The first impression counts!

The initial first impression can set the tone for the entire customer experience. As a guest entering a hotel room, the first thing that your guest will scrutinise is the bed, which is no surprise as this is where they will spend most of their time. Therefore, quality and cleanliness of the bed linen has a direct influence on the customer experience. However, hygienically clean is usually not enough. For many hotels immaculate linen is a key requirement as holes and stains in the linen can easily overshadow an otherwise pleasant guest experience.

The Problem: Inaccurate Quality Controls

The laundry and hotel staff do an excellent job, but are also often restrited by time pressure. Stains and holes are often only discovered by the hotel guests, leaving a lasting negative impression of the service received.

The Solution: Quantex from Kannegiesser

Using the Quantex scan system, we facilitate automated, continuous quality control of items on Kannegiesser ironers. The scan system checks every piece of linen and guarantees highest quality that is individually tailored to the needs of each customer from the hotel and restaurant business. State-of-the-art camera technology mounted on the folding machine detects stains and holes on both sides of every piece and automatically separates rejected items. Quality criteria can be individually determined individually for each type of linen and

each customer, therefore guaranteeing bespoke, optimum quality.

The scanning system reduces workload in quality control, speeds up the feeding process, and lowers the error rate.

Quantex ensures reliable stain detection on the upper and lower side of flat linen. The detection of holes in the textile also works with multilayered articles, such as hidden holes in bed linen. Alignment issues, wrinkles, edge irregularities and creases are also detected. Identified items are then sorted out and either collected in a laundry trolley or fed automatically via a conveyor belt or vacuum system for further processing or re-washing.

The Quantex Scan system from Kannegiesser enables the textile service providers to automatically check the quality of flat linen items throughout the entire process. It detects stains or holes on both sides of the laundry item. By adapting the quality criteria to the type of laundry, the delivery quality is significantly improved. This benefits two areas; In the laundry, staff are relieved of quality control, errors are reduced whilst accelerating the delivery process. Early error detection benefits the hotel as this process eliminates the time cost of remaking a bed.

Independent and impartial support for hotel stakeholders and investors

- ASSURED HOTELS -

Pent up challenges…

The UK hospitality industry has weathered the pandemic years well, and despite the media doom a steady diet of central support and peaks in demand have left the majority in good order. That said the economic climate upon us now will present very different challenges, where clearly businesses will have to fend for themselves much more than we have become used to.

Rising costs and overheads, together with labour shortages causing salary increases on top of lockdown legacies, are all putting unprecedented pressure on margins and cash flow. Assured Hotels have continued to offer insight and how to guides in a series of blogs on our website . We have championed solutions and support, whether that be Government, from our own skill set and resources or our partner networks

Help is at hand.

We have been engaged in hotel turnaround and restructuring, and in the acquisition or disposal of hotels on behalf of our clients.

What We Do Hotel Acquisitions & Disposals

Property transactions are complicated and buying or selling a hotel is no different. If they become drawn out during due diligence then costs can quickly spiral damaging both sides’ confidence in a deal, and in the worst-case prohibit completion.

LE MÉRIDIEN ILE MAURICE UNVEILS $60MILLION REFURBISHMENT

Le Méridien Ile Maurice has announced the complete reopening of the resort following a $60million refurbishment. Located in Pointe aux Piment in northwest Mauritius, and set on a kilometre of sandy beach, the resort offers 261 redesigned guestrooms and suites and an adults-only wing alongside a world-class spa and fitness centre, three pools and a choice of four restaurants and three bars.

The new design takes cues from the resort’s surrounding tropical landscape and guests are invited to connect with nature and soak in the sweeping views of the Indian Ocean. Using a sympathetic colour palette and natural materials to seamlessly blend the property with its natural environment, the design transformation begins in the lobby, which offers uninterrupted views of the Indian Ocean and an open- air relaxation area.

The guestrooms are modern and minimal with a sympathetic colour palate of creams and blues used to seamlessly blend the hotel with its surroundings. Custom headboards are reflective of the rustic materials found in Mauritius, while the contemporary bathrooms feature large oval baths and a separate shower.

Nirvana, the adults-only wing of the resort, features 51 guestrooms with unobstructed ocean views and Prestige Suites complete with private plunge pools, whilst the Royal Suites feature a separate living and dining area and bar.

The resort’s redesign continues in the Explore Spa which now features the first snow room in Mauritius, in partnership with

Phytomer. In addition, guests can make use of a sauna, steam room, jacuzzi, plunge pool, five treatments rooms and a fitness suite, as well as a hair salon, relaxation garden and yoga studio. Mama Shelter to open in Rennes, Brittany

In March 2023, Mama Shelter will be launching their latest hotel in Rennes, amedieval cityin northern France where modernism and tradition meet. Rennesis thesecondlargest city in France in terms ofnumber of students, which givesthe oldcity with antique architecture a bustling atmosphere.

