Intrigue through design
- 4RESTAURANTS
In approaching their second collaboration with Germain Hotels, Atelier Zébulon Perron embarked on a contemporary vision of a historic era, rolling back layers of history to reveal some of the building’s original Brutalist architecture. Exposed concrete and other raw materials served as inspirational canvases for a contrasting purity of forms and lines, applied to a minimalist design focused on space planning, modern materials, and luminosity.
Atelier Zébulon Perron, an interior design firm focused on forging connections between people and spaces, is proud to unveil the welcoming ambiance of Le Boulevardier restaurant and Le Flâneur Bar Lounge, comprising the food and beverage portion of a major $30 million renovation of Germain Hotels’ flagship property, Le Germain Hotel, in downtown Montreal. The firm’s ensemble of work comprises approximately 8,000sf of symbiotic space, on two separate levels, including a ground floor bar/lounge, a first-floor restaurant, and an alluring staircase to connect the vibrant spaces. “The lead architect of the hotel renovation chose an Expo ’67 retro theme, in the context of Montreal as an international city welcoming the world,” says Zébulon Perron, the firm’s founder and creative director. “The theme and the building itself provided rich inspirations to draw from, but the challenge was to articulate our interpretation in two separate spaces, and to provide a seamless connection between them.”
A core element of the planning process focused on creating a physical and emotional connection
Atelier Zébulon Perron’s contemporary interpretation of a bygone era - LE BOULEVARDIER RESTAURANT & FÂNEUR BAR LOUNGE -
A destination on its own, Le Flâneur’s offering of oysters and champagne bubbles further contributes to intrigue surrounding the space above - Le Boulevardier, the hotel’s new 110-seat restaurant specializing in classic French cuisine, with a contemporary approach.
Le Flâneur In addressing the design of a welcoming lobby bar/ lounge, the firm focused on creating a space where both local patrons and hotel guests can mingle, work, or simply enjoy a drink. With its relaxed retro feel, wrapped in an unpretentious, contemporary décor, Le Flâneur has achieved that goal. Its welcoming blend of conviviality and elegance, with contrasts of raw concrete and noble materials, creates a balanced warmth designed for people to inhabit, rather than simply admire. Rich, dark woods and marble adorn
Le Flâneur’s counters and floors, while strategicallyplaced dividers provide a contemporary framework for banquettes and chrome cube furnishings that infuse a retro feel into the comfortable setting.
The staircase leading from the lobby to the first-floor restaurant bridges a balanced décor, ascending into a space illuminated by an abundance of natural light. Exposed concrete beams rise above the restaurant’s contemporary décor, which mirrors Le Flâneur’s abundant use of dark woods and marble countertops. From the warmth of a retro ambiance where time seemingly stands still, patrons will be mesmerized by a window on the world at their feet, courtesy of floor-to-ceiling windows providing magnificent views overlooking the horizons of President Kennedy Avenue and the downtown streets below. The floorto-ceiling windows also serve as an inward portal to the restaurant for curious passers-by, designed to complement the restaurant’s patronage of hotel guests with an influx of external clients.
- 5 RESTAURANTS-between the two thematically symbiotic spaces.
In order to foster intrigue, Atelier Zébulon Perron repositioned the hotel’s centrally-located staircase closer to the front desk area, inviting patrons to explore beyond the confines of the lobby. Rising up through the ceiling and anchored from above, the steel structure and hardwood steps of the new staircase are framed in a transparent wall of steel rods, tactically illuminated to make it as aesthetically pleasing as it is functional.
“Social dynamics and the process of facilitating interaction is an important part of our practice,” explains Perron. “In line with that philosophy, we wanted to create something that would be architecturally engaging, but which would also draw attention to the fact that something was happening upstairs.”

While the windows, and the connection that they offer to the downtown streets, expand the horizons exponentially, a strategic gallery of mirrors adorning the ceiling and side walls of the restaurant’s interior further provides the illusion of expanding the space well beyond its actual dimensions.
Under the tutelage of Chef David Pellizzari, Le Boulevardier is an extension of the Le Flâneur vibe and theme of social connectivity. Working in close collaboration with a kitchen consultant, Atelier Zébulon Perron achieved continuity through an open kitchen design that seamlessly blends with the space’s décor and ambiance, while ensuring maximum operational efficiency for the chef and his staff.

