“The design of the building itself is the hand gesture of greeting known as the wai and I carried the theme from the architecture into the interior design, from the big picture right down to the smallest detail,” says Chu. “I was trying to create a hotel with a residential feeling that is about culture and local flavour.” The process starts at the very first step on the journey – the drop-off area, which has been designed with a private driveway to begin the separation process of taking people from the bustling, narrow streets of the city into the calm of the hotel, presenting initially on an almost domestic scale to fortify the idea of being in a private home. This first glimpse also cements the idea that this is a building where the contemporary and the classical co-exist in harmony. What looks at first glance like dark, hardwood panelling and sculpted wood turning at the entrance doors is actually tinted stainless steel, while the modern piece of sculpture that is seen through the doors is ancient Thai calligraphy representing the word ‘wai’, designed by artist Jiandyin. Moving into the drop off area, the panelling here is wood, but the traditional moulding panels are in a variety of different sizes and configurations.

The natural second stop for visitors is the Sky Lobby on level seven, which is a relaxing multi-functional space that backs on to the main reception area. “The design for the Sky Lobby was inspired by the owners’ family history of collecting art,” says Chu. Indeed, it seems that every aspect of the room is a work of art in itself – the wall panels, for example, are made with ‘scales’ of glass overlaid with gold leaf. “They are the same shape as the roof tiles of the Grand Palace, which I love, but I wanted to transform them in an architectural way so that people would take more notice of them,” says Chu. The incredible bespoke glass chandelier is made in the shape of Thai dancing fans, inspired by the traditional skill that young Thai girls master as young girls.

One of the most striking of the public rooms is the Lakron, the all day dining restaurant and bar which is used breakfast to afternoon tea. The curved panels that create an intimate seating zone within the larger space are a stylised interpretation of the floral pattern on an antique musical box that was brought as a gift from the travels of the owners’ parents. And a closer look at the metallic mesh window screening reveals another iconic Thai motif – the screen is made from the fake nails worn by traditional Thai dancers. “It’s the combination of something very traditional and very open - like Bangkok itself,” says Chu. The traditional arts also inspire Chu’s design for the Pavilion banqueting space on level five: “This chapter of the book is about celebration and dancing at weddings, and I captured the movement of the dancing in the curving shape of the chandeliers and the swirl of the carpet.”

In the bedrooms and suites, the Thai motifs are more subtle, blending in with a slightly more European look, but the location is still referenced in the pierced screening that separates the living areas from the beds and in the bathroom tiles which have the same pattern as those in the Grand Palace, but executed in brown rather than gold. Chu admits that finding a design theme for the spa was a challenge: “Thai spas are world famous, most are either very modern and very white, or completely traditional, so I wondered

what we should do next. In Thailand we have all these caves with lovely cool temperatures, so I decided to design the space like cave walls. Tom Sellers And Restaurant Story Have Relocated To Cornwall This Summer To Launch Story By The Sea Restaurant Critically acclaimed chef, Tom Sellers, has closed up shop at his award-winning, Michelinstarred London establishment, Restaurant Story, and taken the entire team to the Cornish Coast, where they have launched a six-week residency in Carbis Bay titled Story by the Sea. Located at the Carbis Bay Estate, set on the privately-owned Blue Flag beach, visitors can book for lunch or dinner seven days a week until September 14th, and enjoy this ultimate gastronomic opportunity whilst lapping up views of golden sand beaches and blue seas. Diners can enjoy a unique five or six-course menu inspired by the ocean and created using all that Carbis Bay and the surrounding area have to offer. Known for its outstanding cuisine, masterful execution, and playful creativity, Story by the Sea guarantees guests an unforgettable experience set in a breath-taking location. To drink, a cocktail menu has been carefully crafted to showcase the finest ingredients and is served with innovative snacks at the bar. Twists on classic cocktails feature in addition to some of the Restaurant Story signature drinks. The interiors are a nod to Story’s London home, showcasing a contrast of traditional luxury with a contemporary aesthetic. An emphasis has been placed on natural textures and comfortable seating has been arranged throughout, whilst splashes of colour and warm lighting will illuminate the dining room.

In addition to all this, and to further emphasise to the message of valuing the seas, Tom Sellers has launched an exciting collaboration with Parley for the Oceans. Parley for the Oceans is environmental organization and global collaboration network for creators, thinkers and leaders, known for its Ocean Plastic Program. As part of the collaboration, restaurant guests receive a Parley Ocean Bag at the end of their meal - each made from five intercepted plastic bottles and a reminder of the need to protect the Oceans by avoiding single-use plastic. The collaboration between Story by the Sea and Parley for the Oceans aims to remove 50 tonnes of marine plastic waste from beaches, remote islands, rivers, mangroves and high seas, as well as coastal communities via the Parley Global Clean Up Network.

A homage to Madame Augier and to the classical style represented at Hotel Le Negresco, Studio MHNA have turned the restaurant, La Rotonde, into an immersive experience fit for the 21st century. After collaborating with the Negresco Hotel on the Rivoli Wing in 2017, Studio MHNA approached this project enthusiastically, creating a restaurant in the same lineage. The architects constructed sumptuous and imaginative spaces, accentuated with fantasy – the real signature of the hotel – to continuously captivate the hotel’s guests. No pastiches, simply the pleasure of blending art and history as the foundation of the design, to bring the Negresco the sentiment of French joie de vivre.