LOCATION

Mama Shelter Rennes is centrally located just a fewsteps from Place des Lices and the famous rue dela Soif. It is a five minute walk to the Sainte Anne metro station and only20-minutes to theTGVtrain station connecting Paris Montparnasse to Rennes in 1 hour and 30 minutes. Mama Shelter always seeks to open in cities and neighbourhoods that are onthe rise.

Complying with the instructions of the Architectes des Bâtiments de France [conservation law], Mama Shelter Rennes is writing a new chapter without overshadowing the previousones. The hotelwelcomes localsas well as visitors from abroad, and is ideally located in thecentre of a square where passers-by can stroll and wander in. In this square, guests can enjoy the cocktail bar, the lounges and ninefood shops, including a restaurant that are all retailers independent of Mama Shelter. A natural extension of the city and a new district in the historic centre, city dwellers here can stock up on exceptional products or enjoy F&B offerings with the hotel’s guests, in a friendly square.

DESIGN

Benjamin El Doghaïli, architect and head of the Mama Shelter design studio, has embraced Rennes’ vibrant heritage and designed the hotel to be at one with its environment. The 119 bedrooms (including Mama’s 5* luxury bedding) vary in sizes and shapes, with some nestled under the roofing, and some carrying oldmouldings and a fireplace. The bathrooms are timeless, with large black and white striped tiles, a large spacefortoiletries and organic beautyproducts from the Mama Skin range.

El Doghaïli, in this former banking property where currency was once minted, has drawn on the vibrant local culture. The lobby is home to a large rounded counter adorned in a mosaic frieze of buckwheat pancakes, a classic delicacy of the area, in the Odorico brothers’ style, with saltedbutter-caramelcoloured walls. Inthe large brasserie

restaurant offering beautiful views over the city, upholsteredbenches witha custom-made fabric evoke the popular saying “Vouloir le beurre et l’argent du beurre” [To have one’s cake and eat it, too]. One of the ground floor lounges is decorated entirely in pink and embellished with lobsters, mussels, seaweed and oysters, to evoke the delicacy of local seafood platters. Jumbo-sized Chinese umbrellas showcase the umbrellas mixologists decorate cocktails with, as a reminder that the Breton people are travellers at heart. The pattern on the carpet along the corridors represent the lace of the Bigouden headdresses, the stoat of the flag of Brittany, and the wolf, the fox and the weasel of a medieval songof Burgundy origin.

AMENITIES

Guests can enjoy the rooftop with sweeping views of the city. The rooftop, a novelty in Rennes, provides an incredible view of the city’s well-tempered character, bourgeois19thcentury buildings, ramshackle 16th century houses, and towers built just like the tapered bell towers of its churches. In the basement, several colourful karaoke rooms willbe available to hire for groups.

Another highlight is the swimming pool, with disabled accessibility, a hammam and a sauna and a Mama Skin Spa -a first for Mama Shelter -a boudoir nestled under stone vaults. Absolution, a French organic cosmetics house, has partnered with Ho Karan, a Breton cosmetics brand renowned forits hemp-based treatments to offer variousrelaxing treatments.

Save water & energy with Neoperl

Record temperatures and a severe lack of rain has caused water shortages across the UK this summer, what better time to take action to save water in your establishment and save the energy used to heat it.

Neoperl UK is a manufacturer of water stream devices and flow regulators. They are precisionmade devices that can be inserted at the end of a tap spout or upstream of a shower outlet, to reduce and regulate the water flow without reducing performance.

As water pressure fluctuates throughout the country, it’s impossible to produce a tap or valve shower to work with the same efficiency in every commercial kitchen or hotel bedroom. Manufacturers therefore produce new taps and shower heads with optimal performance to work their best across all pressure situations. Now the flow can be tailored to a situation by retrofitting aerators and flow regulators to save water. There’s no point in having a strong flow rate if the tap is only used for washing teeth and hands or to have a shower that literally splashes out of the enclosure. These retrofit products allow the performance to be checked on site and adjusted to suit, ensuring a comfortable and suitable flow is reached. This is particularly important where rows of washbasins or multiple showers are prevalent. A Pressure Compensating Aerator (PCA) or flow regulator will help distribute the water more evenly throughout the building to mitigate flow issues from the effects of pressure fluctuations.

Shower flow control

A standard European shower head will produce around 18 litres of water per minute at 3 bar of pressure. A flow regulator like these could reduce this to a comfortable flow and dependant on the specified flow rate, save thousands of litres of water per year.

Bathroom tap pressure compensating aerators (pca’s)

A tap aerator adds air to the water flow creating a soft comfortable stream that feels plentiful and prevents splashing. A choice of flow shapes can be selected, and it’s a 5-minute job to replace the incumbent anti-clogging or stream control device in place, with a flow regulator. They are also available with ‘smart limescale clean’ nozzles to prevent limescale build up too.

