Blacksheep have launched their design for Home Bakery - a new bakery concept located in the Galleria Mall, a recent development in the Al Wasl shopping district of Dubai.

06

The World of Hospitality Issue 8 2014

Born from a passion for baking delicious desserts, Home Bakery is the brainchild of local Emirati, Hind Al Mulla. The concept originated as a modest baking business from her kitchen table, and quickly grew with overflowing orders from a loyal established customer base and a barrage of new enquiries in the form of fanatic social media followers. Hind soon realised her ambition to turn her hobby into a business and approached Blacksheep to create its brand identity, encompassing collateral, packaging, website, bespoke tableware, and the interior design of the store. Home Bakery’s modest and authentic approach offers a home for traditional delights and familiar treats, in contrast with Dubai’s typical modern aesthetic.

Blacksheep created a brand DNA based on the core value ‘Simple Indulgence’. From this a visual identity was created, using three different design elements all derived from the emotionally evocative and sensory pleasure experienced when we eat sweet foods. A wordmark was created using a unique set of hand drawn letterforms representing the simplicity of the brand and emphasising how the desserts themselves are made, by hand. Brandmark variations reference baking in the most literal sense - the sprinkling of cocoa or icing sugar, and the shape of Home Bakery’s most infamous product: the Chewy Melt cookie. A vertical gradient represents the physical ‘high’ experienced when sweet food is eaten, with colours taken from a classic ingredient of Arabic baking the pistachio nut. The interior design reflects the origins and values of the brand, incorporating a house-like structure within the internal framework of the restaurant which curves inwards to act as bench seating and creates an atmosphere of homeliness and comfort. Honesty in the earthiness of the materials and furnishings including rustic oak timber, thick padded fabric, and worn leather allows the simple deliciousness of the products to speak for themselves.

The World of Hospitality Issue 8 2014

Interior Designer, Sophie Pascoe commented; “It has been such an eye-opening experience working alongside Hind as she really represents this whole new wave of home-grown entrepreneurs prepared to take a risk to create something new and original for their region. It’s hard not to be inspired by her passion, hard work and conviction and we are all excited for the brand’s future.” Hind Al Mulla commented: “Overall, my experience with Blacksheep has been very special. It’s like they delved into my very essence to translate the wonderful creation of my bakery. Every little thing has a meaning and I love that. I hope I have more projects to come, so that I can work with the same wonderful people that transformed my small dream into a beautiful reality.”

Whitechapel Just got tastier Foxcroft & Ginger open new premises After tantalising the taste buds of Soho locals for the past few years, Foxcroft & Ginger is expanding with the launch of a 70-seat site in Whitechapel on Thursday 3 April 2014. The new glass-fronted dining space will occupy the ground floor of an iconic 20th Century building that once housed the “Harrods of the East”. The artisan café will offer a specialist range of hand-made baked goods, incredible cakes, delicious brunches, sourdough-based pizza, creative cocktails and exquisite coffee. Every single ingredient will be freshly made inhouse, with original recipes lovingly tweaked to perfection. A non-stop, 24-hour bakery operation is in place to create the unique sourdough, which is based on a secret family formula and adds a deeper flavour to all of the baked goods. The coveted sourdough bread, which is already supplied to a number of top London restaurants, will also be available to purchase in store. Hearty breakfasts and brunches offer the perfect start to the day, with choices such as best-seller “French Toast” (£6.40) (French Toast, béchamel sauce, ham & cheese, drizzled with honey mustard) and “Eggs Bennie” (£8.25), where eggs are cooked ‘sous vide’ at exactly 63 degrees for an hour to achieve the ideal consistency. Sourdough pizzas are available in the evenings, perfected with a range of flavoursome toppings such as: Pulled pork, smokey tomato sauce, mozzarella & jalapenos (£7.50). Foxcroft & Ginger is also renowned for its delicious range

