The team behind Covent Garden’s legendary Joe Allen have opened Mustard for brunch, lunch and dinner following a successful soft opening in Brook Green. Drawing on their wealth of experience, founders Lawrence Hartley, Tim Healey and Head Chef Jason Wild have unveiled a relaxed, British style brasserie serving light and comforting dishes. Focusing on locally sourced ingredients, the all-day menu offers simple, honest fare. Breakfast will include The Full Green Mustard with rainbow chard, poached eggs, tomato, woodland mushrooms and green herb oat pudding, Smoked haddock, spinach, kale and potato omelette, and Duck eggs on toast. From lunch through to dinner there will be an a la carte menu featuring; Green Risotto, Roast Sea Bream, cockle vinaigrette and creamed potatoes; Naturally Reared Beef from the Scottish Highlands, and a selection of seasonal dishes such as glazed Middle White pork rib with pease pudding. Puddings continue to celebrate British staples and include Gooseberry and gin crumble with lavender scented vanilla custard. There will also be a set menu from
Monday – Friday, 12-7pm with either 2 courses or 3 courses, and a daily changing special, seasonally garnished, which guests can enjoy each week.The drinks list follows a similar grain celebrating artisan produce, with beers from the West London based Portobello Brewery, English sparkling wines from the Furleigh Estate and Hampshire’s Hambledon and spirits from Sussex-based Blackdown Distillery. A cocktail menu of classics have an added Mustard touch including Vodka Marmalade Martini with Cooper’s marmalade, vodka and vermouth, Mustard Gin Mary with Gordon’s Gin, tomato juice, mustard, horseradish and spices and Hedgerow Fizz with Prosecco, elderflower, lime juice and cucumber. The restaurant’s design continues to draw inspiration from the British countryside with wood paneling, mustard leather banquets and hues of warm green. Housed in a former Victorian grocery shop, Design LSM have retained many of the building’s features with the original tiled panels bordering the walls. The brass-topped bar is punctuated with leather studded stools and the restaurant’s al-fresco area boasts a chequered tiled floor and a soft yellow awning. Mustard’s walls are hung with artwork inspired by Britain’s greats from Frances Bacon to Barbara Hepworth and Turner.
Five bubble luxury at Stanley House Hotel and Spa Stanley House Hotel and Spa, Mellor, has scooped national recognition following an independent review from one of the UK’s leading spa authorities. The Spa at Stanley House has been awarded an exceptional ‘Five Bubbles’ rating and received a glowing review after a visit from the Good Spa Guide – an expert guide to spas and treatments across the UK. A ‘spa spy’ from The Good Spa Guide followed a rigorous process involving a stringent set of guidelines to assess all elements of the spa journey, including facilities, customer care, quality of treatments and cleanliness. Scottish Beer & Pub Association launches new voluntary code for tied pub
England and Wales doesn’t necessarily suit the industry in Scotland.
The Scottish Beer and Pub Association (SBPA) has today welcomed a new Code of Practice for tied tenants in Scotland, enshrining protections for pubs across the country, which will come into effect at the same time as the English & Welsh Statutory Code. The Scottish code will serve as a binding code of practice for pubowning businesses, with protections for tied pub tenants and continued access to low-cost dispute resolution procedures. Commenting, SBPA Chief Executive Brigid Simmonds said: “This Code is a landmark for Scottish tied pubs, setting out protections for tenants, and is the first designed specifically for Scotland. “The pub sector in Scotland is hugely different to the rest of the UK. What works for pubs in
“This code takes into account the unique nature of the Scottish tied pub trade, providing the best balance of what works for pubs in Scotland, whilst also protecting much needed investment in both the pub sector and local economies across the country. “The Code also allows Scottish tenants access to independent, low-cost resolution procedures for rent, through PIRRS, and for other issues through PICA-Service, both of which have Scottish-specific expert representation. “The tied pub sector, whilst only making up a small percentage of Scottish pubs, is a fantastic opportunity for self-employed entrepreneurs to get a low cost means of entry into business ownership. In the 1990’s it was Australian wine and particularly Chardonnay that was very much in vogue. This grape variety was loved by every wine drinker and brought a new phenomenon to wine marketing – the female wine shopper.
And that leads to the most recent of fashion statements that has taken the wine world by storm – Prosecco.

