Goddard lifflefair
Goddard Littlefair Design ‘The Printing Press Bar & Kitchen’ & ‘Burr & Co’ At The George Hotel, Edinburgh Award-winning hotel and hospitality designers Goddard Littlefair have designed the interiors for the brand new Printing Press Bar & Kitchen at The George Hotel, Edinburgh as well as a new coffee shop, Burr & Co. The scope of works at The George – which additionally includes the ongoing refurbishment of hotel public areas, a complete refurbishment of all guest bedrooms and the creation of new bedroom suites, due for completion in January 2016 – follows the acquisition of The George Hotel by private investment group Starwood Capital. This project is one of four that Goddard Littlefair is involved with for Starwood Capital, forming part of
its portfolio of city-centre hotels to be re-launched as a new UK hotel brand in Spring 2016.
spaces plus bedrooms at The Royal, York and works to The Roxburgh, Edinburgh.
‘The creation of destination bars and restaurants is a central part of our plan to breathe new life into iconic hotels across a number of great cities’ David Taylor, COO of the new company, explained. ‘All the hotels, the restaurants and bars will have their own design and reflect the local character of the cities in which they sit.’
Design Story – The Printing Press Bar & Kitchen and Burr & Co:
The other hotels Goddard Littlefair are working on for the Group include The Grand Central Hotel, Glasgow, covering the lobby, bedrooms, F&B offer, conference and banqueting areas; the public and conferencing
The Printing Press Bar & Kitchen is a 92-cover, 186 sq m restaurant and a 116-cover, 207 sq m bar, which flow into and adjoin one other in order to maximise footfall throughout a three-meal service day, with the bar area open throughout. The restaurant concept has been masterminded by chef-restaurateur Des McDonald and includes the appointment of new head chef Colin Fleming,

previously of the Old Court Hotel in St Andrews and Restaurant Martin Wishart in Edinburgh. The restaurant has a grill-brasserie feel with an authentic Scottish direction and includes dishes such as Perthshire wood pigeon with heritage beetroot and hazelnut crowdie; mince and tatties, and marmalade steamed pudding with Drambuie custard. ‘This is very much a fully-flexible, thoroughly thoughtout F&B retail offer’ commented Martin Goddard, Director of Goddard Littlefair, ‘which is aimed at residents of and visitors to the city of Edinburgh as well as at hotel guests, with maximum flow and adaptability throughout the day, so that bar guests can eat from the bar or restaurant menu for example,
whilst Burr & Co offers soups and salads to attract lunchtime custom from passing trade and local office and shop workers.’ The overall footplate for the new restaurant and bar was as per the existing hospitality space in the hotel, whilst Burr & Co inhabits space formerly used for meetings, with a new timber shopfront fascia, recreating one of the original Victorian-era shopfronts and designed by architects 3D Reid, with branding by Plus Agency. The hotel itself is formed of a series of five townhouses and is listed, which meant treading very carefully around existing surfaces and treatments.

‘Our overall approach was to be highly respectful to the building’s original fabric’, explained Martin Goddard, ‘as well as to the late Victorian insertions, ensuring a feeling of restored grandeur and creating an environment that instantly feels long-established, with a real sense of the building’s naturally imposing proportions adhered to, but also added to via simple detailing and the highest-quality, authentic materials, including oak, brass, ceramics, leather, velvet, glass and marble. As in all our projects, every single item of furniture and lighting is completely bespoke and designed entirely for this particular environment, positioning and clientele by Goddard Littlefair.’

Part of the return to the building’s optimum functionality is that the kitchen once again serves the dining room directly, rather than being separated from it as it had been in recent times. Guests enter either directly from the hotel or from the street’s listed revolving door entrance, with the entirety of the front-to-back space of the Georgian terrace given over to the bar and restaurant, added to by picturesque views of Edinburgh’s old alleyways to the rear. To improve flow, the bar counter has been moved from its former location at the front of the space, where it tended to block and impede restaurant access at peak times, to a raised level to one side, with the restaurant served by a dedicated dispense bar.
Goddard lifflefair
Listed or high-quality original features that have been retained include the ceiling and walls, where a special antique finish was used to restore the decorative plasterwork friezes. Flooring throughout is new and includes herringbone dark-stained oak sections and chequerboard tiling in black nero marquina and white carrrara marble. All joinery is bespoke and in oak, including the bar, which also has black metal and brass gantries with inset light to set off the displays of glass and spirits. The new bar top is in carrara marble.

Seating in the restaurant and bar is a mix of bespokedesigned aged dark tan leather chairs with brass stud detailing and banquettes with smoky blue velvet backs and blue leather seats. Tables are in dark-stained oak. Tall, ribbed glass screens with inset LED lighting break up the space and create a feeling of semi-privacy. Chalk boards for specialities of the day are inset into the screens, whilst angled mirrors above the banquettes allow for discreet people-watching.

Accessories in the space refer to Edinburgh’s literary heritage and include excerpts from correspondence, set into clustered oval frames; a display of vintage type-writers and Scottish novels, as well as vintage printing press lettering, referring to the building’s very first usage – and the source of the new name – as a printing press. The design treatment for Burr & Co, where every single element is new as this was a converted and un-

listed space, follows a similar colourway, but includes more obviously contemporary elements, including deep blue-green ceramic tiling and a special lighting display of ceramic pendants in varying sizes in the same blue-green colourway. Flooring and wallpanelling is in light oak and the banquette seating is in blue leather. A central feature, directly below the centrepiece lighting, is a wonderful long and bespoke oak refectory bench with seats, which pivot under the bench when not in use.

