Ingredients 2 pounds Florida flounder fillets 6 slices cooked ham, 1/2 ounce each 6 slices swiss cheese, 1/2 ounce each 1 teaspoon Florida orange rind, grated 1/4 teaspoon white pepper 1 Florida egg beaten 1 tablespoon margarine 1 tablespoon all-purpose flour 1 cup Florida milk 1/4 cup parmesan cheese
Preparation: Place 1 slice each of ham and cheese in the center of each fillet. Cut to fit. Sprinkle orange rind and pepper evenly over each fillet. Roll the fillets and secure with wooden picks. Gently dip rolls in beaten egg, then coat with bread crumbs. Place in a 12x8x2- inch baking dish. Melt margarine in sauce pan over medium-heat; blend in flour. Slowly stir in milk and cook until thickened. Pour sauce over fish and top with parmesan cheese. Bake in a preheated 350-degree F oven for 20 minutes or until fish flakes easily. Mercury Marine Names Perissa Millender Bailey Vice President and General Manager, Esolutions

Five Reasons to Take a Boating Safety Course Before You Rent a Boat
T
here are plenty of reasons why everyone should take a boating safety course before renting a boat, but these five are critical.
If you’re thinking about renting a boat, the first thing we’d like to say is: good move! Boat rentals are a great way to break yourself into boating, experiment with different types and styles of boats before choosing one for yourself, and discover what sorts of boating activities get you and your family smiling. And most importantly, it’s a great way to have fun. We do need to note, however, that before renting a boat taking a boating safety course is a good move. Why? Let us count the ways. 1. It may be the law. Every state has different rules and regulations regarding the requirements for running a boat (personal watercraft included), and many of them require taking a course to obtain a boating license and/or safety certificate. How will you know what’s required in your state? That’s easy — just check out our State Boating Laws, Rules, & Regulations Map. 2. Taking a boating safety course greatly improves your safety margin afloat. True, statistically speaking, driving a boat is far safer than driving a car in the first place. And besides, you can learn a lot about boating safety simply by reading our Boating Safety Guide. Still, just about everyone would agree that safer boating is better boating, and taking a boater safety course is an excellent way to learn
about many common mishaps and how to avoid them. 3. With the confidence you’ll have after taking a boating course, you’re likely to go farther, stay out longer, and enjoy more diverse boating activities. Many people feel a bit stressed before they become accustomed to captaining a boat, and as a result, may hold back on some of the experiences they’d like to have or the distances they’d like to travel. Plus, lots of new boaters worry about things like how to anchor a boat or boat docking. Knowing that you’ve educated yourself you’ll feel more confident behind the helm. And as a result, you’ll feel much more prepared to try out new things and head for new places as you leave all that stress in your wake. 4. If you take more advanced courses, it can expand the pool of boats available for you to rent. Better training will allow you to handle larger, more complex boats. And in some cases, education and/or experience may be a prerequisite for boat rentals over a certain size or complexity level. Even if it isn’t mandatory, what good is it to rent a boat with equipment you my not know how to use? Additional education will help you make the most out of the rental and maximize your enjoyment afloat. 5. Often, it’s free. This does depend on the type of course you want to take, and more advanced or inperson classes may come at a price. However, there are many courses that you can take online which
don’t cost a dime. In many cases these are the same courses or the same types of courses you may need to take to get a boating license if your state requires one. Considering all of the above, it should be clear that taking a boat safety course before you rent a boat is the smart move. But when you put these five
reasons together, you create one more thing that should encourage taking a course: knowing that you’ll be operating within the law, safer, with more confidence, with more boats to choose from, and that doing so didn’t cost you any additional money, you and everyone aboard is bound to have more fun. And that is, after all, why renting a boat is such a good idea in the first place.

