Rare Whisky Outperforms Gold, Wine And Equities In Stellar Year The market for rare whisky in 2015 significantly outperformed many other well established asset classes, including wine and gold, according to figures published today by whisky analyst, broker and investment experts Rare Whisky 101. In a record year for the rare whisky market, the leading index for Scotch whisky, the Rare Whisky Apex 1000 Index closed 2015 up 14%, outperforming Wine (LivEx -0.42%), Gold (-10.44%), and many of the world’s leading equity indices (FTSE 100 -4.93%, NASDAQ 100 +9.75%, S&P 500 +0.7%, Shanghai Composite +9.4%).

The total value of rare whisky bottles sold at auction in the UK in 2015 hit record levels of £9.56M, exceeding 2014 (£7.64m) by 25%. Over twelve months, 43,458 bottles of single malt Scotch whisky were sold in the UK on the open market, an increase of 9460 bottles and a 28% increase on 2014. As an indication of the speed with which this new asset class has emerged, 2009 saw just 4,072 bottles sold throughout the entire year.
Early 2015 saw a staggering rise in the values for Japanese whisky, with the Rare Whisky Karuzaiwa Index increasing nearly 75% in just nine months – a rise never witnessed previously by any whisky. Bottles which originally sold for £350 twelve months ago were achieving more than £3,000 on the secondary market. However, the last three months of the year a dip of 6% reflecting a pricing correction which is set to continue into 2016.

Macallan still Number 1 Macallan maintained its dominance as the number one traded distillery on a volume and value basis, accounting for nearly 10% of the market for all bottles sold and 23% of the total value. The next closest distillery from a volume and value perspective is Ardbeg with an 8% share of both volume and value. Age matters The importance of both age and vintage to value has increased over the course of the year. As new releases of aged whisky become increasingly rare, the secondary market highlights the continued significance of an aged statement. The older the age and the earlier the vintage, the better. Even poor quality old aged Scotch is becoming increasingly valuable.

Savoir was first created for The Savoy hotel in London in 1905, and its tailor-made beds have become almost as legendary as the stars that have slept in them. In creating a special bed to mark the occasion, Savoir’s designer, Mandeep Dillon, used Kobe’s best-selling chic and contemporary Chacar fabric to capture the very essence of the hotel. The design is inspired by the 1920 and 30s, the heyday of glamour, jazz and movie stars at The Savoy. Visually, the bed echoes the slim elegant lines of 1920s design and has a futuristic ‘Flash Gordon’ look with the use of sharp angles and metallic bronze silk. Its shape is emphasised by the deliberate use of a single fabric to upholster the whole bed including the legs.

The luxurious cotton satin comes in 94 colours from soft delicate neutrals, to vivid oranges and vibrant blues. Acklam Hall Unveils Head Chef Offering A Taste Of What’s To Come Acklam Hall’s restaurant has announced the appointment of its head chef as it invites customers to start making reservations through its new website, http://www.thebrierley.co.uk, from today (February 9th 2016). ‘The Brierley’ is named after the architect Walter Brierley who designed the alterations to Acklam Hall, in Middlesbrough, in 1912. The restaurant will serve homemade dishes from breakfast and lunch to afternoon tea and dinner. In addition, there will be a fine dining option on a Friday and Saturday evening. The Brierley will offer two dining experiences- The Salon, which will be open all day for breakfasts, lunches and evening meals as well as Sunday lunches, and the more formal Dining Room which will offer a range of afternoon teas and a la carte fine dining. North East chef Adam Anderson has been appointed head chef at Acklam Hall and is responsible for overseeing The Brierley restaurant and all event catering at the hall aided by his team of skilled chefs. Adam is a well-known face on the region’s culinary scene and has previously worked at a range of restaurants all over the North East including Wynyard Hall, Jesmond Dene House and Newcastle Football Club. Over the years Adam has worked under many established head chefs such as Steve Welch, John Connell, Alan O’Kane and David Williams.
Adam’s a la carte menu in The Dining Room will include dishes such as: - smoked rabbit, truffle puree and black pudding pastel; maple cured pigeon with braised spelt and crispy quinoa; and warm chocolate pudding with textures of orange. The Brierley will also offer breakfast and light lunches, sharing platters and evening meals all served within the relaxed atmosphere of The Salon. The Grade I listed building will open its doors this month (February 18th) following a complex renovation which has taken over 18 months with dozens of its rooms and features restored to their original grandeur. The re-development of the 17th Century building will create over 20 new jobs in Middlesbrough as well as opportunities for dozens of local suppliers. Adam Anderson said: “Managing the kitchen at The Brierley at Acklam Hall is such an amazing opportunity as it really is going to offer something very different- it’s full of surprises. It’s a great chance for me to show my creative skills as we are going to be offering a real mix of fine dining and comfort food as well as afternoon teas and other treats. There’s a major challenge ahead and I am looking forward to unveiling my food and team in the coming weeks.”

