appy days is the new musical from the creator of the original hit television series comes to Woking’s New Victoria Theatre from March 31st to April 5th. Starring Emmerdale’s Ben Freeman as the epitome of cool, the Fonz, and Bucks Fizz’ Cheryl Baker as Mrs Cunningham, this rocking new show brings 50’s Americana to life like never before. We spoke to Fonzie’s feisty love interest, Pinky Tuscadero, played by singer and actress Heidi Range, best known as the longest serving member of pop band the Sugababes…
Hi Heidi. How would you describe your character, Pinky Tuscadero? She’s kind of a female version of Fonzie in a way. She’s older than the other girls and they all look up to her. She’s a motorbike chick who puts Fonzie in his place!
Why do you think productions like Happy Days, Grease and Jersey Boys remain so popular? I think there’s a nostalgia to it and it’s so different to anything we’re used to. It takes you to a different place and I love the style of the songs. And with all these types of shows, there’s an innocence to them that we don’t get to see a lot of these days.
She’s fabulous. I get on with her so well and have made a really good friend in Cheryl. She’s great playing Mrs Cunningham and backstage she’s such a laugh. She’s like a mother figure to everyone. One of my favourite numbers in the show is one that I do with her and Emma who plays Joanie.
Has leaving the Sugababes liberated you to explore new projects that are close to your heart such as Happy Days: the New Musical? Completely! I was lucky enough to have eleven years in Sugababes which is an amazing amount of time for a pop band. I’ve seen the world and done some amazing things but it was time to move on. Now I just want to be me and do what I want to do. I’ve done theatre before, but it’s been a long time. I’m learning things all over again but I’m loving it!
What can audiences expect to get out of Happy Days: the New Musical? Just a really fun night out, something that’s uplifting. It’s funny, the dancing and music is amazing and the sets are brilliant. It takes you back to a different time!

Framed 45s: A Wall of Sound at The Lightbox T
here once was a time when album and single artwork defined the visual language of music, propelling both mediums into the cultural conscience. Sadly, the modern age of digital music has now shrunk these iconic covers to the size of postage stamps. This month, however, a new exhibition at the Lightbox seeks to celebrate the glorious sleeve art that adorned 7-inch vinyl records in their heyday. Part of The Lightbox’s rotating ‘Taste of Art’ series featuring local artists, ‘Framed 45s: A Wall of Sound’ features an exciting mix of paintings, original limited
edition prints, textile and mixed media work created and curated by Windlesham resident Paul Murphy. “Some record sleeves are just too good to be living in a box,” says Paul. “They’re art in their own right. Some still make the hairs on the back of your neck stand on end years later – in fact decades later.” All items on display will be available to purchase during the exhibition from the Lightbox Gift Shop. Shakespeare’s Big 450th! T
his April marks the 450th birthday of the Great Bard himself, William Shakespeare. Stratford’s favourite son –if not England’s- will be feted merrily up and down the country, and Guildford’s own awardwinning professional theatre company, the Guildford Shakespeare Company, will be celebrating the mighty wordsmith in their own inimitable style. Kicking off on Sunday 19 April, veteran GSC actor Johanne Murdock will perform a special one-woman show, The Other Shakespeare, playing Will’s wife Anne Hathaway-Shakespeare,
in a touching, humorous and fascinating show written by Roy Chatfield. Tickets £12, starts 7pm. On the day itself, GSC’s Matt Pinches will deliver an illustrated talk, From Country Lad to Upstart Crow, discussing Shakespeare’s life before the theatre took a hold of him and exploring his home life in Stratford, his secret marriage and being the Mayor’s son. Tickets £10, starts 7.45pm. The following weekend (26 & 27 April) sees the return of GSC’s ridiculously popular Sonnet Walk Weekend. Encounter Shakespearean actors as you wander a
specially designed route around Guildford. The hilarious Sonnet Walks have sold out in previous years and there are limited places available. Each walk lasts approx. 60 mins and are every 15 minutes. Stars of the Silver Screen at The Lightbox ‘The Getty Images Archive: Hollywood Photographs’
I
mages of some of the most iconic stars of Hollywood’s golden age are on display in a revealing new exhibition at The Lightbox Gallery and Museum in Woking this month. Featuring photographs from the archive of The John Kobal Foundation, now curated by Getty Images, taken during the classic age of cinema between 1930 and 1950, the images portray such legends of the silver screen as Joan Collins and Humphrey Bogart. In addition, there will be informal, behind-

the-scenes photographs which seemingly show the ‘ordinary lives’ of the stars of Hollywood film. That’s ‘informal’ as dictated by the Hollywood movie studio publicists of the time, for whom a star’s public image was everything, employing carefully selected props and locations to exaggerate the perceived glamour of Hollywood. This fascinating exhibition runs at The Lightbox until 22nd June 2014 and entrance is free.

oseley Park gets its spring on this weekend with a garden show dedicated to the glorious season. Hosting 35 garden stalls, visitors to Loseley will find plant sales, garden furniture, driftwood sculpture and food stalls and a chance to preview Loseley’s spectacular bedding displays of white and blue forget-menots and wallflowers before the estate opens for the garden season on May 1st. The house itself opens on the same day. It’s all set in the lush surroundings of Loseley‘s 2.5 acre Walled Garden, designed by Gertrude Jekyll which contains an extensive herb garden, fountains and more than 1,000 oldfashioned rose bushes, including bourbons, gallicas, rugosas, albas, moss, damask and English.

