Christmas season is upon us and that Holiday feeling is in the air! A time to reflect on the year gone by. I love this time!!! We spend time with Family and friends. Eat and drink too much and spend too much money! Let us not forget the real reason we celebrate Christmas. Look at Christmas in an old way this year. When I was growing up, we went to Church and there were no stores open. If your parents forgot the batteries to the new toy they bought you, you were screwed until the next day unless the next day was Sunday and the stores were still closed in respect for Christmas! I have a problem with people writing Merry X-mas. Don’t X-out Christ! It is also Holy Days that has become shortened to Holiday’s. It has become so commercialized. Decorations are out before Thanksgiving and they are playing Christmas songs. This will generate a more buying spirit. This year our Family is trying a different approach. We are getting gifts for the small children and only one small gift for adults. We have asked each adult child to pick a charity of choice and we will donate in their name. We were very proud of all of them for really embracing the idea. We have been very fortunate to have eaten this year and we have been able to pay our bills. We feel very blessed to have an amazing Family and group of friends. Life is Good! All are not as fortunate. Please reach out this Holy Day Season. All of us here at Thunder Roads Pa wish you the most blessed and joyous Holiday, whatever you celebrate! We hope you will reflect and take back some of your old Family traditions or make some new meaningful ones for your younger members. Jesus Is The Reason For The Season! Rejoice! KNOW THE LAW by Attorney Steve Stambaugh Another year - where did the months go? Where did summer go? I want the warm riding weather back. Let’s hope that the winter months go as fast as the summer months did. First, a huge thank you to all of the rider/elves who showed up to make this year’s 14th Annual David Milliken Derr, Jr. Memorial Toy Run to Penn State Children’s Hospital in Hershey a success. Thunderroads’ distribution is amazing. This year we had a group of riders show up all the way from Scranton to support the Toy Run which they had read about in Thunderroads! That had to be a cold ride coming down to York all the way from Scranton in the early morning hours through the mountains not to mention going home at the end of the day. THANK YOU SCRANTON !!! Second, another word about safety. For those of you who ride over the winter you now face additional threats. The first and greatest threat remains motorists - they are not anticipating seeing motorcycles over the winter months. Second, of course, you have

cold tires on cold road surfaces as well as snow, ice, freezing rain, cinders, wet leaves, etc. Please be extra careful. Third, let’s not forget about your local Harley Davidson dealers when you start filling your Christmas shopping list. Sales are down and the dealers sure could use your help in finishing out their year. Also, now would be a great time to update your ride with a new Harley. Let’s keep American workers working good jobs in the greatest nation on earth - the US of A. We can get through this the same way our Founding Fathers created this Nation together. United We Stand America. Fourth, the winter months are also a good time to update your bike with accessories. Dealers as well as your local mechanic’s shop are usually slower over the winter plus you can have your ride updated without losing saddle time, which is what I call a double bonus. Remember what I said in previous issues about headlight and taillight modulators. Now’s the time to put ‘em on. Being seen is half the battle. Last, use the winter months to double check your policy and maybe shop insurance quotes. There are no free lunches, and a deal to good to be true - isn’t. See you on the road.

On A Wing and A Prayer Christmas..
