Rich – “Chas & Dave at Princes Hall on 31st October. Don’t ask me how they ended up on my musical bucket list…” Alex – “Dizraeli & the Small Gods at The Boileroom 23rd October or Martha Tilston, again at The Boileroom on the 25th October. Both absolute musical gems. Well worth checking out.” Amy – “Autumnal walks in the Surrey Hills” Joe – “I am desperate to try out Steak and Lobster in Guildford, but Arthur Brown at the Boileroom will be excellent…” Fiona – “A night at the Volunteer pub in Abinger Hammer, sitting by their open fire enjoying one of the many traditional meals like steak and kidney pudding.”
Not content to rest on our laurels and being firm believers that change can be a good thing, we asked the team – what one thing would you change about the area that you live in? (Spoiler alert – “more independent business” seems to be a recurring theme) Chloe – “More street cafes and riverside cafes and bistros. Also, more independent shops. I think Guildford Borough Council should offer 10% of the retail space in the town centre to independent businesses with a 20% discounted rent and business rates to encourage new trade and local people to become more involved with the town. Also, I would make the little ice cream shop in Stoke Park into a really cute 50’s themed stand that did cakes and amazing hot chocolate in the winter.” Fiona – “I would love to see some more pop up restaurants and more weekend events such as themed markets and music festivals.” Alex – “The return of some semblance of independent businesses that operate on Guildford High Street. I’m pretty sure you can count the number of business’ on less than one hand. And an independent cinema would be a most welcome addition.” Amy – “More independent bars in Woking!” Sam – “More independent retailers selling fresh produce – butchers, fishmongers, green grocers.” Joe – “An independent pub-restaurant in Woking town centre would be a welcome addition.”

OUR HISTORY: A Pig Named Sue by Will Knowlton So we’ve all heard the phrase “pigs might fly”. But, thanks to one Surrey resident who had a penchant for practical jokes, there seems to be some truth in the matter…

Paul Merton By Rich Lee
P
aul Merton has been a legendary wit on screen and stage for nearly 30 years. With the release of his autobiography, Only When I Laugh, he will be closing out the Guildford Book Festival on 19th October with an appearance at the Yvonne Arnaud Theatre. We caught up with one of Britain’s finest comic minds ahead of this unmissable event…
How did you decide that this was the right time to write your autobiography?
It goes back to when I was in my late teens, just starting out in comedy. Showbusiness biographies were my favourite reading, so I reckoned that if the career I hoped for materialised, and I was still known by my mid50s, then perhaps my story might be worth writing about. At this age you’ve still got the energy and recollection of those early days and, hopefully, still got a bit of road ahead of you, so it felt like a good time to do it.
As a performer, how did you adapt to the rather solitary act of writing the book?
I write by hand, which as you imagine slows things down a bit. I could learn to type of course, but I don’t have a computer or even a mobile phone. And to
make it even more pre 1947 I only write in pencil! But it can be solitary of course, so when asked ‘how do you write 100,000 words?’ then it’s the old P.G Wodehouse advice: you do it by securing the seat of your trousers to the seat of the chair and you do it every day.
Were there moments of your life that you were reluctant to write about in Only When I Laugh? In most circumstances I write about my own feelings with honesty, but when you’re writing about other people, there’s only so much you want to say. There are no unflattering portraits about other people in there – I’d be absolutely furious if that happened to me in someone else’s book!
When you were young, did you see comedy as an escape from your working class background?
I knew that for the working class, the traditional route to find success was either sport or showbusiness. But for me it was less an escape from class, more of an escape from the boring life of 1970s Morden. I just wanted to do exciting stuff.
Did you want to be a comic for the sake of the craft alone, or did you want the fame along with it?
The ‘fame’ is a very ego thing and when I was a kid playing on my own, I’d imagine myself entertaining an audience of children forever. But now I’m older, I do see it [comedy] as a craft and I would be just as fulfilled directing something I’d written with actors that I wouldn’t be in. The little direction I have done in the past I’ve absolutely loved.
So what film projects do you have in your sights? Now that the hard work in terms of the book is out of the way, film is the next thing for me. There’s a real thirst for British comedy films at the moment – the recent Inbetweeners film was enormously successful, for example. So I’ve got a script that I’m two thirds through with my wife Suki (Webster). If I get that right on paper then I’m really up and running and hope it’ll come to fruition over the next 18 months.
What would you say, if you could go back, to the young Paul Martin that you write about in Only When I Laugh? I’d say to him, “You’re never going to believe this…” (laughs). “Just keep going, I know it seems impossible at the moment, keep practising your writing and don’t give up. You’ll be amazed.”