An enlightened ambiance Further illuminating the vision of Atelier Zébulon Perron, intricate lighting design was integrated into architectural planning from the onset. Working closely with Montreal-based lighting studio, Lambert & Fils, the firm designed customized lighting schemes focused on capturing the essence of the spaces through controlled quality, temperature, and modulation. Capitalizing further on elements paying homage to the original brutalist architectural language of the building, a grid concrete ceiling with embedded custom copper lights was developed above the ground level elevators, infusing new life into a dated ambiance and further enticing inward exploration of the vibrant new spaces. The nighttime lighting of Le Boulevardier results in a more intimate, inward ambiance. Natural daytime light gives way to the luminosity of elaborate, modern ceiling systems, further complemented by ground-level retro fixtures that draw patrons back from the external hustle and bustle in order to frame the city from a more observational perspective.

Hospitality trends are asking for smart solutions. When you know the classic latte is the most popular coffee order nowadays, automating the milk steaming process is the next logical step for profitable quality coffee business.”
Why automation is bridging the gap between craftsmanship and efficient coffee business
How to handle the moose
So, will automation take over for the barista?
Jan Adriaens, Belgian engineer behind the award winning milk steamer Perfect Moose, pioneered by introducing automation in specialty coffee business.
Getting the milk froth right is a true skill and quite a time-consuming part of the coffeemaking process. By automating it you can provide consistent quality no matter the maker and improve workflow efficiency without ever losing the passion for the product. Will automation lead to sameness and boring uniformity?

evolved from a morning pick-meup towards a high-end delight served by tattooed baristas in big city coffee bars, customers are now also expecting high quality coffee in general catering businesses and restaurants.
Adriaens continues: “For us, the passion of creating always remains key. It is never our intention to impose a certain taste or uniformize the coffee experience by automation. We encourage baristas, bars and coffee chains to keep an open mind. The Perfect Moose can be used with the milk or plant-based alternatives of your choice, you can use standard settings or customize temperature and pouring texture, choose the exact amount to fit your cups… all things enabling the coffee professional to create unique signature drinks, offer more plantbased options, use local fresh milk, reduce costs, save on cleaning and waste… automation yes, but always with the option for a personal twist.”

Fresh, casual vibes for a brand-new neighbourhood - ATELIER ZÉBULON PERRON -
Atelier Zébulon Perron, a firm renowned for its distinct interior design services for the commercial sector, is proud to unveil Pancho, a new restaurant designed for the first dual Branded Hilton Garden Inn & Homewood Suites Montreal Midtown, a central component of Montreal’s newly built Westbury neighbourhood. The new 290-room, dualbranded hotel complex forms part of an ambitious urban development that will include four residential condominium towers, an office tower, retail spaces, and a central park. Atelier Zébulon Perron’s design concept for Pancho draws on the principles of a casual Mexican taqueria.
- 20DESIGN & ARCHITECTURE
“This was very much a collaborative effort between us, ownership, and the restaurant operator,” says Zébulon Perron, founder and lead designer of the firm that bears his name. “We worked together to develop a vision that would blend into the vibe of the newly-built neighbourhood and ensure its pertinence in the day-to-day life of the district.”

A component of a new community quilt
“Our intention from the outset was to design activation around the bar and the kitchen area in order to create a sort of ballet of captivating activity,” explains Perron. “As a firm, we focus intensely on user experiences when we plan spaces like this, and we think about how people will absorb the atmosphere and be energized by it.”
Pancho’s casual spirit is evident throughout, from the presence of colourful garland-style lighting, to the choice of materials, including a terrazzo-clad bar around the kitchen area. The centered kitchen is a central component of Pancho and is highlighted by an imposing sculptural frame that descends from the ceiling. In addition to its functional purpose in concealing the mechanical components of the kitchen operations, the ceiling structure boldly reduces the space to a human scale, illuminated by hand-woven pendant lights designed by local artist, WithAmulette.its original seating, colourful patterns, and orange-tiled walls, the nouveau postmodern approach to Pancho succeeds in capturing the casual and exuberant essence of a Mexican taqueria.
A convivial and immersive setting ‘Fun’ is the operative word at the core of Pancho’s functional design. Custom-made terrazzo covers the floors and bar of a small dining room area articulated around a central kitchen, the latter immersing patrons in the convivial experience of the restaurant’s operations and bar service. With wrap-around seating directly overlooking kitchen operations, patrons are drawn into a dynamic and immersive experience. In keeping with the project proposal, Pancho offers multiple vibes within the same space. With its variety of seating types at the bar, around the kitchen, and on the terrace, the overall space articulates its sub-spaces.