Just five years ago Prosecco was a little known sparkling wine from Italy, which didn’t warrant space on many lists apart from traditional Italian restaurants who had insight and knew what was on offer. In 2010 a law was brought in by the local Venetian authorities to de-limit the region’s production and the grape from which it is produced – Glera. The variety was formerly known as Prosecco and took its name from the small town near Trieste.

North Kent College host “The Ashes Cooking Challenge” NKC cooked up a storm last week at “The Ashes Cooking Challenge”. A competition against MidKent College and held at the Gravesend campus. It was a cook off between three students from North Kent College and three students from MidKent College. Professional Level 3 Cookery students cooked a variety of dishes which were then critiqued by two judges from local businesses based in Gravesend, Brasserie 32 and The Clarendon Royal Hotel who both have chef backgrounds and hold a vast knowledge in cooking. The competition standards were set extremely high and both teams created some exceptional dishes competing for the coveted Ashes title and plaque. Both teams were very professional throughout the highly pressurised challenge and cooked up three courses with two portions of each having to be created in a just a two-hour window. Setting up “The Ashes” catering competition built great relationships between North Kent and Mid Kent catering areas. It has allowed both establishments to share best practice and set high standards for their students. It has allowed the students to exchange their skills through the complexity of their creations and learn life skills such as team sprit with both teams showing incredible sportsmanship throughout. Judge Andrew, from the Brasserie 32 restaurant commented, ‘I was extremely impressed in the high standard of food. Students cooked to an exceptional standard both presentation and taste wise and their passion shone through in a highly pressurised situation working within a short time frame’. Executive Head Chef at the Clarendon Royal Hotel also commented, ‘it was incredible to see how students pushed themselves beyond their comfort zones and I myself thoroughly enjoyed the process, both colleges were commendable in their efforts and we must bear in mind their age and how well they took our harsh yet constructive criticism!’ This practical exercise prepares learners for the world of work and it was great having industry professionals giving student’s tips and advice that further prepares them for working environments.

2,000 New Hotel Rooms In St. Pete / Clearwater By 2017! Opal Sands Resort and Treasure Island Beach Resort just opened in the sunshine record-holding destination St. Pete/Clearwater, the sun-drenched peninsula on Florida’s Gulf Coast, has responded to growing tourism demands by adding an array of luxury and boutique hotels to its 35-mile stretch of awardwinning white sandy beaches. Opal Sands Resort and Treasure Island Beach Resort (opened in February and March this year) have kicked off the transformation of the area with four others already under construction. The developments will add over 2,000 new hotel rooms to the destination, visited by around 50,000 Brits every year. The Opal Sands Resort is the only hotel on Clearwater Beach that offers panoramic views of the Gulf of Mexico and spectacular sunsets from every room. Each of the 230 rooms, curving along the white sandy coastline, has floor-to-ceiling windows and large balconies. Positioned on the lively promenade, the resort is in prime location and is the newest addition to the well-sought after beach strip. The hotel offers numerous dining options including a sandbar, pool bar and a fresh seafood restaurant, and is in walking distance from the many restaurants and bars in Clearwater. Canadian Design studio II BY IV DESIGN receives growing international recognition for Retail Environments Canadian Interior Design is some of the best in the world with growing international exposure – top honorees at the recent Retail Design Institute’s (RDI) 45th Annual International Store Design Competition and Association of Retail Environments (ARE) Design Awards, also in its 45thyear, notably included several Canadian Design firms with Toronto’s II BY IV DESIGN recognized as best of class in multiple categories. On Saturday evening March 12, 2016, during a Black-Tie event the RDI presented the winners of its
45thAnnual International Store Competition at the Hilton Anatole, Dallas. More than 125 projects from around the world competed in 21 categories reflecting both hard lines and soft lines in formats ranging from department, specialty, supermarket and mass merchant to pop¬up and common area. II BY IV DESIGN received First Place standings in 2 of the 21 coveted categories: First Place - Specialty Food, Gourmet Grocer & Delicatessen for the Liquor Control Board of Ontario’s (LCBO) Urban Infill concept store, as well as, First Place - Brand Spaces