The Taste of Autumn Comes to
RHS Garden Wisley… October means that it’s time for the Taste of Autumn event at RHS Wisley; and though it also means that winter is coming, you should still be very excited…

ell the leaves are turning, the receipt-stuffed jackets of 2013 are beginning to make their re-appearance and we’re all attempting to run, teeth a-chattering, from bed to bathroom as quickly as possible in the mornings. Summer is but a distant memory, which is more than a little sad. But fret not – it’s autumn and there are still events to be excited about. Which neatly segues us into the Taste of Autumn Festival at RHS Garden Wisley, with this year’s event taking place between the 15th and 19th October. There will be numerous food stalls selling just about every sweet and savoury consumable you could wish for. Because everyone needs to put on a little bit of weight for the winter hibernation; that’s just evolution. Moreover, The Wisley Orchard grows a huge range of apple cultivars, and The Taste of Autumn is your chance to taste and compare varieties you simply won’t find in the supermarket. It’s not just about what to consume though, dearest reader. Homemade Halloween Treat
Toffee
Apples This is a really great traditional treat that children will love making during the lead up to Halloween. And you can have some fun by adding multi coloured sprinkles to the apples as the toffee sets.
Method 1
Put your apples into a large bowl 4 at a time and cover with boiling water. Leave for 3 minutes then remove and dry well with kitchen towel. Remove the stalks and push a lolly stick into where the stalk was.

Place a sheet of baking paper next to your hob and stand your apples on the paper.

Put the sugar into a heavy pan with 100ml of water and turn your hob to medium. Cook for around 5 minutes until the sugar has dissolved. Now stir in the vinegar and syrup. Place a sugar thermometer in the pan bring the mixture to the boil until it reaches 140°c.

Turn off the heat and then, working quickly, dip each apple into the toffee making sure that each apple is well covered. Allow any excess to drip off then place each apple on the baking paper to harden. Remember; if the toffee starts to cool down and become too thick simply reheat.

Let the apples cool before eating.

Now you have made these glorious sweet treats you may be wondering how in the heck you are going to deal with the sugar stuck to your pan. Simply fill the pan with water and place any utensils you have used in it. Bring to a gentle simmer and the sugar will be dissolved making it safe to dispose of down the sink.

The pick-your-own pioneers don’t have far to go to bring their fantastic fresh crops to market. From the field to the Farm Shop, their great produce joins many of the finest local suppliers. There’s Maurice Jones and Son’s fresh meat counter, Crockford Bridge’s own honey, gourmet foods, tempting cakes and desserts and even a section devoted to American food.
The amount of stunning food and drink on offer at Secrett’s farm shop is little short of staggering. It’s not unusual to find glazed but happy shoppers weaving around the aisles in blissed out circuits, shopping lists abandoned. Much of the fresh stuff comes from Secrett’s own farm, while their cheese counter is every turophile’s dream. Great for: Farm fresh fruit and vegetables. Definitely cheese.

It’s been grown on the farm here since 1850, the vitamin rich super-food being fed by the purest water from a natural spring. October is here and so surely this is means an excuse to indulge in some classic comfort food. Here we have two recipes for the ultimate in culinary comfort: pie. Both our recipes use pre-made pastry as, to be honest; this wonderful autumn weather is making us somewhat lazy. And anyway, who really knows how to make puff pastry from scratch?
HEARTY MUSHROOM PIE This recipe makes either one large pie or 4 individual pies
METHOD 1.
Preheat oven to 180 C / Gas 4.

Heat oil in a frying pan over medium-high heat. Add the onions and leek and cook until they start to soften. Add the mushrooms and sauté until they are brown.
INGREDIENTS • • • • • • • • • • • •
2 tablespoons olive oil 150g diced onion 125g mushrooms (any variety), sliced 50g button mushrooms, quartered 400ml vegetable stock 1 tsp of wholegrain mustard 1 medium leak, diced 2 tablespoons plain flour 1/2 teaspoon dried thyme 250g puff pastry, thawed if frozen 1 egg 1 tablespoon water

Add the flour and stir for around 2 minutes until the mixture is well covered. Pour in vegetable stock and stir. Bring to the boil, then cover and simmer for 8-10 minutes until the sauce has thickened. Remove from heat and stir in the thyme and mustard.