The firm focused on designing a vibrant ambiance that would service the needs of the hotel, but would also appeal to residents of the neighbourhood and the public at large. They approached the project from the onset as something central to the community vibe, with a focus on functional transitions from morning café settings, to casual lunches, and slightly more formal evening dining. The space was conceived with floor-to-ceiling windows that open seamlessly onto an exterior terrace, further contributing to the concept of extending the vibrant environment beyond the hotel’s boundaries. “We focused on creating multiple experiences in order to make the space very dynamic,” explains Perron. “We wanted to design a space that would become part of the neighbourhood fabric, where people will gather together for a drink or a bite to eat.”

The recent closure of Jamie Oliver’s Fifteen restaurant on the site paved the way for the £1.4 million development of the seven new beach lofts by contractors GSI and interior designers Dynargh Design, right above the beach.

“Getting active in the beautiful natural environment is at the heart of the Watergate Bay experience, and we’re committed to minimising the environmental impact of our design choices,” adds Will Ashworth.
Watergate Bay Hotel CEO Will Ashworth said: “The beach lofts are our best rooms. They are sized very generously and the interior design represents our new approach to contemporary Cornish beach living.”
Their balanced flue system offers flexibility of installation, as they require no chimney and only need proximity to an outside facing wall. This enables them to be installed in the living space, bedroom or bathroom subject to the design of each individual suite.

Kernow Fires owner Simon Breckon commented: “We’re pleased to have contributed to the success of the beach lofts and have seen strong growth in Cornwall’s domestic and commercial fireplace markets this year.”
Dynargh Design director Matt Hulme said: “The lofts have some of the most impressive outlooks of any hotel in Cornwall. But the interiors also needed to have enough appeal in the winter, when it’s dark at 5pm, that it feels warm, natural and enticing.”
DRU Fires, in partnership with leading Cornwall fireplace dealer Kernow Fires, has supplied five DRU Polo balanced flue gas stoves for the new beach lofts at one of Cornwall’s leading hotels.
Described as ‘surf-in surf-out’ accommodation, the lofts have floor-to-ceiling windows with panoramic sea views. All have been designed to feel like modern city lofts, with warm textures and sustainable materials.
The beach lofts were completed in time for Cornwall’s peak 2021 tourist season, which has been hugely successful due to many more people taking their holidays in the UK during the Covid 19 pandemic.

It’s a difficulty that has troubled designers for years which makes me wonder whether specifiers and equipment manufacturers including ourselves have been looking at this challenge from the wrong Whyangle?are kitchen designers having to accommodate equipment of standard sizes into their designs, when they should really be asking the manufacturers to build equipment to fit into the designs they have created? Square pegs and round holes
DESIGN & ARCHITECTURE
Let us be clear, it is not wrong for a manufacturer to build equipment to a standard template, nor in standard colours, and specifiers will be aware of this when designing a new facility. But life isn’t always that easy or convenient. Sometimes space is at a premium, and the designer has to optimise what little space he/she has.
Sometimes too, a designer may want to take what is essentially a ‘behind the scenes’ piece of equipment and bring it to the ‘front-of-house’, as part of the ‘theatre’ of cooking and hospitality. The arguments against creating ‘bespoke’ equipment are well known. Fundamentally, they come down to cost, and the inability or reluctance of certain manufacturers to adapt production lines to one-off machines. But again, this should not be a barrier, and there are ways of creating more agile manufacturing processes that allows for bespoke orders to be fulfilled without the costs being disproportionate to the task.
It is also possible to build equipment not only to a bespoke size, but also to a bespoke design, using
Opinion: Design and Build - KOPA -
Miran Stirn believes manufacturers should be doing more to bespoke equipment to match a consultant’s designs, and not the other way around. Specifiers of kitchen equipment, from charcoal ovens to chiller cabinets, face a familiar set of challenges. Not only does the equipment have to perform, and at the right price point, but it must also fit with its environment. And by ‘fit’ we can mean it in both ways: ‘fit’ in terms of aesthetically, in a design that complements its surroundings; and ‘fit’ quite literally, in whether it can be physically installed into a space that has been allocated for it.

