DECEMBER 2015
As December is the month of Christmas, we thought it best to highlight to you, our most esteemed readers, that there is an awful lot of charitable goodwill at this time of year. Hopefully it’s gotten to you too… So if you find yourself with a bit of spare time, a few quid and/or a whole heap of good cheer, then perhaps you’d like to impart some of the above to a charitable cause. And particularly at this time of year, they need it; for example, the Phyllis Tuckwell Hospice needs around £40,000 in donations just to function over Christmas Day and Boxing Day. All of the activities below are for worthy recipients, and of course these are merely scratching the surface of what you can do. Some require a bit of physical output, some just a tiny slither of your time but either way you’ll be doing your bit – and that’s a ruddy great Christmas present for someone...
SANTA AND RUDOLPH FUN RUN
Devil’s Punch Bowl, Hindhead | 12th December For the splendid Phyllis Tuckwell Hospice – TG2Surrey’s charity of the year in 2014 – there is a fun run in the gorgeous surrounds of the Devil’s Punch Bowl. The Farnham-based hospice needs constant funds to keep running, and they sure do deserve it.
V------------q
So with that in mind, let’s raise them some money. But the big question is; do you go as Santa or as Rudolph? Alas, reader, we cannot tell you – you shall have to decide for yourself… Entry is £14, or £7 for the under 14s. Find out more at pth.org.uk
COMMUNITY CHRISTMAS
Bisley, Camberley and Petersfield | Christmas Day
-------q V------
Community Christmas is an organisation dedicated to providing companionship to as many of the elderly in our communities as possible so that no one is alone on Christmas Day who does not want to be. Using your December 25th to help others is an extremely altruistic move, so massive kudos should you get involved. Community Christmas events are held in local halls, run by local volunteers and largely funded by local businesses and donors. In Surrey and Hampshire, Bisley Village Hall, Collingwood Grange in Camberley and the Community Centre in Petersfield are all involved for 2015, so if you’re available and in the area then be sure to help out! You can find out more about this wonderful organisation, and these local versions, at communitychristmas.org.uk

Denbies Wine Estate, Dorking | 13th December The Tadworth-based Children’s Trust are a superb organisation; indeed they are the UK’s leading charity for children with brain injury. And they have a wonderfully fun idea to raise funds this Christmas… Taking place in the glorious grounds of Denbies Wine Estate in Dorking – Britain’s largest vineyard, dontcha know – this is a wonderfully fun, outdoorsy and festive way of raising money for a hugely worthy cause. Walk, Run, Race, Win your way to glory in this fabulous Santa Fun Run! Find out more about the event at eventstolive.co.uk

Windlesham | Boxing Day Numerous charities benefit from this annual extravaganza, which has become a legendary event in this neck of the woods. Lovely Windlesham becomes a riotously fun place on Boxing Day, and 2015 promises to be exactly the ruddy same…
---q ---V
The deal is this; you dress up in ludicrously fancy dress, and then complete a 3.5 mile course through Windlesham village, stopping at local pubs along the way. In 2014 the Windlesham Pram Race raised just short of £11,000 for local charities, and this year’s race aims to go even higher. It really is gonna be fuuuuuuuuun… Entry for the over 18s and over is £8 per racer, and for Under 18 it’s £5 per racer. Find out more at pramrace.com
BRUTAL 10 V----------Longmoor, Liss | 28th December -q
Don’t indulge in the turkey too much this Christmas if you’ve got this lined up. This is one tough run on land the army use 4×4 vehicles to traverse - you’ll have your legs… Anyway we highly recommend getting a sponsorship form and raising money for whatever charity you see fit. And here’s what’s in store for you: A well-established race, one of two laps of this 8k course takes you into the sand dunes, with an abundance of hill climbs later. There are water features to cool runners off before subsequent climbs where the course twists and turns before heading back into the arena for the finish or second lap. All in all a true Brutal race to finish the year providing excellent viewing areas for the family and friends very close to the arena.
V---------q
Entry is between £15 and £24 and you must be over 13 to enter. Get yourself a sponsorship form, resist that forth spoonful of bread sauce on Christmas Day, be first and foremost visit brutalrun.co.uk
FOOTSTEPS
Beverley Hall Community Centre, Guildford | Christmas Day Every Sunday, the wonderful people at Footsteps give food to the homeless at the Beverley Hall Community Centre in Guildford. They also provide their drop-in service on Christmas Day, and this is where you can help. New volunteers and gifts of food and funding are always welcome, so if you are able to give up a couple of hours on December 25th and aid vulnerable people, then we have no doubts that Footsteps would be hugely grateful. THINK TWICE, Fraudsters primarily prey on those most vulnerable in our community. In a bid to reduce the number of fraud offences Surrey Police is running a campaign to raise awareness of the preventative measures that can be put in place to protect yourself, or someone you care about from becoming a victim.
WHAT IS COURIER FRAUD? Courier fraud involves a telephone call being made by someone often pretending to be in an authoritative position and is one of the more common types of fraud. They explain there has been an issue with your bank, or a crime involving your money has taken place and ask you to call them back on another number. Whilst you think you’ve hung up they stay on the line and then pretend to be another person who collects personal details such as bank or card details, or requests you to withdraw money. A courier is then sent to collect either money or bank cards. These fraudsters often use a variety of tactics to appear plausible such as imitating authorities like the police, the bank or Trading Standards. They also change what they ask for, such as personal details, your PIN both verbally or by entering into the keypad, or even asking you to withdraw cash. They can be incredibly convincing.
FRAUDSTERS USE A NUMBER OF DIFFERENT TACTICS TO PREY ON VULNERABLE PEOPLE. HERE ARE SOME REAL EXAMPLES THAT HAVE HAPPENED ACROSS SURREY THIS YEAR. An 83 year old lady from Warlingham received a telephone call from a woman claiming to be from her bank. She was asked for details on recent transactions and her pin number, and was told a courier would need to be sent to collect her bank card in order for a new one to be delivered. Over just a few days just under £3,000 was taken from her account. A 70 year old man, from Gomshall was contacted by a fraudster claiming to be from the Metropolitan Police. The fraudster said he was involved in distributing counterfeit money and needed the victim’s help. The victim was asked to withdraw £5,000 which he handed over after meeting the suspects in London, and was then asked to
purchase two watches to the value of £17,900, and £4,000 worth of casino chips which he handed over. He was also asked to make a number of cash withdrawals. A gentleman in his 80’s from Dorking received a phone call from a man pretending to be a police officer who asked the victim to call his bank following fraudulent activity on his account. As the fraudster did not hang up, the line was left open and so when the victim called the bank the fraudster was able to pretend then to be a bank clerk. The victim was asked for his pin number and requested to put his bank cards in an envelope for collection by a courier.