Pour the pan contents into a well-buttered pie dish. In a small bowl, whisk egg and water to form an egg wash. Use this to cover the edge of the pie dish then place a piece of pastry you have cut to fit the dish over the pie.

Use a fork to press down the edges and seal the pie.

Use the remaining egg wash to cover the pie and use a sharp knife to create a steam hole in the top of the pastry.

Cook in preheated oven for 40 minutes or until pastry is golden and puffy.

Place the meat into a wellbuttered pie dish. Whisk your egg in a cup and use a pastry brush to cover the edge of the dish with the egg wash. Cut a piece of pastry to fit the top of the pie dish and place it over the mixture. Use a fork to press down the edges to seal the pastry to the dish. Make a steam hole in the centre of the pie using a sharp knife. Brush the lid with the egg mixture.

Place the milk and butter in the pan used to boil the potatoes, return the pan to the heat and warm gently until the butter has melted into the milk.

WHERE TO EAT: L’Aroma, Woking
By Rich Lee An Italian eatery has stood on this quiet spot along the quiet east end of Woking’s High Street for almost three decades. But it was with the arrival of Michael Vicidomme and Antonio Assante twelve years ago that L’Aroma became Woking’s favourite Italian restaurant. That authentic sense of an unpretentious, family-friendly Neapolitan restaurant can be felt in every nook and cranny at L’Aroma; it’s a space of bright woods, rustic brick arches and Italian vistas realised in ceramic mosaics. Greeted warmly, we took our seats and were presented with a very attractive wine list, an a la carte menu and an outrageously good value Quick Lunch menu (2 courses for £7!). We began with a simple caprese tricolore – a salad of vine tomatoes, mozzarella and avocado that was simple, light and elegant while a funghi al dolcelatte was its heavy, indulgent opposite: fat, juicy mushrooms atop toasted focaccia smothered in a creamy sauce humming with garlic. A quick diversion before the main course brought a handsome disc of fine and fragrant goat’s cheese, melting above a bed

of roasted red peppers over a focaccia crostini, with a very pleasant whiff of basil and a splash of balsamic cutting through the richness. Next, a generous bowl of steaming-fresh, amber coloured egg Tagliatelle, with salmon, brought a hit of the sea and the herb garden with the perfume of tarragon. Across from this, I enjoyed an achingly authentic saltimbocca; that classic marriage of tenderised veal rolled in prosciutto and cooked in white wine, sage and butter; aromatic, hearty and perfect with golden roasted vegetables. To finish, we bypassed the obvious tiramisu and pannacotta and chose a fonduta di cioccolato; an artfully presented slate of warm dark chocolate, playfully surrounded by things to dip into it: marshmallows, cut strawberries, cocoa-dusted bananas, and the fluffiest profiteroles. Great to eat and fun to share. L’Aroma likes you to have fun… Too many small Italian restaurants, in my experience, seem content to coast by on standard, tried and true dishes, giving them little polish, thought or flair and relying only on customers’ vague notion of ‘authenticity’ to do the heavy lifting for them. Not so at L’Aroma though, where the chef’s pride is clear, the service is sincere and value for money rarely tastes so good.

Foraging with Fernando Stovell’s in Chobham has to be one of the most exciting restaurants in Surrey thanks to the visionary talent of chef co-owners, husband and wife Fernando and Kristy Stovell. Part of what makes their dishes so extraordinary are the natural, native ingredients that they forage from the countryside around them. Rich Lee joined them for a walk on the wild side to experience some of these astonishing flavours in their natural habitat…
F
ernando Stovell hands me a sprig of something, a frilly white flower no bigger than a match head. I pinch it between my fingers, place it on my tongue and… nothing happens. Until about three seconds later when I’m hit by the most intense taste of onion. Full-bodied and sweet, it’s remarkable that such a bold flavour can come from the tiniest part of a plant. Fernando tells me it belongs to the allium family so I shouldn’t be surprised by its character. I’m surprised all the same. Next he passes me a small, bulbous leaf from an alpine plant, held between the ends of the long tweezers he keeps clasped to the breast of his chef’s jacket. Obediently, I pop the leaf in my mouth and crunch down. It has the crisp, watery freshness of cucumber and as Fernando assures me, blends extremely well with fish.
Over the next few minutes I sample Tree Spinach (tastes like spinach); the lemony tang of wild Sorrel; a cress-like plant they use for garnish called, somewhat obnoxiously, ‘mind your own business’ and an intensely peppery and floral herb called Stonecrop. All will find themselves on a plate in Stovell’s dining room in one form or another, whether lending the colour

