Nobu Dubai Transforms For 2023, Relocating To An Iconic Brand-New Space Within The Crown Of Atlantis, The Palm

As of January 2023, the cutting-edge Japanese Peruvian restaurant, which has become a Dubai institution, will relocate to the space formally housing The Royal Bridge Suite on the 22nd floor of Dubai’s leading culinary and entertainment destination.

After 14 years of residence in The Avenues at Atlantis, The Palm, Nobu Matsuhisa’s globally renowned Nobu will celebrate its 15th year in Dubai in an iconic-new space within the crown of the destination resort. Taking the space formally home to The Royal Bridge Suite, the 22nd floor will be completely transformed to house a brand-new Nobu, complete with an updated menu, a Nobu lounge and bar, and an expansive terrace offering incredible views over the Palm Island and Arabian Gulf.

Set to open mid-January 2023, upon arrival, guests will be whisked up to the new Nobu Dubai via a private elevator off the main lobby before being greeted by the echoing sounds of the chefs shouting in true Nobu fashion ‘irasshaimase’ (translating to ‘welcome to the restaurant’ in Japanese). Taking guests on a curated Nobu journey, the evening will begin at the

sophisticated central Nobu bar and lounge, where diners can enjoy an array of pre-dinner cocktails and small bites set to the soundtrack of a resident DJ.

Guests can then choose to sit at one of five dining areas, including the main dining room, an exclusive 13-seat sushi bar or within a VIP booth with frontrow seats to the bustling kitchen. The new Nobu will also feature a beautifully appointed and expansive Palm terrace, featuring a bar and lounge area, coupled with an unparalleled 22nd floor view of the Palm Island and the glittering skyline of Dubai. Diners looking for a little more privacy can also opt for one of six private dining rooms featuring floor-toceiling vistas over the Arabian Gulf and will seat up to 2 to twelve guests per room.

For those looking for an after-dinner experience, guests can dance the night away in Nobu’s exclusive late-night lounge and from 10:30pm-2:00am every Friday and Saturday, the restaurant transitions into Nobu After Hours, offering an elevated social dining experience and energetic vibe featuring a stellar collective of female DJs, dancing and a late-

night menu. The place to see and be seen each weekend, Nobu After Hours will be positioned as the pinnacle of Dubai’s luxury nightlife scene. Additional activations will include a daily Nobu business lunch and a Saturday brunch.

In recent years, Atlantis, The Palm has built an outstanding reputation as the region’s leading culinary destination. Having won several Michelin stars and Gault&Millau toques over 2022 and welcoming some of the world’s leading chefs for culinary collaborations across Ossiano and Hakkasan, the resort is a global leader in the culinary space. In Q4, 2023, one of the world’s most celebrated chefs, Björn Frantzén will introduce two new concepts to the space formally housing Nobu in The Avenues,

including Studio Frantzén, as well as a fine dining concept and the sibling to both three-Michelin star restaurants, Frantzén in Stockholm and Zén in Singapore.

Along with Bjorn Frantzén, in 2023, Atlantis Dubai will also welcome world-class concepts from José Andrés, Costas Spiliadis, Ariana Bundy and Heston Blumenthal, who will bring his Michelin star concept Dinner to Dubai, along with a debut bar concept called Resonance. In addition, Nobu Restaurant Group will introduce a second venue in Q1, 2023, located at the world’s most anticipated ultra-luxury experiential resort, Atlantis The Royal. Nobu by the Beach is set to change the face of Dubai’s beach and pool club scene, blending modern cool luxury and

minimalistic Japanese traditions into a one-of-a-kind pool and beach club experience, Nobu by the Beach is slated to become the cities’ most stylish location to see and be seen.