Christmas in Farnham There is no need to go any further than Farnham for your Christmas shopping this year. With over 200 shops, many of which are independent retailers, you can find that perfect gift for the family. Retailers have decided to stay open for late night shopping on Thursday 3rd, 10th and 17th December. Moreover, Waverley’s pay and display car parks will also be offering free parking between 3pm and 7pm on these dates. Children aged between 5 and 11 are invited to take part in the return of the popular Christmas themed window trail competition. This year’s competition will be officially launched at the Farnham Christmas Market, which takes place on Sunday 13th December. You will be able to pick up an entry form featuring all the shops taking part. The theme for this year’s competition is… *drum roll*… penguins! Find as many penguin’s hidden in participating shop windows for a chance to win a prize! Entry forms will also be available from Farnham Town Council offices in South Street or can be downloaded from farnham.gov.uk. Also on Sunday 13th December between 10am and 4pm, Farnham Town Council will host a Christmas Market in Castle Street and the Mercure Bush Hotel. Castle Street will be closed to traffic and transformed into a bustling, jolly, festive market with around one hundred stalls, music and entertainment. There will be warming food and drink on offer including German sausages and mulled cider, plenty of festive gifts, treats and decorations.
More stalls will be located in the Bush hotel courtyard, gardens and conference suite plus there will be a live Nativity in the Bush Hotel courtyard and a chance to order your Christmas tree straight to your door! Oh and don’t forget to visit Father Christmas in his grotto in the Bush Hotel conference suite! The Christmas Farmers’ Market will also be taking place in central car park, perfect to pick up fresh and local produce for your Christmas Day Lunch; all products at the Farmers’ Market are sourced from within a 50 mile radius. Farmers’ Markets enable the producers and growers to sell their products direct to the customer, which means fewer food miles are travelled. You can expect to find some delectable local cheeses, fresh meats and Christmas wreaths. The Farmers’ market will be open from 10am to 3.30pm. Finally be sure to come along to Gostrey Meadow on Sunday 20th December to join in singing carols around the Christmas tree with Farnham Brass band. The carol singing will take place from 2.30pm – 3.30pm and is a celebration of Farnham in Blooms’ golden success. Mulled wine and mince pies will be available. Visit farnham.gov.uk/Christmas or pick up a what’s on guide from Farnham Town Council for more about what is happening in Farnham this Christmas.

HISTORY: The OXTED Riot Railways. We love them don’t we? It’s not just nowadays that they cause trouble, oh no. Railway lines have been carving a track of misery through people’s lives from the beginning. In 1866 a company called the Surrey and Sussex Junction railway decided to construct a line running from Croydon to Tunbridge Wells. The idea was this line would go through Oxted. But, as usual when it comes to companies, money, local authorities and fat businessmen, all was not as it would appear. You see the Surrey and Sussex lot were actually a small front company for the CIA. I’m joking. They were a front company but for a much larger beast known as London, Brighton and South Coast Railway (SER). So loads of bunce changes greased palms; lawyers, and barristers real and fake dotted T’s and crossed all before a building firm called Waring Construction gets the contract. The build was fairly simple; pay working class men next to nothing to do a dangerous job: start bathing in cash. Pretty familiar stuff. Apart from one hitch: there was a section of the line that needed a tunnel. Then as now, tunnelling was expensive so Waring decided to save a little and came up with a frightfully 21st century solution: rather than pay local navvies: we’ll farm out to foreign workers, pay them jack sh*t and get the tunnel done. Handily, at that point in history Belgium had a glut of out of work labourers after a failed bun and chocolate
At this point it all got terribly nasty and the fuzz turned up and separated the two groups of guys and sent everyone home to behave themselves. In a stunning display of manpower allocation that a modern officer would relate to, the cops posted one PC on the road between the two camps to keep everyone apart. Now, what happened next isn’t really clear, but two of the Belgians had been getting friendly with a local girl by the name of Rosalie. I’m guessing this didn’t go down well with Surrey’s Navvies First chapter and they walked around the fields to have a go at the Belgians again. PC Tobutt spotted this and pegged it back to the nick to let everyone know it was about to kick off. harvest or something. So off went Waring’s agent to source some bodies for the dig. The English navvies were fuming. The company knew that there’d be dramas if the two sets of workers came across each other, so they sent the navvies to sort out one end of the track and the Belgian workers to the other, setting up separate camps for the guys to live in. The Belgians ended up in Oxted. So everything’s going well until one night when two Belgians walked into a pub full of navvies. Having walked in to be met by stares and the record scratching to a halt, the Belgians turned to leave but, of course, a fight broke out. After a bit of a plastering, the Belgians did legs and came back with their colleagues to “avoir une combat”.
So the cops turn up at the camp and it’s like a scene out of Mad Max (the second one with the weird kid that grunts and throws that nasty boomerang). While Englishmen and Belgians were busy slapping the spit out of each other, Rosalie was being held captive by two men. The carnage was widespread with little mini battles taking place all over the countryside. The police waded in in that “good ol’ fashioned” way that we all look back on fondly but would hate it should they employ it nowadays. Everyone was nicked and order was restored. Later at the trial two of the navvies were sent down for two months but the Belgians did a runner as soon as they were put on bail and ran before Les Flics could catch up.