The Fight Against Legal Reproductions The UK Government announced the repeal of Section 52 of the Copyright, Designs & Patents Act in 2014: the copyright on furniture designs would be extended from 25 to 70 years after a designer’s death. Businesses were given five years to adjust to the change in law, which meant that most of the designs they were selling would then become illegal. By 2020, they should stop selling replicas altogether or else they could face a fine of up to £50,000, and a custodial sentence of up to ten years. A New Unexpected Deadline: April 2016 While those five years could have been sufficient for most companies to make changes to their business model, the UK Government, under pressure to comply with the new EU copyright laws, unexpectedly fast tracked the deadline to April 2016. Not only does the sudden decision harm businesses and create further job losses, but customers are affected in the long run too. They are, in a way, punished for not being able to own an iconic chair design, even though the original designs were meant to be affordable. As Ray and Charles Eames were famously quoted: “We want to make the best for the most for the least.” “It’s a sad time for design lovers everywhere. By abiding by the wishes of the furniture giants to hand over the

The Next Steps: From Stockist to Design Studio While many businesses struggle to find ways to adapt and innovate within the new timeframe (and possibly need to quit), the most logical step for Cult Furniture was to establish itself as a design studio, instead of being a limited stockist. After learning about the possible law changes in 2014, Fiaz Iqbal put together his own inhouse product design team to create Cult Designs: furniture inspired by iconic designs but with contemporary twists in the brand’s style, to replace their best selling iconic designs. The road from stockist to design studio, however, hasn’t been an entirely smooth one. Many of the new designs were work in progress and not due to be released until mid-2017. The sudden April 2016 deadline created a lot of pressure and stress in perfecting the new Cult Design range on time. But, with years of market research, the new designs are anything but a gamble. Knowing exactly what customers are looking for in terms of style, Cult Furniture will launch their new furniture line as an

Hotel And Leisure Group To Create Luxury Landmark Hotel After Acquisition Of Historic Liverpool Bank Building ONE of the UK’s finest neo-classical building is planned to be transformed into a stunning 227-room luxury hotel. Liverpool’s historic Martins Bank building, designed and built by Herbert James Rowse in 1932, has been acquired by leading hotel and conference centre provider Principal Hayley Group. The company is to convert the Grade II-listed property on Water Street into a stunning, luxury hotel with a spa, bar and fine dining restaurant. Work will start on the project this year with a potential opening in late 2017 or early 2018. The hotel will be the city’s first ever potential 5 Star luxury offering. Joe Anderson OBE, Mayor of Liverpool, said the scheme would be a landmark development for the city and was a signal of its
growing reputation as a global tourist destination and as a centre for exhibitions and conventions. Tony Troy, CEO of the Principal Hayley Group, said the acquisition gave them an important presence in the heart of Liverpool, where there was clear demand for a full service luxury hotel. Mr Troy said it was the city’s recent renaissance and its record in attracting business and leisure visitors which was making their investment possible and they were pleased to be working with a number of key city departments on the project. Castlewood Securities, which has owned the Martin’s Bank building for 20 years, has been acquired by Principal Hayley Group Hotels in the deal. Castlewood has obtained full planning and Listed Building consent for the proposed development.
The development represents an investment commitment to Liverpool of nearly £50m. It will lead to the creation of over 200 long term jobs and about 350 construction jobs over the next two years. The acquisition follows a wider £100m strategic repositioning of Principal Hayley Group’s iconic city-centre properties. The Royal York Hotel in York and The George Hotel in Edinburgh have both recently reopened following extensive renovations that honoured the histories of the two properties while adding state-of-the-art amenities. An additional multi-million-pound investment is planned for Principal Hayley Group’s manor-house conference properties in 2016.