Timothy Kelly, Executive Vice President and Managing Director of Atlantis Dubai, comments “Nobu Restaurant Group is an incredibly valued partner for Atlantis. Having opened at the resort in 2008, the brand has established itself consistently as the authority on Japanese cuisine in Dubai and we look forward to evolving this offering into a brandnew space and what will be, one of the most stylish and spectacular dining and entertainment locations in Dubai. The place to see and be seen, the new Nobu Dubai is another phenomenal addition to Atlantis Dubai’s world-class culinary and entertainment offering, which is unrivalled to any other destination in the world”

We have a great team in Dubai who have worked with me for many years, so I know that every guest who visits us will have an amazing Nobu experience.”

The UK’s leading supplier in Sustainably Sourced Commercial Quality Furniture

- SUSTAINABLE FURNITURE -

Sustainable Furniture is a Cornish familyrun business, competing on the national stage, with a simple ethos; to supply quality furniture that will last a lifetime.

Founded by Margaret Larson 15 years ago in response to the influx of cheaply made, massproduced furniture that flooded the market, which in turn made her determined to produce stunning, high-quality products that are made to last with ethics at its heart.

Our furniture is produced from ethically-sourced reclaimed timber that has been made redundant, that turns an agricultural waste product into a thing of beauty, helping to rejuvenate previously barren land and boost the local economy – it’s a win-win situation as there is less demand placed on forests if wooden furniture is reused and lasts longer, as not only do we love to help other communities, but this is also something we at Sustainable Furniture take great pride in and are so passionate about!

Sustainable Furniture has everything you need to revamp your space whether it be indoors or outdoors we have got you covered, including bar & dining sets, living, storage solutions, sofas, coffee tables, as well as beautiful mirrors and accessories. An urban greenhouse

The project is located in the 4th arrondissement of Paris, as part of a large, adaptive reuse complex designed by David Chipperfield Architects and Calq, winners of the first Réinventer Paris call for projects. The former headquarters of the Préfecture de Paris, the rectangular site encompasses several city blocks and was repurposed to house a variety of uses. A

series of archways open up the ground floor, allowing visitors to move from the street to the riverfront and access the different programs. Located adjacent to the Arsenal Pavilion, the TiTi restaurant occupies the 2nd floor of The People Paris Marais hostel, one of the site’s new buildings which run parallel to Boulevard Morland.

- 16RESTAURANTS

The TiTi restaurant draws inspiration from the celebrated Crystal Palace, which was constructed in 1851 for the Great Exhibition in London. Designed by Joseph Paxton, its monumental form was wellknown for its form and functionality.

SCHEME

Like the Crystal Palace, the linear volume containing the restaurant is primarily made of glass and steel and was envisioned as a greenhouse-like environment, within which one finds different activities, zones, and festive atmospheres. The project respects the architectural integrity of the 50 m long volume conceived by Chipperfield by creating a space void of partitions or dividers.

The 50 m long volume is divided into three distinct zones and follows the natural separation afforded by placing the back-of-house and service areas on either end of the space, and the open-air veranda in the middle. One discovers three ambiances within this urban jungle environment: café, bar, and restaurant. The café is a flexible space with modular seating tables and movable light fixtures. The bar’s one-ofa-kind vibe is achieved via its jewel-like 40 m long marble counter. The intimate restaurant area, located to the back, is composed of booths and screens.

- 17RESTAURANTS

In keeping with the open-air café vibe, fanciful bulb light fixtures are suspended from the existing structure. They also serve as hanging points from which to string decorative lighting, which when viewed at night from the street make the restaurant a sort-of urban lantern. Modular tables allow for various seating configurations and keep with the color palette of the establishment. The bistro chairs accentuate the outdoor café feel, as do various potted plants, vines, and ceramics that loosely indicate the parameters of the café zone.

The impressive 40 m long bar is the central and defining element of the volume and is visible and accessible on all sides. Its marble countertops and Zellige-tiled surfaces are accented by vertical wooden slats, treated as sideboards, removing the need for joints between panels and facilitating the bar’s upkeep. The contours of the bar space are highlighted via a series of thin arches, from which are suspended decorative lights, vegetation, signage, and shelves. The restaurant’s decorative banners and pennants are grouped around the bar, which emphasizes its role as a spatial anchor.