Christmas at Chobham Common
Winter Illuminations
Family, friends, and your chosen receiver of the sacred secret Santa may make up your typical list of gifts to give. But how about nature huh? Who’s going to give to Mother Earth? Luckily, there are people out there who cherish the earth we tread, folk like the Surrey Wild Trust who require your help to rid Chobham Common of the invasive Scots Pine. Your labour shall be rewarded in the form of that very Christmas tree that you’ve just chopped down. Not to mention seasonal sustenance offered to the hearty troops helping out.
Venture to the scenic setting of Watts Gallery in Compton, nestled amongst the woodland and hills for a special Winter Illuminations installation this December. Explore the wintery woodlands to discover these works created specifically for the Artists’ Village by contemporary artists Terry Perk and Julian Rowe. Back by popular demand, this year Perk & Rowe, artist and Reader in Fine Art respectively, have collaborated to create a space to enjoy light and nature all in the same place. The mosaics of kaleidoscope lights are inspired by the medieval imagery of the terracotta tiles in Watts Chapel.

New Year’s Eve? More like: New Year’s Peeve. Look, it’s the last night of the year. DECEMBER 2015
GETTING PETS READY FOR WINTER Now the colder months are here, there are several things we should be considering to help keep our pets happy and healthy. DOGS As the evenings are closing in, you may be walking your dog after dark. It is important for both you and your pet to be seen whilst out and about. Fluorescent or light-up leads, collars and tags can be really useful to help keep track of your dog, and can be a good safety feature near traffic. If the weather turns icy, beware that your dog doesn’t go venture near frozen ponds or lakes. The ice can be thinner than it appears and could crack, this is a tip for both animals and humans! Excessive walking on ice or snow can cause problems for your dog’s feet, to avoid sores make sure your dog’s pads are cleaned thoroughly after each walk. Christmas is the time for giving, but avoid giving your pet an upset stomach by treating them to leftovers, as too much of an unfamiliar food can cause vomiting and even diarrhoea. Rich foods such as chocolate and certain fruits and nuts are actually toxic to pets, so ensure they are kept out of reach from your furry friends.
CATS
If your cat spends a lot of time outside, through preference or necessity, it may be worth creating a shelter for your pet in a small outside kennel or box, filled with warm blankets. Be sure to keep antifreeze well away from cats and avoid any spillages when topping-up your car. Cats are attracted to the sweet smell and taste of it, but one of the main chemical components of antifreeze causes rapid kidney failure if ingested. If you suspect your pet may have ingested antifreeze, contact your local vets immediately. Keep an eye on your cat around Christmas decorations. Tinsel and ribbon may be good fun to play with, but curious cats, especially kittens, can sometimes chew on it and may end up with a blockage in the intestine that requires ma jor surgery to correct.
RABBITS
As temperatures drop, it is extremely important to ensure that your rabbit stays warm enough. If at all possible, moving hutches into a garage or outbuilding is a good idea. However, if you are placing your little pet in a garage, ensure they are kept well away from car fumes which can be toxic. If your small furry must stay outside, ensure their hutch is very well insulated using warm blankets. Microwave warming discs can be placed inside the hutch and will stay warm for hours, creating a lovely warm shelter.

The Turkey Ingredients
1 x 12-14 lb (5.5-6.5 kg ) turkey 10-12 rashers streaky bacon
The Gravy
400g softened butter Salt and pepper
Method
•
•
•
Pre-heat the oven to 425°F/220°C/Gas 7. Stuff the turkey cavity with the sage and onion stuffing, saving about two-thirds to stuff the neck end between the flesh and the skin, securing with the neck flap under the bird’s back and a skewer. Rub the softened butter all over the bird and then lay the streaky bacon rashers over the breast, overlapping slightly, then season with black pepper and salt.
•
•
Place the turkey on the ‘trivet’ of vegetables (see Gravy below) in the roasting tray. Cover the turkey loosely with foil.
Ingredients
e k a c e s e e h C t u n t Ches
For a 12-14 lb (5.5-6.5 kg) turkey: Cook for 40 minutes then reduce the temperature to gas mark 3, 325°F (170°C) and cook for a further 3-3½ hours. Baste the turkey every 30-40 minutes. Cook for a final 30 minutes (uncovered) at gas mark 6, 400°F (200°C).
1 stalk celery, cut into chunks A few Rosemary sprigs 1 Tbsp flour 1 litre chicken stock Salt and Pepper
Method
• • • •
Remove Turkey from roasting tray to rest for 30 minutes. Tilt the tray at an angle and remove 90 per cent of the hot fat from the tray. Put the tray back on the hob over a high heat.
p o h s i B •g n i k o m S • The
To test if the turkey is at the right temperature, insert a meat thermometer into the thickest part of the bird – without touching bone. For a 12-14 Ib bird, it should read 155f/68c.
Add the flour, stir it around and, holding the tray steady with a tea towel or oven glove, use a potato masher to mash all the veg to a pulp. Add the stock – a little at first, then the rest. Bring to a boil, scraping the tray as you go, then simmer for 10 minutes.
• •
Sage and Onion Stuffing Ingredients
4 large red onions, cut into large wedges 1 Garlic bulb cut in two 2 carrots, cut into large chunks (or carrot trimmings)