John Levy Lighting productions inc
John Levy Lighting Productions, Inc. When the Las Vegas Convention and Visitors Bureau wanted assistance in re-branding, it was natural to turn to John Levy Lighting Productions (JLLP) for assistance. JLLP has been an integral part of the ever evolving face of Las Vegas for the past twenty five years. Their innovative and daring designs melding art, architecture and technology have created many of the iconic features of Las Vegas strip, from the continuous changing Sky Feature of the Forum Shops at Cesar’s Palace, the light show at the top of the Stratosphere,
Bally’s Entry Gateway with its choreographed color changing pylons, to the stunning interiors of the Cosmopolitan Hotel. While widely known for this Las Vegas work, John’s creativity has found expression with projects not only throughout the United States and Canada but worldwide. Speaking of his early work, John recalled he was determined to bring the vitality and excitement from the enclosed theater to a much wider audience via architecture - color changing was to be the vehicle to
bring that about. “My initial efforts revolved around capturing natural phenomenon, washing facades with the colors of sunrise or sunset but these were mainly static and lacked the exuberance I wanted”. John refined his ideas working with the creative staff at Disney’s Theme Park division but it was not until his first work in Las Vegas was his talent was given free expression. “Initially, my two challenges were aesthetic and technological. Aesthetically, the architectural profession with its embrace of minimalism decried

the use of color and it was not until Vegas did I find a group or architects who revelled in breaking boundaries and saw the wonder of combining color and music”. The technology challenges were mere difficult we were continually modifying existing theatrical lights or inventing new ways to use them; color changing was even more difficult. For instance, the pylons at Bally’s entry used red, blue, green, neon individually controlled and color mixing was able to create about 250 discernable colors which we then choreographed to original musical scores. The advent of color changing LED lighting opened
up a whole new world of design opportunities for innovative creations, such as the Statosphere Tower, the world’s first major installation of LED lighting. In his role as creative director, John’s work further explored the blending of lighting, music and video for projects such as Harrah’s Masquerade Tower in New Orleans, Casino du Montreal in Canada, the Isle of Capri in Coventry, UK, as well as covering the complete facades of Harrah’s Atlantic City. During this period, produced and directed more than twenty five music, videos, as integral part of the attractions. Additionally, John continued his collaboration with public artist Caryl Christian and their latest work

“Sonic Wall”, a bas-relief lighting performance over 120 meters long and 10 meters high is a true Tour de Force. Born as WWII drew to a close and in Europe’s grim aftermath, John often jokes: “I was born in a black and white world; movies, TV & magazines were all black & white as well as Europe’s buildings, so I wanted to change that. I tried by the use of light in all its forms to not only enhance the architecture but add another layer to engage and entertain the viewer”. After reviewing his more than a thousand projects worldwide, it’s clear John met those goals.

Georgian House Hotel
Georgian House Hotel Launches Eight New Bedrooms Eight brand new rooms are now available to guests of London’s Georgian House Hotel, famously home to four mysterious Wizard Chambers and Enchanted Chambers, as the 60-bedroom boutique hotel unveils £100,000 worth of new bedrooms in the final stage of a three year, hotel-wide interior design refresh. Refurbishment works, completed by hotel owner Serena von der Heyde, include both structural and decorative improvements, with the chosen colour
palette showcasing some of Farrow & Ball’s timeless hues. This latest interior update brings all rooms within the family-owned hotel, built in 1851, to the same elegant and stylish finish as all other bedrooms, suites and apartments. Speaking of the renovations, which she self-funded and planned in collaboration with interior designer Diana Holmes, Serena von der Heyde said: “Our long term plan is to reach 5 star guest accommodation
status, and so this move to improve quality and space is an important part of the journey. The bespoke nature of the rooms reflects our commitment to highly personalised experiences and service. We are making a beautiful and unique place which is in tune with the 1850s heritage, but our design is highly creative. In every room guests will find details that catch the eye, design that inspires, something beautiful. My vision is for a hotel where the experience of staying is an important part of the experience of London.”

“The elegant shapes and intricate patterns of the launch collections are inspired by the rich heritage of British ceramics and ornamental design – the themes of heritage, botanicals and Georgian splendour, alongside a dash of chinoiserie, reflecting themes from the original Chamberlain Works that are as relevant today as they were then… the George III collection is a celebration of Georgian heritage; the Imperial Imari collection, inspired by oriental porcelain, is a nod to Chamberlain as one of the first

The designers endeavoured to infuse the space with a breath of fresh air while still respecting the restaurant’s origins. “Above all, we were inspired by Carlos’ Portuguese roots,” he explains. “We wanted the décor to reflect his homeland by adding slightly yellowish glass panels to the hand-trowelled plaster walls for relief and texture. To this, we fixed black porcelain swallows, a traditional Portuguese symbol of family, loyalty and love that brings good luck.” An open mezzanine, a new private room and the Rosa salon revive the space at the heart of the restaurant. For soon to be 20 years, the Ferreira Café has stood out as a cornerstone of fine Portuguese cuisine, committed to always offering fresh, superior quality products. Founded by Carlos Ferreira, the Peel Street institution successfully promotes the flavours and recipes of his native land in Quebec. The Ferreira Group welcomed Chef João Dias to its culinary team in 2013. Hailing from Portugal, he has reworked the classic recipes on which the restaurant was founded in order to offer an updated version of the restaurant’s fresh and authentic cuisine. Furthermore, Wine Nights,a weekly Tuesday night happening, was launched this summer. Given that the Ferreira Café’s impressive wine list, which includes many private imports and comprises one of Canada’s most select reserve of premium Portuguese wine, is offered at 50% off, it’s no surprise that Tuesday Wine Nights are a great success. Mantaray UK
Mantaray Opens Lindale Showroom The last 30 years has seen a technological revolution and the birth of the digital world. The hospitality industry has benefited greatly from this revolution, from the advent of electronic booking systems, and the integration of streamlined back office systems to the availability of almost instant and anonymous feedback through social media platforms and review groups, those at the forefront of the hospitality sector have embraced the revolution and harnessed its potential. These benefits, however, do come at a cost. In a world where every business has access to marketing experts and online optimisation and where the customer base is becoming more discerning by the day it becomes increasing difficult for business to stand out from the crowd. The other risk of the technological revolution is that of technology fatigue, whilst it is generally accepted technology needs to be incorporated into our daily lives from the design stage up, the risk of customer alienation is very real, we all have different tastes and needs after all, the balance has to right.
Telephone: 0800 177 7490
Mantaray Installations, based in Cumbria, has set out with this balance in mind. Creating stunning handcrafted furniture for the hospitality sector which integrates the latest technologies whilst remembering that these developments should enhance not impose.
Newfoundland Lodges revolutionised the outdoor hospitality sector when they released ‘The Pod’ back in 2004. The pod, now a worldwide success story spawned a whole new category dubbed Glamping and demand shows no sign of slowing a decade later.
Mr Ian Bone, director of Mantaray, is an avid music lover and appreciator of high-fidelity audio says Mantarays first product, the canopy bed came about as a result of personal desire “I wanted something with classical elegance but also a modern design edge” and a sound and lighting system for the same room that was “real and uncompromising, and would envelop the listener in a rich, luxurious field of sound”. “After looking around, I realised there was not only nothing on the market even close to what I wanted, but also no sound and lighting solution that would work well with the vision I had” and so design work began on how to best combine the two.
The light system installed in the Canopy Bed, which connects to any Bluetooth enabled device through the latest apt-x technology, listens to the user’s music in real time and not only faithfully reproduces the sound in great detail but also accompanies it with an appropriate lighting display to enhance the sensory experience, the lighting can range from the subtlest of soothing colours to a vivid and deep display, all carefully controlled by the on-board intelligent processing engine.
Mr Bone, has form when it comes to ground-breaking redesign and altering the status quo. His other venture