£50m investment will lead to 200 full time jobs and 350 construction jobs Historic building was hiding place for britain’s gold during wwii Designed by noted architect Herbert James Rowse and completed in 1932, the Martins Bank building is considered to be among the finest classical buildings built in England during the interwar period. Much of the country’s gold reserve was secretly transferred to the building at the start of the Second World War in order to hide it from a feared Nazi invasion. The gold arrived in Liverpool in three heavily guarded trains before being transferred to the bank’s vaults. A plaque outside the building commemorates the operation, which was dramatized by the Emmywinning film The Bullion Boys. Mayor Anderson said: “I’m pleased to see these new and ambitious plans for bringing another iconic Liverpool building back into use. It is an important landmark in the city’s business district and its conversion to a destination hotel reflects the continuing strength of the city’s visitor economy. I welcome the new investment by Principal Hayley and look forward to seeing progress during 2016.”

The Temple House Located in the heart of Chengdu – one of China’s key centres of finance and commerce – is The Temple House, a historically-rich hotel that opened in July 2015. Designed by Make Architects for Swire Hotels, The Temple House is the third hotel in Swire’s flourishing House Collective portfolio, following The Upper House in Hong Kong and The Opposite House in Beijing. Key to the design concept was for the hotel’s form and materiality to convey outstanding design excellence, with a high degree of comfort and facilities, and a welcoming, well-embedded “local” quality. Katy Ghahremani, Make partner and lead architect on the
project, states: “The design was not a linear process. It was an iterative dialogue with Swire Hotels which made the process much more interesting. We could look at the design holistically and this created a really dynamic relationship between the design of the hotel’s external and internal spaces.” The main design trigger was the location of Chengdu itself – with its rich history, celebrated traditions and lush landscape. Brian Williams, Managing Director of Swire Hotels, clarifies: “We want people to come to Chengdu and have a unique hotel experience, one they couldn’t have in Hong Kong or Beijing. The hotel is unique to Chengdu, and unique in Chengdu.”
The hotel embraces a typical Siheyuan or ‘courtyard house’ design, with a sequence of courtyard gardens bordered by two L-plan medium rise buildings – one housing 100 hotel rooms, and the other 42 serviced apartments. A beautifully-restored Qing Dynasty heritage building, at the corner of the site, is the anchor and entrance point for the hotel. Guests reach the hotel’s core facilities by travelling through the heritage building’s internal two-storey high courtyard into a reception area, and enter the main hotel by passing down a grand staircase to the landscaped courtyard level. Located here are covered routes to the lift-cores for the hotel rooms and

apartments, as well as an array of restaurants, cafes, and other general facilities. Throughout the design process, Make and Swire Hotels undertook rigorous testing of visual and experiential possibilities relating to surface textures, internal light and shadow effects, and interior views. The city-facing and internal courtyard-facing facades were given entirely different treatments; the former is essentially solid and brick-built, the latter are sheer curtain-walls of subtly fritted glass, which maximise the reflection of light into the courtyard.

The city-facing brick facades of the hotel and apartment segments were inspired by the local production of brocade, with façade panels formed of brick and black solid reconstituted stone lintel elements. The three-dimensional woven façade combines modern design with the traditional Chengdu architectural elements of timber, brick and step stones.

