A square with Tijuana flavor

When you arrive at any of it’s two entrances you will be received by a colorful sky, as colorful as the handicrafts offered at the kiosks in this Plaza. Regarding the food, what can I say: you will find the best tacos, burritos, seafood and typical dishes of this northern region in a single place. The history of this plaza is interesting. It has grown and modernized along with the city. From being one of the main entrances of Tijuana since it’s foundation, it has become one of the international tourism’s favorite places and one of the most recommended to spend a good time in the best Mexican setting of this border city. At one end, it is adorned by the famous Hotel Nelson, an imposing 1955 building, which still preserves the atmosphere of a legendary Tijuana in its lobby. It’s bar maintains the look of the canteens of the 70’s and is a “must visit” on a weekend tour of Revolución Ave. Before being a Plaza, this street was open to vehicular circulation, it was one of the main connections from the old Puente México, to downtown Tijuana. On a plaque embedded in the arches that were built to become a symbol of that place, you can read: "Argüello Ave., part of the diagonal of the same name that appears in the original plan of Tijuana of 1889, ordered by the Argüello and Olvera families. Dedicated to the 95th anniversary of Tijuana’s Foundation. H. XI City Council of Tijuana, B. C. July 11, 1984 ". This square is also known as the Mariachi and Musicians Square, since here you can find musicians; Mariachis, Norteños and Banda Sinaloa, willing to liven up the party 24 hours a day, 365 days a year.

What would you answer if I asked: Between an espresso and a regular coffee, which one has more caffeine? I think, most would answer that the espresso, since this is a drink that has earned the reputation of being "very strong", "bitter" and "that takes away your sleep." But that is not the correct answer, since the drink that contains more caffeine is a regular coffee. Why? is simple: the more water passes through the coffee, the more caffeine it releases (without being over extracted). The previous explanation may have brought you some doubts, so I will answer the basic ones. 1. What is an espresso? It is a concentrated extraction of coffee, which can be up to 2 ounces.

2. What is a regular coffee? Also known as American or brewed, is an extraction with more palatable flavors and can be obtained in larger quantities ranging from five ounces to liters. 3. What is caffeine? It is a natural stimulant that contains coffee beans, which is extracted in greater or lesser amounts, depending on the amount of water used to make the extractions. 4. What is the over extraction? It is obtained by using too much water for a specific amount of coffee. So, now you know: the next time you choose a drink, you'll know how to choose the amount of caffeine you want or "NEED". Enjoy it!

This cute place has a few weeks since they opened, and it’s becoming very popular, it’s a very unique place with unique flavors too, let’s talk about their coffee. The first time I visit them I ordered a “Butterscotch Latte” it was very good; another great thing about this place is that every syrup you ask for your latte is handmade, and in their menu they have a signature section and a selection of organic teas and organic coffee for every peoples taste.

So, sometimes you need to chill and drink a good cup of coffee? here’s where you come to visit this place, where every method you order here is make by hand, “Páramo Café” is a trip to the past, because of the decoration and because this coffee shop is inside an old house, that’s why is so unique and makes you feel so comfortable. Another awesome thing about this place is that the owner wants to make the coffee shop a collective place, so you can taste different coffee roast from other people that harvest. My favorite orders here are the “Chemex” or “V60” method because you can really taste the coffee. Every harvest they have is unique and another plus is that is organic and Mexican.

This past week I had the opportunity to visit this coffee shop that is new in town with a very Mexican Art inspired atmosphere. I highly recommend to order an espresso. The texture is great and you really can feel the deepness of the coffee, another drink I recommend is the famous “American Seis5”, because this coffee is a mixture of 3 coffee beans from different states of Mexico, the flavor is so rich and amazing! This place is great if you want to take a break, for a business meeting and to work.

He has devoted himself to register during almost three decades, the diverse faces of the city and of his inhabitants: Whether an anonymous migrant, people who walk plowing their destinies step by step, or an artist, rare people who dance, paint, make music or theater. Lorenzana, equally, records and shares his visual experience. Lorenzana is a creator of images that become icons, like the one that illustrates our cover. In so many years of work, he has taken thousands and thousands of photographs, thousands of moments that he captures for the enjoyment of our eyes and for posterity. As the years go by and Tijuana transforms into a very different city, Lorenzana's photos will continue here and there, as an essential graphic testimony of our legendary city. Tijuana forever!

“Tijuana seems to me a kind of ‘film set’ where life happens and unfolds to be captured” Alfonso Lorenzana ventures into photographic creation based on his participation in the experimental photography workshop of the UABC-Tijuana in the nineties. Since then, he has participated in solo and group exhibitions in Tijuana and several cities in Central and South America. He has also presented exhibitions in Havana, Cuba and Madrid, Spain.

Él se ha dedicado a registrar durante casi tres décadas, los rostros diversos de la ciudad y de sus habitantes: ya sea un anónimo migrante, la gente que camina arando sus destinos paso a paso, o un artista: esa gente rara que danza, pinta, hace música o teatro. Lorenzana, por igual, registra y comparte su experiencia visual. Lorenzana es un creador de imágenes que se convierten en iconos, como la que ilustra nuestra portada. En tantos años de trabajo, ha tomado miles y miles de fotografías, miles de momentos que va capturando para el goce de nuestra mirada y para la posteridad. Baja California Leader in Health Tourism By Guadalupe Rivemar

What is Health Tourism? It is important to mention that Baja California is a leader and pioneer in Health Tourism. In 2018 we had an influx of 2.9 million patients and their companions, with an economic benefit of 1,300 million dollars. But we must understand that Health Tourism is a value chain that does not always has to do with the medical sector; an example of this is Rancho La Puerta, considered as the number one SPA worldwide. Health Tourism is not just about promoting or encouraging the tourist to visit us, but to do it in a responsible manner. What actions does SECTURE takes to promote Health Tourism? This year we are launching a campaign called Responsible Tourism Promotion of Health and wellness. The idea is that the health provider commits to offer the best of the services. The parameters are simple: certification and ethics. They must also have an infrastructure that adheres to the Official Mexican Norm and a bilingual receptionist. The Japanese community in Tijuana has a long history to tell, that is why the Historical Society of Tijuana and the Institute of Historical Research of the UABC, under the seal of Editorial Ilcsa, have published the bilingual book (Spanish and Japanese) “Historic trajectory of Tijuana, with the Japanese presenceâ€?. This is the first of the Tijuana Plural series that will publish books about the history of the city in Chinese, Korean, Hebrew, French, Italian and English.
