Canton Avenue - Canton Bazaar Reconstruction Design of Westin Pazhou Hotel - M O K D ESI GN Reconstruction Design of Westin Pazhou Hotel The Westin Pazhou Hotel (Guangzhou) was jointly built by China Foreign Trade Center (Group) and Starwood Hotels and Resorts International Group. It is located in the center of the world-renowned Guangzhou International Convention & Exhibition Center, with excellent city skyline or Pearl River views. From the hotel, all exhibition halls of the Canton Fair can be reached through a sky corridor. The all-day garden restaurant, lobby bar, and outdoor sunroom, redesigned by MOK Design, are located in the central area of the first floor of the hotel. The well-lit sunroom, with its traditional color mosaic patchwork and textured terrazzo floor, embodies the perfect combination of tradition and modernity.
The outdoor sunroom, a large transparent space fully enclosed in glass, is the highlight of the renovation design. The space can accommodate up to 107 people for simultaneous dining. By day, guests can enjoy the mental and physical benefits of dining within the embrace of warm sunshine. By night, guests can indulge in an evening of delicious food with wine, with sunset and starry sky external views, ideal for a romantic experience.
Canton Bazaar “Canton Bazaar”, the name of the all-day garden restaurant, references the abundant flavors of a Cantonese food market. The designer adhered to the design concept of “An oasis in the city, a garden full of vitality”, and incorporated elements such as the theme of the Canton Fair, the concept of the

Italian mosaic factory to be used for mural making. The main elements of the screen are: the Zhenhai Tower, bombax ceiba, harbour, Guangzhou Tower, merchant ships, seagulls, and cloud patterns, which vividly reproduce the prosperity scene of “All kinds of goods in the world are imported into China from overseas. Tens of thousands of wine shop owners take care of each other in business”. Servings as the background of the lobby dining area, it subtly contributes to the creation of the atmosphere.
One Belt One Road, the historical background of the Maritime Silk Road, and the authentic Lingnan culture of Guangdong. Additionally, the space was redesigned in the form of “The Market”, a division of 9 specific DNAs: “The Baker’s Corner”, “The Juicery”, “Farm To Table”, “The Fisherman’s Table”, “Open Kitchen”, “Communal Table”, “Green Sanctuary”, “Partition Wall”, and “Locavore Corner”, collectively contributing to a fashionable, youthful, and diversified gourmet oasis reflective of Guangdong characteristics.
Garden, Sunlight and Gourmet
The MOK design team devoted a great deal of time to the brand characteristics of the two groups, as well as to the historical culture of Guangdong. Elements incorporated into the design include some geographic characteristics of Guangdong, which serves as a stop on the Maritime Silk Road. Other elements reflect the main products exported by the Maritime Silk Road - porcelain, bronze, and Cantonese embroidery - as well as the development history of the Canton Fair.
As the designer said: I hope people feel relaxed when they enter this space, instead of rushing to take pictures. At the junction of indoor and outdoor, in addition to a tea bar in the corner where you can wait or rest, a bigger surprise awaits - the outdoor garden. The scenery and objects of the garden drive all of the senses. A piece of greenfield was “transplanted” to the front hall, where you can breathe the fresh air, hear the crisp birdsong, see the brilliant colors, and touch the textured materials to heighten your mood. The 6-meter-high transparent space is bright and wide. Plenty of daylight contributes to an impressive, dreamy scene. There is also a tea bar

where you can drink. The hotel’s unique location, and the transparent, bright, and natural restaurant outdoor sunroom, make it a primary choice for many wedding banquets and conferences.
Market and Open Kitchen The style of the restaurant is modern and elegant, combined with the form of “The Market”. It has an enclosed, island-style baking “market” and “The Juicery” area, as well as an open kitchen featuring a variety of Cantonese flavors and Asian cuisines. The high-class, yet simple style of the restaurant includes elegant, light-colored marble textures, grille elements, and warm, light brown tones. The interior can accommodate a total of 219 people. Through an in-depth analysis of the flow of people and business models, the design team aimed to create both a completely independent private space, and a large-scale open area, combining in an independent and integrated market format to meet the various needs of its customers, as well as the needs of its multi-period operations.
Marble and grille elements are used in “The Juicery” area, which is visually connected to the Baker’s Corner. The simple golden chandeliers are like tangible musical notes, jumping into the cups of guests. The diversity of the space allows for communicative group gatherings, or tranquil moments alone.
Artistic Division The design of this space has both function and aesthetics, and it also generates economic benefits. In detail, MOK flexibly uses glass screens, grilles, and greenery to separate the open dining area, the private room, and the VIP room in the lobby. The layout of the open dining area and the VIP room is semi-open and semi-private, and light can flow freely in both spaces. The designers constructed the boundary of the space poetically. On the wall of the VIP room, the designers have ingeniously arranged a world map with a black metal frame, echoing the frame color of the glass screen, the material, and shape of the indoor chandelier,

and the black and white photos on the wall. Their appearance differs when viewed from different angles. At the entrance, the designers used green plants to decorate the wall, and also dotted the lobby with green plants. The large-leaf green plants not only ensure the privacy of the space, but also ensure the transparency of light and air circulation. As the designer said, “I don’t want to create fast fashion designs that will soon become obsolete, but rather use the most simple decoration and design techniques to meet the function, consider the economic benefits, and attach importance to the communication between people. The reconstruction design of the all-day dining restaurant in the Westin Pazhou Hotel not only conforms to the aesthetics, but also reflects the local culture and history. The precise and poetic design and application of wellconnected materials with art and design, which inspire guests and enhance their dining experience.”

