ho is Alejandro Zacarias? a visual artist from the famous metropolitan city of Guadalajara, Mexico, a city tagged with the beginnings of mariachi and next to the crib of a famous liquid around the world, Tequila. He is a visual artist that has been a local Tijuana resident since 1970, so he is pretty much from TJ. Dedicated to producing pieces that help him “understand the environment he lives in, it is the possibility to explore other ways of seeing and understanding what surrounds me”, is what he told us. His passion for art was sparked in 1986 while attending an exhibition in the Benito Juarez (ex-president of Mexico & author of the phrase “Respect for the Rights of Other is Peace”) library.

Is an Artist Born or Made? “Mmm… I think we are all born with artistic capabilities, but as we grow we lose those abilities”

When does an artist stop working? When he dies.

Is art an escape from the world for Alejandro Zacarías? No, rather it is an encounter with it.

Do you have a favorite project? Walk and get lost in places I do not know in the city.

Who does Alejandro Zacarías admire? People who question what has been given to us as true.

What do you advise young people who see art as a life project? It is worth developing any project as long as it is really what interests them.

In what part do you apply your artistic creativity? In everyday survival. What proposals are currently active in the USA and Tijuana? In USA I do not know, I do not cross to the US, from this side we can mention the gastronomy, the production of Beer, and the opening of multiple places for entertainment but the most important proposal, is the willingness to support national migrants and other countries without adequate infrastructure and economic means. What is your opinion about Tijuana and its offer in the artistic cultural field. In Tijuana there is more supply than demand, cultural production exceeds consumption.

What do you think about future generations of artists? I think they are going to revolutionize national art, there comes a very powerful generation of artists. Why is it worth knowing Tijuana? Because there are multiple “Tijuanas” contained in this city, and all that is needed is to keep your eyes open. Where can we find some of your work? Usually ephemeral pieces that last a short time, but some are still out there as a vestige.

Zacarías Trajectory Started participating in the Biennial of the Northwest in 1987. Screen and Plastic Arts workshops in the Tijuana House of Culture, between 1988 and 1990. From this moment and on he has continued developing his work from Painting to Assembly, Installation, Intervention, Sculpture, Video and Production of Multidisciplinary events.

There is one place in Tijuana that can be a JOURNEY all by itself, offering a variety of Cultural activities and resources, constantly updating and growing to meet the demands of a city like Tijuana that is currently blooming in the Art & Culture sector, this is where CECUT comes in and impulses the presence of Art & Culture with great diversity. The Tijuana Cultural Center or better recognized by its acronym “CECUT” was opened in October of 1982. It’s main recognized feature is the OMNIMAX cinema (IMAX), known as “La Bola” (The Ball”) due to it’s giant circular design that is located in the heart of Tijuana in Zona Río district, hard to miss, and a must visit when in town for some brain munchies. In 2008 the addition of “El Cubo” (The Cube) was completed and opened for the first time next to “La Bola”, a good contrast for the latest addition to CECUT, stepping into the new Millennium where it would receive International Exhibitions, such as Alice Rahon, Gabriel Figueroa and Buda Guanyin by adding 3 exhibition rooms that meet International standards.

CECUT currently offers a diversity of programs and workshops for all ages, concerts, documentaries, exhibitions, conferences and more for a full day experience, and for the whole family. CECUT has accommodated over a million visitors per year since its first opening. Although 2016 recorded a 1.9M number of visitors, that’s about 1.9 Million Journeys!! translating for CECUT to a major commitment of maintaining a high quality agenda for 2017. From dance, theater, popular and classical music concerts, literature, educational films, are only a few of the attractions CECUT has for this year.

Fernando Botero (1932) is a well known Colombian artist and sculptor, his signature style referred to as “Boterismo” is that of people and figures depicted in exaggerated volumes, constantly representing political criticism and humor.

In collaboration with the Museum of Antioquia, Medellin, Colombia, CECUT brings over 60 of Botero’s latest pieces of “Via Crucis. La Pasión de Cristo” (Via Crucis. The Passion of Christ). This sample consists of 27 oil canvases in a variety of formats in which Botero recreates, with a contemporary vision, biblical passages and religious tradition that refer to the painful way that Christ traveled towards the crucifixion. After touring in Rome, New York, Lisbon, Panama and Las Condes, Chile, THIS EXHIBITION MAKES CECUT THE FIRST TEMPORARY HOME IN MEXICO OF THE EXHIBITION “VIACRUCIS”, THE PASSION OF CHRIST. In this exhibition you will find scenes of a crucified Christ that has as background the New York Central Park, being struck by a policeman who could well be Latin American and whose falls happen in the streets of a picturesque town that remembers the Medellin of the 1940’s, in which the painter spent his childhood.