PLAN

The main restaurant seating area allows for a more intimate setting and was imagined as an ode to the dolce vita. An assortment of cane circular booths with striped finishings and hanging pendant lamps indicate place settings, although the groupings may be rearranged to accommodate larger numbers of parties when needed. The screens, vegetation, striped coverings, and accents of rose give the seating areas a lighter feel against the open and mineral backdrop.

Introducing Jack Clayton: Head chef at Scarlet Hotel, Cornwall

- SCARLET HOTEL -

Scarlet Hotel has appointed Jack Clayton as the latest Head Chef of the hotel’s sea view restaurant in Mawgan Porth, Cornwall. Since starting his career in 2009, in some of the East Midlands most wellrespected restaurants, Jack has achieved 3 rosettes, 2 Bib Gourmand awards and the Nottingham Head Chef of the year award. His move to Scarlet comes as an opportunity to advance a lifelong passion for sustainability, fusing flavours and foraging.

Perched on the southwest coastal path, Scarlet’s restaurant offers captivating views of the coastline, easily explored from the hotel. Stroll from coast to cuisine and discover an exquisite meal of seasonal, responsibly sourced food alongside slow-aged wine, expertly paired by the in-house sommelier Nick Bryant. The restaurant is open to both residents

- 20RESTAURANTS

and non-residents for breakfast, lunch, afternoon tea and dinner daily. The day menu is a casual affair which seamlessly transitions into more of a fine dining experience in the evening with a sevencourse tasting menu, inspired by Jack’s commitments to organic local produce.

Highlights of the menu include: White gazpacho, featuring almond, cucumber, grape, mint and garlic, or Sea Trout pastrami, complimented by horseradish, cucumber mustard seeds and soda bread to start. Mains showcase locally caught fish, such as Whole John Dory served with leek, parsley, lemon butter sauce and herring eggs and meat dishes such as Warren’s lamb rump with broad bean, pea, tarragon, hung yoghurt and oyster leaf. Desert choices range from Chocolate choux with hazelnut, dulce de leche and vanilla ice cream to Peach with mascarpone parfait, almond cookie and rosemary.

Jack’s philosophy for the Scarlet restaurant is centred on showcasing the journey of each ingredient, from the catching of the fish through to the artful presentation of each dish.  The menu at Scarlet is a daily celebration of nature and to this end, Jack’s plans for the restaurant include coastal foraging courses for hotel guests and achieving a Michelin green star in 2023.

CAREER HISTORY

After achieving a bib gourmand and dining pub of the year in his first appointed Head Chef position in Nottingham, Jack realised his love for fish and decided to make the move to Cornwall. His first position in Cornwall was at The Gurnards Head where he achieved top 10 gastropubs from The Telegraph.

In 2017 Jack and his partner took a management couple position at The Carew Arms near Torpoint, achieving a Michelin regional stand out award just a year after opening. Seeking a new challenge and starting a family, Jack took the head chef position at The Sardine Factory in Looe where he quickly achieved a bib gourmand, cementing his love of Cornwall and seafood. After the first lockdown in 2020, Jack took on a new challenge at the Stargazy Inn in Port Isaac before deciding to take the reins at the Scarlet Restaurant in 2022, where he hopes to take his passion for seafood and sustainability further.

HOW: The Scarlet Restaurant is open for nonresidents and hotel guests, offering an à la carte menu alongside a seven course tater menu. £60 a guest for three courses from the a la carte menu.

The Savoy announces new Executive Pastry Chef, Nicolas Houchet

One particular challenge that will face Nicolas early in the New Year is the grand finale of the Pastry World Cup, being held in Lyon in January 2023, where he will compete as a key member of the UK Pastry Team. Nicolas is a seasoned award-winner, having recently been awarded the European Pastry Cup 2022 as part of the same team.

