School Inspections: What do they really mean? Andrew Thomas B.Ed (Hons) M.Phil NPQH Principal Al Ain English Speaking School

never thought I would return to my beloved countryfied county of Devon, to witness things by children that would make your hair curl if I wrote them here….. In fact, you wouldn’t believe it!

I have been at the chalk face of being inspected for over 20 years now, and have come to learn that school inspections always cause so much division, contention and debate, but I want to share with you how they work, & what they measure.

Moving forward to 2010, we had made major changes to the school with policy, procedures and most importantly of all, recruitment of good staff. Principals in the UK and here in the UAE, are asked to prepare a SEF (School Evaluation Form), prior to the inspection, and this is given to the inspectors well in advance of the ‘main event’. The term ‘Form’ is an understatement, as it is usually over 120 pages long! Now, here is the deal: Principals have to present their school on this paper work in the best light as they can, pointing to hard evidence, whilst inspectors will use it primarily to make a judgement before the inspection is conducted and will go hunting during the inspection, to ensure the evidence supports the statements made. At the end of the ‘Form,’ the Principal has to grade themselves against the criteria of the framework: get it wrong against what the inspectors judge during the inspection and the Principal and management are judged as weak, or poor. Does a Principal really want to say that their school is weak, just to get a mention in the report that the management is strong, for getting this judgement correct?

Ten years ago, I was an Assistant Principal, in one of the largest schools in Europe, let alone the UK, that gained Ofsted’s prestigious ‘Outstanding’ inspection grade. Eleven years prior to this time, I had joined this same school as a junior teacher that was in the bottom 5% of all schools in the UK. I remember being offered the position and pausing; but it was my professor from university, Gareth Stratton, who gave me some very kind words about how schools like this needed youngsters like myself, to make changes. Those words are as fresh to me today as they were then, and ones I remind myself of how I can now drive success and change in my own school when recruiting newly qualified teachers: looking to build capacity for the future. The school was in ‘Special Measures,’ the worst grade possible; in fact it was worse than this, as we were served ‘Notice to Improve’. This meant that the inspectorate had given the school a small amount of time to change things for the better, or the government would close the school, but were the inspectors correct in their judgement? Oh yes! I had trained in some very challenging schools in inner-city Liverpool (which I loved), but The Source

The SEF had been written, and we had judged ourselves as ‘Good’. This was the second of four results possible, ‘Outstanding’ being the 10


best, with ‘Requires Improvement’ & ‘Inadequate’ (The latter has two sub-categories, ‘Serious Weakness’ & then ‘Special Measures’). I remember the Senior Team sat in the boardroom with the inspectors on that Friday at about 1700hr, when the lead inspector said, ‘We have judged this school to be Outstanding!’ The hairs on my neck still raise just recalling this moment, as we never expected this. How did we achieve this? We were saying ‘Good,’ and we were solid about this. No inflation, no modesty, just honesty. Well, according to the inspector, the teaching that was observed over the 2 days was mostly ‘Outstanding,’ despite our floor targets of the GCSE and A Level results being far from those set by the government! This latter point was a key component of the UK inspections. Hold this thought, whilst I forward wind 4 years later to the next inspection!

I would estimate that a ‘Good’ grade here would easily translate to an ‘Outstanding’ in the UK due to the floor targets and standards that the UAE demands. We shouldn’t apologise for that and as parents we should encourage the standards here in the UAE; albeit, as a Principal it makes our job a bit harder! Inspections have taken place across the UAE recently on Distance Learning, and I can for one tell you that they have been very thorough and very demanding. There is no hiding for a school in inspection, whether it be virtual or physical. Inspectors are in the main, ex-Principals, and senior leaders that know the tricks, know the deal; and know where schools shine and hide. Indeed, a good school leader will tell you that an inspection should simply be a by-product of what we do everyday, where I tell my own staff that you should teach every lesson as if the parents of the children you teach are also in the room; for sure, this is what Distance Learning has allowed!