The control of the system is simplicity itself and of course, and it can be switched off leaving the music in splendid isolation or simply disconnect altogether and enjoy the bed for what it is, a stunning piece of modern design brought to life by master craftsmen.

Keeping your mattresses pristine Fully encasing your mattresses is becoming an ever more popular choice in multiple occupancy environments like hotels and guest houses, as more and more managers switch on to the multiple benefits. The luxury mattress encasements from Cimexine Sure-Guard come a silky soft, absorbent and breathable fabric that is a pleasure to sleep on, yet is 100 per cent waterproof thanks to a miracle inner membrane that also makes them bed bug proof, odour proof and dust mite proof. The encasements stay on the mattress long term, keeping it permanently pristine underneath and significantly extending mattress life. Unwanted stains or ‘accidents’ soak into the fabric but do not get through to the mattress itself, thanks to the waterproof membrane. The encasements can be machine washed and tumble dried multiple times without losing their features.

JIS ADDS NEW RYE TILTING RAIL TO SUSSEX RANGE OF HEATED TOWEL RAILS Taking bathroom elegance and comfort to a new level, JIS Europe Ltd. has launched a new offering under its Sussex Range of heated towel rails. The Rye Tilting Rail has been designed to resemble a sleek, ultra modern ladder, leaning casually and lightly against the wall in a clever design twist. Indeed, the spaced out slats arrangement has negated the old problem of trying to force a plump, fluffy towel between the often too small gaps typical of competing brands while at the same time favouring the minimalist fashion favoured by many interior designers nowadays. The Rye range of towel rails is available in three different heating formats: these being electric only, dual fuel and the ability to be utilized solely with central heating. The rails are also suitable for open plumbing systems. BALMORALS OFFERING CANOVA FOR THE SMALLEST ROOM IN THE HOUSE Independent supplier of sanitary ware, Balmorals, is now offering a compact solution for the smallest of bathrooms or washrooms with, as its name ‘Canova’ suggests, a distinctly Italian flavour to the design. The Canova range includes a washbasin and toilet with close-coupled cistern, which presents a projection of just 620mm: making the Canova pan perfect for bijous bathrooms. Meanwhile the space-saving washbasin will stand just 400mm from the wall. Also available to compliment the Canova suite is matching wall hung or freestanding bathroom furniture – these too have a projection of 400mm. The cistern is available with a dual flush function push-button of 6/4 litres while to meet requirements for new build installations regarding water saving, it can easily be altered to 4/2.6 litres. The close-coupled WC pan also comes with a slow close seat, which can be removed for maintenance. Bandol
Bringing Provence & The French Riviera To Chelsea ‘Bandol’ Opens, With Design By Kinnersley Kent Design
Bandol
Bandol, a new restaurant on Chelsea’s Hollywood Road, delivers the cuisine of rustic southern France from within a stunningly warm and contemporary environment - featuring copper, distressed oak, steel, concrete, brick, smoked glass and artful lighting, as well as a large central olive tree - designed by one of London’s most prestigious and innovative design studios, Kinnersley Kent Design. The team behind Bandol, married partners Sylvia Kontek and Vittorio Monge, came to the project fresh from the success of their Margaux wine bar/ restaurant in South Kensington.
Whilst Margaux’s main point of reference centres on the wines of the Bordeaux area, Bandol takes its inspiration from the food and wines of the Provence and Riviera regions of southern France, in the form of a sophisticated and modern menu and the perfect wine to accompany each course. The intimate, 70-cover restaurant is made up of a ground floor bar and dining area, with a kitchen, customer toilets and back of house space on the lower-ground floor. The space measures 200 sq m over the two storeys and formerly housed the ‘Honky Tonk’ restaurant.