1 onion, peeled and finely chopped 1 tbsp vegetable oil 1 tbsp fresh sage, finely chopped

generous lump of butter (optional)chopped chives or thyme, to garnish black pepper
•
Preheat the oven to 200°C/400°F/Gas 6. Peel the parsnips and then slice length ways.
Tip the sugar and orange juice into a pan, and then bring to the boil. Stir in the cranberries, then simmer until tender but still holding their shape– this will take about 5 mins if using frozen cranberries or 8-10 mins if using fresh. The sauce will thicken as it cools. Will keep in the fridge for 1 week. On the day, bring to room temperature before serving.
Place the parsnips into a roasting tin and cover with the oil. Then cover in maple syrup or honey and place into the oven. Roast the parsnips for 35 minutes, or until they are tender and golden-brown
Brussels Sprout Gratin Ingredients
900g/2lb Brussels sprouts trimmed 20g/¾oz butter 4 tsp sunflower oil 150g/5oz bacon 400ml/14fl oz double cream 2½ tsp lemon juice 5½ tbsp fresh white breadcrumbs 4 tbsp freshly grated parmesan cheese salt and freshly ground black pepper
Method
• •
• • •
Preheat the oven to 200°C/400°F/Gas 6.
•
Place the sprouts into a saucepan of simmering salted water and cook for 4-5 minutes, until almost, but not quite, cooked. Drain thoroughly, allow to cool slightly and cut in half.
•
Place the butter and oil into a wide frying pan over a medium heat. Add the bacon and sauté for 3-4 minutes, until lightly browned. Add the sprouts and sauté for a further 2-3 minutes, stirring constantly. Add the cream and bring the mixture to the boil. Boil for 2-4 minutes, until the cream has reduced to a rich sauce. Season to taste with salt and freshly ground black pepper.
• • •
Remove from the heat, add the lemon juice and spoon into an ovenproof gratin dish. Mix the breadcrumbs and parmesan cheese together in a bowl, then sprinkle evenly over the top of the sprout mixture. Place into the oven and bake for 18-20 minutes, until the top is golden-brown and the cream is boiling. Remove from the oven and serve in the gratin dish (when the dish has cooled slightly). Can be made the day before and reheated in the oven for 15 minutes when you take the turkey out to rest

“Smoking Bishop?” I hear you say. No it’s not the latest reform from the Church of England, but instead a drink popularised by Dickens’ A Christmas Carol and first mentioned in English literature in Jonathan Swift’s verse Oranges from the late 1600’s. Alas the foundations (as we know it in this Fair Isle) of mulled wine were laid - and a particularly potent variant at that. The name is said to be taken from the resemblance of a steaming goblet of wine and a robed bishop, um, smoking. Of course, mulled wine is not indigenous to Britain. In fact, if you were to scour the globe for similar, you would undoubtedly find at least one version of said drink from most regions, let alone countries. Glühwhein is popular amongst German speaking countries, Nordics may be familiar with Gløgg, and Brazilians may be partial to a glass of vinho quente; so it can be said that as human beings, we appreciate the combined taste of warm red wine, spices and citrus fruit.
The Smoking Bishop
So here’s to the global appreciation of spiced wine in the winter months! Ideal for warming one’s cockles as the cold nights draw in, here’s a mulling recipe from us to you. Merry Christmas!
Recipe: Ingredients… • • •
4 Large Oranges 3 Lemons Brown (Demerara sugar) – 2 tbsp (sweeten to taste)
• • • • • •
Star of Anise Cloves Cinnamon Sticks 1 Bottle of red wine 35cl Brandy Cup of orange juice
Method: The night before…
The day after the night before… 1.
Remove oranges and lemons and cut in half
1.
Roast oranges and lemons in a shallow baking tray at 120c for 1 1/2 hours or until golden brown
2.
With the back of a spoon or your hand press as much juice out of the fruit as possible into the wine
2.
Place oranges and lemons into a bowl and pour any leaked juices from the fruit into the bowl as well
3.
Sieve mixture (to get rid of any unwanted pulp/cloves) into a saucepan and add your cinnamon sticks
3.
Liberally prick fruit with cloves
4.
Add juice and sugar to taste
4.
Add sugar and 2 stars of anise
5.
Bring to high simmer for five minutes
5.
Pour wine over fruit
6.
6.
Cover with cling film and leave in a warm place for 12 – 24 hours
Add Brandy and simmer on a low heat for 20 minutes (we don’t want it to lose its potency)
7.
Serve with an orange/lemon wedge and cinnamon stick