It was another Friday at approximately 1500hr. The inspection was coming to an end. The lead inspector was walking up the stairs to that same boardroom, with the senior team in tow, when he said to us all, ‘We feel this is a Good school’. Ok, we were going to lose the Outstanding badge, which was fair and was in our SEF judgement too, but within 10 minutes after this statement was made, something extraordinary happened.

Celebrate your school’s result. Support them where they can make improvements, but know that there is blood, sweat and tears poured into your school by the management to make it the best they can every day, and not just for an inspection. Pride, honour and respect is the bare minimum at stake as important young lives and their futures are placed in our hands.

A car pulled up and out jumped the moderating inspector. The moderating inspector can show up from time to time, here and in the UK, but they are there to see fair play and oversee the conduct of the inspection team.

I remember her entering the boardroom with her leopard print kitten heels, slamming down the school’s GCSE and A level results document (PANDA on the desk), and saying, ‘This says you are a school that should be ‘Requires to Improve,’ and as such, that’s your grade.” And that was it! Four years ago our data wasn’t an issue, and now it was!

Are inspection grades decided in an office? This was something that I became cynical about in the UK, having been at both sides of the coin.

Al Ain English School has recently been inspected for Distance Learning and has been graded with the top grade of “Developed” by ADEK.

Here in the UAE, I have predicted our grades to the Chairman in advance of each of our inspections, and with my own fair reflection and SEF, we have seen those grades translated into the reports. What I will say is this: the framework here in the UAE is 11

The campaign, which started on 9 May, provided streamlined healthcare and support services to residents as part of the National Screening Programme, which aims to provide Covid-19 testing for the largest

possible number of Abu Dhabi residents. Over the six-week period, free transportation to testing centres and medical assessments were provided for 570,000 residents. Screening took place across 2,730 buildings. Additional preventative and precautionary health measures were provided to protect residents’ health and safety, including the provision of 750,00 face masks and multi-lingual education and awareness programmes to 570,000 people. The sessions, which outlined social distancing guidelines, and the use of personal protection equipment (face masks and gloves), resulted in a high rate of adoption of preventative measures. As an additional gesture of support, one million free meals were provided. Volunteers and frontline workers from across the community dedicated their time and effort to support the campaign, which was widely welcomed by residents.

The fact that the Coronavirus (COVID-19) pandemic has dominated people’s online search queries and behaviours globally in the past six months is clearly indicative of the fact that life during this pandemic has, among other things, been one full of questions.

In essence, this crisis has necessitated local media to function as a public-health educator. They have educated the public about the impact of COVID-19 on daily life, trade, travel and financial markets, keeping the nation abreast of every official announcement and every public initiative by government authorities designed to slow the spread of the disease.

In the UAE and beyond, billions are relying on news and media, and turning to the internet to look for answers, allay their concerns, keep themselves entertained, and perform as many life functions as possible within the restrictions that have been announced by governments to ensure we are not putting ourselves or our loved ones in any risk.

As we hail our countless everyday heroes across sectors for ensuring that we have continued access to the complex network of enablers to continue life and work, has it ever occurred that every single individual in our nation, in our own unique way, on the frontline of this crisis? By not overlooking or undermining our duties and responsibilities attached to the partial freedom of movement and social life restored after a long and hardfought battle with COVID-19, we are all contributing to winning over this pandemic.

A silver lining to all this turbulence is our willingness and capacity to work cohesively to find a permanent solution to this first-of-its-kind global health crisis. Today, thanks to our epidemiologists, doctors and scientists, we understand the virus better and are better equipped to resume – to some extent if not entirely – life’s essential functions. After a period of complete physical distancing by staying home as necessitated by the comprehensive National Disinfection Programme undertaken by the UAE government, we are gradually starting to show up to work in smaller numbers, engaging in a few hours of exercise outdoors, taking our children for a recreational outing, and so on.

