Roasted Florida Snapper Street Tacos with Avocado Crema

Ingredients

1 pound Florida snapper fillet, skin on and bones removed

1/2 cup Florida avocado, diced

2 teaspoons taco seasoning blend, divided 1 lime, juiced (plus more wedged for garnish)

1 cup sour cream

Florida-made hot sauce, to taste

1 fresh Florida chili pepper, thinly sliced (if desired for heat)

2 tablespoons fresh cilantro (plus more for garnish)

1 head Florida romaine lettuce, shredded Olive oil for cooking

8 soft corn or flour street taco tortillas, toasted

1 cup fresh salsa

Sea salt and fresh ground pepper, to taste

Preparation: Preheat the oven to 375 degrees. With a sharp knife, make some cross hatches in the skin of the snapper without cutting through the meat of the fish fillet; this will keep the snapper fillet from curling up during the cooking process. Season both sides of the snapper fillet with 1 teaspoon of the taco seasoning blend. Lightly cover a sheet pan with olive oil. Place the fillet skin side down on the oiled sheet pan. Add a few chili pepper slices to the top of the snapper fillet for extra heat if desired. Place the snapper in the preheated oven and cook for 5 to 8 minutes until thoroughly cooked in the thickest part. Remove from the oven and let cool. When the snapper fillet is cooled slightly, use 2 forks to flake the snapper into chunks.

While the snapper is cooking, add sour cream, avocado, the remaining 1 teaspoon taco seasoning, cilantro, a few more slices of chili pepper if desired and half the lime juice to a blender or food processor and blend until smooth. Taste the avocado crema sauce and adjust the seasoning with salt and pepper. Remove the avocado crema from the food processor and store it in the refrigerator until ready to use.

Add the shredded romaine lettuce, remaining lime juice and a pinch of the taco seasoning blend to a small mixing bowl and stir lightly to coat. To assemble the tacos, place an even amount of the shredded lettuce on top of each toasted tortilla and top with the snapper. Add fresh salsa and avocado crema. Finally, garnish with lime wedges, Florida hot sauce and extra fresh cilantro if desired.

A VESSEL SAFETY CHECK - STUART - Despite numerous COVID-19 restrictions, more and more boaters are taking to the water to alleviate at-home boredom while taking advantage of the open-air benefits and more pandemicfree aspects of recreational boating. But if you haven’t been out boating in a while, are your vessel’s lights operating properly? Do you have a sufficient number of life jackets for the number of passengers aboard? Is your engine’s ventilation system up to par? To get you started on a new year boating adventure, now may be a perfect time to consider getting a 2022 Vessel Safety Check (VSC) offered by certified VSC examiners from the St. Lucie River Power Squadron, also known as America’s Boating Club of Martin County. These trained VSC examiners from the local squadron will point out safety features such as minimum requirements required by the U.S. Coast Guard, examine fundamental mechanical aspects of your vessel, and answer questions how you can have more fun safely on the water. These are just a few of the many discussion points covered in this voluntary examination. As an added plus, Vessel Safety Checks are free to boat owners. examination. The Vessel Safety Check (VSC) is performed at your boat, whether in a slip, at the launch ramp, or in your driveway, by a certified Vessel Examiner, at a mutually-convenient time. After successful inspection you are awarded a vessel safety check sticker which is affixed to your vessel near your state registration sticker. Dedicated to promoting boating safety and education within the community, the Clearwater Flotilla continues its commitment to ensuring that local boaters are equipped with the knowledge and resources necessary for a safe and enjoyable time on the water.

Vessel Safety Checks (VSC):

Vessel Safety Checks are a crucial component of the Clearwater Flotilla's mission to enhance boating safety. Trained and certified examiners will be available throughout the year to conduct complimentary VSCs for local boaters. These checks cover a variety of safety aspects, including life jackets, navigation lights, fire extinguishers, and other essential equipment. By participating in a VSC, boaters can ensure that their vessels meet all required safety standards, fostering a safer maritime environment for all.

Boat America Classes:

The Clearwater Flotilla is also pleased to announce the schedule for Boat America classes in 2024. These classes provide participants with a comprehensive understanding of boating safety, navigation rules, and emergency procedures. SARASOTA FLOTILLA 82 OF THE USCG AUXILIARY Florida law requires that any person born on or after Jan. 1, 1988, may not operate a vessel powered by a motor of 10 horsepower or greater unless such person has in his or her possession, aboard the vessel, photographic identification, a Florida boater safety identification card (or any other state’s boating card), and the registration for their vessel. Regarding the above law, which has been in effect for over a year, Flotilla 82 of the USCG Auxiliary, based in Sarasota, Florida (at Mote Marine) offers a 1-day course held on the last Saturday of each month. It starts at 9:00 am and completes at 5:00 pm. The course includes the USCG exam which, if passed, results in a Florida lifetime boating card/license. INSHORE FISHING REPORT

Snook season opened March 1 in our area for two months, but remember, they must be in that narrow slot of 28-33 inches to be able to harvest one per angler per day. Now typically in order to find one in this slot can be challenging, and especially for now it would be even more difficult. They are still very much in the back bay waters and back country areas. They will come out of those areas more as waters warm and days get longer, and that movement or transition is beginning now.