Talking to... TUSKS
T
he ambient, delicately powerful sounds of Tusks is the music of pianist, guitarist, vocalist and producer, Emily Underhill. About to release her second EP, Tusks is completely independent with no label, funding or management. Emily studied Creative Music Technology at Surrey University and is excited to be coming back to Guildford for a show at the Boileroom on the 4th April. We chatted to her about music, creativity and the future.
How would you describe your music? I would probably describe it as chilled out ambient/electronic/pop music.
Who is your favourite artist/s? Hard question! Bonobo, Sia, Daughter, James Blake and Apparat would all have to be high up on my list.
What’s your creative process? I normally start a track on piano then start making up a vocal line and go from there.
Do you do all the production yourself? Yep, everything I’ve put out has been self produced apart from the last single, ‘Ghosts,’ which was engineered and produced by a friend.
Who have been your favourite artists to collaborate with? I think so far it’s been Koda. He’s remixed one of my new tracks on the EP and we’re planning lots more collaborations for later in the year.
Who would you most like to work with in the future? There are so many people I’d love to work with but in a dream world someone like Jon Hopkins.
How was studying at Surrey Uni? I loved it. I was really lucky to go into a year with a course full of amazing musicians and I think that’s shaped my music more than anything else.
What have you released so far and how do we get hold of it? 2 singles - ‘Fly’ and ‘Ghosts’ - and an EP called ‘Snow’. All available on a ‘pay what you want’ basis on my bandcamp page. emilyunderhill.bandcamp.com
Your EP ‘Ink’ is coming out in May. Can you tell us about it? I can! I’m so excited to get this out! I raised about £1300 through Kickstarter to get it pressed onto 12” vinyl so it will be coming out (hopefully in May) on a digital and physical release. It’s 4 original tracks
What are you listening to?
and 2 remixes by a couple of my favourite artists.
Where did you get the name Tusks from? It’s actually from the Fleetwood Mac album. I was brought up a lot on Fleetwood and I remembered the album title earlier this year and it really stuck with me.
What does the future hold? I have no idea! This time last year I was set on moving to Melbourne until I got a phone call asking me to go on a UK tour with another artist so anything could happen. I quite like it that way. I think as soon as anything gets predictable I get bored and move on.

Ian Handy, AKA ‘Mr Fame,’ is the Managing Director at KaneFM and hosts the weekday breakfast shows from 7-9am on the station (103.7fm). A pioneer for the underground music scene and an absolute eater, sleeper and breather of music meant we thought Ian would be a good one to interrogate! WHAT WAS THE FIRST RECORD YOU EVER BOUGHT? I was working in record shops from my early teens and to name a single record is just impossible! Instead I would say the labels that most influenced me growing up were, Players, Formation, Big Dadda, Ninja Tunes, Wordplay, Public Demand, Relentless, YNR, Lowlife, Ram, FFRR, Defected, Main Source, No U-turn, Trojan, Virus, Tru-Thoughts, Zebra, Prolific Recordings and I could go on! WHAT RECORD HAS HAD THE MOST SIGNIFICANCE IN YOUR LIFE? Illmatic by ‘Nas’. I was 14 when that came out. It was so amazing. The beats just grab you from the first second and his flows and storytelling of life in his projects and around Queens are amazing. ‘The World is Yours’ really reached out to me at that time and to this day still gets me bugging out. WHAT ARE YOU LISTENING TO AT THE MOMENT? So much music about at the moment so some artists you can catch me playing on my show are; My Nu Leng, Spoils, Essa, Tenchoo, I Killed Kenny, Tourist, Javeon, Cyril Hahn, Zion-I, Step Brothers (Alchemist & Evidence), Sigma, Kiesza, Jakwob, Champion, Mungo’s Hi-Fi… This list could go on for another 400 names and I still wouldn’t be done… Basically music is my life so A LOT is ALWAYS being listened too and played.