W here Surrey cosies up to West Sussex, we discover a radically restored temple to fireside comfort and imaginative, contemporary British cuisine
hugely impressive (and very welcome) fireplace beneath Tudor timbers. Local ales, organic wines and spirits and a menu of beguiling bar snacks would be enough to ensure a long and languid evening of contented supping and grazing, but for the real show we needed to go upstairs. Central to the vision of the new Lickfold Inn is a 1st floor fine dining restaurant. Soft-lit to the point of soporific, its satin grey high-backed chairs and bespoke parquet tables, gathered beneath more of that period timber and brick, provides a fitting space for the dizzying delights of the meal that would play out before us.
ake c e s e e h C t u n t s e h C
If pubs were like puppies, the unloved and abandoned kind, the Lickfold Inn has certainly seen its share of heartache in recent years, bereft of the caring owners it truly deserved. Until the end of 2014, the romantic 17th century inn stood empty for nearly four years, having been an ill-fated project of DJ Chris Evans (who eventually bailed for the Mulberry up the road).
op h s i B ng i k o Sm
Its future hanging in the balance, determined locals campaigned to save the site but few could have foreseen such a dramatic reversal of fortune as the arrival of chef wunderkind Tom Sellers of Nomi and London’s Restaurant Story fame and his team, who went about restoring the pub into a profoundly progressive temple to fireside comfort and imaginative, contemporary British cuisine, thanks to the fearsome talents of Lickfold Inn’s Chef, Graham Squire.
The
Early teasers presented fresh spelt brown bread accompanied by whip smooth thyme butter; whitebait in a tickly, golden crumb to swipe through a pot of boldly flavoured, smooth smoked cod roe; and an amuse bouche of ethereally crisp parsnips over linseed and a dab of sweet cauliflower puree. Eschewing the experiments of its city contemporaries, the Lickfold Inn presents its starters, mains and desserts across a tightly focussed al la carte menu that reads like a love letter to truly -gloriouslyEnglish seasonal ingredients and flavours. And then throws some outstanding technique and flair at them.
s p i T ie d o o F
The new Lickfold Inn only opened its doors again a year ago, but the effort and attention to detail that has been poured into the place is quietly breathtaking. As a respite from the cold outside, the ground floor contains a spellbinding bar of gleaming bronze and rich dark woods, a smattering of comfy chairs orbiting a
Take the salmon. Charred on the surface, cured towards the base; one bite delivers a smoky, almost BBQ, hit that sinks through a luscious, gummy centre and this dish exceeded exceptional. As did the quail: pearly soft and perched over a rocky rubble of jagged hazelnut and soft ribbons of artichoke, above a pool of rich, nutty brown butter.
Bramble soufflé and burnt apple ice cream 8.00
--Food Total for 2 = £97.00
Mains brought roast halibut with a golden crumble dusting, sat over a glossy smooth emulsion of ‘yeast’, delicately charred cauliflower and the sweet hedgerow bitterness of sloe berries beneath. Like all the dishes before: simple yet fiendishly clever also. Venison, almost the sole reason I love this time of year so much, offered rose red slices of that sultry meat, here cooked to perfect tenderness, deftly, almost nostalgically, paired with lustrous red cabbage, some pan-kissed parsley root for some bright and earthy bite and an aromatic hint of black truffle That said, a final bramble soufflé, with burnt apple ice cream served at the table by the Lickfold Inn’s gracious restaurant manager Gennaro, proved more elusive in its flavour although its silky texture parted before the spoon like a foamy cloud. A year on and it’s clear that Seller’s vision for this cherished country pub, tucked almost off the map, has really come home to roost, turning the Lickfold Inn from a pit stop into an essential destination in its own right. And with the talents of Graham Squire and his team turning out food this achingly good, this beaten track should be beaten smooth before another year is out.

Everyone obsesses over mulled wine at Christmas, however my preferred drink has always been a gin and tonic over a glass of wine. Christmas for me equals mulled gin especially. It includes all the sweetness and spice of cinnamon and allspice with a touch of orange juice and a lot of gin. It’s the better alternative to old school mulled wine. If you’re in charge for cooking Christmas dinner, have a few (and only a few) of these to knock the stress off before you start!

JON DIBBEN:
MASTER CRAFTSMAN
The best gift to give is one bestowed with love. In fact the best anything, whether it is a thought or action is when the aforementioned is crafted with love. It’s the best feeling isn’t it? One that you want to spread far and wide at this time of year. And so often the expression given within these forthcoming months, “It’s the thought that counts”, is drawn by love, like Rudolph and his pals pulling on Santa’s sleigh through the night sky on Christmas Eve. Love and thoughtfulness achieve their optimum when combined. It’s almost science, right?
Abstract thought aside, what better gift to give than that of something that has had both thought and love given to it by both mastermind and maker; both by customer and by craftsman? Jon Dibben is undoubtedly a master of the latter. We caught up with this esteemed jewellery designer at his workshop and showroom, based in Smithbrook Kilns on the outskirts of Cranleigh, to talk about all things fair in love and jewellery making. Jon’s quest for beautiful shapes and materials can be found originating on the beaches of Greece in the late
was fascinated by the process and the materials”. That fascination with materials continues today as a staple and selling point of Jon’s jewellery. A staple that we should all embrace. “Because we’ve always made things in the workshop from scratch we’ve always been surrounded by raw materials and it coincided with me starting to think, ‘well we phone up and get this block of gold or platinum, but where to these things come from?’ The fair trade story had been bubbling along and we called the guy who had been the driving force. He came and looked what we did we signed
the beauty of Jon’s own ranges, clients are able to visit the workshop and have a piece of bespoke jewellery designed and made. If you will, this is a piece of jewellery that has had the love and thought given to it in considerable quantities. “A huge part of what we do is the research and design… My perfectionism runs through everything we do” “People are sometimes surprised at what it costs. We all know that 99% of the jewellery out there is mass produced and has had very little human man
“AS WELL AS THE BENEFITS THAT (FAIRTRADE) GIVES TO THE WORKERS, IT GIVES US GREAT TRACEABILITY AS TO WHERE WHAT WE GET COMES FROM”. 80s. As he inter-railed across Europe, he ended up on in Greece and came across artisan jewellery makers plying their trade on the beaches; “I think I got fascinated by the process of how you work the wire to end up with the finished item. I saw the things they made and thought that I wanted to do that. I’ve got this idea that actually that could look good there and like this. I wanted to have the ability to do that. I