Fire Retardants - Friend Or Foe? As you will know, it is the responsibility for Hotels to ensure that furniture and mattresses meet the UK Fire Regulations up to Contract Standard otherwise known as Crib 5 level. Whereas a retailer who sells to a customer is responsible for meeting the Fire Regulations, it is solely the Hoteliers’ responsibility to make sure that the product they are buying meets the higher Contract regulations. At the heart of the Fire Regulations is the Match and Crib Test. The Department of Business have been assessing the effectiveness of these tests. Currently individual component materials are tested rather than testing the finished item. When Trading Standards check products they will test the final product but these often fail because of the way they
are assembled and the materials used in assembly such as inflammable adhesives and glues. Furniture and mattress covering fabrics such as cotton and polyester have to be back-coated with Fire Retardant (FR) chemicals to meet the UK Fire Regulations. Fillings such as foam also have to be chemically treated with FR’s and amazingly up to 25% of the foam’s weight is in fact FR chemicals. The US first introduced these fire retardant chemicals in 1975 but in 2014 the US Fire Brigade, due to rising cancer rates amongst their members, and the Chicago Tribune effectively lobbied to ban many FR chemicals. The Question was also posed “Do these flame retardants actually work?”. Some argue that the FR’s reduce the burn temperature of the fire so increasing smoke and carbon monoxide. It is also argued that any reductions in deaths related to fires since the introduction of the regulations are more due to the introduction of smoke detectors and sprinkler systems. Apart from the human and animal health concerns, there are also major environmental problems connected with these chemicals, the most pressing being the disposal of treated furniture. The UK is a signatory to the Stockholm Agreement which means that in the next few years many of these FRs will not be able to be disposed of in landfill sites as
they are classified as Persistent Organic Pollutants (POPs). Furniture and mattresses containing these chemicals will have to be disposed by high temperature incinerators of which the governments admit, they have very few. The answer to many of these problems may be solved by using natural fire retardants like Wool. One cotton mill in the north of England now produces cotton woven with wool in a particular patented way which passes all the regulations right up to contract level. They call this product “Cottonsafe®”. Its fire protection lasts for the life of the fabric and has none of the disposal, health or environmental problems of the chemicals.

Hotel Mercure In Bucharest Hotel Mercure Bucharest City Center is a building with a story behind. The story appeared as a design consequence and has been further used as a feature for the hotel, which is a story-telling type.
The hotel facades have taken and reinterpreted architectural and symbolic elements from the immediate vicinity, so as to emit a cultural message, both urban and stylistically consistent.
As it is situated in a historic and eclectic neighborhood, but very central, we’ve had several attempts to find means of stylistic expression, until we decided that the future building must contribute synergistically to the character of the area, which led to a contextual approach.
The houses on this particular street were an inspiration for the arched windows, which we alternated with rectangular ones, in a playful manner; also, we reiterated one of the Romanian Athenaeum’s main architectural features, the portico, which is detached from the main volume and ceded to public space.

Last but not least, complementary to these archetypal items, on the main facade we have inserted a graphical collage of cultural symbols that takes the story further. Upon a crop of the entablement of the Romanian Athenaeum floats a pair of muses "descending" from the ceiling of the music salon of the museum George
Enescu - double tribute to two great local symbols: Romanian Athenaeum (50m away from the hotel) and the great composer George Enescu, which gives the name of the street on which the hotel is located. The Sid Lee Architecture & FCSD architecture + design consortium signs the revitalization of Casino du Lac-Leamy Wishing to reinvigorate its image and position itself as an essential actor on the entertainment scene, Société des casinos du Québec mandated the Sid Lee Architecture & FCSD architecture + design consortium to lead an intervention strategy at Casino du Lac-Leamy in Gatineau. The casino presented major organizational challenges: Its interior spaces were cluttered and undistinguished, producing a confusing and unwelcoming result, devoid of hierarchy or landmarks. The architectural intervention therefore aimed to bring coherence to the space; open perspectives to better connect the spaces and identify their functions; and rework the vertical lines offered by the building.
An aquatic theme was naturally chosen to develop a unique identity for the casino, located on the shores of a lake and surrounded by water. “The main staircase was brought to the middle of the central space, among the game tables and machines it connects to the restaurants and discotheques on the upper floors. Designed as a beacon visible from all around the casino, the stairs are dressed with a unique carapace composed of 595 backlit metal scales declined into 94 different models, reminiscent of fish skin and its changing reflections. An iconic architectural element, it centralizes all visual perspectives and asserts the space’s identity”, explains Martin Leblanc, Architect and Partner at Sid Lee Architecture.
Supported by the existing structure, the strategy developed seeks to establish targeted and efficient actions. The result is striking: A veritable ambiance has been created, radically renewing the public’s experience and attracting a larger and more diversified clientele, in a unique space offering a multitude of entertainment possibilities. The project was carried out in close collaboration with Lightemotion for an immersive lighting installation as well with Trizart-Alliance for the multimedia segment.