Kitchen taps too

It’s always been harder to save water in a catering kitchen with the need to quickly fill pans for cooking or sinks for washing up. However, there are retrofittable aerators that can be switched from a standard water saving flow to full capacity in an instant allowing the tap to be on eco-mode for general use but boosted to a fuller flow when required.

Fitting is easy

It takes just a few minutes to fit an aerator in a tap or flow regulator in a valve shower and yet it can literally save thousands of litres of water each year. For the taps, the first job is to work out which product is required and which tool to remove the existing stream control. The new pressure compensating aerator is then placed and re-screw back into the spout end. To make a shower run more efficiently is a similar exercise by fitting a flow regulator upstream of the outlet. It is not recommended to fit an electric shower with these flow regulators as they will already be in place at the point of manufacture.

Marriott Château Champlain Hotel

Originally designed by Quebec architects Rogers D’Astous and Jean-Paul Pothier in 1967 at the time of the world’s fair, the Château Champlain is notable for its iconic structure and technical accomplishments. Overlooking the city from the top of its 128-meter, 38-story height, the hotel was once the tallest in Canada. Today, it continues to catch the eye of passers-by downtown with its rhythmic half-moon windows and the neo-Roman arches of Windsor station. Earning the nickname of “the cheese grater,” these window frames simulating the look of balconies were put at the core of the design narrative created by Sid Lee Architecture.

FIRST RESTORATION

Initially undertaken following the hotel’s acquisition by the Tidan Group in 2018, the restoration project effected by Sid Lee Architecture represents the first major renovation of the building since its construction.

Symbolic of Quebec’s architectural heritage, not to mention being an exceptional visual landmark at the heart of the city, the Château Champlain today unveils an updated design that enhances the majestic urban landscape offered by its variety of panoramic views. Reimagined in an elegant, timeless style, the new Château Champlain reasserts its place amongst Canada’s most eminent hotels through a renewal of its interior design that integrates the spirit of the Marriott brand.

LIKE A WINTER GARDEN

Bordered by the gardens of Place du Canada, Dorchester Square, the Old Port, and Mont-Royal, the Château Champlain enjoys an exceptional location within the city. Inspired by the uninterrupted views offered by the hotel’s interior “balconies,” Sid Lee Architecture decided to go with an original conceptual approach that highlighted the beauty of the surrounding landscape during winter.

- 26DESIGN & ARCHITECTURE

The contrast between the characteristic cold weather and the hotel’s warm hospitality is materialized in the spatial experience through the use of organic forms, desaturated colors, and reflective finishes as well as by the use of natural materials such as wood and stone. The beautifully crafted interiors also include many nods to the Saint Lawrence River as well as the neighboring gardens, as if to extend their visual traces into the heart of the building.

The Château Champlain has been reimagined as a nearby refuge in the heart of the city—a comforting, harmonious environment that encourages taking in views of the city, all year long.

PUBLIC SPACES

At the hotel’s entrance, porcelain and finely veined white stone with the appearance of icy surfaces were carefully selected to cover the arches and floor. On the lighting fixtures and in integrated furnishings, golden accents reminiscent of bare branches punctuate the space with warm touches, evoking reflections of light on the snow. Behind the reception counter, an art piece designed by Sid Lee Architecture, in collaboration with MASSIVart and executed by artist Pascale Girardin, rises delicately and sets the tone for visitors’ experience of the hotel.

The open, multifunctional Greatroom permits visitors to wander around as they would in the city, discovering references to the organic world outside in its design details. Wooden openwork architectural screens evoke the ambiance of the mountain, giving way to spaces that are intimate without limiting the flow of light within the space. These fluid spaces were conceived to be continuous in order to facilitate wandering or pausing to eat, drink, work or have a conversation throughout the day.

Convivial as well as enveloping, the restaurant is notable for its compositional style reminiscent of the interior promenades. The subdued lighting simulating skylights tracks the progression of the sun, changing

from bright light in the morning to a subdued twilight ambiance at the end of the day.

The exclusive “M Club” accessible from the Greatroom stands in contrast to the surrounding design with its walnut wood paneling and more somber color selections. Prized by its members, this section includes a lounge and workspaces, as well as a dining room featuring a sophisticated, modern design that offers an elevated experience in keeping with Marriott’s highest standards.

In the public areas, certain elements were preserved— such as a picture of Samuel de Champlain himself, recalling the original designers’ fascination with this figure—in order to underscore the property’s historic foundations.

PRIVATE SPACES

Throughout its 614 rooms, the design was revamped to give the window the importance it deserves through the use of soft shapes and complementary colors. The carpeting, wall coverings, and integrating furnishings designed by Sid Lee Architecture and produced by local company Meubles Saint-Damase adorn the rooms, evoking a sense of comfort.

The challenge in redesigning the rooms lay in preserving their existing partitions.

- 27DESIGN & ARCHITECTURE

The room divider in the center of each room was reconceived to create a private dressing area serving as an antechamber to the bathroom.

