4 (6-ounce) Florida Red Snapper fillets 2 teaspoons olive oil, for cooking 4 tablespoons cornstarch Sea salt & fresh ground black pepper, to taste Cucumber Relish: 2 large Florida cucumbers, diced small 2 large Florida tomatoes, seeded & diced small 1 lemon, juiced ¼ cup fresh parsley, chopped fine 2 tablespoons fresh mint, chopped fine 2 tablespoons rice wine vinegar 1 tablespoon olive oil Sea salt & fresh ground black pepper, to taste Yogurt Sauce: 1 cup Greek yogurt 1 lemon, juiced 1 tablespoon seasoning mix (blackened or seafood spice) Sea salt and fresh ground black pepper, to taste

Sail Types: A Comprehensive Guide to 8 Types of Sails
S
ailboats come in all shapes and sizes. And that means there are many types of sails on the market! For those who might not know, sails are made of canvas and use wind power to propel sailboats through the water. Understandably, different sails are required for different types of sailboats. And sailboats are categorized by the number of hulls they have. Monohulls have a single-hull design, catamarans have two hulls, and trimarans have three. Generally, sailors use catamarans for upwind sailing (but they can be used to sail downwind in certain conditions). The type of sail you’ll need for your sailboat depends on the kind of sailboat you have. Additionally, sails are highly dependent on the wind and weather conditions. Therefore, it’s always a good idea to have different types of sails on board to navigate the ever-changing weather conditions.

The mainsail plays a significant role in tacking and gybing, making it essential for any voyage. Since the mainsail is a larger sail, it doesn’t require wind to propel it forward. And the fact that it can be moved by moving the boom makes it uber-easy to operate. 2. Headsail The headsail often accompanies the mainsail, though it is smaller in size. Regardless of your sailboat type, the headsail is positioned at the front of the mast – over the sailboat’s bow. Because headsails are small, they are helpful when navigating through windy conditions. Smaller sails catch less wind, preventing them from propelling your boat as strongly as larger sails. Additionally, headsails help lift, balance, and protect the vessel from inclement weather conditions.
8 Types of Sails for Sailboats As mentioned, you should carry multiple sails when sailing to prepare for various weather conditions. Here’s a brief overview of the types of sails for sailboats:
While the term ‘headsail’ refers to any sail in front of the mast, the jib is the most common type of headsail. (And when a jib is so large that it overlaps the mast, it’s called a genoa.)
1. Mainsails The mainsail is the largest and most important sail. Therefore, it’s probably the first sail to come

headsail.) However, the genoa is larger than the headsail and overlaps the mainsail partially or completely to help the boat go faster. Genoa sails are useful when sailing through light or medium wind. You can also use it when the wind comes directly from the rear. If you use a Genoa sail during high winds, you’ll probably start sailing too quickly and put yourself and your boat at risk. 4. Spinnaker The spinnaker is a large and whimsical (often colorful) sail. Spinnaker sails are usually symmetrical, allowing them to reach different points of sail. Generally, these are lighter sails and don’t cover the mast like the genoa. Because spinnaker sails are on the larger side, you have to be incredibly careful with them. Don’t use them in rough conditions. Instead, save them for sailing in low winds and calm seas. 5. Gennaker As the name suggests, the Gennaker sail combines a spinnaker and a Genoa sail. They are as large as the spinnaker, although they’re not symmetrical. They come in handy whenever the wind changes from a pure dead run to a reaching point of sail, as sailors can navigate various wind types with the same sail. It’s still only meant for lighter and milder winds, but it’s more versatile than the spinnaker and genoa.
6. Light Air Sails Light air sails are useful in calmer conditions when the headsail and mainsail alone aren’t cutting it. They include: • Code Zero: A code zero sail is a gennaker sail ideal for sailing in light to mild winds. It’s designed to create lift and boost boat speed whenever regular sails don’t generate enough power. For that reason, many racers and cruisers use code zero sails to improve performance and gain control in various situations. • Windseeker: This small, special sail is reserved for no wind or light wind. Essentially, it helps boats remain maneuverable in extremely calm conditions. And for that reason, it’s valuable to long-distance sailors. 7. Storm Jib Storm jibs can be used as a headsail whenever the weather is particularly rough and windy. Because it functions as a safety seal, it prevents boats from capsizing by reducing the sail area exposed to the wind. Therefore, it’s a necessary sail for every sailor. 8. Trysail During strong winds and storms, sailors can raise a trysail — a small, triangular sail near the boat’s stern — for better control and stability. Generally, sailors do this whenever the mainsail becomes too large and challenging to maneuver.