Seamarq Hotel The Hotel Tower is anchored to the summit plateau and located very close to the ocean as if it was emerging from the ground. In contrast, the Banquet Hall is located at a lower plateau connected by a bridge, both buildings integrated into the landscape. A rich sequence of spaces unfolds as a procession begins from the approach on the main road along Gyeongpo Lake, passing through the entry court and gate to the hotel entrance plaza that is marked by the local vegetation. The ascending road to the hotel flows gently around the natural terrain through the pine forest offering glimpses and framed views of the Gyeongpo Canal
and the Hotel. The sequence of outdoor spaces and landscape design concepts were developed in collaboration with James Corner Field Operations and a local landscape consultant. Richard Meier comments: “With this hotel we aspire to create something new and innovative. The principles that guide the work in our office are rooted in timeless, classical design issues such as the Context, the Site, and the use of Natural Light. In my work I seek to find through design the best of what exists and what can be. My purpose is to deliver thoughtful, original modern architecture that is as accessible as it is beautiful, as humanist as it is disciplined. This is an architecture
which is concerned with the individual as well as the community at large. Our primary goal for the Seamarq Hotel has been to create a strong sense of place by enhancing and transforming the existing site in a dramatic way. Many of the cues for the design came from the site--its light, its landscape, its topography. Perhaps the most important initial decision was to work with the configuration of the land and to design the hotel complex in relation to the existing topography.� Dukho Yeon, Design Partner-in-charge, comments: “This is an especially important project to me

personally because it is the first project in my home country. It has been a challenging assignment for us because of the complexity, the subtlety of the program, and the sensitive nature of the site but we are very proud of the excellent result that is far beyond our expectations. “In designing a building which is on the water, the water view takes priority, so that all of the public spaces, all the living spaces open up to the water. So there is a relationship between open and closure, between opacity and transparency. The guest rooms and the public spaces at the Seamarq Hotel are in many ways related to some of the early houses that
I have designed, such as the Smith House and the Douglas House where there is an open living space, a great deal of transparency and an openness to the nature around the site,” said Mr. Meier. The porte-corchere framed by the Hotel building canopy and entrance to the Banquet Hall opens to a grand two story lobby lounge and bar facing the sea at ground level with a wraparound outdoor deck as an extension of the lobby. The views are unobstructed and maximized with indoor and outdoor spaces that flow seamlessly together. The restaurant is nestled into the existing landscape one level below the lobby and enjoys immediate and close views of the sea and

the beachfront. The spa is one more level below, with spaces open to the dense vegetation and landscape, with its form following the natural shape of the hill. A presidential suite is at the tower’s summit with a generous terrace and courtyard garden with open views in all directions. The crisp angular shape of the building contrasts with the soft shapes of the hill and lower floors of the restaurant and spa. The building’s changing silhouette is perceived differently from various vantage points as floating balconies, articulated planes, varying heights and the overhung canopy of the top floor Presidential Suite are characteristic elements of the design. The

exposed façade of the core is expressed with an irregular pattern that creates movement and balance. The forms expressed in a light and white color palette will make the building transform throughout the day in the interplay of light and the surrounding context. Because of the mostly cool, minimal color palette of the architecture, the lighting was used to highlight all warm elements, such as the wooden feature stairs and wooden ceiling panels, to bring warmth to the interiors. Alternating cove and spot lights accentuate the geometric angles used to delineate the interior and exterior spaces.

“To achieve this, we opened up the views into the kitchen and linked two previously separate dining areas into a single space, maximising the available floor. A focal point of this design was the visual linkage from the bar to the kitchen fronts, which was realised through the use of hexagon shaped floor and wall tiles from Solus Ceramics’ versatile Program range. The bold and angular lines offered by the hexagonal shape, combined with mixing and matching different coloured tiles together, allowed us to create a modern and energetic central aesthetic that flowed throughout the entire restaurant.