During the Christmas season of 1879, an agnostic reporter in Boston saw three little girls standing in front of a store window full of toys. One of the girls was blind and he heard the other two describing the toys to their friend. He had never considered how difficult it was to explain to someone what things looked like. The incident became the basis for his newspaper story. Two weeks later that same reporter attended a meeting held by Dwight L. Moody. His purpose was to catch the evangelist in an inconsistency. He was surprised when Moody used his account of the children to illustrate a truth. “Just as the blind girl couldn’t visualize the toys,” said Moody, “so an unsaved person can’t see Christ in all His glory.” It is the same today. So many people miss the true meaning of what Christmas is all about. When I was a kid, I remember the town being lit up and also a manger scene in town. The public school that I attended had a Christmas program, and they sang “Silent Night, Holy Night,” and “O Come All Ye Faithful.” As I got older, someone who got offended took it to court and it was ruled that we can’t do that anymore. The true meaning of Christmas was taken out of public school, (and everywhere else) and the manger scene is not allowed in front of government buildings. We

have to be politically correct. Christmas today is all about decorations, presents, cookies and the tree. That is all well and good, but that is not the true meaning of why we celebrate Christmas. On that first Christmas, only a few people understood who Jesus really was. A lot of people heard what the shepherds said but so many didn’t view the baby as the son of God. Today, so many people don’t understand who Jesus really is. They don’t view Jesus as the son of God. They are like the little blind girl, only they are blind spiritually. If that is you — ask God to open your spiritual eyes. Ask Him to let you see who Jesus really is. 2 Corinthians 4:3 says, “God commanded light to shine out of darkness.” Jesus was, and is, that light. The beginning of the verse in John 3:16 says, “For God so loved the world (that’s you), that He gave His only son (that’s Jesus”). Gift giving at Christmas was God’s idea. He gave His best gift to you and to me. He gave us Jesus. We must accept the gift. When you put Christ first you will have the true meaning of Christmas. When you accept Jesus into your heart, you will no longer be blind spiritually. In our church at Christmas we sing this little song. “He’s the reason for the season, He’s the purpose of it all, He’s the God of all creation, and the mighty Lord of all. He’s the reason for the season, for the happiness we see, may this Christmas time remind you that He came to set men free.” Jesus is what Christmas is all about. Appalachian Harley Davidson Shows Appreciation Appalachian HD's Riders Reward and Customer Appreciation Brunch was held on Saturday Nov 13th. As you can see in the pictures the line was all the way thru the store. They had an estimated 300+ show up from all over the state. All of the food was supplied by Dodge City Restaurant of Harrisburg Pa. On top of the free Brunch, everyone got a discount with their rider rewards cards.

Pittsburgh Connection Women make better mechanics...because we have smaller hands! I build, maintain and restore motorcycles, motors and equipment and further to all of that hard work, I love to ride! I was gladly introduced to bikes by my father at the age of 8. He put me on a Honda 125 dirt bike and said Go! And I did. Behind me is my starter road bike, a 1981 Kawasaki 440LTD belt drive which I took from Pittsburght to LA and through Mexico a few years back. At age 30, he 'lent' me his 1994 Softail Heritage to 'use'. That was 7 years ago and with his love and hard work as a steelworker and welder in Pittsburgh for 35+ years, he has not asked for it back. I love Pittsburgh for its community, work ethic and integrity and I would not change my history and background for anything or anywhere. This sometimes tough city has made us all stronger and more resilient and I am proud to be part of this region, family and legendary biking community. I am equally pleased to join Thunder Roads速 as its newest member in Pennsylvania.