‘The long and fairly narrow spatial arrangement presented us with a number of design challenges’, commented KKD Associate Director Jenny Andersson, ‘including how to make the best of the available natural light and how to deal with the acoustics, given that the adjoining property directly to the right is residential. We additionally had to be as clever as possible in achieving a feeling of luxury on a relatively tight budget, which also had to cover an entirely new kitchen.’
64
Bandol
the World Of Hospitality
Acoustic walls limit any noise from the restaurant for local residents, whilst a virtue was made of the restaurant’s slim footprint by the design of a series of intriguingly zoned spaces and continued visual interest, so that there is something new to catch the eye at every stage. Cleverly-positioned, 3m x 1m mirrors on the rear right-side wall also enhance the feeling of space. ‘Our design DNA for the space was the use of copper throughout as a signifier of the warmth of the Provence and Riviera regions’, Jenny Andersson commented, ‘together with a light materials palette of pale brick, concrete render, oak flooring, blond timbers, white, grey and wicker chairs, smoked glass and a colour palette of greys, blues and the palest salmon pink. A sense of the outside is given by the indoor planting of lemon trees in pots, ivy at the rear and the half-ton, up-lit olive tree at the restaurant’s heart. Industrial design notes maintain a sense of contemporaneity, with an overall feel of al fresco dining in a warm clime.’ The London Evening Standard newspaper, which reviewed the restaurant on opening, summarised
the space as ‘so beautiful, you’ll want to steal the entire look for your home. Design walk-through: The restaurant’s exterior fascia is a re-working of an existing Victorian timber shopfront, protected by Conservation Area status and now re-painted in a mid-grey tone with a hint of blue. There is an entrance door to the right and large central glazing. Signage takes the form of ‘bandol’ lettering in 3D copper at the top of the fascia, with the name/logo also printed onto the extending canopy in a similar bronze tone. As customers enter the space, they are greeted by two stunning feature areas – the bar to the left, lit by a long display of 24 glass pendants spaced out in different sizes, lengths and colours and a series of four tables to the right, made of cantilevered, L-shaped copper panels which continue as far as one metre up the wall and are lit by bespoke bare-bulb, copper pipe pendant lights. The wall surround around the copper panels is in a concrete render, with a rough finish to add textural interest. Two further small tables in zinc with white J77 chairs from Hay also sit directly
behind the glazed section of the fascia. The bar features a bespoke 400mm wide/50mm deep copper top, which extends via a bull-nosed edge beyond the rough-rendered concrete bar front, which uses the same finish as the rightside wall. The bar back area is made up of a copper piping framework with glazed shelving. White-seated and timber-framed bar stools are by Normann Copenhagen, whilst the bar-surround flooring is in a series of dark and light grey hexagonal concrete tiles with bold red grouting. The chairs which accompany the four, right-side copper tables are in wicker, with black metal legs, from Cox & Cox. Flooring in this area and throughout the remaining restaurant space is a sanded, aged and stained oak, giving the impression of being weathered and already in situ for some time. The dramatic feature lighting display over the bar includes glass pendants from Royal Copenhagen, whilst the two-sizes of alternating copper-andwood alternating pendant lighting to the rear of the restaurant are from Libra. The lighting in the
Bandol
semi-screened wine-store/dining areas is in the form of hand-blown, smoked glass pendants from Curiousa & Curiousa. Tables in the main restaurant space are in bespoke, patinated zinc, with natural wood and pale grey chairs from Hay, from the J104 series. There are also lower wicker chairs in the centre from Cox & Cox, as well as two bespoke sets of banquettes. The first of these runs down the whole length of the rear right space of the restaurant, below the pale salmon plaster wall and is made of a mild steel frame with light tan leather upholstery, whilst directly opposite on the left side is a series of three booth areas, where the banquette seating is finished in buttoned light blue leather. All the banquettes were manufactured by Penwith to KKD’s design. The ledge behind the booths is punctuated by small lemon trees in terracotta plants, further underlining the ‘outside-in’ feel. Two semi-private dining areas on the left of the restaurant are enclosed by floor-to-ceiling screens with mild steel frames and copper mesh and
can each seat up to 6 people. Smaller versions of the screens also feature in other parts of the restaurant, above the left-side banquette seating, for example and to shield a waiter station to the right of the restaurant, helping add a subtly industrial and contemporary edge to the space. Empty, reclaimed riddling racks, sourced from France and traditionally used to house champagne, are used in these dining areas as a form of wall-panelling. The furniture treatment is also slightly different in these two rooms and includes bespoke bamboo table tops and black leather, steel-framed dining chairs from Rockett St George. The first of the areas, encased in an aged brick surround, also wraps neatly around the restaurant’s central service core, where the food hoist is located, along with a wine storage system built into its outside wall, featuring LED uplighting and allowing full access from the bar area. surface-mounted taps and toilet roll holders made from copper piping. The space is tiled in white to the half-way point with very pale sea blue paintwork used from there to the ceiling. Flooring is the same hexagonal concrete tiling as used for the bar surround, but on this occasion minus the red grout. Client and owner Sylvia Kontek commented on the design: ‘The aim with Bandol was to continue with the urban design of our sister restaurant Margaux, while making it lighter, airier and bringing in some natural elements to reflect the outdoors feel of Provence. The challenge was how to combine the urban and the rural and still keep it authentic and harmonious. KKD have achieved an incredible transformation of the place and managed not only to create much bigger, brighter and inviting premises, but, with their choice of materials, textures, colours and selection of living plants, they managed the impossible – marrying the industrial with the rustic countryside in a warm, welcoming space that is both chic and cozy.’

E mANUFACTURE
50 Years Young! At Alan Silverwood Limited we have been designing and manufacturing our own range of specialist bakeware from our factory in Birmingham (UK) since 1966. With over 250 stock lines, Silverwood Bakeware covers every aspect of baking from breads & biscuits to pastries & pies, traybakes and tarts. Aimed primarily at domestic cooks, our extensive range of products has been continually updated to suit developing trends. In addition to our own Silverwood brand of domestic bakeware, we also supply own-label products to a select group of up-market retailers. In recent years our products have won several industry awards for design, innovation and quality. Special Projects In this, our 50th year, we are expanding from our core domestic market to promote our “special projects” service to commercial kitchens, bakers, restaurants and cafes. In addition to our broad off-the-shelf selection of products (ranging in size from a 2in dariole mould to a 14in diameter celebration cake

pan), we are now able to offer a bespoke service and are happy to discuss special customer projects. Although we have never sought-out such business, we have found that we are increasingly being contacted by organisations who have been impressed by our domestic products and are looking for the same quality for their commercial business. Previous examples of these “special projects” have included the design and production of a selection of speciality pie tins for a prize-winning baker supplying Fortnum & Mason; a set of giant bespoke baking sheets for a television production company and a hand-made run of 16 trays with integral grid divisions for the commercial production of craft biscuits. We’ve even manufactured a selection of bespoke traybake pans, commissioned by an architect to form a mosaic to adorn the ceiling of a London cake shop! We frequently produce short runs of trays and baking sheets to satisfy a customer’s specific size requirements. Our extensive in-house facilities allow us to produce a vast array of shapes and sizes to suit all needs and we are always happy to help with advice on construction, gauge, finish, etc.. Often we are able to provide full