Captain’sCorner with Captain Rick Grassett Sarasota, FL Fishing Forecast for November 2023 You may find blues, Spanish mackerel and pompano mixed with trout on deep grass flats this month. You should also find larger trout in skinny water along with reds. Snook will stage around bars and on shallow flats as they make their move towards winter areas. Action in the coastal gulf with false albacore, tripletail, Spanish mackerel, blues and more should explode! Spotted Seatrout has reopened to harvest in southwest Florida with a 3 fish per person, bag limit and a 6 fish boat limit. Trout must be from 15”-19” with one allowed per vessel over 19”. I feel that it’s important to protect these larger trout, which are usually female breeders. Full regulations and details can be viewed at https://myfwc.com/ . You should find snook staging around docks and bridges in the ICW and along sand bars and in potholes on shallow flats. They may be along mangrove shorelines when the tide is high. I like CAL jigs with 3” and 4” shad tails and surface walking top water lures like the DOA “PT” in shallow water for snook. CAL jigs with shad tails or jerk worms, DOA TerrorEyz, DOA Shrimp and small white flies, like my Grassett Snook Minnow, will work well around dock and bridge fender lights. Fish the strongest tides for the best action. Reds will spread out on shallow grass flats in November. You should find them along bars, in potholes or around docks. Look for them along mangrove shorelines when the tide is high, but they are just as likely to be roaming with mullet schools in shallow water. CAL jigs with shad tails, grubs or jerk worms and gold spoons should work well for reds in shallow water. Fly anglers may score with lightly weighted flies, such as Clousers, spoon flies or my Grassett Flats Minnow fly.
lures and flies that you use for snook and reds in shallow water will also work for trout. You’ll also find trout on deep grass flats in water from 3’ to 7’ deep. I like to drift and cast quartering ahead of my drift with CAL jigs, DOA Deadly Combos or weighted flies on sink tip fly lines to locate trout. In addition to making a series of drifts to find fish, look for baitfish on the surface or birds to find them. You may also find blues, Spanish mackerel, flounder or pompano on deep grass flats this month. The techniques to find them is the same as for trout, although blues and Spanish mackerel may feed on the surface making them easier to find. Likewise with pompano, that may skip on the surface when you run or drift past them. When that happens, circle back upwind and drift back through the area, casting ahead of your drift. I like a 1/16 or 1/8-ounce chartreuse CAL jig head with a gold grub for pompano. You’ll need to add wire or heavy fluorocarbon when toothy fish are around to keep them from biting you off. You may find flounder on a mixture of grass and sand, particularly on the edges of bars or in potholes. There should be good action in the coastal gulf with false albacore (little tunny), Spanish and king mackerel, blues, tripletail or cobia. Look for Spanish mackerel, blues or false albacore feeding on the surface to find them. Diving terns or terns hovering just above the surface of the water and moving fast will give their presence away if they aren’t on top. CAL jigs with shad tails and jerk worms and top water plugs will work well. Fly anglers should score with small white flies, Ultra Hair Clousers, poppers or Crease flies. Look f o r tripletail around

