AA Hospitality unveils The Restaurant Guide 2020 Food & Drink AA Hospitality and Hotel Services has revealed The Restaurant Guide 2020: 2,000 restaurants – inspected by the AA for culinary excellence. From fine dining perfect for a special occasion, to beloved local eateries, the 27th edition of the AA Restaurant Guide includes many favourites, plus over 140 new and interesting restaurants which have made it into the Guide for the first time this year. One new entry, Lympstone Manor Hotel, has been awarded the maximum five rosettes, marking it as among the very best restaurants in the UK. The 140 new entries for 2020 include: a restaurant in a former WWII spy training facility (Arisaig House, Arisaig), a restaurant in the village which appears in the UK passport (The Brasserie, Bibury), Tate Britain’s eatery (The Rex Whistler, London), a dining room exhibiting Chatsworth’s Devonshire Collection (Cavendish Hotel, Baslow), and a dining spot in the town with “England’s best view” (Mizu, Borrowdale).

The top counties in the UK for new additions to the Restaurant Guide 2020 are: London (with 27 new restaurants in the Guide this year), Devon (9), North Yorkshire (7), Cornwall (6), Norfolk (6), and Worcestershire (6). RPW Design’s delicate influence has created a stylish Terrace which can be used comfortably all-year-round with the inclusion of a glass fireplace feature and heaters incorporated into Terrace tables. The fireplace is cleverly designed through the use of glass which allows it to fade into the background when not in use, however when lit it comes to life as a stand-out feature of the terrace.

The idea of the dining table being central to the home in both Japanese and Lebanese cultures has been included in RPW Design’s work through the addition of beautiful ‘cosmos’ tables, bringing the exterior into the interior. These tables create an impressive feature individually whilst also contributing to the theme of the night sky and stars. Created using resin, the handmade tables represent the universe and space, taking Mezemiso’s image to a whole new, cosmic level. The warm importance of community and welcome embedded in these two cultures is showcased through the use of shared dishes served in the centre of each table. These features, coupled with a glass roof which can be covered and uncovered depending on the weather, mean the terrace can be kept well-lit and dry throughout the year. The blues, marbles and brassy colour schemes create an ethereal atmosphere as guests take in the surrounding views of London and the sky, while feeling comfortable in the knowledge they are protected from the changeable weather. Elizabeth Lane’s following statement highlights RPW’s aims behind the features included in their work with the Crowne Plaza Hotel: ‘In our designs, we drew both on the beauty of the London landscape and features of the cosmos, combining the stars and sky with the River Thames. Plaza 18 discrete luxury in the heart of Vejer by Nicky Dobree Hotel Plaza 18 is a collaboration between Vejer’s principal hotel La Casa del Califa and Nicky Dobree, an award winning and internationally recognised interior architect & designer. Set in the former 19th C Merchants house Nicky Dobree has taken inspiration from this iconic building and brought new life back into this Grand Dame by respecting its history but also embracing a new chapter for the modern traveller. Working with local trades and craftsmen, this building dating back to 1896 and standing on the foundations of an ancient 13th C Arab house, has been entirely restored using organic building materials.

Nicky was determined to re-use as many of the materials as possible too. The original black and white floor tiles were therefore lifted and re-laid on newly levelled floors. The Montera (large glazed roof lantern over the patio) was carefully dismantled and repaired to its former glory which now floods the entrance foyer with light. The stone staircase and balustrade was also completely restored and reinstalled. The main terrace, which is where guests can enjoy breakfast is served on hand painted plates with bespoke all weather cushions to sit back and relax and enjoy the views toward Morocco.

Amtico Flooring transforms Irish hotel and restaurant Hotel The Tullamore Court Hotel is perfectly situated in the heart of Ireland’s picturesque countryside. The 4* accommodation offers its patrons leisure facilities, a 20-metre swimming pool, a bistro and a bar, as well as a restaurant, which was in desperate need of renovation. The hotel’s main restaurant hadn’t been updated since the late 90s, so interior design practice Helen Casey Design Associates (HCDA) was called upon to bring the space into the 21st Century. HCDA replaced the restaurant’s dated fast-food style booths, removed partitioning that separated the restaurant from the hotel’s courtyard and laid eye-catching Amtico flooring throughout. HCDA chose Gingham, a predefined colour and pattern combination from the Amtico Designers’ Choice collection. To complement the large space, the design was scaled-up, creating a look that is unique to the Tullamore Court Hotel. The resulting design is modern, tasteful and successfully reinvigorates the restaurant.

Eoghan Cathasaigh, design director at HCDA, explains why Amtico was specified: “The restaurant’s existing carpet and timber floors were extremely tired and well worn, so durability was a key factor when choosing its

replacement. Amtico is known for its hardwearing products and I am confident that the flooring will easily stand up to this busy hotel’s requirements.