costings within hours of receiving an enquiry, and in many instances products can be manufactured and delivered within a matter of a few days. We manufacture our bakeware exclusively from aluminium. Aluminium is light, is an excellent heat conductor and produces an unrivalled distribution of heat resulting in even baking. We stock a wide range of aluminium alloys, carefully selected to suit specific requirements. For many applications, the aluminium is anodised to seal the surface, producing Silverwood’s famous Alsil© finish, renowned for its excellent heat-spread and easy-release properties. For certain commercial applications a plain finish can also be offered. Silverwood products improve with age. Unlike products coated with non-stick (PTFE) which will deteriorate with use, frequent use of Silverwood products actually improves them. In use, the surface captures and retains a microscopic film of lubricant which builds up to form a “Patina”. This eventually creates a light golden colour on the surface of the bakeware - it is entirely safe – and enhances the release properties.

appears delicate, but has its own, unique resilience. This is what we wean when we use the term contemporary luxury’, says Gabriele Dettelbacher. This impression of sheer elegance is further enhanced by the BoneWhite colour. This colour shade remains constant throughout the production process and ensures that pieces from different production batches harmonise to perfection.
‘With the Delight collection, we are entering previously uncharted and extremely exciting terrain,’, says Gabriele Dettelbacher, Head of Marketing at Tafelstern. ‘Because, instead of using the familiar hard porcelain for Delight, we have chosen Noble China for the Delight collection, a completely new material that impresses in many respects’, Ms Dettelbacher continues.
Delight reflects what must be the most intimate union of finest materials and uniquely expressive design. This uniqueness also impressed Claus Gromotka, Chef
The innovative Noble China hard porcelain is also fired at a temperature of over 1,400°C – this process makes the glaze extremely resilient and brings the extra benefits of high cut and scratch resistance and a particularly long service life. High resistance to rim chipping is a particularly welcome feature in the everyday world of gastronomy and, despite the particularly thin edges, is extraordinarily high in pieces manufactured in Noble China.
Delight is a full collection with around 52 pieces and is ideal for a wide range of occasions and uses: from fine to casual dining, for banquets or in top-of-the-market cafés.

de Cuisine at Restaurant Murnauer Reiter: ‘Three very persuasive arguments influenced our decision to choose this particular collection: that it is made in Germany, that Delight is a new arrival on the market and its timelessly classic design.’
Two of the most important basic pieces are the coupe plate and the classic rimmed plate: as they offer generous space for the presentation of extravagant culinary creations, coupe plates have long since become a particular favourite of cooks. In the Delight collection, they are available in various sizes and in flat and deep versions.
Website: www.tafelstern.com
The Delight collection also has a number of special pieces in store for the presentation of trend foods and highlights of the culinary arts. They are also ideal as eye-catching accents that lend table settings a perfect finishing touch. The imaginative design of the specials call to mind the Origami paper-folding techniques that created a furore in the worlds of fashion and interior decoration. Tafelstern now brings this trend to the table with Delight. The suggestion of ‘folding’ is repeated on both sides of the large bowl and appears on only one side of the platter and the smaller bowls. Thanks to the variety of pieces, the Tafelstern modular principle also offers ideal opportunities to mix and match within the Delight collection. The combination of the round pieces and specials is, for instance, ideal for the creation of exciting porcelain landscapes. Joseph Phelps Vineyards
Joseph Phelps Vineyards For the creation of a new hospitality and visitor experience at Joseph Phelps Vineyards, the architects worked within the two-story volume of the original winemaking facility, designed in 1973 by architect John Marsh Davis. Davis’ work celebrated the poetics of wood construction; the architects have used this as a springboard in the design of new interior spaces, with the ultimate goal of a cohesive, integrated whole.
The project is situated almost entirely within the original building, and the Phelps family wished to preserve existing finishes as much as possible. The majority of the building’s interior was removed, and a new seismic upgrade and additional interior floor added without removing the original exterior materiality.
A new guest path leads to the original entry trellis, allowing visitors to experience for the first time the full drama of this masterpiece connecting the hillside site to views over the estate. Inside, BCV created several different tasting experiences for guests that vary in scale and mood. Through the reception area, the Great Hall has been completely transformed from its former use as the winery’s fermentation cellar.

Off the Great Hall, the Library was developed to tell the winery’s history with an incredible visual of the historic bottles of Joseph Phelps Vineyards. Custom climate-controlled displays offer guests a visual catalogue of renowned wines, with each bottle set in the proper storage position and with each label legible.

Toby Wand, Managing Director at Fresh Montgomery comments: “It may seem a contradiction in terms to describe an event on the sheer scale of Hotelympia as having the feel of a bespoke, tailored show, but in 2016, that’s exactly the experience we will deliver. “How do we achieve this with so many ground-breaking exhibitors, from multiple sectors, all under one roof?
The answer lies in knowing the market, understanding the trends that keep this vibrant industry ticking, showcasing companies that share in this vision, true innovators, keeping things fresh and, most importantly, relevant to you. So, whichever day you choose to spend with us, and whatever attraction, innovative new product, key exhibitor or insightful speaker is on your hit list, this experience will be individually tailored to you, the requirements of your business and your customers. Your show.” With over 120 exhibitors already confirmed in the equipment hall – the largest line-up ever amassed under one roof – state-of the art catering equipment is yet again set to be one of the jewels in the Hotelympia crown. New for 2016 is a unique and impressive ‘Meet the Buyer’ Programme, created in partnership with CESA (Catering Equipment Suppliers Association) which will see buyers’ requirements matched to the exhibitor whose equipment best meet their needs. They will then be able to speak directly and confidentially to manufacturers on everything from technical specifications to energy saving benefits. Crucially, they will also be able to compare and contrast kit and try before they buy.
CESA Director, Keith Warren, said: “As the largest hospitality exhibition in the UK calendar, CESA and its membership is proud to support and continue our successful and established association with Hotelympia, which helps to fund many of CESA’s activities throughout the year. “The 2016 event is set to have the largest selection of catering equipment on show anywhere in the UK, while the new Meet the Buyer programme adds yet another compelling reason for visitors to make London the only destination they need visit for all their equipment requirements in 2016 and beyond. A host of leading industry lights will be offering insight-packed presentations on The Stage including: the master of service, restaurant manager of the world famous, Three Michelin-starred Waterside Inn, Diego Masciaga; Eric Partaker, co-CEO of casual innovators Chilango; leading designer and sustainable architecture pioneer, Oliver Heath; former Hotel Manager of The London Edition, Edwin Kramer; Martin Williams of London city restaurant, M; restaurateurs and master foragers, Richard and Oliver Gladwin; Michelin-starred chef, Mark Sergeant and star of TV’s The Apprentice, now a designer in her own right, Ella Jade Bitten.

