Founded by the talented sisters Dulce, Mariana, and Alejandra Escobedo, the Dance Conservatory of Mexico is a privately funded project that began in 2014 by researching and traveling to top dance schools around the world. The Escobedo sisters wanted to incorporate the modern aesthetic aspects of top dance conservatories as well as to implement their quality of teaching and mentoring. At the helm of the architectural design was Architect Arturo Torres and Engineer Rolando Escobedo Ortiz, they were tasked with creating a school that represented the beauty and quality of world-class conservatories while creating functional spaces for dance, theater, and music classes. The conservatory has specific classrooms for each style of dance, a Pilate’s room, an Expo-room for art shows and presentations, a gym, and rest areas for students and teachers.

The Escobedo sisters created a process that allows students to learn more than just Flamenco, Jazz, and Ballet. They created a multidisciplinary curriculum that allows students to be fluent in many styles of dance. Professional development begins at the age of 8, and by the time they are 18, students are prepared both physically and mentally to pursue a degree and a professional future in dance. Part of what makes The Dance Conservatory of Mexico so special is the well-prepared and experienced staff. Teachers like Philippe Vivenot, Ivonne Morales, Gabriel Ledon, and Salvador Corona, all have dancing degrees in several styles of Jazz, Flamenco, Hip-Hop, Contemporary, and Ballet. The school also has a Psychologist and a Nutritionist to mentor and help students reach their goals. The DCM collaborates with different Dance Academies and Schools around the world. Twenty students will get a chance to go to Cuba this summer and take a course at the Lizt Alfonso Dance Academy, one of the best Dance Academies in the world. Students will get a chance to perform choreographies by Dulce and Mariana Escobedo in front of 3000 spectators at Cuba's National Theatre.

Currently the conservatory has about 150 to 200 students, where 80% of their student are there for professional training and 20% of student are taking classes as a hobby or recreation.

The Lizt Alfonso Dance Company also sends an instructor every three months to Tijuana to teach Flamenco and Dance-Fusion for a one month period. The DCM also has a great relationship with the Marat Daukayev School of Ballet, the Millennium Dance Complex, the Edge Dance Company, and The Lombard Twins (Martin and Facundo Lombard).

Mariana Escobedo is a member of UNESCO's International Dance Council, and alongside her dedicated sisters works very closely with Julian Plascencia, Samantha Luna, and Sarabella Nieto, director and coordinators of The Baja California Promoter of Culture (La Promotora De Cultura de Baja California). Together they impulse Art and Dance across the Baja California region and have collaborated on several projects and events including Tijuana's Book Festival and Tijuana's Festival of Jazz and Blues.

The DCM welcomes children of all ages, Mariana and Dulce Escobedo even created a class for children 3 to 5 years old. The class introduces children to movement and coordination while teaching them how to use the space around them. The Dance Conservatory of Mexico invites everyone to visit them for a tour of the school and an introduction to this very special project.

Turys is a bilingual restaurant. English and Spanish menus available, the staff is fluent in both English and Spanish.

Like most vegetarians and vegans, the Tury’s family would much rather eat at home instead of going out. Why spend money on the few and limited vegan options most restaurants have, when you can buy all the ingredients of your choice, and prepare your food just the way you like it? That is without the struggle of ordering at a restaurant, always asking to replace the ingredients or to dismiss the animal based ingredients. Most servers and chefs struggle to take those orders, as well as vegan and vegetarian guests might feel embarrassed when asking those changes. At Tury’s you can find from typical Mexican breakfasts and burritos, to veggie burgers, sandwiches, and Italian based cuisine. On this visit with tried the Tury’s bowls and vegan ceviche.

BOWLS $3.90 USD The Tury’s bowl concept is based on the typical protein packed Mexican diet. Mexican rice and beans, with a stew of your choice on top, along with lettuce and freshly made guacamole, with tortillas on the side, of course. CEVICHE $4.50 USD The chile poblano vegan ceviche we tried was created by the Tury’s family at Sinaloa. While visiting, they realized there was nothing of their preference to eat, so they went through their grandma’s fridge and found poblano peppers, tomatoes, onions, and more veggies, that all put together, with just the right seasonings turned out to be the best ceviche we had so far. Tury’s menu is different every day of the week. You can also find cauliflower ceviche, garbanzo beans ceviche, black beans ceviche, green peas ceviche, soy ceviche, and coconut-mango ceviche, which is only served on Saturdays, as well as their popular vegan pozole.

Turys is inspired in the Mexican-American cuisine, from New York and New Jersey to central Mexico's Sinaloa and Guadalajara.