‘Nicolas’ career has been characterised by perseverance, dedication and attention to detail,’ said Franck Arnold, The Savoy’s Managing Director. ’These qualities will stand him in good stead not just for the upcoming competition, but as a pivotal member of The Savoy’s culinary team. We are proud to welcome him amongst us and look forward to seeing the benefits of his focus learning and development.’

The Savoy is delighted to announce the appointment of Nicolas Houchet as Executive Pastry Chef. Nicolas has joined the team from Le Cordon Bleu, the world-renowned culinary institute, where, as Deputy Head of Pastry, he led the pâtisserie team.

Originally from Nancy in France, Nicolas’ love of the culinary arts, and in particular pâtisserie, dates back to his teenage years and an Easter work placement with a local pâtissier, when he spent the holiday making celebratory eggs and chocolates. Nicolas subsequently spent five years training under award-winning mentor Jean-Claude Hammerer, at Restaurant Hammerer, and then to his first five star, the Grand Hôtel de la Reine, both in Nancy.

In 2005 he made a move to the UK to set up his own pâtisserie, Macaron, which was judged Time Out’s Best London Pâtisserie within its first year, then in 2010 Nicolas then took the opportunity to join Le Cordon Bleu London as a pâtisserie teaching chef, rising to team leader.

‘It’s so exciting to join The Savoy; I have inherited a great team with a huge appetite for learning and innovation, and we are supported by an ambitious and charismatic leader in the shape of Franck Arnold, The Savoy’s Managing Director, and an able and dynamic senior leadership team,’ commented Nicolas.

The look and feel of a stately home

At the heart of the “Riviera of the Alps”

- CHÂTEAU BRACHET -

Located only 5 kilometres from the shores of Lake Bourget, on the heights of the small town of Grésysur-Aix, this 4-star hotel is housed in a beautifully restored historic residence: 15 rooms and suites, a wellness area, a gastronomic restaurant and a sixhectare landscaped park, with an 18-metre long outdoor swimming pool, a solarium and a selection of outdoor games: tennis and padel, pétanque, croquet, badminton and volleyball courts, a giant chessboard as well as an Executive Golf training area covering more than one hectare.

Staying at Château Brachet is not just about pampering your body and indulging in gastronomy, but a chance to travel back in history. The establishment is the ultimate homage to Dr Léon Brachet, one of the last owners of this stately home. His untiring efforts to transform Aix-lesBains into the queen of spa resorts at the end of the 19th century saw him mingle with the European aristocracy.

For the current owners, the acquisition of this building in 2010 was a case of love at first sight but also a major gamble. They confide: “We had to wake up the sleeping beauty. Turning it into a hotel was a rather wild dream. This renovation, which we wanted as faithful as possible to the rules of the art and the “soul” of the buildings, was made possible because, just before the time of the sale, we were made aware of many history components around this residence and its owners /visitors. We then brought in 3 contemporary history master’s degree students from the University of Grenoble

who took a very active part in researching the history of the Château and were slowly able to piece together the puzzle of this intricate heritage.” The goal was for the château to embody the French art of living and to recreate the rather relaxed atmosphere of the age. Thus, to convey the power of attraction of Aix-les-Bains, where aristocrats, crowned heads, artists and intellectualsfrom the Austrian Empress “Sissi” to Sarah Bernhardt, not forgetting Queen Victoria, King George I and the thespian Coquelin brothers - all flocked to enjoy the thermal “seasons”. The result? After a ten-year restoration, the building has been brought back to life, transformed into an elegant historical boutique-hotel that offers modern comfort as well as a unique journey back into a forgotten era: Aix-les-Bains’ golden age as a spa resort.

The Courtyard Hotel & Hotel Residence Inn

The land allocated to the project is being developed as part of Roissy’s renewal plan, at a site close to Roissy Terminal 1 Airport, which aims to accommodate several hotels and office buildings.