How do we make sure that we are all on the same page in fighting Coronavirus? By being aware and informed, by being steadfast in our efforts, and by doing our best to support our wise leadership to achieve success in all their endeavours directed towards completely eradicating this virus and bring the nation back to health. In all this, the media will remain strongly committed to educating and empowering you, every step of the way.

The media’s role through the course of the outbreak has been paramount. In Sharjah and the UAE, the sector has been working around the clock to assemble and disseminate critical information from healthcare authorities on ways to avoid the spread of the infection, distilling complex data into easily digestible and useful information.

Mauritius Tourism Promotion Authority revealed precautionary measures to resume tourism After the COVID19 Scenario, things are going back to normalcy in the beautiful island of Mauritius, as the health authorities and the government succeeded to overcome the pandemic and beating the virus. And to further keep Mauritius’ guests safe as well as the public, Mauritius Tourism Promotion Authority (MTPA) revealed precautionary measures to ensure the health and safety of the visitors and workers in the tourism sector.

For restaurants’ dining area, tables are set to ensure the social distancing between the guests, buffet service is serviced by hotel/restaurant employees wearing protective equipment. Digital menus will be used more often, while the level of hygiene is increased to a high level of standards. The same protocol of cleanliness and hygiene is applicable in the kitchen and among the staff.

The measures taken for the tourism enterprises and activities are shortened in the basic principles of maintaining cleanliness at all times, increased levels of hygiene for the workers and visitors, maintain social distancing and wearing face masks where applicable.

Tourist Guides are required to brief to clients on sanitary protocols to be observed during the visit, wearing of masks by the guide and participants during the visit, Physical distancing to be maintained between the tourist guide and each participant.

Whilst using transportation, vehicles are sanitized after each of the passenger’s use, the driver is wearing a protective mask and the number of passengers is limited to maintain the social distancing.

All open areas and other activities, including nautical activities, are following the same above guidelines to ensure o ensure that tourists enjoy everything around and leave the worries behind, as Mauritius is coming back, in a healthier, safer, and better way.

ABU DHABI ENGAGES PARENTS TO PLAN SAFE SCHOOL RETURN FOR CHILDREN issued by the government, ADEK will ensure Abu Dhabi parents have their say on specific variables via a comprehensive and anonymous survey run in collaboration with schools.

A Comprehensive survey from Abu Dhabi Department of Education and Knowledge (ADEK) will anonymously gauge back-to-school opinions following the UAE Ministry of Education’s announcement on the potential reopening of schools for the new academic year.

“ADEK is fully aligned with the Ministry of Education on the potential reopening of schools in September and we look forward to welcoming back our community of students, teachers, staff and parents. At the same time, we are conscious of the ongoing impact the last few months have had on families, so we want to hear parental feedback and concerns about sending their children back to school as their opinion matters very much. We are launching this survey to aggregate insights, which will shape the different schools’ return to classroom operations as we continue navigating the new normal together,” explained HE Sara Musallam, ADEK Chairperson.

Parents and students will play a major role alongside the Abu Dhabi Department of Education and Knowledge (ADEK) in shaping a safe return to in-class education following the UAE Ministry of Education (MoE) announcement that a plan is in place to assess the potential reopening of schools for the new academic year. With regulators in each emirate responsible for working with education institutions to chart back-to-school policies for faculty, students and parents in adherence to safety guidelines

support their school has offered in recent times.

“I know how hard schools and parents have been working to enable students to learn at home, and they all deserve tremendous appreciation for their efforts. However, nothing can replace a classroom setting and, as we prepare for the new academic year, we have a duty of care to ensure the health and safety of our students and staff. If after schools reopen, some parents still feel unsafe about sending their children back to school, they will always have the option of distance learning. I would urge parents to get involved in that process by completing the survey to ensure every student in Abu Dhabi has the safest and best possible return to class”, she added.