As well as the benefits that it gives to the workers, it gives us great traceability as to where what we get comes from”. hours making it. A huge part of what we do is the research and design. Because we’re perfectionists, I don’t like taking someone’s ideas and then finish working and think, ‘oh, that’ll do because that’s the budget’. My perfectionism runs through everything we do. With mass produced jewellery, they’ve had those headaches, worked out how to make it and then make 100,000 pieces. So if someone wants us to really nail

“A HUGE PART OF WHAT WE DO IS THE RESEARCH AND DESIGN… MY PERFECTIONISM RUNS THROUGH EVERYTHING WE DO” something beautifully and we’re only making one of it, then there are going to be costs. Not for everything though; with eternity rings in particular, it is more of a case of ticking the boxes, decision making and getting the details right. ‘How do you want the diamond set? Do you want something different to a diamond?’ Beautiful rings take time. In an ideal world, bespoke rings would be for everyone.” From consultation to commission, a bespoke piece of jewellery can take up to a couple of months with several meetings with the client in between ensuring that everybody is on the same page when it comes to the vision for the finished piece. In terms of inspiration, Jon Dibben is a man of natural leanings. The juncture between nature and its functionality is one that we have touched on before whilst in conversation. “I do appreciate being in nature. The way it makes you feel and slow down. When designing you’re inspired by a bit of everything. It could be a piece of wood that I’ve seen when out walking the dogs. But ideas have got to translate into a piece of jewellery. It’s got to be viable.” This natural, expressive design in the form of a piece of jewellery is abundantly clear as you walk into Jon Dibben’s showroom. Gorgeous leaf-like pendants and earrings sit nestled behind glass door cabinets of dark wood. Mr Dibben’s got a clear vision, and he welcomes you dear reader to invest in the vision, for your own sake; for a keepsake of your very own making. For all the love, thought and time that goes into Jon’s work, it was the latter that he would want to give as the ultimate gift to someone this year. “It would be a gift of time and allowing someone to have that time to settle down into themselves and to see what’s there. As a world we all move so fast that no one has that time to be still, to take stock. That would be the ultimate gift that I could give.”

SMALLHOLDING
Gift-giving for the aspiring farmer needn’t mean a subscription to Country Life. A Smallholding course at Guildford’s Merrist Wood College could be the answer…
T
he gift of knowledge; quite possibly the greatest gift of all. Apart from maybe your child’s first steps. Or an Xbox.
Anyway, this sort of knowledge imparting could prove to be a wonderfully different gift idea. Surrey is obviously a rather rural county and as such small scale farming is a relatively popular pursuit. So if this is something that appeals to you (or, in keeping with the theme of festive gift-giving, a loved one) why not get involved with a course at Merrist Wood? Whether it’s learning how to milk a goat or about types of tractors, or you just need an introduction to farm animals and protocol, these courses offer a wealth of knowledge. First up let’s talk to you about Merrist Wood itself. This marvellous multiaward winning College specialising in the land-based industries is one of the country’s finest. The Campus, located just outside of Guildford, is attractive and easily accessible with excellent student resources all of which create an enjoyable learning environment. Practical work is carried out on the extensive 280 hectare estate, with its woodlands, wetland features, livestock, grasslands etc.
The 10 week Small Scale Farming Modules take place in the evenings. They are designed to provide potential small holders with the practical skills and husbandry knowledge associated with small scale farming activities, with a view to potentially breeding your own stock and rearing it for the table. Small Scale Farming Module 1 doesn’t start until September 2016, but if you (we say ‘you’ but we do of course mean you or AN Other) are completely new to the practices then this is the course for you. The module offers an Introduction to: Goats, Poultry /Incubation, Cows, Waterfowl and Specialist Markets, Diseases, Pigs, Pasture Management, Sheep and Legislation with hands-on experience. Should your knowledge be a step up from this (or indeed you’ve done the first module) then Small Scale Farming Module 2 begins in April 2016, and here you’ll learn the following:
•
LAMBING signs, equipment, assistance
•
COW MANAGEMENT - breeds, feeding, health, calving
•
GOATS milking and kidding
•
PIGS outdoor and small scale rearing
•
TRACTORS/MACHINERY uses and types with hands-on experience
There are both practical and theoretical aspects to these courses, using a wide range of animal species. So how about this for a leftfield gift idea? The burgeoning farmer in your life will surely be grateful for the opportunity to find out about Smallholding from such an exceptional establishment… Find out more about Small Scale Farming Modules, or indeed everything else that Merrist Wood College has to offer, at merristwood.ac.uk