He is considered to be the most recognized living artist from Latin America and has achieved international recognition. His work was exhibited for the first time in 1948 in his region with a group show, His first solo show was in “Galeria Leo Matiz” in Bogota in 1952 after coming back from a trip to Barcelona where he stayed briefly before moving to Madrid to study at the “Academia de San Fernando”. Lately Botero spends most of his time in Paris, but never fails his yearly trip to his native city of Medellin.

Ambulante Cold Pressed Juice is a local Tijuana and proud family-owned company, that helps the personal nutrition of people

who sometimes do not have time to be able to have a full healthy breakfast at home, a company committed to nutritional health. They have a unique offer in Tijuana, a liquid food, complete and healthy. Ambulante produces natural, organic juices, offering a variety of 7 juices and not only that, but they have a set of 3 detox plans, for those limitless weekends.

How was Ambulante born? Between awakenings at dawn trying to understand a need, a new market, we began to study the subject of cold press extractions, recipes and mixtures of vegetable and fruit foods as well as spices, we began to experiment in our home kitchen. We performed several tests until we could consolidate our first production, we started in a van on the streets, in the “Caliente Hipodromo” part of Tijuana, near Xolos Stadium, our bottles had no labels, we started to offer the cold press juices, since we had knowledge of the process, we had a manual machine from People Juice Press and from there our street name is born: “Ambulante” or Ambulant in english.

Once our brand began gaining recognition, our customers began making juice recommendations, we started delivering at home, little by little the brand was positioned without a marketing budget. What is the process of your making? We work with producers and local products, supporting small businesses, our motto: local consumption. Once we get our fruits and vegetables as well as condiments, the production process begins, we wash the food using drinking water, not from the faucet, apply bacterial insulation products to treat our food, after having our product completely washed, is introduced to a machine called “norwalk”, it’s a grinder where the fibers of fruits and vegetables are broken down, then press and extract live juice, without losing its nutrients and natural enzymes, since bamboo fabrics are used to treat that pure that comes out of our grinder.

JULIAN QUI Tijuana has a new proposal, which will give much to talk about this next season, this March 24 a new space was inaugurated where you can enjoy a contemporary and cultural cuisine, where most relapses into the bases of French cuisine, CUBO BISTRO (CUBE BISTRO). This idea was born and influenced by the construction of the contemporary museum “EL CUBO”, with a surface area of ​​1,500 square meters of exhibition area, which undoubtedly gives the city and its visitors the opportunity to be able to appreciate masterpieces of Universal art, as well as diverse cultural manifestations. The venue has high technical specifications to host art collections in its three halls, it also offers multidisciplinary cultural events in its various areas, such as: Hall Cube, Terraces 1, 2 and 3, Mezzanine and the English Hall today known as “Station Vizcaíno“, where you can listen to classical music and audios of Spanish American literature in voices of various contemporary authors.

After three years of construction (from July 2005 to September 2008), El Cubo was integrated into the architectural complex of the Tijuana Cultural Center in order to strengthen its offer in the visual arts and cultural heritage in northwest Mexico. The project included a specific area for a restaurant, as the Tijuana Cultural Center had the vision that a quality restaurant should accompany a museum of this magnitude, which would offer quality in its gastronomic proposal, taking reference to museums around the world. Most of them have rest and recreation areas where you can have a good coffee, taste a good wine and enjoy excellent food, which makes an exquisite complement with people who are fond of art. Thinking a little about the type of art that is shown in this space (the contemporary cube museum), unlike the Museum of Californias (first museum of Cecut), which has to do with the international theme and hosts various works from various parts of the World, is what gives the guideline

We will have the Bistro Burger with a crunchy onion, brie cheese and bacon jam, accompanied with french fries, our homemade beef, the day’s fish catch with risotto and wild mushrooms, Brussels sprouts and champagne sauce, Filet Mignon, accompanied with smoked bacon glaze balsamic green beans and potato saratoga with tartufo, baked beef rib cubes with rib chicharrón, for people of good eating, a 500g rib eye with mustard butter, chambray potatoes and sautéed mushrooms.

The menu was based on the bistro kitchen, adapted to the kitchen of the Baja and to what our friends are accustomed to eat, with very regional ingredients and products. Cubo Bistro combines flavors, for example the taco of Escargots, in France they serve in their shell, whereas in Cubo Bistro it is presented in a taco, this can be called a renovated and experimental kitchen.