PROJECT DESCRIPTIONS LCBO Urban Infill Store The Urban Infill Store, located at 1986 Queen Street East in Toronto is a highly innovative concept for the Liquor Control Board of Ontario; the first of its kind, it was created to get the most out of high-density urban areas and provide a viable solution to design, construction, operational efficiency and delivery challenges. Though modern in layout and functionality the Urban Infill Store is imbued with a feeling of hands on craftsmanship and old world charm. The overall concept based on an understanding that urban

customers look for not only convenience but a selection of higher-end product and a sense of “retailtheatre” in their shopping experience. On the exterior, a strong street presence is created by using the full double story façade of the building; defined by dark bronze mullions and Gabions, wire cages filled with rocks, stacked above the entrance in conjunction with a back-lit oversized graphic of idyllic rolling hills. The overall effect is dramatic with the intention of lending a sense of history and context. Inside, light filled interiors feature high ceilings, herringbone-tiled floors, bleached oak wood, recycled wine barrels, dark bronze metal and patina finishes
that further reference an artisanal quality. The signature design element is a VINTAGES runway that showcases open wood crates and unique fixtures that display a variety of over 350 “handpicked” premium products sourced both locally and from around the world. Olympia Tile As front-runners in the Tile and Stone industry Olympia Tile has great influence over styling and demand, particularly within North America but also worldwide. Their flagship showroom occupies an entire block and features over 37,000 square feet of space open to the

public, which is nothing short of grand. Employing natural stone sourced from the client’s product line the final design is a contemporary, fashion-forward space with a bold architectural feel that references a gallery experience and high-end retail. To enhance the characteristics of the product on display, black and white finishes were used throughout the showroom: matte black walls with white lacquered free-standing fixtures, black porcelain floors with a beautiful book-matched white marble reception desk, and a black painted ceiling with repeating white light troughs. This black and white high-contrast effect is classic and allows the product to ultimately be the star.

Kasa Moto Kasa Moto is a contemporary Japanese restaurant that pays homage to the ancient ideals of wabi (transient and stark beauty), sabi (the beauty of natural patina and aging) and yōgen (profound grace and subtlety). Located in the heart of Yorkville, Toronto’s luxury retail district, the two storey, 12,000 square foot space is spread out over multiple rooms including a split level main floor, dining/wine room, sizable roof top patio, street side terrace and lounge (Bar Moto) on the upper level. Striking a fine balance between simple and complex, the interiors feature a soft neutral color palette
of smoky greys, watery blues and natural wood tones accented with hints of gold and aged bronze. The serene and sophisticated ambiance further complimented by dramatic lighting and hand-painted ethereal murals of koi, cherry blossoms and Japanese landscapes created by local artist Tisha Myles. At the heart of the first floor two backlit white onyx bars, one for drinks and one for sushi, literally shine; running the entire length of the room, interrupted only by the open kitchen where food preparation is celebrated as a form of art. Above, recessed natural walnut ceiling lintels, reminiscent of traditional Asian architecture, are edge lit lending a warm and sophisticated effect.
Sculptural furniture forms are a calming counterpoint in the more ornately finished upstairs space which during the evening transforms into a cocktail lounge. Metallic bronze peacocks strut across a midnight black wallpaper and play backdrop to two striking watercolor paintings while floor-to-ceiling shoji styled screens form intimate seating areas (a repeating theme throughout the project). Though designed as a series of vignettes, each with its own personality and ambiance, there is a fluidity to the overall design of Kasa Moto; one that flows effortlessly, unified through refined finishes and a rich layering of detail.