Each year we pick a charity we love and support it by subjecting ourselves to dangerous, challenging and sometimes embarrassing experiences and covering all aspects of the charity in our publications to help raise funds and awareness for their cause. This year we’re supporting Hospice Charity Phyllis Tuckwell. Our Head of Sales Sam Massink (who happens to be terrified of heights!) has so far raised £390 in a charity sky dive. Phyllis Tuckwell Hospice: THE CHARITY SHOP WORKER by Rich Lee
I
n March, TG2 Guildford spoke to Dr Nick Dando, a consultant specialist in palliative medicine at Phyllis Tuckwell and Frimley Park Hospital. This month, retail assistant Shirley Granger tells us why she enjoys working at the Phyllis Tuckwell Hospice shop in Guildford…
I
’ve worked at the shop here in Phoenix Court for about four years but had heard of the Hospice prior to that. My Dad had cancer and when he was in his last few months, the doctor’s surgery had some leaflets about the Phyllis Tuckwell Hospice. It was with some trepidation that I gave him a leaflet (he was a stubborn so-and-so) but when we came back from a holiday we found that he’d already visited the day centre and loved it. He really enjoyed going there as it was nice for him to have a change from home. After he died, I was unfairly dismissed from my old job which devastated me. But I’d been a customer at this shop and knew the manager so I asked her if I could come and work here and she said yes. It really helped me get my confidence back. I’d always worked with the public, in jobs where you make a difference to people, and so it’s been nice to do that here.
I only work Friday mornings; it’s very flexible and down to your personal circumstances. I find myself taking things home to sew buttons on or do a bit of mending, but I don’t mind, I’m happy to do it. I absolutely love it here. It’s such a great team and I love talking to the customers. We get a real cross-section of people coming through the door; young and old - men too, particularly for the books. Ladies clothes sell well as does bric-a-brac, china and our yarn is very popular. We have plenty of regulars who buy more stuff than they drop off – something they rarely set out to do! Some customers come in just looking for a bargain, but many come here and donate to us because they want to support the Hospice. People bring a lot of bags in for us and other shops may donate items to us as well. We’re fortunate to have a lot of room to store everything that comes in.
Shops like ours are good places to work if you haven’t had much experience in retail or have been out of work for a while. What Does the Future Hold for Woking? by Rich Lee
F
ew towns in the South East have seen the kind of transformation as the town once called Malice. Over the last ten years, Woking has received – and continues to receive- the kind of facelift virtually unprecedented in most towns within the Home Counties. That it has only been relatively recently that Woking’s position as a vital economic crossroads for the south east has truly been recognised is remarkable - and not a little overdue. Its proximity to the M25 and mere 25 minutes from Waterloo has meant it has long been a draw for commuters, even as the commuter belt continues to swell and the job opportunities once found exclusively in the city spread southwards. This was previously recognised by the South East Plan, the government’s manifesto for regional development which has now been replaced by the scheme called Woking 2027. What all this means is that Woking has only begun to see the first of many radical changes that will affect the town. Here we look at some of the recent developments that have helped revive the character of Woking and some changes that lie just around the corner. TOWN CENTRE
W
oking’s upward aspirations arguably began to manifest itself first with the construction of the Centrium building in 2005. Commonly known as ‘the boat’ for its resemblance
to a ship, the eco-friendly apartment complex won far more praise than scorn for the post-modern aesthetic of its coruscating structure floating above the Woking skyline. Heralding a new wave of development for the town centre, the Centrium was followed by the astonishingly quick 2012 construction of the first tower of New Central plaza on the Guildford Road (right), a £55 million mixed-use housing and retail development. These monoliths of glass and steel (well, as far as Surrey goes, anyway) included 445 new apartments and won the First Time Buyer Awards UK-wide award for Best Large Development category in 2013. Just around the corner from New Central, on Victoria Way, another new hi-rise office building, Altura is progressing nicely towards the sky. The spectacular 15 storey building, incorporating a ground floor restaurant, promises to further expand Woking’s commercial and leisure potential. NEW MARKET AND VICTORIA SQUARE
W
here now stands the market at Commercial Way is set to become a £150m redevelopment centred around a new Marks & Spencer, after a £4.7m relocation was agreed in December 2012 to move the current market to Peacock Walk. The existing site will become the new road junction between High Street and Victoria Way to be called Victoria Square.

W
hat will Woking look like in fourteen years? Well, if the ambitious scheme known as Woking 2027 is anything to go by, then the town and its backyard looks set for many more changes. The Woking 2027 scheme, also known as the Local Development Framework, seeks to ‘enhance the existing strengths and opportunities of the Borough to the benefit of everyone, but also addresses the weaknesses and threats that exist within it’. Woking Town Centre will be the primary focus of sustainable growth to maintain its status as an economic hub with a flourishing, diverse and innovative economy and as a crucial transport hub. But the plan also includes measures to deal with pockets of deprivation at Sheerwater, Maybury and Lakeview Estate in Goldsworth Park through economic regeneration arising from new homes and retail space. GREEN WOKING AND THE LIVING PLANET CENTRE
O
ver the last twenty years, Woking has earned the
distinction of being one of the most eco-friendly towns in the South East. Employing green energy technologies such as a combination of hydrogen fuel cells and solar cells dispersed throughout the borough, Woking Borough Council has ensured reliable energy for its inhabitants for significant savings over other boroughs. As if to further affirm its green credentials, the town was selected by the World Wildlife Fund to be the site of their new headquarters on Brewery Road. The Living Planet Centre, opened by Sir David Attenborough to much fanfare back in November last year, has already become another architectural highlight in a town that’s been turning them out at an unprecedented rate. More than just the organisations’ new headquarters, the building is a showcase for green construction and design and contains a fascinating visitor’s centre in which to learn all about the WWF’s vital work around the globe. All this points to Woking as one of the most forwardthinking and conscientious boroughs in Surrey. We can’t wait to see what the future holds for this previously under-estimated destination and look forward to bringing you news on all the exciting developments ahead in the pages of The Guide 2 Woking.