Hot-button subjects will include: distribution; reservations; marketing and loyalty; point-of-sale; up-selling; table management; in-room technology; service automation; supply chain and inventory management. The Hub will welcome a number of key influencers and experts onto its stage, including: Google UK’s Head of Hospitality, Terri Scriven, who will be talking about how sites can, with limited resources, make digital channels a boon rather than a bane; CEO of Hotelympia Innovation Award winners, Orderella, Denis Collet, who will be discussing functional technology and how its development is being driven by a whirlwind of customer demand; Digital Blonde Karen Fewell and My Ly, Senior Marketing Manager for YO! Held in conjunction with The Craft Guild of Chefs, The Staff Canteen Live – Skillery in association with Westlands will be showcasing the skills of 16 of the country’s leading chefs, comprising some 20 Michelin stars. The line-up includes: chef patron of Restaurant Gordon Ramsay, Clare Smyth; Tom Kerridge from 2 Michelin-starred The Hand and Flowers and The Coach at Marlow; Claude Bosi of 2 Michelin-starred Hibiscus; Nathan Outlaw of his eponymous two Michelin-starred restaurant; Paul Ainsworth from one Michelin-starred Paul Ainsworth at Number 6; Tom Aikens, the youngest British chef ever to be awarded two Michelin stars and Simon Rogan one of most accomplished, unique and best loved chefs in the UK. With class-leading chefs in mind, International Salon Culinaire returns to Hotelympia in 2016 with a brand new Chef Director, executive chef of the Royal Garden Hotel, Steve Munkley, and a host of programme changes aimed at ensuring the world’s premier culinary competition stays fresh and relevant to modern hospitality.

In addition to the three competitive elements of International Salon Culinaire; La Parade des Chefs, Salon Display, and Live Theatre. New for 2016 is The Skills Theatre which will give chefs at the very beginning of their careers – including apprentices and students, and those who have not competed before – the chance to experience the thrill and bright spotlight of competition with classes including butchery, fishmongery, pastry, sugar-craft and many more. Another first for Salon, front-of-house staff will now also get to demonstrate their skills and put their efforts to the test in a selection of service classes. It’s not just about food, Hotelympia’s Drinks Cabinet and Drinks Innovation Theatre will grow to encompass craft beer, cider, spirits and wine as the drinks scene moves from strength-to-strength. The Drinks Innovation Theatre will not only house talks on the profitability of alcoholic beverages, but also how getting your hot drinks offering right can be equally as rewarding. Toby adds: “For almost 80 years this show has been the only show that the entire hospitality fraternity builds

up to; the only show with the breadth of exhibitors and products needed to make business-changing decisions; the only show where you will leave with more than you arrived, buoyed by the weight of insight and innovation at every turn. “In 2016, we’re taking the show to you. “So if it’s the very latest ground-breaking catering equipment you’re looking for, this is your show; but what about the world-class chefs that rely on these innovative machines daily? And the food and drink products – from leading suppliers and burgeoning producers – that go into making menus really stand out from the competition? Or the beautiful flat and glassware that is the customer’s first experience of an establishment, the key design and décor elements that help set the tone, the lighting; the technology that

keeps service running smoothly? “Hotelympia 2016 has these key elements and much more in abundance.” After the shining success of 2014, the Hotelympia ‘Show Makers’ – a team of specially trained young ambassadors – will be on hand throughout the four days, offering advice and guidance on forthcoming attractions and creating bespoke pathways through the show, depending on visitor criteria and interests. Yet again the Show Makers have been recruited from leading catering college, Westminster Kingsway, with students trained by Lisa Campagnola, the lady behind the London Olympic Gamesmakers. Also making a second appearance at the show will be Waste-Works – a new, co-located event focusing

‘Obelisk’ – A modern take on path lighting
The Green ‘Lighthouse’ blends in well with surroundings
Bright Innovation Lumena Lights’ aim is to provide high quality external lighting systems with innovative features at affordable prices. By upgrading existing lighting systems huge savings can be made in both electricity and maintenance costs. An LED bulb will provide up to 10 times the light output of the same wattage filament bulb, therefore lower wattage LED bulbs are required resulting in far less energy being consumed - reduced electricity bills. LEDs can last for 30,000 hours or more, compared to approx. 2,000 hours for a halogen bulb, meaning fewer replacements are required – less maintenance costs! However, LEDs are still a fairly new technology which is constantly evolving and like early computers, premature failures are not uncommon. For this reason, Lumena specialise in light fittings which
accommodate interchangeable LED bulbs rather than built in LEDs which have many advantages. If a 240v light with an in-built LED fails, the entire light fitting must be replaced by a qualified electrician. With a replaceable bulb, all that is required is a simple bulb change. There is also much more choice with LED bulbs which are available in various wattages, light outputs and shades of white (warm > daylight). A wide selection of outdoor lighting is stocked by Lumena and ready to be dispatched for next working day delivery (excludes bespoke models). These include, wall lights, floodlights, bollards & post lights, lamp posts, spike lights etc. Exclusive to Lumena are over 150 styles of bollard, including those with an integrated Photocell (dusk to dawn) or PIR motion Sensor. The advantage of a Photocell is that the lights are never inadvertently left on during the daytime,

and amazingly the electricity cost for an external light fitting using a 3W LED bulb is less than £3.00 per year. A Bollard fitted with a 20W LED bulb would cost less than £20.00 per year. Lumena offer quality lighting with durable finishes in the form of solid brass, natural copper, marine grade stainless steel and anodised aluminium – designs to suit all themes and surroundings. Mains and 12v light fittings are stocked. Garden and Landscape lighting are especially suited to low voltage lighting ( 12v) which is safer, easier to install and less prone to tripping when exposed to damp conditions. Lumena occupy a 20,000 sq ft. warehouse and showroom in Northamptonshire where customers are welcome to visit and personally inspect the vast range stocked prior to purchase.

