Ingredients 1 ½ pounds cooked Florida spiny lobster meat 1 rib Florida celery, finely chopped 1 Florida carrot, finely chopped 1 Florida tomato, finely chopped 1 medium onion, finely chopped 2 tablespoons olive oil 6 cloves garlic, chopped 2 tablespoons fresh tarragon leaves, chopped 2 tablespoons fresh thyme leaves, chopped 1 bay leaf 8 black peppercorns ½ cup brandy ½ cup dry sherry 4 cups fish stock or bottled clam juice ¼ cup tomato paste ½ cup heavy cream 1 ½ tablespoons cornstarch 2 tablespoons water Sea salt and fresh ground pepper, to taste

Preparation: Slice cooked lobster meat into medallions, reserving a few slices for garnish. Coarsely chop remaining slices; cover and chill. In a 6-quart stockpot sauté the vegetables, garlic, herbs, and peppercorns in oil over medium-high heat until soft. Carefully add the brandy and sherry; simmer until most of the liquid is evaporated. Add the fish stock and simmer uncovered for 1 hour, stirring occasionally. Strain the stock into a large saucepan; discard remaining solids. Add tomato paste and simmer for 10 minutes until stock is reduced to 3 cups of liquid. Stir in cream and simmer for an additional 5 minutes. Combine cornstarch and water in a small bowl and whisk into bisque. Simmer for 2 minutes, stirring, until slightly thickened. Add chopped lobster meat and simmer until lobster meat is heated through. MarineMax Vacations Makes Donation to Virgin Islands Search and Rescue

LEARWATER, FL (December 20,2021) – MarineMax Vacations is excited to share their opportunity to support Virgin Islands Search and Rescue (VISAR). For years VISAR has made it a mission to keep everyone safe at sea. Search and rescue can be a dangerous and challenging task that requires much dedication. They are a hardworking organization with welltrained volunteers that work tirelessly to protect the islands. In 1988 the British Virgin Islands Government requested a group of people organize an informal search and rescue service that would create an “autonomous, para-professional, dedicated volunteer maritime search and rescue to be run as a Non-Profit Organization.” Since then, VISAR has become the official search and rescue service in the British Virgin Islands. They are making sure to provide 24-hour coverage every day of the year. n May 9th of 2022, Molly’s Marine Service is looking forward to celebrating 13 successful years in the Marine Service Industry in Collier County. For those of you who don’t know, Molly’s Marine Service is located in downtown Old Naples, on the west side of the Naples bay, nestled into the specifically designed boatyard directly in the center of the Naples Boat Club. For those of you who do know, you are also aware of the lawsuit that has dominated our world for the last 4 years. Naples Boat Club is primarily a conglomerate of marine businesses, i.e. dry stack storage, Ship’s Store, Boat Repairs, Boat Sales, etc., designed to offer the Public access to the waterfront and marine related services needed to support public boating activities. We offer haul out and launch, bottom painting, running gear and assorted mechanical repairs and services. A minimal number of residential condominium units were added to the mix with the intention of drawing in people interested in the boating community and lifestyle.

Captain’sCorner with Captain Sergio Atanes Winter Snook The old myth that snook shut down during cold weather holds true when the water temperature drops down below 65 degrees. Capt. Eddie Caldwell, a good friend and part of the Reelfishy.com group has a technique on how to catch them during the cold months. Capt. Eddie invited me along to go after some big winter snook using his technique, and before he could finish his invitation, I asked him when and where. I suggested we bring along the camera crew and film it for a TV show. We set a time and place, agreeing not to show any of his favorite fishing spots. Saturday morning arrived and the winds were blowing from the northwest with temperatures in the mid 60’s and dropping as the cold front approached. Capt. Eddie explained that his technique works best with a falling tide and the water temperature no lower than 60 degrees. His method is to troll canals using one of favorite snook lures, the YO-ZURI C-7, a small but killer lure for snook and trout. We picked a black back and silver sided one, tied to 30-pound