BEING A VOLUNTEER PAYS FAR MORE THAN MONEY BY YOUNG REPORTER, ANNA KLAPTOCZ
I
stood in an oversized, blue T-shirt emblazoned with large, black letters: ‘VOLUNTEER’. Ahead of me, a long line of babbling children and eager parents stretched out like elastic, ready to snap. I had to ask myself, “Why am I volunteering?” Indeed, when I first walked through the doors of Guildford Library in that blue T-Shirt, I was sceptical. This was MY summer; just after GCSE’s, almost three months of… nothing. But, my experience as a Summer Reading Challenge Volunteer really exceeded my expectations. It was probably the most worthwhile thing I did that summer. You meet interesting people. My fellow volunteers were friendly and like-minded, which made it great working with them. It was even better getting to know the breathless, excited children who rush up to the SRC desk, whispering Winnie the Pooh and Enid Blyton adventures into your ear, hoping for a prize. It’s not just great fun, but it’s really practical: it can’t be truer that volunteering opens doors, and gives you valuable skills. I like kids, but I have to admit I was scared of them when I first started. I was constantly afraid of making them cry. But gradually, I got the hang
of questioning without interrogating and praising without spoiling. It seems simple, but school can’t teach you experiences like this! You also get to use all sorts of talents that you already have. Art to cut out decorations for the walls, drama to act surprised when a child tells you a ‘scary’ part of the story. Even languages; a Spanish gentleman whose children barely speak English are due to start school. A perfect opportunity to mould all those hours of learning Spanish into a basic English lesson. It is experiences like these that make you realise the importance of volunteering to society. I don’t want to get philosophical, but when you make a difference to someone, it is so gratifying. People respect you. The amount of “thank you’s” and “we’re really grateful’s” I received built up my confidence and made me feel proud of myself. Just knowing that I was being of use and encouraging kids to read was payment enough in itself. Ok, rant over - are you persuaded? I hope so. Get out there, find a volunteering role you enjoy and have fun!

OUR HISTORY: Rabbit Woman ...A POTTED HISTORY OF WHERE WE LIVE AND WHO LIVED HERE by Will Knowlton
Ahh, Easter. That time of year that reminds you that you can put truth in the grave, but it won’t stay there. And speaking of truths, check this little bunnied-gem out.
eet Mary Toft. Mary was a local gal from Godalming, who created a bit of a cause célèbre when she managed to bamboozle doctors into believing that she had actually given birth to rabbits. No seriously, this is so bizarre I can hardly stand it, but I swear it is true. The year is 1726 and Mary found herself up the duff but tragedy was to follow. It seems that after apparently seeing a rabbit she miscarried. At this point she opened a whole box of crazy and said she’d given birth to various animal parts. Makes you feel funny doesn’t it? Like stroking a dog backwards. Anyway, news of her wonder delivery got out and local surgeon John Howard decided to investigate the matter (because it was like totally possible, obviously). I don’t think we really want to go into how, but Dr John “delivered” a few bits of animal flesh and decided in the spirit of science that he should let other doctors know as well. At this point the ball started rolling nicely and without the help of modern, admirable institutions like The Daily Mail (they totally would have run with this) the case of old rabbit fanny came to the attention of Nathaniel St. André, surgeon to King George I. George was getting his money’s worth by the looks of it because Nate used all his medical know-how (and probably that duck bill shaped thing) to decide that Mary wasn’t fibbing at all. Georgie wasn’t affected by the nuttiness that he would pass on to his descendants and decided to get the second opinion of surgeon Cyriacus Ahlers (now that sounds like something you catch: “I’m sorry Mr Knowlton it’s Cyriacus Ahlers.” “Yes I thought so Doctor, but how much cream will it take to clear…?”) If there was something about Mary, Ahlers was sceptical, and she was brought to London and studied at length. It was while under this intense scrutiny, and probably because she didn’t drop another furry litter, that she confessed to lying and was thrown in the nick on fraud charges. You’ve got to remember that at this point, doctors were kind of a new thing and the public essentially took the p**s, and as a result a lot of prominent doctors lost their careers. But what of Mary I hear you cry? Well she was released without charge and returned home to play with her rabbit - though not that kind, it hadn’t been invented yet.