Contemporary urban rhythm is rush and noisy, people always long for a quiet moment and leisure time. Staying away from the busy city is not easy.
In every seat and corner, people can easily find their own place, the guests just blend into the fuzzy shadow. The motions of multimedia art “Woyou” created by artist Cui Kaimin, seem to tell the story of free and unfettered. The whole experience is trying to let the outside noise fade away step by step and relief the inner sentiment.
Just like the poet Mr. Su Shi said: The wild escape is the ultimate ideal. If people can keep the urban life but sometimes have an urban escape, the leisure time can be extended to become a part of daily life.
Into the hotel lobby, the fences decorated with vaguely dim lights. “Fragrant”, “Tea”, “Painting”, “Floral”, lead guests to join this elegant banquet, all the inspirations coming from the traditional culture.

Starting from the lobby, bamboo was selected as the key material and contributes to a lobby space that greets visitors with sophisticated light and shadow effects on the main wall. Various on-site tests & experiments with traditional bamboo weaver were done to create full height screens to define the reception and lobby lounge areas. A pitched roof ceiling and natural diatom mud finished walls, overlaid by articulated light and shadow effects, provide a minimalist leisure experience for the entire space. Double height central courtyards were introduced on every two guest-room floors. A reflective lake with a bamboo installation of dancing curves falls naturally, as if clouds are floating in the air. This ceiling-hung structure, produced in consultation with bamboo masters, is curved by making use of its natural elasticity and traditional connection method. Guests will experience the feeling of passing through an abstract bamboo forest before arriving at their Skyrooms.Café is located on the top floor and is a zen and church-like space constructed as a full height bamboo structure. Using the Quantex scan system, we facilitate automated, continuous quality control of items on Kannegiesser ironers. The scan system checks every piece of linen and guarantees highest quality that is individually tailored to the needs of each customer from the hotel and restaurant business. State-of-the-art camera technology mounted on the folding machine detects stains and holes on both sides of every piece and automatically separates rejected items. Quality criteria can be individually determined individually for each type of linen and www.kannegiesser.com/uk/en/index.html
Quantex ensures reliable stain detection on the upper and lower side of flat linen. The detection of holes in the textile also works with multilayered articles, such as hidden holes in bed linen.
The initial first impression can set the tone for the entire customer experience. As a guest entering a hotel room, the first thing that your guest will scrutinise is the bed, which is no surprise as this is where they will spend most of their time. Therefore, quality and cleanliness of the bed linen has a direct influence on the customer experience. However, hygienically clean is usually not enough. For many hotels immaculate linen is a key requirement as holes and stains in the linen can easily overshadow an otherwise pleasant guest experience.
Alignment issues, wrinkles, edge irregularities and creases are also detected. Identified items are then sorted out and either collected in a laundry trolley or fed automatically via a conveyor belt or vacuum system for further processing or re-washing.

The Quantex Scan system from Kannegiesser enables the textile service providers to automatically check the quality of flat linen items throughout the entire process. It detects stains or holes on both sides of the laundry item. By adapting the quality criteria to the type of laundry, the delivery quality is significantly improved. This benefits two areas; In the laundry, staff are relieved of quality control, errors are reduced whilst accelerating the delivery process. Early error detection benefits the hotel as this process eliminates the time cost of remaking a bed.

The Solution: Quantex from Kannegiesser

The laundry and hotel staff do an excellent job, but are also often restrited by time pressure. Stains and holes are often only discovered by the hotel guests, leaving a lasting negative impression of the service received.