WINTER JETSETTING
Now, who would not like to get a gift like this – a little wee trip away in these winter months? Perhaps you’d like to visit a European Christmas market? Or how about just getting away from the bare trees and the biting winds to find some winter sun? Either way it’s a winner – so be sure to consider the following as a gift to a loved one, or indeed yourself…
WINTER SUN Should you really wish to push the boat out, the Caribbean Islands are always popular in the winter months for beach and relaxation with December to February being their peak season. After Easter, prices will fall offering better value for money and there are Islands to suit all budgets. Grenada, Jamaica, Cuba are more affordable for those who want an exotic holiday without maxing out the credit card. Goa is a great choice for the winter months with good temperatures and dry weather. It also offers a mixture of great beaches, culture and scenery. The Indian Visa has become cheaper and easier to obtain which helps to attract more visitors, so previous issues with visiting needn’t worry the adventurous winter sun-seeker. Closer to home, the Canary Islands are always popular for families and couples alike being the closest destination for decent temperatures at that time of year.
A WEEKEND AWAY City breaks are great for any-time of year but for the winter Rekjavik has been very popular recently with interesting winter excursions and
the Northern Lights. New York and Las Vegas are always popular, Dubai can be done as a short break with high quality hotels and guaranteed winter-sun along with all of the other attractions (ski slopes, penguins, jeep safaris to name but a few. Barcelona is a great short break with its Gaudi architecture, Gothic quarter, lively Las Ramblas and marina. These top travelling tips come courtesy of Camberley Travel. THE MINI CLUBMAN
T
he Christmas present. So often a double edged affair. On the one hand it could be those rather spiffy boots you spied in the high street, or the power tool that will complete your transformation into a DIY demi-god. Equally, it could be a pair of pants and that potato peeler you may have needed, but hardly craved. So if you were to unwrap the new Mini Clubman Cooper S on Christmas day, would you find the automotive equivalent of Granny’s knitted jumper, or that gift you always yearned for? Well initial impressions certainly favour the latter, this is a smart looking estate and Mini seem to have made a success of morphing the distinctive Mini traits into yet another niche-filling body style. Looking at the exterior dimensions it is certainly true to state that this Mini is no longer very, well.. ‘Mini’, but in the case of the Clubman that is probably a good thing. Compared the previous model, the new version is some 293mm longer 115mm wider and 16mm taller and that translates into a much more spacious interior, good rear visibility and capacious boot, equally at home carting the children home from school, or Fido to the morning walk. At the rear, the Clubman retains it’s rather quirky rear clamshell boot opening, which can be opened remotely via the key fob, or with a wave of one’s dainty foot under the bumper- helpful when carrying
those Christmas presents home. There is even a hint of late 50’s Chevy Impala about the squinty rear lights which have now switched orientation from vertical to horizontal. As a package it all works rather well.
never sounds too intrusive and at no time drowns out the excellent HarmonKardon stereo which equipped our test car. It positively encourages spirited driving and is well suited to the 8 speed automatic box fitted to this car.
Inside, the Clubman gets a bespoke interior and a very swoopy affair it is too. Some could say it is slightly fussy, like it might be trying too hard, but it is not an unpleasant place to spend time. Despite this, modern features, such as full colour displays and (in our model), jet fighter style HUD juxtapose with the 60’s homage toggle switches and chrome. But it is all very well finished and you could never accuse the Clubman of being dull.
Out on the country roads of Surrey the Clubman is in its element and the ride, although firm is never ‘crashy’. The chassis delivers the expected excellent Mini handling and steering feedback. With bags of grip and adjustability in spades this is certainly an estate car which can entertain in the twisty stuff, so long as poor old Fido can cope with the G-forces, should you decide to press on a bit.
The BMW derived iDrive system works as well as ever at navigating around the plethora of menus and sub-menus and the rotary ‘drive-mode’ switch is excellently placed by the base of the gear knob. Slipping the switch into Sport mode (so sharpening throttle and steering response,) causes the central display to light up and announce we have just set the car up for “Maximum go kart feel!” it’s all delightfully childish and in keeping with the car’s character. I also have to applaud Mini for sticking with just three driving modes, ‘Sport’, ‘Mid’ and ‘Green’, there is no “French farmer delivering eggs to market over a ploughed field” mode or other such nonsense. The 2.0 litre turbo charged engine is a gem, pulling with gusto and sounding pleasantly rorty under hard accelerationall induction and exhaust blare. But it
Overall, the Mini Clubman Cooper S has something for all the family, and certainly a gift you would relish opening on Christmas day. Now where did I put that Christmas list?

TEST DUMMY: Roller Skiing
There were three variations of skiing I knew of (Jet Skiing, Water Skiing and, well, Ski skiing…Snow Skiing, you-s’know) before the new kid snuck in, unpacked its suitcase and refused to leave. It’s an activity and a mode of transport. It takes elements from others and combines them in one. It’s an adapted sport that’s been made to suit our grey British weather. It’s Roller Skiing and, well, I had to try it, didn’t I? By: Tayler Willson
I got in contact with local Roller Skiing instructor Felicity Bertram (of RollerSki.co.uk) who invited me down to one of their beginner sessions at Weybridge’s Brooklands Community Park. Upon my early arrival to ensure I wasn’t completely useless by the time the rest turned up, I was greeted by Flic who ran me through a few customary dos and don’ts and gave me a brief history of Roller Skiing as a sport.
“I’d never skied before. I’d the hang of this fairly
Roller skiing is an off-snow equivalent to cross-country skiing. The skis have wheels on their ends and are used on tarmac to emulate cross-country skiing. The techniques used are very similar to techniques used in cross-country skiing on snow. First created as a summer training exercise, roller skiing has now grown into a competitive sport in its own right. Annual championships are held in various locations around the world. Most, if not all, national cross-country ski teams around the world roller ski during the off-season for specific physical training