Zealander Kristy opened Stovell’s (formerly the Cloche Hat) in Chobham, bringing together their fierce talent for progressive European cuisine and a love for natural, local ingredients. Since then they have overtaken many of the region’s most established restaurants, being named Best South East Restaurant in the Good Food Guide alongside many other accolades.
After two years spent making Stovell’s the success that it has become, Fernando and Kristy both appear tired but determined to continue taking their restaurant to the very top. When they do get to enjoy a welcome break – visiting the finest restaurants other countries have to offer for inspiration – their work is never far from their minds. Indeed, Fernando keeps a close eye on his kitchen via several webcams streamed to his iPhone. And while few chefs would complain when acclaim does

o find them, for the Stovells it’s still all about the food. “The most important thing is being consistent and keeping the customers happy,” explains Fernando. “We try to focus on earthy appearances and flavours, but we don’t like to touch the food too much; we prefer to concentrate on the method and the ingredients,” says Kristy. Ingredients such as Yarrow. Fernando crouches by a grassy bank, parts a few blades and plucks out a clump of the little white flowers with his tweezers for me to try. The taste is virtually indescribable, something between citrus and old churchyard (seriously). It can be found on their current menu imparting its idiosyncratic flavour to a dish of nose-to-tail rabbit alongside fermented turnips, stonecrop and daisy leaf puree. “Our real love for foraging kicked in when we visited

our friend, the renowned chef Victor Arguinzoniz, at his restaurant in Spain,” he explains. “He took us foraging in the woods to pick sorrel and wild chamomile. A light went on and I thought that this was something I could really enjoy cooking with.” Back home, the Stovells recruited Miles Irving, the man who literally wrote the book on foraging in the UK, to help them identify and source edible plants to incorporate into their food. But when time allows, Fernando takes a keen interest in discovering his

own natural ingredients. “I tend to go out as often as I can. I’ll try to go for a solid week, almost daily, just to see what is coming out, what’s sprouting. As soon as you get out of your house you can find food everywhere; it’s tremendous.” For anyone interested in foraging for themselves, Fernando strongly advises

TEST DUMMY Clay Pigeon Shooting
I
wanted to try something new and different. Something with, as the French say, a certain “I don’t know what”. We all know about cycling, badminton and tennis, but what other ancient pursuits could there be? Well I decided to try my hand at shooting - or more specifically, Clay Pigeon Shooting. So with a spring in my step and my eyes focused, I headed out… The weather had improved slightly on a Wednesday as I drove up to Bisley Shooting Ground. My companion for the day was another company member who had never handled a shotgun before, so I felt this was an excellent opportunity to see how a comparative old hand (me) would fair against a complete novice. Fate, it seems, is not without a sense of irony… For those of you who are wondering, Clay pigeon shooting

involves the art of shooting at special flying targets with a gun. The “clay” is fired from a trap, and the aim is to hit the target as it sails gracefully through the air. Having equipped ourselves, we stood amongst the pines as John, our guide, took us through some basic safety guidelines and basic stances. Then the fun began… The clay sailed out before me, lazily hanging in the air, almost taunting me. I shouldered my gun, breathed easy and slowly deliberately squeezed the trigger. The gun discharged, my shoulder absorbed the recoil - and the clay? Well the clay kept going, didn’t it? The shooting continued and I found that shortly, most clays met their end. Little Mister Amateur who accompanied me however put Annie Oakley to shame. Beginner’s luck I wished, but really it was down to Johns calm, concise and measured