test leader about 30 inches long. We used a 7-foot medium action spinning rod and reel combination. A short trip from the boat ramp and we were ready to fish. As we entered the first canal, we cast the lures about 25 feet behind the boat and held the rod outward and down as if they were outriggers. The secret is to keep the tip of the rods down and away from the boat and watch the tips of the rods for movement from the lure. YO-ZURI lures have a wobbly movement and in some cases the lure can pick up some bottom trash and will stop the wobbling or come to the surface. By trolling slowly through the center of the canal the chance of catching snook will increase for two reasons. The bottom of the canals is muddy and hold water temperature higher than surrounding waters, causing the snook to move into deeper water and second, as the tide drops, they are forced away from the docks and down toward the center of the canal. After a few minutes of trolling, our first hit was a small 8pound snook, and as we made our turn into the next canal, I had a hard tug. For a minute I thought I had struck bottom, but the bottom moved, and

with Captain Dylan Hubbard Inshore Fishing Report Redfish have been very active this past week prior to the big front we saw a lot of fish moving around the area and feeding actively. Mangrove shorelines, grass flats, oyster bars, and residential dock lines were all productive areas for the redfish. We even saw some nice fish around the passes around bridge lights and dock lights at night cruising the bottom. Lots of mullet moving right now has the redfish moving with the schools looking for baits spooked out of the grass behind the mullet schools. Cut mullet, threadfin or pinfish are great dead bait options around those schools or docks. Live shrimp is also a great option for redfish or slow-moving soft plastics on or near the bottom. Snook action seemed to have picked up over the weekend and then dialed back slowly as the front pushed into the area. We are hoping that will pick up with this little warm spell we are having. Should bring more snook feeding actively back to the passes as the bait moves around. We have seen some solid snook around bridge lights and dock lights and the long warm spell we had prior to this recent front had a big push of snook feeding actively in the passes and likely we will see that again this week. On the flats, we are seeing them be more leader shy and picky with the clear waters, but you can get them to chew at the right tides when that water is moving well.

Trout action has been tougher, few big ones caught, but over all we are seeing smaller fish and not huge concentrations like we normally would this time of year. However, its still early and hopefully we will see this trout proliferation if we ever get some solid cool water temps that hangout in the bay. Live shrimp and soft plastics have been key for the trout bite that we have seen recently. Sheepshead are thick around the area at docks, bridges, piers, and some jetties. Really seeing decent concentrations of sheepshead despite the warmer waters. Lighter tackle, small hooks, minimal weights and a small piece of shrimp, clams, oysters, or a fiddler crab is the best option. However, we are seeing some even biting soft plastics as anglers work dock lines for snook and redfish. Surprisingly the mackerel seem to persist around the bay still too, they have gone in and out a bit with warming and cooling waters. However, this last warm spell spread them out and we saw them on those deeper flats and around the edges and passes. As always faster moving baits, live white bait or sometimes live shrimp worked well to get them chewing. Nearshore Fishing Report Lane snapper finally re opened in federal waters along our near shore waters starting the 23rd. Little early Christmas present for those fishing near shore where lane snapper are plentiful starting around 40-

West Central Florida Southwest Coast I realized this was a very large snook. Capt. Eddie took the motor out of gear and suggested I put a little more pull into catching this large snook or take the chance of losing him as he made a dash for the nearest dock. Shortly afterward, I had him at the side of the boat, ready to give up the fight. We were back at the dock by noon not only with the largest snook weighing in at 17 pounds, but also in time to watch the football game. That day Capt. Eddie made me a believer in trolling for snook.