By keeping the skyline within view and enhancing the rooms with light, neutral tones, the visual palette now puts the accent on the multitude of views offered by the rooms, whether they face MontRoyal, the river, the port, or downtown. The result is a renewed, updated version of the hotel that will stand the test of time while guaranteeing a restful yet memorable experience.

INTEGRATION OF ART

MASSIVart collaborated with Sid Lee Architecture for the integration of 59 works in various spaces of the Marriott Montreal Château Champlain.

Whether they are sculptures, prints, illustrations, photographs, or tapestries, all are inspired by the theme of a winter garden, each artist has made their own interpretation. The works support the architectural vision of the renovation, creating different stories linked by the same theme. The messages are conveyed not only through the visuals but also through the materials and the choice of colors, allowing us to appreciate the beauty of a Montreal winter from the inside throughout all seasons.

The major works are located in the hotel lobby. One of them is a projection on a printed image by Canadian artist Sabrina Ratté. Evoking a winter landscape where a floating entity appears to be made of flesh and air, gravity and lightness - an ambiguous presence embracing its environment.

Margot Klingender’s Sunflowers is an impressive sculpture based on the intimate observation of gardens in the Canadian artist’s neighborhood. She mimics the irregularity of the natural world, transforming it into something both naîve and dangerous.

Finally, the Montreal ceramic artist Pascale Girardin, known notably for her large-scale creations in prestigious locations around the world, created Drifts, a 59’ plus bas-relief designed to greet guests in the lobby. Each curve was carefully shaped to emulate the generous and soft nature of a snowy blade.

light to descend through the middle of the seating area during the daytime. Ceiling suspended circular LED lights form a set of endless glowing moons, providing guests with a poetic nighttime experience.

The bamboo and rattan applied to all guestroom headboards are in the same pattern as those in the lobby, but with different dimensions and thickness. Floated by concealed lights, it aims to provide guests with a peaceful environment and an elegant atmosphere.

MeeHotel, a new urban resort hotel in the city of Shenzhen, China, aims to provide business travelers with a peaceful state. The project location is called “Bamboo Forest”, so the design team naturally generated the story from this name.

Starting from the lobby, bamboo was selected as the key material and contributes to a lobby space that greets visitors with sophisticated light and shadow effects on the main wall. Various on-site tests & experiments with traditional bamboo weaver were done to create full height screens to define the reception and lobby lounge areas. A pitched roof ceiling and natural diatom mud finished walls, overlaid by articulated light and shadow effects, provide a minimalist leisure experience for the entire space.

Double height central courtyards were introduced on every two guest-room floors. A reflective lake with a bamboo installation of dancing curves falls naturally, as if clouds are floating in the air. This ceiling-hung structure, produced in consultation with bamboo masters, is curved by making use of its natural elasticity and traditional connection method. Guests will experience the feeling of passing through an abstract bamboo forest before arriving at their rooms.

Sky Café is located on the top floor and is a zen and church-like space constructed as a full height bamboo structure. A skylight above allows natural

Not just another boutique hotel project, PANORAMA Design Group adds a layer of traditional culture to a hotel space providing relaxing and comfortable journeys in more meaningful ways. By celebrating the unique quality of bamboo, from the architectural to the interior levels, we continue to promote and allow business travelers to appreciate the beauty of traditional handicrafts that may otherwise have been ignored. It can ultimately form aesthetic, functional, and cultural enhancement in our busy urban lives.

Inspired by the unique spatial characters of Hong Kong, PANORAMA’s design team adopts boundarycrossing strategies to produce new propositions and unique experiences for different typologies of “multi-purpose/composite spaces”, responding to Asia’s rapid-changing lifestyles. These propositions are developed from well-considered user research, location-based importance, market trends, budget requirements, and operations for every size and type. Each environment is assured of a dynamic, vibrant, and unique character in its own right.

Scott’s Restaurant – Richmond

- WFC CONTRACTORS LTD -

A recent project that makes us very proud, Scott’s Restaurant in Richmond opened in October – an absolute gem on the River Thames. As you would expect from a Caprice Group restaurant, there are glittering, exceptional, luxurious finishes throughout.

The fitout was to an existing building, over three floors, including an external terrace on the first floor overlooking the river. The Cantor Masters’ design is a wonderful, eclectic mix of glass, mirrors, fabric, colour and art. It is sumptuous and classy but also feels vivacious and convivial.

A centrepiece Corian® crustation display was made to match the original at Scott’s of Mayfair in Mount Street and is a piece of art in its own right. Corian® is non porous and offers a thermal inertia that makes it ideal for holding the vast quantities of ice required to keep seafood fresh.

The fishtail mosaic floor tiling around the bar also echoes the design at the Mayfair restaurant, and to achieve the fullness of the corners, each individual, tiny tile was laid by hand by WB Simpsons.