Captain’sCorner with Captain Ray Markham OFFSHORE/ NEARSHORE With some “go to Mexico” kind of weather, anglers were able to head west just about as far as their boats could take them. Beyond 120-feet, some big fish are being caught. On the big fish hit list, some monster amberjacks, loads of big red grouper, blackfin tunas, wahoo, sailfish, swordfish, and others were landed this week. The full moon Monday night turned on the mangrove snapper bite just about everywhere. The deepwater areas are producing mangos up to 10-pounds. Nearshore waters have been producing mangrove snapper in the 1-to 3-pound size class. Most have been caught either on live shrimp or smaller pilchards. Most rock piles, ledges, or artificial reefs are holding them. Anglers getting an early start will likely find Spanish mackerel along the beaches as the sun rises. The bite might last an hour or longer, but usually fizzles out by about 9 a.m. Most of the macks have been caught inside of about 30-feet of water. Trolling spoons on a flatline, behind a #1, and a #2 planer will be your best bet to find these fish, but spotting bait pods and diving birds will get you into fish as fast as anything. Bring a pair of binoculars to spot birds at a distance. The run-and-gun method can put you on fish quickly, especially when they surface to feed m o m e nt a r i l y and then go
back down. By having spoons covering multiple depths in the water column you have the best chance at connecting with fish. You might have one larger spoon like a Drone Spoon back on a shotgun well behind the others to attract a kingfish that might be tracking the school of Spanish to chew. Keep a rod rigged and ready with a live crab while approaching wrecks and artificial reefs. This versatile bait can possibly allow you to connect with permit or cobia that can be found feeding in these areas. A pinfish or an eel-type lure will also work for cobia. Berkley Power Eels and most of the large jerk baits in dark colors can fool cobia. INSHORE This has been a week of exploration for me. I’ve spent the bulk of my time searching the south Pinellas area from Fort Desoto east to Pinellas Point and north to the St. Pete. Pier on the western side of the bay in search of fish, and most particularly, speckled trout. For the past year, it’s been just about a zero score on catching much of anything. But this week I’m happy to say we caught quite a few very small trout ranging from 8-to 12-inches in length. All were caught on CAL Jigs with Shad tails and DOA Shrimp, with the shrimp outpacing all other lures we tried. In addition to the spotted seatrout, we found silver trout. This is a fish that has been somewhat absent for the past few years. Lizardfish, ladyfish, bluefish, pinfish, and a fair number of small schools of
with Captain Dylan Hubbard This past week we had a truly awe inspiring offshore pelagic bite with a nearly 100lb wahoo followed the next day by a big sailfish! Plus, we are seeing the tuna action out there still from time to time and we still have the occasional kingfish roaming around too. If you make it offshore right now, do not forget to have that flat line out because its just a crazy time of year with a chance for just about anything pelagic wise. That wahoo was truly crazy, we were filming a fishing show with the guys from Ta Mahoney Company in Tampa. They have a show called ‘Tails from the Darkside’ on WayPoint TV that I highly recommend if you haven’t seen it before. So we are fishing around 170-200ft of water for red grouper, scamp, mangroves, triggerfish and whatever else we can get chewing. Unfortunately it was right behind the full moon and we were being inundated with the red snapper really heavily with the occasional big gag grouper so it was kind of a tougher bottom fishing start to the day. We luckily didn’t forget the flat line though and we casted it out at our stops once we all got rods to the bottom. Around the third stop of the day the flat line went out and only about 5 minutes later the reel literally started to scream to the point of smoking a bit. The line ripped through the water like nothing I had ever seen before while the reel screamed drag. The fish ran away from the boat at first, but then turned and ran towards the back and beyond the boat ripping the line through the water. Then turned and ran forward ripping more line as it ran. We started to scream for everyone to reel in their lines and before we got a l l the lines in the fish had already changed directions four times and started to lap around the boat. It ran around the boat three times and after interacting with the anchor line a little too much