Andres Escobar Revolutions Guest Experience at New Hotel in Downtown Brooklyn Eschewing a longstanding brand convention, interior designer Andres Escobar and his team have created a new design platform for a Holiday Inn in Downtown Brooklyn at 300 Schermerhorn Street.
Reinforcing this cutting-edge spirit is an entry that dramatically introduces a custom-designed Brooklyn Bridge mosaic mural behind a full-height water feature.
The recently inaugurated 14-story glass and brick hotel, featuring 245 rooms, is highlighted by a sophisticated aesthetic proposing a new experience within the hospitality group.
“It was important that the design reflects the area’s exciting transformation,” points out Escobar. “From the moment guests walk through the front doors, we want them to be delighted by the glamour of the hotel, as well as its comfort.”
As an InterContinental Hotels Group (IHG) flagship operated by NY Hotel Management, it is located close to Barclays Center, Brooklyn Navy Yard and Metro Tech. Moreover, the hotel has been designed to appeal to a broad range of travelers, from businessmen to techies, hipsters, celebrities and others who regard Downtown Brooklyn as a trend-setting destination.
The lobby has been clad with natural walnut walls suspended over macchiato quartz floors. A reception area is highlighted by a backlit decorative chrome and brass metal grid detail that carries over to the elevators’ interiors.
Other custom-design elements include several large crystal prism-shaped pendant chandeliers that refract light throughout the space. Another surprising element is a fully landscaped greenhouse off the lobby with an atrium that is partially covered by shades to create soothing ambient light. Escobar has also designed a dark azure pool with a waterfall and glass wall overlooking a fully-equipped gym.

Cottons Caribbean Restaurant and Salon de Rhum The hugely successful Cottons Caribbean Restaurant and Salon de Rhum will be launching its brand new flagship restaurant in Notting Hill, a stone’s throw from Notting Hill Gate Underground. The restaurant and bar is set to bring the exotic vibes of the Caribbean to Notting Hill in true tiki style. Sitting centrally (157-159 Notting Hill Gate W11), the sky-blue exterior and tropical statement planters mark the entrance to the restaurant. The floor-to-ceiling glass frontage reveals a colourful interior packed full of contagious Caribbean spirit. On the ground floor, seating is arranged around a central bar adorned with multicoloured bamboo. Behind the bar, the largest collection of rum in the UK stands proudly, with over 300 varieties available. Marinated exotic fruit-filled jars displayed on the wood shelving are a key ingredient in the renowned Cottons cocktails.
Opposite the bar, a hand painted floor-to-ceiling wall mural depicting a vibrant, tropical jungle scene spans the entire length of the wall. Suspended brass lighting with filament bulbs hang from the ceiling, creating a traditional tikki shack feel. In the bar area, diners will be able to enjoy bar snacks and sharing plates such as Jerk pork ribs (£7), Oxtail & bean stew (£7.50), and Ackee & saltfish (£7.50). Meanwhile, those in need of a coffee fix can enjoy a caffeine boost courtesy of the brand new Fracino coffee machine. Traditional Caribbean cuisine will be served Monday to Friday with lunch from Noon-3pm; afternoon tea from 3pm-6pm; and dinner 5pm-11pm. In the event of a breakdown, there are backup options in the form of traditional switches and remote controls to ensure that guests can continue to use the room as normal.

It may seem obvious but if you want to avoid any disasters then you need to make sure the BBQ is lit properly and is not in the proximity of anything that is potentially flammable!
Generally any type of fish, lamb or beef are the safest items to cook for those concerned about becoming ill at a BBQ, as they are low risk meats. You can cook them rare, medium, well done or as you would normally. Also you should always use separate utensils for cooking and serving.
BBQs are not just about meat, any type of vegetable kebabs are great! Be bold and use vegetables such as onions, peppers, aubergines, and kholarbi.
Heat the Meat Make sure that any poultry or pork items are thoroughly cooked to avoid food poisoning. To know if you have the right temperature to cook with you just need to wait for the flames to die down, and check the colour of the coals. They should glow red underneath and be white on the top or you can buy BBQ thermometers from any good BBQ retailer.
Don’t Take Risks Any pork and chicken items are the highest risk food generally cooked on the BBQ and you need to check that they are thoroughly cooked. Also make sure they are consumed immediately. If you leave them outside on a nice day for more than 30 minutes you are running a risk of giving someone food poisoning! Also try not to serve any form of rice salad, as it will likely spend the entire day sat out in warm conditions.