simulating winter skiing. In Norway, separate roller ski facilities have been constructed to allow exercise off public roads. I was handed my safety get-up and a suitably sized helmet, before securing myself to one ski to begin with. Flic explained that taking things one step at a time was key in the sport and tendency to jump in the deep end isn’t wise.
Soon enough the remainder of the class arrived and we all began with some light skiing, practicing techniques and getting to grips. Ski poles were then introduced, a welcome addition and an aid to balancing and speed. Flic then led us on a trek around the park. For readers unaware of Brooklands, the park is a part of an old race track, meaning the tarmac is heavenly smooth for roller skiers. We set off as a group and gradually made our way around, discussing techniques and others giving me tips as we moved.
never even roller-bladed, but I was getting well. Balance was my friend, it seemed.” We began by rolling on one foot before switching to the other. We then removed the skis and practiced our stance. I practiced my forward lean, a lean I was told I should be emulating throughout the ski. Flic explained that not only does this put you more in control of your body whilst manoeuvring, it stops the dreaded backwards fall. I then attached both skis for the first time as, again, I emulated Flic as she demonstrated the techniques used. I began to find my feet around twenty minutes in and, no matter what others who were there may think, I was pretty good.
Comfortably – and safely – I had completed a lap. Going from Bambi on Ice to Sporty Spice in the space of an hour was solely beginner’s luck. Roller Skiing is about balance and co-ordination – two traits I thought I lacked severely – but I actually impressed myself and I enjoyed it too. So next time you fancy trying something new, why not have a taste of the Alps in Weybridge?

SURREY Smashers NEWS: Smashers’ Gabby Adcock says that the UK is now matching Asia in terms of crowd attendance thanks to the success of the National Badminton League. The NBL made a welcome return last month as Smashers beat MK Badminton at Surrey Sports Park in a game Adcock missed through injury. Sixteen-year-old Abigail Holden stepped into Adcock’s shoes in the eleventh hour to make her debut, whilst Georgina Bland and Sophia Brown were also representing Smashers for the first time. Adcock, England’s top mixed doubles player and world number six, said: “The profile of badminton has picked up so much in Britain over the last few years. I’m quite used to playing in front of big crowds in places like Indonesia, but to get it at home was unusual. “Now it’s picked up and at Surrey the fans have been absolutely phenomenal, and they make you want to play well for them.” The Smashers were favourites to win the inaugural final after losing only one of their five match-nights on the way to the play-offs, but lost their play-off as Team Derby took the title in June. NBL Monday match-night fixtures will run between November 2015 and April 2016 with the NBL’s top four teams competing in a Championship Final scheduled for May 2016. In-play features include a ‘PowerPlay’ double point, time outs, sudden death tie-breaks, and a shortened scoring format, all of which are exclusive to the NBL.
“Experience definitely helps in the NBL because it’s such high pressure,” Adcock said. “It’s still quite strange for us because it’s so short. It takes me a second to remember we’re playing to nine
and we’ve got to be really on it.” Smashers host Loughborough Sport at Surrey Sports Park on January 11th in their second and last home game of the season.

SURREY STORM NEWS: Surrey Storm’s 2016 long squad enjoyed mix successes in Team Bath’s Pre-Season Tri-Tournament between Team Bath and Hertfordshire Mavericks, with one win and one defeat. The now retired Tamsin Greenway took a squad of 14 down to the University of Bath for the short-format tournament.
which saw both sides win 2 quarters a-piece.
All teams featured new and returning players, with opportunities for Storm’s Yasmin Parsons, Fran Williams, Olivia Emanus and Elsa Wakeman to impress alongside 10 of last year’s title winning squad.
Greenway’s girls now continue pre-season training at the University of Surrey Sports Park before the final squad gets announced towards the end of this month.
With plenty of variety in combinations on court, Storm opened the tournament with a 30-24 win over Mavericks in a tight game
The hosts however started strong against Storm after also defeating Mavericks earlier in the day, and finished 30-25 winners despite a late comeback from Storm.

SURREY Scorchers NEWS: Elvisi Dusha: No Regrets about Time in Germany When Elvisi Dusha was offered a chance to play abroad earlier this season, Surrey Scorchers reluctantly let him go, knowing playing in mainland Europe was one of the point-guard’s ambitions. But just a few weeks later, Dusha was back in Surrey with the Scorchers, who did not hesitate in welcoming him back after he decided to return home. “Germany was an interesting experience of European basketball for me, however it just wasn’t as I expected,” he admitted. Dusha believes the best option in the immediate future would be to work on his game in the BBL and that Surrey coach Creon Raftopoulos is the right person to help him. “I have known coach for a while and from day one I have respected Creon and thought highly of him and his coaching,” said Dusha.
“He really cares about the development of his players and knows what it takes to win. “He has a great understanding of the game and is really increasing my knowledge.
He added, “Since returning, I feel that I have not been that effective the last three games, but it’s a long season and I am never giving up.”
The Scorchers didn’t win a game while Dusha was away and he partly blames himself for those defeats.
The Scorchers have hit a bad patch of form and even though they are not in action this coming weekend, they are using the time to work on getting ready and improving their game. “Losing has been difficult, especially as everyone on the team hates losing,” Dusha said.
“When they had the two losses while I was gone, I felt that I could have helped win both games as they needed a point guard and it was my chance.”
“I think we have to pick it up defensively and it starts with me and we have to better job on winning the rebounding battle.
Dusha doesn’t regret the decision to try his luck abroad as he feels it was a good learning experience for the future, but he’s now determined to regain the form he was showing for the Scorchers before his departure.
“We have a coach that knows how to win and we all want to win.”
“I will always have respect for him as he’s true to his word and a great role model.”
He added, “Training sessions have really picked up and the intensity has been high; we just need to show that intensity during the game.”
“Before I left, I was really playing well and delivering for the team, and had a big impact.”