The world of hospitality has almost instantly gone crazy with demand after all the pent-up frustrations of the Covid period. Suddenly we’re overwhelmed with bookings, guests and expectations that are hard to meet in a recovery and rebuild phase. Not to mention there’s no certainty this ‘exuberance’ will continue or be flattened by a recession, travel chaos or simply inflationary pressures.
Does your PMS tell you daily exactly what’s happening and that the little things, like Guest comfort and needs, are taken care of, what new bookings are coming in, how the housekeeping is proceeding in real time, how the departing Guests rate their experience, and that you’ve been paid? Does it tell you monthly exactly how your business is tracking compared with whatever previous period you want to compare with, what the next few weeks expectations are looking like, whether you need to adjust your rates, how are your packages selling, are bookings coming from OTA’s, direct bookings or Travel Agents and who are they selling to?
In times like these you need to have reliable information and rock-solid systems that don’t require a lot of energy and attention-sapping focus. Fortunately, there’s Clarity Hotel Manager. It’s a smart, connected and intuitive PMS that hundreds of Hotel’s consider their single best tool.
Can your current PMS let you take advantage of the rebound like Clarity Hotel Manager can? Gearing up for recovery – everything you need and more.
A tap aerator adds air to the water flow creating a soft comfortable stream that feels plentiful and prevents splashing. A choice of flow shapes can be selected, and it’s a 5-minute job to replace the incumbent anti-clogging or stream control device in place, with a flow regulator. They are also available with ‘smart limescale clean’ nozzles to prevent limescale build up too.
EDITOR’S
Fitting is easy It takes just a few minutes to fit an aerator in a tap or flow regulator in a valve shower and yet it can literally save thousands of litres of water each year. For the taps, the first job is to work out which product is required and which tool to remove the existing stream control. The new pressure compensating aerator is then placed and re-screw back into the spout end. To make a shower run more efficiently is a similar exercise by fitting a flow regulator upstream of the outlet. It is not recommended to fit an electric shower with these flow regulators as they will already be in place at the point of manufacture.

- NEOPERLRecord temperatures and a severe lack of rain has caused water shortages across the UK this summer, what better time to take action to save water in your establishment and save the energy used to heat it. Neoperl UK is a manufacturer of water stream devices and flow regulators. They are precisionmade devices that can be inserted at the end of a tap spout or upstream of a shower outlet, to reduce and regulate the water flow without reducing Asperformance.waterpressure fluctuates throughout the country, it’s impossible to produce a tap or valve shower to work with the same efficiency in every commercial kitchen or hotel bedroom. Manufacturers therefore produce new taps and shower heads with optimal performance to work their best across all pressure situations. Now the flow can be tailored to a situation by retrofitting aerators and flow regulators to save water. There’s no point in having a strong flow rate if the tap is only used for washing teeth and hands or to have a shower that literally splashes out of the enclosure. These retrofit products allow the performance to be checked on site and adjusted to suit, ensuring a comfortable and suitable flow is reached. This is particularly important where rows of washbasins or multiple showers are prevalent. A Pressure Compensating Aerator (PCA) or flow regulator will help distribute the water more evenly throughout the building to mitigate flow issues from the effects of pressure fluctuations. Shower flow control A standard European shower head will produce around 18 litres of water per minute at 3 bar of pressure. A flow regulator like these could reduce this to a comfortable flow and dependant on the specified flow rate, save thousands of litres of water per year.

Kitchen taps too
It’s always been harder to save water in a catering kitchen with the need to quickly fill pans for cooking or sinks for washing up. However, there are retrofittable aerators that can be switched from a standard water saving flow to full capacity in an instant allowing the tap to be on eco-mode for general use but boosted to a fuller flow when required.
Drinking water is our planet’s most vital resource. Neoperl products are often found in use wherever water flows. They shape the water stream, regulate its flow rate, filter it, protect it and distribute it to help conserve water resources. Situated on Midosuji Boulevard, a new 27-story landmark high-rise, designed by Nikken Sekkei and with a Tadao Ando supervised facade, is the home of Japan’s first W Hotel. Don’t be deceived by its simple black monolith design – inside hides a world of extravagance! Its interior is inspired by the many facets of the city, welcoming guests to experience Osaka, through the eyes of concrete.
Every W Hotel is designed for its specific location – with foreign designers invited to offer the fresh perspectives of an outsider. For W’s first hotel in Japan, concrete absorbed the sites, sounds, flavors and thrills of Osaka. From the simple beauty of the cherry blossoms and gingko trees lining the Midosuji Boulevard to the vibrant neon and busy streetscape of Osaka’s nightlife district Dotonburi. Concrete found inspiration in both the simple and traditional, as well as the modern, obsessive and extravagant and created a design concept of extravagant simplicitycelebrating the true spirit of the city.