Reopening models may look different for each school based on their situation, while the provision of continued distance learning will cater for parents who prefer this model due to personal situations. Each school will receive reopening guidelines for safe operations, teaching and learning and staff and student wellbeing. The guidelines have been developed according to leading global practices for safe reopening of schools and with input from extensive consultations with stakeholders. To date, ADEK has conducted extensive stakeholder meetings on the subject with school principals, parents and teachers.

The survey covers a range of topics, from the number of children per household and how they usually travel to and from school, to preferences on school reopening, duration and format of school day, and whether parents intend to send their children to school. The research will also consider how families were affected by the COVID-19 pandemic and what level of financial

Once highlighted, these blockages provide your starting point for a targeted and individualized change plan that should assist you to build your own post-COVID strategy.

For example, it is not uncommon to hear people say they want to lose weight yet their desire is the true blockage, because they will not continue to exercise or diet. Your Desire may be blocked by the nature of the change, your own motivators or even your own personal situation.

Your ability to apply a change may be blocked by psychological, physical or even intellectual factors. Ask yourself: What is it that is stopping me implement a change?

Ask yourself: If frustrated in your job, what are you prepared to do that will enable you to work well in post-COVID times? Are you focusing on one particular action or could you take multiple actions at once? If you are worried that your name could be on the termination or redundancy list, do you have strong and unbridled desire to do whatever it will take for them to see the value in keeping you in the team? IF you do receive a redundancy what are you prepared to do to ensure the impact is as positive as possible?

Reinforcement When behavior is changed, it will often feel very uncomfortable or unnatural; new behavior can often be tempted to go back to the old way of doing things. Reinforcement encourages the sustained use of new approaches, until you have almost been reprogrammed. I have often witnessed workplaces changing a process and after six months of the new way of work, the people are unable to even recall how a task previously was achieved. However, in the early stages, there’s often a need to reinforce the new behavior before old habits creep back in.

The first two phases of this diagnostic (Awareness and Desire) answer the question ‘why’ you should engage with change. The next two (Knowledge and Ability) concentrate on the ‘how to’ change. Any blockage at the above level must be cleared before you can have possibility of change with the next two levels.

Let’s take an example relevant to our times. It is possible that converting to virtual meetings may have presented challenges to you. You have spent the last week attempting to get more organized so you do not turn up late, or attend in a disorganized fashion. After a week of successful online meetings, perhaps you give yourself an hour off as a reward for the success.

Knowledge Knowledge is the phase of change that provides the facts and figures, information and techniques, references and formulae that become a source of substance and understanding for you to evolve your capabilities.

Change is a process and works step by step. Be kind to yourself, and never forget that any change we create and customize will always be easier than enforced and mandated change. Yet there will always be a level of change that might catch us by surprise, such as COVID. It’s how your respond and not react that will make all the difference. Identify blockages, remain open to what those blockages are communicating to you and work with them in order to build a better future for all.

The skill of baking needs an understanding of foodstuffs, the skill of riding a bike requires information about movement and basic mechanics, the skill of driving needs knowledge of the road rules. Knowledge provides information that allows any skill or action you apply to be efficient or effective. Knowledge levels of the how may be blocked by your ability to learn, the resources available for learning or even your openness of mind. Ask yourself: What do I need to know about COVID’s impact to fully understand the future of my work? With information about new jobs and ways of work, how can I apply it to my gain for a brighter career future?

Most Companies would have started their year with an exciting business plan and stretch targets/ objectives geared to how 2020 was meant to go. The UAE had been working tirelessly to build the infrastructure required for the highly anticipated event of the decade, Expo 2020. Business in the UAE was planned to be booming with much needed growth. However, when a global pandemic is announced, any business plan would have been placed in a drawer as businesses had to immediately react to lockdown, remote working and often placing the business into survival mode. As the world starts to emerge from lockdown and Companies start opening their doors again to their Employees and customers, a mistake that managers could make is to assume the business plan and objectives they had set are still relevant and to try and carry on as business as usual, forgetting they have pivoted, that this way of life is the new normal and we have to learn to live and work with the restrictions that are here for many months to come.