and almost getting hung in the motors once we decide to pull the anchor and fight this fish while keeping it where we want it using Capt Dave’s boat handling skills to keep us broadside to the fish. This was no easy task as it continued to make huge runs and try and make laps around the vessel but with the anchor up and motors on those big Yamaha 425s were able to keep us right where we needed to be. After around thirty minutes of intense runs and big direction changes and about four of us on the reel passing it back and forth around obstacles and avoiding snags the fish seemingly changed techniques. Instead of fast runs and intense movements it just started staying steady and deep with more just dead weight. It was another 24 minutes or more of this until she finally came up to the surface and there was this boat wide gasp as we couldn’t believe the size and confirmed it was our intended targeted species of wahoo. Screams of directions were given, gaffs prepared and we all ran up to the bow to where we had now positioned the last guy on the rod. Once the fish got up on the surface, Capt Dave brought the boat up to the fish and I had the pleasure of the long gaff in hand and stuck it just behind the eyes right into the brain. The gaff struck with all my force and weight and the fish didn’t even move, normally when you stick a fish they nearly come out of the water but this fish was so heavy it felt like I gaffed a sunken red wood tree. Just a massive thud and no movement! Luckily Mike was next to me and he got a second gaff into the fish and we were able to hoist her onto the bow. West Central Florida Southwest Coast pilchards were found in Boca Ciega Bay. Of great concern is that the amount of seagrass in Tampa Bay is in decline and a concern for the estuary. The health of the bay overall since the massive red tide kills over the past few years has become a real issue in many areas of the bay. If seagrass is dying off, the habitat will continue to decline. Scientists are studying this to determine the best route to help restore the bay. FRESHWATER Early morning topwater fishing with poppers, chuggers, prop baits, and fly poppers has been on tap for the days I chose to hit some lakes. Light winds and sunny skies early in the day can produce some excellent results if you’re on the water by the time the sun peeks up over the eastern horizon. Lakes Tarpon, Seminole (in Pinellas), and Lake Manatee down in Bradenton are productive lakes to fish for bass and bream. Taking a kid fishing with a simple cane pole, some earthworms, crickets, or a crappie jig can provide hours of entertainment. West Central Florida the fish and only one prong of the treble hook was left in the mouth of the fish as we hoisted it. Once it smacked the non skid the rig popped clean out of the fish and the single barb that held this trophy fish onto the line was clearly bent nearly straight we were just seconds from loosing this fish clearly and we were all speechless for a brief millisecond realizing how close we came to loosing this fish of a lifetime before screams and elation began to erupt around the vessel! The best part was the cameras were filming this whole time from multiple angles and its going to be a sick fishing show episode for the ‘tails of the darkside’ fishing show that TA Mahoney’s was out there filming with us aboard the Flying HUB 2. Classic example of never forgetting your flat line, this fish would’ve just passed us by without that flat line out. Also, a great example of why its important to finesse the fish once you get them hooked up and away from any possible snags or break off areas to back the drag and let the rod tire the fish. As we passed this fish around from angler to angler to fight this monster at one point I noticed one of us were thumbing the spool to try and slow or stop the big runs and we had to holler at everyone if the fish wants to run let them run let the drag do its thing and lets not pull a hook! Luckily, we all worked together and we didn’t pull that hook till she hit the deck! What a memorable fish we all won’t soon forget. Definitely one of the nicest fish I have had the pleasure of gaffing through the brain!

The reef and wrecks have been great! On our longer days we have been venturing out towards the west and fishing west of the Marquesas. If unfamiliar with the Marquesas it is circular shaped set of islands and has a bay in the middle. It is approximately 11 square miles and falls under the protection of the key west national wildlife refuge. To the closest point it is about 20 miles west of Key West and it is known for its fishing, diving, and shipwrecks. The most famous wreck is the Atocha. At 1600 Spanish treasure vessel that went down during a storm. Out of the 260+ crew aboard it only had 5 survivors. So the location was known however it wasn’t until the 1980s when the mass of its fortune was found. Including 125 gold bars and 24 tons of silver! The surrounding area has many good fishing spots. Coral heads, ledges, and channels hold a ton of species. Permit bonefish and tarpon cruise the shallows and channels. Groupers, snappers, barracuda, Cobia, and sharks hold

near the coral heads and wrecks. Off to the south the reef continues on hosting multiple species. Out last trip out we had a great bite catching many red groupers, big mangroves, muttons, amber jacks, and yellowtails. If the weather conditions are right I recommend making the journey out as it is action packed! The bay boat has been very busy. Many anglers have been wanting to stay in the back country where it is always calm and go after the silver kings! The tarpon bite has been steady. Having a big game fish sky rocket in the air effortlessly always makes for a memory that will last a life time. If tarpon isn’t your thing sharks, snappers, and jacks will also fill a day up with rod bending action. Unfortunately, the offshore fishing has still been tough. On the days we don’t have these crazy high winds some Mahi and wahoo are being caught. Looking forward to some kind of relief for these weather patterns that have
with Captain Dean Panos Welcome Tuna We are in the prime of blackfin tuna fishing in Miami and yellowfin tuna fishing in the Bahamas. For the past month we have had blackfin tunas every trip. It started with 1 or 2 tunas per trip and just yesterday we caught 6 big blackfins on a half day trip. The blackfins are all 25 to 30 plus pounds. Our biggest for the season so far is 34 lbs. We have been catching the tunas pretty much all day but the best time is usually late afternoon between 3pmand 8pm. We haven’t done any of those late day trips yet but will probably do a few before the season is over. We should see a decline in the blackfin tunas by mid-June and usually by July they are gone. Besides blackfin tunas there have also been quite a few kingfish around. These have been anywhere from a few pounds up to about 40 pounds. Titanium wire with a big bait like a blue runner of goggle eye on the kite is deadly effective. And to top things off, there have been quite a few mahis around on the edge as well. Most of the mahis are good size fish from 15 to 30 pounds but there are almost always some schoolies mixed in as well. Big mahis are a blast, they are colorful, jump around a lot, fast growing and are good to eat. Pretty good combination! Sailfish are still around and can be caught year-round, but I