The various future hotel projects will therefore be set up along an urban axis, eventually combining the tram, a double service road on either side of the tram, and bicycle and pedestrian paths along the lines. forecourt of the hotels. Our land is located at the eastern limit of this major axis, just before it passes under the taxiway dedicated to the various aircraft movements before and after takeoff: this situation at the end of the axis gives the project total visibility.

The program consists of two hotels designed in two separate volumes: the Courtyard Hotel with 229 rooms and the Hotel Residence Inn with 106 rooms. The two volumes sneak one behind the other and connect by a base, allowing to share some common areas.

Two types of functions are materialized by two different types of volumes: that of the rooms is repetitive, compact and regular, when that of the common parts is designed in a fluid spirit and open to the outside, fully glazed.

The facades are composed of colored modules corresponding to a room, creating a large gradient, from the darkest to the lightest from the bottom. The independence of each module is materialized by outlines that form a large grid, as wisely arranged.

- PIMALAI RESORT & SPA -

As this pristine ecosystem reopens after restoration, Pimalai welcomes travellers with a series of smallscale excursions to Koh Haa and Koh Rok.

Mu Ko Lanta National Park is a breath-taking natural paradise – 134 square kilometres of turquoise waters, unspoiled islands, hidden coves and captivating coastlines in southern Thailand’s Krabi province, blessed with an abundance of flora and fauna, including lush jungles and vibrant marine life.

Every year, this tropical wonderland is closed for six months to allow its delicate ecology to be refreshed and replenished. Pimalai Resort & Spa, the five-star sanctuary on Koh Lanta, fully supports the closure and works with local authorities to protect and preserve the area. To celebrate this important occasion, the property has relaunched immersive, small-

scale excursions to two of the region’s most idyllic islands: Koh Haa and Koh Rok.

The “Koh Haa Snorkelling & Sunset” adventure transports travellers to Koh Haa (“Five Islands”) – a captivating collection of limestone islets that enclose a dazzling aquamarine lagoon, a technicolour coral reef and a pure white beach. This provides the perfect spot for an afternoon of swimming and snorkelling. The leisurely boat ride back to Pimalai will be enhanced with onboard canapés and cool drinks, including wine and beer, as the sun sets over the Andaman Sea.

Alternatively, the “Fabulous Koh Rok” tour is a scenic one-hour boat trip to Koh Rok, a pair of paradise islands lined with powder-soft sandy beaches and lapped by warm, crystal clear waters. Following an hour of swimming and snorkelling, guests will be treated to a delicious onboard lunch before embarking on a sightseeing cruise around Koh Rok, with even more opportunities to plunge into the sparkling sea and uncover the enthralling underwater world.

Metropolitan Gaming to Open Central Luxury Entertainment Destination in Mayfair

Leading luxury and hospitality group, Metropolitan Gaming is set to open a newly refurbished and rebranded casino venue in London’s Mayfair, called The Metropolitan Casino. In motion to open its doors to the public on 1st December this year, the glamorous club will be unrecognisable following an extensive remodel from its former operation.

Operating daily from 2pm until 6am, guests can expect their senses to be awakened as soon as they step inside the destination’s marble foyer. Welcomed by an impressive crystal chandelier and luxurious gold that sweeps up alongside a grand staircase, visitors can find the first floor to be filled with classic yet contemporary surroundings that accompany its extensive offering in gaming.

Discover the central hub of the club, where guests can relax at a central bar with one of the venue’s specially curated cocktails, before passing through a crystal wall to take in an art deco inspired and decadent restaurant. With fine dining available from

6pm until 1am, guests can enjoy a calm ambience with gastronomic delights

followed by a few spins on Roulette. Later, if they so choose to, they can retire to the covered outdoor terrace for some fresh air and to try their luck at a game of Blackjack or Punto Banco.