Make your own
Easter Eggs! To make a big’un and some little’uns you will need… • Easter Egg Moulds from Lakeland –
Large mould 9x14cm and 36 mini egg moulds | £3.99
• 700g of milk, dark or white chocolate – the better the quality, the better the egg • A pan, glass bowl and a hob • Your hands, your little people’s hands and anyone else’s you’d like to enlist • A fridge • A pastry brush • A teaspoon
The method: Set a bowl over a simmering pan of water ensuring that the bottom of the bowl does not touch the water (this is called a Bain Marie). Break the chocolate up into small pieces and add to the bowl. Stir occasionally with a wooden spoon until completely melted. Be careful if you’re using white chocolate - if it heats too quickly it could separate and won’t work. Trust us, we did it! Leave the chocolate to cool for about ten minutes until it starts to thicken again. Using the pastry brush, coat the inside of the two large mould halves with a thin layer of chocolate and put in the fridge to set. Whilst the first layer hardens spoon the remaining chocolate into the smaller moulds, ensuring you fill each mould to the top. Put the mini moulds in the fridge and leave to set. Once the chocolate in the large mould has hardened roughly ten minutes should do it, take it out of the fridge and apply another layer. Repeat the layering and setting process until you’ve got a nice thick layer on your moulds, leaving a little chocolate in the bowl to stick the eggs together with later. Leave all your chocolate filled moulds in the fridge for roughly an hour before you try and take your eggs out. Carefully remove the mini eggs and stick the halves together with some of the leftover melted chocolate. Remove (with care) the large egg halves, put the mini eggs inside and seal it all together with melted chocolate. You could wrap the mini eggs in different coloured foil before putting them in the large egg if you want the receiver to get a shiny, colourful surprise!
C’est voila! Your very own Easter egg to give to who you wish - or eat yourself of course, you’ve worked hard after all! Now all you need to do is decorate it with sprinkles, icing, ribbon, whatever you like. Enjoy!

WHERE TO EAT: Stovell’s, Chobham

I
t’s pretty easy to walk into a place like Stovell’s with every intention of eating a meal with a normal degree of self-possession and composure. It’s just a meal after all, right? Sure, the pleasant cottage exterior feels right at home in the countryside around Chobham and the dining room’s crisp, linen elegance belies the easy moves of the waiting staff and the happy noise of its happy clientele. So we took our seats, prepared for what was bound to be just an enjoyable meal in nice surroundings. But probably nothing to lose our minds over…
In February 2012, they opened Stovell’s (formerly the Cloche Hat) in Chobham, bringing together their fierce talent for progressive European cuisine and a love for natural, local ingredients.
A few hours later, as we emerged back into the night, it was clear from our goofy, blissed out grins that we might have just enjoyed one of the best meals we’d ever had. Seriously.
The culinary thrill ride begins even before you receive your starters. Gorgeous home-made breads with smoked butters; a wonderful ‘crystal bread’ and fermented chorizo; canapés of pickled white beans and a soup of smoked white bean; delicate infused crisps and – simply a mandatory experience at Stovell’s- wafer thin slices of heavenly dark and fatty Iberico ham, sliced from a
Chefs Fernando and Kristy Stovell met at Westminster catering college, and went on to become veterans of famous London kitchens from the Wellington to Cuckoo and beyond.
Since then the restaurant has garnered two rosettes, with a third imminent and a Michelin star or two firmly in their crosshairs. It’s fair to say that the Stovell’s star is rising and that, of course, can only be down to the sheer quality and flair found in the kind of dishes we got to try this evening.
haunch that gets wheeled among the tables of diners like a slightly inebriated and over-friendly relative. Somehow we made it through all that and arrived at our actual starter: some of the most luxuriously buttery foie gras I’d ever tasted, drizzled with its own pan juices and complemented by roasted cobnuts and toasted brioche. A surprise premain course of a pearlescent fillet of roast halibut came garnished with the bounty of one of Stovell’s favourite pursuits: foraging. Little sprigs of wild garlic and borage flower brought a sweep of unfamiliar yet intriguing flavours to the dish. A main course was a handsome medallion of meltingly tender pulled pork, puffy, aerated crackling with more wild herbs, all in a heady moat of sherry vinegar jus and macerated prunes; the sharpness cutting through the meat like a rapier.

Dessert was a sumptuous, sexy dark chocolate mousse on a stripe of salted caramel: a decadent finale to a dinner that was a dazzling adventure in tastes, textures and techniques that left us more than a little punch-drunk. And very grateful that not all the UK’s most talented chefs reside in a place called London.

LAMB BURGERS

300g/10½oz lamb fillet, sliced into 1cm/½in strips 1/2 onion, grated 3 garlic cloves diced salt and freshly ground black pepper 1 tsp ground cumin 4 tbsp of olive oil 4 pitta breads 1/2 lemon, juice only 4 tbsp Greek yoghurt 1 tsp chopped Mint
Method
hese lamb kebabs are really quick and easy to make. Ideal for a quick lunch or, if you want a more substantial meal, serve them with a couscous salad.
Ingredients

Toss the lamb with the onion in a mixing bowl.
2.
Add the mashed garlic, a pinch of salt, one teaspoon of black pepper, cumin and olive oil to the sliced lamb and toss well.
3.
Cover and marinate in the refrigerator for at least 20 minutes but do leave as long as possible.
4.
Heat a heavy-based frying pan or griddle until very hot.
5.
Add the lamb to the frying pan or griddle, allowing two minutes each side. This can be served quite pink but do leave it longer if you prefer your lamb to be closer to well done.
6.
Meanwhile, warm the pitta breads. Slice along the pitta breads to form four pockets. In a bowl mix together the yoghurt, mint and lemon juice.
7.
Fill the pitta pockets with the freshly cooked lamb and yoghurt mix. Serve straight away.

1.
Place the lamb into a food processor and blend until you have a good coarse texture. Place the lamb into a bowl. Then place the onion, garlic and chilli into the blender and chop to a fine consistency. Mix this into the lamb along with the egg and bread crumbs. Season with salt and pepper.