The decision of dishes was based on the thought of what people would look for in a contemporary place where the museum is mixed with the kitchen and the city, combining bases of French cuisine, the garnishes are very diverse, lots of play with purees, different textures. By the way, we mix the ingredients, and that is something that you can not find anywhere else in Tijuana as we have an atmosphere full of contemporary art and totally different personalities.Also we can speak a little of the traditional desserts, presenting a crepe cake with pear, clafoutis, cream pot, creme brulee, eclairs, among others.

Our sommelier in charge, is the Sr. Moises Salazar, Certified by Culinary Art School. The wines that I could recommend, are based and intended for our diners who are just starting in the world of wine, intermediates and experts.

To begin we can recommend the house wine “nostro” with the two emblematic Tuscan grapes, sangiovese, montepulciano, you can find fruit and floral notes, very subtle in a red wine. For the intermediate palate, I can recommend that nebbiolo from L.A. CETTO, with those aromas of ripe black fruits, memories of spices and leather. In the mouth it is intense, confirms its spicy and fruity character, of great balance and persistence. For our experts, from old world wines, such as those great Châteaux, which is what an expert looks for, structure, and that can meet those expectations and the demands of someone knowledgeable, blend Bordeaux, Château de Camensac Haut-Médoc, a Rhône Château Clement Pichon Haut-Médoc and the New World, which is a Firesteed Oregon Pinot Noir and a Penfolds Koonunga Hill Shiraz Cabernet among others. Nadya Fernández Nadya Fernández has been secretly running the show in the famous Caesar’s Restaurant on Famous Revolution Avenue (Tijuana has a lot of famous…) since 2011.

She started working as a cook 14 years ago in “Villa Saverios Restaurant” with Chef Manuel Brito and Chef Javier Plascencia, “better teachers, I could not have had” she remarked. Joined school and graduated as a Professional Food and Beverage Technician, and moved to Valencia, Spain to obtain a specialty. After completing her internship she moved back to Tijuana.

What is cooking time mean for you? When you do what you like, you escape, and this is your time to relax, your time of happiness. Who do you admire? My parents and many others, to me “Admire = Learning”. What is the most important virtue you consider to have? Being responsible. When do you apply your artistic creativity? When you are imagining and thinking about how you are going to make the dish and assemble it. What is your opinion about Tijuana and its gastronomic offer? Tijuana is ringing, I think all Baja, we have very good at food, beer, wines, coffee shops, the wine valley, and we are all trying to do things that are attractive to everyone, and that gives us a Plus, to all, in wanting to make things better. What is the purpose and end result you want to have in your projects? That people like my kitchen, and that they come back for more. When does a chef stop working? Never!!! Haha you are always thinking, your head is working on some taste, smell, or if I forgot to ask for something in the requisition.

What is Nadya Fernandez’s cooking style? Here in caesars the style is retro, the dishes are more traditional, exquisite nonetheless, but I like having a cool seasonal style, do things differently and play with flavors.

Tijuana is ringing, I think all Baja, we have very good at food, beer, wines, coffee shops, the wine valley.....

Favorite recipe? Uffffffff I think there is no favorite recipe for me, as I come up with new tastes it is hard to have a single favorite.

What do you have to say to young kids that are considering this career? Think it over! If you like this career then go for it, it’s a very nice job. Do you give workshops or courses on gastronomy or there are plans to teach? Never say never, right now I’m very focused on Caesar’s and in our new project, Cube bistro. What do you think about future generations of chefs? They are coming with everything, very prepared. And it makes you feel good knowing this, it impulses you to want to prepare yourself more. Why Tijuana? I am 100% TJ, live, eat, you drink very well here, people are open, we always have something to do, beach, it is a mixture of very of interesting things to do, worth living here.

The Tijuana High Performance Center entails

an innovative and complete concept that provides the sports driven community with international standards and certificates that offer the local, national and international communities a space to develop and compete at a high level. The CAR (short for its name in spanish) was established 13 years ago with progressive construction phases that were finalized in 2007, it has been and continues to be an example for other centers around the world. The Athletic Villa of the center has 48 rooms with capacities for 6, 4 and 2 people at a time, for a total holding capacity of 112 athletes at a time.

Although the CAR mainly hosts athletes with state scholarships, it also has open doors to athletes from all around the country, both women and men that must always, without any exceptions, abide by the Baja California Sports Institute regulations, which mainly surrounds good behavior, respect for each others areas, schedule compliance and good grades maintenance for the athletes with scholarships, and of course, keep up the required goals of each team. “The thing I like the most of the center are the olympic level facilities… and from the many benefits the center offers I really like the ActiBC program in benefit of the senior community, and the talent detection for child athletes in the State” say Nacho Pérez, a local Tijuanense Lawyer that swims in the facilities almost daily.