The glass tiles for the magnificent columns came from SogniDiCristallo®, 100% made in Venice of traditional, handmade cast glass. The glass arrived, together with every single component to construct each column, together with a professional team. It was fascinating to watch the craftsmen affix each tile in place, like a jigsaw puzzle, and see the columns emerge.

There are 16 exquisite SogniDiCristallo® chandeliers in the restaurant. Martin Field of TEI Electrical, responsible for all the electrical works on the project, reported he’s never seen quite so many boxes of lighting arrive for one restaurant project. The component parts for one chandelier arrived in three

DESIGN & ARCHITECTURE

sizable boxes and each one had to be painstakingly built from the hook plate to the final delicate drop. Each chandelier took between four to six hours to complete.

To create the look of aged yellow paintwork, six or seven layers of yellow and red paint and, to the untrained eye, a modicum of ‘scuffing up’ in between coats was required. The exact technique is a secret of Dominic Lewis at The Finishing Company.

WFC and our sub-contractors provided 24-hour site working hours in the weeks leading up to handover as part of agreed acceleration works. After handover, a full M&E team was on standby during the first few live services.

Working in such close proximity to the River Thames, we were highly conscious of environmental agency requirements throughout and followed guidelines to the nth degree. In addition, we worked with Thames Water to install a new water mains connection, again adhering to stringent requirements. The building is in an area of ‘protected view’, so the outside of the building and surrounding greenery had to be protected during the works.

Regarding the nuts and bolts, before the transformation could start, the two-phase project included major enabling works before fitout. These works comprised a range of structural alterations, demolition, steel mezzanine external plant deck, steel mezzanine kitchen, full tanking system in the basement (critical as the property is so close to the Thames), new staircase, below ground drainage alterations and screed infills.

Based on the success of this project, WFC is now working on the new Sexy Fish Restaurant in Manchester.

Fresh, Casual Vibes for a Brand-New Neighbourhood

- ATELIER ZÉBULON PERRON -

Atelier Zébulon Perron, a firm renowned for its distinct interior design services for the commercial sector, is proud to unveil Pancho, a new restaurant designed for the first dual Branded Hilton Garden Inn & Homewood Suites Montreal Midtown, a central component of Montreal’s newly built Westbury neighbourhood. The new 290-room, dual-branded hotel complex forms part of an ambitious urban development that will include four residential condominium towers, an office tower, retail spaces, and a central park. Atelier Zébulon Perron’s design concept for Pancho draws on the principles of a casual Mexican taqueria.

“This was very much a collaborative effort between us, ownership, and the restaurant operator,” says Zébulon Perron, founder and lead designer of the firm that bears his name. “We worked together to develop a vision that would blend into the vibe of the newly-built neighbourhood and ensure its pertinence in the day-to-day life of the district.”

A component of a new community quilt

The firm focused on designing a vibrant ambiance that would service the needs of the hotel, but would also appeal to residents of the neighbourhood and the public at large. They approached the project from

the onset as something central to the community vibe, with a focus on functional transitions from morning café settings, to casual lunches, and slightly more formal evening dining. The space was conceived with floor-to-ceiling windows that open seamlessly onto an exterior terrace, further contributing to the concept of extending the vibrant environment beyond the hotel’s boundaries.

“We focused on creating multiple experiences in order to make the space very dynamic,” explains Perron. “We wanted to design a space that would become part of the neighbourhood fabric, where people will gather together for a drink or a bite to eat.”

- 37DESIGN & ARCHITECTURE

A convivial and immersive setting

‘Fun’ is the operative word at the core of Pancho’s functional design. Custom-made terrazzo covers the floors and bar of a small dining room area articulated around a central kitchen, the latter immersing patrons in the convivial experience of the restaurant’s operations and bar service. With wrap-around seating directly overlooking kitchen operations, patrons are drawn into a dynamic and immersive experience. In keeping with the project proposal, Pancho offers multiple vibes within the same space. With its variety of seating types at the bar, around the kitchen, and on the terrace, the overall space articulates its subspaces.

“Our intention from the outset was to design activation around the bar and the kitchen area in order to create a sort of ballet of captivating activity,” explains Perron. “As a firm, we focus intensely on user experiences when we plan spaces like this, and we think about how people will absorb the atmosphere and be energized by it.”

Tribute to traditional elements

Pancho’s casual spirit is evident throughout, from the presence of colourful garland-style lighting, to the choice of materials, including a terrazzo-clad bar

around the kitchen area. The centered kitchen is a central component of Pancho and is highlighted by an imposing sculptural frame that descends from the ceiling. In addition to its functional purpose in concealing the mechanical components of the kitchen operations, the ceiling structure boldly reduces the space to a human scale, illuminated by hand-woven pendant lights designed by local artist, Amulette.

With its original seating, colourful patterns, and orange-tiled walls, the nouveau postmodern approach to Pancho succeeds in capturing the casual and exuberant essence of a Mexican taqueria.