FINDING OR CREATING PURPOSE, IT IS YOUR CHOICE! (CONTINUED) What happens when a person loses his purpose in life? …. continued…. Just as it is very obvious that a person can lose their “purpose in life”, so also you can find purpose as well. Or maybe it would be better understood to say a person can “create” purpose. I firmly believe the premise that God has a purpose and meaning for every person. There is an eternal truth that says you can find fulfillment and completeness in knowing God and pursuing His plan and direction for your life. As this holiday season approaches you can “create” purpose and meaning in your life by simply looking around. There is someone who needs you; someone for whom you can make a difference. They may be your family, your grandchildren, a neighbor, or maybe someone you do not even know. One of my early memories is of my father dropping off bags of groceries to a needy family that lived over the mountain from our home. Looking back I realize that we did not have much at times, but dad was living the lesson that “it is better to give than to receive”. No one is exempt from the opportunity to make a difference and create purpose! The motorcycling community is full of opportunities to get involved in making a difference. My wife’s grandfather just passed away last year at the age of 103. Milton lived by himself in Hanover, Pennsylvania. He had two knee replacements, one at age 100 and the other

at 101. The doctor told him in his 90’s that he had the body of a 50 year old. (I told Milton that was funny, because at age 50 the doctor told me I have the body of a 90 year old!) At age 103 Milton continued to volunteer his time at a local food and clothing outreach in Hanover sorting and distributing donated shoes to be given to people in need. Some of those people came to his funeral to say thanks. I don’t know about you, but I hope to be like Milton, creating a purpose and going out with my boots on too! Want to make a difference? Lens Time One of the most important things you can do to become a good/great photographer is lens time. What is lens time? Lens time is simply - lots of practice with the camera. In today's world with digital cameras it is very cost effective to get lens time. When I started the process of teaching myself photography I was shooting with film. The cost added up in film and developing to find out what I was doing right and most of the time wrong. Then the photography gods made digital photography. Now I could experiment all I wanted and my cost were nothing. I could try different settings, concepts and angles without wasting money. I could see my results instantly in the display. As long as I have room on my memory card and juice in my battery I am a shooting fool! So my advice in this article is simply this... If you own a digital camera, the best thing you can do to get better is shoot away. Don't be afraid to mess with the settings. Pick different locations and conditions and have fun shooting. I promise you that you will not only learn new tricks with your camera but you will have a lot of fun. Experiment with angles and concepts for images. Get yourself a inexpensive tripod and try doing some self portraits with the timer setting or even shooting at night without a flash. Don't feel the camera is only for shooting your family parties and such. Most important in the lens time process… HAVE FUN!!! Good luck and see you next month!

THE SEARCH FOR A GOOD MEAL CONTINUES...
The search of the best biker grub in NEPA continues. The Trouble Brothers stopped in to Smiler’s Bar n grill in Dickson City on a recent Saturday afternoon. With a “Hog Only” parking sign out front, several TVs and a pool table inside and smiling Mara (call her Mya…she loves that ;-) ) behind the bar, things were looking up for a good afternoon. There is always a diverse crowd here, from college kids to the older crowd, everyone enjoying the big game and great food. We have stopped here numerous times in the past with a big group or by ourselves and always have a good time. Friendly, attractive bartenders, unless Ernie is behind the bar of course, well being he is owner I guess he is allowed. brews on tap. Smiler’s menu has things from your everyday bar favorites to the more exotic. Make sure you check out the huge chalk board of specials. Today, I had the Soft Shell Crab Salad. Hey….I’m trying to broaden my food experiences. I have to admit it was very tasty and cleaned my plate of the very huge portion. Frank aka FKOW enjoyed the Sweet Potato Soup, which was just a bit spicy and very creamy. He then went with the Captain Crunch Crab Cakes, which he said were delicious although he complained about the missing “crunch berries”. For my December ride, I took a familiar route, one that I always take to clear my head and breathe the fresh air. This ride takes me through the area I raised my kids and I know you all would enjoy. This trip goes through Michaux State Forest north of historic Route 30. Depending on which direction you are coming from you can either head south on Route 34 out of Carlisle or from Route 15 you would take the York Springs exit and go on Route 94N toward Carlisle. Either way, Route 94N and Route 34S connect south of Mt. Holly Springs. This is where the riders on Route 94N take the left onto Route 34S and those of you already on Route 34S bear to the right staying on Route 34. Although the ride to this point is awesome, this is where you enter the beginning of the northern most part of Michaux State Forest. By the way, in the town of Mt. Holly Springs, stop in at the Three Pines Tavern or the Holly Inn. They are awesome stops. Start out taking a right off of Route 34 onto Route 233. The first state park you will pass is Laurel Lake on the left. The next will be Fuller Lake. There is a nice bicycle and walking path between the two lakes about 2-3 miles on the back side. This is a nice walk if you have the time and an easy walk on an all level trail. For the road trip, continue on 233 toward Caledonia State Park. There is mile after mile of endless Pennsylvania Beauty. When you 14 Thunder Roads® Pennsylvania