West Central Florida 50ft up to 100-110ft and sometimes even inside and outside the range too. We are pumped to be able to keep these great eating fish again that many picture as bycatch, but man does it get felt when one of the staple bycatch species is closed. We are just a few days away from red grouper re opening near shore, but for now we get to focus on the last few days of gag grouper season. So often people get so focused on gags and then when they close, they stop fishing because ‘grouper aren’t open’ well there’s scamp, red grouper, and strawberry grouper to catch after January first! For now, the gag bite has been a little soft on the backside of that long stretch of calm clear conditions stopped the big influx of gags from the offshore waters near shore. However, this recent front we are hoping got those fish moving again to refresh the near shore waters with some fish for our last stretch of gag grouper harvest. Look for them around those ledges, rock piles, and hard bottom structures starting around 40-60ft up to the deepest offshore waters. Live pinfish, dead threadfins, squirrelfish and a variety of baits have worked to help us target these gag grouper. Winter has arrived with shorter periods of daylight and falling water temperatures on the Indian River Lagoon system and other Florida waters. These conditions present anglers with the best sight fishing experienced all year. With less algae in the water and low water levels on the flats, sight fishing conditions greatly improve in January,

but a stealthy presentation and long cast are critical to entice spooky fish. As the sun warms the water, target shallow sandbars where both redfish and sea trout lay seeking the warmth of the sun’s reflection on sand. On colder days, target deeper locations where the water is a few degrees warmer and slow down your presentation. Lastly, fish metabolism slows as the water cools, so smaller baits and a very slow retrieval will increase your success in getting strikes. On warmer days when the flats heat up, the feeding and tailing activity of redfish and black drum improves because the shallow water warms up faster. Another very important part of the equation is to match the hatch. When targeting redfish, black drum, and sea trout during the colder months, I like to downsize my bait, slow down my presentation, and fish with a shrimp or

Sailfish season got off to a great start in November and December. We anticipate it will continue quite good on the reef, especially with the bumper crop of ballyhoo available for them to feed on. Up and down the reef, chasing sailfish that are spraying ballyhoo is common practice during January for guys in the know. As saifishing is sight-fishing at its finest, a boat with a tower of some sort offers the best vantage for spotting fish. No tower? Try heading off the reef edge to the 100- to 150-foot depths and putting out a spread of four to six live ballyhoo while drifting a c o l o r change, current break or weed line. The live ballyhoo should attract the sailfish and lure them to your boat. No sailfish has ever passed up a live ballyhoo in the danger zone.

Central Florida crab imitation bait like the D.O.A. Shrimp or Crab. In freshwater on the St Johns River – As the water temperature cools, both speckle perch (crappie) and American shad will move out of the lakes into the creeks and shallow river flats to spawn. Crappie typically spawns along the shallow edges around structure during the full and new moon periods and once located will present anglers with limits in no time at all. American shad will stage in the deeper corners of the river and move up on the sandy shoals to spawn when the water temperatures and conditions are right. Try slow trolling plastic crappie jig and lures like the Road Runner tipped with a minnow until you locate fish, and then concentrate your efforts matching the same techniques, depth, and area to improve your success. Among the sails, you may also encounter large blackfin tuna in the 15- to 20-pound class. On occasion, dolphin, wahoo and king mackerel are roaming the same areas. On the Atlantic wrecks, expect mutton snappers and amberjacks. Live ballyhoo is your prime bait, but pilchards or pinfish will also work. On the main reef, the yellowtail snapper action can be hit or miss this time of year, depending on the weather patterns. The more frequent the cold fronts occur, the less likely the yellowtails are to cooperate. Should you luck out with a four- or five-day period of stable weather, drop everything and head straight for your favorite yellowtail spot. The SeaSquared crews tend to fish for yellowtails in the shallower reef areas in 30 to 50 feet of water. Standard size blocks of chum are all you need, as a smaller amount of food is required to hold their attention during the winter.

These areas also contain plenty of king and cero mackerel, so prepare to fire up your smoker. Live ballyhoo or live pilchards will draw their interest. You’ll find more consistent snapper action around the humps in Hawk Channel. Fresh shrimp and live pilchards are your baits of choice. Fish them on a jighead on the bottom for the best results. There’s no telling what you may catch when that shrimp hits the bottom. Snappers, groupers, cobias, porgies, hogfish (which also must be released as that season is closed as well) plus Spanish, cero and king mackerel. In the bayside waters, mangrove snappers and Spanish mackerel hang on the inshore wrecks and banks. Further out, you’ll find cobias, Goliath groupers, blacktip sharks and more, all responding to your efforts.