Caribbean Beverages 100% Organic Premium Drinks Brand, Bringing Real Flavor to the Table. - OTC BEVER AGES An amazing business idea passed through Shirley’s mind during her father’s 80th birthday party in 2017. As she gazed around the room full of guests her thoughts turned to the homemade drinks they were consuming - ginger beer and sorrel - and how these are often sold in understated plastic reusable bottles on the shelves of many Caribbean restaurants and takeaways. Shirley says, “I thought, surely there’s a better way of presenting this? My and my children’s generation, are not going to do what my father’s generation and the generation before did, which is making the drinks at home.” Shirley’s background was miles away from the drinks industry. After spending time working for local government, she spied an ad in the Evening
Standard that caught her eye and went along to a wine and cheese evening – which landed her a customer services role in the world of Market Data and investment banking. After 30 years working in the City for companies Telerate, Deutsche Bank and HSBC, she was ready for her next challenge – the birth of OTC Beverages. OTC offers those same drinks served at her father’s 80th birthday party; sorrel and non-alcoholic ginger beer in bottles and cans (a third flavor coming soon!). These drinks are now stocked in take-aways and corner shops across London. Although beverages are a new industry for her, Shirley says there have been plenty of transferable skills from her former life in finance. “It’s the skills I acquired from project management and juggling a number of programs within large organizations,” she

explains. “It’s also speaking to a lot of people, asking questions and ultimately doing research. I used all those skills to look for the right people to work with, networking, and assessing how the packaging and bottle design was going to look. In the end it’s all about people, and how you get on with them.” From the start, Shirley knew she didn’t want to be brewing up drinks in her own kitchen, but says it took some time to perfect the recipes in the factory. She adopted a less-is-more philosophy to their formulation - keeping the various components to a minimum and using only identifiable quality ingredients such as organic cane sugar instead of artificial sweetener. She emphasizes the natural health benefits of ginger and sorrel, as well as their potential in an ever-growing market for noand low-alcohol drinks. And her flavors are already proving popular, with OTC Beverages shortlisted for a number of accolades including the Great British Food Awards in 2020. In the summer of 2021, OTC received an award for the ‘Best Traditional Caribbean Drink Company’ at the annual Lux Life Magazine Food & Drink and in March 2022 received the Award for Excellence with E2 Media – Food & Drinks Category. Shirley is now working to bring her products to more locations in London, and has plans for the rest of the world as well. There’s a few logistical wrinkles to iron out, although her medium term goal is to bring her sorrel and ginger beer to America and Africa. “It’s at the stage where I’m growing the brand, I’m building momentum, and when consumers go to a shop to purchase a drink, I want OTC to be an identifiable brand of choice”.

High-End Bubble Tea Entrepreneur’s Growth Plans Already Underway - L EON A R D S LAK ES & GAR D ENS The future looks bright for high-end bubble tea entrepreneur Anh Pham, with plans to expand her empire already underway. Anh opened her first premium bubble tea room, Paeonia, in the royal borough of Windsor in October and, such has been its success, that negotiations are already underway for a second site, this time in west London, in early 2022, with plans to have five venues throughout Berkshire and the capital by the end of the year. She’s also had interest in opening a Paeonia in Paris. She said: “Paeonia has brought a unique, highend experience to Windsor, where customers can expect premium bubble tea inspired by the flavours of Taiwan, and my intention is to expand quickly, first in Berkshire and west London, but I would eventually like to see Paeonias all over the UK and further afield.”
Anh moved to the UK from her native Vietnam to study at university in Bristol, but fell in love with the royal borough. An avid royalist who even had her own corgi, she immediately wanted to put down roots in the town. Acclaimed foodie Anh has spent the past decade working in the UK’s hospitality industry. A tea lover with a strong passion for food and beverages, she has tasted bubble tea all over the world and set about creating her own recipes – unlike anything currently on offer in the UK. With queues out of the door on launch day, regulars already visiting the classy tea room daily and demand for her premium bubble teas being so strong that she sold out of ingredients had to close for 24 hours to restock, Anh was confident that her hugely-Instagrammable tea room would be such a soaraway success.