of original cakes and pastries, including the gooey Chocolate Brownie with its delightful truffle consistency and coco powder topping (£1.90 a slice), the fabulous Banana Bread, and the Lemon Meringue Cupcake, oozing with fruity lemon curd (£2.95). Organic flour is used throughout, and a gluten-free “Blood Orange and Chocolate Ganache Cake” (£3.95) is also available. Coffee is taken extremely seriously, with only the finest beans imported from The Roasting Party, Has Bean and Caravan, while the water is purified using reverse osmosis to create a smooth, clean taste. Similarly, a selection of fresh tea leaves from Chash Tea is available, offering high quality and unusual blends. Carefully chosen wines and craft beers appear on the menu, such as Dead Pony (US) and London Meantime, plus a new selection of cocktails will be created for the Whitechapel site by legendary mixologist, Douglas Ankrah, of Townhouse and Lab Bar. The new café will follow the same quirky industrial-chic design principles made famous in the Berwick Street site. The original 4m exposed high stone ceiling is enhanced by rows of black bell-shaped miner-esque lamps. In contrast the table tops are finished with beautiful Lebanese Cedar wood, with a mix of banquette and individual seating. Vintage touches, such as the mismatched crockery handpicked from various markets, give the room a cosy, charming feel. Keep an eye out for the original, hand-carved

F&G heart logo on the owners’ old family kitchen table – a statement piece of furniture that aptly embodies the home-from-home atmosphere. Foxcroft & Ginger is the lovechild of dynamic husband and wife duo, Quintin and Georgina, who spent over ten years launching successful restaurants before taking the plunge with their own creation. Born from a desire to find a place where you can relax with good food and not feel pressured to pay up and move on, F&G is the place they dreamed of for years. It takes its name from Quintin’s family name, ‘Foxcroft’, and Georgina’s redhead pride! The original Berwick Street site has already developed a cult following, including the likes of Lily Cole, Anne Hathaway and Bill Nighy, thanks to its lovingly made, delicious offerings. The new site is ideally located on Mile End Road, one of the main thoroughfares into the City. It has excellent transport links with both Whitechapel and Stepney Green Underground Stations in walking distance. The immediate area has undergone significant regeneration recently, and is now home to numerous high profile residential and mixed-use schemes, along with the main campus for the Queen Mary, University of London. Directly above the cafe is Central Working, an innovative business space full of dynamic, creative people. www.foxcroftandginger.com

Mayfair

Business Club delivered by Area Sq

The Clubhouse, London’s leading business club, lounge and meeting space, has opened a second location in the heart of Mayfair. The latest stylish private members club, created by design and fit-out specialist Area Sq, provides today’s business people and entrepreneurs with a new creative environment and high-end flexible working space in the capital.

The World of Hospitality Issue 8 2014

Designed to build on the success of The Clubhouse at 11-14 Grafton Street, the new 6,000 sq ft space at 50 Grosvenor Hill has a contemporary feel, set within a brand new building originally designed for openplan workspace. A new coffered ceiling incorporates recessed directional lighting to provide members with an immediate sense of arrival and sets the smart, creative tone for the rest of the club. A sense of openness and connectivity between the ground and lower ground floors has been created by Area Sq to give a sense of one space; this includes the installation of a bespoke staircase to link the two floors. A central coffee area has been incorporated into the club, where elegant timber fin details have been used to subtly divide the space and provide a sense of privacy within the lounge spaces. Designed to provide flexibility for members and a luxurious, professional space in which to work, meet and host events, Area Sq has created open-plan lounge spaces, informal flexible meeting areas, a range of highspecification meeting rooms and boardrooms, hot desks, touchdown spaces and an events space for up to 150 people. To capture the different mood of each space, Area Sq has used a variety of contemporary lighting products, wall coverings and striking signature furniture pieces which were provided by their sister company Sketch Studios.

12

13

The World of Hospitality Issue 8 2014

The Clubhouse attracts members from a broad range of industries and sectors, across London, the UK and overseas. Whilst catering to the growing market of start-ups and early-stage businesses that operate with no permanent office, The Clubhouse also attracts many larger, established businesses that are looking for a more flexible working or meeting space in the heart of London, in addition to their main premises. Andy Mackenzie, Head of Design at Area Sq comments: “At The Clubhouse, we have set out to provide a chic and stylish backdrop to business meetings, events and everyday working. The overall look is designed to be smart, casual and creative - definitely not corporate. We want The Clubhouse to appeal to all sectors and types of business people.” Adam Blaskey, CEO and founder of The Clubhouse, comments: “The Clubhouse is a melting pot for creative entrepreneurs who want a professional space in which to work and meet within a sophisticated and business focused environment that inspires them - not a bland hotel lobby or conference room. By working closely with Area Sq and Sketch Studios, the team have come up with exactly the right type of workspace design, which we hope will do great things for many of our member’s business performance and continue to help them thrive and prosper.” www.theclubhouselondon.com www.areasq.co.uk