Southwest SouthwestFlorida Coast crab trap floats and cast DOA Shrimp, CAL jigs with shad tails or DOA TerrorEyz to them. Cobia may also be found around crab trap floats, swimming on the surface or over structure. They will require medium-heavy spinning tackle or at least a 9-weight fly rod. Larger baits like DOA Baitbusters, CAL jigs with 5½” jerk worms or the DOA SnakeKoil should work well for cobia on spinning tackle. Fly anglers should score with wide profile baitfish patterns. This a great month for fishing the flats or the coastal gulf. Since the action in the coastal gulf is seasonal and will end when it gets cooler, I like to fish there when conditions allow it. However, if that’s not for you or if conditions won’t allow it, there will be plenty of action for a variety of fish on shallow and deep grass flats of Sarasota Bay. Our natural resources are under constant pressure from red tides fueled by agricultural, industrial and residential runoff, toxic spills and discharges, freezes, increasing fishing pressure and habitat loss and degradation, please limit your kill, don’t kill your limit!

Mainly the shad, which have begun to spawn in different areas of the lake. This has caused a feeding frenzy of bass schooling up in large numbers. We’re averaging catching 2030 bass on just our 4 hour trips and as always, when bass are feeding heavily on shad, the topwater bite is on also.

The main area’s that this has been going on are shell beds and solid hydrilla and kissimmee grass lines. The shad like to spawn on hard edges and that means even boat ramps. The solid concrete edge of a boat ramp provides excellent space for the shad to spawn. One ramp in particular, Big Toho Marina, is holding large schools of shad with bass chasing them right inside the marina walls. You don’t need to go far to catch them right now. Out in the lake the most consistent areas you can get bit in right now are on the few shell beds the lake has to offer. Bass have been chasing shad nearly everyday in these areas. The other areas have been solid edges of hydrilla and kissimmee grass lines. These have been harder to find because
there’s so many of them and not all are holding fish. But when you locate one that’s active, you can really find something special. The best way to find these areas is just to keep moving. It usually doesn’t take long for the bait and bass in the area to show themselves if they’re there. After fishing 20mins if you haven’t seen any bait or bass chasing them, just move. Early the topwater bite has been on. Spook style baits, whopper ploppers, and frogs have all been working. I just recently wrote a blog about The 5 best topwater lures for catching bass in Florida if you would like to check it out. This is one of the best times of year for topwater. But after the morning flurry is over. Flukes, jerkbaits, speedworms, and spinnerbaits have all been producing. And when the morning shad spawn ends late morning
with Captain Dean Panos Great Start to Sailfish Season Sailfish season is here, and we have had a great start. We are seeing sailfish daily and are catching anywhere from 1 to 6 sailfish per day. That is pretty good for it only being beginning of November. Our season is typically November through April. Last year was a good year for sailfish but the years prior to that (say 2 – 4 years ago) the sailfishing was subpar. With the great start that we have gotten so far this year, I am anticipating this year to be a very good year. We have also not had a lot of current lately but are still catching sailfish, so when the current shows up, the fishing will only get better. We haven’t seen a lot of multiples (catching more than one sailfish at a time) which indicates that the bigger packs of sailfish are not yet here and when they do show up it will be even better. Everything is pointing to a banner season. Along with sailfish, there have been quite a few mahi- mahi showing up on the edge and on the reef. For a week or so, you had the mahis chasing ballyhoo in the shallow reefs which are typically 20 to 60 feet in depth. We are accustomed to seeing mahis out in the deep Gulfstream, so to see them in this shallow is quite interesting. When the mahis are
chasing ballyhoo, just like sailfish, they are very finicky to eat anything else, so if you don’t have live ballyhoo with you, it will take the perfect cast and perfect twitch of the rod tip to get the mahi to bite. We have also had the mahis eating the kite baits while we are sailfishing. There have also been some swordfish around. Last week I had my longtime customer Justin, charter us to get him a daytime swordfish without an electric reel. We have done this in the past quite a few times, so we had a good shot of getting this done. Once we reached the sword grounds we were greeted by a very difficult current. Instead of the current flowing south to north, we must have had some weird eddy, and we were literally pushing from SE to NW. Despite the weird current we deployed a 50 Penn reel loaded with 50-pound braid and rigged with a sacrificial piece of steel that falls off once the bait hits bottom. We have a 4-pound lead attached to keep the bait down. We also have the Hooker/Penn electric reels with the detachable drive, so when you get a bite, you can pull of the electric motor and simply use the Penn reel as a typical c o nve nt i o n a l reel. Central Florida to mid day. Flipping the thicker grass back inside where the shad were spawning earlier has been catching fish when nothing else will. Of course as always the biggest bass and the bulk of the numbers we’re catching on our guide trips lately have all been off of large golden shiners. But this can be a particularly fun time of year for artificials with the early topwater bite added in. The fishing on Lake Toho has remained excellent all year and if you’re looking to bass fish Florida’s lake Toho in the fall or in the winter, I would definitely recommend booking now while you still can.