Emma, came out to visit us when the hotel was just a building site. She took away our rather vague/sketchy brief and returned with the most amazing mood boards and ideas that we both fell in love with. She worked with us throughout the project and could not have been more supportive! The look and feel of the hotel could not have

been achieved without Emma and her suppliers and we cannot thank her enough. We would have no hesitation in recommending her.”

“Emma was a tremendous help to us when we moved house. We needed to make decisions on interior decoration, floor coverings, curtains, light fittings and new furniture. Emma took time to understand our preferences and then provided invaluable advice. She was very professional in all her dealings with us. She prepared orders on our behalf and arranged delivery and help from tradesmen when required. We are delighted with the end result and would highly recommend Emma to any potential new clients.”

Restaurant Circa launches Friday night dining and sunday lunches at Sandridge Barton

Exeter-based Circa has moved its operation to Sandridge Barton, the home of Sharpham Wine.

Named as the catering partner for the new visitor centre and winery earlier this year, Circa is now open five days a week, Friday evenings, and for the restaurant’s celebrated Sunday roasts over the colder months.

Open Thursday to Monday, from 10am-4pm, the on-site restaurant offers a relaxed atmosphere, both inside and on the south-facing sun terraces, using only the best local and seasonal produce.

On Friday evenings, Circa at Sandridge Barton will be open from 6pm-9pm offering a three course set menu priced at £35, and a tasting menu for £45, with an optional wine flight for £25.

Sunday lunches will be priced at £25 for two courses and showcase native, South Devon beef from the estate.

Open until the end of December, from 2023 onwards, the restaurant will be open from March through to December. Booking is advised and can be made at sandridgebarton.com/restaurant.

With both Sandridge Barton and Circa having a strong focus on sustainability, it’s the perfect partnership. The Circa team work closely with small, local, ethical producers, and with the estate’s farmer Phil Tully, to showcase the top-class South Devon beef and other rare-breed livestock. This is alongside foraging for ingredients on the wider estate.

Rob Weeks, owner of Circa said: “The main reason we decided to come here was the fact the estate is

- 44FOOD & BEVERAGE

set in its own 450 acres. We’re all keen for the new restaurant to showcase the quality of the produce grown and reared here.

“It’s an absolutely perfect fit because we love being hyper-local and sustainable in everything we do. Sandridge Barton is located right in the heart of one of the most productive and fertile places in Britain. Moreover, we share the same ethos as the people who’ve been making the famous Sharpham Wine for many years.”

The local area, in the heart of the Dart Valley, is full of world-class produce. With Brixham Fish Market less than five miles away, and the River Dart bordering part of the estate, Circa will offer the freshest fish and seafood available.

The entire menu is a celebration of what South Devon has to offer. It will change from season to season, offering visitors many opportunities to experience new dishes and produce, encouraging them to return time and time again.

Duncan Schwab, CEO and head winemaker at Sandridge Barton, said: “We are delighted to have Rob, and the Circa team, managing and developing our restaurant offering at Sandridge Barton. In the past, when we were positioned on the Sharpham Estate, we had around 20,000 people a year visit us and we expect a similar number of visitors each

year at the new site. With the investment in the tanks, barrels and other vital pieces of winemaking equipment we are anticipating an excellent showcase of wines over the next few years, among the very best produced here in England, which will accompany the delicious food served by Circa.”

New Menu to Launch at The Langham London’s Celebrated Bar

this

November

- ARTESIAN -

Artesian has partnered with chef Angelo Sato, of Humble Chicken in Soho, to create an exciting new food menu for The Langham’s celebrated bar. Launching on 10 November 2022, the menu has been inspired by traditional Japanese dishes and ingredients. Angelo has worked incredible depth of flavour into the dishes, pushing the boundaries of conventional bar snacks whilst also retaining the moreish, easy to eat style that is so well suited to bars.

Japanese-born Angelo is best known as chef-owner of Humble Chicken in Soho, a critically acclaimed yakitori-focused izakaya bar that celebrates grilling every part of the bird over charcoal. He is a champion of zero waste cookery and wherever possible uses local, seasonal produce to underpin the sustainable ethos of his menus. In creating the menu for Artesian, he has been inspired by the food of his Japanese heritage, reinventing the dishes and flavours of his home country in a modern and creative way. The use of homemade fermented ingredients such as yuzu kosho, citrus kosho and koji barley will add to the distinctive character of the new menu.

Angelo’s sustainable and creative approach to cooking perfectly complements the work of

Artesian’s Head Bartender, Giulia Cuccurullo, with cocktails from the bar’s Duality list being enhanced by Angelo’s fresh and powerful flavours. From the menu, dishes will include Tuna tartare with avocado, tomato ponzu, seaweed chips and shiso; Buttermilk chicken kara-age, shichimi with spicy miso mayo; Scotch egg, katsu curry, mayo and nori; Peking duck bao sliders; and Mussels, citrus kosho ponzu with onion condiment.