Lanique Meet 2015’s Hottest New Drink Lanique Liqueur Spirit made from Attar of Rose Pound for Pound ‘Worth More Than Gold’

The trend for retro cocktails is continuing to thrive, with bartenders shunning molecular mixology in favour of classic creations – such as Negroni or Old Fashioned – that shine a light on the quality of the base spirit.

The rose petal liquor has a unique fragrant flavour similar to Turkish Delight, and is made from completely natural ingredients, sourced from exotic locations. The sophisticated drink can be served in a variety of ways, including Lanique & Tonic, Lanique & Soda, or Lanique & Lemonade. But the most popular way is The Lanique Signature Serve with Lanique & Lime over crushed ice.

Step forward Lanique, a rose Liqueur Spirit revived from a historic 200 year old recipe. The botanical beauty, a vivid blushing rosy pink, was first enjoyed by European high society in the 1800s at celebrations and balls.

Situated in the heart of St. Helier, Jersey's beautiful seaside capital, and walking distance from some of the island’s most breathtaking beaches, Bohemia at The Club Hotel & Spa boasts a truly unrivalled location. The hotel’s Michelin star restaurant Bohemia and Roof Top Champagne Bar provide the perfect settings from which to enjoy Lanique.

The first places to stock the relaunched Lanique in the UK were the Michelin Starred Bohemia Bar & Restaurant in Jersey, and Harvey Nichols in Knightsbridge London. It is now widely stocked in the hippest bars and top restaurants around the UK where bartenders are heralding it as the next big drink.

Sleep

BAR 2013

WINS “BEST POP-UP BAR” AT THE RESTAURANT & BAR DESIGN AWARDS 2014

Every year a much anticipated highlight of Sleep, Europe’s leading hotel design and development event, is a one-of-akind, imaginatively designed Sleep Bar that is a centrepiece and attraction for all who attend. The latest in the series has just reached a new level of acclaim by winning “Best Pop-up Bar” at the Restaurant & Bar Design Awards 2014. This year’s bar, a dramatic sculptural form crafted from re-purposed washbasins, was created by a team of leading hospitality experts including interior design studio Nous Design, contractors Willmott Dixon and bathroom ceramics manufacturer Laufen Bathrooms, long-time exhibitor at Sleep. Pioneering artist Vlad Tenu created the innovative aluminium wall sculpture, while suppliers and sponsors Megaman, Interface, Tektura, Soho Myriad, Tacchini, and Ipea UK also supported the installation. Each member of the team illustrated exceptional creativity and commitment to the project. Nir Gilad, Creative Director of Nous Design, confirms the studio is extremely honoured to be recognised with this prestigious international award and shares his insights into the winning concept. “The Sleep Bar was created as a gathering space inspired by nature, an environment to which one can escape. The bar itself represents a lake, with the aluminium trellis backdrop suggesting a forest and the pendant lights an allusion to clouds. Together, these elements form a seamless, dreamlike ambience.” The all-white installation is a simple play between defined geometric forms and abstract structures. With an expanse of over 12 metres, the organic wall sculpture behind the bar is made from 1854 pressed aluminium triangles which appear to “grow” from the floor and surround the lounge – yet the components weigh only 200 kg altogether. In contrast, the cleanlined, fully operational bar, which the team believes is the first of its kind, comes in at 1.8 tons. Designed to showcase Laufen’s bathroom products, its “V” shape is constructed from 64 ceramic shelves and washbasins. Concealed lights on each shelf create a linear, floating appearance. The bar’s adjustable top enables new styles of washbasins to be displayed as they are launched, and the insulating properties of the ceramic material means the coldness of the ice wells in the counter is not transferred to the shelves below.