We are seeing more and more bait around which will help spur them along too. Between days lengthening, bait present and warming trends these are all variables that will ‘lure’ the snook out of their back country, back bay, river, creek and bayou hiding spots they have taken refuge in during the ‘winter’.

Trout action still going well around the area too.

We are seeing lots of trout action around the islands, flats, and dock lines. However, now

that things are starting to warm a bit I would imagine we should see them more frequently around the bridge and dock lights at night and moving a bit deeper on the flats out of that super shallow areas we have found them the past few months.

Sheepshead are still super prolific and aggressive around the area structures and that will continue awhile until things really warm up. This is a great time to targe them prior to their annual scatter back to the back bay and upper bay areas which thins out the numbers we see concentrated typically this time of year.

Redfish action has been a bit spotty but going well once you find them. Now that things are going to warm a bit they should get more active and aggressive. We are going to see some nicer weather too allowing you to be able to ‘see’ the fish better when cruising our back bay waters.

Spring is here and the Fishing is great!

We are slowly starting to enter in our spring fishing patterns here in Bradenton and Anna Maria Island.

On our inshore fishing charters we are seeing more hungry snook, seatrout, and redfish coming out of their winter haunts in search of food so they can start to reproduce again. The next few months we will be targeting the snook, trout, and redfish in the waters of Tampa Bay and Sarasota Bay but there will also be a chance of encoutering Spanish mackerel, ladyfish, jack crevelle, mangrove snapper, bluefish and more. Since we had somewhat of a cooler winter the spring time fishing should be very good as the bait moves back in and fish start to gorge themselves. Right now the sheepshead spawn is in full swing and they are around most of the artificial reefs and structures in Tampa Bay like the Skyway Bridge. These fish will be a good target on our inshore fishing charters for the

We had some good numbers caught a few days this past week around madeira beach, johns pass and treasure island. Great time to go pompano jigging around local sandy edges, jetties and passes to try and find some of these great eating fish.

Triple tail are around too, and we should start to see more as spring they get a bit more easy to spot around the floating debris, buoys and markers of our area.

West Central Florida

next few weeks to a month as the spawn comes to an end.

Near shore in the Gulf of Mexico the water temp is in the mid 60s and is starting to warm as the days get longer. We are seeing more and more bait schools showing up as it gets warmer. When the weather allows for us to get out there lately we are bottom fishing for mangroves snapper, key west grunts, sheepshead, and the occasional hogfish or black sea bass. We also catch the occasional gag that is out of season but will provide for a great battle on light tackle. The next month or so is prime time to get out when the weather allows to bottom fish for these tasty fish. Once the water temperature starts to consistently be in the low 70s in the Gulf of Mexico we will see a lot more bait schools and the king mackerel, bonita, sharks, and Spanish mackerel will be here to eat and then eventually keep moving north. When the king mackerel show up they are very aggressive and give a great fight on light tackle. These are one of our favorite fish to catch on our fishing charters in the spring.

Beautiful weather for South Florida the past week, except one rainy day. It’s been fun in the sun for anglers, plenty of smiles and rod bending action.

Anglers looking for nonstop action our local waters have been teaming with schooling fish, bluefish, jacks, mackerel, snapper, black drum, ladyfish, snook, and many other species hooked on the end of the line.

Channel edges and deep holes have been the main target points for locating schooling fish. Top water action has been phenomenal for bluefish and jacks. These fish are super aggressive, creating awesome explosions on Rapala skitter walks. The bluefish have been ranging in size from 5 to 20 pounds.

Dock edges and sand flats have been excellent areas to target Pompano and black drum. Both sides of the tides produce fish. Doa 3 inch shad tail and shrimp on 1/0 Mustad circle hooks great tactics to get the fish to strike.

Mangrove shorelines and muddy bottom areas have been

great areas to target snook using Rapala X wraps. Snook have been schooled up due to the cooler water temperatures. Common snook, fat snook and sword spine snook have been mixed together. Snook have been ranging in size from 15 to 28 inches.

Snook are still active along mangrove shorelines, due to the freshwater run off, the water temperatures have fallen, triggering snook to hang near muddy bottom areas. Rapala x raps great baits to entice strikes, live baits free lined with the tide get the drag screaming.

Bottom fishing near structure and channels has provided anglers with a plethora of species. Drum, snapper, grunts, pompano, barracuda just a few species anglers have been catching.