Shape the mixture into patties and chill in the fridge for 20 minutes.

Grill the burgers for 5 minutes on each sides and then transfer to a well-oiled non-stick frying pan and cook for 8 – 10 minutes turning once.

Finely slice the tomatoes, red onion and cucumber and mix to make a salsa.

Serve the burgers in a roll with the salsa.

his style of cooking ensures that the meat is so soft it just falls of the bone.

1 large leg of lamb, about 3kg/6lb 8oz purchased from the Joint in Guildford. 4 onions, sliced 8 garlic cloves, peeled, but left whole 4 carrots, leave whole if small or quarter lengthways 300ml white wine Optional 300ml stock of your choice. If you are not using wine increase to 600ml 2 sprigs of rosemary and 1 sprig of thyme tied together with string.

Heat oven to 120C/fan 100C/gas ½. Place a large lidded casserole on the hob and brown the seasoned leg of lamb on all sides. Make sure it is well browned all over. Use olive oil if the lamb sticks too much. Once done remove the excess oil from the pan. Add the vegetables, followed by the wine and stock. Season well and bring to the boil. Cover the pan. Cook for 7 hrs, turning twice. After 5 hrs the meat will be cooked and should offer no resistance to the knife. The meat does not need to rest but to finish the sauce, transfer the meat and vegetables to a serving dish. Strain the sauce into a jug and pour or blot away the fat with kitchen paper. Pour the sauce into a pan then boil the liquid hard to reduce by a quarter, by which time it will be rich and full of flavour. Serve with vegetables of your choice but we’d recommend mashed potatoes and steamed greens.

Ayurveda is an ancient Indian medicinal practise based on the idea that in order to live a long and healthy life the mind, body and spirit should be in unison and your doshas in balance.
Ayurveda says, "Do not put anything on your skin you cannot put on your tongue because in the same way that everything you put on your tongue gets absorbed into different parts of your body, so will everything you put on your skin get absorbed to the deepest tissues, even the bones."
The three doshas: vatta, pitta and kapha, represent combinations of the four elements: earth, air, fire and water. Every person is born with a natural combination of doshas, which determine their psychological and physical characteristics. In Ayurveda it is believed that the imbalance of a person’s natural doshas leads to poor health and disease. Using natural compounds, massage techniques and the utilisation of mamma points (pressure points on the body), Ayurveda treatments are designed to return the body to its natural state.

The warmth and scent of the treatment room at Neal’s Yard Remedies was instantly calming as Charlotte told me about the treatment. Using coconut and sesame oil Charlotte first cleansed my skin before sprinkling Triphala powder over my face to remove toxins and nourish the skin tissue. From April until June, children and young people between the ages of 7 and 15 can sign up for an eight-wee programme of free coaching, tactics and skills sessions led by fully qualified local coaches. The sessions will culminate in an Olympicstyle competition, where participants will represent Woking against the 10 other boroughs and districts taking part in the popular P&G Surrey Youth Games.
Now in their 17th year, The P&G Surrey Youth Games (sponsored by Proctor & Gamble) are the largest annual youth sports festival in Surrey, and give many young people their first experience of a competitive, countywide sporting event.

Whether your thing is weights, aerobics or just going for a run to get away from it all, it would be nice to know where you stand?

or years, armies, navies and the like have used a standard test to see just how fit you are. What’s great is that it’s a simple test and you too can get out there and try it - because all you need is a stop watch. I’m talking about the 1.5 mile run.
The idea is simple; run for 1.5 miles (or 2.4 kilometres if you speak European) and time how long it takes. It sounds easy, but actually this little, simple test is the bane of every military recruit in the UK. The standard pass for the British Army is around 14 minutes but if you fancy being a Para that time is expected to be 9 to 9 1/2 minutes. Sound easy? It’s tougher than you might think - and that’s why you should try it! So, there’s no point in trying a test if you don’t know what the standards are. First of all are you male or female because the standards are different for each sex. So let’s start with the girls:

ow many bodybuilders are going to enjoy your eggs this Easter? Not the choccy kind mind you. The real kind. Many sports men and women poo-poo the egg opting for supplements of all kinds but they’re doing themselves a disservice, for the egg is one of the most complete and versatile foods around. Now, we all know how important protein is and how central its role is in the process of building and strengthening muscles. Simply put, without protein, your muscles just won’t grow. After water, protein is the next most abundant element in your body. Its second place in the rank of all things should be a clear signal of just how important it is. Now admittedly, bodybuilders need to take this a little bit further than the rest of us by damaging those tiny fibres with heavy weight training so that the protein fibres regrow stronger and bigger. A bodybuilder's diet has to be higher in protein than your common or garden sportsperson. Now, here’s the science part…
What are reps? The word rep stands for repetition. A movement/exercise that is performed a number of times, e.g. 10 times, would be referred to as 10 reps.
What are sets? If 1 rep is a movement/exercise performed once, a set is a series of reps performed one after the other. Sets can have varying rep ranges depending on an individual’s goals.
What should my diet consist of? Everyone should aim to eat a healthy balanced diet, but bodybuilders, more than most, require high protein, (high complex carbs in bulking periods) and essential fats. Calorie intake should be higher in bulking periods and most bodybuilders eat between 6 to 8 meals a day! A normal days eating would consist of Oats, chicken, fish, egg whites, brown rice, sweet potato, coconut oil and the odd protein drink.
How long should a workout last?
Eggs have roughly 6 grams of high quality protein, so high in fact that, believe it or not, eggs are used as the standard by which other foods are measured. But wait, there’s more! Eggs are also a rich source of vitamins, including A, E and K and a range of B vitamins such asB12 (energy), riboflavin and folic acid as well as containing all eight essential amino acids needed for optimal muscle recovery and building. “But they’re really fatty, we don’t like fat, Will!” Hang on, hang on; egg white actually contains no fat at all. Admittedly the yolk does contain somewhere around 5 grams of fat but only 1.6 grams of that is saturated fat, that’s the baddie fat. And yes, eggs do have cholesterol but remember that dietary cholesterol does not raise blood cholesterol levels.
For a beginner, I would recommend absolutely no more than one hours training! Any more than this and your body can start going into a catabolic state where it eats away at muscle rather than developing. The early days are where your body will grow the quickest and it’s vital to feed those muscles without overdoing the time spent in the gym.
Now before you go and do a Rocky and start cracking eggs in to a glass to drink, think sensibly and always cook eggs. It cuts the risk of salmonella and is more easily absorbed that way as well.
When should I drink my protein drink?
There’s really no reason to leave eggs out of your diet but I can well imagine that there are those of you out there who hate the taste of eggs. Don’t be scared to experiment with ways to fit them into your diet like adding herbs and spices. A handy trick I’ve picked up is to cook them and then chuck them in a blender with some oats, milk, yogurt, flaxseed oil and natural peanut butter: you won't even taste them.
It's very important to understand that a protein drink is a meal replacement if and when food can’t be taken. This being said your body will absorb protein best first thing in the morning and within 30 minutes after training, (preferably with a piece of fruit!)

ere’s a great one for breakfast; great for setting you up for the day. Not only that it’s cooked right in a tea cup. So cook up a storm (in a tea cup) with this easy microwave recipe for Ham, Mushroom and Swiss Coffee Cup Scramble.
Ingredients: • • • • •
1 egg 1 tablespoon water A few small chopped mushrooms 1 thin slice of ham, all diced up Shredded Emmental cheese
Here’s your method for the madness: 1
Coat a large, microwave-safe mug with some cooking spray. Add egg, water, mushrooms and ham; beat until blended. Once you’ve done that zap it (Microwave) on high 30 seconds; stir. Microwave until egg is almost set, 30 to 45 seconds longer. Season with salt and pepper, if you fancy and top with cheese.

4 large Beef tomatoes 4 Free range Eggs 60 ml of Extra Virgin Olive Oil 6 Cos Lettuce Leaves 1 Clove of Garlic A sprinle of diced parsley Table Spoon of Sea Salt Table Spoon of Ground Black Pepper

Preheat your oven to 200 Celsius (Gas Mark 6 or 400 Fahrenheit) Next, make the pesto; Tear the lettuce leaves into small pieces then add them to the garlic, parsley, salt, pepper and olive oil all in a blender together. Whizz it until you get that nice pesto consistency. Remove the cores of the tomatoes by cutting a large cone from the top with a paring knife. Using a spoon, remove all the pulp and seed bits. Put the tomatoes face up on a baking tray and fill each one with the same amount of pesto, but remember to leave room for the egg! Then, crack an egg into each tomato and season with additional salt and pepper to taste and throw in the oven for 20 minutes.

CROCKFORD BRIDGE FARM The Pick-Your-Own Pioneers get Warmed Up for Spring in Addlestone
W
e can all be thankful that winter is now behind us, but few more than the Smith family, the farming entrepreneurs behind Addlestone’s Crockford Bridge Farm. The torrential winter rains posed a particularly grave threat to the twenty five different crops Paul Smith had sewn over his eighty acres. But as a fifth generation farmer, Paul managed to keep his crops safe from the worst of the weather and, with wife Caroline, is now looking ahead to another bumper year at Crockford Bridge Farm. That we have pick-your-own farms and nurseries at all in the UK could well be thanks to the Smiths alone. After Paul’s brother came upon the business model during a trip to America, their father, Peter Smith, wasted no time in planting crops of strawberries and raspberries for the public to come pick themselves at their farm in Shropshire. It was the first of its kind and the idea, as Paul says,
‘grew like wildfire.’ Seeking opportunity for themselves further south, Paul and Caroline bought the plot on Crockford Farm thirty years ago and with it their family home, a converted former hunting lodge of Henry VIII’s. “There was no point being out in the sticks,” says Paul. “We wanted to grow near to people and their homes.” Here in Addlestone, the Smith’s grew their farm into the destination it is now with the addition of a superb farm shop that sells the farm’s own produce and plenty of fantastic locally produced food. Many farms would stop there but for Caroline, the tirelessly creative brain behind their operation, Crockford Bridge Farm offers far more than just roots and fruits. “We want people to embrace farmers and recognise that the supermarkets serve a very different product,” says Caroline. “People want a healthy, seasonal
alternative to food in the supermarkets as well as a place to come for the day. Which is why we up the ante over the seasons.” Easter, Halloween, Christmas; whatever the season there’s always something going on with unique events conjured up by Caroline, son Chris and daughter Charlotte that pull in families and visitors from miles, whether they come for the farm’s famous Halloween pumpkins, cut-yourown Christmas trees or fun-filled performances set in the farm’s woods. Now that spring is here, the first pick-your-own rhubarb has arrived and with Crockford’s wonderful asparagus right on its heels, the Smiths are in full flow. “Farming is a lifestyle,” Caroline says. “On the upside you have a lovely environment. On the downside you don’t always have the time to appreciate it. You never switch off, but we love what we do”