27

28

The World of Hospitality Issue 8 2014

“The construction of the ceramic bar was riddled with technical challenges which the Laufen team successfully resolved,” Nir explains. “It was only through the dedication and positive thinking of the Nous Design team, organisers, sponsors and suppliers that this venture became possible. We thank all the people who spent days and nights in front of their computers, in workshops and at the installation site to bring our vision to life, and are grateful for the overwhelming encouragement we’ve received from our friends, clients, operators and the design community.” An international panel of esteemed design experts judged the competition, including distinguished landscape and garden designer Andy Sturgeon who called the Sleep Bar “simple yet dramatic.” Kali Nicholson, Brand Director of Sleep, says “We were delighted to have such an amazing bar for the Great and the Good of the hospitality design industry to enjoy at Sleep last year and are thrilled it continues to be recognised and celebrated, now as awardwinning, almost 10 months later.” The Sleep 2014 Conference, together with the Sleep Set guestroom design competition and the Sleep Exhibition, will be held on the 26th and 27th November at the Business Design Centre in Islington, London. A late-night opening running until 8pm on Wednesday, November 26th will include a cocktail hour from 6-7pm at the Sleep Bar, which this year is being designed by Stylt Trampoli. Drawing upon the Business Design Centre’s past life as the Royal Agricultural Hall, the studio aims to create a fresh, vibrant place of respite from the high-energy exhibition and conference. For more information and to register for complementary passes visit: www.thesleepevent.com The show is the official event partner of the European Hotel Design Awards which will culminate in a dinner on the evening of 25 November when the winners will be announced in a glittering ceremony at Park Plaza Westminster Bridge in London.

HAINSWORTH SUPPLIES LONDON’S HOTTEST NEW HOTEL London’s hottest new hotel has used a selection of colourful Hainsworth broadcloth to help give its interiors a contemporary look and feel. In the midst of Soho and moments from Mayfair, Ham Yard Hotel offers 91 individually designed bedrooms and suites. Owned by London’s premier boutique hotel operators, Firmdale Hotels PLC, the striking interiors have been put together by Kit Kemp in her award-winning modern British style. Hainsworth fabrics have been dramatically showcased in the hotel’s original Fifties bowling alley where wing chairs were covered in brightly coloured Hainsworth wools. Hainsworth’s electric blue wool was also used to line the walls of the large state-of-the-art theatre. Julie Greenough, spokesperson for Hainsworth, says: “We were delighted to supply this exciting new hotel with our woollen fabrics and we love the way Kit Kemp has used them to such a dramatic effect.”

Hainsworth’s Broadcloth is a tightly woven and felted woollen base cloth regarded for its lustrous quality and sheen. It comes in a variety of striking colours including Orange, Cherry, Gold, Paprika, Royal Blue, Black and Royal Navy – and is the widest woollen faced fabric on the market. Hainsworth is one of Britain’s oldest textile mills and recently launched a marketing campaign positioning itself as the “fabric of a nation”. The company has a distinguished history. It was awarded a Royal Warrant in 2004 for its furnishing fabrics for Windsor Castle and Buckingham Palace. The bold new campaign comes amid growing interest among interior designers in Britain and overseas for its upholsteries, drapes and wall coverings. www.hainsworth.co.uk www.hamyardhotel.com

F

ounded in Japan in 1985, Japanese ramen specialist Ippudo is to open its flagship European restaurant this October, in Central St. Giles, London. Ippudo now operates over 120 restaurants across 13 different countries, with sites in New York, Singapore, Hong Kong and Sydney, serving 50,000 bowls of ramen each day. Set to be the first of several European openings over the next five years, Ippudo will now offer Londoners many of the same signature dishes that has seen it become one of the most popular ramen restaurants worldwide. With nearly thirty years of history and tradition behind it, Ippudo will bring an authentic menu of Hakata-style ramen to the capital. A Tonkotsu soup (pork-based) is the foundation of Ippudo’s famous ramen, made in-house by boiling pork bones over two days, achieving perfect emulsion to give it a rich flavour and creamy texture.