arrive at Caledonia, stop in at the Rangers Station and get a map of all the trails. Park your ride and take a walk along the Conococheague Creek. You won’t want to miss this! After Caledonia, you will come to Route 30. You will want to take a left heading east on Route 30. The first tavern on the right is Bobby A’s. This is a great mountain pub from way back. They have good food and beverage. If you continue on Route 30E, you will be in the heart of where the Confederates came through Cashtown into Gettysburg. At the intersection of Route 234 and Route 30, you will want to take a left onto Route 234. This will take you through the heart of PA’s Apple Country in Adams County. Stop and check out the Round Barn on the right. This is a historic landmark built by the Shakers. Take Route 234 to the traffic light in Biglerville. Those of you from the Carlisle area will want to go left on Route 34 to head back and those of you from south of York Springs should continue on Route 234 which will take you out to Route 15. This ride takes you through Cumberland, Franklin, and Adams Counties. I hope you enjoy this. Snowmobilers and ATV lovers also have a lot of trails to ride on in the Michaux State Forest area. DIRTY POLITICS BACKFIRES In an historic mid-term election that saw the GOP sweep into control of the House and narrowly miss winning a Senate majority, as well as Republican gains in gubernatorial posts and statewide races, most of the electorate is simply happy to see an end to negative campaign ads and mudslinging by candidates. One such attack ad could easily be confused with a commercial for Sons of Anarchy, with a Florida congressional hopeful being accused of being a member of “a biker gang linked to meth running” and acts of criminal violence. The TV spot kicks off with a rumbling Harley motor and a gritty-voiced narrator growling, “Guns. Prostitution. Murder. That’s who Allen West rides with.” Paid for and produced by the Democratic Congressional Campaign Committee, the smear piece ends with, “We don’t need a politician who rides with gangs.” The Palm Beach Post reported that the Florida Democratic Party said a West supporter was wearing a South Florida Confederation of Clubs patch, and that confederation “has ties to the Outlaws organized crime syndicate.” West (R) is indeed an active motorcyclist who writes a regular political column for a local South Florida biker magazine “Wheels on the Road” that supported his bid, and the Tea Party favorite did have members of the Outlaws Motorcycle Club providing security during his campaign, but the mudslinging appears to be the desperate last-gasp tactics of incumbent Rep. Ron Klein (D) to hold on to his House seat. The Miami New Times called it the “Scariest Ad Of the Year”, but according to one of West’s fellow biker rag columnists, Chuck Lehmann, “This smear tactic by Klein backfired big time as the voters overwhelmingly gave, the underdog, Allen West a resounding 10 point victory over the pathetic Ron Klein, who went down to defeat in disgrace. My WOTR colleague/columnist Lt.Col. Allen West can now be called Congressman-elect Allen West, C.D. 22 Representative in Congress.” VOTERS SEE RED Fueled by discontent, record voter turnout nationwide not only gave the Republican Party the nod in local and national races, but they also saw red at the ballot box as Red Light Camera initiatives lost big on election day. According to TheNewspaper.com, “Regardless of who you voted for, November 2nd represented a major win for everyone who opposes the use of red light cameras. In a handful of pockets across the nation, voters decided they were sick of the automated machines and by voting against the use of these devices, sent a message to law enforcement, as well as the companies that manufacture red light cameras.” These cameras are often viewed as a revenue-generating scheme rather than safety devices, and many citizens feel that red light cameras even represent a violation of our constitutional rights. On