Speaking on his new menu at Artesian, Angelo Sato commented: “I am really excited to partner with Artesian and create a fresh new take on bar food for one of the best bars in the world! The menu is inspired by my Japanese heritage, incorporating the likes of shiso, miso, katsu curry and nori. All of the dishes have been designed to complement the Artesian experience – tasty bites to enjoy alongside Giulia Cuccurullo’s amazing cocktails.”

Speaking the new collaboration, Michel Roux Jr commented: “Artesian has long been a playground for innovation; in cocktails, in service and now, with Angelo Sato of Humble Chicken, in bar snacks. It’s a pleasure to welcome Angelo to our line-up of talented chefs and all of the crunchy, salty, spicy flavours and textures he brings with him.”

Latymer by Steve Smith at Pennyhill Park

Pennyhill Park is well-known for offering exceptional overnight stays with its luxurious, individually designed bedrooms and suites; it’s incredible spa facilities; and for its commitment to providing exceptional food and drink experiences for guests. True to its promise, in 2020 Pennyhill Park relaunched Latymer with Steve Smith and within a year of service, it was awarded a Michelin star. Now with brand new tasting menus, Latymer is ready to be put back firmly on the foodie map.

Steve Smith is widely regarded as one of the most inventive and gifted chefs of his generation, renowned for his modern British cooking, whilst utilising the finest seasonal British ingredients available. Steve has held a Michelin star for the last twenty years, and has also earned Five AA Rosettes, 8 out of 10 in the Waitrose Good Food Guide, and received a Catey Award for Chef of the Year in 2014.

Steve’s two ‘surprise’ tasing menus centre on classic combinations refined and reworked in a creative modern way, whilst the ‘surprise’ element provides guests with an exciting anticipation before each course arrives. The four-course lunch Discovery Menu is available from midday on Saturday and Sunday, whilst the six-course Discovery Menu is available in the evening for dinner service, Wednesday - Sunday. The two menus highlight bold flavours within each dish using the very best ingredients on the day, inspired by the seasons, allowing guests to try a wide variety of Steve’s cooking within one setting.

The six-course Discovery Menu could include a variety of snacks, including Spenwood and Australian Truffle Choux Puff – a soft bite that is rich in flavour and the perfect start to the feast, followed by a crispy BBQ Pork with mustard and quince vinegar, Blue Grey Sirloin with nasturtium and capers, and

- 52FOOD & BEVERAGE

Hamachi, Oyster and Wasabi Tart – all bursting with unique flavours that combine perfectly together.

For starters, guests can tuck into a Brixham crab salad with custard, mango, and coriander, followed by Ventowyn farm egg with peas and girolles calamansi and St. Peter’s ham, Brixham Sea Bass with roscoff onion and smoked eel and mustard. Followed by the third course, Herdwick lamb with artichoke, courgette, and tomato, and then the Honeymoon melon with Ridgeview Blanc de Blanc. The six-course feast comes to an end with Yorkshire rhubarb, with waina and pistachio.

Additional to the carefully curated food menu, diners can add enjoy aperitif cocktails and the Discovery Wine Pairing or Prestige Wine Pairing to their experience. Chosen by the talented Head Sommelier Sergio Dos Santos, who holds a Sommelier Caviste diploma from France and was also a ‘UK Sommelier of the Year’ semi-finalist in 2006, 2010, 2011, 2012 and 2018, Sergio has selected organic and biodynamic wines from emerging wine locations and daily pairs each with the dishes on the menu. Wines that make an appearance include 2020 Grüner Veltliner ‘Nussberg’ (organic) from Hajszan Neumann in Vienna; 2017 Vespa Bianco, Bastianich, Friuli Colli Orientali from Venezia Giulia in Italy and 2019 Monbazillac, L’Ancienne Cure from Dordogne, France (organic).

Latymer is situated in one of the oldest parts of the original house at Pennyhill Park. It has an intimate and luxurious feel with wooden panelling, a beamed ceiling, rich plush fabrics, and a smooth balance of friendliness and formality.

Latymer’s Discovery Menus are now available, with the four-course lunch menu exclusive to Saturday and Sunday only, at a cost of £85 per person, and an additional £65 per person for the Discovering Wine Pairing, or an additional £85 per person for the Prestige Wine Pairing. Sustainability – an expensive luxury?

Invest today, benefit tomorrow: Why sustainability for laundries is a plus for the budget and for the climate.

Several tons of laundry are processed in a laundry every day. Textile service providers stand for reliability, quality and hygiene. Today, a responsible and integral circular economy means much more: consistently clean and sustainable processed textiles.

Due to constantly rising energy costs, new EU directives to conserve resources and the clearly visible effects of global climate change, sustainability is increasingly becoming the focus.

Kannegiesser is the global partner for the future of the laundry industry. For us, sustainability is an elementary component and more than just a trend. In addition to savings in resources and textile care in

the laundry technology, Kannegiesser stands for the integral sustainable corporate culture.