ANY RABBITS IN THERE CHANCELLOR? By Keith Churchouse
T
he annual 'Groundhog day' of the Chancellor proudly posing in front of his Number 11 Residence with his team has come and gone, as we know. The heckle from the camera-clicking tabloid journalists was louder this year in anticipation of pre-election give-aways with the chirp of 'any rabbits in there Chancellor?', referring to his red Budget box and the possible trick of magicing wealth from austerity. This year, he really did 'pull the rabbit from the hat' with the furthest reaching changes to the way pension benefits can be drawn during my lifetime. Indeed, I think with a few strokes of his ink pen, some of the pension exams studied over many years become obsolete over the course of the next 12 months when the full effect of these changes will come to fruition. Please do not think I am being negative about the far greater flexibility being encouraged. Far from it, I think financial planning and retirement planning will boom over the next decade because of these changes. However, I do have some cautionary concerns that there will be spend, spend, spend with the ultimate consequence that they will be reliant on the state. Sure, basic State Pension benefits are increasing in the next 2 years to a level of approximately ÂŁ145 per week, but this is unlikely to meet the living needs of many. Don't forget, and I don't think this is a political statement, the Government, irrespective of their persuasion, is strapped for cash. Cash is generated from tax, tax is charged on pension output (excluding tax free cash), and if many release this early without the caution of stretching the yield across their lifetime, the 'tax take ' could well be quicker. It should also be noted that this new strategy is a bit
of a cash-flow gamble for the Treasury. The normal system of 'Annuitising' pension income is achieved by purchasing Gilts. With the need/ preference for annuity purchase now seemingly being removed, the need for Gilt purchases will fall, reducing cash-flow to the Government. It is reported that four of the larger Annuity providers had suspended annuity business (Prudential, Aviva, Friends Life and Royal London) and I am sure others will follow. One could argue that the Government is switching their Gilt 'loan' cash-flow for straight non-repayable tax income. The cash-flow effects will be very interesting, possibly fuelling the economy....and clearly the Government. As a final note, it was good to see that the Chancellor proposes that those reaching retirement for private pension schemes should receive financial planning advice before drawing pension benefits over the age of 55 and we would very much agree with this. What do you do? One of my jobs is to be a CEO of a little company [22 Cans]. I’ve been a CEO for years, of companies as small as five people to as big as three hundred. My other job is Creative Designer; to think of an idea for a game and start it off. It used to be thinking up all the ideas; nowadays its thinking of an idea or getting one from the community or from someone on the team, and then putting that idea into a form that everyone can understand.
How did you start? I started back in 1987, running a tiny company called Taurus, exporting and importing baked beans to the Middle East. One day we got a call from a computer company called Commodore who said: “We’ve heard about your company and we’d really like to invite you out for lunch and talk to you.” So they brought us over and gave us all this free computer equipment and it turned out that they’d got the wrong company, another one called Taurus! But I had all this computer equipment and I’d always wanted to make a computer game. So I started to work on this crazy idea for a game called ‘Populous’. It came out (on PC) in 1989 and it was just a massive, runaway success. To this day, I still think I’m going to wake up and be that bloke shifting baked beans!
What’s been your greatest achievement? It’s just an amazing feeling to start something from nothing, from just an idea, to form a company and to share its success with a team and to have that incredible feeling of achievement.
Tell us about the current game you’re developing, Godus. It’s a ‘god game’ which is the first game I stumbled upon with Populous. I give you this little world and allow you to be a god in it and allow you to feel what it is like to take these little people from the most primitive times up to modern day times.
It’s very multi-player, so is everyone a rival god? Well, that’s an interesting point. I’m letting you decide if you’re a rival god or not. I love giving people the opportunity to choose whether they’re good or bad from the style of their play.
So what makes Surrey such a hotspot for the games industry? When I started I was one of the first. There’s about fifteen here now. But it’s close to London, it has a university, it’s not too expensive (we all wish it was a bit cheaper): it’s got all the ingredients you need. So it has a lot going for it. And there’s been some amazing games made here.
What do you most enjoy about Surrey? It’s just that blend between town and country which is so great.
How do you use your free time? I enjoy cooking, having a drink on a Monday night and that kind of thing. But I love my work too much, so I rarely stop.