election day, cities and districts across the nation decided to ban the use of these cameras, adding to a growing list of towns that have already voted to do so. “The outcome of the voting is a major blow for American Traffic Solutions, the company that manufacturers a large number of the cameras,” reported Autoblog.com. “ATS tried hard to block these measures from even appearing on the ballot, but it was denied. The company was then forced to spend millions of dollars to attempt to sway the public to vote in favor of the cameras, to no avail.” In Houston, Texas, which happens to be one of ATS’s most important accounts, a campaign was run against the camera company by brothers Paul and Randy Kubosh through their Citizens Against Red Light Cameras organization. ATS reportedly spent over $1.7 million, ten times more than the Kubosh brothers, yet ATS still lost the fight in Houston. Following Houston’s lead, red light cameras are now banned in Mukilteo, Washington; Anaheim, California; and Baytown, Texas. NEW YORK RIDERS FIGHT DISCRIMINATION In addition to the unprecedented harassment on highways by police manning motorcycle-only checkpoints, which is the subject of ongoing litigation by Aid to Injured Motorcyclists (A.I.M.) Attorney Mitch Proner, Big Apple riders are now faced with elimination of legal bike-only parking spaces. As if it weren’t’ difficult enough for New York City motorcyclists, over the past decade bikers contend the city has turned up the heat on regulatory and legislative fronts, leading to growing complaints of harassment and accusations of discrimination. There are only about 37,000 motorcyclists in a city of over 8 million people so they are a tiny minority, but the motorcycle community has begun to organize and fight back with a group known as “The New York Motorcycle & Scooter Task Force” (NYMSTF), working to ease some of these problems. Most large cities in the U.S. provide biker-only parking for good reason: Bikes and scooters take up less room and are more environmentally-friendly than passenger vehicles. SCOTTISH BIKERS PROTEST FUEL HIKES Hundreds of Scottish bike riders formed a rolling roadblock into Edinburgh, the capital of Scotland, on Saturday, Sept 25th to protest skyrocketing petrol prices and increase public awareness of a proposed 1p increase in fuel duty. Members of Fife Bikers blocked sections of the M90 as around 600 bikers slowly rolled into the capital, and organizers say they are prepared to do so again. Member Jim Seymour told the Courier newspaper that he thought the bikers had received a “fantastic” response from the public who lined the streets and overpasses to watch the demonstration. Petitions handed out that day and signed by members of the public are still being gathered, and will be handed in to MSPs in Parliament who will be asked to take legislative action. how different those experiences might be if your child, or a child close to you, were challenged with a serious illness... a child confined to a hospital bed or slowed by crutches or a wheelchair... a child separated from friends and family... a child who spends lonely nights with little to hope for. “Our goal is to provide a vital outlet for children suffering with pain and depression associated with the stress and isolation of critically serious illnesses,” said Domenick Sciole, Chairman of the Toys for Tots Committee. The event is “FOR THE KIDS” - a phrase coined by Dom and known by most to signify this Christmas program which takes the form of a motorcycle cruise through the city of Philadelphia.
With bikes and people as far as the eye can see down Columbus Avenue (about a mile and a half worth), including vendors, some donating profits from the day, sponsors and organizations like The Leathernecks MC (Tun Tavern Chapter) and Rolling Thunder Chapter 1 PA to name a few… I am sad to say after “30” wonderful and successful years, the run as we have come to know and love will come to an end. Fear not though… With new traffic patterns at the Children’s Hospital of Philadelphia after a long expansion project and the City of Philadelphia charging the event for Police coverage, the decision was made to change the venue to one that would make everyone happy. Through the resourcefulness of the DELVAL A.B.A.T.E. members, supporters and sponsors, the run will be replaced by a "Toy Drive” TRMPA is told by Frank Staquet, Coordinator of DELVAL A.B.A.T.E. and the Run itself. The run history … Compassion & Commitment... . . . are the words and principles behind the organizers of this charitable event which has been held annually since 1980. Toys for Tots’ committee members from the Delaware Valley Chapter of A.B.A.T.E. of Pennsylvania begin planning in February for this LARGEST MOTORCYCLE PARADE IN THE WORLD which brings gifts and goodwill to the Children’s Hospital of Philadelphia and its affiliates. Their goal - cheering up sick youngsters. Toys for Tots’ participants made their first run on December 13, 1980 from a parking lot at Broad Street and