47

The main event will be the Shiromaru Hakata Classic – Ippudo’s original tonkotsu pork broth ramen with homemade thin noodles and topped with pork loin chashu, sesame kikurage mushrooms, bean sprouts and spring onions. A vegetarian version will also be available, made from a rich seaweed and mushroom broth topped with noodles, fried tofu and bean sprouts. Starters such as Yamitsuki Goma Kyuri, Hirata Buns and Hirata Samurai Chicken Wings will sit alongside à la carte options which include inventive and authentic dishes of Hakata Tonpu-Yaki (a savoury pancake with sliced pork belly and cabbage), Wagyu-Tataki (seared Wagyu sirloin served rare), Bakuretsu Tofu (stewed spicy tofu with minced chicken and crunchy noodles) and Seafood Chirashi Sushi (open style chirashi sushi with prawns, yellowtail and tuna). Rounding things off will be desserts such as Kurogoma Panna Cotta (black sesame panna cotta, served with mango sorbet) and Mascarpone & Sweet Potato (green tea gelato served with mascarpone, honey and sweet potato).

K West Hotel & Spa’s fun and vibrant ambience is fused with ultimate relaxation in a prime location. The hotel’s contemporary vibe attracts those from the music and media industries who enjoy the proximity to the nearby O2 Shepherds Bush Empire and the Apollo. Situated in Shepherds Bush, the hotel is on the doorstep of Westfield shopping centre, one of the largest urban retail destination in Europe with over 240 outlets. Fashionable areas such as Notting Hill, Portobello Road and Kensington are also just a short walk away. A defining characteristic of all 220 guestrooms is the generous space, with the smallest being just under 300 sq ft. The rooms are designed to offer a soothing respite from the fast pace of London life, with luxurious oversized beds and a calming colour scheme. Modern flourishes including LCD flat screen TVs, sandblasted glass, and original artwork give the rooms a distinctive K West stamp. At the upper end of the scale, the six spectacular K Suites offer the ultimate experience. Dramatic walls of glass divide the bedrooms from the lounge areas, which are fitted with Bose surround sound entertainment systems, a 42” plasma screen television and ultracomfy sofas. Two-metre square beds and Aromatherapy Associates toiletries are also staples in the suites, and the bathrooms have been fitted with designer Philippe Starck double-ended baths and fixtures. K Lounge replicates the city’s buzzing nightlife. Every Friday and Saturday, top DJs play from 10pm until 2am, while the hotel’s expert mixologists create exotic cocktails for a distinctly cool crowd. The chic venue features a stunning black granite bar with intricate mother-of-pearl detailing, illuminated by two impressive drop-column chandeliers. In the daytime, K Lounge provides a stylish retreat to relax and chill out. Perched on a mezzanine floor above the bar, K West’s modern restaurant, Kanteen, offers high quality food and a sociable atmosphere. FEEL GOOD, LOOK GOOD, DO GOOD! Nicknamed the ‘feel good fruit’, Baobab is one of Africa’s best kept secrets – until now. For centuries the people of Africa have turned to the baobab tree as a source of natural wellbeing, to benefit their skin, hair, health and to help bring out natural beauty. K Spa is the first spa in London to launch this African-inspired Baobab treatment, priced at £110 for 70 minutes. And with £2 from each treatment being donated to the Aduna Foundation – it will help you do good too. How it works The Baobab’s incredible nutritional profile offers six times more Vitamin C than an orange, twice as much calcium as a glass of milk, and more iron than a steak. It’s high in alkalising minerals such as calcium, potassium, and magnesium, plus has one of the highest antioxidant capacities of any fruit in the world. It really is the superfruit of superfruits. At K Spa the Baobab African Ritual starts with a relaxing full body exfoliation, followed by a “feel good” massage and cooling therapy for the legs. The sublime relaxing ritual harnesses the unique powerful ingredients produced by the African Baobab tree, which are exotic in nature and rich in nutrients. This is a nourishing, protective, smoothing and hydrating experience that will boost skin health and leave you both feeling and looking rejuvenated. The treatment finishes with a complimentary Baobab smoothie to leave you feeling naturally energised whilst boosting your immune system. Awarded the top rating of “5 Bubbles” in the 2013 Good Spa Guide, K West’s holistic spa offers a range of exclusive treatments. K Spa introduced the first ‘Snow Paradise’ to London, which mimics the Finnish experience of alternating between freezing and steamy environments. BELLAGIO INTRODUCES LAGO BY RENOWNED CHEF JULIAN SERRANO TO RESORT'S AWARD-WINNING CULINARY PROGRAM Italian Small Plates, Bellagio Fountain Views and Exquisite Décor Create a Breathtaking Epicurean Experience by Michelin-Starred Chef Julian Serrano Lago by Julian Serrano, a new concept from one of Las Vegas’ most celebrated chefs, will debut at Bellagio Resort & Casino in March 2015. Featuring an exquisite dining room with floorto-ceiling panoramic windows, Lago will boast the most spectacular views of the resort’s iconic fountains ever experienced on The Strip. Adjacent to the dining room, an open-air patio will provide waterfront seating centred on Lake Bellagio. Lago will be the first Italian restaurant from the James Beard Award-winning, Michelin-decorated Chef Julian Serrano. A new take on social dining, Lago’s small plate menu will celebrate Chef Serrano’s creativity and signature flavours, and deliver a dynamic new experience to the AAA Five Diamond resort’s award-winning culinary program. Additionally, the restaurant will showcase a sophisticated mixology program that delves into uncharted preparations. “Lago will deliver a fresh experience for the Bellagio guest and Las Vegas local, not only in the cuisine, but also in the ambiance,” said Chef Serrano. “As people step into Lago, they will be embraced in a setting that is energetic, engaging, approachable and fun – all inspired by the sights, sounds and flavours of Italy.” Serrano’s menu encourages guests to discover Italian cuisine differently. Reinvented presentations of small, savoury Italian dishes will offer the opportunity for guests to indulge in a variety of Chef Serrano’s cuisine. Menu selections will include antipasti offerings such as