GOAT Grabs Energy Savings By its Horns With Bright Goods One of London’s most iconic watering holes – the Goat in Boots pub in Chelsea – reopened two years ago following extensive modernisation as GOAT. This new moniker heralded a massive transformation of a historic and traditional pub into an energetic and edgy hub that comprises a contemporary Italian restaurant, a large DJ bar and a hidden 1920s styled speakeasy, irreverently branded as the Chelsea Prayer Room. However, the venue has recently undergone a second metamorphosis with the installation of energy-efficient LED lighting from the acclaimed Bright Goods range. Following GOAT’s original restyling, its many nooks, crannies and architectural quirks have provided huge scope for entertaining evenings - from private dining to cocktail master classes. Guests enjoy exotic surroundings where classic tiles, custom-made wallpaper and leather banquettes are key features throughout and the industrial chic of the restaurant is contrasted by the opulent bar and vintage speakeasy. However, the traditional incandescent filament lamps that Telephone: 01276 691230
helped create the overall ambiance proved to be costly to run and maintain. With an ambitious energy upgrade planned for the building, Steve Manktelow, who masterminded the GOAT concept, was keen to establish whether any of the expense of the upgrade could be offset against future savings. Consequently, Steve discovered Bright Goods LED filament lamps online that he could simply retrofit into existing fixtures. Whilst harbouring a level of reticence towards LED lamps which he feared would produce a cool white light that would be inappropriate for the venue’s stylish interior, he ordered some samples. Following a ‘real life’ trial, the team at GOAT were pleasantly surprised not only with the vintage look and feel of the Bright Goods LED filament lamps, but also with the warm, familiar glow re-created beautifully in LED. They selected some of the most popular products from the Bright Goods range of LED filament

lamps, including the Elizabeth, Rose, Catherine, Charles, Anne and Jane. These exquisite lamps have complemented the sympathetic restyling of an old building and updated it with modern charm. Importantly, whilst re-creating the nostalgic glory of incandescent lighting in LED, the Bright Goods lamps also provide ten times the lifespan and massive energy savings of over 70%. Steve is delighted with both the appearance and the performance of GOAT’s new lighting. He says, “The new Bright Goods LED lamps are a brilliant match for the incandescent filament bulbs we had previously. The warm glow of the old lighting has been re-created to create the same retro, vintage feel. They have the same impact as the old Edison squirrel cages and other shape styles, so swapping them out has been seamless. Having trawled what is available, these are the first LED lamps I’ve come across that retain the warmth of an incandescent, which was the real deciding factor.”

fire safety
DON’T GAMBLE WITH YOUR FIRE RISK ASSESSMENT!
If you are responsible for a business premises, the law requires that you have a fire risk assessment. To find competent providers, you need BAFE. Under the provisions of the Regulatory Reform (Fire Safety) Order 2005, the Responsible Person or Duty Holder for a building is required to make a Fire Risk Assessment to clarify the fire precautions necessary to ensure the safety of staff, customers and property. At present there are no adequate means to ensure the competence and reliability of a company commissioned to carry this out. BAFE scheme SP205 has been developed specifically to address this situation, and will provide reassurance to the Responsible Person that they are doing everything possible to meet their obligations. Make sure that your suppliers are registered with BAFE.

BAFE – HELPING YOU TO MEET YOUR FIRE PROTECTION OBLIGATIONS Current fire protection legislation across the UK requires property managers of all non-residential premises to have adequate fire protection. It is their responsibility to ensure that there is an adequate, up to date fire risk assessment and that all aspects of the requirements are carried out competently. This is not only to ensure that customers, staff and premises are adequately protected, but also to minimise the risk of costly unwanted false alarms. The most recent CFOA guidance for the Reduction of False Alarms and Unwanted Fire Signals highlights some of the solutions to this problem, amongst which is the use of third party certified providers of fire protection services. To demonstrate that the responsible person (duty holder in Scotland) has met their obligations, many public authorities and commercial organisations now insist that their fire protection services are carried out by a company that has been third party certified. Many now specify that providers are BAFE registered. You can find out if your potential provider is third party certified and BAFE registered at WWW.BAFE.ORG.UK BAFE is the independent third party certification registration body for the fire
protection industry. We develop schemes for UKAS accredited certification bodies to assess and approve companies to recognised standards. There are now more than 1000 companies with over 1250 registrations to BAFE schemes across the UK. Our aim is to support property managers to ensure that they get quality fire protection for their premises, staff and service users. In 2012 BAFE launched the first UKAS accredited scheme for Companies who carry out Fire Risk Assessments (SP205) which is a vital part of meeting obligations under fire legislation. The scheme considers the competence of the individual assessors as well as the quality requirements for the organisation. There are a growing number of companies registering to the scheme, throughout the UK. If you are looking for the supply and maintenance of portable extinguishers, look for one of the 356 Companies accredited to BAFE Schemes SP101/ST104. Companies are certificated to ISO9001 and all of their technicians are assessed by BAFE for initial and ongoing competence. There are currently more than 1200 BAFE registered technicians, working for our registered companies.
For installing or maintaining fire alarm systems Companies should hold BAFE modular SP2031 scheme approval. This scheme includes design, installation, commissioning and maintenance of fire detection systems and also requires that all equipment used is third party certificated. The SP203 scheme now has over 800 registered companies. Registration to this BAFE scheme is often a key requirement criteria in tenders for the provision of fire alarms. Our Emergency Lighting scheme (SP203-4) sets out the standards and staff competence criteria to be met. It is modular as with the fire alarm scheme and is achieving growing recognition from end users. There are a range of other BAFE schemes covering particular sectors of the fire protection industry and details can be found on the BAFE website, along with a complete search facility to find registered companies in your area. If you want to be sure you are getting your fire protection from companies who are properly and regularly assessed look for more information at WWW.BAFE.ORG.UK