Cheltanham Avenue. Approximately 50 motorcycles tooled city streets following the lead of Mike Horton and Denny Waldman, the chapter’s president and treasurer, respectively, who conceived the idea to dispel the bikers’ “bad guy” image. Since that first run, the charitable endeavors of this premier program have grown in gargantuan proportions. The joy of Christmas is now brought to these children and their families through a showing of over 62,000 motorcycles and with the number of donated toys exceeding 100,000 in count! Through the years, as notoriety of this successful toy collection has expanded, so has the wealth of support. Celebrities such as the Honorable Seamus P. McCaffery, the Mayor of Philadelphia, State Representative Teresa Forcier, the Philly Phanatic, Santa Claus, recording artist Meatloaf, and actor Randall “Tex” Cobb, have given their time and talent to endorse our event. The number of sponsors has increased while their promotional initiatives and generous contributions continue to play important roles in our campaigning efforts. And “bikers” now hail from all states of the Mid-Atlantic Region. They arrive riding solo, in groups of 5 to 50, and in masses as large as 150! They arrive riding personalized machines of every make and model, sporting leathers, displaying tattoos, looking burley and bad, all of which belie the caring, compassionate, and kind individuals they are. But despite the change in size and recognition, one thing has remained constant through the years: to bring the joy of Christmas to the children and a smile to their faces. “If we can help take a kid’s attention away from his illness or pain for even five minutes, then we’ve accomplished something,” said Santa Claus, also known as Tony Graessle of Southwest Philadelphia. ABATE Update In the Harrisburg Patriot news, October 27, there was an article asking questions of the gubernatorial candidates. They were asked questions on many different issues. One of the questions was “Should we reinstate the mandatory motorcycle helmet law?” Corbett- “I am not interested in reinstating the helmet law.” Onorato“No we should keep the law as it is, and emphasize education and safety.” To read more go to PennLive.com. These questions were posed in a non biased way, and with no involvement by ABATE, to have those answers given to an outside source was very encouraging Looking to the 2011-2012 legislative session- We are planning which bills we would like to see introduced, and who we would like to ask to introduce them. With the change in the House, back to Republican control, we will have to wait to see who will assume the leadership and committee positions. Now all three, Senate, House of Representatives, and the Governors office are controlled by republicans.

I hope all of you voted. I just had first hand experience with people who make sure everyone has access to the voting area in our town. I messed up my knee at work, and I am now on crutches. Thanks to my parents for getting me to the polls and back. The polling place in my town is the fire company. The fire department had a fireperson on hand all day to operate the elevator so those who can’t do the steps can still get upstairs to vote.

The Motorcycle Riders Foundation in Washington, DC came out with their legislative agenda. We need to support the MRF to further their goals in DC. Become a member of the MRF. We are seeing more and more legislation coming out of Washington that affects our rights, and we need the National groups to help us there. We need to do all we can to support them in all their efforts.

Brandon Lee Robinson Hey everyone! Well another season is in the books and it went by fast! I can't believe it is done, but I think I'm more eager than ever to move onto the next year. I'm extremely happy with the way this year went all considering. This year was all about getting back into the swing of things after my Indy accident. It took most the year to be confident mentally that I still got what it takes to be competative. I finally feel like my speed is back, but I'm still lacking a bit physically with my leg as I'm still unable to turn right or hit jumps with it. This offseason I'm more focused and driven than ever to succeed and come out Daytona 2011 swinging. I have a lot to be happy about this year and a lot to work on. At the season finale in Prescott, AZ we had a good day with a tough ending. We were 2nd quick in timed qualifying, led some laps in my heat race, and then ended up getting black flagged during the main event and credited with the 16th spot. The following weekend was the Randy Texter Memorial race at Path Valley Speedway. I had a great day battling with Coolbeth all afternoon. Ended up winning the DFC and took 2nd in the memorial race to Coolbeth. Since then I've been working on getting everything gathered for next year.