“As the restaurant floor could not be raised, there were limitations with the flooring selection; to visually separate the space it was essential the new flooring complemented and aligned with adjoining areas. The diversity of Amtico’s designs led us to create a bespoke up-scaled look that is contemporary, fresh and airy and, importantly, in keeping with the overall character of the property.” Robert Kerbey, owner and director of LRK Flooring Systems Ltd, the company behind the installation, adds: “We have worked with Amtico before during many commercial installations, ranging from

restaurants to nightclubs. For this project, the flooring design consisted of three different colours, which were laid to create a tartaneffect pattern. Amtico provided excellent instructions but it was vital that the first few lines of tiles were carefully laid and that the lines did not veer off, otherwise the pattern would not have been achieved. How to nail Christmas decorations this year There’s a real buzz in the air, your bookings are starting to approach capacity and the calendar is about to flip over to the festive season, but how do you perfectly capture the festive season in the way you decorate your business? Wendy Clarkson, MD of Fizzco, a specialist in all things Christmas, explains how. With decoration, there’s such a fine line between pleasing your customers and going overboard that it’s often a balancing act keeping everyone happy. Here are a few things to think about: KEEP THINGS COLOURFUL - We often think about red, white, gold and green as the quintessential Christmas colours, but why not mix it up a little? Blues, silvers, and understated, autumnal tones can really work when it comes to Christmas. Consider what colours are popular at the moment and pick a few key choices from that when you’re happy with a combination. TREE TIME - The Christmas tree is often the first thing on people’s minds when it comes to decorating a hotel, restaurant or resort. Traditional is fine, but if your decor demands it, why not go slightly more modern? Hanging trees upside down is an old tradition the Victorians used to utilise, but we’re seeing it creep more into more daring Christmas displays. If done well it certainly has that unique ‘wow’ factor that can often be missing in much of the hospitality industry.

THINK CREATIVELY - We know that’s a coverall term, but what about using different ways of making a location seem festive. Instead of tinsel overload or objects hanging from every perceivable location, think subtle. Why not try bowls of baubles placed in strategic locations, or perhaps Winter foliage used in place of plastic? Natural additions to a theme that already has wreaths and a mix of tree sizes might add to a scene more effectively. CONSIDER THE ENVIRONMENT - There’s a real focus on the environment and green credentials after a year full of activism from the likes of Extinction Rebellion and Greta Thunberg, so much so that every aspect of our lives is being looked at. If you do choose to have a living tree, then consider the way in which you dispose of it. Chipping is one option, which means it returns to the earth quicker. However, if you’re able to plant a tree out and let it grow all the better.

Oh, Christmas (Chocolate) Tree! Winter Wonderland at The Petersham Restaurant This Christmas, there's nowhere better in London to celebrate the festive season as one of the capital's most spectacular hotel restaurants, The Petersham Restaurant in Richmond, is serving a magical line-up of indulgent festive feasting alongside guaranteed snowfall AND a giant Christmas tree - made entirely of chocolate!

Taking seasonal dining to the next level, The Petersham's talented Head Chef Jean-Didier Gouges has carefully created a 1.2-metretall Christmas tree using 15kg of chocolate to display hand-crafted edible chocolate baubles to be served as part of the festive menu. Guests can tuck into the stunning (and delicious) chocolate creations surrounded by The Petersham's unique and spectacular snow display guaranteed to fall during lunch, afternoon tea and dinner, creating the perfect winter wonderland. For that extra

dose of festive cheer, guests dining for lunch will also be treated to a surprise visit from Father Christmas! With its stunning and snowy backdrop of floor-to-ceiling views of the River Thames and surrounding Meadows, the Restaurant provides a magical setting to celebrate with family and friends and enjoy Head Chef Didier's' carefully curated three-course setmenu. Highlights include festive seasonal favourites such as rolled and stuffed Norfolk turkey breast with all the trimmings, duck a la orange, dover sole and the vegetarian pumpkin and sage tortellini, as well as an array of delightful desserts such as an indulgent Christmas pudding with brandy and crème anglaise, and the spectacular and playful chocolate "bauble" - picked straight off the chocolate tree!

The Petersham Restaurant's three-course set menu is priced at £55pp and the snowfall takes place during lunch, dinner and during the Afternoon Tea service, with a surprise visit from Father Christmas at lunchtime. For that perfect festive treat, The Petersham's Festive Afternoon Tea is available from 2nd to 31st December, where guests can tuck into seasonal themed homemade cakes and pastries for £34.50pp. For larger bookings and Christmas parties, The Petersham offers guests a unique and sophisticated space for private dining hidden below the Restaurant. Alongside a bespoke three-course festive menu, guests will be treated to a glass of bubbly on arrival, tea and coffee, mince pies and an obligatory Christmas cracker. The Private Dining Christmas package is priced at £89 pp.
