be studied at community colleges, correspondence courses or over the internet and you can never have too many skills.
PREPARING FOR INTERVIEWS There are great resources for dealing with interviews out there but common mistakes include dressing down, not planning an efficient journey to reach the interview and a lack of research about the company you’re applying to. Avoid those and focus on anticipating the key questions the interviewer may ask you: what your strengths and weaknesses are, what you bring to the job, what interests you about the company and position and what your previous experience and skills have to offer them. Be sure to include specific examples, they are not looking for what you would do – but what you have done. It often impresses interviewers if you prepare a few questions of your own about the position.
BE PATIENT It almost always takes longer for the right job to emerge than you imagine when you’re standing at the gateway to a new year, one that’s carries your hopes and ambitions with it. But while fortune may favour the bold, it’s the patient who ultimately reap the rewards. Be realistic, be resilient and be thorough and 2015 may yet be the year that you find your dream job.
TUNE UP THAT CV Your curriculum vitae is your career biography, passport and shop front all in one. A good CV should be informative, but to the point. Make sure to highlight your primary responsibilities, key achievements and strengths in an easy to read bullet format. Don’t forget to include any transferable and key skills to help you stand apart from the herd. Also, a CV shouldn’t be a one-size-fits-all document, but rather one that you tailor specifically to every job you apply for.