With this in mind, now is the perfect time to regroup your senior management team and get focused on some creative strategic thinking underway. We have found that CEOs or MDs who sit down weekly, for a couple of hours, with their key 5 to 7 senior executives and look beyond the current year creates a very positive mindset amongst themselves and the rest of the company as the vision filters throughout the organisation. Note the word attempt as you will not always be successful in your endeavours to influence (lead) others. As the only way that you can influence any one is through your behaviours, it is those that must be developed to be able to become a more effective influencer or leader.

The second key element in your execution plan should be to ensure that you are measuring the correct business indicators to build confidence that the plan is working and also to drive accountability through the organisation with celebrations and consequences depending on the state of each indicator. Ideally these indicators should be a mixture of forward looking, predictive numbers and historical results.

This becomes even more critical when we are leading remote teams where a high percentage of face to face interaction is lost through the computer screen, so being a master of using your influence behaviours will serve you very well in these challenging times. We have witnessed, on many occasions, that those leaders that work at becoming more effective in the use of their influencing behaviours are not only more rounded and effective leaders, their team also follow the shadow of the leader and become more able to deal with the new way of working with such conditions that we find ourselves in right now.

The final element to an effective execution plan is having a robust and motivating internal communication strategy in place to drive faster and more effective decision making throughout the organisation. The pandemic has driven us all to look at how we communicate and when we should do it. Some have reported that communication has increased during lockdown, that may be true, my question is always why that is and how effective is it?

Finally, you may have a great strategic plan developed through your senior executive team, you may also have a company full of rock star A-Players but if you haven’t got a solid execution roadmap to deliver your plan, all that great work will be to no avail as worse results and missed targets just drive moral and performance down the doom cycle.

Quite often the answer has been “Well, I need to keep an eye on them as they’re working from home!”

To prevent that happening, we have found that companies that have a very clear execution plan in place, that is regularly measured, reviewed and altered when necessary consistently outperform other similar companies.

Having a transparent, repeatable meeting rhythm in place has been proven time and time again to be the most effective way of keeping everyone informed and building trust, something that is key when your team members are remotely working.

To achieve this, there are three components that need to be in place. The first is to ensure that the whole organisation is focused on no more than 3 to 5 key priorities at any one time, this avoids the bright shiny object tendency of some leaders and ensures that the whole of the company’s resources is pulling in the same direction. The team developed a mathematical model that could offer a template for policy-makers looking for the best approach to evaluate the human and economic costs of measures to contain the pandemic. Health officials in the UAE announced the lifting of night-time movement restrictions in the country. Dr Saif Al Dhaheri, spokesman for the National Emergency Crisis and Disaster Management Authority, said the easing applied to all residents. Dr Al Dhaheri announced the national disinfection programme was complete but said public buildings would be regularly sanitised. Authorities also lifted the ban, in all seven emirates, on children under the age of 12 visiting shopping malls. News of the easing came as officials recorded 450 new cases of coronavirus in the previous 24 hours. Officials also revealed the details of a testing scheme under way across Abu Dhabi, with police and medics joining forces to provide free screenings. “One of the most important lessons we learnt is that compliance and co-operation are the best methods for positive results,” government spokeswoman Dr Amna Al Shamsi said. On Wednesday, health experts said infections in the UAE had reached 46,133 and that another 702 patients had recovered from the virus since Tuesday, while two died. So far, 34,405 UAE residents have recovered from the disease, or about 74 per cent of those infected. About 11,400 cases are still active and more than three million people across the UAE have been tested. Globally, more than 9.4 million cases of Covid-19 have been recorded, with 482,000 deaths.

Instagram expands shopping to help more creators sell on the platform Instagram announced new Commerce Eligibility Requirements that expands access to Instagram Shopping to more types of businesses, including creators that want to connect with shoppers and sell their merchandise on Instagram.