QED supplies modular kitchen and coffee shop for company’s new European HQ Quality Equipment Distributors (QED), based in Glasgow, is a leading UK designer and supplier of modular bar, coffee shop and food service equipment. The company has recently completed the design and installation of a modular coffee shop and additional kitchen equipment at a company’s new European headquarters in Glasgow. Modular display system at a reasonable price An important part of the company’s plans for the new premises was the design and installation of a kitchen, coffee shop and snack bar to cater for management, staff and visitors to the building. As the manager explains: ‘We wanted a modular system that was as good as a custom-built solution at a reasonable price,
and were fortunate to receive the ideal proposal from QED. An important consideration from us was the use of a rustic, natural wood finish for the fascia of the counters, which would be in harmony with our organic principles. ‘Robert Campbell and his team worked very closely with us to come up with a design specification and CAD drawing that was true to our vision, and the end result is both stylish and practical.’ The equipment that QED supplied is from their exclusive Continental Coffee Shop System. It includes a drop-in patisserie counter with front and rear sliding doors for serve-over and self-service operation, together with matching bar modules. The units are clad in distressed, reclaimed wood with granite and wooden worktops.

Craven Dunnill Jackfield
Blues Kitchen in Shoreditch Revives Tradition of Faience Fronted Bars
T
he Blues Kitchen Shoreditch has recently opened, complete with a vast, four square, Victorian- inspired, ceramic tiled fronted bar. UK specialist tile company Craven Dunnill Jackfield was responsible for the project, from design to handmanufacturing the tiles and then factory-mounting the tiles onto panels for rapid installation on site. The Blues Kitchen faience tiled bar front was manufactured by Craven Dunnill Jackfield in keeping with the historical tradition which dates to the 1880s. It is opulent and rich in style, with a central motif which features a mythical lion’s head, embellished with swags and fruit. The deeply textured relief tiles are made using hand carved plaster moulds and decorated using metal oxide glazes which craze upon firing to create an authentic aged effect. Special moulded external corner fittings were designed and made, to allow the highly decorative and ornate patterning to flow seamlessly around the external corner of the bar front.

The lead time for the project was short – less than four months from the initial conversations to the installation of the faience bar front, back bar wall tiles and floor. Having agreed the design, Jackfield created CAD drawings, before plaster moulds were made for each tile element. The whole project required meticulous planning and outstanding ceramic expertise, for which the Jackfield team is widely recognised. In order to meet the planned opening schedule, the Craven Dunnill Jackfield team explored options to reduce the time required to install the tiles and overcome issues associated with fixing heavy, ceramic tiles to a vertical surface. The solution was to supply to the contract pre-tiled modules that were assembled on site and grouted in situ for a purely professional finish. The bar installation was completed on time and is a stunning piece of ceramic craftsmanship, authentic to a Victorian bar from a bygone era.

The aluminium decking subframe is a great example of what is a very logical solution to a problem which has reared its head in domestic and commercial settings. Traditional timber subframes are naturally susceptible to decay and are difficult to preserve in the long term due to the problems with access. By using aluminium, that issue is avoided and our designs ensure strength is not compromised. “The paving support grate system is similar, in that it is a commonsense approach married to very clever design and materials. It enables paving to be installed where previously it would have been impossible, for example creating a raised platform on sloping ground. “All of our systems have also been used extensively on roof terraces and balconies, solutions which are attracting particular interest from architects who are increasingly specifying Ryno products as part of their designs. “For both new products the list of potential applications is vast, from domestic gardens through to residential developments and major commercial projects. Altesi Ristorante / Arqmov Workshop Within a neoclassical-style building, between 5th Ave and Madison in NYC, in a 210 m2 shop, the interiors were developed for this italo-french restaurant which served lunch and dinner within the restaurant and its terrace. The client wanted to widen his schedule and take advantage of the pedestrian traffic throughout the morning, permitting a new market. The layout included a bread and coffee bar that can be attended without the need of opening the rest of the restaurant. The space distribution was simplified to the maximum, walls were proposed as part of the cellar and it was integrated within the design. Booths
were also suggested and a bar within its own bar to accommodate a greater number of clients. Referring to the use of materials limiting them to homogenize tones and including a few textures, using marble, different tones of wood, palladium on the ceiling which gives the reflections and the illusion of space amplitude, Completely warm lighting was designed in such a way that it would give repetitive shadows throughout the cellar, some architectural details were accentuated on the bars and the polygonal spaces in which wine is exhibited.
The terrace was ambienced with natural wood wainscoting as a visual finishing in front of an adjoining wall with bare brick which completes the backplane of the property and a small vertical garden that integrates itself with a large neighboring tree.