Real street art on a plate

- FOODX POZNAN RESTAURANT -

The combination of good street art and iconic videos from the 90s is the clou of the latest project created by the mode:lina™ designers. In downtown Poznań, we have created a place where the FoodX team reigns with their bold ideas. We love Investors, who come to us with crazy ideas, an open mindset, and a fantastic briefFoodX team belongs in that category, their food - real Street Art on a plate - says Paweł Garus, co-founder of mode:lina™ studio.

The owners asked us to prepare a project in Poznań using some of the solutions developed in their previous endeavors, as well as branding using the fantastic color palette and a large number of neon lights. Inspiration came directly from the menu itself served by the brands that make up the FoodX concept: Mr. Pancake Poznań, PIZZA BOYZ, Ghost Burger, and Vegan Pizza Club.

This is how the place was created in a very “street” style and with colors straight from the 1980s and 1990s, coming directly from the colorful clips of the pop-music television, when it actually was playing music - says Kinga Kin, the main architect of the project.

The interior is dominated by a gradient of pastel colors running through the walls and furniture. We have proposed a chameleon-type foil on the external windows, introducing even more customers into this colorful space, taking them into the crazy world of the 90s.

Drawing on the style of those years, we decided to use a glass brick, which was extremely popular at the time. They were used to create a bar and as a finishing element on some of the walls. Another important element creating the atmosphere is dome street mirrors placed on the walls and ceiling, which by their multiplication enhance the aesthetic impression.

All the furniture in the restaurant has been custom-designed and made to perfectly match the atmosphere of the interior - says Jerzy Woźniak, co-founder of the mode:lina™ studio.

A contemporary twist

A corner building in HCMC has been transformed from a kindergarten to a cafe with curves and coffeecolored fittings to soften and smooth. Module K found the DNA for the Katinat Cafe project: a rough shell embracing a warm soul. The site, at the corner of an intersection, was once a kindergarten with a swimming pool inside. The clients wanted to keep the existing structure but remove glossy coats of paint and give the space a robust atmosphere. Katinat, a chain of more than 50 cafes in Vietnam, is named after a prominent old street (named Rue Catinat before 1975), the site of famous colonial buildings.

Dung Le, Project Manager said: “We wanted customers to experience different spatial environments and emotional experiences when enjoying coffee products, but to still keep the special branded atmosphere of Katinat.” “We chose the design of curved counters and curved stairs with galvanized materials shaped to create the strength of the structure. And then used thin metal sheets to wrap that texture and continue to create counterbalancing curves.”

- 60BARS & CAFÉS

The new interior design sees terrazzo floors and rough concrete columns. Double height windows bring in light and connect the interior to outside. Walls of glass bricks patterned with the shapes of the Katinat brand are softly backlit on the outside, and inside create delicate patterns on horizontal surfaces.

A sculptural circular concrete staircase with illuminated steel steps connects the ground floor with a curved mezzanine level. At the center is a stainless steel organically shaped coffee bar, framed at different levels with bronze strips. Patrons sit on curved cocoa-colored banquettes or at cinnamoncolored seats with small circular tables of pale terrazzo. Banisters topped with bolster cushions to lean against create a relaxed vibe and delineate spaces. Outside seating features Parisian-style tables and chairs.

Interior elements add some froth to the space - ovoid brand-shaped mirrors are framed with bronze, whilst large-faced clocks, reminiscent of old French clocks, sit atop bar tables. Lighting includes cream-colored wall lamps set within vertical wall elements, doublearm table lamps, and suspended ceiling lights. The color range blends from pale latte to warm mocha to dark espresso, from cool to warm. Shots of bronze punctuate the monochrome scheme, bringing a contemporary twist. A blend of textures and patterns.

The design and construction were completed in 65 days in the post-lockdown period in Vietnam. Module K and Soulroom designed the interiors of the HCMC project as part of a Katinat Coffee Master Concept 2022, having already completed 15 previous projects for the brand. The design team finds unique elements for each project, bringing some French details into the space, with the design acting as a bridge between the old and new, between the client brand and the user.