La Rotonde features ornate walls covered in gold leaf, blended with a gradient treatment made by local artisans. These local painters and gilders have worked in the hotel alongside other exceptional craftsmen including some labeled by EPV (Entreprise du Patrimoine Vivant). To further the sensory experience, Studio MHNA has implemented a constant video projection of an Italian sky moving in slow motion. By day, the restaurant is luminous, and birds can be seen flying by overhead, whereas by night fall the restaurant is covered by an intimate starry sky. These interior features bring the restaurant a sense of surreal originality and creative genius. Welcoming, surprising and magical, this restaurant has been designed to offer the most beautiful memories to every guest. Future Perfect PREMIUM SPACE Technology is also influencing the size and sophistication of the equipment being designed, manufactured and installed. Kitchens have downsized, but even where they haven’t, space is always of a premium. Every last square inch has to be catered for.

What does the kitchen of the future look like? The answer is that it will look significantly different from the kitchen of today, as manufacturers and operators look to take advantage of new control technologies, IoT and Cloud capabilities. But whereas the latest tech will capture the headlines and the sector’s imagination, many of the ‘traditional’ challenges refuse to disappear. Labour shortages, kitchen space, and the need to do more with less remain perennial problems for which the industry is seeking innovative solutions. CONNECTED EQUIPMENT Much of the new generation of kitchen equipment coming to the market today is ‘connected’ in the sense that it takes maximum advantage of Bluetooth and WiFi communication networks to enable greater control. This allows the equipment to self-diagnose and remotely send alerts to an operator’s mobile or smart device when, for example, the

oil needs changing in the fryer, the chicken needs taking off the rotisserie or a freezer unit is not maintaining the correct temperature. This not only ensures the maximum ‘up-time’ and productivity of the equipment installed, but also identifies an early problem that could, potentially, develop into a more serious and costly crisis. ‘ Smarter’ equipment is also helping overcome the labour challenge. Control panels that make maximum use of instantly-identifiable imagery and simple, step-by-step instructions make it easier for less skilled or international (i.e non-English speaking) workers to operate, regardless of the equipment type. Sleep & Eat Inspiring New Thinking in Hospitality Innovation Exhibition Sleep & Eat, Europe’s leading design and innovation event for the hospitality sector, returns to London Olympia on 19th – 20th November. With the theme for 2019 of “Social FlexAbility”, the show will be exploring one of the most challenging issues of our technology-enabled age through Sleep & Eat Sets – concept guestrooms, restaurant and bar – and the Sleep & Eat Conference. As in previous years, the event will also feature an international exhibition, bringing back worldrenowned manufacturers and introducing newcomers to launch their latest collections and showcase their most design-led products. Visitors can also expect a range of experiential spaces tapping into art, innovation and young design talent. New App Allows Tourists To Book Instant Tickets Technology TOURISTS visiting London can make capital gains by using a new app to book instant tickets for hundreds of attractions, including theatres, museums and galleries.

Entrepreneur Blake Reddy’s app is ready to use on Apple devices and via its own website – https://www.easy-guide.co.uk/ - and it has the backing of billionaire easyJet founder Sir Stelios Haji-Ioannou.

Reddy, from Kensington, said: “I would travel for business and pleasure to various European cities and it was often a struggle to see what was on in those destinations. It was fragmented and finding the best prices took lots of navigating.

So, it’s not surprising that it’s joining the Stelios ‘stable’ – and has been named easyGuide. Reddy, 29, was lucky enough to have Sir Stelios as a contact, having been a “Stelios scholar” at London’s Cass Business School. And after he pitched his idea to Sir Stelios, the tycoon got on board, offering investment and branding for easyGuide. The inspiration for Reddy’s idea came after

Lafs, the Greek speciality restaurant, only opens in the evenings and its simple interior is therefore designed to feel cosy and be seen by the light of its many glass pendants and loosely woven raffia shades which cast shadows across the room. From its outdoor terrace overlooking Hora, diners feel like they can touch the town. Lafs has the air of the best Greek in town – unpretentious, convivial and authentic. The 500 sq metre spa includes six treatment rooms, a thalassotherapy pool with therapeutic showers, a hammam, sauna, relaxation room and hairdressing salon. The interiors are pure and simple with polished concrete finishes predominating embellished by pebble channels in the floor and a sculptural wall to one side of the pool; although the spa is sunken, natural light penetrates the space via a small outdoor courtyard. Most of the guestrooms and suites overlook the Aegean Sea. Their interiors are bright, spacious and designed with a sleek nautical touch. A rope motif strung across the ceiling suggests rigging on a boat and splashes of Mykonian blue enliven the otherwise all-white palette; all the rooms enjoy an outdoor terrace. The bathroom area is finished in the iconic white marble of Naxos together with weathered timber, and the freestanding vanities are within the bedroom area, together with, in some rooms, a bath tub. Among the many room types, there are a

number of suites raising the luxury experience to a further level, including suites with a heated jacuzzi on their terrace, duplex spa suites in which the lower floor is dedicated to pampering and fitness and the 70 sq metre Pool Suites, each with a private pool. Accountancy services for informed decision making The hospitality industry is very tuned-in to the value of outsourcing non-core services. Hotels are at the forefront of this where it is common to outsource the catering. Typically, the finance and ownership of the building is also separate from the operating of the hotel. There is now a growing trend to outsource the accounting operations to a specialist provider. We invited Ray Baxter, one of the Directors of Baxterworld outsourcing to tell us why this is becoming popular. He gave us 6 reasons for this trend. Better use of time was the first and most important one. Looking after the books is a huge hassle that gets in the way of the prime management function of the business, namely keeping customers happy and finding new customers. Outsourcing eliminates that distraction. Staff problems was the second reason. Unless you are a trained bookkeeper and have spare time, you will have to recruit, train and supervise suitable back office staff. Not owning the skills to produce accurate and timely management accounts is a real

If your business is expanding and opening new venues then an outsourced service will automatically grow to service your greater needs. No need to recruit and find extra desk space.