The arrival
- 66 -
The “wow” experience begins as you enter the long arrival tunnel from the main Midōsuji Boulevard entrance. Inspired by delicate blossoms and the fine art of origami, more than 3000 circles were laser cut into sturdy metal and folded randomly. The lights behind the abstract blossom change colors with the 4 seasons and shift in intensity from daytime to night – creating an otherworldly portal into the world of W Osaka. The Osaka experience proceeds in the arrival lobby. Here, the asanoha pattern was the inspiration behind the ceiling, flooring and staircase. A simple yet bold ceiling uses a scaled-up, 3D version of this traditional geometric pattern – which is reflected in the pattern on the granite flooring, in 6 dark grey shades.

The interior design for this French themed bistrodiner draws its inspiration from traditional copper pots and pans, as well as the typical Breton blue and white striped shirt. Along the wall stainless steel shelves are styled with unique porcelain objects decorated in blue dots – combining traditional French shapes & colors with the circle obsession of W Osaka. Adding sparkle from above, are clouds of small ball pendant lights, suspended at different heights within the waves of the curtain.
The WET deck, bar & courtyard Inspired by the Japanese love for nature, the WET area is characterised by smooth walls and round corners. The endless line of the horizon is the simplest abstraction of nature. This line becomes a playful element connecting all the spaces on this floor, as a chrome horizon flows along the walls. Each area has its own character – color-coded in shades of green, grey, blue or pink tiling – defining the space’s function.
The social heart - living room & bar
In a standard hotel, the first thing guests see is the check-in counter. Instead, when exiting the lift, W Osaka guests immediately see the bar, the social heart of the hotel. To connect and separate the spaces that serve the W Osaka guests on this floor – like an endless shoji screen – a continuous white, sheer curtain with sharp origami-style pleats flows from here to there and around again. Guests are welcome to relax (and people-watch) in the hotel’s Living Room – half indoors, and half outdoors. Above the indoors lounge floats a wild cloud of rectangular lamps, hanging vertically and horizontally, at various heights. White zigzag “neon” lights shine through the translucent acrylic forms, in a desaturated homage to Osaka’s electric nightlife scenery. It’s like the colors of the neon have dripped on top of the furniture, and are arranged from purple to pink to orange to yellow to blue to green.
The guest rooms
Open to the elements, with views of sky, W Osaka’s WET courtyard is an oasis, with live planting trailing down the walls of the atrium. From its elevated position on the horizon line, the pool forms a blue backdrop to this area. Directly adjacent to the courtyard, guests can grab a cocktail at the WET bar.

The color theme of the guest rooms alternates per floor, between sakura pink and blue – allowing guests to choose the color they prefer. The rooms consist of an open plan, with the living room, sleeping zone and bathroom separated by a contemporary glass shoji screen. Floor-to-ceiling windows bring in natural light and amazing views of the city. A wall made of grey tinted 2-way mirrors conceals an ‘escape’ lighting feature. When turned on, it transforms the room with dramatic pink or blue diagonal stripes, inspired by Osaka’s neon. Another surprise is locked away behind the walnut doors of the closets. Famous for their gamer’s pixel art, eBoy graphic designers created a “pixorama” of Osaka, filled to the brim with the city’s famous landmarks in full pixilated color.

EWOW suite High above Osaka, on the 27thfloor, the Extreme Wow suite looks out over – and beyond – the skyline of the city. Inspired by traditional Japanese homes, the suite was designed in a sequence of 5 rooms divided by deep, oak portals with sliding shoji screens that can be used to close off or open up the different rooms. The overall design is based on the duality of simplicity and extravagance, allowing guests to change the atmosphere of the suite. WFC was very proud to have worked with David Collins Studio in 2019/20 to bring their exceptional vision for the Nobu Hotel to fruition. The attention to detail was remarkable. Right from the start, every touchpoint was considered. WFC had to ensure we matched the designer’s expectations to produce the highest craftsmanship. The project completed in two phases. Phase I was the fit-out of an existing shell to include a new lobby area, Nobu Bar, Nobu Restaurant, all FOH WC areas, and kitchen works - a 23 week project plus enabling. Phase II was the strip-out works and fit-out of a new Ballroom, meeting rooms, and a first floor communal area - a 21 week project. All our sub-contractors and our site team worked tirelessly on this challenging project, almost 24/7, to achieve the extremely high standards expected.