Chateau Denmark announces a new bar, Thirteen - along with basement club dial8

in Thirteen, offset by a dramatic teal chesterfield conversation chair perfect for gatherings, groups or individuals to soak in the mood and the cocktails. Detailed and considered lighting makes a statement, bringing the perfect balance of light in tandem with sumptuous dimly lit nooks to get lost within.

Carrie Wicks, CAW Ventures states, “As we get ready to open Thirteen, we’re excited to bring something to Denmark Street that captures what was and what will be. Because if Chateau Denmark is about freedom then Thirteen will be about exploration and the hedonism that comes along with it.”

Promising good times but with bad company, the corner spot that has watched over Denmark Street for decades is about to become the gateway into something fierce. Chateau Denmark is proud to announce the plans for its new bar, Thirteen, along with basement club dial8.

Located at No. 1-3 Denmark Street, Thirteen and dial8 will be the newest addition to Chateau Denmark. Scheduled for February 2023 it will be operated by CAW Ventures’ Carrie Wicks and Alan Petrie. Bold and brave interiors come courtesy of London-based designers, Grapes Design - bringing both gothic and baroque charm.

Capturing the spirit of the legends that once, and since have, made Denmark Street their home, Thirteen will act as a place to gather both day and night, inspired by lore that dates back to Chaplin, Marley and even Rotten himself. Exclusively for everyone, the bar will act as a hub for the vibrant and colourful community who live, work and play in the area.

Bringing Chateau Denmark’s no half measures attitude down to street level, expect world-class cocktails along with small plates made to share from 11 am until late, designed to whet every appetite. An experienced team including hosts, bartenders and servers will deliver a seamless service that is present but always discrete. A sculpted, grand bar sets the scene and serves as the focal point

Boasting an events programme designed to celebrate London’s artistic and cultural scene, Thirteen will explore and present the familiar and the novel, promising a mixture of happenings from DJ sets to live music, planned or in the momentit will capture the street’s rare hustle. Meanwhile downstairs, dial8 will bring privacy and discretion as an intimate destination for those in the know. Expect elevated menus, state-of-the-art sound systems and a ‘blink and you’ll miss it’ separate entrance - setting the stage for the after-after parties.

A different space

The first point to be highlighted during the initial conversations was that the main attraction from MO would be the baked goods, presented in the space as jewels with authentic and renewable flavors. For this reason, Masquespacio started to develop a concept based on water which creates magic and life, but it is also the base of any bakery. At the same time, water is an element that can distort reality and change our point of view, which is the perfect matching point with MO’s philosophy to do things differently.

The space hereby was divided into 3 different parts that each present a phase in the process of making baked goods and coffee with water as the main ingredient. We first have the “liquid state”, where the dough is mixed with water and which makes the connection point of all the different areas of MO’s interior.

In the bar zone, a huge waterfall is recreated that makes clear that the central point of the space is the bar with its delicious products for sale. The waterfall was created by sandblasting each tube to create the illusion shape of water and the frosting feeling of what is beyond. In front of the bar, we can find the “solid-state” or “ice” area where a huge series of lamps that represent ice is the main attraction point, while next to it we can see some gigantic bulbs showcasing the “gaseous state” as a series of fire bulbs to represent the moment when the pastry is baked in the oven.

- 68BARS & CAFÉS

Concerning the furniture, every item has been customized and designed for the project, offering different seating options to create different experiences for the visitors from low lounge seating and shared tables to high stools and semi-private couple seating. A grey and white color palette has been chosen with metallic finishes for the tables and fabrics to generate reflections that create the distortion that could be made by water.

On the other hand, the lighting incorporates fully controllable RGB lighting to set the moods that could convert the space to a different status, being able to represent the overall “different space’ within a space, in campaigns, engagements, or talks, which is also extended by the reflections of the space in chrome fabrics, tables and spheres creating another level of optical fusion. This space is not solid. It is interchangeable and dynamic following what the brand has to say. Welcome to the new mood branding.