POZOLE Most Mexicans would agree with me when I say that pozole is one of the most traditional dishes in Mexico. You can find all kinds and varieties of pozole depending on the region of Mexico you are visiting. To say that there is such thing as “Vegan pozole” would be considered a joke for most Mexicans, but the only non-vegan ingredient is the pork or beef (depending on the kind of pozole). At Tury’s, they simply replaced that one ingredient and came up with the Portobello green pozole, and the white algae red menudo, that can only be found when you visit Tury’s on a Saturday. CONCLUSSION Tury’s has that delicious home cooked taste, because that’s exactly what it is. The food Tury’s is sharing with the community is the same food their family is used to eat at home, they just want to share their family recipes with Tijuana’s foodies, so everyone will learn that vegans can actually eat a lot of things and wonderful food besides salads and tofu!

I got a late start on this months Central theme and wasn’t sure what to write about. Julian Qui at TJ Visitor helps in the selection of themes and this month he discovered a young lady by the name of Gema Rodriguez. She's here to remind us and share a message of hope, strength, belief, and courage. That is exactly what the world needs to be reminded and exposed to, so that these messages are not forgotten and valued as they should be. Gema has brought to Tijuana a program called DanceAbility. It's mission is to dissolve barriers and connect people with and without disabilities through dance and movement for the last 5 years. This mission is accomplished through classes, workshops, and events for adults and children. Performances, teacher training and educational materials for teachers of inclusive dance are also part of the program. I met with Gema in a dance studio in San Diego around 7 pm (I was a little late, but we all know how traffic gets on weekday afternoon), I read a little bit of what the project she brought to Tijuana but had vague and misguided idea of the core of the program. We sat down and I asked her a few questions:

What is DanceAbility? DanceAbility is not a program to go jump and move your arms. It is made to give the children searching tools within his or her disability. We are here to help them, support them and remind the parents that their children not only have a disability, but also an ability to accept themselves and be self sufficient. It not only encourages the children to dance but also has positive side effects, physically and socially. We give them a space outside of the doctor's office and hospitals in which they spend the majority of their lifetime.

TIJUANA VISITOR What inspired you to be part of this program and to bring it Tijuana? “I started dancing since I was 3 years old, I love it! I am a certified choreographer.” “I had an accident and I was paralyzed from my waist down, I studied my professional ballet career in La Habana, Cuba. I spent 9 months in bed without being able to get up. I had just been selected for the Alicia Alonso ballet, the most recognized ballet in the world, and then I faced this injury. I was shocked, because you would never imagine this happening to yourself and at that moment, your ego makes you lose the notion of time. You spend your days in classrooms, theaters and don’t see much of what is going on outside, you only focus on what is going on inside” “I fell into a depression. I had a scholarship waiting for me in New York and I decided to take it right after I was able to walk and see what I could do again in dance. It was there that I was introduced to DanceAbility. I saw a presentation with musicians, different styles dancers with mental and physical disabilities, I knew I had to be a part of this. I wanted to learn more about it and decided to certify myself with DanceAbility” Certifying with the program requires extensive learning about multiple disabilities. From mental illness, to ADD, to cerebral palsy and many many more “disabilities”. It is not easy, it requires time and dedication. Gema was up to the task as she discovered her passion and possibly her destiny.

AT THIS MOMENT DANCEABILITY IS AT ITS MAX CAPACITY IN TIJUANA AND ARE BUILDING A NEW CENTER THAT WILL BE ADA COMPLIANT.

Recently Gema took the children from Tijuana to the place where she discovered DanceAbility, New York. I was impressed of how much this program has accomplished but how little it is known in the city and its surroundings. I asked her how her experience was: “It was so much, so many feelings, so many people, seeing the children dance and the people’s reaction to them was overwhelming. People from all over the world, different races, different faces, stopped, hugged and admired what was happening, they offered money but we could not take it as it was not allowed”.

TIJUANA visitor What is on the horizon for DanceAbility? “I am working with the daughter of the Baja California Governor to obtain resources to open places that are adapted and ADA compliant for the students. The goal is to build the largest and most important inclusive center in Mexico, in the city Tijuana, like a mini Cecut for what we do.“

How is DanceAbility funded? “DanceAbility is funded by private scholarships and by the Government which funds 30% of their operations, you can join and help DanceAbility by sponsoring a scholarship for a specific child for $500.00 pesos (approximately 27$ dollars a month) and decide if you would like to meet him/her or not, this guarantees a space for him as the majority of the children that attend are from low income to poor homes. We help these families with transportation, food and free classes for their children“

Gema Rodriguez is the Director and Founder of DanceAbility Tijuana at 29 years young with over 300 students split into 12 groups. Her three centers operate from Monday to Saturday starting in the afternoon mainly. She has appeared in local newspapers and magazines and has begun to make more waves in México. The building is pet-friendly and smoke-free, although you can smoke on the terrace, which has a grilling area, a fire pit, and a spacious stage-like platform for yoga classes or musical events. Imagine coming home from a long day of work and finding a local guest DJ mixing on the terrace while your friends and neighbors taste the local Tijuana Beer. Afterward, you go downstairs and find another group of friends having a “pop-up” dinner in the shared dining room with a local guest chef. In the entertainment room next door there’s a weekly video game tournament going on, or a movie marathon about to start.