advice. By the end, we were both shooting well and despite me losing a (silly) competition (that I didn’t really take seriously anyway) we had both really progressed. So why not try it? Clay pigeon shooting is a sport that tests patience, coordination but also gets you outside in beautiful surroundings with friends. The nice thing about Bisley Shooting ground is that they are there to introduce you to the sport, its etiquette and benefits. With winter fast approaching, the gym often gets neglected. If this sounds like you, then take advantage of the local countryside and do what comes most naturally – go for a nice long walk…
When you take a moment to consider the beautiful countryside that surrounds us, it’s really very easy to see the appeal of hiking. Who doesn’t like getting out there and embracing the outdoors, filling our lungs with clean air and blowing the cobwebs out? Remember, just like any exercise, walking or hiking gets the blood flowing and helps the brain release endorphins - and it also has the neat side effect of being really good cardio-vascular exercise. The thing is, hooked by these feelings of happiness, enjoyment and satisfaction, that you’ll soon find yourself heading out more and more to areas that offer a bigger challenge. You may start out just taking a gentle stroll, but believe me you’ll soon find yourself assaulting the challenging walks bridleways of Surrey and Hampshire with renewed vigour. Taking up walking for exercise can sometimes be a little more involved than walking the dog on Sundays, so here’s my guide for beginners to get you prepared and keen to crack on…
GET THE RIGHT KIT One of the best things about walking is that it’s free. There are not many other sports that are open and accessible for every one of all ages and budgets. First off, you need to have the right kit for hiking. But don’t go crazy; Start simply. So, let’s start at the bottom; footwear. I can’t say that hiking boots are the most fashionable of things, or the cheapest, but they will certainly offer the best all-round protection from wet feet and twisted ankles on the paths, bridleways and trails of Surrey. A little rucksack is a must as well, to carry all your maps, spare jumper as well as water and snacks. Also invest in a warm, waterproof coat. We Britons know of this strange thing called the weather and its mercurial persuasions!
PAIR UP And speaking of things changing quickly: If you’re a beginner going out and hiking alone should be something to work towards. If you get lost or come into difficulty having someone with you is really wise. Remember the old adage of two heads being better than one. Safety aside, what better way to enjoy the countryside than sharing it with someone?

YOUR MOBILE IS NOT DEEP THOUGHT
The Boy Scout motto is the right one. Before going out for a hike – regardless of how short or long – it’s really important that everything is ready before you step out of the front door. You’d be pretty miffed if you got to the start of your walk and realised you forgot the map! Having said that, don’t fall into the trap I have and pack your bag for every eventuality; it can be like that wack-a-mole game; once you prepped for one thing, another possibility pops into your head and you’ll soon find you’re carrying weights that Soldiers are expected to. With all that unnecessary weight you’ll find your energy gone and your enjoyment with it.
Mobile Phones are absolutely amazing things and they help hikers out on a daily, if not hourly, basis up and down the country but mobiles are often the main reason people get lost in the first place, because they’re relying on smartphone map apps. Smartphone maps are not (and this is entirely opinion here) as detailed as a printed map. For one thing, an Ordnance Survey map doesn’t run out of battery.
FOOD AND DRINK It may sound crazy, but make sure you take snacks and water with you. Walking around you’re dehydrating just like when you run, but you don’t notice it because it’s gentle, relaxing and frankly you’re having fun. The only bummer with water is it weighs a lot so again be careful.

YOUR LOCAL WALKING CLUB: WOKING RAMBLERS Here in Woking, the local Ramblers are a great group to join in and enjoy walking through the countryside. Generally speaking the ramblers organise full and half-day walks during the week, with a view to give everyone a chance to join in and not miss out due to life getting in the way. Surrey Half Marathon… It may seem a little strange to be talking about an event that’s taking place in March next year - but there’s good reason. The 2015 Surrey Half Marathon is open for registration now, and with the course for the race having just been approved it’s time for those of you who quest for glory to dust off the trainers, register and get out on Surrey’s (exceptionally well laid) roads to begin training for the day. The race has space for 5500 participants and since June 700 places have already been filled - so you’d better shake a leg. Registration is easy; simply head over to the race’s official website and click on the Sign Up 2015 tab. Here you will be guided to what particular phase of the race to join. There’s obviously the main race, but there’s also a chance for

6th October Tickets have now gone on sale for all Surrey Smashers matches in the new National Badminton League (NBL). This is the UK’s first ever professional national league, with the monthly fixtures starting on 6th October. Boris Karloff Boris Karloff was born in the UK but despite spending most of his career over the pond he came back home to Surrey and having spent his last days in Bramshott and was cremated and interred at Guildford Crematorium. In honour of Halloween we invoked Boris’ spirit to catch up with this iconoclast of Horror Films.

I spent my childhood in a big family and was destined to join the consular service, believe it or not. But that was more my brother’s thing. I dropped out of King’s College and spent some time as a labourer on a farm. At a bit of a loss, I soon happened upon acting. I started out by travelling to Canada and dabbling in a few stage plays. The rest is, as they say, history.
I did enjoy playing Isopod in The Five Star Final. Yes, Isopod was interesting. Unscrupulous reporters are still a problem now, I understand. WERE YOU MUCH DIFFERENT FROM THE CHARACTERS YOU PLAYED?