When eligible creators and businesses sign up for Instagram Shopping, they will be notified as soon as they are approved and ready to start tagging products. Upon disapprovals, a clear reason will be offered so they can take the necessary action or appeal.

Whether you are a musician selling merchandise or a food blogger expanding into your own cookware line, any eligible creator account with at least one eligible product can use Instagram’s shopping tags to drive people to their website to make a purchase.

June 21, the summer solstice day, is the longest day in the year and also World Giraffe Day, chosen in celebration of the tallest mammals on land. Many giraffe species face extinction: the most famous is the Rothschild subspecies, which is considered as near threatened. It was included in the IUCN Red List, as it is exposed to the risk of extinction as a result of overfishing, human hunting activity, and shrinking natural habitats. Al Ain Zoo currently hosts 16 Rothschild giraffes: the oldest is 25 years old. The zoo endeavors to provide an appropriate environment that is close to the giraffes’ natural habitat and to supply all care according to international standards. Al Ain Zoo launches a breeding program for 80 African dama gazelle as part of its 2028 strategy As part of its efforts to protect the African dama gazelle—listed in the IUCN Red as critically endangered—Al Ain Zoo is managing a controlled breeding program for the two subspecies of the dama gazelle, addra and mhorr gazelles. The total number of the dama exceeds 80 gazelles in its collection. The dama gazelle is facing a high risk of extinction as the number of dama in the wild is around 100 individuals. Al Ain Zoo is the only zoo around the world that holds the two subspecies of the dama gazelle, addra and mhorr. This has prioritized Al Al Zoo conservation efforts of the dama gazelle. Through a collaboration with specialists and range state from Africa, Al Ain Zoo successfully contributed to developing the Dama Gazelle Conservation Strategy, 2019–2028.

This new strategy focuses on updating the most important information related to dama gazelles in terms of their numbers and locations in the wild and emphasizes the actions and procedures to be followed to reduce the chances of extinction. The Strategy also is examining opportunities for releasing the dama back to the wild and reviewing the potential sites for reintroduction programs. The strategy also presents the results of the genetic studies and potential genetic challenges for inter-breeding gazelle in the wild and captive animals. The program also studies the training and specialized technical courses needed by all concerned in the field of research, translocation, and sample collection. The dama gazelle has disappeared from more than 99% of its former range due to uncontrolled hunting habitat loss and overgrazing. As a result of this significant decline, the global efforts by concerned authorities and institutions have come together to save the dama gazelle from extinction.

Al Ain Zoo celebrates International Flamingo Day

Chilean and young flamingos are classified as “near threatened” according to the IUCN Red List, as a result of the decline of their natural habitats due to human activities. Flamingos at Al Ain Zoo have great importance in terms of care and preservation, and the zoo plays a vital role in protecting this bird by coordinating with conservation partners in the UAE. In 2014, 20 flamingos were brought from the Emirate of Dubai, where the birds are found on beaches and in reserves.

In celebration of one of its main animal groups, the Al Ain Zoo participates in International Flamingo Day on the 23rd of June of every year. The flamingo is one of the animals that has lived in the Al Ain Zoo since its establishment in 1968. The current colony began with a small group that increased to include 89 birds of three types: Chilean Flamingo, Greater and Lesser Flamingo.

Flamingos are among the birds most frequently found around the world on open beaches, bodies of water, in mangroves, and sometimes among inland wet areas, and they spend their time in coastal and inland lagoons, migrating and settling during different parts of the year. They are most famously found in South America, including in Argentina, Bolivia, Brazil, Chile, Paraguay, Peru, Uruguay, and some are also found in Africa and parts of Asia, including the middle east.

Al Ain Zoo has three lakes for flamingos, and visitors will find the birds around the zoo, distributed according to their types. The flamingos are easy to spot due to their unique shape and color, which make them one of the most beautiful birds in the world.