Textile service providers and their customers are more and more focusing on sustainability. Kannegiesser therefore provides advisory support to their customers. ‘By helping our customers become more sustainable; we too can play our part in reducing the resource demands of the textile service industry. This is made possible by using new technologies in our research and development’, says Tina Kannegiesser.

In addition to supplying resource-saving and textilefriendly technology, Kannegiesser stands for an integral sustainable corporate culture. In addition to reducing our own CO2 footprint, this also includes securing long-term economic stability, extensive training and further education for our own workforce and future security through innovation.

- 62SOFTWARE, HARDWARE & SYSTEMS

Kannegiesser has always carefully developed all machines to optimize the entire energy chain in the laundry and offers intelligent solutions for every processing step. Already in 2008, Kannegiesser presented ‘The Green Laundry’ at the Texcare in Frankfurt. Today, more than ever, companies are faced with the challenge of developing solutions to remain future-proof and competitive despite constantly rising energy costs and CO2 taxes.

In the washhouse, the high-performance washing line PowerTrans Vario sets new standards for wash quality, hygiene, water and energy consumption. The water-extraction technology of the PowerPress and PowerSpin provides low residual moistures permitting high savings in the subsequent evaporation process. With the PowerDry batch dryer, the Eco2Power process control ensures that the energy remains in the system and does not have to be recovered via heat exchangers. In the finishing process, Kannegiesser is a pioneer for low-temperature drying during the process of ironing, finishing and full drying – with impressive results for both maintaining textile value and energy consumption. Ultimately, the energy contained in the ironing and finisher exhaust air is used to heat fresh water for the washing process –the circle is completed.

The sum of many factors leads to solid results: The average energy consumption of a modern industrial

laundry equipped with Kannegiesser technology has more than halved in the past 10 years. Using innovative technology, the consumption of less than 0.8 kWh per kg of laundry can be achieved in many cases today. For comparison: In many laundries nowadays, this figure is around 2 to 2.5 kWh per kg of laundry – for some it is certainly a little lower, but for others it is significantly higher.

Significant energy savings help companies to remain economically healthy and competitive with strongly increasing energy costs. Not only the cost balance, but also the climate balance plays an important role. The CO2 emissions of a laundry processing 30 tons of laundry a day and at the same time reducing gas consumption from 2.2 to 0.8 kWh per kg of laundry, are reduced by 2,255 tons per year – a plus for the budget and for the climate!

Modern Kannegiesser technology reduces the use of fresh water and fossil fuels. Our solutions drive growth for our customers and create attractive, future-oriented and ergonomic jobs for us and in the entire industry. This is how we help people to live clean, healthy and safe lives.

Best practice rewarded

Reading Pubwatch has been given the top accolade as the National Pubwatch of the Year at a glittering event, sponsored by pub chain JD Wetherspoon, at the House of Lords last night.

The National Pubwatch Award, which is judged by members of the National Pubwatch Committee, recognises the work of local Pubwatch schemes and their efforts to provide safe drinking environments for customers and staff. Two Pubwatches Pontypridd and Epsom were awarded highly commended.

National Pubwatch is a voluntary organisation, which supports over 800 Pubwatch schemes across the UK, and works to promote safe, secure and social drinking environments in all licensed premises throughout the UK.

Reading Pubwatch was recognised for the range of new initiatives launched over the past twelve months including a new standard operating procedure for licensed premises, a drink spiking campaign, increased security searches and running anti-terrorist seminars. It also has a robust banning system that has had over one hundred offenders being banned for a period of three months through to five years.

Bill Donne, honorary secretary of Reading Pubwatch, said: “We are honoured to have won the prestigious National Pubwatch of the Year award against stiff competition. We are grateful for the recognition by the judging panel of our commitment to partnership working that we have developed over many years. He added: “Representatives from the council, Police, BIDs, street pastors, Fire and Rescue, First Stop, and the SIA are all regular attendees at our monthly pubwatch meetings to provide guidance and support to members which helps Reading Pubwatch to be successful.”

Reading Pubwatch was not the only one to receive an award on the night.

secretary of the all-Party Parliamentary Beer Group, along with Paul Wotton, secretary of National Pubwatch, who has contributed to the success of the voluntary organisation over 25 years.

The Malcolm Eidmans award, which recognises the outstanding contribution made by a police officer or member of police staff in supporting pubwatch, was given to Hayley Crawford, who is district policing commander in Bassetlaw, and created the successful ‘Ask for Angela’ campaign, which reduces vulnerability in the pub and hospitality sector by providing a ‘code word’, which customers can use to seek help.

Two Bravery and Meritorious Conduct Awards, which recognises those whose actions have either saved life or minimised physical harm in the nighttime economy, were also given out on the night.

Leicester Arms assistant pub manager Richard Wells and customer Julien Autogue were given the award after intervening to capture a man who was attacking pedestrians and pub-goers in and around Regent Street, London with a hammer. They apprehended the suspect, calling the police, and saving many more victims.