She said: “There is nothing quite like Paeonia in the whole of the UK. Originating in Taiwan in the 1980s, the last few years have seen an increasing amount of bubble tea shops open in the UK, with 2020 in particular seeing a boom in popularity. “What makes Paeonia different is that all of our bubble tea is made using a Teapresso Machine imported from Taiwan – the first UK shop to use this piece of equipment. “Unlike other bubble tea shops, every bubble tea at Paeonia is made to order, ensuring better flavour, freshness and taste. Earth Hour At Sartoria Francesco Mazzei and Luca Dusi to host candlelit Food & Wine Tales dinner for Earth Hour - SARTOR I A To celebrate Earth Hour, chef Francesco Mazzei is teaming up with his dear friend Luca Dusi of renowned Italian wine bar Passione Vino. The pair will host a special candlelit edition of their muchloved culinary event, Food & Wine Tales. The dinner will be held in the private dining rooms at Francesco’s elegant Mayfair restaurant, Sartoria, from 7pm on Saturday 26 March and proceeds from the night will go to WWF. Earth Hour was started in 2007 by WWF and is now held each year at 8.30pm on the last Saturday of March, with lights switched off to raise awareness of nature loss and climate change. It is now one of the world’s largest grassroots environmental movements. In honour of this special day and in
a bid to spark conversations around tackling the climate crisis, Sartoria will be transformed into a twinkling candlelit setting for guests to enjoy an evening of delicious Italian food and wine. An illuminated, curvaceous marble effect central bar takes centre stage whilst an open kitchen runs down the middle of the restaurant providing views of the chefs in action from all tables. Down Hall Announces £2.8 Million Refurbishment To Lounges And Grounds - D OWN HALL 110-acre country house hotel and spa, Down Hall in Essex, continues its £2.8 million investment in the property with the development of its bar, lounge and outdoor facilities. The refurbishment is part of a continued commitment to develop and elevate the property following an extensive refurbishment of the hotel’s West Wing in August 2019, along with the reception area and Garden Room restaurant last year. Having begun work during the pandemic, externally a one-acre kitchen garden and apple tree orchard have been planted whilst a new landscaped wedding garden has been established. The hotel’s tennis facilities have been expanded with a new padel tennis court while a woodland trim trail experience has also been opened. A new 120-cover al fresco dining terrace will follow in May 2022, as an extension of the hotel’s recently renovated restaurant Garden Room. Overseen by design agency, BESPOQE, the project will see the hotel’s bar and lounge renovated to create a luxurious and elegant space that
respects the rich history of the Grade II listed Italianate building, which can be traced back to the 10th century. Alongside carefully restoring and spotlighting the property’s period features, the new interiors will include a rich colour palette, bespoke furniture, new flooring, lighting and soft furnishings throughout. The reimagined bar features a scheme of rich blues and dark woods with pops of red and orange detailing. An illuminated 12-foot-tall bar takes centre stage whilst custom-made furniture includes chairs upholstered in soft leather and plush sofas finished in Italian velvet. In the adjoining lounge, a complementary palette features accents of a lighter periwinkle blue and rose pink, with bespoke banquette seating finished in premium French leather. The original antique marble fireplace has been carefully restored and a stunning art wall nods to the hotel’s expansive grounds with paintings of wildflowers, mythical creatures and a giant pear tree.

Michelin trained chef launches a new restaurant at an award-winning Edinburgh gastropub - B R I DGE FI FTEEN Chef Tyler King, who was previously senior sous chef at German Michelin starred restaurant, Prism, will be opening Bridge 15, a modern Scottish restaurant within The Bridge Inn, Edinburgh. 28-year-old Tyler’s new evening restaurant, with magnificent views of the canal, will heavily focus on local, seasonal ingredients and simple cooking to showcase the produce. Before moving to Germany, Tyler honed his skills at Scotland’s finest restaurants including Number One at The Balmoral and Castle Terrace. Tyler’s decision to move back to the capital was influenced by his love for Scottish produce; having grown up by the sea in the fishing village of Pittenweem, Tyler is passionate about seafood caught off the east coast of Scotland. Recovering from the dark days of COVID, the group decided that building closer Guest relationships is the key to rebuilding business. After looking at options, they were impressed with the whole range of contactless guest experience capabilities that the Criton Guest Engagement app offered. Extending that with the Inspire loyalty system to encourage repeat bookings was logical. Being the PMS provider for the group, it was natural that the Queens Hotel contacted Clarity to see how difficult and expensive it would be to integrate these systems. Clarity was already in discussion with Criton and integrating Inspire was relatively simple given the extensive in-built architecture of Clarity Hotel Manager. Both integrations were achieved at ZERO cost to the group. The Belfry Recruits New General Manager T H E BE L FRY HOTEL & R ESORT The Belfry Hotel & Resort, an award-winning luxury hotel and resort in Royal Sutton Coldfield, North Warwickshire, has announced Quin Holtzhuizen has been appointed General Manager. Quin joins the team with over 22 years of experience in hospitality and will report directly to Resort Director, Chris Eigelaar. The world’s elite is the first to travel here on their own or leased private jets. One flight hour for the costeffective option costs about 5-6 thousand euros. We thought it appropriate to create our own fleet of private jets. These are mini jets by the Japanese manufacturer Honda Aircraft Company. Today our

There are five seats in the cabin, which means that each passenger pays about 1,000 euros per hour in the sky. An average bill for flights within Europe is between 10 and 20 thousand euros. This is the cost of renting the entire plane. The amount is divided by the number of passengers. There are from 4 to 12 seats in business jets.