carpaccio and bruschetta; fresh pastas such as risotto and gnocchi; an assortment of pizzas; and exquisite main dish selections such as salmon, chicken and steak. Side dishes also will be available to accompany any menu item. Bellagio President and COO Randy Morton said, “Lago pulls from rich Italian history and culture while delivering a cutting-edge culinary experience – two hallmarks of the Bellagio brand. And as suggested by the name, which means lake in Italian, Lago’s guests will enjoy the most striking Fountain views in the city.” Designed by Munge Leung, the restaurant’s decor is influenced by Italian Futurismo, a cultural 20thcentury movement conceived in Milan that encouraged artists to stretch beyond the traditional and familiar in order to create uniqueness within an object. Spectacular and vibrant, Lago’s bold exterior façade will capture guests’ attention from across the resort. Its entrance will be wrapped in a colourful mosaic measuring 15 feet tall and spanning 100 feet wide, comprised of Italian glass portraying an aerial map of Milan. The abstract map will include coloured backlit glass panels with a colour gradient and bright metal accents symbolizing Milan’s roadways. Once inside, guests will be greeted by Lago’s intimate lounge and an exquisite glass-andchrome mixology counter. The on-the-go traveller can sit at the high-table-top lounge or at its white marble-top bar sipping from one of Lago’s

30 wine-by-the-glass options and pleasing their palates with a delicate dish or cheese and charcuterie before a night on the town. The bar’s focal point will be a geometric back bar reminiscent of Emilio Pucci designs, a nod to Italy’s rich history of style and fashion. Along the top of the bar, Venini-inspired hand-blown glass vases will hold large up-lit flower displays. For those craving a more in-depth experience, Lago’s main dining room will inspire guests with arched windows offering magnificent views of the Bellagio Fountains. Guests can browse through a 600-bottle wine list while enjoying indulgent seafood, meats and pastas that will shape the course of their dinner. Adjacent to the main room will be a sophisticated private dining room anchored by a custom glass chandelier inspired by antique Italian wicker wine bottles. For guests seeking an al fresco dining experience, Lago will feature an exquisite patio situated on the centremost point of the Bellagio Fountains. The space will be a garden-inspired respite framed by a glass-enclosed green wall. Shade structures overhead will shield guests from the sun while they enjoy the lovely sounds and sights of the Fountain show. The restaurant takes the former space of Circo, which will close Sept. 30.