Southeast Coast we finally got a bite on the bouy rod with the Hooker detachable drive. We took the electric drive off and Justin went to work. After close to an hour Justin got his swordfish to the surface and since the fish was on the smaller side, Justin decided to release it. After some pictures and a quick tow to revive the swordfish, the fish swam away healthy and headed back to the bottom. Quite an accomplishment for Justin and that’s what makes our job rewarding. It has been a very slow fall season booking wise but thankfully we are starting to see an increase in bookings. We have holidays coming up for this Thanksgiving week we still have a few openings. The week between Christmas and New Year’s is almost entirely booked with only a few days open. If you are coming to town or have relatives and friends coming, please give us a call as these days will be booked soon. It’s also not too early for Christmas gift ideas and we offer gift certificates for half day, full day or ¾ day trips on the Double D. There may not be a better gift than a fishing trip for that someone special in your life.

BOAT AMERICA CLASSES – CLEARWATER, FLORIDA COAST GUARD AUXILIARY - 2023 - The Coast Guard urges recreational boaters, paddlers, anglers, and others to remain safe on the water by taking a Safe Boating Course. A safe boating class can teach about local boating, the value of wearing a life jacket, and several other life-saving lessons. A boating safety course will teach the basic skills to operate a vessel safely. It includes the diverse types of boats, their capabilities, and how to choose the right boat for a particular maritime activity. Class members will also learn about various safety equipment and how to use them to avoid accidents. Before heading out onto the open water, it’s crucial to know how to read the weather since Florida is known for its sudden changes from lovely calm seas and winds to thunderstorms, torrential rains, and waterspouts. In the boating safety class, students learn methods for staying safe in any condition, including heavy winds, fog, and severe storms. Boating can be an excellent way to enjoy the outdoors and spend time with family and friends. But it’s essential to be aware of the potential dangers. A class will help the boater avoid being a statistic. It teaches how to handle a boat safely and what to do in an emergency. Finally, taking a boating safety course is a wonderful way to learn the rules and regulations, especially those unique to Florida. Novice and experienced boaters or even non-boaters can benefit from a safe boating course – as an initial learning experience or as a refresher. Regardless of experience level, taking a class is always a good idea. To continue offering these classes safely for the students and instructors, they are being offered on Zoom with the same instructors the student would have had in the classroom and allowing lots of questions and answers. Because the classes are on the Internet, there’s no commuting to a classroom – the students can be anywhere in Florida! Classes are $50 per student and include books, supplemental materials, and course completion certificates. The next classes begin in January and continue monthly. Regarding the above law, which has been in effect for over a year, Flotilla 82 of the USCG Auxiliary, based in Sarasota, Florida (at Mote Marine) offers a 1-day course held on the last Saturday of each month. It starts at 9:00 am and completes at 5:00 pm. The course includes the USCG exam which, if passed, results in a Florida lifetime boating card/license. Leading up to the boat launch, a kid’s party will take place from 4 to 6 p.m. at Shaggy’s Pensacola Beach. Directly following the boat parade, Santa will make his way to the Quietwater Shell to greet the children.
