HUMO, brainchild of chef Giovanni Brassea, which has given people plenty to talk about, has already become one of the city’s favorite spots for local patrons and foreign visitors. Brassea is convince that endeavors like wine production, the micro brew craze and the booming culinary scene have given visitors a certain ease about visiting Baja California. HUMO one of the earlier pioneers of Baja’s food truck craze. They specialize in sausages. They make the sausages themselves, preparing them over a wood fire and serve them on ciabatta bread. The bread is locally made and the ingredients locally sourced. The house specialty is a bacon sausage created by Brassea, topped with a special bacon marmalade and served with corn on the cob. This is a dish sure to leave your taste buds satisfied.

Healthcare has always been a major service in Tijuana. They call it Medical Tourism. The variety of services and procedures, and their low cost when comparing them to the U.S., as well as the quality of the service and providers makes this sort of trip down south a no brainer. Illnesses such as Diabetes, hypertriglyceridemia, Sleep apnea, cardiovascular issues, acid reflux, hypertension, cancer, infertility and degenerative joint disease are all related to obesity. Anyone seeking procedures such as Gastric Bypass surgery or Gastric Sleeve surgery would do well in the hands of Obesity not 4 Me. Throughout the years, Tijuana’s craft brew scene has evolved in amazing fashion. Several breweries have sprung up around town. It is estimated that there are several hundred breweries that vary between small specialized home brews to internationally established craft beers. Large international breweries have taken notice. They’ve started to buy up

some of these micro brews and are also buying in to the brew philosophy, creating new products in an artisanal way. A clear example is Grupo Modelo, one of the largest international beer companies. They acquired local favorite Cerveza Tijuana, who has built a reputation on developing and improving their beers, such as “Día de Muertos” which is a beer that comes as an IPA and a PORTER.


TIJUANA is BEER They still carry their classic line up of Guera, Morena, Bufadora. These yummy delights can be sampled at Franz Praga, a coffee bar located on sixth and revolution in downtown TJ. Finding a stellar craft brew in Tijuana is as simple as finding an amazing tacos. They’re everywhere. Since 2004, “TJ Beer Fest” has serve as a showcase for local and international beer. Other festivals such as “Baja Beer Fest”, “Expo Cerveza Artisanal” and a TJ version of “Oktoberfest” have also sprung up. If you’re planning a visit to Tijuana, you have to try some of these amazing craft beers. It goes well with the fun Tijuana atmosphere. Bringing Urban Mexican Cuisine to the Manuel Ayala

When one walks through any city, the air is filled with particular aromas, emanating from food stands, inviting you to partake in the essence of a city. Mexico is no exception. The variety of dishes one finds in its cities is no secret, but each dish is unique. What you might think as foreign and exotic is just a traditional dish of any given region. Tacos are no exception. Tacos are entwined with the heritage of the country itself. To this very day, the taco is the signature dish that represents Baja California’s culinary essence and has put Mexico on the map. The variety of flavors and recipes have made tacos a symbol for Mexico and it’s renowned culinary scene. You can find a taco stand or restaurant in virtually every corner, each with a distinct aroma that will captivate you as you walk by. Twenty chefs will be taking part in this 6th annual Baja Culinary Fest. Some from Mexico, some from the U.S. other from abroad. Among them, renowned chef Celia Froilán from the restaurant 15 Letras in Oaxaca, Eduardo García of Massimo Bistro. Four Argentinean chefs as Buenos Aires is the city invited to participate this year.

he General Director of the Baja Culinary Fest, Maribel Moreno notes that the festival was partially created as a showcase to promote the culinary culture of the Baja region. For years we’ve known that the region produces world-class wines, and boasts fresh sea waters and great farming fields. In 2001 the city experienced a drought of tourism due to the rising insecurity in the region. This is when chefs Javier Plascencia and Javier González of the Culinary Art School tasked themselves with the creation of this even as a way to combat the insecurity and attract the public. The festival grows with each year, and with it support for local producers. With each passing year there is greater interest in participation from chefs from all over. The even has become internationally known, mainly due to the high profile participants.

This year’s host restaurants will be Caesar’s, Fusión 19, Verde y Crema, La Querencia among others. Each restaurant will host a dinner with 5 chefs, and these chefs will be given time to prepare and share a dish. The conferences will be free to the public. Some of the themes will be the History of Mexican Urban Cuisine and Maize as a main food source in Mexico.

There will also be lectures on how to preserve traditional cooking, how to prepare Tlayudas, which is a typical dish in Oaxaca. There will also be lectures on coffee beans and its varieties, how to make craft beer, and there will also be a lecture on producing wines. The festival begins October 27th and ends on the 30th. The event will be free of charge and will be held at the world renowned CECUT (Tijuana Cultural Center), which host major cultural events throughout the year, attracting visitors from all over the world.

N

othing had united Tijuana, at least not when it came to sports, quite like the Xoloitzcuintles reaching the first division of the Professional Mexican Soccer League. Not politics or social issues, or the fact that people supported other more established teams or were loyal to other sports were hindrances to scores of Tijuana, natives that flooded the streets in celebration of having a top level franchise representing the city for the first time. Until then, baseball, American Football, boxing and even pro wrestling had a larger foothold than soccer. Since the very beginning, the Xolo organization has generated a very different soccer identity than the rest of the clubs in Mexico. The club’s geographical circumstances have not only generated expectations in Tijuana. Many Mexicans residing in San Diego and even Americans cross the border every time the team plays at Caliente Stadium to enjoy one of the city’s greatest attractions. “La Masakre” (The Massacre) is their official cheering section. Made up of mostly young guys, who chant, cheer and do wild choreographies that make the scene and the mood at matches colorful, full of passion and life.

They usually paint their faces in red and black, the clubs official colors. They bring large flags that cover the stands, and they chant and dance and rejoice at every match, no matter the outcome. The home of the Xolos is Caliente Stadium, which roughly holds 21,000 spectators and is located at Hipodromo Agua Caliente, a place that has turned in to a landmark for Tijuana. From the moment you arrive at the Stadium, you can feel the sensation and the festive mood. Everyone is wearing their team colors and jerseys, vendors have great Baja food on offer, but above all, you can breathe the football in the air from the moment you enter, and every couple of weeks the Xolos home becomes a family friendly party zone. Without a doubt, going to a Xolos game is one of the best things to do in town and it’s a must for anyone planning a trip to Tijuana. Once you cross the border, a five dollar taxi ride will get you to the stadium, revolution street or zona rio, where you can enjoy the bar scene and great food, as well as places that offer game broadcasts and Tijuana trinkets.