My name is Eric George, I’m 46 years old. I’m married with 3 children. My wife’s name is Denise who comes from England, and son who is still at home is named Luke. Both are into the biking lifestyle and scene. I’m a 8 year veteran of the USAF. I was stationed in England for 6 years, where I have 15,000 miles of riding .I’m also a Veteran of Desert Storm. I am self employed, owning a sporting goods store in East Hickory Pa, for hunting and fishing goods. I also help my VFW post located in Titusville, which is the largest for post members in Pennsylvania. I’m the Quartermaster there, and thus I enjoy helping Veterans. I have a selling booth that I set up at various bike rally’s and poker runs in my area. I sell extreme Veteran, Biker clothing and novelties. In 1989 I purchased my first street bike which was a 1200 Sportster. Then when I returned from Desert Storm, I purchased a FXRS Lowrider which I currently ride. I enjoy… obviously riding motorcycles, hunting, fishing and am an avid bowler. That sort of sums it up!

SIMPLE, SUCCULENT, PERFECT, CHRISTMAS ROAST BEEF.....Everytime
CREAMY ARTICHOKE & SPINACH DIP
7 cups of Spinach = equiv. of 5 boxes of frozen. Thaw, place in clean dish towel and wring out good. If use fresh, barely blanch and still wring out good. Zest of one whole lemon (don’t zest too deep) 1 Clove of Garlic; minced 2 Cans of Artichoke Hearts; drained & rough chop 3/4 Bag of Chef-Style Shredded Parmesan cheese; divided up; 1/2 & then 1/4 for melting over top. 1 8 oz. Tub of Sour Cream 1 Cup of Mayonnaise 1 Tbl. of Louisianne Hot Sauce (or hot sauce of your preference) 1 Pinch of Nutmeg Salt & Cracked Black Pepper to taste In medium bowl mix all ingredients together. Pour into sprayed casserole dish. Bake for 30 minutes at 375 degrees. Last 5 mins., sprinkle remainder of Parmesan cheese on top to melt down. Serve hot w/ your fave chips. Incredible flavors!
1 Beef Roast, any cut, any size 2 Cloves of Garlic; peeled and sliced (optional) 1 Stick of Real Butter; softened Salt & Cracked Black Pepper to taste Let uncooked roast sit out on counter at room temperature for apprx. 45 mins. Preheat oven to 375 degrees. Place roast in a pan that you have lightly sprayed w/ either canned olive oil or butter spray. Take roast and make slits, up to 10 or so, distributed evenly all over roast, and slide a slice of garlic into slit. Next, rub butter all over your entire roast; generously, and salt & pepper all over roast. Place roast in pan, fat side up. Place meat in oven and set timer for 1 hour. DO NOT OPEN DOOR at any time for any reason. When timer goes off, turn the oven off and again, Do Not Open Door. Decide what your serving time will be and exactly 45 minutes before your serving time, turn the oven back on at 375 degrees. Cook roast for 25 more minutes and turn oven off. Remove roast, wrap immediHEAPING PLATTER OF LEMON DIPS ately in foil and let it just sit for 15 minutes. Remove foil and slice according to thickness you desire. If you follow 1 Pkg. of your favorite brand of Yellow Cake Mix 1 Pkg. of Instant Lemon Pudding Mix this recipe to the letter, your roast beef will always be 4 Large Eggs perfect. Juicy, flavorful and tender. Holiday bliss! 3/4 Cup of Vegetable Oil ROAST BEEF GRAVY: Mix all together. Pour into pre-sprayed mini muffin Take your pan that you cooked roast in and put it right onto stove on medium. Do this immediately after pulling pans; only half way for each muffin. Bake apprx. 12 roast and wrapping in foil. Sprinkle apprx. 3 tablespoons mins. Turn out onto clean dish towel. of all-purpose flour generously all over the pan drippings. GLAZE FOR LEMON DIPS: 4 Heaping Cups of Confectioner’s Sugar Start moving the mixture around and around pan im1/4 Cup Fresh Lemon Juice mediately and mix in well with drippings until flour is Zest from same lemon; all of it thoroughly mixed in. Next, slowly add beef stock little by little and keep working into flour coated drippings. All 4 Tbls. of Vegetable Oil total you’ll add apprx. a cup of beef stock. Salt & pepper 4 Tbls. of Warm Water to taste, add 1 large pat of butter and turn up heat, keep Mix all ingredients together well. Smoosh out any lumps. Pierce a fork into bottom of muffin and dip stirring constantly as gravy will