Signs – Apart of the design process?
Signsforsafety – protecting people and property Why are the James Bond (JB) films so popular? Well apart from JB himself, the films offer the viewer a brief submergence into a world of sophistication and glamour. Today, we are fortunate that many of our architects and designers, create spaces of style and luxury, when designing for the hospitality sector. But while creating these inspirational interiors, it is always smart to remember the safety aspect for the control and movement of people throughout buildings. There must be nothing worst for designers, to see their creations ruined by someone “slapping” on a few safety signs, after the event! If signage becomes part of the design process, this could alleviate this mishap. In its basic form “the sign” tells you what you can do and what you can’t do, where to go, where not to go and where you are and where you might be. But is this good enough? If you don’t understand the words or they are too small or it’s dark or hidden by smoke or not installed correctly or gone missing, these are issues that Signs for Safety.co.uk have to address.
Signsforsafety.co.uk adhere firmly to legislative requirements, including BS ISO 3864 and BS EN ISO 7010, which are the benchmarks of our industry. Our SignsforSafety Book is an invaluable guide, enabling our clients to make informed choices concerning their signage. The book is available f.o.c from our website. We produce good quality signage at reasonable prices (mainly due to our in-house capabilities and skill to manufacture on our own substrates here in the UK). Unlike most other signage suppliers, we carry extensive stock to meet nationwide delivery requirements, as well as having a department dedicated to bespoke signage and projects. However a “big feather in our cap” is we are strong advocates of photoluminescent (glow in the dark) signage. Our photoluminescent material TelglowTM, properly energized, will provide illumination for up to 18 hours and creates a new vision of direction and spacecial awareness to improve safety way guidance systems in darkness and smoky conditions. WEBSITE: www.signsforsafety.co.uk
The material is self-charging from ambient light, requires no installation wiring, reducing the need for emergency lighting and has little or no maintenance. Architects and designers will find the multi-coloured, high quality PVC products produced by our Telegan Pressed Products Ltd company provides coordinated colours to frame and protect signage and way guidance products – plus gives “zazz” to the building. After 9/11 the New York Building Code updated to reflect the IBC codes, actively encourages the use of photoluminescent materials for exit pathways, signage and use in stairwells and as they say “what happens in the US” tends to filter through to the UK – so watch this space! Signsforsafety.co.uk is based in Redhill, Surrey, near Gatwick and has been in the signage industry for 20+ years. As an ISO 9001:2008 company, Signsforsafety. co.uk are committed to protecting people and property, which is the moto for all our companies.

Commenting on Andy and Roz’s appointment and the launch of 13˚/59˚, Eoin O’Sullivan, Group General Manager said, Our ethos in opening 13˚/59˚ is to deliver a restaurant of international standard that highlights the beautiful ingredients that Barbados has to offer.
WEBSITE: www.1359barbados.com
We are delighted to have chefs of this level to help us deliver the concept and even at this early stage we are receiving some great reviews and finding that the restaurant is proving a real draw on the island.’ Andrew Turner comments on his new role, ‘I’m relishing the challenge of establishing a gold standard fine dining restaurant which offers something really different and enticing for visitors to Barbados and for the local population. I’ve been impressed by the range and quality of local Barbadian produce available, which has more than matched my desire to source as many ingredients locally as possible. We are evolving our menu to reflect the season’s freshest and finest ingredients, so for example, recently a big hit with guests has been Golden Crab which is delivered to us within hours of being caught just off the coast here. ‘

Meet The WI-Q Team At Hotelympia Stand 1712
The Fast Route To Increased Sales How do we overcome customer apathy and encourage increased ordering in the hospitality sector? Sensory branding has a significant role to play in marketing, but nothing beats the process of making ordering and payment as easy as possible, making the experience so positive that customers leave an establishment already planning their next visit. We’ve all been there at one time or another; sat in a restaurant or café, contemplating a dessert or another beverage, but one glance at the queue at the till and we’ve decided we won’t bother. What if we could just pick up our phone or tablet and order another latte from our table, safe in the knowledge it will be delivered immediately? Wi-Q is the queue-busting solution that transforms the ordering process and perfects the customer experience. A world-leading integrated HTML software solution, Wi-Q is set to revolutionise the hospitality industry by placing ordering and payment capability in the customers’ hands. With no need to download an App, Wi-Q can be accessed instantly using any Wi-Fi enabled mobile device, empowering customers to pre or live-order
their choices from the menu, add to their order and request or pay their bill from the comfort of their seat or room, removing the need to join a queue or wait for service.

Wi-Q founder CEO Graham Cornhill says, “We are in trials and implementation in venues across the world, and the common theme is that customers and staff love Wi-Q. With average beverage sales uplift of 15%, the figures prove that given the choice of when and how to order, customers will spend more if they don’t have to wait for service.” The Wi-Q team will be exhibiting at Hotelympia at Excel, London 29th February- 3rd March 2016 and will be demonstrating the capabilities of their product as well as answering questions on how Wi-Q can boost sales and improve customer experience in any venue. “Many venues are dipping their toe into the technology pool but stopping at payment provision,”

Someone who understands technology and its potential within the hospitality and retail sectors, better than most, is Stephen Kennedy, Wi-Q’s NonExecutive Chairman. He says, “There are plenty of apps in the marketplace, but apps aren’t the future for hospitality and will become obsolete. Apps use memory, need updating and require individual log in and passwords; every brand wants their own app, but consumers don’t want multiple apps. It’s like the scenario with loyalty cards – customers loved them but got overloaded with a purse full of cards. HTML technology has moved forward and can deliver a ubiquitous solution like Wi-Q, where consumers can access a branded, user-friendly ordering and payment solution via Wi-Fi from any mobile device. The successful venues will be those who embrace technology to give their customers choice without limitations in how they browse, order and pay.”