Shed launch Zelman Meats Zelman Meats is the latest experimental venture from the renowned restaurant group Goodman; those behind the limited menu concept Burger & Lobster, the immense steakhouses Goodman and the exclusive Steak and King crab concept Beast. Stamped with Misha Zelman’s name, Zelman Meats presents itself as an approachable and affordable location, with a menu based upon their repertoire and what they do best – beef. The menu is limited and changeable, but remains true to the refined methods involved in serving up good quality meat whilst offering up the opportunity to dine at a lower price-point to Goodmans.
The site in Soho, tucked away on St Anne’s Court, has proved to be a challenging location in the past but it has also enabled the Goodman Group to bring a great steakhouse to the heart of Soho. Like the Zelman Meats offer of ‘great beef, great wine’, the brief was to transform the space into an uncomplicated but well executed environment. Although adopting a no frills approach to the design, Shed also wanted to create an environment that was like a old pair of brogues; comfortable, familiar, at times cool but never try hard. The exterior has taken on dark shades of black and grey so as to accentuate two statement, oversized
and illuminated signs flanking either end of the 25 meter façade to signal the destination. Glimpses of the restaurant interior and wine displays help to set the scene inside. Shed set out to divide the vast 360sqm front of house area to include a private dining area, open kitchen, main restaurant area and bar area. Oversized oxblood leather booth seating sits alongside repurposed carrara marble table tops whilst overhead, mild steel luggage racks provide a playful yet practical solution for customers’ belongings. The theme of bold statements is again used internally through a number

of conveniently placed immense blackboards which eliminate the need for conventional menu sheets. Whilst a series of mesh screens and wine cages assist in breaking up areas within the restaurant. Oversized weighty butchers block tables provide communal seating for large parties and lunchtime take away customers. The blacked out exposed services and array of salvaged industrial lighting create intimacy for each table. There are obvious bold hang-ups from its previous incarnation; a fish tank and sink by the entrance, the stainless kitchen ceiling from where the extent of the
kitchen was reduced, the miss-matched layout of the mosaic flooring and even the crockery. However this is intentional, after all Zelman Meats is somewhere not to be taken too seriously and sets up a light-hearted unassuming ambiance. In other instances, the existing furniture has been woven into the scheme, such as the marble bar which has gained a new gantry and timber cladding. The final layer and quirky personality to the design comes through some carefully selected artwork which adorns the walls. Artwork by Butch Anthony, an American artist from Alabama, who collects objects

and paintings and transforms them into statement pieces with his signature style is layered upon old black and white butcher prints sourced from Nebraska. “This has been our first project with Shed and potentially the hardest challenge we have ever assigned: the budget was small, the turn around on site was limited to two weeks and the brief was to produce something unique. I am confident in saying that this was all achieved. I expected professionalism but was surprised by their flexibility and problem solving. The training programme is open all year round to people of all ages, whether 18 or 65. The only requirements are that applicants hold no previous experience and have a strong work ethic. Rookies will be guided through their training by an experienced mentor from within the company, as well as an external tutor, who will be on hand to assist them with both theoretical and practical study and ensure quality service levels are always delivered. The training programme will be rolled out to include all of 16 Hospitality’s sites across the north west of England and north Wales, and a small group of students will be recruited at each of the venues. The Hub’s open days in February, marked the launch of the programme and were

Dynamic New General Manager Spearheads Hogarths Stone Manor On Its Upward Journey Beverley Molmans has been appointed General Manager at Hogarths Stone Manor, a stunning Tudor style, 56-bedroom hotel nestling in 27 acres of gardens and grounds near Kidderminster, Worcestershire. She recently joined the AA four star hotel after spending five years in a similar position at Macdonald Windsor Hotel, where she played a leading role in its opening back in 2010. Hogarths Stone Manor is currently undergoing an exciting two-phase refurbishment to its public
areas, rooms and gardens planned for completion by late spring. The programme will restore the hotel to its former glory, while offering a more classic, contemporary feel in keeping with the aspirations of today’s guests.