Al Ain Zoo has an animal health center that includes a veterinary clinic and other related support services, all of which constitute an advanced diagnostic and treatment system for providing veterinary care to more than 4,000 animals. It is distributed among 172 species of birds and wild animals.

It also includes a center for veterinary examinations and specialized research, which is the only one of its kind specializing in wildlife in the United Arab Emirates, and conducts periodic examinations of all the different animals in the Zoo in terms of biochemistry and, microbiology post-mortem, molecular biology.

The veterinary team follows a different approach to rescue endangered animals as it is monitored regularly to prevent health complications instead of treating them only in the event when occur. “The integrated veterinary system owned by the Zoo saved a lot of time and effort by facilitating the steps of examining and treating animals according to the “best practices over the world in wild animal’s field said Dr. Arshad Haroon Toosy, Manager Veterinary Services at the Al Ain Zoo.

In addition , There is another section in the clinic called Animal Health center which provide a proper health supportive , medical care for a serious cases which needs more observation for a while There are also a number of nurseries to care for newborn animals that are born prematurely or their condition calls for placing them under observation. It provides a high stander nutrition program for sick animals with specific veterinary standards. Veterinarians take a responsibility not only in health care of animals living in a Zoo, but also with arrangement for exchanging of animals between Zoos.

He added: “With the presence of an integrated veterinary team of veterinary doctors and technicians specializing in the fields of wildlife care as well as comprehensive services, they have created greater guarantees for the accuracy of treatment, as tests and analyzes are conducted in the garden, facilitating monitoring and matching results to the presence of the laboratory and the sick animal in one place.”

Al Ain Zoo provides five star services for wild animals by providing varied food, a suitable place in addition to the comprehensive health care provided by competent doctors and specialists in the field of animal care. It also works in partnerships with some of the world’s leading environmental conservation groups, with the aim of conserving endangered wild species and resettling them in their natural habitats.

The veterinary clinic in the Zoo includes a mobile x-ray, imaging machine, hand base machine for the teeth, an ultrasound endoscopy, a pharmacy and drug stores, and special equipment for inhalation anesthetic, including weapons that differ in animal and bird type, and predators such as black and light in motion such as deer need special equipment for anesthesia. Sweet Potato Wedges INGREDIENTS:

INSTRUCTIONS:

for 3 servings

Preheat (200°C).

Thoroughly wash sweet potatoes. Slice in half, then into wedges.

Toss wedges in olive oil and seasonings.

Place on a baking sheet, skin side down.

Bake 30-40 minutes.

3 medium sweet potatoes

⅓ cup olive oil (80 mL)

1 teaspoon salt

½ teaspoon pepper

2 tablespoons fresh rosemary, finely chopped

Vanilla Cupcakes

INGREDIENTS:

INSTRUCTIONS:

120g butter, softened

120g caster sugar

1 egg

1 tsp vanilla extract

120g self-raising flour

140g butter, softened

275g icing sugar

1-2 tbsp milk

A few drops of food colouring(optional)

Heat oven to 180C/160C fan/gas 4 and line a 12-hole muffin tin with paper cases. Cream the butter and sugar together in a bowl until pale. Beat the eggs in a separate bowl and mix into the butter mixture along with the vanilla extract. Fold in the flour, adding a little milk until the mixture is of a dropping consistency. Spoon the mixture into the paper cases until they are three quarters full. Bake in the oven for 10-15 minutes, or until golden-brown on top and a skewer inserted into one of the cakes comes out clean. Set aside to cool for 5-10 minutes. Then place on a wire rack. For the buttercream icing, beat the butter until soft. Add half the icing sugar and beat until smooth. Add the remaining icing sugar with 1 tbsp milk, adding more milk if necessary, until the mixture is smooth and creamy. Add food colouring (optional) and mix well. Spoon the buttercream into a piping bag and add a nozzle of your choice. Pipe in a swirl motion and then enjoy!