would have to say the primary sailfish season is now over or very close to over. Yes, you can still catch one on any given trip, but they are no longer the targeted species. While we have blackfin tunas here in South Florida, the Bahamas is now in full swing with their yellowfin tunas. These tunas are larger than our blackfins and tend to be between 40 and 90 pounds. Most of the guys from South Florida are targeting these tunas in NW Channel between Freeport and Bimini. You basically look for birds and having a great radar like our Simrad 10KW radar is a definite advantage. Once you find the birds, approach cautiously and get in front of the school, shut down your motors and throw out a few live pilchards as live chum, followed by chunks of dead sardines. Work the area a bit and if you either mark fish on the depth recorder or see tunas busting keep the dead and live chum going while freelining a few rods with either live or cut bait. Once a tuna gites the bait, you will know as line peels off the reel and its game on. Just be aware that the sharks are keen on these tunas schools, so use the heaviest tackle feasible (we use 50lb stand up tackle) and muscle the tuna in before it gets eaten. If

Southeast Coast the sharks are very bad, then leave that school as it doesn’t make sense just to keep feeding sharks tasty yellowfins. While tuna fishing, keep a keen eye out for mahis that will swim into your spread as well as blue marlin. We always have a rod ready with a big hook and either a big dead bait or lure ready just in case. Also, while on the subject, the shark situation both here and in the Bahamas has gotten completely out of control. Most sharks are protected but we have protected them so well that they are now everywhere and catching any fish is a challenge as the sharks simply wait for the struggles of a fish that is hooked and easily devour that fish instead of catching a fish naturally. We hope NOAA is taking a deep look at shark depredation and is coming up with a plan that will help both the fisherman and the shark population. So as we enter June, we are now getting ready for a few more weeks of tuna fishing and then getting into summertime mahi fishing in the Gulfstream, summertime day time swordfishing and mufti day trips to the Bahamas. Now is the time to look at your calendar and set up your summertime trips.

To get you started on a new year boating adventure, now may be a perfect time to consider getting a 2022 Vessel Safety Check (VSC) offered by certified VSC examiners from the St. Lucie River Power Squadron, also known as America’s Boating Club of Martin County. These trained VSC examiners from the local squadron will point out safety features such as minimum requirements required by the U.S. Coast Guard, examine fundamental mechanical aspects of your vessel, and answer questions how you can have more fun safely on the water. These are just a few of the many discussion points covered in this voluntary examination. As an added plus, Vessel Safety Checks are free to boat owners. And if you don’t “pass muster” with the thorough examination, the summary report is yours and yours alone. No citations are issued, and the results of the safety check are not reported to any enforcement agency, but a decal is awarded to display when the vessel has passed the examination. The Vessel Safety Check (VSC) is performed at your boat, whether in a slip, at the launch ramp, or in your driveway, by a certified Vessel Examiner, at a mutually-convenient time. It usually takes 20-45 minutes, depending on the size of your boat. CLEARWATER COAST GUARD AUXILIARY TEACHING BOATING SAFETY CLASSES ONLINE - 2022 - A New Way to Learn … A New Crop of Safe Boaters. With the advent of COVID-19, the Coast Guard Auxiliary was advised to discontinue in-person classes for the safety of the instructors and students. The good news is that the State of Florida (FWC) and the National Association of Boating Law Administrators (NASBLA) have approved the Coast Guard Auxiliary to conduct online classes. These classes are not your standard webinar sessions where the students sit at their computers and are lectured at. And they’re not animated cartoon sessions where you have to keep pressing enter to get to the next topic. Classes are $40 per student and include the books, supplemental materials and course completion certificates. The classes being offered by the Clearwater Coast Guard Auxiliary are conducted on Zoom with the same instructors the student would have had in the classroom and allowing lots of questions
and answers. In addition, because the classes are on the Internet, there’s no commuting to a classroom – the students can be anywhere in Florida! The boating safety class is also a requirement for many boaters in Florida. In the Sunshine State, anyone born after Jan. 1, 1988, must successfully complete a boater safety course approved by the Florida Fish and Wildlife Conservation Commission (FWC) in order to operate any boat powered by more than 10 horsepower, and they are required to carry their boater education card with them when out on the water along with picture ID. It starts at 9:00 am and completes at 5:00 pm. The course includes the USCG exam which, if passed, results in a Florida lifetime boating card/license.