On any day of the week, you can come home and hit the gym, find an area to get creative, or simply get some rest and call it a day. When we arrived to Tras/ Horizonte by Kokopelli, we stood in the middle of the dining room, astonished, we couldn't choose a table to seat because we were too busy contemplating the beautiful decoration. Tras/ Horizonte, has a refreshing, bohemian vibe. Since we were planning on drinking that night, we had to eat dinner first. After the impressive, delicious dinner, we moved to the bar/ lounge area, where we met with Lu, the mixologist and bartender. All drinks are handcrafted with fresh ingredients. All of the garnishes and flavorings are made at the restaurant, to ensure that everything on the menu has that specific balance between bitter and sweet.

TIJUANA IS MIXOLOGY SAMANTHA TELLO KELLY Seating in the beautiful sea-like decorated bar, and while drinking our exquisite cocktails carefully decorated with a delicate touch of ocean inspired garnishes, Lu told us the history of how Tras/ Horizonte came up with it’s menu.

KOKOPELLI ITSELF HAS BEEN EXISTING FOR ABOUT SIX YEARS AND IT HAS BEEN PRESENT ON MANY TV SPECIALS ABOUT GASTRONOMY IN TIJUANA, THEREFORE TRAS/ HORIZONTE BY KOKOPELLI IS A POPULAR TOURIST DESTINATION WHEN VISITING TIJUANA. What Lu likes the most about tourists is their openness to trying new flavors. When someone asks Lu for a recommendation on what drink to order, she would first analyze the person, and their food selection, since the cocktail menu is also inspired on some of the dishes.

TIJUANA is Beer When I told Lu that I had the veggies molcajete for dinner, she recommended me getting a gin tonic to go with it. Although gin tonic is my favorite drink, and I was tempted to order my usual, I decided to try different drinks instead. That was until Lu told me that it’s made with Enmienda 18 Gin, a local crafted gin in Tijuana, the only gin made in Tijuana by the way. At that moment I knew I had to try it. A decision I did not regret, the gin tonic was perfect. Although gin tonic is classic drink, the fact that Tras/ Horizonte supports the local business above all, made it so much special. Not only because I am from Tijuana, but also because Enmienda 18 Gin is unbelievable good. While conversing with Lu about her choice of drinks and how she decides which cocktail to recommend on a more personal level, she showed us their secret menu “Alipuses” which is used by the bartender whenever they feel the guest is ready to try something different. TOURISTS ARE THE PERFECT COMPLEMENT TO THE RESTAURANT, THEY BRING THE ENERGY THAT WE LIKE SO MUCH. The Alipuses menu was made on collaboration with another two mixologists. Each collaborator brought their personal style and preferences, putting together a unique collection of cocktails, making the bartender-guest experience feel more personalized. The hardest part for Lu, was not playing with flavors and ingredients, but instead it was naming each cocktail. Why? Because each cocktail has an intention behind it, the name has to represent that intention, relating it to the cocktail’s flavor and without going out of subject, since everything is perfectly coordinated by the kitchen and bar. One will learn something new about Tijuana everyday, when looking in the right places! If by this point on the reading you are already feeling thirsty for a Gin Tonic, Alipus, Ixtaby, or an Apapacho, Tras/ Horizonte is only 15 minutes away from the border, make sure you drop by on your next visit to Tijuana!

Health Care Express Marlon Luna de la Fuente Since 2010 the amount of pharmacy-clinics in México has risen by 340%, they began as a way to adapt to a new law that restricted pharmacies from selling antibiotics to customers without a prescription. A measure that was taken to avoid the misuses and overuse of antibiotics in Mexico, reducing the risk of creating antibiotic-resistant bacteria.

By 2014, pharmacy-clinics treated more patients than private doctors or public hospitals. Think of them like the CVS minute clinics but applied at a highly efficient rate. In 2015, 53% of México’s pharmacies had doctors offices next door, and of the 28 thousand pharmacies in Mexico, more than 12 thousand pharmacy-clinics treated a total of 290 thousand patients daily. If you are in Tijuana in 2018 and you begin to feel sick or feel some form of physical discomfort, the fastest way to see a licensed doctor for a $3 to $5 consultation would be to visit one of the many pharmacy-clinics in Tijuana; there's literally, one on every corner.

-The most popular pharmacy-clinics would be Farmacias Roma, Farmacias Similares, Farmacias Benavides, Farmacias del Ahorro, or Farmacias La Mas Barata.Wait time is usually about 10 minutes, and then you can see a doctor, get professional advice, get a prescription, and buy what you need next door with your choice of name-brand or generic products; generic products often being 30 to 70 percent cheaper. These clinics will help you with anything from dehydration, dizziness, stomach problems, the flu, a cold, muscle pain, cuts and wounds, hard spills, and even if they can’t help you, it's a quick healthcare bridge to a hospital in case of an emergency.