start thickening up really into glaze, be sure and coat well. Place on wire rack fast when you turn up heat. As soon as it’s the desired to harden and by the time your done w/ your last thickness you want, turn off stove and pour gravy into a one, start at beginning and dip all over again. Let gravy boat. Delicious! Note* If you want to make sure there’s plenty of gravy to harden at least half-hour before serving. Serve with extra-creamy whipped cream or home-style vanilla go around, simply double the amount of beef stock you add and also add a bottle of pre-made, quality beef gravy ice-cream. End of Year Thoughts……… * I think part of a best friend’s job should be to immediately clear your computer history if you die. * Nothing sucks more than that moment during an argument when you realize you’re wrong. * I totally take back all those times I put up a fight about taking a nap when I was younger. * There is great need for sarcasm fonts; the “finger”, the “mooning”, the “bite me”, the “suck this”......... * How the hell is anyone besides Martha Stewart supposed to know how to fold a damn fitted sheet? * Map Quest really needs to start their directions on prompt # 5. I’m pretty sure I know how to get out of my own neighborhood. Also.....an Avoid This Neighborhood prompt would be greatly appreciated. * Obituaries would be a lot more interesting if they told you how the person actually died, right? * Why is it that bad decisions always make for really good stories? * You never know when it will strike, but there comes a moment at work when you just know that you aren’t going to do anything productive for the rest of the day. * Can we all just agree to ignore whatever comes after Blue Ray? I don’t want to have to restart my collection... yet again. * I keep some people’s phone numbers in my phone just so I know not to answer when they call. * I totally disagree with Kay Jewelers. An old lady dies and goes to heaven. She’s chatting it up with St. Peter at the “Pearly Gates” when all of a sudden she hears the most awful, blood-curdling screams. Don’t worry about that,’ says St. Peter, ‘It’s only someone having the holes drilled into her shoulder blades for the wings.’ The old lady looks a little uncomfortable but carries on with the conversation. A few minutes later, there are more blood curdling screams. ‘Oh my,’ says the old lady, ‘now what’s happening?’’ Not to worry,’ says St. Peter, ‘She’s just having her head drilled to fit the halo.’ ‘I can’t do this,’ says the old lady, ‘I’m going to Hell.’ ‘You can’t go to that nasty place,’ says St. Peter. ‘You’ll be raped and taken advantage of.’ ‘Maybe so,’ says the old lady, ‘but I’ve already got the holes for that.’ Four guys go fishing…..After an hour, the following conversation took place: First guy: You have no idea what I had to do to be able to come out fishing this weekend. I had to promise my wife that I would remodel the kitchen for her.’ They continue to fish. When they realized that the fourth guy has not said a word, they asked him, “You haven’t said anything about what you had to do to be able to come fishing this weekend. What’s the deal?” Fourth guy: I just set my alarm for 5:30 am. When it went off, I shut off the alarm, gave the wife a playful slap on the ass and said: ‘Fishing or Sex?’ And she groggily replied,……’Wear sunblock.’ At a deer camp, no one wanted to room with “Ratchet”, because he snored so loudly all night long. They decided to take turns. The first guy slept with Ratchet and comes to breakfast the next morning obviously sleep deprived. He said, “Ratchet snored so loudly, I just sat up and watched him all night. The next night it was guy #2’s turn. In the morning, exact same thing. They said “Man, what happened to you? “That damn Ratchet shakes the roof with his snoring. I watched him all night”. The third night was Panhead’s turn. Panhead was a sage, old-school biker. The next morning he came to breakfast bright-eyed and bushy-tailed. “Good morning!” he boomed. They couldn’t believe it. “Man, what happened?” they all shouted. Panhead coolly replied, “Well, we got ready for bed. I went and tucked Ratchet into bed, patted his butt, and kissed his forehead....Ratchet decided it best to stay up and watch me all night”. him
